Roasted Scottish Beef Sirloin Gruyere Potato Gratin, Wild Mushrooms By Andrew Wilson, Exec Head Chef at Ashdown Park Hotel & Country Club
Ingredients • 300g beef sirloin • 3 cloves garlic, crushed • 150g wild mushrooms • 4 large baking potatoes • 500ml double cream • 2 garlic cloves, whole • 100g grated gruyere cheese • 200 g baby spinach • ½ bunch of thyme
Method
5. Remove the foil, sprinkle the grated gruyere on top and place under a hot grill until golden brown. Sprinkle with chopped parsley before serving.
1. Season the beef with salt and pepper. In a hot pan, add a dash of olive oil and place the beef in, sealing all sides.
6. While the potatoes and beef are cooking, wash your spinach in fresh water and rinse a couple of times to get rid of the dirt, then leave in a sieve to drain.
2. Put the beef into a roasting tin, add the garlic and a few springs of thyme, then place in a pre-heated oven at 170°C for 35- 40 minutes (if you have a meat thermometer, it should be 32°C for medium-rare). After cooking leave the beef to rest for a good 10-12 minutes.
7. Brush any dirt off the wild mushrooms with a paint brush (do not wash them in water), then cut them down into evenly sized pieces. 8. To cook the wild mushrooms, in a pan add a dash of olive oil and a small knob of butter and cook them for 2-3 minutes, then place into a bowl. Add another small amount of butter to the pan, add the spinach with salt and pepper and cook until soft and tender, the mix with the mushrooms and serve alongside the beef and potatoes
3. Peel the potatoes and slice very finely on a mandolin or with a very sharp knife. Warm the cream with a pinch of salt and pepper, 2 cloves of garlic and a couple of springs of thyme, then pass through a sieve to remove garlic and thyme pieces. 4. Lay your sliced potatoes in a small rectangular oven dish, about 7-8 slices deep, making sure you season each layer. Pour over the cream, cover in tin foil and bake for 45-50 minutes. Back to School As Mothers Day is just around the corner. Here are a few possibly helpful reminders of life-advice-for-the-kids for mummies (and daddies) out there: Never stop learning - if you learn even just a little something each day, it will add up over time immensely. Learn to love healthy food by finding dishes that are tolerable to your tastebuds and trying to expand tastebud-horizons. Find active sports or activities that can be enjoyed for a lifetime - now that the fight for childhood has become screens vs. activities, this one is more important than ever. Be able to tolerate some discomfort - obviously we try to avoid it but it’s unavoidable in this life, so learning to be tolerable of a bit of discomfort can help get through tough times. Need no one else to make you happy or validate you - feeling valuable and loved is a good thing but when it’s incessantly craved above all else it can make you unnecessarily reliant.

History of March LOCAL HISTORY NOTES by Dorothy Hatswell of the East Grinstead Museum
March, now the third month in our year, was named after Mars, the Roman God of War. It was then the first month of the year and signalled the start of both the agricultural cycle and the beginning of the combat season. March is the meteorologists’ start of spring and so the better weather promised and the longer days after the equinox meant more favourable conditions for both these activities. The spring equinox is either on March 20th or the 21st, depending on where we are in the fouryearly cycle of leap years. Spring is heralded in this country by an explosion of flowers. Snowdrops and other blooms such as aconites arrive earlier, but they are small and have to be looked for low down on the ground. Daffodils - not just our modern cultivars, but even the more humble, and to my mind more attractive, native, wild Lent Lily - are more prominent, being taller and more obvious. From then onwards the explosion continues with the “May flowers” brought forward with assistance from the “April showers”. COMMUNITY BUSINESS DIRECTORY
In England too, the first month of the year was living
March. It was not until 1752, when England adopted the Gregorian calendar, that January became the beginning of the year. The change was necessary because the old calendar had gradually become out of step with the astronomical time. It meant “losing” eleven days from the calendar, so Wednesday, September 2nd, was followed immediately by Thursday, September 14th, 1752. No days were, of course, lost, only dates. The stories of people rioting in the streets appear to be apocryphal. The myth seems to have arisen, years later, by Hogarth printing a scene where banners bearing the slogan, “Give us back our eleven days”, appear. There is no historical evidence of any riots. The month contains several important days, the most important being March 25th, Lady Day, called in honour of the mother of Christ. It is the main one of our quarter days, particularly significant in previous centuries, as it was the day on which rents were due and hiring and firing took place. This generally had an unsettling effect on the poorer members of society. March 25th was also the beginning

of the financial year for the government and is still true today, as March 25th became April 6th after 1752. Two of the countries which make up Great Britain celebrate their patron saint’s day in March. St David for Wales is on the first of the month and has as his emblem the daffodil. St Patrick in Ireland adopted the shamrock which starts to grow in abundance at this time; his day falls on March 17th. If Easter, a truly moveable feast, is late in April, as it is this year, two other significant days fall in March: Pancake Day or Shrove Tuesday, and Mothering Sunday. Shrove Tuesday, a time to confess and seek absolution, or be shriven, is the last day before the start of Lent. It was designed to use up the last items in the larder before Ash Wednesday. Several towns have well publicised races in which individuals compete, tossing their pancakes, as they go. Olney, in Buckinghamshire, is probably the best known of these. a race in the Queens Walk which was well supported by local groups including schools from around the area; it was discontinued after 2001. Mothering Sunday, as opposed to the now very commercialised Mother’s Day, started from the practice of returning to your “mother church” on the fourth Sunday in Lent. This was the church you were baptised in or the nearest cathedral. It became the day on which those in service could return home and meet up with their families, for the first time possibly in a year.
Until the beginning of the First World War Easter was the time to play games in the street. Not only children, but women too, skipped using their clothes lines as the rope. Long lines of them would queue up to join in. Not many boys skipped; playing marbles was their favourite game. Some girls played as well but it was mainly the boys. The men traditionally planted their potatoes in the morning of Good Friday and played marbles in the afternoon. The latter practice is kept up in Tinsley Green near Crawley, when the World Championship is held in the car park of The Greyhound

on Good Friday. Until 1962 clay marbles or “tolleys” were used, but now they play with the more modern glass ones. Hares are well known for their strange behaviour in March. Usually shy retiring animals, they put on a display as a prelude to their mating season. They are seen to box. Riders come to enjoy the experience of riding, carriage driving, show jumping, dressage endurance and western style, with opportunities to learn a new skill, enter competitions or even take a holiday. For the past decade, the region has been sponsored by East Grinstead’s Cowan Architects who’s vision to improve the quality of life across all manner of disabilities makes them ideal supporters of RDA across the South East. But the highest accolade comes from the RDA President herself, HRH the Princess Royal and just recently Carol Rycroft of Court Meadow Group (nr Haywards Heath) has been chosen to receive this honour. The coaches are also tasked with keeping their knowledge and training up to date so that they can provide the best experience for their participants. Ardingly which featured not only well-known local figures in the equitation world, but also a horse behaviour specialist who flew in from Scotland to help more than 60 group coaches and volunteers. The day kicked off with Ali Remman and Rachel Roberts from the Ashdown Forest Group examining the need for diversity in what a Group offers and shared their philosophy for the need to integrate their RDA participants fully with the yard so that they become part of the team. Since taking this approach, their young riders have blossomed and gained confidence, with many finding that poo picking, making the feeds, grooming and mucking out were favourite activities. Each session is devised into various sections, these can include riding, leading and handling, long reining and all aspects of stable management.

East Grinstead and the National Gardens Scheme Later in the late nineteenth century, based on this idea of local nursing set up by Rathbone, `district` nursing spread across the country, with support from Florence Nightingale and Queen Victoria, and the movement became a national voluntary organisation setting standards and training nurses. By 1926 the organisation, now well established, decided to raise a special fund in memory of their patron, Queen Alexandra, who had recently died. The fund would pay for training and would also support nurses who were retiring. This is when gardening entered the scene. A council member and East Grinstead resident, Miss Elsie Wagg, came up with the novel idea of raising money for charity through the nation’s obsession with gardening. By asking people to open their gardens to visitors a modest fee could be charged that would be donated to this fund. Elsie was, like her brother Alfred, a philanthropist. Alfred was an important figure in the international banking world and they were both part of London high society with many connections, but they still made a point of caring for their community.

2017 marks the 90th anniversary of the first 600 gardens to open on behalf of the National Gardens Scheme in 1927 set up to raise money for nurses. These days the scheme has around 3,800 gardens open each year raising money for national nursing and caring charities.
Thus the National Gardens Scheme was founded and Elsie would later receive an MBE due largely to this revolutionary brainwave. Individuals were asked to open up their gardens for 'a shilling a head'. And in the first year 609 gardens raised over £8,000. Many of Elsie’s contemporaries were delighted by the public’s reaction to their private gardens being opened, one of whom was novelist and passionate gardener Vita Sackville West who, writing in the New Statesman, stated: “These mild gentlemen and women who invade one’s

In the following years leading up to the outbreak of World War Two a veritable ‘Who’s Who’ of the nation’s landed gentry joined this new 'National Gardens Scheme' led by names such as Princess Mary and her husband the Earl of Harewood.
Since its foundation, the National Gardens Scheme has donated over £45 million, of which nearly £23 million has been donated within the last ten years! The National Gardens Scheme’s commitment to nursing and caring remains constant, and the charity continues to grow and flourish.
By the early thirties a network of volunteer County Organisers had been set up and over 1,000 private gardens were open. Country Life magazine produced a handbook that would become known as 'The Yellow Book' because of its bright cover.
We wonder if Miss Wagg quite knew what would come to pass when this inspirational fundraising idea was plucked from her mind.
After the Second World War, as we all know, the National Health Service took on the duty of District Nursing Service, but money was still needed to care for retired nurses and invest in training. And so the National Gardens Scheme offered to donate funding to the National Trust to restore and preserve important gardens. In return, the National Trust opened many of its most prestigious gardens for the NGS.
In 2017 over 60 of those 1927 gardens will open again for us throughout the year. Five of these are in Sussex: Borde Hill Garden, Gravetye Manor, Gardens & Grounds of Herstmonceux Castle, Newtimber Place, Highdown Gardens. Nearly 380 gardens will open during the NGS's 90th anniversary weekend which is on the Whitsun bank holiday weekend in May (27th – 29th) to help celebrate. FEATURED LOCAL CHARITY
Help & Hope The ‘Tubakunde Project’ is a small, organically-grown charity supported by many local people in the East Grinstead area. We have a Q&A with Chairman of the Trustees Malcolm Claridge and his wife Jeanne, who live in Crawley Down, about the incredible work this small but passionate charity undertakes.
HOW DID THE CHARITY START? A friend of ours, Pam Hajnasrollah, who trained in childcare with over thirty years’ experience, went to Rwanda in 2001 to work with orphans at a boarding school. She established the Tubakunde project in 2004 with Nathan Rulinda, a young Rwandese man, who is qualified in Environmental Health Science. ‘Tubakunde’ means ‘Let’s love them’ in the Kinyarwandan language. They’d heard that a tiny baby had been found down a ‘long-drop’ toilet, and wondered who would take care of him. Orphaned babies are often abandoned when their mother dies during childbirth; others suffer severe malnourishment because of stricken poverty. Pam and Nathan started providing these children with loving care, food, medical treatment and a safe environment. And so in August 2006, a house was secured and renovated to provide a homely atmosphere and spacious garden - the first of its kind in Rwanda.
WHAT IS THE PURPOSE OF TUBAKUNDE PROJECT? The aim of the project is to bring children of all backgrounds together creating a positive and balanced environment that will encourage each child to reach their full potential. The intention is to extend love and help to the community in the Christian tradition.
FROM ITS INCEPTION TO THE PRESENT DAY HOW HAS IT PROGRESSED? Tubakunde House initially provided day-care just for vulnerable babies up to pre-school children. Orphaned, abandoned, extremely poor and some fee-paying (when possible) children were cared for and able to learn in a safe environment. During the first year, it was quickly realised that it would be necessary to create more space as some of the children reached primary school age. By the end of that first year it had become possible to construct a building with three classrooms, six toilets, and an outdoor kitchen with storage space.

good examination results. Excel School became one of the top achieving primary schools in Rwanda.
WHAT LOCAL SUPPORT HAVE YOU HAD AND HOW CAN PEOPLE HELP?
Their expansion has gone from strength to strength. In 2009 the official ‘Excel School’ was opened, comprising three nursery classes (lower, middle, upper) and primary class one. In February 2010, primary two (P2) opened and once again there was need of more classrooms. So by January 2011 another block of four classrooms was built in time for the new academic year. The pattern continued in 2012 and 2013 with further classrooms to accommodate P3, P4 and P5 and a meeting hall/chapel being built. One more class, P6, and more staff rooms will complete the primary school. In 2013 there were 305 registered pupils at Excel School. In 2016 a bank loan was obtained by the school and a three-storey school block was built. The school itself is seeking ways to raise funds to clear this loan. Now in 2017 there are over 600 nursery and primary aged pupils! A house, just down the road, COMMUNITY BUSINESS DIRECTORY has also been rented since 2012 as a hostel for about fifty living
children who have no home or live a long way off. The school bus makes four round trips each morning and afternoon, to collect and drop off children. Children are served breakfast and lunch, and also given a fruity snack mid-morning and a milky tea before going home. Routine health checks are given and sick children are taken to the local hospital. Extra-curricular activities include playing football both girls and boys - learning traditional Rwandan singing and dancing, art and crafts. In 2015 the first group of pupils graduated from year six and went on to secondary education, many with very

Hopefully we’ll all soon be hanging up our coats and scarves as spring arrives, and the great big outdoor world starts to beckon once again. So it’s a good time to give you all some advance information on the events and things to do in and around East Grinstead over the next couple of months. A visit to Standen National Trust is a treat at any time of year, but the gardens really start to come to life now and will gladden the soul. The exhibition of textiles by Kaffe Fassett is on view inside the house until April 23rd so try to see it if you can. In case you haven’t heard yet, the Bluebell Railway will be welcoming the Flying Scotsman 13th – 19th April and this is sure to bring much attention to the town. Tickets are likely to be sold out very quickly, but as locals, perhaps you know of a favourite vantage point to watch this iconic train pass by. Please make sure it is safe and legal though! Our first big outdoor events of the year is the East Grinstead leg of the Mid Sussex Marathon taking place on Saturday 29th of April from the Rugby Club. This is followed by the Vintage COMMUNITY BUSINESS DIRECTORY Bus Running Day, which takes place in the High Street on Sunday April 30th, 9am -4pm. Living

It’s a firm favourite and the town is filled with wonderful, restored vintage buses re-creating the bus routes of yesteryear. It’s a rare chance to travel by bus for free on roads that these days have no bus connections, and if you wish you can hop on and off the different routes. Don’t worry though, your journey will return you to the High Street eventually. Then on Monday 1st of May the East Grinstead Lions are bringing us another brilliant May Fair. The High Street is closed to traffic and the crowds pour in for this highly popular event. There is something for everyone including live performances in the Market Square area through the day. If all of this is a bit energetic, why not pop into the Museum for ‘Restoring Bodies and Souls’ the exhibition of the pioneering work by Archibald McIndoe and the story of the Guinea Pig Club.
