Fabulous Fermentation I regularly make are nettles, burdock, dandelion, rosehip, hawthorn and wild plums and cherries, all fermented with honey into wine.
Winter is soon upon us and this is when the energy of the plants moves downwards and internally. Little is shown above the ground and so what can be foraged is very limited indeed. But this doesn’t mean that we can’t get our daily consumption of wild food. One only needs to learn some thing of the very easy preservation techniques and the tastes and flavours of Summer and Spring can stay with us for a lot longer. And we do this by various methods of fermentation. The term fermentation refers to anaerobic metabolism. In laymen terms, this is the production of nutrients in the absence of oxygen. In fact we come into contact with fermented foods on a daily basis, bread, chocolate, cheese and wine are but a few foods that have all undergone a fermentation process. Fermenting and preserving food sources is as old as humankind. Long before the invention of the freezer of fridge, these were common practises that ensured the daily intake of vitamins and nutrients required for good health. I bet you didn’t know that yeast synthesise B-complex vitamins in order to foster fermentation. It is not possible to get these essential vitamins through plants and other foods. So what fermentation methods do I employ to ensure the preservation of my wild harvests? I have touched briefly on yeast fermentation, which is the fermentation of the sugars by yeast in order to produce alcohol. Most fruits, be they wild or farmed contain sugar which can be processed in this way. If you have never made homemade wine in this manner before, I implore you to look further into this or contact me for more information. There is a world of flavours out there that can made into delicious and very healthy wines. I currently use my own pears, apples, etc. I have written previously on the use of honey and making mead, my personal favourite wine. By boiling foraged plants in water and then utilising this water with honey, many medicinal wines can be created. Not only are the medicinal properties of the plants combined with medicinal properties of the honey but the fermentation process itself adds many vitamins, proteins and trace minerals. Combinations that
Pickling plant and roots in vinegar has unlimited variations and make for interesting combinations with cheese. Pickled Rock Samphire was a firm favourite in Victorian times and was sold by the barrel in Covent Garden. Rock Samphire is a member of the carrot family and grows along the coast. A fantastic, aromatic plant that works well with cheese or added to salads. Lacto-fermentation is the introduction of Lactobacillus bacteria into the process of fermentation. This is done with the use of salt or brine. Lacto-fermentation is the process used to make Sourkraut. Although not too popular on these shores, most European countries have their variation of this and is a staple in their diet. Almost any plant matter can be fermented in this way. The longer it is left to ferment the more flavours that are developed. During the Summer, cabbages and vegetables are processed in this manner and then during the winter months when there is 6ft of snow on the ground, a daily consumption of vegetables is still possible. Not only are the vitamins originally present in the plant material preserved but the process, like all fermentation processes, adds even more vitamins and nutrients. But most importantly we need to remember that this food is alive. In the fermentation process we have introduced a living organism, yeast or bacteria. An important fact is that we have trillions of bacteria which cover every surface of our bodies. They live in a symbiotic relationship with us. Performing functions and processing nutrients that we could not do as an organism on our own. By consuming fermented foods regularly we are ensuring that that this community is healthy and they in turn ensure our health - win win if you ask me!! The STENNING Family (part two) by Dorothy Hatswell
Outing to Wembley 1924
John Cuthbert Stenning, the East India tea merchant, was a shareholder in the family firm but does not appear to have taken an active part in it. The business was carried on by John Cuthbert’s son, John H. Stenning. He built up the business and became a stalwart resident of East Grinstead. John H. junior was also interested in the affairs of the town. He served on the town council and was elected Chairman in 1959. William V.K.Stenning, John Cuthbert’s brother continued the business, together with his younger brother, Charles. William was also active in public affairs in the town. He did not serve on the local council but was an alderman, a county councillor and a Justice of the Peace, according to the accounts for 1896 of the Volunteer Town Band of which he was a trustee. After his mother’s death he continued to live in Halsford House with his wife, Fanny. They do not seem to have had any children of their own but in 1901 their nephew and niece, children of his brother, John Cuthbert, were staying with him, whether as visitors or more permanently is not clear. He complained that normally, the train service to London took an hour and a quarter but when the Prince of Wales had travelled from London to East Grinstead it had taken only forty minutes. He also managed to get the costs of carrying his goods to London reduced.
Stennings was one of the largest employers in the town. Even those who did not work there were aware of their presence. The loud steam hooter which called the workforce in the mornings was used by the general public as a wake-up call. The hooter is now in the museum, strangely silent. The tall chimney dominated the skyline in the area and was a landmark for many. Their showroom was called “Timber House” and their brochure was bound with a mock-timber cover. They seem to have been good employers, works outings were an annual event, frequently taken by charabanc to the coast. The outing in 1924 was different, they went to Wembley Stadium. This had been built in 1923 to house the British Empire Exhibition which opened on April 23rd 1923 by George V, in the first broadcast by a British monarch. The Empire Pool, which formed part of the complex had opened early to stage the 1923 FA Cup Final between Bolton and West Ham. This became known as the “White Horse Final”. The game was not ticketed and 200,000 people turned out to watch in a stadium designed to hold 127,000. The police controlled the crowds on horseback with a white horse standing out because of his colouring. Miraculously, there were no casualties. The pageant of the Empire began on July

Horses from Stennings hauling timber
21st 1924 and it was this that the party from Stennings went to see. Another coincidence was that one of the marches for the event was composed by Edward Elgar, whose close friend, Dora Powell was soon to move to East Grinstead. The firm continued to expand, opening another yard in Robertsbridge. This remained open until 1987. The yard in East Grinstead was eventually closed in 1964 because of the difficulties
encountered by the operation of a heavy industry in what had become over the years, a built-up area of the town. By this time the business had diversified into the manufacture of tennis racquets and hockey sticks. The heavy horses which had been a common sight, hauling their loads of tree trunks up Blackwell Hollow to the yard in the London Road were already a distant memory. The landmark of the tall chimney and the sound of the hooter summoning their
workmen now also went but the legacy of their interest in the town they adopted will live on. The name is commemorated in the small estate built on the land which was their yard. At the suggestion of many local people it was called “Stennings”. The entrance is at the twenty-nine mile Bow Bells milestone to the north of the town. A juxtaposition of the old and the new which encompasses the period in which the family served this town.

Winter Skin Care Tips Environmental changes that herald winters approach can often bring more than a rosy glow to the cheeks. Dry tight skin is uncomfortable but a change in your skin care regimen can help you keep cosy this winter. Moisturise more! Using a slightly thicker cream particularly one containing a moisture attracting humectant will prevent excess water loss and maintain supple skin. Don’t forget the SPF! Winter sun, and for those heading for the pistes snow glare can still damage your skin, causing pigmentation spots and wrinkles. Helping hands! The skin on your hands is thinner than other parts of the body and therefore it’s harder to keep hands moist especially in cold dry weather. Slather on the hand cream and cuticle oil and try wearing light cotton gloves overnight for a real moisture boost. Moisturise the air! Placing a small container with 4 cms of water near your radiators will humidify the air and prevent your skin from drying out.

Groombridge Place Lydd, Fairlight and Pevensey. The goods could have been hidden in Ashdown Forest but with the house laying derelict for almost two decades it was very likely to have been used as a smugglers hide. When the gang was finally brought to justice one of the leaders, John Bowra escaped and became a land agent and map maker. In fact he used his knowledge of Groombridge to draw up a plan of the estate which can be found preserved in Groombridge Place.
Groombridge Place not far from East Grinstead offers a mix of history and horticulture for the adults and a grand adventure for the kids ‌ However this popular tourist attraction has an interesting past. William Russell built a moated castle and chantry in 1239 after Groombridge was given to him by Henry III. The existence of a manor at Groombridge was first recorded in 1286 when it belonged to the de Cobhams. In 1360 it was purchased by Thomas Waller who owned it until 1604. By 1618, Groombridge belonged to John Packer, a deeply religious man who built a private Chapel-of-Ease to Speldhurst before it passed to his youngest son, the barrister and architect Philip Packer. Philip Packer, assisted by his friend Christopher Wren, built the present day house. Despite marrying heiress Isabella Berkeley, daughter of Robert Berkeley and Elizabeth Conyers Phillip, was unable to pay his debts and after he died in 1652 it was vested in the Chancery and lay empty for
20 years. During this time it was thought to have been used by the infamous Groombridge Gang whose smuggling antics saw the dragoons called out regularly to restore order at Groombridge. Legend has it that there was a tunnel between the cellars at Groombridge Place and those of the nearby Crown Inn, although a tunnel has never been found. Documents first record the Groombridge Gang in 1733, when thirty of them were in the process of ferrying tea inland from Romney Marsh via Iden. Other documents talk about three customs officers, two dragoons and a foot soldier making the mistake of challenging the gang and a convoy of 50 horses only to be disarmed and their guns made useless before being marched at gun-point for four hours to Lamberhurst, where their weapons were returned to them after they had promised not to renew the pursuit. Much of the contraband smuggled into London by the Groombridge Gang came via

age and the mistletoe growing on it. The Secret Garden has a gate leading to a tiny hidden corner where a tiny stream tumbles into the moat. It was here that Philip Packer was sitting reading a book in the sunshine when he died.
and his widow bequeathing it to her sister Mrs Saint. The Saint family lived at Groombridge until 1919 and included John Saint’s daughters who were friends of Sir Arthur Conan Doyle. Although the exterior remains largely original it benefitted from electricity and bathrooms being installed in the 1920’s. The peaceful walled gardens, which overlook the house, are a special feature of Groombridge Place and Phillip Packer enlisted the help of diarist and horticulturist John Evelyn’s to plan the new leisure gardens. It is said Evelyn planted two Scots pines by the front moat bridge, one
of which still exists. One famous garden is the drunken garden, a favourite of Sir Arthur Conan Doyle’s. It was at Groombridge Place that his world famous Sherlock Holmes novel “The Valley of Fear” is set, although the House is renamed “Birlstone Manor”. As well as the drunken garden there is the knot garden, white rose garden, oriental garden, peacock garden, herbaceous borders, and a secret garden, all laid out in separate garden rooms. There are three ancient apple trees in the “White rose garden” that remain from the orchard that existed there in the seventeenth century. One still apparently produces fruit, despite its great

The paths, walls, gateways and main divisions or rooms of the garden are still much as they were in the seventeenth century. The central axis pathway is called “The Apostle Walk”, because it is bordered on each side by twelve yews clipped into drum shapes, some of which have survived from the 1674 planting. Groombridge Place is home to a bird of prey sanctuary founded in 1977 and run by Eddie Hare. It provides flying demonstrations for the public twice a day (except Mondays) and over the years has rehabilitated hundreds of birds. Groombridge Place has been used as a film location on several occasions including in Joe Wright’s film adaptation of Jane Austen’s novel Pride and Prejudice, Groombridge is featured as the Longbourne manor, the home of

How did the idea of a reunion tour idea come together in the first place? It was because of a chance meeting with Chris Bartholomew, an ‘old school’ promoter. He was more of a rock music promoter back in the 80s but always liked Fizz. He met Jay with the prospect of using her in a film and they started talking about the fact that Mike, Jay and I have reformed and he jumped at the opportunity to promote the tour. We have named it ‘Paradise Regained’ and a percentage of profits will go to a charity Entertainment Workshops, Rye Harbour for disadvantaged children who want to learn about the music business. Was it an involved process to get it off the ground or did it come easily? Once we had all agreed to do the tour starting April next year, Chris and his business partner started the ball rolling, booking a few gigs around the country. Within a couple of days the list had grown and we are now up to between 30-40 UK gigs alone. European gigs will follow next Autumn and the Middle East and Australasia around Christmas next year! How does it feel to be back together after all this time? We were reunited back in 2008 for a TV programme called Pop Goes The Band and shortly after that, we started to do the odd gig together. Up to now there have been corporate gigs and 80s festivals, but this will be the first major tour we have done together for decades! It is so much more fun than it used to be plus we are in control now, whereas back in the 80s we were puppets, just doing as we were told. Do you all wish you’d done this sooner? Hmm.....probably not. We were all doing our own thing, plus 80s music really only became credible again from the year 2000. Now it seems people can’t get enough of it. Even my 20-year-old daughters, Kyla and Natalie, love 80s music. It’s definitely music that makes you smile! My daughters, by-the-way, will be our support act at Chequer Mead! What feedback have you had from fans so far? The fans are beside themselves with excitement! It will be so nice to take the show around the country to
places we haven’t been for years and years, probably since some of the fans were children. The great thing is that they bring their own children. We realised that when we did a short tour in 2009. We had T-shirts printed and only had a few small sizes, thinking most of the fans would prefer medium or large. At the end of the gigs as we were leaving the stage door, there were the fans waiting for autographs with their children wearing the small T-shirts! What are you all most looking forward to with the tour? What does the future hold? We have been using a guest singer recently and it just feels right to be 4 again. It certainly helps the vocals and makes more sense of the dance routines - and yes, we still have our skirts ripped off! I suppose what I am looking forward to most of all is the reaction from the fans at seeing Fizz on stage as it used to look and sound. As for the future, well, we have recently been discussing a new album to coincide with the tour which is very exciting. It will also be great to visit countries where Fizz had hits and perform live, especially Australia. There’s life in the old dogs yet!!!

Movember, the international phenomenon, started in Adelaide, Australia in 2003 by a group of men as a fun thing to do to bring back the rarely-seen moustache and raise money for charity at the same time. The word ‘Movember’ was coined from November and Moustache as this was the chosen month in which the prize-whiskers were grown. In a few years it became an international event, supporting men’s health charities across the globe while wonderful whiskers were cultivated everywhere. £346 million has been raised for charity since 2003!

Fruity banana muffins These delicious reduced fat muffins are quick and easy to make - and they give you a filling, high fibre snack. Serves: 8 adults. Preparation time: 15 mins. Cooking time: 30 mins
Ingredients: • 200g plain wholemeal flour • 2 tsp baking powder • 100g light muscovado or soft brown sugar • 1 egg • 1 tsp vanilla extract • 100ml semi-skimmed milk • 50g low-fat spread melted • 2 bananas ripe is best • 50g sultanas • 25g ready-to-eat apricots chopped
What to do: 1. Preheat the oven to Gas Mark 6, 200°C, fan oven 180°C. Put 8 paper muffin cases into a muffin tin. 2. Put the flour and baking powder into a large mixing bowl. Stir in the sugar. 3. Take 8 slices from one banana and set aside. Mash the remaining bananas. In a jug or bowl, beat together the egg, vanilla extract, milk and melted reduced fat spread. Add to the dry ingredients with the mashed bananas and sultanas or raisins and apricots. Stir until just combined. Avoid over-mixing. 4. Spoon the mixture into the paper cases and top with the banana slices. Bake for 25-30 minutes until risen and golden. Cool on a wire rack. Tip 1: The secret of successful muffins is to avoid over-mixing the wet and dry ingredients. Tip 2: When baking, always weigh and measure accurately, and use proper cooks measuring spoons - levelling them off for accurate results. Tip 3: If freezing, wrap and freeze on the day of baking, as soon as the muffins have cooled completely. They will freeze for up to 3 months.

New interactive technology systems have been installed, whereby service users are encouraged to make choices which can involve number games, pictorial and floor games. Exhibition: On the first Saturday of every month at The Brambletye Hotel, Forest Row, a selection of professional artists will participate in Art Soufflé, a pop up gallery. Ample free parking, bar and eating facilities at the hotel means that there is no reason not to put this in the diary!
