Mince Pie to make 30 standard size individual pies By Peter Howes, Head Pastry Chef at Ashdown Park Hotel & Country Club

Mince Ingredients • • • • • • • • • • • •

100g chopped suet 100g mixed peel 100g currants 100g raisins 100g sultanas 100g chopped apple 100g light brown sugar 10g mixed spice Zest of 1 lemon Zest 1 orange 75ml rum 75ml brandy

Mince Method Mix together all wet and dry ingredients in a large bowl, cover and leave to infuse overnight to allow all the fruit to soak up the alcohol and sugar. The following morning, give the mixture a good stir and set aside for later.

Pastry Ingredients • • • • •

300g butter 380g plain flour 140g icing sugar 35g ground almonds 3 egg yolks

Pastry Method Firstly, cream together the butter and the sugar. Beat in the egg yolks one by one then stir in the flour and almonds. Place in a bowl 8

and rest in the fridge for around 30 minutes. Once the pastry is cooled, take it out of the bowl then roll until a few millimetres thick. Use a cookie cutter, approximately 10cm round, to cut the pastry to size for the individual pies. Once the cases are lined with pastry, place a heaped tablespoon of mincemeat into each case then use a smaller cookie cutter around 7cm wide to cut the remaining pastry to create lids and cover each pie. One man’s fateful journey

With November being the month of remembrance, how fitting that we recollect the story of John Dallas Crossman, an Australian pilot whose fighter plane was lethally hit, crashing to the ground near Tablehurst Farm, Forest Row, during the height of the war. Many details of this tragic unknown pilot were uncovered by local man Pete Wheeler from Forest Row who helped to piece together his fateful story and more importantly ensure he not be forgotten to history. Pete himself was just a young boy of two, playing in his garden, when he vividly remembers the moment his mother described to a neighbour how she’d just witnessed the Hurricane fighter plane coming down out of the clouds and crashing into a nearby field. Years later and after various investigative enquiries Pete was able to definitively name the hitherto unknown pilot as Officer John Dallas Crossman. Pete, having recounted the details of this pilot’s journey and cemented it in both local and Australian WW2 history, has now gone one step further and by his tireless efforts arranged a beautiful memorial which was unveiled last month. We are also able to bring you an insightful story about John Dallas Crossman the man himself, courtesy of Australian author Kristen Alexander:

While at sea, war was declared and, while some cheered at the news, John’s reaction was subdued and resigned, reflecting: ‘Should this last any time it seems unlikely that I’ll ever see home again. Still I expect it can’t be helped. A fellow has to realise that.’ And as for the decision to go to war, ‘it is a pretty filthy business altogether but really the only thing that England could do.’ Having arrived in England John joined the RAF on 12 August 1939. His proudest moment was the day he received his wings, believing that in flying for Britain he would be fulfilling his destiny. John’s first action was on September 14th. Afterwards he admitted to being scared sick and panicky when the squadron attacked a formation of about 60 Messerschmitt 109s at 20,000 feet. The fear was worse just before he fired, but he pushed it aside and ‘got one decent burst into a 109 but was With thanks to Anna Pearce for providing photos of the memorial.

He wrote: ‘Ran into hundreds of Jerry kites at about 19,000 feet. Three of us were going round to do head-on attacks on some Dorniers. I lost speed, spun down 6,000 feet, came out near 20 more escorted by about 60 Messerschmitt 109s. Three of the 109s came after me. I evaded then came round (and) did a stern attack on the Dorniers. Put all my shots into one of them, set his port engine on fire and saw him go down.’ John’s nerves quickly passed though. As September advanced he was in the air two or even three times a day. With a zest for life and a bright sense of humour, he made friends easily. When he could grasp a few hours’ respite he spent time with them in an effort to forget the serious business of fighting. At about 1:30pm, 46 Squadron encountered a gaggle of Messerschmitt 109s and the 22-year-old’s plane was hit in the ensuing battle. His Hurricane crashed in flames at Tablehurst Farm, Forest Row. An eyewitness believed he may have brought down an enemy aircraft but, if he did, his squadron did not give him any credit for it. Indeed, sadly his death was not even recorded in that day’s entry in the operational record book.

In the community: Jaspal Sandhu number about 50,000 and, despite the fact that they are in desperate need of dental treatment, most have no access to a dentist. How did you go about making that a reality? It took a while to get enough willing volunteers; being the inaugural trip, none of us were sure of what our trip would entail, so fewer people were willing to join us. It took a lot of admin to ensure that we had the necessary approval. That meant approaching the Moroccan government. What local support have you had so far?

Jaspal Sandhu of the High Street Dental Practice co-founded Dental Mavericks a few years ago in 2010; the original vision was to help Moroccan children gain access to pain-free dentistry. It started with an eight-day charity expedition in September of that year and they haven't looked back since with further expeditions back to Morocco and more. Jaspal said of his charitable trips away, 'Happily our patients are always keen to know about our exploits - particularly in Morocco. Their generosity through words of encouragement (as well as financially) has been a tremendous support to me, always asking for updates about our most recent trips. How many children did we see? What are the conditions like? Is it still safe there?

Now that we are established, we have several local 'ambassadors'. These are people who live in the areas that we visit and are an essential part of our team. We also now recruit full-time nurses in Morocco who are responsible for educating the children about their diet and oral health care. What is the most challenging aspect of what you do? Working with the local 'officialdom'. A yes can easily become a no, and vice versa. Dental health is not high up on many people's agenda so we are constantly having to regain approval to continue with our charity work. The best wishes to Jaspal with his future work to help children who would otherwise have absolutely no access to any form of dentistry.

'Interestingly, it has allowed me to find out so much more about my patients as well. So many of them have their own altruistic stories, far greater than my own. And this really does spur me on to continue.' All the Dental Mavericks fund themselves and any donations go directly towards the charity itself to buy materials and equipment (charity in every sense of the word). We ask Jaspal.... The H.E.L.P Centre

East Grinstead’s education charity We are lucky in our local area to have many excellent schools which ensure the majority of students get the benefits of a good education. Some children, however, fall behind in their reading and writing skills, some find maths difficult, and some parents cannot afford to pay for additional tuition. We also have families moving into our area who are just starting to learn English. Their children attend the local schools, but sometimes struggle in their classes because of their lack of English skills. This can affect the whole class. Many adults also want to improve their English to help them at work and to integrate into society. For all these people, the H.E.L.P. Centre lives up to its name! As an active charity, we have been providing free tuition since 2001, with the help of voluntary tutors who we train to give really effective help. Here’s what a parent of one of the children said: “I am writing to express my appreciation for all the help you have given my son.

“When S. first started at the H.E.L.P. Centre, he was struggling to read and write and therefore was unable to fully participate in his school lessons. He was falling further and further behind his classmates. With all the time and effort the tutors have spent with S. during the time he has been there, he is now able to read, write and enjoy school. I seriously wonder how S. would be coping with school if he had not had the help he has received. Robert Whitehead LOCAL HISTORY NOTES

Turners Hill resident of longevity Robert Whitehead was a well known torpedo pioneer whose contribution to invention changed the course of naval history. Born in Bolton-le-Moors, Lancashire, on January 3rd 1821, he was the son of James Whitehead, a cotton bleacher, and Ellen Swift. Robert studied at the Mechanical Institute in Manchester and became an engineer; he went into the employment of a company in Toulon, France, and next as a consultant engineer in Milan. From there he went to Trieste, Italy, where his employers owned a metal foundry in Fiume, Hungary (modern day Rijeka, now a part of Croatia), spending much of his adult working life in that town. He married Frances Maria Johnson and they had five children, two sons and three daughters.

He was fascinated by the work of an Italian called Luppis who had invented an early prototype of a torpedo; it took the form of a surface boat propelled by compressed air and controlled by ropes from the shore. Whitehead and Luppis formed a partnership to perfect the torpedo as an effective naval war weapon. Whitehead discarded the shore launch and developed a way to launch them from a ship, in a straight line. It is thought that early experiments on the torpedo were conducted by Whitehead and his 12-year-old son, John, on the lake in the rock garden on the property. Paddockhurst is now Worth Abbey, Turners Hill.

The torpedo was called the Mineschiff, and was tested for the Austrian Navy in 1866 from a gunboat commanded by Count von Hoyos, who, incidentally, later became Whitehead’s son-in-law. In 1870 they managed to increase the speed and the range of In 1881 he bought a grand house called the device. Whitehead later added an extra two Paddockhurst near Turners Hill. The estate had been features - a device that kept it at a constant depth bought earlier by a John Smith but Whitehead, and a gyroscope which fixed the direction. In 1891 Robert was still living at Paddockhurst. He was 68 years old and a widower. Whitehead’s wife, Frances, had died in September 1883, while on the Isle of Wight, presumably while on holiday. She is buried in the churchyard of St Nicholas, Worth, where she is described only as “the wife of Robert”. His sister, Elizabeth, was living with him, as were Robert B, his son aged 23 and Alice who had married Count Hoyos, together with her three daughters, Lillian, Gabrille and Camilla, who had all been born in Trieste.

His executors were his oldest son, James Beethom Whitehead,

Councillor at the British Embassy, Berlin, and Edwin John Payne Gallwey, a Captain in the Royal Navy, with whom he had been in partnership in Portsmouth. The business was sold after his death to Vickers and ArmstrongWhitworth, thus keeping the torpedo in English hands during World War One. In the Second World War his torpedoes were still in use. The German cruiser, Blucher, was hit and sunk by two of his weapons in 1940. His invention was a key development in naval history.

Paddockhurst was sold to Lord Cowdray in 1894, the reason for this being unclear. Whether his wife’s death eleven years before had any implications on Whitehead’s decision to sell his house is not known. He went on to purchase a large estate in Shrivenham, Berkshire, called Beckett. He was in residence there in the 1901 census, again with part of his large family. The Hoyos family were there, this time together with the count. Frances May and Alison Rosalie Whitehead were also staying. They were his granddaughters, and were the offspring of his son, John. Baron von Plessen and his family were other guests; as before, there were always a large number of servants. His family spread throughout Europe, many marrying into titled families. His son John’s daughter, Agatha, married Count von Trapp, as his first wife, and died young. She was, of course, the mother of the seven children of “The Sound of Music “ fame.

The November Garden: Sweet Pea By Tom Coward, Head Gardener Gravetye Manor

Cut flowers are possibly one of the most important crops in the kitchen garden, giving us splashes of colour throughout the season and linking the garden into the manor. It is so rewarding seeing what our florists create in the hotel with our produce and of all the cut flowers we grow I am especially fond of our sweet peas. We always try and get our first sowings of sweet pea in on Bonfire Night, and to get a really long season next year, make a second sowing in April. Our autumn sown plants should hopefully be flowering by late May and produce for about twelve weeks before the spring-sown ones take over supply, flowering into October.

Once we have good germination we move our seedlings to the cold frame, to be over-wintered, initially keeping our babies quite snug but quickly toughening them up to be grown as hard as possible. Sweet peas are hardy down to -5°c and opening up the cold frame lights on all but the coldest days ensures tough stout plants. It is always important not to over water during cold weather and if it gets very cold we cover the frames with old carpet, for extra insulation. By the time spring is here we should have some good plants ready for planting out in the kitchen garden. These are put into well matured soil, along an A-frame of tall canes. Each sweet pea is planted one foot apart on its individual cane and the strongest stem is selected out and tied in. Then it is trained in a similar way to a tomato, removing the side shoots and curly tendrils, tying in the plant as you go. This is known as the cordon method, producing much bigger flowers on longer stems. The training is quite a lot of work but worth it for the quality of some of the most beautiful flowers in the garden.

NEW ART INSTALLATION FOR STANDEN of furniture, ceramics and metalwork inspired by this late Victorian influential movement. Philip Barnes, General Manager for Standen, said of the new structure: “Will Shannon came to us as part of the National Trust’s Contemporary Arts Programme, Trust New Art. We sought interest from artists, architects, designers and makers to respond to this unique property and create a new work for the landscape that encourages visitors to reflect upon the radicalism, ethos and philosophy of the Arts & Crafts Movement.” Bothy contrasts the decorative and the utilitarian. Will said: “The installation is, in short, a humble Bothy; a small folly-like space seated in the grounds of the estate. Bothy is made by the hand of the professional amateur. It is a space to shelter, somewhere for a wanderer to rest, a gardener to shelter in or an artist to draw.” Bothy is now open to the public and will remain at Standen until 23 April 2017.

Using the principles of Arts & Crafts craftsmanship artist Will Shannon has created an artwork, Bothy, upon the sandstone rocks at local beauty spot, Standen House. Using materials from the landscape around here, this temporary installation, in the form of a dwelling has been put together using Sussex materials only. Four local elements make up the design: sandstone, Sussex bricks, handmade clay tiles and local sustainable timber - all of which have been sourced within only a 25 mile radius of Standen. This way of working (using materials in the vicinity) was advocated by the Arts & Crafts Movement which was essentially a revival of traditional handicrafts and an improvement in the design of ordinary domestic objects; its influence is still felt in modern times.
