Venison Loin, Cabbage & Bacon By Head Chef Byron Hayter at Ashdown Park Hotel & Country Club
Ingredients Venison loin steaks • 4 venison steaks, each weighing 120g • 100ml rapeseed oil • salt • pepper • Handful of blackberries to serve Venison gravy • • • • • • • • • •
1kg venison bones 8 shallots, chopped 1 garlic clove, chopped 2 sprigs fresh thyme 1 bay leaf 190ml red wine 500ml beef stock 1l chicken stock 1 tbsp red wine vinegar 50g unsalted butter
Carrot purée • 1kg carrot, peeled and cored • 500ml milk • 1/4 onion • 1 clove • 1 bay leaf • salt • pepper Carrot purée • 1 Savoy cabbage, shredded • 100g unsalted butter • COMMUNITY 150g smoked bacon BUSINESS DIRECTORY • salt • pepper living
Method 1. To make the venison gravy, pre-heat the oven to 200°C/Gas mark 6. Roast the venison bones in a heavy roasting tin until golden brown, then drain in a colander to remove any excess fat. 2. Put the roasting tin on the hob and continue to heat gently. Add the shallots, garlic, thyme and bay leaf and cook until lightly golden brown. Add the red wine and reduce by three quarters. 3. Add the roasted bones, chicken stock and beef stock. Bring to the boil then transfer to a saucepan. Simmer gently for 30-40 minutes. 4. Add the red wine vinegar and cook for 5 minutes, regularly skimming any impurities that come to the top with a ladle. Pass through a fine strainer and reduce in a clean pot by simmering gently until you reach a slightly thickened sauce. Carrot Purée 1. To make the carrot purée, put the carrots in a saucepan. Add enough of the orange juice to cover. Stud the onion with the cloves and add to the pan with the bay leaf, then bring to the boil and simmer until the carrots are tender. Drain in a colander and discard the onion Continues over the page.

2. Put a little of the cooking liquid in the bottom of a blender, and slowly add the cooked pieces of carrots, blending between batches, until a smooth purée forms. Pass through a fine sieve and season.

4. Move the steaks to the oven for 8-10 minutes for medium rare or longer for medium to well done. Remove from the oven and rest on a wire rack for 5-8 minutes, before plating with the carrot and cabbage, and serving with the venison gravy and garnishing with halved blackberries.
1. To cook the cabbage, place the butter in a thick-bottomed saucepan, add 1 tablespoon of water and heat until it has all melted together. 2. Add the cabbage and bacon and cook gently for 5-6 minutes until the cabbage is tender, but not mushy and has not coloured. Remove the cabbage and bacon from the saucepan, season then drain on kitchen paper and keep warm.

An Unlikely Hero LOCAL HISTORY NOTES by Dorothy Hatswell of the East Grinstead Museum
This year marks the centenary of the founding of the People’s Dispensary for Sick Animals. In 1917, Maria Dickin, who lived in Whitechapel in the East End of London, was struck by the suffering of many animals in the area. She was convinced that in most cases of neglect it was not cruelty. The problem lay not in the indifference of the owners but in their inability to pay for professional help. She opened a clinic on November 17th 1917 which treated animals free or for a greatly reduced amount. It was an immediate success which was followed six years later by a mobile horse drawn clinic which toured the area. Maria, born on September 29th 1870, was the oldest of the eight children of William George Dickin, a Weslyan COMMUNITY BUSINESS DIRECTORY minister and his wife, Ellen Maria Exell. In 1899, Maria living
married her cousin, Arnold Francis Dickin. They were to stay happily married until his death but they had no children. Their energies were all focussed on their main project, that of supporting the poorer members of society by treating their animals. In many instances their animals were a source of income, especially if they owned horses. Horses were still the main mode of public and private transport for most people. The PDSA continued to expand its work over the next three quarters of a century. In 1943, Maria, struck by the work that animals had contributed to the efforts in the Second World War, introduced the concept of an animal VC. The first recipient of the prestigious award was a pigeon, called “Winkie”. He Bronze medal encircled in a laurel wreath and inscribed "PDSA For Gallantry We Also Serve" held from a ring suspender by a ribbon consisting of three equal vertical stripes of dark green, brown and pale blue

had delivered messages in extremely difficult circumstances and rescued an RAF Air Crew. “Winkie received his award on December 2nd 1943. The bronze medal inscribed with the words,” For Gallantry, We Also Serve”, was hung on a ribbon of green, purple and light blue. To date, thirty-two pigeons, thirty-one dogs, four horses and one cat have been honoured. Kenley Lass, a pigeon which operated out of a loft in the East Grinstead area, was used by his handler, a secret agent named Phillippe, in German occupied France. She was wrapped in a toeless sock and parachuted with Phillippe where she was then sent back to England with the message containing vital information regarding enemy placements which enabled the British army to deploy their agents more successfully. Kenley Lass was the first pigeon to be successfully used in this way. Her Dickin Medal was awarded in March 1945. as messengers. The Royal pigeon loft at Sandringham was among those to give squabs for the war effort. Kenley Lass, a dark chequered hen, NURP36 JH.190, was bred by W.H. Torkington in Poynton, Cheshire and travelled south to join one of the main carrier bases, possibly Haywards Heath, to which East Grinstead would have been a satellite.
A horse called Warrior, serving with the Canadian Cavalry in The First World War received his, in 2014, at a spectacular ceremony. Called “the horse the Germans could not kill�, he represented all the horses killed in that hideous war which resulted not just in the loss of so many human lives but of horses too.
Dogs are the next largest recipients of the Dickin Medal. They are often used in the detection of mines and other explosive devises, unfortunately resulting all too often in posthumous awards, as in the case of Sasha, a Labrador, employed by the Royal Army Vetinary Corps, as an arms and explosives search dog. She received her medal, posthumously, in February 2010. However Salty and Roselle were more fortunate. They were trapped with their blind owners in the World Trade Centre. They led them over one hundred and seventy floors down to safety.
The only cat was Simon who served aboard the HMS Amethyst in during the Yangtse incident. Although wounded he continued with his vital role as rat catcher in 1949. I have been unable to find out where the loft in East Grinstead was that was used by Kenley Lass or indeed any other pigeons during the Second World War. If there is anyone who can throw light on this, I would be delighted to hear from them. Today anyone on benefit can take their animals to be treated either for free or at a drastically reduced rate. Long may they continue the work started by Maria Dickin all those years ago.

Chess at the Bookshop The ever popular, ever growing 'Chess at the Bookshop', started 3 years by chance. The local secretary of the East Grinstead Chess Club was having some trouble getting new members interested. Proprietor, John Pye, had an idea to help: play chess during the Summer outside the bookshop and put up a notice that the club is here, looking for new members and to enquire within for more information.
Our Mayor, Julie Mockford, has kindly written this tribute: Bob was an extremely hard working councillor who persuaded me to enter the world of local politics. He was a kind man and a fair man. He had been a councillor for ten years, I am so grateful that I was Bob's deputy - as he encouraged me to seek out and talk to all people I come into contact with. Charming and easy going - nothing was too much trouble for Bob. Always approachable to answer a question or help someone, he seemed to know when help was needed. Dear Sariah, Of our four kids, my children's grandmother (mum in law) has a 'favourite'. I've asked her nicely that we don't do favourites, explaining the long term detrimental effect it seems to have on the less favoured (and also on the favoured who feel more entitled) and she agreed to stop it, but in practice it's not really been knocked on the head. What to do? Just let it go and explain to the others that it's not anything to take personally or tackle her again?

Seeing one of your children favoured over the others by a close relative is very hard to witness. Children, often very young, are acutely aware when they are less favoured, which, in their eyes, is equal to not being liked as much. That can be very hurtful and could eventually cause resentment toward the favoured child. You are absolutely right to want to put an end to this and unfortunately, the only way to do it is to be frank and honest. I would suggest that you sit down with your mother in law and ask her why she feels this way about this particular child and then talk about the damaging effect it potentially could have on all of your children. Explain gently that, for the emotional wellbeing of all of your children, you cannot allow it to continue. You don’t specify how she shows favouritism. For example, does she spend more time with that one child or shower them in treats? If this is how it is shown, ask her to give all treats to you so that you can distribute them fairly. And if it is time, remind her that she spent time with this child last week so perhaps she’d like to spend some time with another child this week. Help her to build a relationship that is clearly lacking with your other children by getting her to spend time individually with all of them. Your mother in law is clearly aware of how she feels about this child over your others so with a bit of micro-managing, help her to recognise how utterly wonderful all of your children are and how important it is for her, as well as your children, to establish and grow meaningful individual relationships.
Dear Sariah, My parents split up years ago. About a year ago my father met someone who is much younger than him (15 years). He seems happy with her and has even hinted that he may pop the question in the not too distant future. Without wanting to sound mean, we (his kids) feel ever so slightly suspicious about her intentions towards him. She seems pleasant enough but is very demanding of holidays, things for the house, etc. It all seems a bit much for someone who is semi-retired. Should we say something or leave him be? We want him to be happy but we're a little concerned. There is a role reversal that plays out as our parents become older. We instinctively become more protective of them and want to make sure that they aren’t taken advantage of. It’s hard to sit back and watch a parent make decisions that we are sometimes wary of. You say that you want your father to be happy so have you actually asked him, is he happy? Even as adults, a new relationship for a parent can be difficult to come to terms with. this what he is telling you that she is doing or are you just seeing an increase in purchases? Are they both going on holiday? It is possible that he is enjoying this new lease of life and thoroughly enjoying the holidays and the new household objects. I am making the assumption that your dad is of sound mind and is able to make rational decisions. If this is the case, then you must respect his decisions and his new relationship. I’d be more worried if I thought she wasn’t treating him kindly than if he was enjoying some trips away. Perhaps you could get to know her a little better? Involve them both fully in your life and that will give you a clearer picture as to the type of relationship they have. Unfortunately, voicing concerns over his new relationship could have a detrimental effect, especially if he feels that it’s a safe and trusting one. Step carefully as you go forward but of course, if you felt that she were using him for his money, broach the subject as kindly as you’re able.
Dear Sariah, I give my children chores every week but we have a continuous battle to get them to actually do them. We're also told that no other kids have to do chores and that many of their friends mums even clean their room for them. Some advice on what’s the right amount and how to get them properly done would be so helpful.
So, my first piece of advice is, whatever you do, do not believe the old “no one else has to do chores” malarkey. It’s just not true. Of course, there are mums and dads who do absolutely everything for their child but there are plenty of others, like me, who expect their children to muck in with the running of a home, including tidying their own bedrooms. Over the years I have tried many ways to cajole and encourage my children to do jobs with a cheery disposition. A couple of them will just get on with it but the others, they moan constantly. Teaching children how to do household jobs is part of being a good parent. We do them no favours if, as teenagers, they still don’t know how to iron a shirt or sew on a button. My advice would be to make the jobs age appropriate and offer a reward system if you feel they are struggling with motivation. Also, despite that bath not being cleaned to your standard, never criticise their effort. A good place to start with young children are jobs such as clearing their plate away, even washing it up, picking up their toys, tidying away their shoes. Jobs can get bigger as children grow so that they have more responsibility. My older children now occasionally prepare the evening meal. In terms of reward, we have used pocket money as the carrot. If jobs aren’t done then pocket money isn’t given. They soon figure it out. Other people pay for each individual jobs done, 10p for putting the toys away etc. With regard to bedrooms, when they’re little, help with room tidying is always a must but as they get older and establish their own identities a little, I have tended to back away from their rooms. It’s their space and if they want to live with a floordrobe, then I’m ok with that. It’s a matter of picking the battles and I’d rather they washed the dishes occasionally. Children are never too young (or old) to muck in with family chores and when everyone gets stuck in at the same time, stick some loud music on and dance through them, it can be a lot of fun that leaves everyone feeling accomplished. Winnie the Pooh:
The Beginnings A new book about E.H. Shepard, the iconic illustrator of Ashdown Forest's most famous son, Winnie the Pooh has just been released: The Art of Winnie the Pooh by James Campbell. James formerly worked for sustainability and environmental organisations for more than 20 years. But being married to E.H. Shepard's great-granddaughter meant Pooh has never been far from his heartstrings, and since 2010 he's been responsible for the oversight of E. H. Shepard's artistic and literary estate.
The book explores the partnership between A. A. Milne and E. H. Shepard, and follows the evolution of Shepard's work, from his first tentative sketches through to the illustrations we know and love, and even on to the characters’ later incarnations at Disney. It presents over 125 full colour images – including never-before-published sketches, finished artwork, personal family photographs and memorabilia. Delving into the history of how Milne and Shepard came together, established a harmonious, professional working relationship, and together created a most special imaginary world which still resonates with children time and again, almost a century later. magazine, and it was there that publisher E. V. Lucas approached Shepard to ask if he would be interested in illustrating some ‘charming poems’ by A. A. Milne. WINNIE THE POOH: THE BEGINNINGS CONTINUED

with extreme nervousness at Punch, not least because of the added costs and un-tried and un-tested format. Their faith was duly rewarded with howling success. Milne and Shepard continued their collaboration with their next volume – Winniethe-Pooh – text, drawings and specific layouts were discussed... it was all in the detail. Shepard visited the Milne's weekend home here in Ashdown Forest in Sussex at Cotchford Farm, drawing Christopher Robin, his surroundings and his toys and of course, the wonderful landscape in which the tales are based. The illustrations match the real views of the open heathlands of gorse, silver birth, bracken, pine trees, etc. that we all know and love. Winnie-the-Pooh himself COMMUNITY BUSINESS DIRECTORY was not in fact modelled on Christopher Robin’s bear living
– the REAL Winnie had a gruffer, more serious-looking appearance, more typical of teddybears. Milne & Shepard decided on a 'softer' looking bear. Shepard based the final Pooh bear on his son Graham's teddy-bear named Growler. So the unsung hero Growler ended up as the model for the bear we all now know and love...who knew? Shepard never lost his affection for Pooh, and many correspondents in his later years, particularly children, received, in reply, a personal drawing of the characters and possibly even Shepard’s secret favourite, Eeyore. These details and much more are covered in this new book which shows the evolution of the images of Winnie-the-Pooh and his friends, from just a few lines in a sketch book through to those preliminary drawings

with corrections, mark-ups and changes, to final versions - some of which weren't even used. These wonderful drawings have been hidden for nearly a hundred years in E. H. Shepard’s own private archive and are being made public for the first time. The release of the book also ties in with an exhibition at the V&A of Winnie-the-Pooh, running from December to April - more of which in a separate feature next month. The book is introduced with a foreword by Minette Shepard, E. H. Shepard’s granddaughter. We are extremely pleased to have a Q&A with the author James:

compiling E.H. Shephard's works for this book? There was a practical problem that many of the earliest drawings of Winniethe-Pooh were in soft pencil and were faded and challenging to reproduce – luckily new techniques enables this challenge to be overcome. The other main challenge was what to put in and what to leave out, as there was a marvellous selection of unseen illustrations to choose from – we tried to show those which added to our knowledge and understanding of how the stories developed.
Why do you think Winnie the Pooh is so universally and eternally loved? Winnie-the-Pooh is uncomplicated, unthreatening, and resonates with almost every character and individual. The stories can be read and enjoyed on different levels by children and adults alike, and the illustrations draw us in to the stories and poems, making them feel we are part of them. There is an element of escapism and fantasy which takes us all away from our day-to-day cares and worries.
What is your personal highlight of the book? I think probably the fascinating comparison between two separate illustrators interpretation of the same poem – the Dormouse and the Doctor – so we can see how Shepard’s version compares with that of Harry Rountree – and why his illustrations (or

decorations, as they are always referred to in the books) were so successful. What has the reception to the book been so far? Beyond anything we had expected! There are few new books featured on Radio 4’s ‘Today’ programme broadcast to 7 million listeners, let alone a children’s book nearly a century old, so it was fascinating that this new book was highlighted in this way, along with numerous other broadcast and print features, including the Times/Guardian/Mail etc, and the Times Literary Supplement – and a reprint was ordered less than 24 hours after publication! The Art of Winnie-the-Pooh: How E. H. Shepard Illustrated an Icon By James Campbell. Foreword by Minette Shepard (Illustrated By E. H. Shepard) can be found in all good bookshops and on Amazon.

Halloween liberated from Purgatory and were free to visit their old homes. The Breton families prayed by loved one's graves during the day and attended church in the evening. They also visited the cemetery to pray by the bones of those not yet buried or for those for whom no room could be found in the cemetery... positively morbid! And no doubt scary for young ones especially... you can start to see where the ghoulish reputation of Halloween came from.

The Eve of All Saints day: so many traditions both pagan and Christian surrounded this time of year it's hard to fully know from where all the current traditions sprung. What we do know: in the eighth century the Christian church fully embraced this special time of year with a feast to All Saints added to the calendar. However the way this time of year was spent depended largely on where you lived. In Brttany, Northern France for instance, the night was a solemn affair, without an ounce of merriment. On the 'night ofCOMMUNITY the dead' (AllDIRECTORY Hallows BUSINESS Eve, Halloween) the Bretons believed the poor souls were living
After prayers, when everyone had gone home to eat and recite psalms etc., during the long night a townsman would go about the streets ringing a bell to warn that it was unwise for anyone to roam the town as the souls were 'returning'...
However following England's break with papal power, Queen Elizabeth forbade all observances connected with All Saints/All Souls' Day. In spite of her laws, customs survived; even Shakespeare in his Two Gentlemen of Verona has Speed tell Valentine that he knows he is in love because he has learned to speak 'puling like a beggar at Hallowmas'. The Queen must have turned a blind eye for her favourite playwright. Of course, like so many bans on excuses for merriment, this one didn't hold. The traditions of All Hallows Eve, All Saints and All Souls Day eventually became the Halloween we know and love today - well some of us do!
It is no surprise to find out that the people of the British Isles couldn't hold with this level of solemnity and ghoulishness without throwing in some cheeky merriment, which is exactly what happened. They would light candles called soul lights to guide their loved one back to their earthly homes but also go out souling: saying prayers for loved ones who've passed on in exchange for goodies; in short door-todoor begging, a forerunner to trick-or-treating. News from the East Grinstead Fire Station your tickets. Money raised will go to Police/ Fire Service/Ambulance and Military charities alongside local charity Jigsaw for bereaved children.
EG Fire Station are inviting members of the local community to join them for an informative evening on 27th October that will be accompanied by food and drink. The event will include speakers from Sussex Police, South East Coast Ambulance Service, HM Army, Fire Control and of course West Sussex Fire and Rescue. Speakers will be sharing their stories from the front line in order to raise money for local charities and to give the public a chance to experience these stories first hand. For instance, their fire service speaker Station Commander Roy Barraclough, will be talking about the Shoreham Air Crash from what he saw as the incident commanders point of view.
On October 13th, the station will be taking part in this year's Macmillan Coffee Morning and are inviting you to join us them. Their coffee morning will be held a little later than usual from 10-12pm. The crew will be baking the cakes and making the tea, as well as giving out advice on home fire safety. They hope to see as many of the local community there as possible all you need are some pennies to purchase your cakes and an empty belly! Drop in at any time to meet the crew, have a chat and have a tour of the station. If you would like to donate a cake and bring one with you then please do. Please just let them know.
Lt. Col. Tania Cubison, who is one of the Military’s Elite Surgeons and serves on the front line, will be talking about her fascinating and vital work. The event will include a formal two course meal provided by 1st Battalion Royal Anglian Regiment and a bar will be available for visitors to purchase drinks.
