Roasted Hake, Warm Pea, Herb, Baby Turnip and Tenderstem Salad Serves 2 people

By Andrew Wilson, Ashdown Park Hotel & Country Club

Ingredients • 2 x 180g hake portions • 125g tenderstem broccoli • 20g fresh mint • 20g fresh chervil • 100g peas • 6 baby turnips • 50g butter • Olive oil • Salt and pepper to season

Method: 1. Blanch the peas in boiling salted water for 1 minute, followed by the broccoli for another 1 minute, then refresh under cold water, drain and set aside. Peel the baby turnips and again blanch in the water for 3-4 minutes. 2. Slice each hake portion twice on the skin side, to a depth of about 4mm, then rub with olive oil and season with salt and pepper. 3. Take a non-stick pan, add a touch of olive oil and heat to medium, then place the hake skin side down in the pan. Turn the heat down to low and leave to cook slowly for 5-6 minutes so the skin becomes crispy. Turn the fish over, add a touch of butter and baste the fish with it, COMMUNITY BUSINESS DIRECTORY then turn off the heat and leave to cool down in the pan – the fish will carry on

cooking and won’t dry out. 4. To plate, warm up the broccoli, peas and baby turnips in a small amount of butter, then add the chopped mint and chervil. 5. Check the seasoning and spoon the garnish onto the middle of the plate, then place the roasted hake on top.

'Life & Loves of a War Hero's Daughter' upbringing, as the eldest daughter of a naval officer, became a journey that can only be described as arduous, yet inspirational and enlightening. It is biography of her life growing up in the 50's and 60's.

Local, East Grinstead resident, Christine Edney, has just published a new book about life with her father, a naval war hero. After her father had returned from fighting in the Second World War and the Korean War, Christine was born in February 1948 and entered into a changing world when austerity measures were still in place, orphanages were full, buildings being restored and the NHS was yet to be launched. Her childhood consisted of being uprooted from place to place, following her father's ship. Christine describes how her unconventional

Her father wrote his own autobiography before he died, describing his time in the Royal Navy from 1934 - 1958, and essentially Christine is continuing the family story. She is doing a Book Launch at The Bookshop, East Grinstead High Street, Saturday 27th October.

Catalonia comes to

EAST GRINSTEAD St Mary’s Church in East Grinstead will echo to the melodies of Catalan songs next month when EG Choral Society hosts around 70 singers and supporters from our twin town Sant Feliu de Guixols (Costa Brava), in a joint concert with the Coral Cypsella choir. The concert, on Saturday 3rd November, will be the fourth time that the choirs have sung together, and EG Choral Society Chair Gill Olliver said members of both choirs have been looking forward to it: “Music has special powers that bring people together in friendship,” said Gill. “We are thrilled to be hosting this visit, renewing our acquaintance with our friends from Sant Feliu, and enjoying some wonderful music together on what will be a night to remember. “Our first joint concerts were in 2002 and 2003. Two years ago the relationship was rekindled when we were privileged to visit Sant Feliu again and we’re delighted COMMUNITY BUSINESS DIRECTORY that we can now reciprocate their magnificent hospitality.” living

The Nuns & Friendly Ghost of Church Lane by Kathryn Ferry

For more than 100 years East Grinstead solicitors Peerless de Rougemont occupied a row of historic houses along Church Lane, the road in between Sackville College and St Swithun's Church. Now that the last partners in the firm have retired the builders are in and, if you've been wondering what's happening behind the scaffolding, the buildings are being transformed back from offices into homes. In the 1850s, however, Church Lane was the talk of the town for other reasons, when it became the headquarters of one of the first orders of Anglican COMMUNITY BUSINESS DIRECTORY nuns to be established anywhere in Britain since living

the Reformation. The man behind the Sisters of St Margaret was John Mason Neale, warden of Sackville College, a prominent figure in the Oxford Movement that pushed towards introducing elements of Catholicism into the Anglican church. He’s most famous these days as the writer of Christmas carol 'Good King Wenceslas'. Neale's study looked out over miles of beautiful Sussex countryside but he knew that the picturesque cottages and farms were actually sites of horrendous poverty and disease. His idea was to lead a community of women, whose faith would give them the strength to nurse dangerously ill people who

The first two sisters went to live in Sackville College in 1854, nursing the sick inmates of the Almshouse and receiving spiritual training for their new role from Neale himself. They subsequently went to live and nurse at Rotherfield, near Crowborough, where the first Mother Superior, Ann Gream, had grown up. In June 1856 they moved into the large red brick house at No 8 Church

Lane, a premises which would allow them to expand and to which Neale could easily pop in to offer advice and lead the nuns in prayer. The outbuilding off the street that looks like a small garage became their first oratory. Neale got his friend, the nationally important church architect G. F. Bodley, to convert the space and it was here that he started giving the daily Eucharist and where, as Neale's biographer A. G. Lough put it, 'the Blessed Sacrament was reserved for probably the first time in the nineteenth century in the Church of England...' In religious history this was ground-breaking but it was also highly controversial. The Bishop of Chichester had already banned Neale from ministering in any parish COMMUNITY BUSINESS DIRECTORY church and the Vicar of East Grinstead was so worried living

about Neale's influence that he preached a sermon denouncing 'Popery' directed at the Warden of Sackville College. When one of the original nuns, Sister Amy, died in 1857 there were anti-Catholic riots at her funeral in Lewes. Worried by this strength of feeling the landlord of No 8 Church Lane gave the sisters notice to quit.

Despite this early prejudice the number of nuns continued to grow and their mission expanded. By 1861 they were renting six houses in East Grinstead and, having taken over the orphanage run by Neale's sister in Brighton, they were back in Church Lane. The building currently occupied by Spires Hairdressers became the Mother Superior's room and dormitories. In the courtyard next door, now used for parking, a stone cross was erected and behind this, in a former workshop, the nuns created their new oratory and refectory. This building also linked the nun’s accommodation to the orphanage which took up the three houses from 73-77 High Street (now Daisy Chain, Dixon Anderson Tailors and The Fireplace Centre). The 1861 census shows thirtythree orphan girls between the ages of four to sixteen living here. According to Sister Kate this 'blue-frocked, whitecapped, rosy little crew was

A client who happens to be a world renowned medium confirmed the presence of a ghost while having her nails done by Beauty Director, Siobhan Woods, and her sense that it is a girl, around thirteen years old and called 'Lizzie', suggests the spirit may have been one of the orphans. 'She's a friendly ghost,' says Karen, 'and she seems to be comfortable with us as a family business.'

HALLOWEENY MUSINGS Jack-o-Lantern There is an old Irish tale associated with the jack-o’-lantern which in folklore represents a soul who has been denied entry into both heaven and hell, so must wonder the earth: On his route home after a night’s heavy bingedrinking, Jack encounters the Devil and tricks him into climbing a tree. A quick-thinking Jack etches the sign of the cross into the bark, thus trapping the Devil. Jack strikes a bargain with Satan that he can never henceforth lay claim to his soul. After a life of sin, drink, and dishonesty, Jack is naturally refused entry to heaven when he dies. Keeping his promise, the Devil refuses to let Jack into hell and, to boot, throws a live coal straight from the fires of hell at him. Being a cold night, Jack places the coal in a hollowed out turnip to stop it from going out, since which time Jack and his lantern have been roaming across town and country, looking for a place to rest.

The 1978 Film: Halloween This famous (or infamous) seventies movie made its mark, but was created on a shoestring budget. The prop department had to use the cheapest mask that they could find in the costume store which turned out to be a Star Trek (1966) William Shatner mask. They later spray-painted the face white, teased out the hair, and reshaped the eye holes. Shatner admitted that he had no idea his likeness was used for this film until, years later, during an interview someone mentioned it was a mask of him. The Owl

When in Mexico Mexicans do not celebrate Halloween as such, but they have a national ‘Day of the Dead’ that starts on the 31st October and runs to the 2nd of November. Family and friends gather to pray for and remember those who’ve died, and help support their spiritual journey. These celebrations developed from ancient traditions among the indigenous, pre-Columbian cultures. Such rituals glorifying ancestors, have been observed for 2500 – 3000 years. The festival fell in the ninth month of the Aztec calendar, about the beginning of August, and was celebrated for an entire month. The festivities were dedicated to the goddess known as the “Lady of the Dead”. Such practices originated in the south of Mexico. At some point the festival was Christianised and made its move down the calendar to be celebrated across All Hallows eve/All Saints Day/All Souls Day in October/November. In the north these days were observed only in the traditional Christian manner, the Day of the Dead was not recognised and it was only in the latter part of the 20th century that it was embraced, finally becoming a coutry-wide public holiday in the 21st century. The image of the owl is indelibly associated with Halloween, rather unfairly to this beautiful species. In folklore of various countries, owls have been admired, despised and revered in equal measure. No doubt the bird’s unusual features have caught human imagination in both positive and negative ways over the centuries. Apparently, a Roman superstition was that witches transformed into owls, and sucked the blood of babies?! Centuries ago the English seem to have adopted a less-than-positive view of the bird (through osmosis perhaps); an owl was considered an ominous being, as it hunts during night. It was thought to be the envoy of witches and if you hear a hoot meant a witch was approaching. During the eighteenth and nineteenth centuries, the poets Robert Blair and William Wordsworth used the Barn Owl as their favourite “bird of doom”… the screech of an owl flying past the window of a sick person meant imminent death… Thank goodness we live in less suspicious times and can appreciate owls for the beautiful creatures they are!

Mirror on the Wall A few olde Halloween traditions that seem to be on the divination side of the spiritual (rather than the scary-ghost side) involved traditions of the British Isles whereby foretelling of one's future spouse was attempted. For instance, an apple would be peeled in one long strip, then the peel tossed over the shoulder. The peel was believed to land in the shape of the first letter of the future spouse's name. Another method of divination: a salty oatmeal bannock (bread) was given to the person to eat in three bites who then went to bed in silence without a drink. This is said to result in a dream in which their future spouse offers them a drink to quench their thirst. Unmarried women were told that if they sat in a darkened room and gazed into a mirror on Halloween night, the face of their future husband would appear as a reflection in the mirror. However, if they were destined to die before marriage, a skull would appear. How people choose a husband before the days of the internet... the mind boggles... (jokes).

Make a window cleaner that's safe enough for younger children to use (if you can get them cleaning!) Mix 1 cup of water and 1 cup of white vinegar together, then add 1/4 cup of freshly squeezed lemon juice. Simply spray on the window/glass and wipe clean with a dry paper towel, a microfibre cloth or even old newspaper.

Centenary Celebrations come to East Grinstead To celebrate the centenary of women getting the vote, Soroptimist International East Grinstead is holding a FREE event at the Meridian Hall, East Court. This will take place on Friday 19th October at 7:30pm (doors 7:15pm). There will be a talk about the EG Women's Suffrage Society and the Great Pilgrimage of 1913. Another talk will focus on equality of pay and opportunity in women's football. There will be monologues and an art exhibition by a local all-

female art group. A singing group will perform two powerful suffrage anthems. This event is supported by the Women's Vote Centenary Grant Scheme; there were three application rounds during the year and Soroptimist International EG was delighted to secure the grant in the third and final round. As a result all tickets (including refreshments) will be free. Tickets need to be booked in advance at Bullfrog Music, 15-17 Ship Street. Adults and young people aged eleven and over are welcome to attend.

Situated in the corner of the garden alongside the theatre, Chequer Mead Costume Store is run by a team of 8 experienced volunteers. We can put costumes together to suit any theme or purpose and pride ourselves on our personal service and quality. Formed in 2008 when costumes were given to us on long term ‘loan’ by most of the local Am Dram groups, who were delighted to have a ‘community’ store. We have since received donations from customers and supporters alike, having benefited from many wardrobe and attic ‘clear-outs’. All money earned goes towards the theatre; so far we have raised almost £50,000. Our prices range from £5 to £30. KnitterNatters: Winning Big Time raw materials, building a website and were trading by the Spring. The successful entrepreneurs generated £900 in revenue in just eight weeks! They paid back their loan and made a donation to the charity as per the terms of the competition.

Last month Imberhorne students, Ruby and Niamh Doyle in Year 8 & 9, travelled to the 'Business Tycoon in Schools' competition finals at Windsor Castle. The sisters scooped the winning Key Stage 3 category award for their KnitterNatters social enterprise, out of thousands who entered across the country.

HORSE TRANSPORT LOCAL HISTORY NOTES by Dorothy Hatswell of the East Grinstead Museum

There has been much talk in the media recently about electric vehicles and even a Formula E, where electric racing cars are being pioneered. Then, of course, there is an ongoing debate about driverless cars. It made me think how far we have come in road transport over the last 132 years. Since the beginning of the C19th various efforts were made to put a horseless vehicle on the road, starting with Richard Trevithick’s steam powered car in 1802. The first car with a combustion engine was built in 1885 and on the road the following year. Invented by Karl Benz, it was tested for suitability for long distances by his wife, Bertha. In COMMUNITY England this new BUSINESS DIRECTORY contraption was allowed on public roads as long as it did living

not exceed 4mph and was preceded by a man with a red flag and a horn. The act which embodied these restrictions was repealed in 1896. Apart from railway trains which emerged in 1832, all transportation until then was either by man-power or horse-power. Horses and sometimes, especially on farms, oxen, were used to pull carriages, buses, carts and

ploughs. Early fire engines were propelled by horses and the grappling irons in the museum were sometimes pulled by horses. East Grinstead was in line with the rest of the country in this respect. and myself for a “spin” one Sunday afternoon in his recently acquired Morris. Just as the “war to end all wars” (WW1), had halted the spread of privately-owned vehicles, so did the Second World War. Petrol was only obtainable for essential services, and most existing private cars were laid up for the duration. The only vehicles on the road were military ones or some civilians, such as doctors. their homes around the town. Read’s, a local furniture shop, did their deliveries and also removals, using their horse drawn vans and lorries. They were a familiar sight around the town and surrounding villages. Coal carts and milk deliveries were by horse and cart. The horse knew his round and stopped outside customer’s homes without prompting by the milkman. Many urban and suburban rose bushes were improved with the application of their byproducts! A familiar sight until the nineteen sixties, when electric milk floats were introduced. An early use of battery driven vehicles, their limited range made them good candidates for this emerging technology. Around East Grinstead horsedrawn buses were a common COMMUNITY BUSINESS DIRECTORY sight and their drivers were well known to the public.

When one of them died his funeral brought residents out to watch. The coffin carried on a bus, of course! Early cars were beyond the reach of most people, only the very wealthy could afford them. Among the earliest owners of the new-horseless carriages was Edward VII. He acquired a Daimler in 1903. The First World War effectively put a stop to further development of petrol engine cars for civilian use. All resources, both of manpower and materials, were concentrated on armaments. However, this also forwarded technological developments. Between the wars the genius of the Ford company made it more possible for some ordinary people to afford a small car, although it was still quite unusual. I can remember most of my street turning out to see my uncle coming to take my parents

Once the war ended demand for cars increased rapidly. In the mid-fifties manufacturers gave customers a range of colours for the bodywork and interior upholstery. This could make for many permutations, very different to the choice given by Henry Ford in the twenties; ”any colour you like, as long as it’s black”! For several years they were running alongside horse drawn transport. Today the majority of people own a car and think nothing strange about it. We rarely reflect on how far technology has taken us in a relatively short time. Our reminder of these, scarcely remembered times is our use of the term “horsepower” to describe the capacity of their engines. What a sight it would be if we really had ten or more horses pulling our modern cars, and think how glorious our rose beds would be!
