Venison casserole with mashed potatoes and braised red cabbage By Andrew Wilson, Exec Head Chef at Ashdown Park Hotel & Country Club
Venison casserole: Ingredients 1 tbsp olive oil 25g butter 2 onions, diced 4 fresh garlic cloves, chopped 4 rashers smoked bacon, roughly chopped 500g mushrooms 2.5kg haunch or shoulder of venison, diced ½ bottle red wine 400ml water 2 beef stock cubes, crumbled 3 tbsp redcurrant jelly salt and freshly ground black pepper, to taste 50g cornflour Method Preheat the oven to 150°C/130°C fan/Gas Mark 2. Heat the olive oil and butter in a large lidded casserole dish on the hob, then add the onions and cook until softened but not browned. Add the garlic, bacon and mushrooms and cook for a further minute. In a frying pan, brown the venison a handful at a time and add to the casserole. Once all the meat has been browned add the red wine, water, stock cubes, redcurrant jelly, salt and pepper to the casserole dish. Bring to the boil and stir well, then cover with the lid and place on the
middle shelf of the oven to cook for 90 minutes. Make a paste from the cornflour and 2 tbsp water. Remove the casserole from the oven and add as much of the cornflour paste as you need to thicken the gravy – you can do this a little at a time if you’re not sure. Return to the hob and cook on a low heat until the gravy has thickened – this will take about 5 minutes.
Method Heat the garlic and olive oil in a saucepan on the lowest heat possible and leave for an hour, for the garlic to infuse and become really soft.
Ingredients
Use a potato peeler to pare off the skins as thinly as possible and then chop the potatoes into halves or quarters, depending on their size. Add to a saucepan with boiling water and 1 dessertspoon of salt and simmer for approximately 20 minutes until tender – if they’re not cooked enough you’ll get lumpy mash!

Drain the potatoes and cover with a clean tea cloth for 5 minutes to absorb some of the steam. Add half of the garlic and oil and beat with an electric whisk. Once incorporated, add the rest of the garlic and oil and whisk until smooth, seasoning well with salt and pepper.

Braised red cabbage: Ingredients 1 medium red cabbage, quartered, cored and sliced 2 red onions, peeled and sliced 80g dried cranberries 2 Bramley apples, peeled, cored and grated 1 tsp ground cinnamon 25g demerara sugar 3 tbsp red wine vinegar Salt and pepper

Method Preheat the oven to 170°C/150°C fan/Gas Mark 2. Mix all of the ingredients together and put in an ovenproof dish, covered with foil. Bake in the oven for 60-90 minutes, until the cabbage is tender and juicy, stirring a couple of times during cooking. Allow to cool and store in the fridge, then reheat when needed.

Penshurst Place & the Duke of Buckingham We are truly lucky in this area to have so many markers on our doorstep of our country’s great past. One of the highlights, of course, is Penshurst Place, a short drive from East Grinstead which, at this time of year, comes into its own with its rooms that unlock eight hundred years of history and eleven acres of pristine Elizabethan walled gardens to admire in the (hopefully) late summer sunshine. Plenty here, in short, to keep the most ardent heritage fan captivated. As you stroll around enjoying the family portraits, furniture, and beautiful tapestries, however, it’s easy to forget that Penshurst is as much about people as place. Indeed, its long history dazzles with characters from poet Sir Philip Sidney to Elizabeth I herself. Not all of them had fairytale endings. One past owner in particular played a part in a deadly episode of betrayal, jealousy and dirty politics, worthy of the most nail-biting conspiracy thriller. His crime? To get on the wrong side of that most ruthless of monarchs, Henry VIII. Edward Stafford, third Duke of Buckingham
The portrait of Edward Stafford, third Duke of His life, like the times in which he lived, started Buckingham, in Magdalene College, Cambridge, on a turbulent footing. Only five when his father, shows a well-dressed man in his forties, draped Henry Stafford, was beheaded for participating in in bright colours, copious jewels and a fur-lined a rebellion against Richard III, the young Duke’s cloak. The impression is every bit a wealthy man, childhood was spent being quietly passed from comfortable with his place in the world and not relative to relative for his own protection. When afraid to show it. The Duke, born at Brecon Castle in Richard III’s reign came to its own bloody end at Wales in 1478, owned Penshurst until his death in BUSINESS DIRECTORY the hands of Henry Tudor on Bosworth Field in 1521. invasion of France. In 1520 he attended the legendary ‘Field of the Cloth of Gold’, the sumptuous two-week friendly meeting in northern France at which Henry and French King François I tried to outdo each other in displays of splendour.
Henry Stafford, second Duke of Buckingham
become Henry VII, insisted that the boy be brought up and educated as a member of his own family, a ward of his mother. From being made a knight of the Order of the Bath at the age of only seven, the young Duke’s ascendancy was swift. By the time he reached adulthood, the Duke was a bright star of the early Tudor court, with hardly a royal wedding or reception for foreign ambassadors taking place without his attendance. 1494 sees him present at the creation of the King’s son, the future Henry VIII, as Duke of York. One year later he’s made Knight of the Order of the Garter. In 1501, starting to show signs of the ostentation and love of fine things that would be much commented on by his contemporaries, he attends the wedding of young Prince Arthur and Catherine of Aragon, turning up in a flamboyant gown worth £1,500, around just under a million pounds in today’s money. A few years later, in 1509, the Duke, as Lord High Steward, again takes centre-stage, bearing the crown at the coronation of Henry VIII. He’s immediately made a member of the new king’s privy council and, as a mark of political power, is awarded ‘licence to crenellate’ – that is, fortify - his main home, Thornbury Manor in Gloucester. This he rebuilds as a formidable towered castle, meant to awe and impress. Today it still stands as a luxury hotel and wedding venue.
Although Thornbury was the Duke’s main home, his ties to our area were strong. His oldest son, Henry Stafford, was born at Penshurst in 1501. Subsequently, in 1519 the Duke instigated one of the most glittering and expensive occasions in the house’s history when he invited Henry to stay. By now, at forty years old, people called him ‘Proud Buckingham’ and he couldn’t help lavishing £2,500, over a million pounds today, to accommodate the King and his two hundred-strong entourage in utmost luxury. The trestle tables used for this can still be seen in the Baron’s Hall. It’s easy to imagine them groaning with food as music played, and people drifted around in fur and jewels, talking about the fine hunting to be had in the surroundings. The Duke wanted to make an impression on Henry. As it happened, he succeeded. But the impression may not have been all to his favour. Despite the lavish hospitality, it seems that Henry and the Duke were never more than cool towards each other. On a personal level Henry preferred the company of men not born into the aristocracy, such as his powerful Lord Chancellor, Cardinal Wolsey. It’s easy to imagine Henry finding the Duke with his impeccable aristocratic connections off-putting. The Duke had married Eleanor, sometimes called ‘Alianore’, the eldest daughter of the powerful northern Percy family. His four children were married into the highest nobility, making his extended family a who’s who of the country’s foremost earls, lords and dukes. This meant he was a natural – and, no doubt, vocal - mouthpiece for an aristocracy becoming increasingly disgruntled by their perceived exclusion from office. The story
As befitting a man of influence in Tudor times, the Duke also pursued a military career. the Duke, with all his aristocratic favour and connections, flaunted so well during that stay at Penshurst, storming the throne? How easy to see in the untrustworthy atmosphere of the Tudor court, the Duke’s very existence was a ticking timebomb.

goes that, on one occasion, the Duke was holding a bowl of water for the King to wash his hands. As Wolsey approached to use it himself, Edward tipped the whole lot into the cardinal’s shoes. For Henry, there was also the matter of the Duke’s inconvenient family tree. A descendant, on his father’s side, of Edward III, and his mother a sister-in-law of Edward IV, the King would have been painfully aware that this well-dressed, charismatic and successful man’s claim to the throne was as strong (or as tenuous) as his own. It wouldn’t help that a foreign ambassador, it’s said, described the Duke as ‘my lord of Buckingham, a noble man, and would be a royal ruler’. The King would have looked at his own position. By 1520, still married to Catherine of Aragon who had given him one daughter, Mary, he still had no son or heir. Should he die, what was to stop 16
And time, of course, ran out. An anonymous letter was sent to the King. Witnesses to a treasonous plot involving the Duke appeared. On 8th April 1521 the Duke was sent for. As he set off for London from Thornbury that Spring morning, he would have had no idea that his journey was due to end a few hours later in arrest and being thrown into the Tower for treason. The charges: listening to prophesies of the King’s death and of his own succession, and expressing a desire to kill the King. The investigation had been spearheaded by Henry himself. The Duke denied all charges but his fate was sealed. On 17th May he was taken to Tower Hill and beheaded. A contemporary chronicler reported that his execution was ‘universally lamented by all London’. Carlos V, King of Spain and Holy Roman Emperor, said ‘a butcher’s dog has killed the finest buck in England’. Edward Stafford, third Duke of Buckingham, was subsequently buried in the church of the Austin Friars. According to Shakespeare’s COMMUNITY DIRECTORY ‘Henry VIII’,BUSINESS the writer of the anonymous letter, which sealed the Duke’s death warrant, was a

disgruntled cousin. Other sources blame other members of his household. If the Duke really was guilty of plotting an attempt for the throne or not remains a mystery. Henry got what he wanted. The removal of a rival and, for now, the Tudor dynasty protected. Of course, it wasn’t to be the last time a rival would pay for the King’s insecurity on the scaffold! For Penshurst it meant a new era of royal ownership. Despite having beheaded its owner, Henry had fond memories of his stay and was quite prepared to enjoy it as a hunting lodge. A few years afterwards he would be courting Anne Boleyn. Penshurst’s proximity to her family home, Hever Castle, would have been an added attraction.

Students Making a Splash! Four 17 year olds from East Grinstead have just launched a new product 'the Wash Wizard', a sponge designed to help you stay clean when things get dirty and there's no shower about! It's taking off at a rate of knots and here is a Q&A with the young entrepreneurs about their exciting product:
What exactly is Wash Wizard? Wash Wizard is a small, compact sponge with just the right amount of soap and Aloe Vera and needs just a splash of water to activate. The sponge lathers up and enables you to wash all-over, and as they only contain natural ingredients there is no need to rinse.
Who came up with the idea? Rosie Hooper, Sol O’driscoll, Siam Tongsom and Freddie Webb, we are four 17 year olds from the East Grinstead area and we came up with the idea for a school GCSE project. We were asked to create a business idea and all of us thought that the sponges were a great idea for keeping clean when there was little water (and washing facilities) available. We came up with a name and made sure all the domains were free, asked Sol’s uncle to come up with a design and briefed the manufacturer. They did a special short run for us at a really good price and we started giving them away for people to try out.
How did the initial idea come up and what happened from there? 18
Rosie: Originally the sponges were used to wash patients in hospitals, and my mum had a couple lying around the house from ages ago. I thought they would be ideal for festivals or anywhere that you don’t have access to a shower really. Because they’re so small you can literally take them with you anywhere, just pop it in your pocket or handbag and you’re good to go.
What local support from the school and community have you had so far?
What has the feedback been so far?
We see the business expanding to other sectors such as travellers, sports, kids, even muddy dogs and being sold internationally. We will be donating a percentage of their sales to various homelessness charities in the UK. Each of us feels passionate about supporting the homeless, and Wash Wizard’s donations will be helping towards finding people temporary and long term accommodation, jobs and generally helping people to reenter society.
We’ve had fantastic support from our school friends and family who have really helped spread the word and raise awareness via social media. It's been incredible!
Where do you see this going in the future?
It’s already proven popular at all of the top UK festivals this summer: Secret Garden Party, the Isle of Wight festival and Glastonbury goers. Feedback has been amazing. THE BIG DRAW FESTIVAL 2016 - the world’s biggest celebration of drawing AT THE CREATIVE HUB
The Creative Hub, an art studio for young artists, is a proud member of The Big Draw and is hosting this year’s drawing extravaganza family event on the 2nd of October, in which children and adults of all ages, who fancy engaging with their artistic side, are welcome. Founded in 2000, ‘The Campaign for Drawing’, now called The Big Draw, is an arts education charity that promotes visual literacy and the universal language of drawing as a tool for learning, expression and invention. As we know, art, and that includes drawing, changes lives. The 2016 Big Draw theme is: STEAM - Science, Technology, Engineering, Arts and Maths. It’s a take on the STEM subjects by adding in an ‘A’ (Art), placing it up there as being as important as the other subjects - and something that the British Isles is so good at! September Reminders for your Garden SHRUBS AND TREES This month is a good time for planting out container grown trees and shrubs. When planting ensure the bottom of the hole is broken up and some well rotted compost is incorporated into the hole. Keep well watered particularly if it is warm and dry.
LAWNS Rake fallen leaves and other debris from your lawn, aerate the lawn with a fork or lawn Aerator. Apply Autumn Lawn Feed following all the instructions on the box. September is a good month for sowing grass seed.
FRUIT AND VEGETABLES Plant Spring Cabbage, Kale and Savoy’s. Harvest Sweet Corn and Onions. Sweet Corn is ready to
harvest when the silks have turned from golden to brown and onions are ready when the tips of the leaves begin to turn yellow. Any unripe tomatoes should be hung upside down in a cool dark place still on the vine to ripen. Cut and store marrows before the frosts arrive. Rhubarb, raspberries and strawberries can be moved this month. It is a good idea to move these every 3 or 4 years. Early pears and apples will be ready for picking now. Cover autumn fruiting blackberries and raspberries with netting to keep off the birds.
ROSES Prune your rose bushes and remove the last of the flowers once they have withered. Tie in climbing and rambling roses ready for the winter.
MISCELLANEOUS Plant spring bulbs including tulips, daffodils, hyacinths and crocus. Compost your summer bedding plants once they are over. Continue to water the garden during dry spells

Computer Tips: the happy choice As Windows Vista rapidly follows the popular Windows XP into retirement, many owners are in the happy situation of choosing their next digital companion. The choice is better now than it has ever been. Beyond the comfortable borders of Windows lie some attractive alternatives including Mac, Chrome OS and Linux. Compared with Windows, all three tend to suffer less from malware which can only be a blessing. Chrome OS machines are cheap, fast and simple-to-use. Intended mainly for browsing the web and light office use, there is nevertheless plenty of free and capable software for all your usual applications. Having the bulk of your data stored in the internet, loss of a Chrome OS machine is a passing grief: a replacement machine swiftly has you back in business. Macs go out of their way to make the transition from Windows a simple affair. Using a Mac is different from Windows in much the same way that driving your friend’s car is different from your own. Just as it may be painful to hand back your friend’s sporty Jaguar, Macs offer excellent features that I would miss. These include their superb screens, while searching for a document is so effortless that it seems almost
superfluous to organize them. Linux comes in many flavours that share the qualities of being freely available and robust. While still an enthusiast’s choice, Linux delightfully accepts those older computers despised by other operating systems since it is less demanding. If you think this might be for you, then you are likely right since it takes a degree of courage to make the leap into Linux. Previously, choosing the ‘wrong’ operating system might leave you marooned on a digital desert island, bereft of the software that you wished to run. Fortunately this is largely no longer true. WALL HILL MAIL ROBBERY LOCAL HISTORY NOTES by Dorothy Hatswell of the East Grinstead Museum On Saturday, July 18th 1801, a man and his adopted son stayed overnight at the Rose and Crown in Godstone. The next day they walked to the Blue Anchor at Blindley Heath, where they asked many questions about the times of the mail carts. They were next seen by Robert Ayshford, who knew them slightly by sight, on East Grinstead Common. They walked on to Wall Hill on the border of Forest Row and Ashurst Wood and hid in a field. They opened the gate and, when the mail coach approached, they stopped it by aiming a gun at the post boy, William Edwards. The horse and cart were then driven into the field and the horse let loose. The Beatsons took the money from the mail bags and around £12,000 was found. They went off in the direction of Forest Row,

where they dumped some of the actual bags. In the meantime, William Edwards walked to East Grinstead, which he reached at about 2am, and raised the alarm with Thomas Palmer, junior, the East Grinstead Postmaster. They were unable to apprehend the robbers, who were next seen in Hartfield. The pair ditched the rest
of the bags in a cornfield. When discovered, they still contained nearly £10,000. However, this was not until August, when the field was harvested. The two men were now on the way to Westerham, via Holtye and Edenbridge. They went into the Chequers Public House and ate pork and beans washed down by brandy and water. The bill, which came to two shillings, they paid for with a £20 note. This aroused the suspicion of the landlady, the Widow Turney. They then hired a gig to take them to Deptford, and then on to Oxford Street. From there they travelled north towards Liverpool, probably en route to Ireland. They stayed overnight at The Angel near Knutsford. The next morning they left Knutsford and continued their journey to Liverpool. Coincidentally, the mail coach arrived in the port at almost the same time as they did. The description of the two wanted men was on board in the July

22nd 1801 edition of the Evening Mail. The surveyor of the General Post Office was nearby and he, at once, went to the inn at which they were staying. On searching their persons and belongings the discovery was made of a pistol and bank notes wrapped in a letter from Lewes. They were returned to Bow Street in London and then committed to the County Gaol at Horsham, to be tried at the next Assizes. The trial started on March 27th 1802, before Judge Hotham. The evidence was so clear that it was a foregone conclusion that they were guilty, although John Beatson tried to claim that he alone was guilty, and that his son was not. In spite of this plea they were both found guilty and later that evening sentence was passed. Both were ordered to be hanged near to the site of their crime. They both collapsed on hearing the verdict. A gallows was erected close to the spot where the robbery had taken place. The pair arrived in a cart, seated on their own coffins, at about noon on April 7th 1802. After asking for forgiveness they were duly hanged in the sight of the large crowd that had gathered to witness the terrible spectacle. The estimated numbers range from 3,000 to 20,000. The truth is probably somewhere in between. Children watching were taken to have their heads rubbed on the shoes of the two dead men. This was common practice, designed to deter those so treated to steer away from a life of crime. The bodies were then taken back to Horsham for burial.
Richard Morton. He took them back to London in a gig. They had used this break to reconnoitre the area and the postal arrangements. They must have discovered that the best day on which to hold up the mail coach was a Sunday, as there was no mail on Saturdays so the Sunday delivery could be expected to be twice as much as usual. Back in London the robbery was planned. How much Morton was involved is unclear. In July the Beatsons returned to Sussex and carried out the robbery. It appears that John Beatson, nearing the end of his life, was doing this to help his adopted son. It is also to their credit that they in no way harmed the post boy, only threatened him; even the horse was treated well. At the trial John tried to save William by protesting that he had acted alone. William comes across as a rather weak character, who got into financial difficulties, but John appears to have done everything he could to help him. In the days when people were hanged for stealing a sheep, then the punishment was not severe, nevertheless I feel some sympathy for the older Beatson, as he seems to have been pulled into the affair for altruistic reasons. If you would like to learn more about this event in the history of East Grinstead, then come to our special exhibition, “The Post comes to East Grinstead”, which is being guest-curated by the East Grinstead Post Card and Stamp Club. The story of the mail services in East Grinstead is then taken forward, past the “Penny Black” into the present day. The exhibition is open from September 6th until the end of October.

Abbie Throws for Gold
In 2012, East Grinstead girl Abbie Hunnisett entered the CP Sport Grand Prix events with the Distance Club which is a purely Paralympic event. It was in the same year, having then watched the Paralympics in London, that Abbie decided she wanted to take her throwing more seriously, and attended a talent identification event at Lee Valley set up by British Athletics. It was here she met coach Camilla Thrush and joined the Weir Archer Academy who put in place strength, conditioning, and a throwing programme to help Abbie progress towards being selected for international competitions. And Abbie has not disappointed! With the Paralympics very much the ‘thing to watch’ this September, here is a Q&A with her father Mark Hunnisett who explains more about Abbie’s achievements: What is Abbie’s background and how did she come into the sport of club throw? Abbie was starved of oxygen at birth for a long time and the result was brain damage and cerebral palsy. The whole of her body is affected, the right side more than the left. She has learning difficulties and cannot complete the main activities of daily living for herself, i.e. eating, drinking, washing, etc. She can’t walk unaided and mainly uses an electric wheelchair to get around. She used to suffer from epilepsy too, although luckily for the moment this seems to be in remission. She got into sport through her school Treloar (a special school) during PE one summer around the age of 12. In 2012 we watched the club throw competition at the Olympic Park and Abbie started taking her throwing seriously from then.
Since participating in the sport, what have the highlights and milestones been along the way from the beginning to now? Abbie used to ride in the Dressage competition. She was good, having started when she was just 4 years old. At one point she was even being coached by Clive Milkins - the coach to Sophie Christiansen, the Paralympic champion and gold medallist. However changing sport direction about 3 years ago, she was picked up in her first full competitive season of Distance Club by British Athletics for the Futures Programme which was fantastic. The European Championships in Swansea in 2014 were a milestone as she wore the GB kit for the first time! Then in 2015 Abbie competed at the Olympic Park in the Anniversary Games where she set a new personal best and broke the European record to become the UK and European number one for that year. She also won Bronze at the World Championships in Doha and a Bronze this summer at the Europeans in Italy (in a combined class event) on points; these were both also great achievements. But of course, being selected for Rio tops the lot! What does her coaching regime involve? What is the most challenging part of her training?

weights and cardio: 3 sessions a week on her core; 3 drills sessions based around her throwing technique; she then throws about 3 to 4 times a week. But all of this depends of course on at what point she is in the season and whether she is on a taper towards a competition. She also has soft tissue massage or physio once a week too, to keep things in check. The hardest part of her training is the throwing, as it is especially challenging for Abbie to hold onto the technical elements of her throw and be fast at the same time; it is always challenging to maintain things through the season when, from week to week, Abbie can somewhat lose things we had worked on for three or four weeks beforehand. By which process was she selected for Rio? Rio selection is based on a number of factors, but starts about 18 months out from Rio, with performances at the World Championships and your world rankings over the 12 months leading into Rio. You don’t just have to be throwing well, but injury free and ranking high in the top 4 or 5 in the world to make selection. What are Abbie’s hopes for the Paralympics? Abbie would love to get a medal of course; this is her first Paralympics so to enjoy the experience and medal would be fantastic. If we get everything right on the day she stands a great chance.
What local support have you had? To get to Rio Abbie has had loads of support from different people and companies. Remap, a charity that has helped with the making and adapting of her throwing frames, based in Kemsing, have done a great job, Mike Baxter is the engineer that has done all the work, and recently Welding Innovations has stepped in to help with a lighter frame. Charlotte and Petra from Ascot Rugs have supported by making the covers for the seat and back rests, whilst James Carmichael has been looking after the physio side of things; he is based in Forest Row. Soft tissue has been supported by Ali Creelman and Adam Hooker, both from East Grinstead. To be honest there are loads of other people we could name as lots of people over the years have helped out. Gielgud Academy News The Gielgud Academy (GAPA) celebrated its 5th birthday in style last month. Joining the celebrations were GAPA patrons former prima ballerina Dame Beryl Grey, Scottish Ballet’s Artistic Director Christopher Hampson and former Royal Ballet ballerina Alfreda Thorogood. The patrons and parents were treated to a presentation of dance, drama and musical theatre extracts. In addition, the winners of the recent GAPA Creates 2016! choreography competition performed their pieces. Additional highlights included a contemporary dance to David 34
Bowie's Life On Mars and an extract from Swan Lake Act 2. After the GAPA presentation came the annual prize-giving ceremony where pupils were rewarded for determination, musicality, progress and perseverance amongst other qualities. SUNDAY 25TH SEPTEMBER EG10K. This year sees the seventh running of the East Grinstead 10k. The race supports two charities: Prostate Cancer UK, in memory of Andy Ripley, and East Grinstead Lions. In the last six years, we have donated nearly £20,000 from race proceeds. We welcome runners of all standards and a friendly atmosphere is guaranteed. Andy Ripley’s son, Marcus, will start the race. Pre- and post-race massage available. Refreshments are provided by the Lions and Meridian FM encourages the competitors with music and commentary. Starting time is 10am, at Imberhorne Upper School and finishes in the recreation ground opposite the school. The course is multi-terrain, largely run on Worth Way and footpaths, with the last 3k on local roads. All finishers will receive a medal and race T-shirt. We use chip timing to give runners an accurate time. Entry fees are £14 (runners affiliated to UK Athletics) and £16 (others). Entry is through the race website www.eg10k.co.uk and at runbritain www.runbritain.com. There are prizes and trophies for the first junior, senior and veteran man and woman. WEDNESDAY 28TH SEPTEMBER East Grinstead Art Society - workshop. A meeting when artists bring their own materials and paint or draw, etc. 2 - 4pm, St Swithun’s Church Hall, St Swithun's Close, RH19 3AZ.
