This could be a wake-up call for you to spend some time determining if you truly are following your passion. For some, you may just need to allow more time for fun and travel in your life. For others, you may realize that you are in the wrong career or job and need to make a more dramatic change. If you had one year to live

If I had one year to live, I would construct myself a lake house, that was cozy and quaint, but perfect for summer barbecues. The house would have a large backyard that I would string with warm, glowing fairy lights for late summer evenings, a fire-pit for s’more-making and a hammock for hanging around on lazy, hot, humid days. In the evenings, I would sit on adirondack chairs with family, friends, and ice cold beers to watch the sunsets over the water.

If I had one year to live, I would spend every day with my family, talking and laughing. Ideally, we’d be in my backyard, and every day would feel like summer. We’d be listening to relaxing, country music and eating cool pasta salad and hot off the grill burgers and hotdogs. When winter and fall finally came, we’d head off to someplace warm and humid and repeat our perfect summer days.

I would sell or give away all of my possessions and travel the world with my husband and son. My travels would include some kind of volunteer work that would have positive social impact in the countries I visited, specifically whether it was to ensure clean drinking water or build a school. I’d end up in Maine to spend the remaining days mostly in nature with family and close friends and we’d have a big party where Mick Jagger, James Taylor and Stevie Nicks would come as surprise guests to serenade us.

I would spend all the time that I could with my children (Hannah and Judah), Rachel, my spouse, and my family and friends just “to be” present and live and enjoy the time that I am afforded. I’d take photographs every day, go on a daily walk with my dogs, go for hikes and nature walks, cook a different meal every other day, listen to music daily. I would also fundraise and help a cause that is dear to me. I’d love to travel to Iceland (or Greenland or the Arctic Circle) to see the Northern Lights, the Aurora Borealis, in person again and to star gaze

If I had one year to live I would take my mom to visit Giraffe Manor in Kenya because we used to pretend we were giraffes when I was a child. I would take my boyfriend and my closest friends to Australia and New Zealand for a month. I would finally write a book which has been a lifelong goal of mine to inspire others to live their lives passionately and fearlessly so they have no regrets when they die.

With one year left to live, I would want my children (now young adults) to know how proud I am of them and what great people they have grown into and also let them know that the only thing that matters in life is to find their own happiness. I would make sure my Parents truly understood how appreciative I am for always being there for me and instilling the principle of always doing my best. Finally, I would spend as much time as my shorten life allowed continuing our adventures together with my beautiful girlfriend.

T

his quote by Ronald Reagan is never more true than today. For thousands of years, the horse has been a tool for man – a trusted mount in war, a form of transportation and a beast of burden. But advances in technology have replaced these traditional roles, and today the horse takes center stage as a teacher and healer. There’s just something about the horses’ spirit that we are drawn to.They are powerful, yet gentle creatures, highly sensitive, intuitive and patient. They seek to connect with us. When we ride them we receive significant sensory and physical benefits. But it is their more recent role as guides in self-awareness and emotional healers that is bringing more attention to our equine friends. At times the lessons from equine-assisted activities seem almost magical, however there is real science behind the benefits, based on their natural abilities.

As non-predatory animals, horses live within a group, and each member of the group has a role. They rely on each other and their ability to read the “feelings” of other animals to remain safe. They communicate primarily through body language and seek trusting relationships. They don’t see labels, or make judgments, they simply live in the moment, and reflect what we present to them, providing us with immediate feedback. These characteristics combined with a supportive experiential learning format, provide tremendous opportunities for self discovery through our interactions with them. At Hidden Acres Farm of Naugatuck, certified, professional staff partner with specially selected and trained therapy horses to provide a variety of equine-assisted activities in a supportive environment for all beings. Is There Such a Thing as Too Much Vacation?

hen I first encountered the term “over-vacation syndrome” the image in my mind was of someone who vacations too much. I realize that most people would not consider “over-vacationing” a problem. It does bring up an interesting question. How much vacation is too much and on the flip side how much is not enough? An excess is defined as “more than what is normal or necessary”. Is “normal” two to three weeks per year that Corporate America allows or the four plus weeks that most of Europe enjoys? Is vacation an expected part of work-life balance or does it have to be earned? Everyone seems to have a different internal measurement of how much work, how much money, how much free time is enough. Many would say that they are lacking in either free time or money, and that they work too much. I have heard of corporations that let employees determine the amount of vacation and time off that they have. The result of this is that people work more and take less time off. Nobody pushes us harder than we push ourselves. Unscheduled time makes some people uncomfortable because they equate being idle with being lazy. Vacation is the exception. It is socially acceptable down-time. I have always chosen to err on the side of more vacation. In addition, I make time for health promoting activities during the work week. Even the best plans for a healthy and balanced life may not work out that way sometimes. Internal pressures to work more, do more, and earn more money can win out. It is easier to take time off to care for a sick child, than it is to exercise regularly. Self-care and relaxation are in opposition with our hardworking American nature. If vacation has to be “earned”, then how is worthiness measured? Is it by having money in the bank, productivity, or by some other factor? Is there such a thing as “over-vacationing”? If the gage for what is normal is set by Corporate America, then anything over two or three weeks per year may be excessive. My opinion is that most Americans are lacking in vacation and free time. Work schedules or need for financial stability may not allow for more. But all of the blame cannot be on employers and life situations. We push ourselves harder than anyone else. Joyful activities and rest are often put on the backburner in favor of work or other commitments. It can feel uncomfortable to not be productive. After all, how can we “earn” a vacation without productivity? It is the yin without the yang. We may wish for more free time, but we need money. The internal struggle for work-life balance is ubiquitous and ongoing. For now, take a vacation. Dr. Stacey Munro is a naturopathic physician based in Suffield, Connecticut. A Beginner’s Guide to Yoga

oga is a Sanskrit word that, by definition, means union. In contemporary terms, yoga is an opportunity to unite the mind, body, and spirit. It is the practice of consciously moving your body. It can help you grow stronger, more flexible, and bring some peace and relaxation into your life. Yoga can make you calmer, clearer, and energized and can also lead to deeper spiritual awareness. Yoga is many things to many people. Best part is, you get to choose what yoga means to you. Whatever your body type, temperament, or lifestyle, there is a yoga class to suit you. Choosing your yoga style begins with trying out a few classes. Brand new to yoga? Don’t worry, yoga is not just for flexible people. There is no “getting ready” to start yoga. Wherever you are in your life, that is where you start. Many studios offer an introduction to yoga or open level class that will teach you the basics. All levels are welcome and many yoga studios will even offer the first class free. Restorative yoga uses strategically placed props to help you sink into deep relaxation and disconnect from the frenetic energy of daily life. This is a great option for people with chronic conditions like fibromyalgia, rheumatoid arthritis and back pain. Gentle and yin yoga styles provide balance, increased flexibility, and mental focus. These types of classes can help you relax and delve deeper into tight areas of the body, such as hips, hamstrings, and shoulders. Athletes and those who enjoy intense workouts may find these softer styles of yoga a good balance for their regular routines. Yoga can be a great aid for athletic performance. If you’re healthy and ready for a physically stronger practice, ashtanga, hot yoga, or a power vinyasa flow might be the perfect challenge. Syncing movement with breath, these sweaty and powerful types of practices offer cardiovascular benefits as well as increased muscle strength, endurance, and flexibility. If you like a strong practice with a fixed sequence, ashtanga or hot yoga is for you. Vinyasa yoga offers much more diversity. Depending on the instructor, the pace of the class can vary, as can the postures.

When Cucumbers Become Common By Julie Wern

t is always exciting when the cucumber harvest starts, but within a few weeks of the season we are often overrun with their abundance. My solution to this dilemma is to adopt the old motto, “variety is the spice of life”. Getting creative with the use of cucumbers keeps things fresh and interesting so that I can enjoy them throughout the entirety of the growing season. There is something irresistible about the cool crunch of cucumber. Thus, it is not surprising that cucumbers can be found in most major international cuisines. They are related to other members of the Gourd family, including melons and squash. Because they are comprised of about 95% water, they are quite refreshing and filling, even though they contain very little calories and virtually no fat. However, they are also a very good source of vitamin C, Vitamin K, and potassium. They also contain significant amounts of magnesium. The skin provides added fiber.

Cucumber Basil Agua Fresca Yield: 2 quarts Ingredients: • 3 large cucumbers, peeled and roughly chopped • 1/4 cup fresh basil leaves, packed • 2 quarts water • 3 tablespoons honey or agave syrup, optional Place cucumbers and basil in a blender and blend until completely smooth. Add a few tablespoons of water, if needed, to facilitate blending. Over a pitcher or large bowl, pour cucumber mixture through fine sieve, using a wooden spoon to push and move around solids in order to extract liquid. Discard solids. To cucumber basil mixture, add 2 quarts of water. If desired, add agave syrup and stir.

Q: I’ve been on anti-depression medications for 15 years and I’m looking at ways of getting off of them. Is energy work effective in this area, and what ideas do you have for me? A: Discontinuing any form of prescribed medication needs to first be discussed with the prescribing physician. Once you are instructed on a safe and proper way to discontinue the medication(s) we can look into the best way to support the process of helping you release and clear the cause(s) of the depression as well as releasing and clearing the medication residue and any other toxins that may be present in the body and energy fields as well as correct any and all the influences that have occurred. What is important to remember about any issue a person presents with is that what affects one person significantly may have minimal to no effect on another, as is with this situation. There are various emotional influences that began at birth and then were inflamed and added to at ages 6, 12 and 36 and vary in the form from fear to deep hurt and anger. Realize that emotions don’t necessarily store in one specific area of the body or energy fields. They have a tendency to hold in weak areas that are present at that time. One thing is consistent, as emotions, toxins and or kinetic energy (falls, hits etc.) are held in a system (mind, body, emotion, energy fields) that system begins to compensate and can progressively influence other areas of our being. Once we become aware of the root cause(s) we can begin to release the energy of that and support the continued release of the compensations which followed. Because the emotional traumas are the primary root it would be helpful to release them first then follow what your body and energy systems are guiding the practitioner to release. An energy practitioner with experience in releasing deep emotional issues, toxic residue and releasing old cellular/patterned structural memory will help free your body and create an environment for release and relief from this issue.

Q: I have had migraines for the past 12+ years that have been progressively getting worse and have used chiropractic, acupuncture, massage and medication. The only things that work, if I get to it early enough, is medication. How can I break this cycle and is there something underlying creating this? A: To date there isn’t a great deal known about migraines and what causes them. But what is known is that there are a number of factors that can trigger a migraine: • Hormonal changes in women • Food additives • Alcohol • Stress • Sensory stimuli - visual and fumes • Changes in wake-sleep pattern, i.e. jet lag • Medications • Changes in weather • Physical factors - over exertion Therefore, it would be helpful to approach this on an individual basis. After reading your letter and tuning into you energetically, I’m sensing your migraines are influenced by a trauma from about 12 years ago. This trauma has affected the upper cervical spine, ribs, left shoulder and jaw. There are also blocks in the visual system (eyes, optic nerves and visual cortex) to the colors red and green. In addition, there are emotional aspects in the body and energy fields in the form of fear, anxiety, worry, anger, disappointment and helplessness/hopelessness. These influences have progressively affected the mind, body, and energetics of you as a whole contributing to the migraines. Also, if you think about when these migraines are happening with the above information, you will likely be able to determine what is triggering some of the migraines. For example, if you are becoming emotionally upset or physically feeling unsafe, these could be triggering the memory/trauma that is stuck in the body, mind, emotions and energy fields. My suggestion would be to connect with an energy practitioner to have the energy of the physical trauma, as well as the emotional trauma cleared from you, as well as a practitioner to correct the cranial-sacral rhythm and release the cranial bones as well. This is the time you often notice various pains in the body, your mind can ruminate on stressors of the day prior and upcoming events, this is also the time you remember that one thing you didn’t do and your heart starts racing!

T

here are often times I prescribe a vacation for my patients. No, not to the Bahamas or Hawaii, but a vacation from our day-today, often overly scheduled lives can do wonders for mental and physical health. The Science of Stress I’m sure you have heard of the “fight or flight” response. And if you have not, you have certainly experienced it. The feeling you get when you are abruptly cut off in traffic or trip over something and catch yourself that spikes your heart rate, forces you alert and can causes you to break out into a sweat. There are chemical communicators in the adrenal glands, small glands that sit atop the kidneys, which cause this “fight or flight” response to occur, mainly by releasing the hormones epinephrine and norepinephrine. This is a very important response as mentioned above, this response can save our life in traffic and prevent us from falling. But when overused and abused with daily stressors, this leads to over activation and eventually a reduction in the hormones. Cortisol can become easily taxed when overly stressed and often shows up as alterations in circadian rhythm, aka sleep patterns. The classic, “I am waking up exhausted,” or “I am tired at night but wake at midnight every night,” often alludes to dysfunction in cortisol.

Overuse of the adrenal hormones can lead to chronic fatigue, brain fog, attention and focus deficits and even increased pain perception. Think of the boy who cried wolf, after so many times saying there was a wolf, the one time he actually needed help, everyone was fatigued from continually going to his aid! The same is true for the hormones from the adrenal glands.

We, as humans, need time to decompress, and allow our nervous system to discharge the stressors of day-to-day life. We are not meant to be on 24/7, although current society does make it feel like we should be. This is a tough pill to swallow when there is one last e-mail to check before bed or one thing to check on social media when waking up. Just as we set boundaries for others not to encroach on our time, we need to be setting these boundaries with ourselves. No more wasting time and energy feeding into stressors, make a plan to check email only 2 times in the day or set aside one time per week to review finances. You will gain more free time and lose extra stress. 2. Make Time for Exercise: Of course we all hear the word exercise and roll our eyes. We KNOW this is a good idea, for so many reasons, but honestly, stress management is high on the reasons why. What I recommend is finding something you like. If you are an outdoors type consider a group hike with friends and family, walking your favorite farmers market for an hour or even gardening can count. If you enjoy dance, consider a Zumba class, if you like meditation consider a yoga class, there are literally endless possibilities to get your body moving in the day. Sometimes there are emotional blocks as to why we are averse to exercise, which can be addressed and overcome; I promise you will feel like a better human! 3. Laughter is the Best Medicine: Laughing can stimulate happy neurotransmitters in the brain, encourage positive mood and outlook and reduce the stress on adrenal hormones. You don’t need to become a stand-up comedian, but planning your free time to include something funny is a great idea. Watching a comedic movie, reading the funnies or watching a short clip of a funny video online midday at work can increase energy and decrease the stress on those adrenal hormones. 4. Be Kind to Others: Practicing empathy and understanding someone else’s situation can make us change our perspective. Science shows that when we can put ourselves in someone else’s shoes we are more kind to others and ourselves. Being nice to others will help you too!

Carve Out Some “Me” Time this Summer By Ayelet Connell-Giammatteo, PhD, PT, IMT,C

I

love summer! There’s really nothing like it. For many of us, our schedules don’t change drastically during the summer season. If we have school aged children, they may be in camps or at home with a sitter or family member, but many of us still need to work. And some of us may have the benefit of some summer holiday. Regardless of whether we work outside of the home or not, it’s helpful to find balance in our summer schedule. The idea that summer is a season of free time is wonderful in theory. But in reality, often, we get caught up with too many planned events. One challenge is the back and forth transporting of our kids. But equally challenging is the management of a healthy diet at all of these different events for us and our family. In summertime, we have incredible access to beautiful fresh fruits and vegetables. Again, in theory, it’s easy to maintain a diet of healthy foods during this season. But in actuality, many of us find it difficult to get enough healthy foods into our daily diet because we get so busy. The solution is pretty simple and can be implemented in any season. Eat fresh foods! Avoid processed and packaged foods. This

means that if you know you’re going to be out and about for the day, be sure to carry enough fruit and vegetables (and water!) to last you through the day. For protein, you can carry some sources of protein that will be stable in warm temperatures like natural jerky or nuts and seeds. Success with staying healthy and balanced during the busy summer season can be found in keeping things simple. Here are some suggestions: 1. Eat fresh fruits and vegetables! Grab one of your family ‘lunch bags’ and fill it up in the morning or night before with some of these foods: apple slices or celery/ carrot sticks and nut butter, natural jerky, nuts and seeds with some dried fruit, gluten free whole grain crackers with hummus. 2. Make sure to have a healthy breakfast to carry you through the morning and give you lots of energy. Here are some ideas: eggs with sliced cucumber and tomatoes or avocado with lemon juice/sea salt/ olive oil drizzled over the vegetables; morning protein smoothie with frozen berries and/or half of a banana, nut/seed butter, greens and other vegetables, and some coconut oil (you can also use a

protein powder); gluten free turkey or chicken sausage (some great options at Trader Joe’s) with some sliced fresh vegetables on the side. 3. Drink lots of water throughout the day. If you prefer some type of flavor, you can add some lemon wedges to your water bottle as you leave the house (slice a lemon and leave covered in the fridge so you can grab and go!). Water is essential to maintain a healthy body during the hot summer months. Dehydration can cause lots of symptoms and often we don’t even realize that a lack of water is the cause! In addition to a healthy diet during the summer season, it’s helpful to also consider how to balance our lives with a ‘gentle schedule’. These beautiful warm months are perfect for carving out some regular ‘me’ time and taking a brisk walk in the morning or a leisurely stroll through the park in the evening with our family. Movement is vital to a healthy body. Making sure we find time to be outside in the fresh air makes it easier to be indoors when we’re working during the day! If the strong heat bothers you, make sure to limit your walks and outdoor time to the early morning and evening time as the sun is not at its peak for the day. In many towns, there are regular music offerings outside through the summer months. In West Hartford, there is the Elizabeth Park music series as well as regular music offered in Blueback Square. In Bloomfield, there is also regular music offered through the summer on the town green. Most towns offer something of this nature—you can find out about these types of events on most town websites. Usually, the music is offered in the evening time which is a great time to enjoy the fresh outdoors with your family and friends while not baking under the sun!

For some of us, we find it hard to be spontaneous in our leisure activities as we’re juggling family life and work life through any season. In this case, it is helpful to make a goal list of what you might be interested in doing. For example, maybe you’d like to try yoga or meditation or tai chi? Take the time on a weekend (when we have slightly more free time) or maybe after the kids have gone to bed and do some online searches for these types of classes in your area. With many of these types of places, you can find the schedule on their website so you don’t even have to call them. You may be able to register online as well. Try to commit to at least one new fun activity to give you something to look forward to as you balance your life.

How to Really Improve Your Cycling Performance and Ride Pain-Free

E

ver dreamed of doing a Century Ride or even a 50-miler on your road bike? Imagine the wind rushing by you as you streak down country roads and over rolling hills enjoying the breathtaking scenery. Or does the thought of that send chills down your spine because every time you ride longer than a couple of hours you’re in pain? If so, can you remember a time you felt pain and discomfort free on your bicycle? Does your seat feel like a torture device? Do your hands go numb? Does your back feel stiff? Is your neck tight? Bicycles are not a “one-size-fits-all” proposition as there are far too many variations in rider’s body types for a bicycle to fit perfectly “off-the-rack”. But that’s exactly what I had been riding on for almost 6 years – an off the rack fit! All of this was on my current bicycle and my pre-fit and post-fit bike dimensions were recorded and documented. 2. Size Cycle Fit - You get the same interview, standard body and foot analysis, motion-video capture, and a single, baseline saddle pressure map as the Existing Fit. They perform the fitting on their fully adjustable Size Cycle, where they determine your ideal position outside of the constraints of a pre-existing bicycle. Through digital imagery delivered through sensors in a pad that was fitted over my existing saddle, I could see exactly where I was putting pressure on the saddle. We saw that my hips were rocking due to a too soft saddle and I had less stability and was putting an extreme amount of pressure on one side of the saddle. Self-Confidence is SEXY! By Diane Hayden, PhD oo many people think that being self-confident means you are cocky and disrespectful. Don’t get me wrong – there are people like that – but I wouldn’t call them self-confident. In fact, when I meet someone who is totally full of themselves, I find that it’s typically a total sham to cover up some major insecurities. That’s not confidence.

T

Self-confidence is defined as: a feeling of trust in one’s abilities, qualities, and judgment. To me, it means continually striving to make yourself a better person and enjoying the journey. But not in a demeaning, condescending, belittling way to others and not in a way that you think you’re better than everyone. This is about having the self-confidence to know that you are a great catch, and you don’t need to compare yourself to anyone else. Sometimes my boyfriend catches me checking myself out in the mirror when I’m lifting. He’ll joke with me and tell me I’m conceited, but he really knows that I am just admiring something I love about myself and we all need to do that. I’m not doing it in a way that hurts anyone else – I’m just being self-confident. Learn to move from a place of, “I can’t do it,” “I’m not good enough,” “I’ll never get there,” “What if she rejects me?” to a place of, “No matter what, I’m going to win,” “I’m not going to get stuck in feeling shameful or angry,” “I’m going to figure out how to make this work for me.” In a low self-confidence state, you are constantly releasing destructive hormones into your body that dramatically further lessens your confidence and ability to attract women. It’s crucial for every man to identify what is at the core of his negative thoughts, so he can free himself from them. I believe you need self-confidence in every area of your life to truly be successful in being the best version of yourself that you can possibly be. You need self-confidence to follow your dreams and start a business or climb the career ladder. You need self-confidence to maintain a healthy lifestyle: eating right, exercising, practicing mindfulness and reducing stress. You need self-confidence to find the right partner, believing in yourself that you deserve an amazing partner and that you will be able to create and sustain a fulfilling relationship with that person. You need self-confidence to train your mind to think positively, to be resilient, to be silent and to be your best friend and cheerleader. 20

There is nothing more attractive than a confident man…a man who believes in himself, who has taken the time to develop his strengths, who recognizes where he needs to improve but doesn’t get down on himself, who continually strives to get better. So – how do you become self-confident if you naturally aren’t? Well, there was a time when I was not very confident about myself at all. I felt insecure about how smart I was, how athletic I was, how attractive to men I was – you get the picture, pretty much everything! I didn’t think I was smart enough so I decided to get a PhD – that would be proof that I was intelligent, right? I started running and biking and entered races – that would prove that I was athletic, right? I jumped from one relationship to the next – that would prove that I was desirable, right? WRONG!! I finally realized that acquiring self-confidence does not happen from proving yourself in “feats of strength.” Self-confidence comes from doing the inner work on yourself. Self-confidence comes from training your mind to have a growth mindset. In a growth mindset, you believe that your most basic abilities can be developed through dedication and hard work—brains and talent are just the starting point. This view creates a love of learning and a resilience that is essential for great accomplishment. Virtually all great people have had these qualities. Check out the book, “Mindset,” by Carol Dweck – I was fascinated to finally figure out why I had such low self-confidence growing up – it was because I had a fixed mindset. I could read the newspaper at age 4, I was the narrator for a kindergarten play because I was the only child who could read, I was put in a special group of accelerated learners in 1st grade – and then I proceeded to graduate high school in the middle of my class with a B average. What happened? At the rate I was going in 1st grade, I should have graduated school early or at least been the high school valedictorian, right? Nope! Kids who get too much praise are less likely to take risks, are highly sensitive to failure and are more likely to give up when faced with a challenge. That was me – totally unmotivated and afraid to fail. “Contrary to popular belief, praising children’s intelligence did not give them confidence and did not make them learn better,” said Carol Dweck. Dweck found that children’s performance worsens if they always hear how smart they are. We should teach kids from an early age that the brain is a muscle that can be strengthened with


practice. This sends the message that kids can directly affect their intelligence, which may empower unmotivated teenagers. So, how did I change this? I started reading as many personal development books as I could get my hands on. I continued to push myself to do things that were out of my comfort zone both physically and mentally like traveling alone, rock climbing, and silent retreats. If I was afraid of something, I leaned into the fear instead of running from it. I believed that I could accomplish something if I put my mind to it and I had real world scenarios to prove it. I TRUSTED myself. And each time I had a positive outcome, I gained more self-confidence. What will set you apart is your mindset and drive. That is how self-confidence is built.

Being Mindful in Everyday Life By Juliette Taylor he term mindfulness has been part of the spiritual conversation for thousands of years through Buddhism, Hinduism, and even in the Muslim/Christian and Judaic traditions. But secular mindfulness – mindfulness devoid of any spiritual quest is what I’m talking about here and that conversation has its roots in healthcare over 35 years ago. It was integrated into the institutional environment through Jon Kabat-Zinn who developed the Mindfulness-Based Stress Reduction program at the University of Massachusetts Medical Center.

Mindfulness Based Stress Reduction His work over the past thirty-five years according to the UMass medical center website, http://www.umassmed.edu/cfm/stressreduction/history-of-mbsr/ , “has shown consistent, reliable, and reproducible demonstrations of major and clinically relevant reductions in medical and psychological symptoms across a wide range of medical diagnoses, including many different chronic pain conditions, other medical diagnoses and in medical patients with a secondary diagnosis of anxiety and/or panic, over the eight weeks of the MBSR intervention, and maintenance of these changes in some cases for up to four years of follow-up.” While mindfulness has its roots in Buddhist meditative traditions called Dharma, the practice of mindfulness (dharma) is universal which is why Jon uses dharma with a little ‘d.’ Since the start of his program over 22,000 people including me have completed the MBSR 8-week program. MBSR has received massive coverage being featured in: “Bill Moyers’ PBS documentary Healing and The Mind, NBC Dateline, ABC’s Chronicle, The Boston Globe, CNN, and in various national print media. It is the subject of Jon Kabat-Zinn’s best-selling book, Full Catastrophe Living and Saki Santorelli’s book, Heal Thy Self. The central focus of the program is intensive training in mindfulness meditation and its integration into the challenges/adventures of everyday life.” Now that’s what I’m talking about. Mindfulness meditation integrating into the challenges and adventures of our everyday lives. What is Mindfulness? So what is mindfulness exactly if we separate it from the spiritual quest of connecting to something higher and from the notion of being better than someone else? Jon describes mindfulness as, “being fully awake in our lives and perceiving the exquisite vividness of each moment.” Through meditation he states that, “we feel more alive. We also gain immediate access to our own powerful inner resources for insight, transformation, and healing.” Psychology Today describes mindfulness as, “a state of active, open attention on the present. When you’re mindful, you observe 22

your thoughts and feelings from a distance, without judging them good or bad. Instead of letting your life pass you by, mindfulness means living in the moment and awakening to experience.” Powerful. The notion that sitting in a mindful position noticing each sound in our environment and sensation in our body has a ripple effect on our lives is powerful. What makes it so powerful? For me the life-changing aspect of bringing mindfulness into my every day life is that in each sitting we learn to create space between stimulus and response. Mindfulness is sandwiched in the middle. Where normally we would feel the stimuli and then respond, after spending time in a mindful practice we are able to consciously decide what we want to do with the feeling that comes up. Each stimuli triggers a story. Sitting and noticing the sound of birds may trigger an event where you heard similar birds or that you wished you heard birds at some other time or that these birds are really annoying like so and so and on and on it goes. In mindfulness we learn to look at the story attached to the sound and then bring ourselves back to the present to the sound itself and then into the body of what sensations come up. It’s all very simple, yet may not be easy. It takes practice and in that practice – in the space – we sit in awareness and in conscious decision-making outside of the judgment zone. To me mindfulness is about the awareness, awareness of what is and without any judgment. I get to sit with each sensation or noise and the story it conjures up and look at it as I feel it. If I’m angry I see it as such. If I’m self-pitying…guess what? It’s self-pitying. But then something amazing happens in that 30-minute “sit.” I see the me outside the story looking at the story and the emotion drifts away. The Mindful School curriculum describes emotion as either impulsive or responsive response motions and mindfulness “creates the spaces replacing impulsive reactions with thoughtful responses.” The other day my oldest daughter Alex spilled sauce all over the kitchen cabinets and she commented that I was so chill about it. “Wow.” She said. “You’ve changed, Mom. Years ago, you would have jumped all over me or at least made a face and mumbled under your breath depending on what mood you were in. And now, you just got a rag and started cleaning up.” I guess a mindful ‘sit’ allows me the space to not sweat the small stuff. I’m still me. But I’m chill! Mindfulness is the first M in my 4 ‘M’s that are the cornerstones to the LifesPath approach.

There is only life. Mindfulness gives you the space and the framework to reach the dreams that well up inside you by living in the moment fully conscious today. • Movement: The Process of deepening the relationship with yourself in the present moment for a sense of calm and wellbeing because aspirations are fueled by a body that’s ready to receive them. And a body ready is a body aware. • Mindset: The Intention of a total alignment of thoughts, words, and actions sustainably, while maintaining the thought patterns that make aspirations realizations.

• Manifestation: The Practice of restoring the daily rituals to intuitively release toxins and attract energy. Receiving and giving to create the harmony to be fully balanced. Understanding the nature of attraction through the physics of vibration and know that like attracts like. So now it becomes even more important to stop seeping bad vibes because we know that it will push your goals to the side. These four cornerstones are designed to open you to thrive on your LifesPath and live a life you love. The first step is to create space for the practice of mindfulness which in turn creates space for the conscious thoughtful response to life rather than a quick impulsive reaction to life. When Post Vacation Blues are a Wake Up Call

acations are meant to provide respite for our physical, mental and spiritual bodies after what can be endless hours, days, weeks and months of brutal work and life routine. For most of us, the minute we finish packing the suitcase we begin to float away on the waves of decompression, pushing away thoughts of responsibility, intense demand on our time and technological connection. Taking our first deep fully cleansing breaths, in what might seem like a small lifetime, we start entertaining life as it could be (and as we most likely wish it was); free, fun and joyful. Be a Child Again Vacation takes us back to a time in our lives when we were our most authentic selves; when we played all day without a care in the world, when no one told us who or what to be, when joy and happiness was simply who we were, what we did and how we rolled. Most of our adult lives we long to return to this genuine place of being and vacation gives us permission to release back into this space and time. Reminiscent of when we climbed trees all day, ran with our neighborhood posse and stayed just on this side of mischievous to feel rebellious without guilt, experiencing ‘the call of our soul’ like only children can, we embrace vacation with equal voracity. As children, we were in complete charge of creating our day and there was nothing better than rosy cheeks from fresh air, physical exhaustion from hard focused play and using our wildest imaginations. On vacation we acquire those same rosy glows from basking in the sun’s love (and maybe too much ‘it’s five o’clock somewhere mentality’), pushing our bodies to exquisite exhaustion from testing our physical limits overdoing something: shopping, swimming, hiking, and our imaginations run wild in self-rediscovery. Nothing offers greater new life insight or candid perspective than step26

ping out of our ordinary life to experience someone else’s for a while. Using this time for exploration and rejuvenation we venture into new landscapes, try new things, reconnect with those we love most in laughter, adventure and memories, and manage to allow time to simply rest and recuperate. Whether we escape to the mountains to soak in their majestic beauty and experience inspiring awe, stick our toes in the sand and our face in a book for hours on end, or we decide to embark on a trek through an amazing rain forest, our personal world is temporarily reframed. We are free to ‘be’ without expectations…free to roam without deadlines…unraveling moment by moment until we reach that place of core strengthening internal peace and tranquility. Total expansion of mind, body and spirit; YES! While all this is happening the world back home goes on without our presence…drifting away like it never really existed in the first place. Re-entry from Vacation Before vacation…that period of time taken up by structure, demand, living from clock hour to clock hour till we sleep, (if we sleep) only to do it all over again…is filled primarily with things we have to do…not necessarily the things we want to do. The exception is if we have been lucky enough in this lifetime to discover ‘the calling of our soul’ and spend our days doing something we love and were meant to do. However, even then, our hearts our heavily involved and we can become very imbalanced by the amount of giving involved. Taking time away is still necessary for regaining perspective and rebalance but for those of us content in life, ‘going back’ tends to be easier because we are returning to a life we’ve consciously chosen and desire so vacation is a bonus! Sometimes, because we enjoy our work and life so much, leaving for vacation can be harder than coming back.

However, for others, most we might dare say, the reentry process is more difficult. Feelings can go from one extreme to another very quickly and the relaxation mode of vacation can seem like an illusion. It’s normal to stay in a post vacation euphoria for some time after returning to our ‘dull by comparison’ everyday life, however, when stress (anxiety and nausea that isn’t coming from your fear of flying) begins to set in before vacation is even over…as we are toasting to our ‘last night on the island’, we are seriously contemplating throwing it all away for a life of selling turtle shells for a living, we might want to notice that we aren’t really into the life we left back at home. That usually happens when vacation is so drastically different from our ‘real lives’ that coming back to our ‘everyday’ is painstaking. The message is loud and clear: we’ve become imbalanced, unhappy and disconnected in our own lives. If we pay close enough attention, post (or even end of) vacation blues can reveal much more about our lives than we think. Very useful information if we allow it to be. When vacation is a true escape from our real lives and we dread going back we need to take a closer look at what’s going on. What aren’t we making time for? What soulful yearnings are we ignoring? Are we attaching our happiness to people, things and conditions? Where are our greatest stressors? Time to Gain Perspective We can all agree, besides helping us heal physically and mentally, time away can help us gain tremendous perspective on our lives. Using the following tips we can gain much more than that: 1. It’s helpful if we can remember the insight we gain while away and pack it in our suitcase for the return home. Whether you gained them while basking in the sun or while draining your last


margarita…perspective gained is very useful; when our minds are empty we receive useful and clear life guidance. Random thoughts and our own inner wisdom can provide more life direction than all the self-helps books at Barnes & Noble and Amazon combined. Listening to our inner guidance is worth all its weight in gold and the ideas, insights and perspective gained on vacation are worth capturing in a journal or by taking action. Using our newly gained inspiration to make beneficial changes when we return home can extend our vacation experience. We won’t regret it. 2. When we return home, unless we also live on an island, we can experience a version of seasonal affective disorder which I like to call ‘the white sand blues’. But try to recognize that nature is nature… warmth and sunshine, fresh air, blue sky and moonlit walks are not exclusive to remote locations and can rejuvenate the spirit anytime, anywhere. While the view from your Oceanside resort may have been breathtaking, mother nature provides breathtaking scenery outside your window every day…all we have to do is take the time to notice. The sunsets may not be as awe inspiring because you can’t see them dropping behind the ocean, but they are still quite beautiful and we can make a point of taking them in during our drive home each day…even in a rear view mirror if need be. It’s all in the effort. We can take a walk during lunch…pay attention to the breeze on our skin…get five minutes of outdoors every day no matter the time of year…absorb the spectacular show of flowers, trees and foliage in its many natural landscapes…listen to the birds… hike our local mountains, walk nearby trails and waterfalls, beach it for a day: the possibilities are endless. Allow the same heart opening connection to mother earth to happen at home as we allowed on vacation. The only difference then was we were taking the time to put it into our day and maybe we had a drink in our hands while wearing flip flops but still…even for a moment each day; do it again. 3. Don’t stop connecting – we made time to connect with our loved ones while we were away. It brought back laughter and honesty. Don’t stop…make time; shut off the TV and talk, play games, take a walk together, sit around a bonfire, call your friends (don’t text)…talk, talk, talk. Our everyday lives make it so easy to take eachother for granted and we miss important moments being consumed with

political biography we lose ourselves immersed in someone else’s version of ‘how to’, ‘how it was done’, or ‘holy how wow’. Our brains, bodies and spirits relax when we are spirited away in attention and books do just that. Read before bed, read at lunch, read on a break…just read. Besides, even a smutty novel has at least one new thing we can learn and learning expands our thinking…expansion of any kind brings us closer to that feeling of newness and fun like vacation.

Assemble memories and relive happy moments. Create a photo album…a real live, touch it in our hands, turn the pages, leave it on the coffee table photo album. Develop all the pictures from everyone’s cameras the old fashioned way…put all the pictures together and create a story of the time away and look at it often. It will bring back smiles, conversation and lots of feel good moments. And by the way… pick favorites and frame them for the walls! Walking past what’s possible every day is a great reminder of that authentic self we find so easy to lose. 5. If we started reading books on vacation… finish reading them…set aside some time each day…even ten minutes and keep reading. When that’s done…start another book. Reading takes us on mini vacations…whether we are reading a self-help publication, a smutty novel or the latest

7. Keep learning and exploring. Vacation broadens our horizons… no reason to stop now. Take a class, go to a workshop, hire a personal spiritual guru…let’s do something to keep stretching our thinking and imagining. Keep growing…. Ultimately, life is too short to spend most of it doing something that crushes your soul week after week or becoming so imbalanced doing it that the rest of your life is incredibly unhappy. If we are limited to just a few weeks of vacation every year or less…you do the math; that’s a lot of unhappy we are trying to dump out in an intense time only to return to unhappy. So finally, we can focus on these last few tips to insure we are making the most of our post vacation life: 8. We can notice what we regularly give, say or do to please others in our lives in order to validate our worthiness. These things usually make others very happy but do little to fulfill us. But if we consistently find ourselves compromising our own truths (things that make us feel most authentic in thought, behavior and nature) to keep the peace, please others, or secure our worthiness, we will eventually suffer from soul crushing imbalance in our own lives. True Inventiveness at Artisan Restaurant in Southport

T

he words that come to mind when speaking to Executive Chef Frederic Kieffer of Artisan Restaurant, Tavern and Garden in Southport are: spontaneity, inventiveness, inspiration, and vision. He is not just another award winning chef, but a man who truly understands the complexity of food and the delicate balance of the farming process. When one of his farmers has an excess of a certain crop, Chef Kieffer’s mission is to buy as much as he can and use his ingenuity to create more menu items around that particular food. You can’t get more creative and empathic than that! Sure, it’s easy for a restauranteur to refuse to buy more than they need from local farms, but Kieffer knows that if he had this mentality, the farmers would be the ones who would be hurt the most in the end. With our farming industry al- CHEF FREDERIC KIEFFER ready in bad shape, the worst scenario is that we have no farms. Kieffer is on a mission to make sure that never happens – at least here in Connecticut! Growing up in the countryside west of Paris, Frederic Kieffer spent his summers working in local restaurants where he discovered a true passion for cooking. Classically trained in French cuisine, a series of apprenticeships led him through the kitchens of such renowned restaurants as Taillevent, Le Chiberta, and the Lutetia Hotel. As Chef Kieffer’s culinary reputation grew, he was given the opportunity to re-open Windows of the World, one of the most iconic venues in the world with famed restaurateur Joseph Baum, then owner of the Rainbow Room. Kieffer considers this to be one of the greatest honors of his career and will always have a special place in his heart especially after 9/11. After working in New York City’s Water’s Edge and being the Opening Chef of the celebrity owned Man Ray Restaurant, Chef Kieffer opened l’escale at the Delamar Greenwich Harbor Hotel. “Through some introductions and living in Westchester, NY, the l’escale opportunity was an exciting project, big enough to rival those in New York City, with an exquisite hotel on the water and gave me the opportunity to return to my French roots,” Kieffer shared. The well-established Chef opened Gaia also located in Greenwich, CT. Gaia means Goddess of Mother Earth and that was at the heart of the concept. It was there Kieffer’s dedication to farm-totable was solidified and became his cooking philosophy. Valuing the source of products and quality before it became trendy has long since become a part of Kieffer’s legacy.

“Our mission is to use what our farmers bring to us on a weekly basis,” Kieffer says. With this, the specials on the menu change two to three times per week and truly reflect what’s happening at the farm. Kieffer likes to get everyone involved in the process of “farm-to-table” from the farmer to the chefs to the waitstaff and the customer dining. This means that sometimes a waiter will clean and peel the vegetables so he can feel the beauty of food that is less than a day old. This way, the waiter can truly describe the experience to the guest. When I asked him how difficult it was to try and come up with new menus each week that utilize what the farms are producing, he told me that he loves the challenge. “It keeps me on my toes, to continually have to be creative and figure out how to use food in new ways that stays exciting for the guests,” Kieffer says. Some of the local producers that supply to Artisan Restaurant are Sport Hill Farm in Easton which provide peppers, squash, eggplant, kale, spinach, chard and tomato all using sustainable agriculture techniques. Gilbertie’s provides most of their lettuce and greens and has one of the largest greenhouses in the area. Kieffer even has a local mushroom forager who shows up weekly to sell mushrooms he’s foraged daily – you can’t get more fresh than that! One of the most interesting parts of our conversation was a discussion on sustainable fish. As everyone knows, farm-raising fish is a hot and controversial topic these days. Most people I know refuse to eat any fish that is farm-raised, but Kieffer gave me some interesting insight. In his opinion, there are some safe farm-raising practices that include no unnecessary additives or growth hormones and the fish are raised in a natural environment. “If we didn’t have farmraised fish available, we would run out of the entire wild fish supply in quite a short time,” Kieffer says. Faroe Island Salmon is a good example of safe farm-raised fish. The most exciting thing Chef Kieffer told me is that Artisan will be opening a 3rd restaurant in 2017 in the Delamar West Hartford Hotel, right around the corner from me! This hotel will have 3,000 square foot of garden that will include a greenhouse and produce some of the fresh produce for the restaurant. Currently Chef Kieffer is also involved in Four Columns Inn (Newfane VT) the first farm-totable restaurant in the country which originally opened in 1965, and celebrated its grand reopening August 2015 with an Artisan Restaurant, Tavern and Garden and a complete renovation of the Inn. Bailey’s Backyard Farm-to-Table Restaurant in Ridgefield– A Locavore’s Dream

T

he farm-to-table buzzword has been tossed around so much it’s almost become cliché, not to mention the fact that there are many variations on the definition of authentic farm-totable. It’s rare to find a Chef that is truly committed to sourcing local, organic, non-GMO products. So, when Chef Forrest Pasternack of Bailey’s Backyard told me he makes his own ketchup, I knew immediately that he is the real deal. He’s developed relationships with farms from New York to Vermont and sources the finest, freshest items for his menu. All of the products Chef Forrest uses including flour and soy are non-GMO!

It’s inspiring to see the number of farms they source from including Dancing Dog Farm which is a biodynamic and permaculture inspired farm right in Ridgefield – you can’t get more local than that! Forrest sources microgreens, squash, tomatoes, chard and kale from them. They use Marble Valley Farm in Kent for heirloom varietals, and an assortment of organic vegetables, including; sugar snap peas, swiss chard, kale, escarole, endive, head lettuce, beets, squash, tomatoes, arugula, mizuna, mustard greens, hot peppers, celery root, diakon, winter squash, and edible pumpkin.

Bailey’s Backyard opened in October 1999 in what was a closed-down coffee shop. The mission then, as it is now, was to offer refined, New American cuisine in a polished casual atmosphere. But that wasn’t enough for owner Sal Bagliavio, he wanted to take it to the next level and in the Spring of 2013 evolved Bailey’s into a true farm-to-table restaurant. With seating for just 50 people, you really feel like you are a part of their family having a delicious homecooked meal. The mission was expanded to include a commitment to creating a menu based on the freshest and finest local food sources: meat and poultry from Shelton, Roxbury, Bridgewater and Newtown, produce from Ridgefield and neighboring farms, and fresh seafood from waters off Connecticut, Massachusetts, New York as well as from the Chesapeake Bay. Sal Bagliavio was the primary chef at Bailey’s Backyard from the day he opened the restaurant in October 1999 until he hired the restaurant’s new executive chef, Forrest Pasternack, in February 2013. Sal recalls having to personally drive to local farms to pick up produce and meats on a daily basis, but now the farms not only deliver to him, but they customize their plantings to his menu! Born and raised in Western Connecticut, Chef Forrest and his family would often spend their days at local farms picking vegetables for the family table. Summers were spent on Cape Cod fishing the waters of Nantucket Sound, the National Seashore as well as digging clams in Chatham, Mass. Forrest worked with many of the best modern chefs at some of New York’s finest restaurants, including: Zoe with Chef David Honeysett, the BLT Restaurant Group with Chef Laurent Tourendel, and Chef Jeremy Spector of Eats on Lexington, Employee’s Only and The Brindle Room. 30

I was excited to hear that they use Sugarhill Farm for grass-fed and finished beef – which if you aren’t aware is different from grassfed, grain finished beef. Grass finishing was standard until the 1950s, when grain finishing became the cost-effective norm. However, calories and overall fat in the animals’ tissues rise during grain finishing whereas grass-finished beef is lean. If you want variety – this is the place to go as the menu changes 9 times per year. That’s not an easy task for a chef or an owner! One look at the menu and your mouth will begin to water. Everything sounds incredible with a promise of delicious and unique flavor profiles and each dish is deliciously and lovingly prepared with a great balance of flavors and textures. We were presented with a delicious corn bread with citrus brown butter – made in house of course! Next we enjoyed the Seared Diver Scallop and Lobster Ceviche with Seville Oranges, Roasted Hazelnuts, White Ginger, Crispy Avocado and Fennel Salad – the flavors


were amazing with the perfect crunch from the hazelnuts and crispy avocado. Our main course was the Fried Chicken and Waffle Sandwich with Baby Lettuces, Nueske’s Bacon, Maple-Aioli, House Pickle and Red Cabbage Slaw. It sounds like an easy dish to prepare, but is actually quite complicated to ensure the chicken is lightly battered and the waffle has a slightly crispy exterior and soft dough on the inside. The maple-aioli gave it the ideal sweet and salty flavor. I was not surprised that Chef Forrest made it to perfection! Farm-to-Table Dining with Hometown Cooking at Rooster Company in Newington

Y

ou haven’t had chicken until you’ve been to The Rooster Company. I admit – it’s kind of hard for a restaurant to screw up chicken BUT – how many times have you dined at a place where the chicken was…good, but not fantastic? Probably quite frequently. In fact, it happened to me so many times that I just stopped ordering chicken altogether. Until, of course, I went to The Rooster Company in Newington Center. Now – THIS is chicken the way it’s supposed to be!

is seasonal and sustainable so the menu changes 3-4 times per year. But don’t worry, the rotisserie chicken is always at the core along with other crowd favorites.

Founder and Chef Kenneth Ward and his wife, Jaime, have worked in restaurants for nearly 40 years combined and opened The Newington Rooster company in February of 2015. Through their amassed experiences, they answered the demand for affordable, high-end product and service and bridged the gap between fine dining and quick service with every-day food and drink. Here you are served both quality interpretations of classic dishes and daring new ventures incorporating rotisserie style chicken. Chef Ward has an amazing philosophy when it comes to food and dining. Of course he sources locally for his meats and produce, visiting local farms as often as three times per week, but as he grew to know the local farmers he became fascinated with their farming practices and adopted his own mantra. “Using local products makes your food more important,” he said. “It’s amazing how much work and energy goes into farming that most people are completely unaware of – things like weather patterns from one year to the next that farmers must consistently track if they want their produce to have the same taste and consistency year to year.” You can even see a list of local farms that he currently uses on a big blackboard behind the bar. Some of his favorites are Young Farms in East Granby where he sources sweet corn, peppers, eggplant, tomatoes, potatoes, radishes and beans. Ward also sources from Eddy Farm right in Newington and Roger’s Orchard. For meats, he sources from Broadbrook Farms Beef and Freebird Amish Country chicken and gets calamari and scallops from Rhode Island and Stonington.

We started with the Beef Carpaccio with shaved goat cheese, pickled mushrooms and walnut oil and the Spinach Salad with bleu cheese, saffron poached pear, candied pecans and lemon vinaigrette. Both were outstanding and the salad had the perfect blend of tangy and sweet with a nice crunch from the pecans. Of course we had to try the Rotisserie Chicken which is locally sourced, organic, free range, brined, spit roasted and served with a parker house roll. To die for – seriously! There’s also a ton of local draft beers to choose from and some fantastic cocktails all made with local, fresh ingredients. The brunch menu looks amazing as well and we’ve been lucky to dine there this past Thanksgiving and Easter and I can tell you it’s a feast not to be missed!

He teaches this philosophy to every single person who works at Rooster Company – from the executive chef to the server to the dishwasher. “Everyone needs to know how important each plate we serve is to me,” Ward said. “Even though we might be doing 200 plates a night – every single one needs to be consistently prepared and presented. I want people to feel like they’re a part of my family when they dine at Rooster Company.” Now that’s dedication! In addition, he feels good that he’s making great food while reducing the carbon footprint by not purchasing produce that was farmed 2000 miles away and shipped here.

Ward loves to give back to the community and is involved with the local school healthy choices program. He helps children learn about food by doing tastings in the cafeterias and explaining the differences between flavor profiles such as salty, sweet, bitter and sour. He told me he made mac & cheese with butternut puree that all the kids loved!

The passion for food is so obvious here and it truly comes through when you taste each dish on the menu. Of course the focus

Good News Café in Woodbury Serves Up Gastronomic Delights

O

ne of the oldest farm-to-table restaurants in the state, the Good News Café has been serving up locally sourced cuisine since 1992. Owner and Chef Carole Peck began her love affair with food 46 years ago, graduating from the Culinary Institute of America in 1973. Pioneering a then male-dominated profession, she has achieved a noted reputation. After graduation, Peck worked as the executive chef at many restaurants, resorts and clubs from Cape Cod to Hilton Head, from Austin to Miami and New York City, always gaining recognition and professional acclaim. In 1993, she had the distinct honor of cooking for Julia Child’s 80th Birthday Bash for the International Association of Culinary Professionals (IACP) in New Orleans With over 40 years of experience in the food business, Peck knows what excites and delights diners. Her philosophy is based on the French method of using local, natural products and supporting local farms. “I’m really happy people are now concerned about using farms, because it was a pity that 10 years ago we were losing farms left and right,” she said. “We’ve lost more farms than we should have. That’s what being local is about, understanding these farmers need to make enough to make a living.” Her philosophy…to cook well, you need good quality ingredients and the best are sourced locally.

“What people don’t realize is that just because you see a vegetable in the local grocery store, that doesn’t mean it’s growing seasonally in your local area,” Peck says. The truth is it’s probably been shipped from thousands of miles away and most likely has lost many of the vital nutrients. From a health standpoint, we’re not supposed to be eating the same thing week after week and month after month. That’s not how our bodies were designed. “Plus, isn’t it nice to look forward to something when you don’t have it year round?” she asked. I completely agree – we’ve become a nation of people consumed with instant gratification. In 1997, Peck published her first cookbook, The Buffet Book, to wide acclaim; a second release of her book, printed in 2002, is currently available from Ici La Press. Her restaurant continues to receive attention in numerous magazine articles and outstanding reviews from Zagat’s Guide, The New York Times, Gourmet, Connecticut Magazine, Bon Appetit, House Beautiful, and Travel & Leisure. Farm-to-Table Like You’ve Never Had at Sugar & Olives in Norwalk

T

ucked away in a cozy, industrial space is a restaurant that has been quietly crafting amazing farm-to-table meals long before it became all the rage. Jennifer Balin opened Sugar + Olives in Norwalk in 2008 with the goal to make amazing food while connecting people with where the food on their plates comes from. She is also committed to not wasting one bit of it. “We never throw anything away here,” Jennifer said. I had the absolute pleasure of attending a media dinner here which not only inspired me but also reminded me of why I became so passionate about local food to begin with. The decor and presentation are beautiful, yet down-to-earth, just like the food. The night started with some fantastic creative cocktails whipped up by bartender Chris Grimm. Each one was elegantly paired with each dish from appetizer to dinner to dessert. My absolute favorite was the Brush Fire with smoked rosemary infused gin, mixed with lemon, simple syrup and a splash of Chambord. The perfect blend of sweet and smoky. The other cocktail that stole the show was the Beet Blossom. A beautifully deep ruby color, the earthy yet slightly sweet drink is made with beet syrup, organic gin, and lime juice. You think it’s going to be overly sweet and fruity, but you’ll be pleasantly surprised to see it’s not! Last but not least, paired with dessert was the Grasshopper – how’s that for a throwback! Simply made with creme de menthe, creme de cacao, and half + half. Yes, it tasted as good as it looks! Let’s get to the food! We started with a rosemary flatbread with smoked bluefish pate and fennel fronds. The flatbread was light and crispy and the bluefish was so creamy it was almost mousse-like. Great flavor and smokiness and not too fishy at all. Next we were served vegan rustic tomato soup in a shot glass – what a unique presentation and the tomato flavor was amazing. One of my favorite dishes was the smoked beets with goat cheese, arugula and pistachio dust. The creamy, tangy goat cheese was a great compliment to the firm beets and lightly spicy tender arugula. A sprinkle of salty pistachio on top was the perfect blend. Next came a lamb ragu with polenta, which would be the perfect meal on a cold winter’s day. The ragu was made with leftover roasted lamb from the previous day which totally exemplified the nothing wasted philosophy. The polenta was unbelievably creamy, and while I’m not a huge lamb fan – this was delicious. Lastly, we were served an anchovy chicken with cabbage cooked with mustard seeds in French Pavan (muscat grape and orange blossom liquor) and roasted carrots. This dish had me a little scared at first because I don’t like anchovies, but I had to try it as it looked outstanding. The tender chicken was melt in your mouth with just a touch of saltiness from the anchovies. I’m not a huge dessert fan – but this one you have to save room for! The Weight Loss Puzzle Finally Solved!

Excerpts from the new e-book, just released by Drs. Frank Aieta and Diane Hayden STRESS HORMONES AND WEIGHT LOSS

W

e go through periods of time in our lives when the demands are greater and the stress load is heavier. Regardless of the reasons: illness, relationship difficulties, work struggles, caring for an aging parent or ailing child, there can be a physical impact. We may turn to food for comfort, or we may not nourish ourselves adequately. During times of stress there are actual physiological changes that happen in our bodies, one of which is weight gain. It may not happen overnight, but if we do not pay attention to our body’s needs, over time we may notice we are putting on the pounds. Most diet plans never take this into consideration and the follower of the plan fails to make any good progress. The following excerpt from the recently released E-book: “The Weight Loss Puzzle, Finally Solved!” written by myself and Dr. Diane Hayden arms the reader with information on which essential lab tests should be run to evaluate how our bodies are actually responding to daily stress. The following lab tests should be run in order to assess the function of the adrenal glands. The adrenal glands enable your body to respond to every kind of stress (whether it’s physical, emotional or psychological) through hormones that regulate energy production and storage, heart rate, blood sugar balance, muscle tone, and other processes that enable you to cope with stress. When the body senses that it’s under stress it will attempt to stimulate the production of the following key hormones: norepinephrine, cortisol, DHEA-S and pregnenolone. An overproduction of these hormones can lead to the body going into an energy conservation mode leading to weight gain as other glands like the thyroid, ovaries and testes are affected. In contrast, an underproduction of the adrenal hormones can lead to a variety of other issues including a condition known as adrenal fatigue syndrome which we touch on briefly in the book. AM cortisol - Cortisol is released in a circadian rhythm pattern and in healthy individuals should be highest in the morning and taper off as the day goes on. It is therefore important for you to get your blood drawn first thing in the morning, around 8 a.m. being optimal. Cortisol plays extremely important roles in the body such as regulating blood sugar, reducing inflammation, helping you deal with stress and regulating immune function to name just a few. When cortisol levels become too high due to repeated stress, your metabolism can suffer greatly as the body goes into an energy conservation mode by suppressing the body’s conversion of T4 (the inactive thyroid hormone) to T3 (the active thyroid hormone) and increasing the production of reverse T3 (the metabolism suppressing

hormone). Blood sugar levels also tend to go up, while you tend to store fat and lose muscle mass. On the flip side, chronically low levels of cortisol can lead to a whole new set of problems ranging from chronic fatigue to anxiety and depression as the body stresses and strains to maintain a normal balance. Optimal range for AM Cortisol is between 18-22 mcg/dL. DHEA-Sulfate – DHEA is another adrenal hormone that is your body’s repair and regeneration hormone. You can use this hormone to make other hormones like estrogen, progesterone and testosterone. The levels should be assessed along with cortisol and pregnenolone to determine if your adrenal system is over or under functioning. Chronically elevated levels, like with cortisol, can not only lead to weight gain but also irritability, sleeplessness and mood changes. Low levels can lead to immune dysfunction and low libido as well as muscle loss and fat gain. Optimal ranges for women are 150-250 mcg/dl and 250-350 mcg/dL in men. Pregnenolone – This is considered the mother of all adrenal hormones since it’s the precursor to make DHEA, cortisol, progesterone, estrogen and testosterone in both men and women. Your body synthesizes this hormone directly from cholesterol. Pregnenolone decreases with age and can be negatively affected by cholesterol lowering drugs, excessive trans-fats and a lack of healthy fats in the diet. The functions of pregnenolone in the body are as follows: • Increases resistance to stress • Regulates the balance between excitation and inhibition in the nervous system • Improves mental and physical energy • Enhances nerve transmission and memory • Reduces pain and inflammation Since pregnenolone and all the other steroid hormones produced in the body are all derived from cholesterol (a fat), eating adequate amounts of the right fats in the diet is of utmost importance. The ideal range for pregnenolone that I like to see in my patients is above 50 ng/dL with 90-110 ng/dL being optimal. Once again I look at this hormone in conjunction with the other adrenal hormones to determine the overall health of the entire adrenal gland. Norepinephrine – Norepinephrine is both a hormone and neurotransmitter produced in the adrenal glands and also in the nervous system. Along with epinephrine, norepinephrine is part of your fight or flight response when you encounter acute stress or www.NaturalNutmeg.com

danger. It causes an immediate elevation in blood pressure, heart rate and blood sugar. Without this crucial reflex it is unlikely that our ancestors could have outrun predators or chased down prey. The problem is that in modern life, most of your stressors do not require fight or flight. Your body relies more on the steady release of the other adrenal hormones: pregnenolone, DHEA and cortisol to help you deal with stress, but when the adrenal glands are over taxed and you enter into a state of adrenal fatigue you are prone to run on epinephrine and norepinephrine. This can take a major toll on the body. Elevated levels of the hormone leptin coupled with weak adrenals and increased stress can really tax the adrenal and nervous system leading to a major inhibition in weight loss. Chronically low levels can also be problematic and can result in symptoms of fatigue, depression and attention deficit. Ideal levels for norepinephrine are 250 – 350 pg/mL with levels closest to 250 being optimal.

The Wiser We Get

W

hen I was four years old I was home in bed with one of my frequent ear infections. I took a toy telephone I was playing with and unscrewed the dial and put all the pieces in my mouth as I had seen carpenters do with nails which they then pulled out to use. The problem was that I aspirated the pieces and went into laryngospasm. I can still feel my intercostals muscles and diaphragm contracting forcefully, trying to get some air into my lungs, but nothing worked and I was unable to make any sounds to attract help. I had no sense of the time but suddenly realized I was not struggling anymore. I was now at the head of the bed watching myself dying. I found it fascinating to be free of my body and a blessing. I never stopped to think about how I could still see while out of my body. I was feeling sorry for my mother who was in the kitchen and would find me dead, but I thought it over and found my new state preferable and intellectually chose death over life. Then for no apparent reason the boy on the bed vomited and all the pieces came flying out. He began to breathe again and I was very angry as I returned to my body against my will. I can still remember yelling, “Who did that?” My thought as a four year old was that there was a God who had a schedule and I wasn’t supposed to die now. So an angel apparently did a Heimlich maneuver on me is the way I would explain it today. I really do believe there is a schedule we create unconsciously because of later life experiences. Twice I have had my car totaled by people driving through red lights and once I fell off our roof when the top rung on my wooden ladder snapped off. In none of these incidents did any significant injury occur to my body.

Most recently one of our cats disappeared when a door was left open. After several weeks with no sign of her I was sure she was killed by a predator. A friend I had made, Amelia Kinkade, is an animal intuitive who lives in Los Angeles. We live in Connecticut and Amelia has never been to our home or near it. I pestered her to tell me where the cat was and one day I received an email, without even sending Amelia a picture of the cat, and it detailed the house, yard, other animals and people who were involved in the cat’s life. The next day I went out and found the cat exactly where Amelia said it was hiding. She told me in the email, “The cat is alive because I can see through its eyes.” If that doesn’t make me a believer nothing will. I totally believe that consciousness is non-local and not limited to the body. I also have experienced this through the drawings and dreams of patients I have cared for which allows them to know their diagnosis and what the future holds for them. As Jung said, “The future is unconsciously prepared long in advance and therefore can be guessed by clairvoyants.” I believe it is this unconscious awareness which we each bring with us when we are born. So I do not believe we literally live many lives but that we bring with us the experience of previous lives. Thus the wiser we get the better the future will be for those who follow us.
