August is so often associated with going “back to school”, but what if we never left school?
This month, our theme is “Lifelong Learning”. When was the last time you learned something new? It is proven to be beneficial for our brains and bodies to keep learning new things throughout life. Check out page 18 to give yourself new motivation to get outside your comfort zone, gain a new skill, meet new people and grow your brain.
Along this theme, our Inspiration article on page 14 recounts Deb Beroset’s recent experience of the “First Day of School” feeling in her 60s. She shares all the excitement and the nerves of a fresh start in a new place—the gym. While there may be things that make us feel out of sorts and unsure of ourselves when we start a new endeavor, there are ways to push through it and face the uncertainty head-on.
With the kids in our lives going back to school, our Healthy Kids article is talking about protecting them from microwave radiation that is present in schools using wireless services. While our access to technology and the internet can greatly improve our ability to teach and to learn, we may not have all the facts on the safety of going wireless in the learning environment. Read more on page 22.
This edition also includes tips on reducing indoor air pollution, learning healing lessons from nature, local chef phenom Alejandre Richards and more.

Advisors Help Make Medicare Plan Changes Simple Medicare
Annual Enrollment Period (AEP), also known as the Medicare Annual Election Period and the Medicare Open Enrollment Period, is a specific fall enrollment period from October 15 through December 7. During this time, beneficiaries can make changes to their current Medicare plan coverage. All plan and benefit changes become effective on January 1 the following year.
On October 1 each year—two weeks before Medicare open enrollment starts—health insurance companies release information about their plan benefits for the following year. These can include premium changes, prescription drug coverage updates and more. This is a great time for Medicare beneficiaries to think about whether their plan will still meet their needs in the next year. If not, they can look for a better option during AEP.

Tattoo Science and Concerns
Colon Cancer Rising Among Young Adults
People have decorated their bodies with tattoos for millennia for ceremonial and religious reasons, and many people today use them as a form of selfexpression. Tattoo inks are usually made of a mixture of solid particles, molecular dyes, binders and water. The color of the tattoo comes from light being reflected or absorbed by the particles and dyes. While tattoo artists must be licensed to operate for safety reasons, the inks used for tattoos are unregulated in the U.S.

Colon cancer is on the rise in young adults, according to a report published in the journal Science. Colorectal cancer diagnosed in individuals under the age of 50 is known as earlyonset colorectal cancer (EOCRC). The most common symptoms include abdominal pain and rectal bleeding. Patients with EOCRC are often diagnosed with more advanced-stage disease and have worse survival rates compared to a later onset of the disease.
Researchers from Binghamton University, in New York, analyzed almost 100 inks and found that even when these products included an ingredient label, they were not accurate. The team also detected particles that could be harmful to cells.
“Every time we looked at one of the inks, we found something that gave me pause,” says John Swierk, Ph.D., the project’s principal investigator. “For example, 23 of 56 different inks analyzed to date suggest an azocontaining dye is present.” Although many azo pigments do not cause health concerns when they are chemically intact, bacteria or ultraviolet light can degrade them into another nitrogen-based compound that is a potential carcinogen. In addition, the team analyzed 16 inks using electron microscopy, and about half contained particles small enough to get through the cell membrane and potentially cause harm.
Once this data has been peer reviewed, the findings will be posted at WhatsInMyInk.com to help consumers and artists make informed choices.
EOCRC has risen at a rate of 2 to 4 percent per year since the 1990s and is anticipated to become the leading cause of cancer death in those aged 20 to 49 by the year 2030. One in five colorectal cancer (CRC) cases diagnosed today are in people younger than 55, compared to one in 10 cases in 1995, according to the American Cancer Society.
The increased risk is carried through generations due to changes in environmental risk factors that disproportionately affect those born in recent decades compared to those born earlier. Obesity and other conditions related to metabolic syndrome, such as hypertension, hyperlipidemia, hyperglycemia and Type 2 diabetes are associated with CRC risk. Dietary factors, such as sugar-sweetened beverages, red and processed meat, and Western diets, have also been implicated, as has the increased use of antibiotics, environmental toxins and higher rates of cesarean sections and other surgical procedures. Other possible reasons include genetics, low screening rates and misdiagnoses. Researchers also call for more research on the microbiome for EOCRC early detection and assessment.
Strong people stand up for themselves, but stronger people stand up for others.

Walking in Wonder
by Marlaina DonatoBefore life snagged us in its insidious net of obligations, our child selves discovered awe around every bend. We poked our noses into fluffy, new dandelions and saw faces in passing clouds. “Why?” was a perpetual mantra we lived by, no doubt testing the patience of loved ones. Somewhere along the way, our eagerness to jump into the lap of the world and be held by magic gave way to a new way of being.
In 1942, Albert Einstein wrote to his old friend, German psychiatrist Otto Juliusburger, “People like you and I, though mortal of course like everyone else, do not grow old no matter how long we live. What I mean is we never cease to stand like curious children before the great Mystery into which we were born.” This quote reminds us to stop wading in the daily grind and dive into the deep end of everyday magic.
Discovering a new musical artist, learning about a country we never heard of and touching emerald moss during a Sunday hike wakes up the child in us, the self that is impervious to pessimism. Observing a flower at ground level with the bees or reacquainting ourselves with the changing wheel of constellations not only re-sparks our ability to respond to life but also reinforces our connection to the infinite.
Courting curiosity is the domain of cats, as well as the most contented humans. Rekindling our wonderment is even better when shared with kindred souls, and the ripple effect can travel further than we might expect. Here are some inspirations:
n Without a set plan, get in the car with a friend and see where the day takes you. Pack a picnic and stop for lunch somewhere off the beaten path.
n Regardless of artistic ability, begin a nature journal and record small bits of the seasons throughout the year.
n Check out a book or two from the children’s section at the library and be young again.
n Create a daily practice of daydreaming about something delightful that has nothing to do with the past or the future.
n Start a local meet-up with others that share a common passion: books, healthy baking, trains or thrifting.
n Revisit a childhood or teenage interest and don’t explain why.

When You’re Tempted to Give Up on a Dream Mustering Your Moxie in the Face of Uncertainty and Hard Stuff
by Deb BerosetMy favorite time of year as a kid was getting ready for the First Day of School. It was the season of fresh starts and possibility: The new book bag, the pristine box of crayons, the colorful dividers in a binder I was sure would propel me to super-organized greatness. I’d pore over Sears catalog pages looking for the dress that would launch my life as a 4th grader. Because that first day—it’s everything, right? Later I’d learn how much the quality of life depends on how we relate to the days that follow any First Day. Fast forward several decades to a couple weeks ago, when my first-day outfit was faded athletic wear pulled from the bottom of a drawer. I’ve joined a gym, you see. And put my 63-year-old butt on the line by investing in some sessions with a personal trainer.
My first day at the gym was pretty shiny, just like the first day of school used to represent—here we go, a new beginning! Then came my first session on my own trying to follow the workout my trainer laid out for me in a special app. I had trouble locating the right machines. Some of the balance exercises had me teetering and wobbling like a newborn giraffe. Then came the obstacle that almost took me down: the exercise requiring a stretchy fitness band.
I searched to no avail, then asked at the desk and got a shrug in response. In my head, the noise went from grumbly frustration to: “How am I supposed to do this? This is too hard, I don’t have what I need, I’ll do this some other time.”
I didn’t leave. But I most definitely wanted to. It was a hit-thewall moment.
A good question to ask in these meltdown moments is, “Who am I for myself right now?” I realized oh, I’m being hapless. A helpless victim.
Time for some compassionate curiosity. Isn’t it interesting, I reflected, how right now I’m essentially pretending I’m not the same woman who has handled far tougher things and barely blinked?
I am the same woman who said yes to a journalistic assignment in the Soviet Union a few months after the Chernobyl nuclear plant disaster—and published my first national piece in Ladies’ Home Journal when I was 26. Years later, I navigated single motherhood in a new city with a 3-year-old, a 6-year-old and freelancer burnout—and managed to land a job managing Hallmark’s internal think tank. When I was 56, I made the scary leap from a high-level corporate PR gig to creating my own soul-led business, and here I am nearly seven years later.
(We’ve all got irrefutable evidence of our power to create if we’re open to seeing it. What are some of yours?)
Yet—despite all the challenges I’ve conquered—at the gym, where I don’t consider myself in my element or feel very competent, I’m fighting the urge to throw up my hands in despair and bail because I don’t have a fitness band.
When our energy is coming from a place of fear (a general term used to represent resignation, doubt, anxiety, irritation and so on), and we let craptastic thoughts have the run of the place, we easily turn the smallest little thing into a big, honking wall. And if we allow it to, that self-created wall will stop us in our tracks.
The situations and fears our scared brains turn into insurmountable barriers seem so real in the moment, it’s easy to slip into the self-talk that sinks our dreams: “Never mind, this isn’t meant to be. At least not for me. Not now.”
Of course, we want something more than that. We want to live in a way that at the end of this ride, we say, “Hell yeah, I did the damned thing. I didn’t just make it through, I lived.”
Living that kind of life is a juicy benefit of activating your creatrix energy and stepping into your innate power. It’s something that can be learned at any age, though I think many of us in our third act are particularly ready and hungry for it.
The other day at the gym, when I witnessed myself struggling with energy-zapping mind noise, I chose to consciously step into Creatrix Mode. I switched on a playlist that connects with something primal in me, I went after it, and when I emerged from the gym all sweaty an hour later, it was as a badass, benevolent warrior for love.
And does that energy flow into the rest of my life? You bet it does. When you’re a student of the soul and dare to dream and create, you get to experience the emboldened, sensual, selfexpressed and joy-full version of you in full bloom.

Maria Rodale
ON LETTING NATURE HEAL ITSELF
by Sophia Ellis KreiderBestselling author, activist and gardener Maria Rodale is a board member of Rodale Institute, a nonprofit dedicated to growing the regenerative organic agriculture movement through research, farmer training and education. She is the former CEO of Rodale Inc., the global health and wellness media company that published notable books and magazines, including Al Gore’s An Inconvenient Truth
Her own books include Organic Manifesto: How Organic Food Can Heal Our Planet, Feed the World, and Keep Us Safe, as well as Scratch: Home Cooking for Everyone Made Simple, Fun, and Totally Delicious. In her latest work, Love, Nature, Magic: Shamanic Journeys into the Heart of My Garden, Rodale leads readers through her relationship with the plants, animals and insects that inhabit her garden and shares the life lessons these often misunderstood creatures taught her.
Why did you write this book?
It was a combination of sensing that “spirit” wouldn’t allow me not to and the recognition that I could write the book in my own way, with humor and irreverence. It’s been my experience that once we begin following the path that spirit provides for us, things become easy. As someone on the older side of life, I’ve also noticed that when I don’t listen to that guidance, I tend to really mess things up, so even when I don’t understand the path, I have to follow it.
What is the most significant message nature is trying to share with us?
The overarching message, which has been reinforced since I wrote the book, is that nature wants to feel free to do whatever it needs to do to heal things. The more we try to control nature, the more frustrated it gets. The same is true for people; the freer we feel, the happier and more productive we are. All efforts to control, whether it’s controlling human behavior or landscapers trying to control the
landscape, are not helpful in any way. If we want to solve the climate crisis or the environmental crisis, we need to allow nature to be free and do its job.
The other message I received from nature relates to humans’ tendency to search for plants, take them, hoard them, eat them and rub them on our skin. In reality, we don’t need to do these things to benefit from plants. We can simply be in harmony with them in order to absorb their healing energy. So again, it’s about freedom, releasing control and trusting our relationship with plants and nature.
What role does courage play in exploring what plants, insects and animals have to teach us?
Many of us are afraid of having new experiences or have anxiety about things we don’t understand. When this happens, we can choose to stay in the fear or encourage ourselves through it. When we choose courage and curiosity, we often learn a new skill or power. For example, when I was journeying and getting to know mosquitos and ticks, I felt afraid but chose to keep going. While I didn’t come to love the mosquitos and ticks, I developed compassion and respect for them.
To understand what nature is communicating to us, we need to get curious and unlearn what our parents and culture taught us about how our garden should look or how we should interact with it. We can ask ourselves, “What am I afraid of? Where did the fear come from?” and listen for the answer.
What role does personal trauma play in healing our planet?
Trauma is the root of everything— crime, abuse and all the things that make us unhappy and destructive, both towards each other and nature. That’s one of the reasons I was excited to share the parents’ creed in the milkweed chapter. The creed teaches that in order to stop trauma, we must raise kids well from the start. The challenge is that our culture doesn’t provide the information we need to minimize our mistakes or prevent trauma in the first place. Openness to learning about ourselves is key to healing trauma. When we heal our traumas, we are less likely to project trauma onto other living beings, including nature.
If people respond to life with curiosity instead of fear, and love instead of control, we can evolve amazingly fast and have fun doing it. This is the wonderful work we can accomplish together with nature—envisioning and building new systems and ways of being on this beautiful Earth.
LIFELONG LEARNING
BENEFITS OF BEING THE FOREVER STUDENT
by Linda SechristIt’s never too late to take an evening drawing class at the local high school, learn a language with the help of an app or get one-on-one tutoring from a piano instructor. Adults of any age can find personal and professional benefits when they engage in what is termed “lifelong learning”. It is a great way to spice up retirement, acquire skills for a coveted promotion, master new technology, express creativity or simply keep the mind sharp. Lifelong learners are generally curious, self-motivated and passionate individuals. Their continuing educational pursuits can lead to mental and emotional benefits, including healthier, more fulfilling lives.
Brain Benefits
In a study published in the journal Psychological Science involving 200 seniors, neuroscientists at the Center for Vital Longevity at The University of Texas at Dallas found that sustained engagement in cognitively demanding, novel activities—such as learning digital photography or quilting—significantly enhanced memory function in older adults. The researchers were surprised to discover that the control group, which engaged in fun, social activities without learning a new skill, did not perform as well in memory tests.
In a report published in the journal Neurology, Dr. Keith Johnson from Massachusetts General Hospital and Harvard Medical School found that people engaged in higher levels of intellectual stimulation throughout their lives can delay the onset of memory problems and other symptoms of Alzheimer’s disease, although it does not represent a cure for the illness.
The mind is a use-it-or-lose-it tool, says Dr. Lise Van Susteren, a general and forensic psychiatrist in Washington, D.C. “What better way to use our short-term and long-term memory than to engage in lifelong learning? The older we get, the less likely we are to exercise shortterm memory. We program our phones with numbers we call regularly. We store passwords and usernames in our computers and never attempt to memorize credit card numbers,” she explains. “We’re not using our brains enough, leaving us open to being replaced by AI [artificial intelligence]. The brain is a muscle to be exercised regularly or like a car that you must keep tuned up.”
Susteren points to a five-year study of London taxi drivers, which found that the hippocampus, a part of the brain that is crucial for long-term memory and spatial navigation, was larger than average in the brains of these cabbies. What’s more, the neuroscientists at University College London were able to show through magnetic resonance imaging that this gray-matter growth occurred over a four-year period
after the drivers had memorized an intricate network of 25,000 streets and thousands of routes to tourist attractions and city hotspots. According to Van Susteren, this study suggests that intensive learning can spur the brain to grow over time.
Making Every Day Count
Ingrid Bianca Byerly, director of the Humanitarian Challenges Focus Program and senior lecturing fellow in the Thompson Writing Program, at Duke University, describes lifelong learners as audacious, curious and fun-loving people that passionately seize the day. In a TEDxStGeorge talk entitled “The New Fountain of Youth: Lifelong Learning”, she recounts the invigorating experience of being on the faculty of three Semester at Sea voyages, where she taught undergraduate students and lifelong learners world music and public-speaking advocacy for global humanitarian causes.
“Entering college, you’re asking yourself, ‘What am I going to do for a job and a paycheck?’ and at retirement, you’re asking, ‘What is my purpose, and what am I going to do with the rest of my life for my personal fulfillment and enrichment?’” Byerly expresses admiration for lifelong learners that pursue life goals, learn to play musical instruments, take art classes, climb mountains or write memoirs, and surmises that the secret to staying young and keeping the mind alive is adult education.
Life-Altering Pursuits
For some lifelong learners, seeking new opportunities and embracing change are compelling motivators. Take Maia Toll, for example. In 2006, she followed a
whim to study herbalism with a traditional healer in Ireland. For the elementary school teacher living in Beacon, New York, botanical herbs had only been a hobby up to that point.
“Apprenticing with Eleanor changed everything,” she says of her experience with her Irish-based mentor. “I had the space in my life and money from selling my house. Three months turned into nearly a year, and upon returning home, I continued studying for four more years.”
Toll left her teaching career to become a full-time herbalist and is now the coowner of a shop called Herbiary, with locations in Philadelphia, Pennsylvania, and Asheville, North Carolina, where she lives. She has taught herbalism at West Chester University in their School of Public Health, led a study program in the Amazon rainforest and written several books, including her latest, Letting Magic In. As she explains, “Lifelong learning can change your life at any age.”
A Greater Commitment to Learning
For 30 years, Jim Walker was a labor representative for the California School Employees Association. He recalls teaching a labor-law class as an adjunct instructor for Los Angeles Trade-Technical College and estimates that about 80 percent of his students were lifelong learners, which he defines as adults between the ages of 30 and 45 that are interested in the subject matter for personal or professional reasons rather than satisfying a requirement for a college degree.
“It was obvious to me that these lifelong learners were more dedicated students than college students. They were
like sponges and wanted to absorb everything. Occasionally during classes, it was the lifelong learners that were on their phones googling the subject and updating my facts,” says Walker, who admits that when he had more free time in retirement, he enrolled in meteorology and astrology courses to satisfy longstanding interests of his own.
The Joy of Achieving Milestones
In love with learning and the sense of accomplishment she feels whenever she masters a subject, Doreen DeStefano, of Root Causes Holistic Health & Medicine, in Fort Myers, Florida, has been earning degrees since 1987. She holds bachelor’s degrees in nursing and exercise physiology, master’s degrees in criminology and public business administration, and doctorates in natural health and nursing practice. “In medicine, there is always something new to learn,” she says. “I think that’s why I chose this field. It’s fun to learn the latest thing.”

By Doug CornellScientists have discovered a natural way to kill germs fast.
Now thousands of people are using it against viruses and bacteria that cause illness.
Colds, flu, and many other illnesses start when viruses get in your nose and multiply. If you don’t stop them early, they spread and cause misery.
made a smooth copper probe with a tip to fit in the bottom of the nostril where viruses collect.
They all said it worked, so he patented CopperZap® and put it on the market.
Soon hundreds of people had tried it. 99% said copper worked if they used it right away at the first sign of bad germs, like a tickle in the nose or a scratchy throat.
Soon people found other things they could use it against:
Colds and Flu
Covid
Sinus trouble from germs
New research: Copper kills bad germs in seconds.
When he felt a tickle in his nose like a cold about to start, he rubbed the copper gently in his nose for 60 seconds. “It worked!” he exclaimed. “The cold never happened.” That was 2012.
Cold sores or fever blisters
Canker sores that get infected
Mold allergies
Congestion or stuffiness
Drippy nose
Hay fever worsened by bacteria
Strep throat
Pink Eye and Styes
Skin infections
Infected sores
Cuts or wounds getting infected
Thrush and Tongue Infections
Warts
Ringworm
Hundreds of studies confirm copper kills germs like viruses, bacteria, and fungus almost instantly, just by touch.
That’s why ancient Greeks and Egyptians used copper to purify water and heal wounds. They didn’t know about germs. Now we do.
The National Institutes of Health and the American Society for Microbiology vouch for the power of copper to kill germs.
Scientists say copper’s high conductance disrupts the electrical balance in a germ cell and destroys it in seconds.
The EPA recommends hospitals use copper for touch surfaces such as faucets and doorknobs. This cuts the spread of MRSA and other illnesses by over half, and saves lives.
The strong scientific evidence gave inventor Doug Cornell an idea. He
Now he’s gone 11 years without a cold. “I used to get 2-3 bad colds every year. Now I use my CopperZap right away at any sign I am about to get sick.”
After the initial success, he asked relatives and friends to try it.
Users say:
“It works! I love it!”
“I can’t believe how good my nose feels.”
“Is it supposed to work that fast?”
“One of the best presents ever.”
“Sixteen flights, not a sniffle!”
“Cold sores gone!”
“It saved me last holidays. The kids all got sick, but not me.”
“I am shocked! My sinus cleared, no more headache, no more congestion.”
“Best sleep I’ve had in years!”
The handle is curved and textured to increase contact with fingers and hands in case you touch things sick people may have touched.
Scientists placed millions of viruses on copper. “The viruses started to die literally as soon as they touched it,” said Dr. Bill Keevil.
The EPA says copper works just as well when tarnished. Easy to clean or polish.

Protecting Our Children From Microwave Radiation at School
by Lisa Smith by deagreez on AdobeStock.comThe internet has become crucial to classroom learning, making it easier than ever for children to learn and use vast amounts of information. Like our homes, schools have two choices to access this information: wired or wireless. Almost all schools today have chosen the wireless option, which means they are filled with wireless devices and infrastructure that emit microwave radiation. Yes, the same kind of radiation we use to cook and heat our food in microwave ovens.
Schools, in fact, have some of the most intense concentrations of microwave radiation found today. Powerful, commercial-grade Wi-Fi systems use multiple routers or “access points” throughout classrooms, often in the ceiling above students’ heads. Add to these the devices the routers connect to (computers, tablets, audio-visual equipment) and students’ personal wireless devices (cell phones, ear buds, smart watches).
Almost all Tucson schools have cell towers either on campus or in close proximity that can emit extremely high levels of radiation into classrooms. And the Tucson Unified School District (TUSD) Board has approved Verizon Innovative Learning Labs in multiple schools that come with their own 5G cell tower and provide Virtual Reality learning through wireless headsets placed directly on students’ heads (learn more at EMF-Wellness.com/services-schools). In short, students are attempting to learn, teachers attempting to teach, in a sea of microwave radiation.
It is now well established in peer-reviewed science that microwave radiation poses a significant threat to human health, including increased risks of neuropsychiatric effects that impede student learning, such as cognitive impairment, behavioral and memory problems, attention deficit disorder, migraine and emotional disturbances such as anxiety and depression. Long-term health effects of exposure may also include sperm damage, oxidative stress, DNA damage and cancer. Children are more vulnerable to these negative effects because their developing brains are more sensitive, and the radiation penetrates deeper into their brains because their heads are smaller and skulls thinner. Common symptoms of exposure to microwave radiation among school children
are headaches, nausea, dizziness, lack of concentration, memory problems, skin rashes, nose bleeds and hyperactivity.
Parents, teachers and administrators should know that wireless products and infrastructure are not safety tested before being allowed in classrooms or on school property. Since their radiation levels fall within the Federal Communications Commission’s (FCC) exposure limits, they are simply assumed safe. This assumption is unfounded. In 2021, the FCC lost a landmark court case in which Federal judges ruled it ignored the scientific evidence of harm to children in setting its limits and of exposures longer than 30 minutes.
Furthermore, Public Law 90-602 passed by Congress declared that public health must be protected from electronic product radiation, mandating that the Food and Drug Administration (FDA) evaluate ways people are being exposed, develop techniques to reduce exposure and warn the public about potential harm. The FDA has ignored this mandate, despite the recent rapid proliferation of wireless devices. In June 2023, Americans for Responsible Technology filed a formal petition holding the FDA accountable to obey this law.
While policy catches up with the science and law, what can parents and teachers do? A good starting point is to use the resources at Tech Safe Schools (TechSafeSchools.org) to become educated about this environmental toxin, the legal ramifications of not protecting students and the safer alternatives. Solutions range from going completely wired to greatly reducing radiation through costless modifications to router settings. Parents can become Safe Tech Advocates to help ensure our precious children can learn and grow to their full potential in a toxinfree environment.

ALEJANDRE RICHARDS
Where did you grow up and when did you move to Tucson?
I grew up mostly on the Caribbean Island of Barbados, since that is where my lineage lies, but I have spent a lot of time in foreign countries before I headed home to the United States. I moved to Tucson on November 9, 2009.
When did you decide to become a chef?
Becoming a chef turned out to be a necessity. I started out my journey just wanting to learn new things, to explore. I have owned a marketing company, Matrix Media Consulting Group, for 30-plus years now, but when the pandemic started the world changed overnight. The only entity marketing anything was the Centers for Disease Control and Prevention (CDC). I had to pivot, and fast.
I rebranded and opened The Tie Kitchen, utilizing my cooking and marketing skills. I wrote seven cookbooks in three years and became one of the most popular and sought-after personal chefs in Tucson.
What is your signature dish? What do people love about it? Although I am well versed in many genres from around the world, believe it or not, my favorite dish to make is Mac ‘n Cheese. Why? It’s simple. It reminds me of home. What does everyone love about it? It is made in a way that you’ve never had before, and yet it’s like coming home after a long time away and feeling like you never left.
What is your cooking philosophy?
My cooking philosophy is “Cooking with Love”. There is nothing more pleasing than putting your heart into a dish and watching the recipient enjoy it to the max. Name a cooking tool/gadget without which you can’t live. Everyone must, and I repeat must, have a can of air. It will clean every crease and crevice you never knew existed.
What was the genesis for opening The Tie Kitchen?
Truth be told, the kitchen makes me feel close to my mom. She was my role model. I’ve watched my mom make these recipes a thousand times, and not once did I ever see her take a measurement. I have the best childhood memories, especially of the Christmas holidays. Cooking, baking, spending time with family and listening to calypso and reggae. The entire street was practically family, which made things quite interesting. The house was a hub, and everyone would visit. You could hear the kids in the street, the men under the streetlights playing dominos and drinking rum. Christmas service at 4 a.m. with traditional hymns followed by more food than we could eat. Definitely my favorite time of the year and some of the fonder memories of my mom. She would be so proud.
What is your favorite comfort food?
Personally, I just love a good plate of spaghetti and meatballs. You simply can’t go wrong.
As a caterer, what food and drinks are trending now?
Trends are determined by a number of things, e.g. time, place, people, influencers, so it might vary. In my world, charcuterie boards are all the rage. As a personal chef, I need the space to create, so nine out of 10 of my clients will give me the latitude to do so. They choose the region of the world they would like to explore, and I surprise and delight their palates.
Can you give us an example of a menu you’ve created for a dinner party?
Hors d’oeuvres: Caprese Sticks Drizzled with Balsamic Vinaigrette
Starter: Carrot Ginger Soup
Entrée: Tuscan Chicken over Linguine
Dessert: Lemon Blueberry Cheesecake
What was your inspiration to start a community garden?
Three years ago, when we were on the cusp of the global pandemic, I asked if the collective was prepared for major catastrophe. Folks laughed, they told me I was fear mongering, yet here we are.
I purchased a few plants and started a community garden. Things were extremely cheap then, so it was good timing. I grew as much as I could. I didn’t know where this was all going, but if you were in need and lived in my area, this would be your garden as well. If there were older adults who needed meals, I harvested the garden and cooked for them.
Since I was using my own money when I started, I figured that as big as my online following was, surely, I could ask them for help, right? Well, I was right and in our first campaign we raised $5,000 to expand the garden. The garden is now almost 4 years old, and it is still funded every season by my online community. Once a month we harvest and create meals, delivering them to seniors in their homes.
If you could invite anyone to dinner at your house, someone living or deceased, who would get the invite and why?
I would invite my mom to dinner. She passed over 30 years ago. She is the reason for who I am and who I strive to be.
What’s on the menu?
Cou Cou and Flying Fish. It’s a Caribbean recipe and something that she herself always loved to make.
What would you discuss?
There are so many things that I would love to tell her that I never got to simply because I always thought I would have more time. Not to mention, she would totally get a kick out of the idea of me cooking. She would be surprised and happy in a good way. Makes me smile!
Is there a dress code?
No dress code needed. She would always say, “You are welcome at my table. Just come as you are.”
What advice do you have for someone who wants to host a memorable dinner party?
Don’t try to do it all yourself. Hire someone. If you want to impress your guests, spend all of your time with them. Tell stories and more importantly, listen to theirs.
What are some of the things you are most thankful for in your life?
Most importantly, I am thankful for my wife, who is the driving force in my life. I am thankful that I have been given the inspiration and ingenuity to serve. I am thankful to the people who surround me. They support and encourage me in everything I do.
I’d like to thank the community of Tucson for keeping me uplifted and busy, by ordering as well as recommending my services Also, for all of the media coverage which has led to so many accolades and to my success.
Do you have a favorite quote or mantra?
“Never trust a skinny cook.”

Acne Antidote
TOPICAL AND DIETARY ROADMAP FOR HEALTHY SKIN
by Sheila JulsonAccording to the American Academy of Dermatology Association, acne is the most common skin condition in the U.S., affecting up to 50 million Americans annually and roughly 85 percent of 12- to 24-year-olds. Dr. Julie Greenberg, a naturopathic doctor and founder of the Center for Integrative & Naturopathic Dermatology, in Los Angeles, notes that the prevalence of acne in this country leads people to wrongly conclude that it is a normal part of being human. “In fact, studies of indigenous cultures throughout the world do not find any acne in their populations. Acne is a disease of the Western lifestyle,” she asserts. In essence, acne is an inflammatory skin condition that causes pimples, blackheads, whiteheads and redness. It is prompted by the overproduction of sebum, an oil produced by the sebaceous glands to lubricate hair follicles. Symptoms can be aggravated by an overgrowth of bacteria or yeast, excess hormonal activity or stress.
Dietary Solutions
“The pathways that trigger acne are the same pathways that trigger inflammation. If you’re having acne on the skin, that generally means there are moderate to high levels of inflammation in the body, so that should be addressed,” says Saya Obayan, a board-certified integrative dermatologist at Skin Joy Dermatology, in Austin, Texas. She recommends keeping a food journal for six weeks to identify inflammatory foods that noticeably trigger an acne response and eliminating them from the diet. Many of the culprits are part of the Standard American Diet, including animal protein, wheat and sugar— foods that can increase sebum production, and thus generate acne.
Whether it’s a wedding day or job interview, nothing puts a damper on the moment like an outbreak of acne. It can be embarrassing and compromise selfconfidence, but natural treatments and lifestyle modifications can keep those breakouts at bay.
Dr. Steven Daveluy, associate professor and program director for the Wayne State University School of Dermatology, in Dearborn, Michigan, notes that dairy spurs acne, as well. “Dairy contains an amino acid called leucine, which stimulates oil production and affects the skin cells to cause clogged pores. It also influences the insulin pathway, which can affect hormones,” he explains.
According to the Cleveland Clinic, hormonal acne develops when hormonal changes increase the amount of oil the skin
produces. This scenario is particularly noticeable in teens going through puberty and in both perimenopausal and menopausal women.
Greenberg approaches acne like she would any other inflammatory disease—by focusing on the gut microbiome. She recommends consuming at least 35 grams of fiber per day, eating a diverse array of fruits and vegetables, limiting meat consumption to four-ounce servings and eliminating or reducing alcohol, sugar and wheat to support microbiome health.
Stress Relief
Obayan notes that stress aggravates any inflammatory disease, including acne. Meditation, exercise or regular walks can help calm the mind and lower stress. She also recommends herbs like ashwagandha to lower cortisol, a stress hormone that can trigger acne.
Topical Treatments
“The things we put on our skin can lead to clogged pores and trigger acne, including makeup and hair products. If you’re getting acne in places where your hair typically touches your face, it could be from a hair product transferring onto the skin,” Daveluy notes. He stresses that makeup should be washed off before bedtime. On the other hand, over-scrubbing or washing the face too often can dry out the skin, which also leads to clogged pores and acne.
“While acne should be addressed from the inside out, topical antibiotics can offer short-term relief and keep severe acne under control,” Obayan says. “Glycolic acid can help keep skin smooth and clear by exfoliating dead skin cells and unclogging pores. Tea tree oil has antibacterial and antimicrobial properties, but it shouldn’t be used undiluted on the skin; it can be overly irritating.”
In addition, Obayan recommends topicals like retinol, a nontoxic vitamin A derivative that can help reduce acne, hyperpigmentation, dark spots, scarring, fine lines and wrinkles. Bakuchiol, an extract from the babchi plant, along with topical green tea polyphenols, licorice extract and neem oil, can all be helpful to reduce acne.
Resist the Urge to Pop Pimples
Mom was right when she warned to leave pimples alone. “People often think that it’s helpful to manipulate your acne, but it can lead to more acne flaring, discoloration and even permanent scarring,” Daveluy advises. “Don’t believe anything on social media that isn’t posted by a board-certified dermatologist. The rest of the skin info on social media is junk and could lead to damage to your skin.”

Back To School
Three Dental Care Tips From Your Family Dentist
Did you know that neglecting your child’s dental health can cause an increase in missed school days?
In a recent study published in the Journal of Public Health, it was found that between 58 and 80 hours of school were missed due to dental pain and toothaches out of every 100 students between the ages of 5 and 17. The parents of those students missed an average of 2.5 work days to take the child to their pediatric dentist.
Some of the benefits of good oral health for children include better grades, prevention of gum disease and cavities and improved concentration (due to less mouth pain).
1) Schedule a Dental Checkup at Least Once a Year
As you get ready to send your child back to school, don’t forget to schedule a dental care visit with your dentist. Scheduling your child’s dental visits prior to the start of the school year ensures that you do not forget to make the appointment. During the visit, you can expect your dentist to look for cavities, decay and discolored teeth, check your child’s mouth for jaw and tooth growth and perform a thorough cleaning and polishing.
2) Teach Your Child to Brush, Floss and Rinse
Until your child reaches the age of 7, monitor his or her oral hygiene habits and teach them to brush their teeth and rinse with a non fluoridated rinse like Closys twice per day. To help with brushing, you can set a timer for two minutes or download a cell phone application that helps motivate children to brush their teeth. In addition to brushing and rinsing, you should teach your child how to floss. This can be accomplished by you flossing your teeth in front of your child and then helping them floss their teeth until they understand the process.
3) Limit Your Child’s Intake of Candy and Sweets
Sticky and sugary candies that are left in the mouth automatically increase the levels of harmful acids, and it can take as long as 20 minutes for the saliva to neutralize those acids. If your child eats these types of candies multiple times a day, they are increasing their risk for cavities. Instead of candy or sugary treats, plan for healthy desserts and snacks, including fresh fruits and nuts. If you plan to give your child candy or sweets, it’s best to do it after a meal.
To lessen the likelihood of your child missing school and you missing work, follow these tips to ensure good oral health.
