Explore Tampa Bay - Support Local Businesses! I’ve lived in Tampa Bay since 2004, and I am still surprised at the amount of hidden local gems I have yet to explore. From adorable boutiques to food trucks and everything in between, Tampa Bay has numerous amazing small businesses just waiting for you to visit! During one of my “adventures” exploring local shops, I found myself at “Salty Paws” in Downtown Dunedin. It happens to be the first doggie ice cream shop in Florida, and it is a dream come true for any dog owner in town! Salty Paws Dunedin is owned and operated by Florida native Robyn Nackino, and Michelle Bimble, who has lived in Tampa since 1999. Robyn and Michelle are family-oriented women who enjoy supporting local businesses and have a passion for animals. I encourage everyone to spend a day exploring Dunedin and its multiple small local businesses, including Salty Paws! But be careful though, their “dog treats” look

so beautiful and delicious that you may be tempted to bite one! Recently, my mother and I have found ourselves on the fun quest to find Tampa Bay’s most unique “locally-owned coffee shop.” We spend every weekend supporting one new coffee shop/bakery in town, getting to know the owners, and exploring their menu options. Our dates are usually less than $20 and we leave having made new friends in a new place. By doing this we’re not only supporting small businesses, but we’ve also gotten to know our city better and all the wonderful things it has to offer. JACOBSON CULINARY ARTS ACADEMY AT TARPON SPRINGS HIGH SCHOOL Triathlon Cookies • 4 cups all-purpose flour • 2 teaspoons baking powder • 2 teaspoons kosher salt • 3½ cups rolled old fashion oats (not instant) • 16 ounces of unsalted butter, room temperature • 2 cups granulated sugar • 2 cups light brown sugar

With a mixer, cream butter until soft and smooth, add sugars and continue to mix together until fluffy. Add eggs one at a time, mixing well after each. Add vanilla. Add sifted dry ingredients, oats, and mix until incorporated Add cranberries, raisins, cherries, or currants, chopped walnuts, and whole walnuts, pecans, and sliced almonds. Scoop dough on sheet pan according to size of cookie wanted; using an ice cream scoop or tablespoon. Bake 10-12 minutes at 350° on a baking sheet, until lightly golden. Cool on rack and enjoy!

SAT AND ACT IMPROVEMENT: FALL OUTLOOKS Dr. Wayne Adams FALL EXAM DATES: SAT: October 2, December 4; PSAT October 13; ACT: September 11, October 23, December 11. Now that school has started and most schedules have settled down, we can all take a long breath and think about fall planning. Seniors and their parents are thinking about applying to colleges, the SAT and/or the ACT Exam, FASFA forms, Bright Futures, and other scholarships … on top of all the academics and activities that constantly demand attention. The “gorilla in Florida” is the UF deadline. According to the UF website, applications are due on November 1st, and any received after November 16 are accepted on a space-available basis, which is extremely limited. Most other schools are fine with a January 1st application and standard exam scores following soon behind. For those wanting to apply for early option or early decision, most of these programs are fine with exam scores coming in late November through December – but make sure to check the dates with your target schools to be absolutely sure. More important, with most schools your percentage of acceptances from Early Acceptance or Early Decision are roughly three times the rate of acceptances from the regular application dates. Juniors and Sophomores are simply looking forward to successfully completing their fall term, and doing their best on the PSAT coming in mid-October. Many are already preparing for the full exams, which gives them more time to prepare and experience the exams. On occasion, I have tutored seventh graders for the SAT and ACT, and it is becoming more common for me to start with ninth or tenth

18 SEPTEMBER 2021

graders as well. When I am asked, “Wayne, what do you do?” most expect the answer, “I am a tutor.” Instead, my answer is, “I help my students have their best possible futures which includes doing their best on the SAT and/or ACT Exam.” This is why each of my students/parents receives a copy of two guides that I have written. The first is Negotiating with Colleges, which has saved many families from $1,000 to $10,000 a year in college costs. The second is How to Write College Application Essays that Colleges will Love, with 104 pages including how to write great essays and over 40 examples with my comments and explanations. My new guide Achieve and Maintain Your PEAK MENTAL PERFORMANCE ZONE on the SAT and ACT including HOW TO WIN OVER PERFORMANCE ANXIETY has proven to be very helpful for my students to do their best on these exams. Also, I help with college application information, ideas about possible schools, coaching for students in how to study most effectively, and special negotiating points. Many Florida parents and students are very surprised to

learn that it can easily cost less to attend a top university than a Florida public university. The reason is because top academic schools have large endowments, and adopted generous grant and assistance policies several years ago to help their students graduate “debt free” if possible, and make awards on a “net cost” basis that includes room and board. For example, if your student is admitted to Harvard and the family makes $75,001 - $110,000 a year, the net cost is $15,553 a year according to collegescorecard.com. That is often less than the net cost for UF on a 100% Bright Futures scholarship because students at UF must pay full room and board which can easily run more than the Harvard net cost. At Yale, the net cost is $11,492; Princeton, $16,989; Stanford, $10,631; U Chicago, $17,929; and MIT $14,381. Wayne Johnson’s Little Big Band - Small Band, BIG Talent!

By: Joy Bergman The magic of big band music is back, thanks to Tampa Bay’s new local big band, the “Wayne Johnson’s Little Big Band!” Now you can relive the excitement with classics like “Bubbles in Wine,” the band’s opening theme, or sing along to unforgettable hits like “New York, New York.” Grab a partner for the famous Liechtensteiner and Beer Barrel Polkas and fall in love all over again with ballads like “Let me Call you Sweetheart,” and “I love you Truly.” No matter your age or your favorite song or dance, you’ll find yourself swept away by the enchantment of the 1920s-40s music being kept

alive by the band’s eight talented musicians and vocalists. Wayne Johnson’s Little Big Band was founded by leader Wayne Johnson, a gifted multi-instrumentalist and vocalist with over 25 years of big band experience. When Wayne was just a young boy in Two Rivers, Wisconsin, he was inspired by his three musically talented uncles and their band called the Doleysh Brothers. As part of the big band music era, which is said to have peaked in the 1930s through the end of WWII, the Doleysh Brothers were very successful in the Wisconsin/Midwestern area for 20 years. After Wayne was bit by the music bug

himself, he began focusing on performing and even touring with local bands in high school. Not long afterwards, his uncles retired from the group, leaving the up-and-coming performer to take over the band, which he later dubbed, “The Wayne Johnson Orchestra.” After more than twentyfive successful years of running the band, Wayne retired and moved to Florida with his wife Nancy. However, it wasn’t long before Nancy talked Wayne back into the music scene, and the idea for a new big band was born...After five years of searching for the right band members, Wayne finally found each one through local advertisement, including through our

very own magazine. With members aged 17 to 78 and everywhere in between, the “little big band” is now complete, and is looking forward to sharing their talents and unique sound with the Tampa Bay area. Wayne and his righthand man, David Hubbard, are both accomplished trumpet and clarinet players, alto saxophonists, and vocalists in the band. Full-time musician Wayne Pearson plays the Baritone Saxophone, as well as the Alto Saxophone and the Clarinet. Debbie Louise is a gifted vocalist in the group, while Gary Mobbs, the band’s drummer, thrills with his singing and drumming skills. Charlene Connelly is the band’s signature

pianist, and member James Kannard is a Tenor Saxophone and Clarinet player. The band’s youngest member, Keith Scott, plays the Bass Guitar and Tuba. After a year and a half of practicing, the group is ready to perform! With their eyes set on Oktoberfest, the team is working hard on getting into the traditional German celebration. “No one is playing our style of music,” David Hubbard says. And this is true. Even at our city’s own Oktoberfest celebration, there have been no authentic polka bands. But Wayne Johnson’s Little Big Band is planning on changing that this fall. With lively polkas that get the crowd dancing, such as the popular Liechtensteiner polka, sung by David

in German, a variety of audiences will appreciate the band’s unique style. While the group excels with their polka music, they also specialize in waltzes and modern music. To top it off, the band even uses the same “library of music,” that Wayne’s uncles did in the 1940s, which means that some of the songs are more than a century old. Tech Talk with Bob: Are you CyberSecure?

You rely on your computer every day to perform multiple tasks; some of which involve transmitting your confidential information over the internet. Online banking, staying in touch with your child’s school, working remotely, paying bills, reviewing the results of your most recent blood test, monitoring and managing your investment accounts, preparing and filing your taxes, even the simple act of ordering a pizza using your credit card. Each of these basic tasks, that most of us do every day is a potential security exploit. I am willing to bet that you are the type of person who is smart enough to wear a seatbelt while driving. That’s because you know that even though you are a safe and considerate driver, you are still at the mercy of the less considerate drivers or those who are not as vigilant

as you. You know you need to protect yourself while driving and you know that you need to protect yourself while online, navigating your digital world. Now I know you might be thinking, “Bob, I’m pretty sure my computer is safe. We haven’t had any problems. I’ve been using such and such software from the store where I bought the computer,” or “the tech-savvy neighbor kid put something on my computer for me.” If you are doing any of the financial or medical transactions I mentioned earlier, you don’t you want to be “pretty sure” your computer is safe --- you want to be “certain” it is squeaky-clean! Some of my long-time clients who manage online banking and investment accounts that have balances from thousands to millions of dollars were “pretty sure” their computers were safe too. Every one

of these folks was shocked when my cybersecurity team discovered their systems still had security exploits. OK, time for some tough love. If you do anything online of a financial or medical nature, you need to stop procrastinating and be proactive about securing your system. I know that performing deep scans on your computer system is a time-consuming process. Many people do not have the knowledge, resources, and most of all the patience to properly execute a thorough scan. The completion time of these scans have taken a few hours to a few days thanks to the many variables involved: the storage capacity of the hard drive, the number of files on the hard drive, the number of threats discovered on the hard drive, just to name a few. In addition to the automated scans we perform, my team also manually inspects critical areas of your system for threats that are not typically discovered by anti-malware software. A lot of the more popularly known and usually all the FREE anti-malware usually complete their scans in 30 minutes or less, which can be very appealing. No one wants to wait for a long scan. But let’s be realistic, you’re not ordering a pizza; you’re protecting the device that holds the keys to your digital world. My cybersecurity team

performs a through security scan of your computer “so you know for certain” whether your system is clean or not. Since these security scans have taken from hours to days to complete, to be fair, I only charge one hour of bench time to perform these scans. Whether your scan takes a few hours or 30 hours, your only obligation is our onehour bench fee. Once my cybersecurity team completes your scan, I will personally review the results with you. If you require any additional work, I will discuss your options and costs. I want you to have all the facts regarding your computer’s security health so you can make a well-informed decision based on what solution best serves you. In observance of Cybersecurity Awareness Month, which happens to be October, I challenge you to “know for certain” whether your computer is in order security-wise. “Dr. Liza” story continued from page 1 The skin consists of three major layers, the epidermis (outermost layer), the dermis (supporting layer), and subcutaneous fat. The epidermis is the top layer of your skin. The dermis is thicker than the epidermis and contains all sweat and oil glands, hair follicles, connective tissue, nerve endings, and lymph vessels. The layer of skin beneath the dermis is sometimes called the subcutaneous fat, subcutis or hypodermis layer. (Bing.com). I know these are interesting facts, but why this should be important to you? In interviewing local dermatologist, Dr. Liza Brown, I asked her what was important for her magazine and online article. Without hesitation, dismissing the opportunity for self-promotion, “Tips on protecting your skin from the sun.” Now that you understand the important functions that your skin provides for your body’s health while you are outside soaking up the sun’s rays, did you also realize that overexposure to those same warming rays or even an artificial sun lamp has hidden

dangers with both short, and long-term effects on your skin? Dr. Brown warned that the results of the sun are cumulative with roughly 25% of sun damage occurring before the age of 18. Dr. Brown warned that “severe sunburns during childhood and adolescence may increase one’s risk of melanoma; children should be especially protected from the sun. Experiencing five or more blistering sunburns between the ages 15 to 20 increases one’s risk of melanoma by 80% and Nonmelanoma skin cancer by 68%.” The effects of ultraviolet rays on skin will vary, depending on the length of exposure but, as a Bing. com article notes, “Over time, the sun’s ultraviolet (UV) light damages the fibers in the skin called elastin. When these fibers break down, the skin begins to sag, stretch, and lose its ability to go back into place after stretching. The skin also bruises and tears more easily -- taking longer to heal.” In fact, most of what we think is normal skin aging is actually caused by the sun. Dr. Brown differentiated between the two ultraviolet rays contained in sunlight and their consequences

from long-term or over exposure. UVA rays are the ones that contribute to the aging of the skin, she warned, while UVB rays can cause skin cancer. She also noted there are many things we can do to protect our skin when we are outside, exposed to the sun. Did you even realize prolonged exposure to the blue light emissions from our computers, televisions, and hand-held communications devices can also affect the skin? With COVID-19 restricting our access to schools and outdoor activities, virtual education has replaced a great deal of in-school education and with it,

the inherent risk of the invisible emissions. Our first line of defense should be, Dr. Brown suggests, the liberal application of a sunscreen, roughly one shot glass worth or 1 ounce as part of your daily routine. Each manufacturer’s product receives an SPF rating (Sun Protective Factor) based on the percentage of prevention to UVB exposure it provides. Dr. Brown recommends sunscreens should have at least an SPF rating of 30 to be effective. She also warned, even a 99% rating still allows a 1% exposure, so reapplication every 2 hours is crucial. help control UV exposure, according to Dr. Brown. Hats should have a wide brim, and sunglasses should be worn to protect your eyes. She suggests. According to rei.com, a rating of less than 15 UPF means the product does not provide any protection. A typical white cotton T-shirt, for example, offers about a UPF 5 rating, which means that 20 percent of available UV radiation passes through it. “If you learn nothing else about UPF (Ultraviolet Protection Factor) consider

this: Always look for a garment’s lab-tested UPF rating (if available) to evaluate its true UV protection level.” Dr. Brown suggests that tighter weaved fabrics provide greater protection. Rocky explained that many people think all tutors do the same thing, “homework help” to improve, short-term, and increase a grade in the classroom. “We look at that as a Band-Aid long-term. The way they teach in the school system is building skill on skill, one on top of the other, building on what they already know. When you see a child who struggles year after year in the same subject, especially, the issue is not what’s going on in the classroom today. The issue is that the child is missing fundamentals that the teacher is building on with the lesson. When you have these learning gaps, that’s when kids start running into trouble and when you have enough learning gaps, it becomes hard to keep up with what’s coming to them in the classroom daily. They start to slide further and further behind.” Add in an unprecedented year and a half, and even the most accelerated student may have fallen behind. Educators teaching a hybrid model are overburdened, simultaneously trying to give a sense of normalcy to their students in the classroom and their students learning in a virtual setting. “I feel for those teachers. They have a nearly impossible task, and they

are working so hard to deliver. What happened last year and this with Covid only exacerbated the issue for struggling students. We’ve got so many kids dealing with this very difficult year. When you look at school stopping and then returning online, or kids in quarantine. The class hasn’t stopped, and they come back and try to catch up. More kids are struggling now than ever before. For the majority of kids, it has been a challenge.” A floundering student can easily fall in between the cracks. Studies have shown that students have lost six months to a year of math and reading skills during the pandemic on average. “Though there needs to be a recharge in the summer, for a lot of kids, this can be a critical time to help them catch up, get back on track, and experience more success next year and beyond.” Called the Summer Slide, a child loses the achievements, generally two months, he gained during the previous year. When the previous school year has been as unpredictable as 2020-2021, tutoring helps the student to catch up where he has fallen behind. During the pandemic, the centers have followed CDC guidelines, including tutoring stations spaced out and separated by plexiglass dividers, regular sanitizing, and sanitizer stations. With the new guidelines announced, masks worn by students and tutors may

become optional.
