Greek culinary authority Diane Kochilas . . . . . . 4
Greek Country Cooking, Grecian Spotlight, Holiday Grief Dear Readers: Last month, Greek culinary authority Diane Frosene Kochilas offered her latest taste of culinary treasures Phillips with her cookbook The Country Cooking of Greece, 384 pages filled with recipes and inviting photographs Editor by Vassilis Stenos. “The soul of Greece lives in its country cooks,” writes Kochilas in the Acknowledgements of her book. “These are the people who tend the earth, keep animals, and maintain traditions.” For the complete story and her recipe of Melomakarona me Mastiha, please see page 4. This past September 17, “Grecian Spotlight” founder Louis Vitalis quietly turned 100 years old with a few friends and family in a local restaurant, yours truly included. I use the word “quietly” loosely because as the luncheon wore on, the celebratory nature of the occasion reached out to surrounding dining guests who were also smitten by Louis, his enthusiastic spirit, and his parea. For a little taste of Louis remarkable life and the gifts he gave to the San Francisco Bay Area’s Greek community, I invite you to see page 5. With the holidays upon us and in the spirit of thanksgiving, the HJ shares tips and resources this month on an important subject – helping someone that is grieving during the holidays. The holidays are often a difficult time, full of painful reminders, and friends and family members can be unsure how to offer support. Please see page 8 for some useful advice from Hospice professionals. Finally, remember to share your holiday greeting with our HJ readers in the December issue. See page 2 for the details!

kali orexi Renowned food writer and Greek culinary authority Diane Kochilas’ releases The Country Cooking of Greece Author slated to make rare San Francisco appearance at Annunciation Cathedral
“Every Greek feels a sense of homecoming in his ancestral village. Many go back to the family home . . . these ties to a village translate as ties to the land. Every Greek believes that the cornucopia of fruits, vegetables, cheeses, honey, olives, and olive oil that grow or are produced in his particular corner of the country is the best or the purest.”
I
n The Country Cooking of Greece, renowned food writer and Greek culinary authority Diane Kochilas shares the bounty of the Greek country table. She captures the flexibility, regionalism and scope of this amazing cuisine, a cuisine driven by tradition, season, and the constantly changing and powerful personalities of the people who make it. Two hundred recipes range from whole grains and a diversity of nutritious Greek greens to hand-shaped pastries and the briny bounty of the Mediterranean and Aegean seas. Released in October by Chronicle Books ($50), this book is the guide to the next wave of Greek artisanal products we will come to use and appreciate, such as grape must and mastic. A deep exploration of Greek cheeses, wines, and liquors will leave any reader feeling like a hungry expert who must acquire, then knock back, a glass of ouzo—immediately. More than just a cookbook, this is a cultural guide. Learn to navigate the taverna scene, the extensive Greek holiday meals,
and the drinking rituals that accompany the meze spread, heavy with regional specialties such as you might find in any traditional taverna: orange-scented pork in olive oil, Karpenissi prosciutto, shamelessly garlicspiked fish, savory pastries and fritters. With more than 100 photos taken by Vassilis Stenos of the people, countryside, and meeting places of Greece, The Country Cooking of Greece presents a panoramic portrait of one of the world’s most simple yet influential cuisines. Diane Kochilas is an authority on Greek cuisine, cooking teacher, and food writer whose work has appeared in the New York Times and Saveur, and an award-winning author of 18 books about Greek cuisine. She is consulting chef at Pylos and Boukies in New York City, as well as at two other Greek restaurants in North America, Avli in Chicago and Axia in New Jersey. She is a weekly food columnist for Ta Nea, Greece’s largest newspaper, and co-owner of the Glorious Greek Cooking School in Ikaria, Greece. She lives in New York City, Athens, and Ikaria, Greece. You can find
her at www.dianekochilas.com. Photographs in The Country Cooking of Greece are by Vassilis Stenos who is a food and travel photographer, artist and designer, and co-owner of the Glorious Greek Cooking School. He lives in Athens and Ikaria, Greece, where he farms and is developing an agrotourism project. On Sunday, Nov. 4, 2012, following the Divine Liturgy, Kochilas will offer a talk accompanied by a presentation and conduct a Q&A session at Annunciation Cathedral, 245 Valencia Street in San Francisco. A book signing will follow with the proceeds donated to the Annunciation Cathedral Building Fund. When informed of the Cathedral’s decision to proceed with the building of its sanctuary lost to the Loma Prieta Earthquake, she offered to donate all of her proceeds, which represents half of the cost of the book and is tax deductible. For more information regarding the Annunciation Cathedral event call 415-864-8000 or visit www.annunciation.org.

NUT-AND-HONEY COOKIES FLAVORED WITH MASTIC MELOMAKARONA ME MASTIHA
Melomakarona are classic Christmas and New Year’s cookies. There are many regional variations. Typically the cookie is flavored with orange and spiced with the two most popular warm winter spices, cinnamon and cloves. Many versions also call for stuffing the center with ground walnuts. In some regions melomakarona are fried, but in most places the cookies are baked. They are most often made with olive oil, not butter. This version, with mastiha (mastic), is from the island of Chios, mastiha’s home. SYRUP 1/ ½ tsp mastiha (mastic) crystals 2 cups Greek honey 1 cup plus 1 tsp sugar 1 cup sugar 3 cups extra virgin Greek olive oil 1 cup water 1 tbsp baking soda 1 cinnamon stick ½ cup water Strained fresh juice and 1 11 cups all-purpose flour strip of peel from 1 large lemon Ground cinnamon for sprinkling 1 ½ to 2 cups finely ground walnuts Preheat the oven to 350 degrees F and lightly oil several baking sheets. Pound the mastiha and the 1 tsp sugar together in a small mortar with a pestle until the mixture is a fine powder. In the bowl of an electric mixer outfitted with a whisk, beat the olive oil with the 1 cup sugar at medium-high speed until creamy. Dilute the baking soda in the orange juice. Add the mastiha, orange juice mixture, and water to the olive oilsugar mixture and whisk for 30 seconds. Replace the whisk attachment with the paddle attachment and add the flour, 1 cup at a time, until a soft, malleable dough takes a shape. Cover with plastic wrap and let rest for 30 minutes. Shape the dough into oblong mounds, about 2 inches long and 1 inch thick. Using the tines of a fork, prick the tops lightly to form a decorative pattern. Place on the oiled baking sheets, mounded- side up, about 2 inches apart. Bake for about 20 minutes, or until lightly browned. Remove from the oven, cool slightly in the pan, and transfer to racks to cool completely. To make the syrup: Combine all the ingredients in a medium sauce-pan and bring to a boil. Reduce the heat and simmer for 5 minutes. Soak the melomakarona in batches in the hot syrup for 5 to 10 minutes and place on a platter. Sprinkle with the cinnamon and ground walnuts and serve. ~ RECIPE FROM THE COUNTRY COOKING OF GREECE BY DIANE KOCHILAS

Journey from Tinos to Crete to San Francisco

by Frosene Phillips
t was an intimate gathering of old friends and local Greek media representatives on September 17, 2012, that delighted one of the community’s pioneers, Louis Vitalis. The occasion was Vitalis’ 100th birthday and the luncheon was marked by laughter, reminiscing, feasting and, of course, singing with friends and strangers, who instantly became new friends.
Louis Vitalis was the producer and host of the first Greek American radio program in the west. He founded the Hellenic Radio Hour in 1943.
Co-hosted by Dimitri Carapanos and Vasilios Glimidakis, the luncheon surprised Vitalis with the likes of Savas Delagiorgis of the Hellenic American Broadcast, Frosene Phillips of The Hellenic Journal, Elias Tsiknis of Greek Imports, vocalist Margarita of GREEK TV, Vitalis sons John and Nick, and daughter-in-law Colleen. Vitalis was the founder of “Grecian
Spotlight,” which later became “GREEK TV.” During his career, he contributed extensively to the people of his community and state through his many activities.
In 1939, Louis opened his own liquor business on Mission Street, which he had for 10 years and with a partner for another four years.
Born on the island of Tinos, Louis lived his early years with his parents in Asia Minor. Following the death of his father when he was 8, his mother immigrated to the U.S. and settled in California.
In 1943, he started the Hellenic Radio Hour, a weekly radio program in San Francisco. During the war, his program promoted the Red Cross and the purchase of war bonds, and this popular program remained on the air until 1949.
A loving Armenian family took care of him until 1922 when the Turks expelled hundreds of thousands of Greeks from Asia Minor. Louis was sent to Heraklion, Crete, to the home of a family relative where he lived until 1930 when his mother was then able to bring him to the U.S.
In 1982, Louis and his son John started the “GreekAmerican Greek TV Program.”
Louis Vitalis entertains on the accordian.
In 1983, in association with Dr. Ernest Panos from Chicago, they initiated “Grecian Spotlight” airing on KTSF Channel 26, and in 1985 Louis invited the association and contribution of Dimitri Carapanos. GRECIAN SPOTLIGHT continued on page 14
He arrived in San Francisco on his name day, July 20, 1930 where he attended High School of Commerce at night while working during the day as a grocery clerk earning $8 a week. While singing with the Annunciation Church Choir in San Francisco, he met his future wife Anna, whom he married in 1938 and had two sons, John and Nick. A true San Franciscan, he was also a member of Holy Trinity Church.
Louis Vitalis holds a plaque from UHAS President Ted Laliotis recognizing his work as a pioneer and leader in preserving and promoting Hellenic culture. reminders that emphasize their sense of loss. Often, friends and family members of those affected by a loss are unsure how to act or what to say to support their grieving loved one during the holidays. Hospice professionals, who are experienced at helping people deal with grief and loss, offer some suggestions: Be supportive of the way the person chooses to handle the holidays. Some may wish to follow traditions; others may choose to avoid customs of the past and do something new. It’s okay to do things differently. Offer to help the person with decorating or holiday baking. Both tasks can be overwhelming for someone who is grieving. Offer to help with holiday shopping. Share catalogs or online shopping sites that may be helpful. Invite the person to join you or your family during the holidays. You might invite them to join you for a religious service or at a holiday meal where they are a guest. Ask the person if he or she is interested in volunteering with you during the holidays. Doing

something for someone else, such as helping at a soup kitchen or working with children, may help your loved one feel better about the holidays. Donate a gift or money in memory of the person’s loved one. Remind the person that his or her loved one is not forgotten. Never tell someone that he or she should be “over it.” Instead, give the person hope that, eventually, he or she will enjoy the holidays again. Be willing to listen. Active listening from friends and family is an important step to helping some cope with grief and heal. Remind the person you are thinking of him or her and the loved one who died. Cards, phone calls and visits are great ways to stay in touch.

In general, the best way to help those who are grieving during the holidays is to let them know you care and that their loved one is not forgotten. Many people are not aware that their community hospice is a valuable resource that can help people who are struggling with grief and loss. s reported last month, the American Hellenic Council and the Hellenic University Club sponsored an event to honor Greek Consul General Elisavet Fotiadou. This is what she said when receiving the award: I owe my love for culture to the enormous library of my father, the view of the Acropolis from my window, and the Athenian movie theatres, where I wore out several pairs of pants in the past.

way out of the tunnel, if we really understand its value.
This is something we don’t know how to do well in Greece. We were very generous towards the arts when the economy was good, we stopped funding them now that the situation is difficult, but we never really tried in a systematic way to use the arts as a powerful economic tool which would help us to overcome the crisis.
That is what I tried to do in Los Angeles the last three years, with minimal or no funds, and I am particularly happy that my work is appreciated.

I had the incredible luck to meet and work with wonderful, creative people who are ahead of their time and are driving the engine of society into the future. I can see lots of them here tonight, people whom I admire and respect for their talent and their courage. I made a lot of friends with whom I shared ideas and this fever of creativity which tortures us and uplifts our spirit at the same time. I shared with them agonies over a small budget-and that is where the cooking comes in. I learned that where there is a will, there is a way.
Everybody knows the glorious past of the Greek culture, but not many people know the present, and there is no more effective way to show this “Superstars of Dance” than through the Miriam Larici and Leonardo movies. I am also particularly proud of our cooperation with the Getty. As you might know, the Getty is one of the few museums in the world which returned antiquities to Greece, and with whom we signed a Memorandum which gives us tremendous opportunities
of cooperation in various fields. Putting into effect this cooperation, we are preparing now a wonderful Byzantine exhibition, which will bring to LA 187 objects from various museums all over Greece, most of which have not being shown abroad before. The exhibition will take place in Spring 2014 at the Getty Villa and at the Getty Centre (manuscripts), and it covers not only the period of the Byzantine Empire, but also the transitional period before and after. It will not only concentrate on the religious life of that era, but it will also display objects from everyday life such as jewelry. Yesterday we discussed with the Getty team a series of different events before and around the exhibition, which will give us the opportunity to promote not only Greek culture, but also our tourism and our products. I am sure that it will make you feel very proud, and of course we will need your support and cooperation in these efforts. As you might know the Greek Government together with Unesco declared this year “Year of Constantine Cavafy and George Papanicolaou,” so I would love to discuss ideas for events related to them. Finally, we are planning a visit of the Chairman of Invest in Greece Agency in LA, which will give the chance to businessmen from California to explore investment opportunities in Greece. ■■■ Roz Halikis, the chairman of St. Katherine Greek Orthodox Church Foundation, and Angelo Revels, the Foundation President have announced the following: The St. Katherine Greek Orthodox Church Foundation awarded 7 merit scholarships on “Youth Sunday” following Divine Liturgy on September 9. Theodora Kounalakis, chair, presented an overview of the work of the Metropolis Committee on Greek Education and Culture
including: annual workshops for Greek Educators on Teaching Greek as a Foreign Language, the Greek Village Camp, the distribution of textbooks and resource materials from the Archdiocese, and their participation in several events including the celebration of the Three Hierarchs, Greek Independence Day, and OXI Day. Committee member Ioanna Lekkakou shared an informative presentation on the new development in teaching Modern Greek.
“There is a great need to support and expand the Greek language programs in all our parishes. This is an important educational opportunity that will benefit our children throughout their lives,” His Eminence Metropolitan Gerasimos of San Francisco remarked. “Today’s gathering adds a new level of commitment and excitement to the work of our parish Greek Schools. The Metropolis remains dedicated in its support of these efforts and looks forward to
continued collaboration for the benefit of both students and teachers.” Each of the parishes and schools represented offered a brief overview of their programs and shared ideas to strengthen the collective work of all the Greek Language schools in the Metropolis of San Francisco. The parishes and schools represented were: Annunciation Cathedral – San Francisco; Annunciation – Sacramento; Ascension Cathedral – Oakland; Fanari Academy – Sunnyvale; Holy Cross – Belmont; Saint Katherine – Redondo Beach; Saint Nicholas – San Jose; and Prophet Elias – Santa Cruz. Dr. Demos was honored with the presentation of the St. John of Damascus Award and the St. Romanos Medallion. He was also honored by the Greek Orthodox Church nationally with the presentation of the Archbishop Iakovos 30 Years of Service Award. The Patriarchate of Constantinople honored him with election as Archon of the Knights of St. Andrew. “We will certainly remember George for many things,” said Pappas. “For his boundless energy and love of life, family, and friends; for his knowledge of all things Orthodox and beyond; and for his love and knowledge of church music. He made scores of church music available through the Metropolis of Denver Church Music Federation’s publishing house, and collaborated with Dr. Ted Bogdanos to edit that important resource for church musicians entitled, Hymnology and Order in the Greek Orthodox Church, and the English translation of the Violakis Typikon.” Dr. Demos is survived by his loving wife of 49 years, Angelina, his children Theodore (Tiffany), Despina (Scott), Paula, and grandchildren. Trisagion and Funeral services were held at the Assumption Greek Orthodox Cathedral in Denver. May his memory be eternal!
