Introducing the CARL KAPP Spring Summer 16 Collection Influenced by the classical elements of earth, water, fire and air; the CARL KAPP Spring Summer 16 Collection is surprising and unexpected. With a strong focus on hand woven detailing and controlled volume, it comes as a refreshing injection to the Australian fashion industry. Hidden ancient Middle Eastern and African influences have inspired the collection, with a beautiful tension between curved and straight lines. This has created architecturally beautiful pieces that are harmonious and free spirited. To create the luxurious organic feel of the collection, Carl has used exquisite hand crafted fabrics from Switzerland, Italy, France and India. Among the stunning design features is the manipulation of silks by entwining and contorting the fabric to create a beautifully controlled yet somewhat accidental aesthetic. “I’m obsessed with these hand-crafted fabrics at the moment, and that’s really what this collection is about” said Carl. The echoing of the earthly elements through luxurious fabrics, coupled with CARL KAPP’s signature tailoring, embodies the spirit of summer for the modern Australian woman.

Gigi Hadid Beautiful, ambitious, and spectacularly connected, Gigi Hadid is a model for the new digital age. With over 5 million Instagram followers and 500,000+ on Twitter, Gigi Hadid is one of a handful of models who have synergised their social media identity with their careers. A product of reality TV (her mother appeared on the The Real Housewives of Beverly Hills), Hadid signed to IMG Model Agency in 2011. She landed a campaign with Guess the following autumn and has since appeared in further campaigns for Tom Ford, Balmain, Seafolly, Guess, Top Shop. and Maybelline. On the catwalk, she has walked for Dolce and Gabanna, Marc Jacobs and Chanel. She opened and closed the last Max Mara show and has appeared on several covers and features in countless international fashion magazines. The secret behind this beauty’s success is her humility and passion “What’s important for me are the three things I go into every job saying: Be nice, work hard, make a friend,” says Hadid. “Those are things that will ultimately get you places you never planned. It’s really about making opportunities for yourself and connecting with people on a more-than-normal level. That opens doors. I want to work hard and I’m not sure where it will lead me, but I’m open to doing new things so I’m excited. It’s sometimes more fun to not plan and to make sure you’re a nice person.” There is no wonder Gigi is taking over the fashion world and making her mark as the most stylish woman on social media.

The NSW Government has announced the next step in delivering world class ‘tap and go’ electronic ticketing will arrive next year, with the majority of old-style paper tickets to be phased out on January 1, 2016. Minister for Transport and Infrastructure Andrew Constance said: “Opal is one of the great improvements to our public transport network, it’s time to stop running two ticketing systems. ” From January 1, 57 paper ticket products will no longer be sold. Customers should start preparing now to upgrade to Opal. The next stage, customers will only be able to purchase adult and concession single or return tickets for trains, ferries, light rail plus singles for buses. Many of the paper tickets that will be phased out have seen large

decreases in sales. “Sales of the once popular MyBus Travel Ten have fallen by more than 75 per cent over the last 12 months. ” The phase out of the Pensioner Excursion Ticket will be a major change for a lot of NSW pensioners and seniors, but Mr.Constance said an intensive campaign will be rolled out to inform the changes. “We’ve had 370,000 pensioners and seniors sign up, and there’s another 4 months for others to get on board with Gold Opal. I urge people to get in early.” Mr Constance said. Customers can order their Opal card from opal.com.au or by calling 13 67 25 (13 OPAL) and get the card mailed to their home. Adults, children and youth can also use one of the 2,000 Opal retailers and get a card straight away.

n 2014, Lian Xu entered a classical Chinese dance competition in New York City with a piece of work based on a 3,000 year old poem. “Rushes and Reeds,” the poem is titled, from the Book of Odes. “Thick grow the rush leaves; / Their white dew turns to frost. / The one whom I love / Must be somewhere along this stream.” Lian won a gold medal for her performance, which imparted such a sense of innocent yearning to the audience and judges that it left their hearts aching. “I think this poem is especially beautiful,” Lian said, in an interview. “It is in another artistic realm. It doesn’t say who the ‘one’ being searched for is — there’s a dreamy beauty to it all.” Lian Xu is now with Shen Yun Performing Arts, the world’s most renowned and respected classical Chinese dance company. When she is not training and practicing, she travels with dozens of peers, performing to sold-out audiences at the most prestigious theatres in the world. The lessons that she gained in her award-winning performance are what has allowed her to excel in an environment where excellence is the rule. One of these lessons is “practice intensively.” Another, is “assimilate feedback.” While choreographing her dance about the poem, she was told that her movement — sweeping her fan across the water, looking for ‘the one’ — was too superficial. 48 NEW LAND

Your whole body must be driven by a full and abundant feeling, which you then bring out and give full expression to in your movements and expressions. Everyone in the audience can then feel it, -- Lian Xu, Shen Yun Dancer

“Someone told me that the movement was not rich enough; I should imagine the scene in the poem in front of me: the green reeds, the crystal dew, and the glittering waves on the water. When I imagined it, my movement immediately changed,” Lian said. “The beauty rose from the bottom of my heart, flowing to every part of my body.” Lian Xu entered Fei Tian Academy of the Arts, the incubator for Shen Yun dancers, after her family moved from Taiwan to the United States when her father changed jobs. Studying at Fei Tian was a dream she had cherished since she was 7 years old, when she first saw Shen Yun on stage in Taipei. After that performance, her parents sent her to local classical Chinese dance classes. She first applied to join Fei Tian when just 11 years old but wasn’t tall enough to meet the requirement. Time passed, and she grew, later applying again. After she was admitted, the real work began. “When I began to learn dance here, a senior student told me that I should learn to be strong,” Lian said. “But I didn’t understand what she meant.” Lian was already strong, physically: extremely flexible, very nimble, she jumps high, and has more than enough stamina. She picked up dancing like it was second nature. But physicality is not all that matters when it comes to the complex art of China’s classical dance. Mental and spiritual strength and endurance are also necessary. 50 NEW LAND

Feedback, for instance, hasn’t always been easy for Lian to accept. Growing up in Taiwan with loving parents and great talent at whatever she did, she rarely had cause to be corrected. “I had done almost everything well since I was little,” Lian said. “I was rarely criticized. Therefore, it’s especially hard for me to accept teachers’ or classmates’ comments on my flaws or problems.” Lian’s standards for herself have always been high, so when she failed to learn a movement after repeated practice, she would find it almost unbearable. “One night, when I was practicing after dance class, a senior student tried to help me. Although she was very gentle, I couldn’t bear it. I felt like the sky was collapsing,” Lian recalled. Her friend didn’t react, though, instead continuing to patiently teach, until they practiced together for another two hours. It was late, but “I finally learned that movement!” she says. Lian was deeply touched by the selflessness of the other student, who displayed the generosity of spirit that is a core part of Shen Yun’s mission, and China’s traditional culture. “If there was no one to point out my problems, how could I improve?” Lian reflected. She now relishes such opportunities. China’s classical dance has a history of thousands of years, and is an important component of the country’s culture, featured in court dances before the emperor, or during the celebration of auspicious occasions. Houyi and Chang’e

- the Goddess of the Moon 54 NEW LAND

L

egends are like the shifting sands of a desert—forever changing, hard to grasp. This legend is no different, and there are many versions. The Jade Emperor, ruler of Heaven, had ten unruly sons. One day, they transformed themselves into ten suns, heartlessly scorching the earth from high up in the heavens. Unable to stop their mischief, the Jade Emperor summoned Houyi, an archer renowned for his marksmanship. The emperor commanded the immortal to teach his sons a lesson. Houyi descended to Earth and saw its suffering with his own eyes. Everything was charred and lifeless, and the people were in agony. Filled with righteous indignation, he acted. Plucking an arrow from his satchel, he took aim at the suns. Shooting down one after another. In the end, nine of the Jade Emperor’s sons were dead. Houyi left only one sun alive, to give the earth light and warmth. Upon hearing the news, the Jade Emperor was furious. He banished Houyi and his beautiful wife Chang’e from Heaven, stripping them of their immortality. They were forced to live on Earth as ordinary mortals. The pair found human life hard and miserable. Though a hero to mankind, Houyi had a single wish: to avoid the death that awaited all mortals and return to heaven with his beloved wife. She, at least, did not deserve to suffer. Fortunately, Houyi recalled that the immortal Queen Mother of the West, who lived on Earth, had a rare supply of the elixir of immortality. The hopeful archer left on an arduous journey to seek her aid. After countless difficulties, he finally reached her palace on the sacred Mount Kunlun. Learning of their plight, the merciful Queen Mother gave Houyi two things. One was the elixir; the other was a warning. “Drinking half the elixir will grant everlasting life. The entire elixir, however, will make one ascend to heaven as a full-fledged immortal.” Half for himself; half for his wife. It was all Houyi could have hoped for. When Houyi reunited with Chang’e, she was thrilled over his success. Yet while her husband was resting from his journey, she could not resist peeking at the elixir he brought back. Her eagerness to become immortal tempted her into drinking the entire potion. Before long, she felt her limbs grow weightless, and she began to float into the sky against her will. As a banished deity, she could no longer return to heaven. Earth was now beyond her grasp as well. With nowhere else to go, Chang’e drifted to the desolate Moon, where she spent the rest of her days in a lonely palace accompanied by a white rabbit. She wept bitterly for her husband Houyi, who was condemned to live the rest of his days on Earth as a common man.

n addition to being a prolific writer and a student of Daoism, Li Bai, is famous for the fact that much of his inspiration for poetry came after drinking. The contemporary Chinese poet Du Fu wrote of Li Bai in his poem Song of Eight Drinking Deities: Li Bai, challenging others to drink, creates one hundred verses, Sleeping in the bars of Chang-an, Even if the emperor calls him to board the ship he does not oblige, Calling himself the great immortal of wine. On some occasions, however, Li Bai’s drinking backfired. During the reign of Tang emperor Xuanzong, Li Bai had the honor of serving as a court scholar. But after a drinking episode one day, he badly insulted one of the emperor’s favorite eunuchs. The eunuch soon found an opportunity to slander Li Bai in front of the emperor, prompting the poet’s removal from the palace. A few years later, a friend of Li Bai’s received a prominent position and was able to arrange for the poet to be invited back to work for the emperor. But again, Li Bai’s luck turned sour when his acquaintance revolted against the ruler, causing all those who worked under him, including Li Bai, to be sent away from the capital. Shortly after, another associate of Li Bai’s who worked for the emperor, managed to rescue the poet from banishment. Li Bai then wrote some of the most famous lines of Chinese poetry: White King City I left at dawn in the morning glow of the clouds, The thousand-mile journey to Jiang Ling, completed in a single day, On either shore the gibbons' chatter sounds without pause, While my light boat skims past thousands of crags. According to historical records, Li Bai concluded his life’s journey in the town of Xuan, passing away from “excessive drinking.” He left behind 20 volumes of writing and some 900 poems. The popularity of Li Bai’s poems continues to dominate Chinese poetry today and various nicknames capture his legacy—“Wine Immortal,” “Poet Transcendent,” “Immortal Exiled from Heaven,” and “Poet Knight-Errant.”

Known as the "Immortal Poet," Li Bai (701–762) is often considered the greatest Chinese poet of all time. His was the epitome of the collection of classic Tang Dynasty poetry called, Tang Shi. Li Bai was a wanderer, and his travels across China led him into the company of Daoists, literary men, and high officials, who admired him greatly.

“It is a beautiful ensemble— many different kinds of crafts and arts, and yet it all works together as a single unified enterprise. The whole production is very unique. I’ve never seen anything like it, the way it integrates the film and the music and the dance—gorgeous.”

“Every time we saw Shen Yun we were amazed. Therefore, we will never miss this performance... [The artists of Shen Yun] are not only one of the best, but the best dancers worldwide. Also the choreography and the costumes can only be called one of a kind.”

“The performance is full of sincerity, compassion and beauty, and it also showcases stories about the principles of truthfulness, compassion and tolerance. I think it’s great to do so. If possible, (we should) take the bright road of life, and use the power of compassion.”

Touched by Shen Yun Symphony Orchestra's Delightful Melodies

Author: Wen Zhen

I

tend to listen to symphony conducted by the late Herbert von Karajan, which are limited to the early recordings. Although recording technology is now far more advanced, modern versions of classical pieces seem to only be able to perfect the surface melody, yet the deep meaning that these original pieces are to depict cannot be fully expressed. The history of symphony, just like other forms of art, experienced a journey of growth, whereby the art form developed and reached its zenith, before slowly declining in modern times. Renowned composers, such as Bach, Handel, Mozart, Beethoven and Berlioz, created a plethora of wonderful works in history. Since Antonin Dvorak's New World Symphony in the 1890s, there has been a decline in exceptional symphonic pieces. In modern times, we see less of the outstanding composes, conductors and orchestras that once prevailed. Shen Yun’s orchestra is one of those great orchestras which is trying to reverse that trend. Until recently it was only heard accompanying the Shen Yun Performing Arts ensemble. Au d i e n c e m e m b e r s w h o w e re fo rtunate enough to attend a Shen Yun performance find themselves captivated by the music, thus Shen Yun Symphony Orchestra was born. Shen Yun Symphony Orchestra's International Debut at Carnegie Hall in 2012 was such a great success that the orchestra now performs annually, touring major U.S. cities and dazzling audience members in the most prestigious music halls. In 2013, I attended a live performance given by Shen Yun Symphony Orchestra in Los Angeles. I found it a most memorable evening and was compelled to write about my experience as below.

Excellent Blending of Eastern and Western Melodies The Shen Yun Symphony Orchestra uses ancient instruments like the erhu, which is a two-stringed Chinese violin, and the pipa, which is a Chinese lute, along with a range of Chinese percussion that lead the melody on top of a full Western orchestra composed of strings, woodwinds, and brass - which is stunning and unique. Chinese music follows a “Pentatonic scale”, while Western music follows “12-tone equal temperament”. How does Shen Yun balance these two different temperaments? I have no idea, but after listening to their all-original compositions, I know that the Shen Yun composers have resolved this issue perfectly. Those who hear the Shen Yun Symphony Orchestra perform like I did, get to witness the flawless and unified blending of both Chinese and Western instruments. In the whole world, only Shen Yun has been able to blend the two systems of Western and Eastern together, making for a uniquely exquisite sound. What's amazing is that Shen Yun's orchestra can use Western instruments to imitate the sounds of Eastern instruments. For example, I witnessed how they used the trombone to imitate the Tibetan drum, Tibetan Longhorn, and Suona, which is a type of high-pitched Chinese trumpet. Although the timbre is slightly different, it's still very charming. I also enjoyed their magnificent Eastern melodies, where an imposing martial arts scene is led by the pipa, a uniquely Chinese instrument.

Varied Conducting Styles What I found interesting were the various conducting styles. Shen Yun's Bulgarian-American conductor, Milen Nachev, was able to conduct Eastern pieces seamlessly. For Western pieces, he conducted with large hand movements that were strong and resolute. In contrast, Chinese conductor William Kuo, adopted a softer style of cadence, which was just as beautiful. The sound was divine, and the music styles changed from clear and resolute, to soft and delicate. Seemingly effortless, the conductor and orchestra were unified as one. Whilst listening I too became one with the sound of the orchestra, no longer merely an audience member. Listening to the Shen Yun Symphony Orchestra was like a journey back in time, allowing me to perceive what is heavenly and what is earthly. From East to West, from ancient to modern, in one evening my soul had experienced all this.

Reproducing Ancient Music What I found most impressive were Shen Yun Orchestra's own musical compositions, which are inspired by China's 5,000 year-old traditional culture. Some pieces are inspired by Tang Dynasty style court music, while others are inspired by folk pieces like the 'Flower Drum Lantern' Dance, which has a very lively and festive rhythm. These musical compositions which are from traditional court and folk music are really pure and genuine, deducing the charm of Chinese civilization in every detail. Full of cultural significance, these pieces can touch the heart. I would also like to share about my experience listening to the music from the dance: “The Warriors of Wudang Mountain,” in 2014. The varied melodies played in this short piece reflected the emptiness of the great Dao, a cultivation school in China prevalant on Wudang Mountain. At the beginning of this piece, an empty mountain with singing birds was portrayed by means of the “Qing” (a musical stone), Chinese gong, French horn and Chinese Flute.

Three beats of the drum transformed a quiet scene into a scene full of vibrant movement. While the melody strengthened, the warriors all performed in array, allowing audience members to feel the power and excitement of the scene. As the Pipa started to play, the imposing manner of hundreds and thousands of soldiers passing by was just wonderful. The melody sped up, with soft and firm sounds combining in seamless rhythm. Drums and gongs were suddenly added to the mix, expressing awe-inspiring magnificence and brightness. A melody representing the synthesis of Yin and Yang then led to the culmination of the piece. In just a few minutes this piece described many different scenes. The brilliant momentum of the music from this dance inspired me, and left a deep impression, causing me to stand in ovation. There is a saying which I find most fitting here: “The wisdom of the great Dao can give birth to both heaven and earth, and the might of its martial arts surpass this world.”

Ethnic Groups of China (1)

The Han People 華夏民族系列 ( 一 )

For thousands of years, the Han people have regarded themselves as descendants of semi-divine emperors. Being one of China’s 56 ethnic groups, the Han people comprise over 90% of China’s population and have subsequently maintained a long history of cultural prosperity. Below is the legend of the Han people that has been passed down to this day.

The Advent of Emperor Yan and the Yellow Emperor

Some 5,000 years ago, there existed an ancient kingdom in central China which was governed by King Shaodian; this ancient kingdom was called ‘Bear Kingdom.’ King Shaodian had two daughters, the oldest daughter was named ‘Nudeng’ and the youngest daughter was named ‘Fubao.’ One day, Nudeng was wandering about in the royal garden when a heavenly dragon flew down to play with her. Soon after her encounter with this heavenly dragon, she became pregnant. Nudeng gave birth to a boy who had the face of an ox. Nudeng named him ‘Yan’ who later became Emperor Yan, also known as

the Flame Emperor. Three days after Yan was born he could speak; five days later he started to walk and seven days later he had grown a full set of teeth. At five years of age he learnt how to grow crops. He lived with his mother Nudeng by the Jiang River. Due to Yan’s extraordinary bravery and wisdom, he became tribal Chief, and was henceforth known as Emperor Yan. He adopted the symbol of an ox, declaring it his tribe’s symbol. The tribe’s shaman considered Emperor Yan to be a nobleman and very capable. According to Chinese astrology, Emperor Yan was born in the month and year dictating his nature be based on the element of fire. As such, the shaman determined Emperor Yan’s fire nature the power behind their tribe. It was said that Emperor Yan had a magic whisk that was called the Red Whisk. Emperor Yan was able to distinguish the properties of herbs as he whipped them. To establish a medicinal database, Emperor Yan tasted hundreds of different herbs and roots, verifying whether they were poisonous or beneficial. Chinese medicine categorises herbs and

roots according to their cooling and warming characteristics. Through Emperor Yan’s categorisation of each herb and root’s characteristics and healing properties, he soon mastered the medicinal practices of preventing and curing diseases. His tribe grew progressively stronger with a steadily increasing population. As to King Shaodian’s younger daughter, Fubao, she was a natural beauty and was nicknamed ‘Beauty Ji’ (Ji meaning princess). One day as she was taking a walk outside, a storm suddenly erupted over her. A lightning bolt shot down and entangled Fubao for a short while, before shooting back up into the sky and disappearing. After being entangled by the lightning bolt, Fubao found herself pregnant. She gave birth to a boy 25 months later, who later became the Yellow Emperor. This baby boy could speak as soon as he was born. Being so placid and adorable, King Shaodian was very fond of the baby boy, and chose to live with his daughter Fubao and her baby, by the Yin River. The Yin River was later called the Ji River, named after Beauty Ji.

Fubao’s son was respected and loved by the people in the Bear tribe when he grew up. He was nine foot tall with the face of noble character. The people in the tribe all considered him the rightful heir of the Bear tribe due to his honesty and generosity. They elected him tribal Chief, and was henceforth referred to as the Yellow Emperor. The Yellow Emperor was born in the month and year belonging to the Earth element. Therefore it was believed he had the power to govern the world with his moral excellence. The Earth’s yellow colour is the reason for the name, the Yellow Emperor. The Ji River had an abundance of natural resources, which was geographically favourable for the Bear tribe. The Yellow Emperor encouraged his tribe to develop agriculture and animal husbandry. He personally educated his people on how to cultivate the land and farm, and led them to domesticate animals such as pigs, cows, sheep, dogs, and so on. The Bear tribe became progressively stronger. Word of the Yellow Emperor’s compassion and righteousness spread to the tribes in surrounding areas. Many of these smaller tribes joined the Bear tribe and swore allegiance to the Yellow Emperor. The Bear tribe became the strongest and largest tribe in central China at the time.

The Yellow Emperor Defeats the Tyrant Chiyou Meanwhile, there were nine very strong and barbaric tribes collectively known as the ‘Black Nine tribe’ that was dominant along the Yangtze river area. The Black Nine tribe was headed by a ruthless tyrant called Chiyou. According to legend, Chiyou’s head was bronze, his forehead was iron, and he had the ability to spit fire by eating sand. Chiyou had 81 brothers who were all adept at fighting with various

70 NEW LAND

weapons like swords, halberds, bows and crossbows. When Emperor Yan led his tribe to march toward the south, Chiyou took advantage of the opportunity to seize Emperor Yan’s land in the north. Chiyou then led his soldiers to attack Emperor Yan’s tribe. Emperor Yan was defeated and retreated to Qufu, a city in Shandong Province. Chiyou kept chasing Emperor Yan and tried to kill him at Qufu city. Emperor Yan retreated again and fled to Guquan city in Hebei Province. Chiyou trailed relentlessly in hot pursuit. Emperor Yan helplessly retreated once again, this time to Zhuozhou city, also within Hebei Province, entering the Yellow Emperor’s territory. Emperor Yan requested an alliance with the Yellow Emperor in order to defeat Chiyou. Both Emperor’s swiftly formed an alliance; the Yellow Emperor personally led the soldiers out to battle. Six tribes formed this alliance, they were – the Bear tribe, Brown Bear tribe, Winged Lion tribe, Winged Lioness tribe, Divine Tiger tribe and Tiger tribe. The battle proved to be bitter. The Yellow Emperor’s soldiers fought so valiantly that Chiyou’s soldiers couldn’t hold up and were slowly getting defeated. Chiyou resorted to using black magic and put a hex on the Wind God who created gale force winds, and the Rain God, who created torrential rain to obstruct the Yellow Emperor’s soldiers. For three days straight, thick dark clouds and heavy smog engulfed the battle scene, accompanied by fierce thunder and lighting. Disorientated, the Yellow Emperor’s soldiers lost their way. The Yellow Emperor ordered the Drought Goddess to stop the rain. The Yellow Emperor then built a South-pointing chariot, on which stood an iron figure with an outstretched arm pointing south (this was used as a compass in ancient China).

As the miasma of smog dispersed, the Yellow Emperor led his soldiers out of the trap and rushed forward to defeat Chiyou’s remaining soldiers. Chiyou was captured and killed, and peace was restored to the region.

Peace Reigns Under the Yellow Emperor’s Unification of Tribes After the victory over Chiyou, all tribes in the Yangtze River area pledged their allegiance to the Yellow Emperor. The Yellow Emperor then set out to unify all the tribes, and he was dubbed the Son of Heaven upon unifying China. Someone suggested they ought to adopt the Bear Tribe’s symbol as their symbol. The Yellow Emperor didn’t want to adopt it, as he was concerned this may offend some among his unified tribes. The Yellow Emperor adopted the dragon as the symbol of the unified tribes. This is why Chinese people regard themselves as descendants also of the dragon.

Migration of the Han people Following the Yellow Emperor’s reign, the Han people migrated across southwest China and central Asia. During the Ming and Qing dynasties, the Han people in the southern regions exceeded the population of that in the northern regions. Towards the end of the Qing Dynasty, the Han people in the south were allowed to migrate to the Northeast to further populate the border regions. Since the 19th century the Han people have been migrating to Australia, Europe and North America, amongst other countries. Many western countries have also incorporated the Chinese language into their school curriculum. To this day the Han people have settled in all parts of the world.

Wu Xun The Saintly Beggar (part 1 of 2) By Mia Yeh

Wu Xun (1838 ~ 1896), born in Shandong Province, located in northeast China in the late Qing Dynasty, devoted his entire life begging for others. Due to being illiterate, Wu Xun was bullied and taken advantage of since he was young. He vowed to build a school that provides free education to underprivileged children from poorer families, so they wouldn't have to endure the same suffering as he. After 30 years of arduous begging, he saved up enough money and bought three hundred acres of farmland to fund the three schools he later built. His contributions have benefited generation after generation. With no predecessor, this selfless beggar left an unprecedented chapter in Chinese history.

Wu Xun grew up in poverty. His father died when he was seven years old. He then followed his mother to beg for a living. He was a very kind-hearted and filial child. Whenever he was given some decent food, he would bring it back to his mother. Despite being unable to afford schooling, the young Wu Xun was eager to study. He often followed wealthy children as they walked to school, and stood outside the door trying to overhear what they were studying. Seeing him dressed in rags, the other children ridiculed, humiliated and beat him up. He didn't think much of it. One day he summoned up the courage and walked into the classroom, hoping the teacher would allow him to study. The teacher however scolded him in front of everyone: “Where's this beggar from? Have you come here to steal something? Get out!” The teacher chased him outside with a ruler. Since then, Wu Xun never mentioned wanting to study again. At 15 years old, Wu Xun worked for his uncle Zhang. His uncle didn't care that he was his relative, and made him perform the lowest, most menial jobs. Despite being made to work like a dog everyday, Wu Xun maintained his integrity and was honest and hardworking. Xun would just ignore them. At 17 years old, he became a laborer for Mr. Li, who was highly educated, and had passed the imperial examinations at the provincial level. (Imperial exams were routinely held in the Ming and Qing dynasties, and were set up to select outstanding talent for the state). One day, Wu Xun's sister sent him a letter containing some money. Mr. Li ridiculed Wu Xun for his illiteracy and pocketed the money from the letter before handing it to him. When asking for the money, Mr. Li not only denied taking it, but also rebuked Wu Xun. Once Wu Xun accidentally spilled pig fodder on the ground when trying to feed the pigs. Mr. Li beat him black and blue. One New Year's Eve, Wu Xun, being illiterate, pasted some festive couplets upside down. Mr. Li was furious and beat him up. He didn't allow him to eat or sleep that night. He was forced to stand in the courtyard, subject to the cold wind and snow for a whole night. Wu Xun was never paid despite laboring away for three years. Once his mother fell ill, and he wanted to get his wages for his mother. Mr. Li took out a fake account book, insisting that he had paid all his wages already. Wu Xun couldn't make sense of the account book. Shocked and upset, he wanted to argue, but Mr. Li conversely accused him of being a scammer, then severely beat him up. Wu Xun was thrown out the door, battered and bleeding.

Vowing to Build a Free School Injured from the fierce beating, Wu Xun found a ruined temple to take shelter in, eventually to pass out for three days. Upon waking, he reflected on how he was bullied due to being illiterate. His thoughts led him to worry about the tragic fate of all the other poor people like him. What will happen to them if they don't study? Despite being impoverished, Wu Xun was filled with concern for others, and became determined to build a free school. In 1859, the 21-year-old Wu Xun set out to fulfill his great ambition, a path laden with torment and hardship. He wandered everywhere begging for money, not for himself, but for the free school he endeavored to build for others. He wore rags, and possessed merely a copper ladle

that he often held in hand, and a bag which he slung over his shoulder. Shandong, Heibei, Henan and Jiangsu were among the provinces he wandered through year in and year out, begging for money. One can barely imagine the hardship this beggar overcame in order to achieve his goal. Wu Xun was always happy and in high spirits. He would often sing little rhymes about how he was going to build a free school. When people laughed at him and asked what he was doing he would sing: “Abused working for others, why not beg and be myself? Don't see me merely as a beggar, sooner or later I'll build a free school.” From morning to evening, he rushed to perform odd jobs for anyone, and did what others refused to do. He even did an ox's job, ploughing people's fields. He never thought he had it tough, he always sang and worked away happily. When it was time to harvest wheat, he harvested it for others. He milled rice for others under the blazing hot sun with a smile on his face. He cleaned people's toilets, and dried manure to be sold as fertilizer. He watered people's fields, and carried heavy goods on his back for people, charging them for the weight and journey's length. Sometimes Wu Xun met the odd person who refused to pay him for his hard labour, but he never argued or complained. "Hoeing manure, weeding, pulling stone rollers, come to me. I'll work till midnight, it doesn't matter how much you pay me." "Please spare some money, I'll buy a field, building a free school will be my yield.” "Working like a donkey, working like an ox, I want to build a free school, I won't stop." Wun Xun sang everywhere he went. No one believed that a beggar like himself could ever build a school. People ridiculed him saying he was mad, or that he's got “free school syndrome.” To this Wu Xun sang: “I may have free school syndrome, but I'm not mad. I bow when I see you, spare some money, help me achieve, once built, the free school definitely won't leave.” After a year of constant begging, Wu Xun had finally saved up a sum of money. His brother-in-law however, cheated him, and took all his money. Wu Xun couldn't eat,

foaming in the mouth due to anger. His anger subsided a few days later and said: “Good people leave to the world their accomplishments, but bullies lack such a trait.”

Shamed and Humiliated, Wu Xun Forgoes His Dignity To raise money, Wu Xun abandoned his dignity. He had his plait of hair cut, leaving small peach-shaped tufts of hair on either side. (Men in the Qing dynasty shaved the hair at the front of the head, and grew the rest of the hair long, braiding it into a long ponytail). He sold his own hair that he shaved off. In order to draw attention to himself and encourage people's laughter, he acted like a clown and absurdly talked out loud. In doing so, Wu Xun managed to start saving up some money to build a free school. Drawing attention to his endeavour, Wu Xun would sing: “A bald patch here, a tuft of hair there, building a free school will never drive me to despair. A tuft of hair here, a bald patch there, building a free school is my only care.” “Rubbing sesame oil in my hair, your donations are not for my stomach, nor are they for me to spend, building a free school is for everybody!” Some stingy people wearn't so charitable. When facing these people Wu Xun would sing: “I won't complain though you don't help me, there are kind people who'll still feed me.” When sworn at and humiliated, Wu Xun would sing: “Uncle, uncle, don't be angry, calm down and I shall go quickly.” Wu Xun sold the edible food he received, and ate mouldy food, old bits of cabbage, and sweet potato stalks. He saved money every which way and could also be seen singing: “Eating scraps, that's my food, what I save, goes toward the free school.” “Eating well can't be called great, building a free school is truly great.” “Vegetable roots, vegetable roots, I eat only vegetable roots and don't seek rice, food that's left goes toward the free school.” Sometimes Wu Xun performed juggling stunts at festivals to earn some extra money. He'd also do handstands, walk on his hands, perform great leaps, stab himself with an awl, and jab his head with a knife. Sometimes he'd even eat caterpillars, snakes and scorpions. Other times he'd swallow broken bits of rock and brick. He'd also let children ride him like a horse as he crawled along the ground on his hands and knees.

“Munching on scorpions, eating scorpions, it's my task to build a free school.” “Snakes are edible, don't be shocked, building a free school is my job.” Wu Xun allowed people to vent their anger on him for money, he'd sing: “Punch me once - a penny, kick me once - two pennies.” He worked as a matchmaker and delivered letters for people. He collected the rubbish that people littered, tied cotton and spun threads for people. He spent his life wondering from place to place and worked everywhere. When finished begging for a day, he slept in old, ruined temples, in other people’s mills or kitchen houses. He'd spin thread each night under the dim moonlight. He sang, “Spinning threads, weaving threads, building a free school is my objective.” At 29 years of age, Wu Xun spent all the money he saved over so many years to buy 45 acres of field. These fields however were barren, sandy and saline. He sang: “So long as it's destined I build a free school, there's no need to worry when buying saline land; the salt will recede, the sand will blow away, three years later, no salt nor sand.” “So long as it's destined I build a free school, there's no need to worry about big pits; Water will flow and soil will even out the land, three years later, the fields will be smooth.” Wu Xun never spent a penny on himself, nor did he use this money to appease his relatives. His brother was engaged in dodgy work, and often tried to borrow money from Wu Xun. Knowing that he had saved up a sum of money, Wu Xun's relatives also pressured him for financial assistance. Wu Xun refused their repeated requests singing: “Despite our relationship, despite your needs, building a free school is what society needs.” When encountering people who were helpless, Wu Xun went out of his way to help them. A severe drought occurred in Shandong Province causing a widespread famine, many people died of starvation. The 38-year-old Wu Xun bought 2,400 kilograms of sorghum and donated them to the masses of starving people. When he encountered a mother with her daughter-inlaw begging on the street, Wu Xun generously gave them 10 acres of farming land. He sang: “Today I met a good person, she's a really good person, I gave her 10 acres, but I feel it's not enough.”“This girl is filial, this girl is dutiful, I gave her 10 acres, providing for the aged.” (To be continued)

Nurturing Young Men with Brave Hearts and Bold Minds Interview with the Principal of The Scots College, Dr. Ian PM Lambert Athor: Sophia Jiang

As one of the oldest and most reputable boys’ day and boarding schools in Australia, The Scots College has been a model of excellence since its establishment in 1893. The non-selective Presbyterian boys’ school has been admired by the generations of fine men it has raised, many of whom have become great leaders in the community, including world-renowned neurosurgeon and 2003 Australian of the Year nominee, Dr. Charles Teo. Whilst academic rigor is a critical part of the Scots journey, Dr. Lambert believes providing adventure through experiential learning, with the purpose to build the boys’ strength of character, equip them with strong leadership skills and a sound ability to assess risks and make decisions, really sets a Scots education apart. In our exclusive interview, Dr. Lambert shared with us the most important factors that determine an excellent school, and shared about his life as a Principal.

78 NEW LAND

NEW LAND: What sets The Scot College apart from other schools? Dr. Lambert: Recognising that boys have their own natural capabilities and all deserve an education opportunity, we are not selective in terms of academic performance. Our philosophy of education is driven by the belief that the ultimate goal of education is to equip young men to have a balanced life so that they can flourish in whatever field they are ultimately drawn to. Our job is to ensure every boy is striving for his highest academic achievement. But this needs to be done in conjunction with other activities that are important for a young man’s growth, including moral development, the ability to develop his strength in character, as well as values of honesty and integrity. We also strongly believe in the importance of family and thus value the role of family in education. Rather than take the place of family, we go out of our way to work together with the family by encouraging parents and carers to be highly engaged in College activities.

NEW LAND: What are the major challenges facing the education system nowadays, and how is The Scot College responding to them? Dr. Lambert: There are many challenges nowadays, and the majority of them in my view centre around how we interact as a human beings. It is the obligation for an educational institute to help young people navigate through this journey. Other than a strong and rigid academic platform, they also need another framework to keep them focused and to have that sense of purpose in their life. Yet this needs to be achieved in a diversified and relevant way. Another big challenge relates to individual self-satisfaction. In response, we are trying to promote a culture recognising each individual. The culture embraces many important qualities and skills valued highly in the workplace including leadership, showing them that the purpose of leadership is not about serving themselves, but serving others.

80 NEW LAND

NEW LAND: The College is aiming to nurture young men with brave hearts and bold minds. Could you please talk more about this? Dr. Lambert: The heart is the symbol of your character, your ability to feel compassion, who you are, what motivates you and what your values are; while mind is about your intellect and your ability to think, as well as using your intellect to think through the complicated world. Being brave means you have the courage to defend what you believe in, in a constructive way, not with fists, but with debate and discussion. Being bold means you are willing to step out of your comfort zone and into your challenge zone. NEW LAND: How is The Scots College embracing multiculturalism and globalism? Dr. Lambert: The Scots College is always proud of its cultural diversity. International students are a welcomed and valued part of our community as they provide a deeper crosscultural understanding and consequently, a broader world-view.

With more and more international students, including those with Chinese backgrounds on board now, the College has become a dynamic international community. The thing is when a boy comes to the College, he is a Scots boy, regardless of his background. NEW LAND: What are the main challenges you face in managing the College? Dr. Lambert: The biggest challenge is to make sure the educational programs we are offering today equip our students with relevant concepts they can carry with them through life. We are working in such a way to ensure a Scots education offers a life long advantage. One way we work towards this is through regular review and improvement of our programs. Another challenge for me is to keep up with my staff; they are incredibly innovative, creative and enthusiastic about education. Of course, running a boarding school, operating 24 hours 7 days a week; work life balance is a consistent challenge for me.

NEW LAND: Do you recall a teacher that left a very positive impression on you when you were a student? Dr. Lambert: I had a Geography teacher who was very demanding academically, but very intelligent. He inspired me to work hard to win the geography prize at school. While he set a very high standard, he always encouraged us to achieve the goal and be the best we can be. The Headmaster at my school played a key role in encouraging me to become a teacher; he always inspired students about the value education has in one’s life. So I grew up believing education is one of the best things you can give to people, and for me, to become an educator was the right thing to do. I loved school because he created a great school. If any students remember me for anything, I hope it would be that I have created a great school, a happy and interesting place that every boy looks forward to coming every day.

illiam Johnston’s beautiful and vast collection of antiques, ‘The Johnston Collection’, is kept in a museum called Fairhall, a residential house in East Melbourne, he bought in 1952 for £6,500

(roughly $13,700). Having enjoyed collecting and using his collection, Johnston wanted it to be available to the public after he died. His wish came true when Fairhall house-museum was left to trustees in 1986.

The Tour of Fairhall The collection features pieces of fine and decorative arts made in England from the mid 17th century until about 1830, or the English Georgian and Regency periods. There are also a great number of Indian and French items. As you enter view a painting dating back to 1830, depicting the Scottish lowlands at the Stirling River. The white room, used to serve as Johnston’s own sitting room, is now set up as a parlour with a stunning chandelier holding many sparkling tears, featuring golden peacock feathers. The Indian sourced piece is another testament to Johnston’s passion for antiques from other countries. “When sources of antiques dried up in England another option was India. When Johnston was in his fifties, he was in India finding precious antiques from the Great Palaces. Some of the furniture is from Government House Calcutta (now known as Raj Bhavan Kolkata)”, explained Mr. Louis Le Valliant, Curator of the Johnston Collection. The kitchen displays Cantonese glass paintings that depict aspects of daily life in China, or of mythological landscapes, and were exclusively made for export to Europe. Going upstairs we came into sight of the portrait, Edward Lord Montagu, 1st Lord Montagu of Boughton. It is one of the earliest pieces in the Collection and sourced from a sale of paintings at Kimbolton Castle in England.

Minton pottery in England around 1809 – 1817. As a teenager, Johnston found a job as a window dresser at Buckley and Nunn, now David Jones. After a couple of years, he was fired from his job. With a colleague from his new workplace, Monster Furnishings, they both went out collecting antiques. Johnston decided he would buy and sell antiques. His parents moved to Brighton, an affluent bayside suburb of Melbourne, Johnston had demonstrated great passion and talent for the trade. He filled the family home with his collection of antiques with his father telling him that “the antiques needed to go or he had to go”. As an antique trader and dealer, Johnston spent most of his life accumulating antiques in England, buying, selling and shipping them back to Australia for the Melbourne market. T

op quality furniture is very much sought after and very highly valued. The intricate process of designing and constructing such furniture using highly skilled labour, and the best materials available, is what we believe defines quality. Founded by Frank Novembre in 1984, after more than three decades, DOMO remains Australia’s exclusive stockist of Europe’s most prestigious and sought-after European furniture brands, along with a selection of 13 global brands. DOMO is dedicated to delivering a careful selection of quality, classic, contemporary, indoor and outdoor furniture ranges that last a lifetime. Trading as Grange Furniture Australia for 19 years, Frank formally renamed the store to DOMO in 2003, which translates to ‘home’ in Latin. He now owns seven shops across Victoria, South Australia, Queensland and New South Wales.

Exclusive Hand-made Products The story begins in 1984, when Frank made a bold move from merchant banking to furniture retailing, after securing the distribution rights for the iconic French classic furniture label, Grange. It was during Frank’s search for the perfect coffee table for his latest home renovation, where he discovered Grange in a British magazine. The furniture company was seeking an exclusive Australian distributor and reached out to Frank. “I knew there was nothing else like it in Australia and saw it as an opportunity not to be missed,” says Frank. Today he stocks over 13 international collections including Grange, Ligne Roset, Sika Design, Marchetti, etc. Marchetti’s Dining Table named, Vaniglia, has a beautiful floral inlay in walnut, oak and maple. The frame is embellished with rounded borders made in solid walnut. The decorative iron is handforged. This Italian made table can seat six to eight people. With three extensions, it can be easily extended to seat 14 people. Frank explains how, “One person can extend it, as it doesn’t require strength. It’s important everything functions properly and easily.” Beautiful inlays are integrated in many of DOMO’s classical style furniture. Consisting of many finely cut timbers, and requiring 18 process steps to complete, the technique of marquetry inlays

started to be incorporated in classical furniture design in the 1600s, and are generally a traditional feature of very high quality. We’ve had a number of instances where the homes of existing clients have been sold to Chinese families, who have requested, “Please give us a price for everything that’s in the house. We want to buy all the furniture.”

Compact Furniture Designs are constantly changing; furniture has recently become very fashion orientated. In order to move with the trends, Frank makes frequent trips to Europe’s furniture trade fairs to source new inspiration. “ Ligne Roset for example, which is a company that DOMO represent, is one of the main trend setters out of France. In terms of exports, Roset are number one exporter out of France, and each year they release 150-200 new items in Paris.” F r a n k a l s o mentioned that when he got into business 30 years ago, there were no apartments in the city of Melbourne. The CBD consisted mainly - Frank Novembre of small factories and offices. Apartments in Melbourne’s CBD and inner suburbs are now quite plentiful, and apartment living is now a major growth area for DOMO. Contemporary and multipurpose furniture has become a popular choice for those living in apartments. “We are modifying our approach to the market in the sense that we’re adding more contemporary collections to our offer. These collections include more compact furniture which serve multy purposes.” In terms of people who own more than one home, Frank said: “The main trend we’re seeing at the moment is the baby boomer generation is

downsizing. They’re moving away from their bigger homes. They’re selling these, and buying 2-3 bedroom apartments. Instead of having traditional furniture, they’re moving towards a more modern look, which is more in keeping with their new environment. This requires a not only their apartments, but also the size of the furniture to be downsized.” Always on the lookout for trends, DOMO have recently taken on two Italian companies this year that specialize in apartment living and compact furniture. “For example, we have some tables that look like a coffee table; however they also have height adjustment and swivelling tops. You can easily expand them, and they can become a desk or a dining table. Ligne Roset’s, stylish-looking Prado Settee, a vast seat, can also be used as an occasional bed-settee. The Prado Settee was awarded: ‘Best Furniture’, and ‘Best of the Best’ in Europe, January 2014. It was therefore considered the best new piece, across all categories of new designs for that year,” commented Frank.

Popular Contemporary Furniture Not only is the size of one’s living space a key factor in selecting furniture, but different generations of people do indeed have different tastes. Frank sees more young people are more likely to favour contemporary design. “The most important thing to keep in mind about contemporary furniture design is that, it can become dated very quickly. The secret to good design of contemporary furniture is that it should have some classic component in order for it to age well. Whilst it’s still very modern and very new, it’s not too modern that it dates.” An example is Ligne Rose’s, Togo Settee. Comfortable and visually appealing, this 43-year-old design, constructed with multiple density foam, is still DOMO’s has remained in the top three selling items worldwide, since its introduction in 1972. Whilst appearance is important, ergonomics, posture and comfort have become the primary focus for modern designs. “Antique sofas are really beautiful to look at, but were designed with very little back support. They were mainly designed for short term seating, like having a cup of tea. Posture and comfort have become a lot more important, due to the amount of time we sit to watch TV, or listen to music. Good design will accommodate both style and comfort. Most houses in Melbourne’s inner suburbs were built from the mid 1800s through to the early 1900s.

These houses are quite traditional with high ceilings and small windows. Now, when people renovate their homes or add an extension, they tend to keep the front part of the house very traditional. The extension generally is more modern, with much larger windows and French doors that open out, allowing more light into the house. Most people still tend to buy traditional furniture for the dining areas, and for the older parts of the house and the bedrooms, however the new the living areas tend to be quite modern.

DOMO’s Personalised Service Frank told us they generally find there are two different types of clients. The first are happy to look, and are comfortable to their own selections. “They’ve had plenty of experience in terms of using colour correctly, and using the right furniture, and being able to visualize how things are going to work in a set space. They’re looking to add items to what they already have.” For those with less experience furnishing their houses, DOMO offers a totally personalised service. “What we do is arrange an appointment for one of our designers to visit their home and get an overview of the total space. We’ll ask them to look through the furniture that we have on offer, and nominate a style that they like. From that, we’ll do a presentation showing what furniture can comfortably fit in various rooms. In our showrooms we have a very good display of the best selling items. From these we are able to show the overall quality, finishes and colour options.” However, assisting clients select the right furniture is not necessarily the biggest challenge. “With a lot of apartments, we have many occasions where the furniture won’t fit in the lift. There have been times when we’ve had to carry items up the fire escape. That becomes a very big job, especially if you’ve got to go up a lot of floors. There are also times when even the fire escape is too small, and we’ve had to use a crane and lift the items through a balcony.” “If we know that an access problem exists, we can generally get the furniture made especially. For example a sofa can be made in two parts, so it can be assembled inside the apartment.” DOMO tailors their services, taking into consideration each client’s specific needs. Great customer service is a very important part of their business. With extensive experience in this industry, Frank said, “We don’t sell with pressure, we sell with knowledge.”

“What's Behind the Hedge?” Prior to Coombe Farm opening up to the public in September 2014, locals have often wondered what is behind the tall hedge that surrounds the property. Planted by Dame Nellie Melba herself, the historically significant 600-metre long cypress hedge makes for an impressive sight for all those walking through to the restaurant.

Dame Nellie Melba Dame Nellia Melba was the first Australian to achieve international recognition as an opera singer in the early 20th century. Melba appointed W.R. Guilfoyle, then Director of the Botanical Gardens in Melbourne, to design her gardens. The swimming pool where the famous Charlie Chaplin swam, built by Melba, is Victoria’s oldest swimming pool, and is, together with the picturesque gardens, now part of a historical garden tour offered at Coombe.

As part of a full gourmet experience, wines can be tasted and selected before dining. Coombe's cellar door offers free wine tasting, and Coombe's estate grown wine is available for purchase, along with a range of other goodies in their gift store.

Coombe's General Manager and Winemaker, Nicole Esdaile explained “There are three wines that we make that we're most proud of: Blanc De Blancs, which is a sparkling champagne style made from Chardonnay, it's named Nellie Melba for Melba. We make a lovely, barrelfermented Chardonnay - Coombe Farm Chardonnay. And our Pinot Noir is also very good. They're very much the regional specialities of the Yarra Valley.”

Located separately from the Melba Estate, Coombe's 60 hectares (140 acres) of vineyards are among the Yarra Valley's largest. According to Nicole, “we make one third of that for our own brand which is Coombe Farm,” the rest is sold to other producers in the area.

Coombe Restaurant A very stylish and sun-filled restaurant with patrons enjoying delicious French-inspired cuisine in a beautiful and romantic setting. “Our food is very much based around seasonal produce. It's really approachable delicious food,” said Nicole. We had the privilege of meeting Coombe's Executive Chef, Tony Milton, who introduced a few delights from the menu: “Our main dish that's representative of Coombe Yarra Valley, is a beautiful shady oak, freerange chicken dish that we cook with a French parsley paste. Then we pan fry it in butter, and we serve it over mushrooms and barley, and serve it with crispy chicken skin. It's a little bit French, but very local produce, and it works very well. It's a savory main course dish. Our signature dessert is our Coombe Farm Peach Melba. It's a raspberry sorbet with vanilla ice cream and caramelized peaches, and then we serve it with raspberry fruit leather and a crisp pastry tuile, and also some sour peach jelly. It's one that our customers love.” The restaurant also takes bookings for High Tea, corporate events and weddings. Melba was a generous supporter of young artists and musicians and, in keeping with that tradition, Coombe supports the Melba Opera Trust. For special events, live opera performances accompanied by a pianist make for a most romantic and elegant setting.

K

ylie Kwong has long been a well-known name in the food and hospitality industry, and her Chinese heritage has also earned her fame within the Chinese community. Her restaurant in Potts Point, Billy Kwong, opened in 1999. The restaurant takes the warmth of a Chinese eating house and the modern style of an open kitchen, to present the ideal place for gatherings of any occasion. On Billy Kwong’s menu you can find line-caught fish, samphire, warrigal greens, saltbush and wallaby, all amazingly transformed into delectable flavours with a unique twist that pay homage to classic Cantonese cuisine. Besides tasting moon cakes and appreciating the full moon, attending a grand family dinner is a most important activity for the Chinese. Considering dining at Billy Kwong for the Mid-Autumn Festival? Some popular traditional dishes on the Billy Kwong menu are: • Crabs (best at this time of the year) and other prized seafood • Taro (said to exorcise evil spirits and remove ill fortune) • Pumpkin (rich in vitamin A and B and is said to bring glorious health) • Steamed lotus root stuffed with sticky rice and osmanthus flower • Traditional duck soup with the seed of Job’s tears (for nourishing yin, moistening dryness, and strengthening the immune system) • Sticky glutinous rice dumplings in sweet rice wine (which symbolises reunion)

Red Lantern

S

et within a designer space reminiscent of French Colonial Vietnam, Red Lantern on Riley offers an authentic experience in the most awarded Vietnamese Restaurant in the world, with fresh food, sustainable practices and a loving ambiance. Mixed with the nostalgia of Indochine and the personal quirkiness of the Nguyen family, Red Lantern on Riley is an experience to share with your friends and family.

Chef Backgrounds Emme Meechai - Emme has worked with Red Lantern for over 6 years starting off as a Wok Master at both the original Red Lantern on Crown and Red Lantern on Riley, before being promoted to Head Chef of Red Lantern on Riley. Emme is efficient, precise and integral in all that he does. He originally came to Australia (from Thailand) as an I.T. Programmer before a swift career change into the restaurant world where he thrives under the intense pressure and high energy of the kitchen. Mark Jensen - Unlike most chefs, Mark Jensen, who now heads up the kitchen at three successful Sydney restaurants - Red Lantern, Pork’d and Salmon and Bear, did not start working in a professional kitchen until the age of 27. With a growing interest in cuisine, Mark decided that if he was going to be a successful chef, the right training would be essential. He moved to Sydney and promptly obtained a position in Mathew Moran’s kitchen at the Paddington Inn Bistro. After three years with Matt, Mark moved to the Bennelong Restaurant Sydney Opera House. Under the exceptional tutelage of Janni Krystis, he refined the techniques he had previously

learned. The time had come for Mark to make his own stand in the Sydney dining scene, so he opened the dining room at the Olympic Hotel in 1995. Currently Mark is busy making the world “green” as possible, highlighted in his cook book – The Urban Cook : Cooking and Eating for a Sustainable Future. Luke Nguyen - Restaurateur, chef, author, television host, and gastronomic traveller: Luke Nguyen has done it all. At the age of 23, he fulfilled his dream by opening his very own restaurant, Red Lantern, with his sister Pauline Nguyen, and Mark Jensen. In 2012, the team opened their second restaurant, Red Lantern on Riley. Luke is the author of four best-selling and award-winning cook books. Luke was recently inducted into the Sydney Morning Herald’s Food Hall of Fame for his cooking and travel programmes, Luke Nguyen’s Vietnam & Luke Nguyen’s Greater Mekong, which is televised in 150 countries. He was also a judge and a host for MasterChef Vietnam. He is the Ambassador for the award-winning travel group APT, hosting culinary discovery trips to Vietnam, Cambodia, China, and Japan.

China Doll China Doll is a modern Asian restaurant, situated along the glamorous Finger Wharf at Woolloomooloo, headed by Chef Frank Shek, born in Scotland to Hong Kong parents. The restaurant is stunningly elegant, with indoor and outdoor seating and a picturesque view of the city skyline. For the Mid-Autumn Festival, it’ll be the perfect venue for a long leisurely lunch or an intimate dinner where one can fully appreciate alfresco dining in all its glory. Gazing at the moon is an ancient tradition from the Zhou Dynasty (around 500 BC) when people held ceremonies to welcome the full moon. These ceremonies included huge outdoor feasts of moon cakes, watermelons, apricots, apples, grapes and other fresh fruits. They drank fine wine, watched the moon, and listened to music. Common people who could not afford parties as big as the rich would lay some moon cakes and fruits on a table in the courtyard and pray to the moon for a good harvest. The menu features dishes from Japan, Hong Kong, China, and across South East Asia, but, don’t expect Asian Fusion. Each dish remains true to its roots with clean and distinguished flavours that are designed to suit both Eastern and Western palates. The Crispy Pork Belly and the Tea-Smoked Duck are ever popular favourites amongst diners. An A La Carte menu is offered along with a Banquet Menu, which works well for groups. In addition to an extensive wine list, they also offer cocktails. Their Asian inspired cocktails are well worth a try. With a breathtaking view of the full moon, accompanied by a banquet of beautiful food, China Doll sets you up to enjoy the Mid-Autumn Festival the way it should be.
