The brilliance of Van Cleef & Arpels is evident in how it has managed, time and time again, to lift designs from its archives decades after they were conceived and reincarnate them in novel ways that remain faithful to the original motifs. Nicolas Bos, the brand’s president and CEO, has often expressed the philosophy that while new collections should be consistent with the spirit of the house and its iconic designs, they should not simply reproduce them. The new Bouton d’or collection is a gleaming example of this thinking.

Bouton d’or is inspired by one of Van Cleef & Arpels’ most emblematic creations from the 1930s, the Paillette motif, which also appeared in various iterations in the 1940s and 1950s—from extravagant two-string necklaces and petals of floral-themed jewellery to the tutus of its iconic jewelled ballerinas. More than six decades later, the bead-like motif is revisited, but this time it’s given a more graphic yet balanced appearance. The maison achieved this in two ways. First, by making the “beads” look less round, more like a button—thus the name, Bouton d’or—with a pastille-like shape and gentle curves. Second, by keeping only two colour themes—“warm red,” using carnelian paired with mother-of-pearl for contrast, and “spring green,” using chrysoprase set with black onyx—and a diamond on top for that added sheen. An exceptional degree of precision and dexterity was required in the crafting and assembly of the jewellery to achieve the fluidity that enables the bracelets and necklaces to follow the curvature of the wrist and collarbone so beautifully. But as he shared tips for success at a café in Brighton town, Hoang looked like any other ordinary boy from next door. “I do all the usual things many other and inspiring musicians do. It’s a very complicated process, complicated in that I didn’t do anything special, but you never quite know sometimes, you just do it.” His first teacher (his father) inspired Hoang to take up the piano when he was just three and a half years old, learning to play Beethoven's Für Elise and Bach's Prelude in C major. One day, Hoang visited a shopping centre with his parents and began playing on the keyboards in the music store. As luck would have it, a gentleman from Casio heard Hoang play and introduced him to a classical piano teacher - Rita Reichman, the daughter of Holocaust survivors. In the 17 years to come, Rita would shape, nurture and refine his talent to become the artist he is today. Although living in commission housing for many years, the family managed to save up in order to maintain the piano lessons. A scholarship took him to the Manhattan School of Music. “I’m always inspired when I go to concerts, especially when I was younger. It’s quite simple, when you go to a concert and you love something, you go home and you try to

Roasted Duck

in Fermented Bean Curd 腐乳烤鴨

Many of our family dinners consisted of only a bowl of steamed rice and a cube of fermented bean curd. SERVES 4-6, as part of a shared meal

INGREDIENTS

1 small duck, cleaned vegetable oil, or brushing 2 spring onions (scallions), finely shredded 1 long red chilli, julienned

Marinade

2 tablespoons red fermented bean curd 4 tablespoons white fermented bean curd plus 2 tablespoons of the bean curd water 3 tablespoons sugar 3 cm (1 ¼ inch) knob of fresh ginger, peeled and pounded to a paste using a mortar and pestle (you need 2 tablespoons pounded ginger) 2 teaspoons sesame oil

METHOD

Combine all the marinade ingredients in a bowl and mix until well combined. Coat the duck all over with the marinade. Cover and marinate in the refrigerator for 2 hours, or overnight for a better result. At the end of marinating, do not drain the duck or pat it dry. Roast and rotisserie the duck over charcoal over medium heat for 30 minutes or roast in a preheated 180⁰C (350⁰F) oven for 1 ½ hours, basting occasionally with a little extra oil. Slice the duck lengthways through the middle of the breast bone, then cut down one side of the backbone to cut the duck in half. Cut down the other side of the backbone and discard it. Remove the wingtips and neck. Cut each duck half between the breast and thigh to give you four pieces, then use a heavy knife or cleaver to chop the duck into 2 cm (¾ inch) pieces. Serve garnished with the spring onion and chilli.v
