ir Cliff Richard has spent six decades at the top of the music business. Inside this month’s iBelieve, you can read how his initial fears that going public with his Christian faith would harm his career were unfounded. ou would expect the Peter Pan of pop to offer a few words of enduring advice. It could be on how to sell over 250 million records worldwide or have a number one single in the UK in six consecutive decades. He might provide tips on how to make it as a film star, sell out the Royal Albert Hall or take the lead in a West End production. But after nearly 60 years at the top, Sir Cliff Richard, the biggest selling singles artist of all time in the UK, has another piece of eternal advice: “If I have one

thing to offer that is of any use at all, it’s the message that God exists and that Jesus is alive and he is yours if you want him.” He adds with a smile: “I’ve been criticised for saying that, but I just thumb my nose.” Writing about Cliff – he’s 72 this year – could turn into something of a eulogy. But that would be a mistake. While other rock stars make a hit record, appear in a reality TV show then end up working on a market stall, Cliff Richard has flourished in the most fickle of industries. Food Reader’s kitchen Roasted boned shoulder of lamb IT manager Phil Coakes, 48, is married to Angela. They have five children You will need: 1 boned shoulder of lamb (hogget or mutton will also be fine) weighing around 1.5-2kg • 6 anchovy fi llets in olive oil • 1 tablespoon of capers • 2 garlic cloves • 1 small bunch of fresh parsley • 1 teaspoon mustard • 1 tablespoon lemon juice • 1 tablespoon of olive oil (from anchovies) • 1 glass of white wine •1 glass of water • Freshly ground black pepper Chop the anchovies, capers, garlic and parsley (no stalks) until fi ne and well mixed. Place in a bowl and add the mustard, lemon juice and olive oil, and season with black pepper. Place the joint on a board with the skin facing down, and slather the mixture all over the inside of the meat. Roll it up, and tie it quite fi rmly with butcher’s string. Put the joint in a roasting tin in the centre of the oven, preheated to 220C (gas mark 7) for 30 mins. The joint should be nicely browned on the outside. At this point, gently pour the glass of wine and the glass of water over the meat. Turn the oven down to 160C (gas mark 3) and cook for a further 30-60 mins – depending on how pink you like your meat, and the size of the joint. When cooked to your liking, take the joint out and allow it to rest for at least 20 mins. Make a classic roast gravy from the juices. 44

This month, try a lovely warming lamb tagine casserole, says iBelieve chef Emily Roberts

M

arch is a time of year when you can begin to experience the start of spring, or you can feel that you are still in the depths of winter. It heralds the arrival of one of my favourite food seasons, but the inclement weather can cause havoc with the timing of vegetables. This month, I have chosen a dish that I actually enjoy eating all year round – lamb tagine. Not only does it have the heart of a warming casserole to give you comfort, but it contains some good superfoods. If you don’t like apricots, please let me reassure you that when the dish is cooked the apricots are no longer like they first resemble. It is as if they take on the texture and flavour of a butternut squash. As for the ‘ras el hanout’ (a Moroccan spice mix), most supermarkets do stock it, but they tend to put it in the food section that caters for foreign foods. This lamb tagine is lovely served with herby couscous on warmer days, but my ultimate favourite accompaniment is roast potatoes. 3 Add the onions and carrots and cook for a further five minutes, stirring occasionally. 4 Take the garlic and ras el hanout spice mix, add them to the casserole and cook for a further two minutes. This allows the spices to heat up and the oils to be released for good flavour. Ingredients 700g of lean cubed lamb • 2 tbsp of oil (olive or rapeseed) • 3 garlic cloves crushed • 1 large or 2 small onions chopped • 2 carrots thickly diced • 1 can of chopped tomatoes • 1 can of beans rinsed and drained (try chickpeas, kidney beans, haricot beans or a mix) • 2 tbsp of ras el hanout spice mix • 150g of dried whole apricots chopped in half • 500ml of hot chicken stock • Salt and pepper Method 1 Heat your oven to 160 degrees, gas mark 3. 2 Gently heat the oil in your ovenproof casserole pan on your stove and add the lamb. You may need to do this in batches so that the meat browns evenly on all sides.

5 Add all the remaining ingredients. Stir round so that everything is combined. Cover and cook for around an hour. 6 Check the liquid level of the casserole. If thickening too much add a splash of hot water. Cook for a further half an hour. 7 Take the casserole out of the oven for about 15 minutes before you eat it. Not only do I fi nd that this helps the flavours settle but it also stops you scolding your mouth! 8 Test for seasoning before serving. If you are using a good quality stock then just a little pepper should be all that is required.

Lamb tagine casserole A healthy snack and a fabulous ingredient There is no doubt that lamb tagine has a fantastic selection of foods and is full of vitamins and minerals. However, the apricot in the tagine is an amazing fruit, and one I constantly snack on. Apricots are packed full of fibre. I am convinced that the majority of us do not get enough of it in our bodies. The amount of people with bowel issues, such as constipation, staggers me. When I ask about their diet there appears to be nothing fresh or nutritious

included. It is usually ready meals and junk food. People seem to prefer to look for a magic pill rather than a healthy solution. Digestion is another problem area for so many. But did you know that if you eat an apricot before a main meal then the apricot helps to make the stomach alkaline? As well as containing vitamin A, which helps eyesight, one of the most beneficial properties that the humble apricot contains is iron. iBelieve

here are billions of people on planet earth right now and billions who have lived before us. Each one represents one life. Some people’s lives have already been lived out and they are gone, but others, like you and me, are in the midst of our journey through life. Each individual only gets one life! There are no second chances. There can be no resetting of the board game of life in order to go back to the beginning and start again. We just have one chance. So we must live it well, live it right and live it in the light of eternity. The average length of a human life right now in much of the Western world is approximately 80 years. That’s 29,200 days or 4,160 weeks or 960 months. But none of us are guaranteed any amount of time. Walk through any cemetery and you will see people of all ages buried there, from the very young to the very old and everything in between. We may be fortunate enough to live for 80 years, but we may also have much less time – we simply don’t know. The issue is not how long we live, but how well we live. David Brainerd (1718–1747) was an American missionary to the Native Indians who only lived for 29 years. During his life on earth he only saw a few people convert, he never travelled overseas, never married, and was not famous or well known during his lifetime. In his journals he records his struggles, passions, victories and weaknesses. They are an honest account of a man choosing to live his life well. It is
