We could have never imagined that our magazine could have progressed and grown as quickly as it has and whilst we are so proud of what we have achieved we are excited about what we have planned for the future. So we were right, our vision is shared by our city’s residents and you too want to positively encourage and focus on all the good that is taking place rather than focusing on the negative. But just to remind you this magazine was never meant to be ours, it’s Newport’s and we want you to be involved, whether you are a company that wants to advertise, a student that loves to write, a photographer who would like to see their photo’s published or simply have a story worth telling get in touch and become part of Newport Vision. You Cheddar believe it! Holy Cheesus is coming to Newport! newport vision caught up with Vernon Tessio to find out all about the new venture.
I remember back to those days when Mum & Dad would rummage through the cupboards in search of the holy grail of toasting machines, the breville, every household had one. They would blow the dust off and create a gooey river of volcanic cheesie goodness wrapped between two slices of bread! For me it was heaven! The breville would then go back in the cupboard gathering dust until I would hear those words once again "where's the toastie machine?". The toastie has moved on a long way since the days of the breville and although the principals remain the same, the ingredients have gone up a notch! The toastie has grown up! You'll find Grilled Cheese eateries popping up at festivals and on the street food scene across the country. This is where you'll usually find me queueing in anticipation to try what cheesie delight is on offer.

The humble toastie, grilled cheese, call it what you like has become a nostalgic dose of my childhood days and I just love cooking them up! I've been experimenting with the fillings with some positive results and some downright failures. This love of crafting the best grilled cheese sandwich, encouragement from friends and family eventually led me on to a business idea... Holy Cheesus was born! There are some fantastic places to eat in Newport, with independent bars, shops, restaurants popping up all the time so why not add a grilled cheese shop to the list? The venue we are taking over is only small with a menu aimed at the fast food, takeaway crowd. Perfect for a lunchtime treat or a hot snack as you rush to catch the train. It’s in a perfect location given the exciting places that surround it on Clytha Park Road. You've got Meat which has long established itself as the go to place for a burger, The Rogue Fox making your coffee dreams
come true and the forthcoming micro-pub, The Cellar Door on it's way it really is a gouda time for the area. Our aim will be to source all our ingredients locally with the emphasis on quality produce. We will be embracing a handmade ethos! We are still finalising our launch menu but there will be some experimental specials each week in addition to our regular classics. We hope to add more to our menu as the place grows. We have had an un-brie-lievable response so far! We cannot wait to open the doors towards the end of September! David Scarpato is coming for you and talks to newport vision about his year of competing to be recognised as one of the greatest chefs worldwide.
So David, tell us how your journey as a chef began, have you always had a romance with food?
had experience of working in kitchens but the judges must have seen some potential in me and I got offered the job.
No, far from it, I actually fell into it by luck. After school I started working in Pell’s Sweet Factory where I made hard boiled sweets and chocolate eclairs but it was only a stop gap as I planned to join the army. I heard about a job going as a trainee chef at the Celtic Manor Resort and thought, “I want to go for that!”
So your training began at the Celtic Manor resort?
You had no experience or training at this point? None at all, I couldn’t even fry an egg! I asked my dad to teach me how to cook a dish for my interview and he taught me a basic linguini with chilli and prawns and off I went. I was up against three others who already

Yes, that’s right, the Trainee Chef Programme they have is fantastic. You get to train in each of their restaurants and rotate every three months. I started in The Olive Tree, then The Lodge and then in The Manor at La Patio, which was my personal favourite, as I worked under a French Head Chef who was amazing. Which other chefs have inspired you? Quite a few actually. At home, my father is the chef and the meals he prepared were influenced by his Italian
roots. Locally, I would have to say Sergio from Gemelli’s, he has become a close friend and mentor when preparing for competitions. Stephen Terry of The Hardwick in Abergavenny is also an inspiration. He worked with Gordon Ramsey and Marco Pierre White in the early days when he was at his peak creatively. Tell us more about the competitions you have entered? Well, I have entered for the Roux Scholarship for the last 6 years, the premier competition for chefs in the UK, it ranks among the most prestigious in the world. Last year, out of 1000’s of entrants I got to the semi-final along with 17 others. I enjoyed it so much I just wanted to enter more. I was lucky to get through again this year to the semi-final which I am

really proud of, especially when you take into consideration the size of the competition. I also entered the Kikkoman Masters last year and got to the live final which was such an achievement, so I’ve applied again this year. I have also entered the San Pellegrino Chef 2018. Wow, so will you be entering Masterchef also? All I’ll say is . . . Watch this space! So tell us about any celebrities you’ve cooked for and what did they eat? Well Ant and Dec are probably the most famous, but they didn’t want anything off the menu, they just wanted pepperoni pizza’s. I’ve also assisted in preparing a pasta dish for Sir Paul McCartney. Who doesn’t love a Pepperoni Pizza! Being a chef can be stressful so what keeps you entertained at work?
Ha, the amount of waitresses that seriously come into the kitchen on the customer’s request asking for an eggless omelette! The waiting staff seem to fall for it every time and it always amuses me. So when you go out to unwind, where do you like to go to have someone cook for you? Gemelli’s Spytty is always a favourite of mine, they serve a fillet of beef that they cook in a water bath which tenderises the beef and it is amazing. Outside of Newport, Bar 44, a tapas restauraunt in Penarth is a guilty pleasure of mine.
Sounds amazing, so what is the next step after all of these competitions David? Well I have formed Scarpato Catering, we do Weddings,VIP Cooking Events, Corporate Events and an increasingly popular are home parties where I literally take over people’s kitchens and give them the fine dining experience in the comfort of their own home. So what is your signature dish? Hmm that’s a difficult one as I love to cook a variety of dishes. Italian and Asian influenced dishes are a favourite, but if I was gonna choose a dish it would have to be slow cooked leg of lamb on a bed of slow cooked boulangerie potatoes.

Semi fine dining that won't break the bank Tucked away at the nape of Ridgeway is a cosy modern shabby chic pub and restaurant. The bar area is small and intimate yet open plan and family orientated with both children and dogs welcome. The Ridgeway Bar and Kitchen has a decent sized beer garden and can be quite a sun trap when the Welsh weather permits. The drinks menu has an array of spirits with multiple gins, continental largers, fruit ciders and 26 newport vision September 2017
also coffee. Food is available in the bar area including snacks such as pork scratchings, hot pies and pasties, or if you prefer you can be seated in the slightly more roomy restaurant to the back. The menu isn’t too extensive and aims to make use of good local produce featuring some of the traditional classics such as a beef burger served in a brioche bun or fish in a light beer batter
The Ridgeway Bar and Kitchen and chunky triple cooked chips. Mains tend to be priced from around £10 up to £20 depending on the dish. Throughout the week there is a 2 course lunch menu at £11.95 available Monday to Saturday with an evening version available Monday to Thursday for £17.95 so we thought we’d give it a go.
On the menu... To start - wild and chestnut mushrooms, shallots, garlic and cream served on a toasted brioche, whitebait with tartare sauce or soup of the day with warm bakery bread. For main - homemade fish cake, creamed leek with poached hen’s egg, caramelised goats cheese and onion pepper tart with rocket salad or slow braised Welsh brisket, bubble and squeak, peppercorn sauce with fried hen’s egg. Dessert – bread and butter pudding, orange marmalade with crème anglaise, chocolate tart with clotted cream or trio of ice cream. The mushrooms were served in a deliciously creamy sauce. The toasted brioche was firm but chewy saturated in the moreish sauce and finished with a drizzle of grapeseed oil – just yummy. A good size portion but not too big to spoil the main event.
Service between courses was a little slow but that was ok as we weren’t in any rush.

For mains we took the fish cake and a vegetarian option. The fish cake was sizeable with a deliciously subtle flavour encased in a light crispy breadcrumb presented on creamy leek moat with a poached egg perched on top. The goats cheese tart is a particular favourite of mine and I’m no vegetarian. The dish was a well-balanced portion – I find goats cheese can be a little overpowering if you have too much - and presented in a puff pastry case stacked with rocked and a drizzle of balsamic glaze. The puff pastry was a little over cooked so was a tad too flaky but enjoyable all the same. If you’re a red meat fan the beef brisket looked disappointingly small
Tuesday is steak and wine night – you can enjoy 2 Celtic pride 21 day matured dry-age steaks with sides accompanied by a bottle of wine for £35. Sundays a traditional roast or veggie alternative is served for lunch - 2 courses for £18.95 or 3 for £22.95, then pizza is available in the evening. I’m not personally a fan of chain restaurants so this charming gastropub is a nice little alternative.

Mexican Fried Rice Nachos This recipe was inspired by half an hour of binge-watching fried rice how-to videos. Weird, I know. But have you ever seen fried rice being made by a pro? There’s something so mesmerizing about the sound of the sizzling oil, the crazy-fast prep work and the wok being handled with such finesse and ease. After my viewing party (of one), I was inspired to make fried rice – well, semi-fried – and I threw in some nachos, too. MAKES 4–6 SERVINGS Pantry Essentials: BEANS, GRAINS In a large frying pan, heat some oil over medium heat and sauté the onions until they are soft and translucent, 5–7 minutes. Add the garlic, jalapeño, cumin and a pinch of salt and cook for another few minutes. Stir in the black beans and corn. Cook for a few more minutes. Transfer the mixture to a bowl and stir in the lime juice. Set aside. Drain any excess liquid from the frying pan and place it over high heat. Add a glug of oil. When the pan is hot, add the jasmine rice, after using your hands to break up any clumps. Toss the rice around the pan for about 3 minutes. When you see a few grains browning, pour the bean and corn mixture back into the frying pan, add the tamari and toss everything together until the mixture is combined and piping hot. On a large plate or baking tray, spread out the tortilla chips and top them with fried rice. Add any toppings you like and serve.
