Monthly recipe from CAFFI FLORENCE Christmas Stuffing There is no comparison between freshly prepared stuffing like this and others that are prepared commercially. The beauty of this is that it can be made in advance and frozen. I prefer to cook stuffings separately and would make this into balls and place on a baking sheet. All you need to do is defrost on Christmas Eve and cook. Sausagemeat, Chestnut and Cranberry Stuffing Serves 4 150g good quality sausage meat : (Williams & Bonham in Mold are good)

100g chestnuts 100g bread 2 onions 100g cranberries ½ teaspoon dried sage or 20 fresh leaves Soften chopped onion and cranberries. Place bread, chestnuts and fresh sage in food processor and blend until fine. Mix all ingredients together and either shape into balls or place in ovenproof dish Bake in a moderate oven for 20 – 25mins. Vegetarian version of above Simply omit the sausage meat and add an egg and some milk to obtain a consistency that enables you to shapes into balls.

Community Council News - November Meeting From the minutes of the November meeting:A member of the public reported that the salt bins in Maeshafn had been filled with road salt but one had been emptied within a day leaving no salt for that stretch of road. County councillor Christine Evans reported:that Hospital Reorganisation was taking place but that the three hospitals (Bangor, Wrexham and St Asaph) would retain their Accident and Emergency facilities but one Maternity unit would be only Midwife led. There had been nine objections to the proposed parking proposals at Loggerheads and Cadole All septic tanks have to be registered.

The Chairman, David Jones, reported that he had attended a meeting in Rhyl to discuss the Management of the Examination of the Denbighshire Local Development Plan but had found it unproductive. The Christmas Tree lights in Maeshafn need further inspection before they are switched on. An offer to service the Maeshafn mowing machine during November or December at a 15% discount had been received from J.T. Williams. Items to be included in next year's precept were discussed as was what could be done to celebrate the Queen's Diamond Jubilee in June 2012 - suggestions from the Public would be appreciated. There were no planning applications or decisions. A member of the public complained about the tree at the bottom of Cae Derwen/Tyn Llan overhanging the pavement - this will be trimmed. The next meeting will be on Thursday 8th December 2011 John Almond. Vice Chairman

Thank you from the Llanferres/Colomendy Art Group Despite the weather, our 6th exhibition at the Loggerheads Country park was a most successful event with over 300 visitors voting for their favourite painting.

Mrs Betty Cook receiving her trophy from Mr Ewan Carr, Manager of Kingswood Centre Colomendy.

This year’s winner is Mrs. Betty Cook with her endearing pastel of ‘Bagot’ the springer-spaniel. Mrs. Olive Parry was a close second with her acrylic painting ‘Spring’. Betty has chosen ‘Support Dogs’ as our charity. They skilfully train dogs to help children or adults with a range of health problems. ‘Support Dogs’ will receive £300 which includes the proceeds from our stall, a percentage of the sales and a donation from the group. As winner of the favourite picture, Betty will keep the Art Group Trophy for the next year. The winning raffle tickets were:1st 341 3rd 336 nd th 2 433 4 244 The Teddy’s name is Sylvia. The Rector writes - 'Christmas is a time for children', 'Christmas is really for families', 'Christmas is the time of peace and goodwill', 'Christmas should really be for those who are lonely or who do not feel loved'. All of these things are said of Christmas - and more. For Christians Christmas is the time when God enters his creation. In what I find is a beautiful song by Mark Lowry called 'Mary did you know?' are the lines, "Mary did you know that your baby boy has walked where angels trod, that when you kiss your little baby you kiss the face of God?". The Christmas Crib scene with Mary, Joseph, Shepherds, Angels, Animals, and so on all gathered around Jesus is based on the Gospel writer Luke's

account of the first Christmas and is meant to remind us that what happened in the humble birthing room at Bethlehem is for all creation. At Christmas Christians, and others, often gather to celebrate the season. Why not come and be reminded of, or discover, what it is all about? On 11th December the popular 'Christingle' service uses the image of the decorated orange and candle to teach of Jesus as 'the light of the world'. The collection at the Christingle service will go to the Archbishop of Wales' Fund for Children. On Thursday 15th December a traditional service of Christmas Carols and Bible readings tells the story of God's involvement in the world leading up to and including the first Christmas.

On Christmas Eve at 4.30pm if you are young, (or young at heart!), there will be a lively start to Christmas as children help to make our Christmas Crib, a special 'pass the parcel' game reminds us of what the Christmas story is all about, and there's also a few carols as well! For some the highlight of Christmas in church is 'Midnight Communion' (or 'Mass') which starts at 11.30 pm and on Christmas Day at 9.30 am there is a more simple Christmas Morning Communion service - everyone is welcome to either or both of these services as well as all our other services. For my part I shall be at some of those services before heading off to the other four churches in the Bro Famau Group but I shall look forward to returning home to the New Rectory and joining

Dr Christine’s letter I shall be in Zimbabwe and Zambia as this letter comes out I am there to receive an honorary Fellowship of College of Surgeons East, Central and Southern Africa which covers 9 countries from Ethiopia down the east coast of Africa excluding RSA. This is a thank you for setting up and organising their examinations which first started in 2002 till 2008, when I retired. Ruth is going to be there as well but she and her fellow Iwan are throwing themselves off the bridge at Victoria Falls and white water rafting, whilst I am examining [but not organising this time] Anatomy and Physiology doesn't change or go out of date !!!. The last month in council has been busy with the latest financial reviews, joint meetings with Conwy about highways, looks like we are amalgamating as they have with street lighting and waste disposal. I attended a review of the Emergency Surgical Services, [maternity and orthopaedics touched on] and as it said in the Daily Post on 18th November there will be cuts in the services as there are not enough general surgeons and theatre nurses to run the emergency surgery in North Wales in all 3 DGHs.. It looks like Glan Clwyd will be the hospital where this happens. The Emergency departments will all stay open for trauma and medical emergencies, which are more numerous. I went to Mold county hall recently to listen to a Flintshire CC scrutiny on the Environment. Very well chaired, well attended and a good standard of debate, dare I say better than Denbighshire. Also

there was no political bias at all in the discussions. I attended the Remembrance day service in St Berres which was well attended, these services have become more relevant of late. On the home front I took the Youth Club 13 to 17 year old paint balling in the late October half term at Abergele, organised for us by Denbighshire youth services. Great fun was had by all, 3 from Llanferres came. Remember the lads and lasses are very welcome in our Youth Club. We are having an Xmas party on December 14th 6.30 to 9 pm at the old schoolroom. All 10 -17 year olds welcome. Have a good run up to Christmas Regards Christine Evans christinemaryevans@hotmail.com.

Clearing snow and ice from pavements yourself There's no law stopping you from clearing snow and ice on the pavement outside your home or from public spaces. lt's unlikely you'll be sued or held legally responsible for any injuries on the path if you have cleared it carefully. Follow the snow code when clearing snow and ice safely. The snow code - tips on clearing snow and ice from pavements or public spaces lf you clear snow and ice yourself, be careful - don't make the pathways more dangerous by causing them to refreeze. But don't be put off clearing paths because you're afraid someone will get injured. Remember, people walking on snow and ice have responsibility to be careful themselves. Follow the advice below to make sure you clear the pathway safely and effectively.

ordinary table or dishwasher salt - a tablespoon for each square metre you clear should work. Don't use the salt found in salting bins - this will be needed to keep the roads clear. Be careful not to spread salt on plants or grass as it may cause them damage. lf you don't have enough salt, you can also use sand or ash. These won't stop the path icing over as well as salt, but will provide good grip under foot.

Clear the snow or ice early in the day Take care where you move the snow It's easier to move fresh, loose snow rather than hard snow that has packed together from people walking on it. So if possible, start removing the snow and ice in the morning. lf you remove the top layer of snow in the morning, any sunshine during the day will help melt any ice beneath. You can then cover the path with salt before nightfall to stop it refreezing overnight.

Use salt or sand - not water lf you use water to melt the snow, it may refreeze and turn to black ice. Black ice increases the risk of injuries as it is invisible and very slippery. You can prevent black ice by spreading some salt on the area you have cleared. You can use

When you're shovelling snow, take care where you put it so it doesn't block people's paths or drains. Make sure you make a path down the middle of the area to be cleared first, so youhave a clear surface to walk on. Then shovel the snow from the centre of the path to the sides.

Offer to clear your neighbours' paths lf your neighbour will have difficulty getting in and out of their home, offer to clear snow and ice around their property as well. Check that any elderly or disabled neighbours are alright in the cold weather. lf you're worried about them, contact social services.

Recycling - an update from Denbighshire CC Householders using the blue and clear sacks are now able to put all their recycling into sacks of one colour. This is possible due to the council s new contract with UPM-Kymmene and a more relaxed Welsh Government position on collections. Denbighshire will continue to provide residents with blue and clear sacks until stocks are exhausted. Only recyclable material should be placed in the blue and clear sacks. Non-recyclable rubbish must still be put in council-supplied pink sacks, or householders own refuse sacks.

Nature Notes What a difference a year can make. Last November was the coldest for seventeen years but this November is shaping up to be a very mild one. There have been reports of butterflies being seen this month, seven spot ladybirds are still about, yesterday (19th) I saw four species of fly basking in the sun on a light coloured notice board and some plants are flowering out of season - I have heard of strawberries in flower. I came across a holly tree in full flower and close by another laden with red berries. On closer inspection I discovered that the flowers were male with much ripe pollen. Holly is dioecious, that is there are male plants and female plants but both normally flower in May or June. I could not find any flowers on the fruiting tree, which was obviously female, so the male pollen would have no flowers to pollinate and will just go to waste and it might mean that the female tree will not be pollinated when it flowers next spring. In the same wood, as the above holly trees, are several bushes over which wild clematis (Clematis vitalba) clamber. When carrying its crop of greeny-white flowers in July to September it is known as Traveller's Joy but in October and through most of the winter it is festooned with long silky plumes attached to the seeds and this gives it its name of Old Man's Beard. It is actually a member of the buttercup family and, like all clematis, the flowers do not have petals, the colourful parts of the flower are actually sepals. It is a plant not particularly liked by foresters and conservationists as it is very invasive, quick growing, spreads

rapidly and can smother bushes and small trees. In New Zealand it is illegal to sell or propagate the plant as it is considered such a pest. It is interesting to look back on the year and see its impact on butterflies. My own impression is that numbers are down and this was confirmed by Butterfly Conservation for whom I record. They say that numbers overall were down 11% this year. Much can be put down to the summer weather which was the coldest for 18 years but "The last 4 years have seen butterfly numbers plummet to an all time low and that almost half of the 59 British species are now under threat and many have suffered longterm declines as a result of destruction of their habitats by human activities". I have seen instances of this locally. A site where I used to record Grizzled skipper (a rare species) was destroyed by constant strimming and a pasture, good for the Common blue, Darkgreen fritillary and others, grazed by ponies, was devastated when the ponies were replaced by sheep. Generally, over the last 17 years I have seen butterflies decline in this area. Can I thank all who have contacted me with their observations and questions, they are always welcome, and I would like to wish all readers a healthy and peaceful 2012.
