Monthly recipe from CAFFI FLORENCE The Clwydian Range Area of Outstanding Natural Beauty is home to some of the finest food producers in North Wales. The newly launch Clwydian Range Food Trail highlights food producers committed to quality, delicious & affordable food. At CAFFI FLORENCE, locally sourced food is at the heart of our approach to food. Minimising food miles, reducing packaging, maximising freshness & quality are core to our beliefs. This recipe is the Welsh Rarebit we use everyday at the café and is a great way to use many of the products available on the food trail and from other local producers.
Welsh Rarebit stuffed mushrooms Large field mushrooms 375g Grated cheese 75 ml Beer or milk 15g Self raising flour 25g Bread crumbs 2tsp Mustard 2 Egg yolks
Erlas Gardens, Wrexham Llandyrnog Creamery Conwy Brewery Eagles Bakery, Ruthin Clyttir Farm, Llanbedr
To make rarebit mix Melt cheese in beer in saucepan over gentle heat. Mix in flour, breadcrumbs and mustard and cook gently. Remove from heat and add eggs and stir well. Refrigerate for several hours before use. Wash mushrooms, remove stalk and place in baking dish. Add small knob of butter into the centre of each mushroom and cook for about 15 mins at 180C, gas 4. When ready to serve add chilled rarebit mix to middle of mushrooms and place under a hot grill until rarebit bubbles and starts to brown. Llanferres Parish Gardening Club Llanferres Parish Gardening Club The Club meeting on April 16th took us on a garden visit to the Old Rectory at Llanfihangel Glyn Myfyr. Although the weather recently had been inclement, the variety of flowers was varied - not only daffodils and tulips but a wide range of other bulbs. Advice from Mr and Mrs Hughes on how to grow such variety for spring colour was most welcome. After walking around the different areas of their garden we enjoyed a friendly chat with tea and homemade cakes - most enjoyable, even if the weather outdoors had been chilly. Our next meeting will be on Monday May 14th in the Village hall at 7.30pm when Gareth Jones - farm manager at Rhug Estate - will give a talk entitled "Organic Growing". As always, visitors will be most welcome. Cost ÂŁ1. Mrs Joan Almond Hon Secretary ( 810808

Maeshafn CC news The season has started with a match against Pwllheli tomorrow, and as I write this my inbox is getting bombarded with worried cricketers informing me of such useful advice as "it's raining in Chester" or "the BBC have got showers predicted tomorrow at 11am". The match is at our home ground in Shotton and the groundsman has already called to say that it is currently hailing in Queensferry!

It has been suggested by Mr S.Thomas of somewhere in Llanferres that we have a regular Rhun Jones spotting column. For regular readers of the News and Views, Rhun Jones lives somewhere near you, but is rarely seen out, particularly since he gave birth to twins. However occasional sightings are made, news of these are eagerly sought by Rhun Jones spotters.
Tata Steel Maeshafn Cricket Club news - we have our own club shirts this year - over 21 ordered so far and counting. Nicknames were suggested for printing on the back of them, but I decided it was not a good idea because some of the names would result in arrest for the wearers! We have already played Carmel last weekend (we lost). The Carmel groundsman had been unable to mow the outfield because it was coated in snow all week, but we played (temperature was about 6 degrees) and various toes turned blue. One of the Carmel players was wearing a woolly hat, 4 layers of clothing and a coat on his top half, together with a pair of shorts. He explained that he doesn't like his knees to get too warm before the season starts.
Rhun Jones Spotting Column
For those who do not know who Rhun Jones is, I can reveal that he was described by a lady in Llanelidan in 2007 as the 'most attractive Maeshafn player' and (according to Steve Pugh) has a distinctive birthmark on his right buttock. To join the Rhun Jones Spotting Club, please put ÂŁ5 behind the bar in the Miners in the name of J Fagan. In March/April Rhun Jones has been spotted in the following places:

Letter from Dr Christine Dear All,
This is to say goodbye as your County Councillor. I have had a varied time over the last 4 years, much of which has been a pleasure, but too much has also been very boring and tedious. I have enjoyed doing things for people, but many of the meetings have been interminable. You have a very good Community Council, which has worked hard for you, they are organised, selfless, rarely argue, but discuss things well. They are not like the other 2 community councils in this ward, who are dysfunctional and are rendered almost useless by argument and differences of opinion. So vote carefully for your next community councillors and use all your nine votes . I shall be continuing on the Betsi Cadwaldr Community Health Council for the Denbighshire. I am now a Welsh Government appointee and I was voted in as the Chair for the whole of the 6 counties of North Wales on April 19th. I feel I can still be useful. The Community Health Council is 'the Voice of the Patient' so use it if you have a grievance. I am arranging interviews on the hospital radios in the 3 District General Hospitals with councillors from Wrexham and Flint, to be given as sound bites between the music played.
Your community council they are the best weather on Anglesey watching roads being repaired, finding out how they are prioritised. Also I talked to the N W Wales coroner about the accidents and deaths caused by elderly drivers. I know youngsters have accidents too but that is because they drive too fast. There are disproportionately more accidents from drivers over 75 years. I have also been on a wonderful community bus service for the elderly/disabled, which starts in Llandudno Junction and goes door to door for shopping and Hospital/GP visits up the Vale of Conwy on the far side where there are few routine buses. Good if this could be done in Denbighshire. I hope to continue with the Youth club if I am voted in as a community councillor for Llanarmon, and we welcome all youths from Llanferres All the best for you are the village in the future.
I have also been continuing with my Many Regards 'Irritated by the Council' programmes, Christine Evans for Radio Wales, this time in blustery christinemaryevans@hotmail.com

Recognise anyone? In 1900
Catherine Wynne Edwards married John Frederick Peters in Leigh, Lancashire. Nothing special in that you may say, but Catherine Wynne Edwards, known as Kate was a Llanferres girl, the daughter of the village blacksmith Robert Edwards and his wife Mary Wynne. She had two brothers Thomas and 6 Edward. Edward succeeded his father as Llanferres Blacksmith until his death in 1925. She also had three sisters Mary Ellen, Louisa and Edith Wynne who became the village Post Mistress. John Frederick Peters was an agricultural engineer living in Leigh, Lancashire. He had several brothers and sisters but one in particular, Edith Ann Peters who married Walter Flitcroft in Leigh. They had three children Ethel, Elsie and Eric. Ethel was my mother and she features on several of the photographs associated with this article. John F Peters was my great uncle. The Flitcroft family visited their relations in Llanferres between 1912 and 1930 and they stayed in the cottage Tyn-y-Wern, on the outskirts of the village, and also at the Post Office. The family travelled from Leigh to Llanferres by horse and trap in the early days with my mother sitting on a three legged milking stool for the whole journey. John Frederick and Kate had three children, Dorothy Mary who stayed in
Leigh, Edith Wynne who moved back to Llanferres and Edward Ernest who also moved back to the village to look after the shop and Post Office, and who was the proprietor of the local garage. Recently I had a phone call from Jayne Hopwood who is the granddaughter of Edward E Peters, and therefore the great great granddaughter of Kate Peters, asking me if I could give her any details

Nature Notes The last week or so of March was so warm that butterflies appeared. I recorded Comma, Peacock and Small tortoiseshell and had a report of Red admiral and Brimstone being seen. All these species overwinter as hibernating adults,( in ivy, tree holes, bird nest boxes, sheds, house lofts or even behind curtains in houses), so often appear in warm spells in March. I also saw a Holly blue butterfly at the same time. This species overwinters as a pupa and is often the first to emerge. Chiffchaffs proliferated and on the 27th March I recorded my first Wheatear and was also lucky to see Blackcock 'lecking' even though it was as late in the morning as eight o'clock. One usually has to be up at the crack of dawn to see them. Then on April 4th we woke to find the ground covered with snow but fortunately it only lasted for a day. The butterflies disappeared. Most will probably have gone back into their hibernaculas were they will stay until the weather warms up again but it is likely that others will have perished and all will have used up valuable fat reserves. I wondered how the Chiffchaffs, being insect eaters, would survive the cold but I went out two days after the snow and they were singing everywhere, so they do not seem to have suffered. But spring will not be denied. On 12th April I saw a Small-white butterfly, on the 13th there was a 'fall' of Willow warblers and on the 15th I recorded a Blackcap.
However, what really surprised me was the sight of a male Orange tip butterfly on the 15th. Although it was a sunny day there was a chilly breeze and there had been a sharp overnight frost. Many naturalists regard the Orange tip as proof that spring has arrived. Visiting a National Trust property, towards the end of March, in Cheshire we encountered a bumblebee which was large sized with a tawny coloured thorax, black body and white tail. I did not recognise it and it did not conform with any in my bumblebee book and then I realised it was a species which is new to Britain. It was Bombus hypnorum also known as the tree bumblebee. It is a continental species which was first recorded in the UK in Hampshire in 2001. It spread very slowly up to 2005 but then began to spread up the east coast and gradually westwards, although it is still most frequent in the south-east. It is called the tree bumblebee because of its predilection for nesting in hollows in trees but in the UK it has taken to sometimes nesting in bird nest boxes. It is a peaceful insect, like all bumblebees, but it will defend its nest if threatened. Being a 'short tongued' species it favours plants with open or daisy-like flowers. It is not thought to be a threat to any native species of bumblebee or any other insect and, in fact, is considered to be a useful addition to the British fauna. John Almond
