Monthly recipe from CAFFI FLORENCE Seville Orange Marmalade January and February are the months when Seville oranges are in season and so this month we have a recipe for marmalade. Testing for set and preparing jars are key to successful preserving. We have a leaflet to accompany our marmalade workshop so if you need more information give us a call or send an e mail and we will forward the full leaflet.
Ingredients 1 kg seville oranges 1 lemon 1.75 litres water 1kg granulated sugar
Method 1 Wash oranges, cut in half and squeeze juice and pour into pan. Chop the peel in a food processor for a quick chopping method. Place the pips and pith in a muslin bag and add to pan to increase pectin content. Add water with lemon juice and bring to boil. Reduce heat and simmer until peel is very soft – about an hour. Remove muslin with pips and squeeze juice into pan. Add sugar and stir until dissolved. Boil rapidly until setting point is reached. Jar and label. Method 2 For a more refined finished product, peel strips of peel from the oranges using a potato peeler and chop by hand. Squeeze oranges and follow as above.

It may be the first magazine of 2011, but the Church is already two months into its new year, which began with Advent Sunday at the end of November. Several of us thoroughly enjoyed the quizzes organised by Siobhan and Paul for those of us hopeless at quizzes, the fun and light-hearted evening as much as the actual quiz - and we are delighted that some of the money raised will be for Church Funds. We also raised nearly ÂŁ370 from our stall at the Craft Fair in November - a proportion of the money was from the sale of Wendy's cakes following the event. Many thanks to all who supported us. In lieu of Christmas Cards we gave a donation of nearly ÂŁ100 to charity. If you read this in time, please come to our 5th Sunday service at 10.30 am on 30th January when all five churches come together, this time in Llanferres. Refreshments will be served in the church after the service. Easter is late this year so Shrove Tuesday is not until March 8th. Look out in next month's magazine for details of Wendy's Pancake Party.

Photography Tips The first in a regular series of seasonal photographic tips from our local professional
Autumn is a wonderful excuse to take some time out to go for a local walk with your camera. The combination of the low sun in the sky and vibrant oranges and browns as nature sheds her summer growth, makes the next month or so unmissable. You don't need a special camera and big clunky lenses either. With a few tips you can take great nature and landscape shots with any camera. The first, and most important thing to do, is to be in the right place at the right time. For photography, this means soon after sunrise and the hour or so before sunset. So check the weather, pick a clear day and head off early in the morning (sunrise does not mean the middle of the night at this time of year). Know where you want to be in advance and get there, well wrapped up, in plenty of time to catch the light. I love the view over Loggerheads at this time of year, the colourful autumn trees can feel like a mini New England on a misty morning! Pop into the woods above Loggerheads from the signed path just down the road from Cadole. David is a local landscape and commercial photographer, who runs photography workshops for anyone who wishes to learn more about using their camera to its full advantage and exploring their creativity in photography. www.davidwhitestudio.co.uk

November Madness Since my last report, I have had a particularly busy November on both co-driving and driving on rallies throughout the UK. The end of November saw the 10th Anniversary Rally of the Tests which started in Dublin and finished in Blackpool. I was co-driving for Howard Warren in the 1965 Porsche 911 which we competed in Le Jog on. The Rally of the Tests was the pinnacle event of 2010 and being the 10th Anniversary it was decided to extent this from its normal three day format to a full week format. The event started in Dublin on the Monday morning which involved three days of particularly difficult and tricky navigation and tests around the roads of central Eastern Ireland. The first day saw us having a reasonably successful day and ended the day in 3rd place. We continued to perform very well in the slippery and difficult road conditions and eventually moved up to 2nd place overall by the end of the third day when we ended up back in Dublin ready for the early start on Thursday morning to get the ferry across from Dublin to Holyhead for three more days competition in the UK. A re-start from the Anglesey Race Circuit on Thursday lunchtime saw us competing on various Tests and Regularities throughout North Wales including through the Aberhirnant Forest near Bala, before moving across to Swynnerton Camp near Stoke-onTrent for a large test which was extremely complicated and very slippy due to the muddy conditions. We ended up loosing 1 minute more than
our rivals, but still retained the 2nd place overall, but the gap was closed between us and the 3rd place Crew. The following morning saw us leave Stoke-on-Trent and head up country eventually ending up at Scarborough following some very tricky navigational tests in both fog and mud through Dalby Forest and the Yorkshire Moors. Unfortunately, due to incorrect tyres and a slight navigation error on my behalf, we dropped back to 3rd place at Scarborough. Therefore, the final day, this time of only eleven hours of competition rather than the twelve to fourteen hours we had seen on all previous days, meant that we retained our position and finished 3rd overall on the event when we arrived in Blackpool on the Saturday evening following extensive running repairs to the car in terms of bits falling off and problems with the steering. We were very pleased with the overall result. Moving onto the next weekend, saw me driving on the Roger Albert Clark Rally, this is a stage rally for historic cars built before 1981 when I competed in my Mark II Escort RS2000. We arrived in Pickering in the Motorhome which Carol was catering for thirty

As the day progressed more and more snow fell and there was, at one point, a serious concern as to whether the event would run. However, following extensive and herculean efforts by the organisers the event started on Friday night and two stages in Dalby Forest in the 2 ft snow drifts saw us managing to compete reasonably well, despite not having proper snow tyres, and end up in 18th place overall. We started the next day using the Olivers Mount Race Track in Scarborough which was sheet ice from start to finish which made for interesting driving before moving into Landale Forest for more snow and then across country to Hamsterley in Northumberland and eventually into the Kielder Forest. The last event stage of the day being the Shepherdshield Stage which was run in blizzard conditions with 2 ft high snow banks either side of the track. We eventually managed to get to an overnight halt at Carlisle at 2.00 am where the car was in re-prepared by the mechanics who didn’t get to bed until gone 4.00 am.
tracks and ice where we had an exceptionally good run due to having suitable tyres on and saw us setting stage times in the top 10 positions throughout the day moving up to 15th overall by the end of the day. The next day we had hoped to go back into the Kielder Forest for another twenty five or thirty stage miles, but some drifts of up to 10 ft – 12 ft deep apparently were reported on the stages. The organisers worked their magic and we ran back in to do some of the stages in the Newcastleton area which were in deep snow and, again, due to unsuitable tyres saw us drop back one place, but we did end up 16th overall, 1st in Class, and brought the car home in virtually one piece other than some slight damage due to having to put the car into snow backs in order to slow it down.

Dr Christine’s letter - February 2011 I hope you all had a good Christmas and new Year. My early December and late December/Jan were blighted by lack of running water. The pipe under my road got frozen for 10 days and 14 days respectively. Dwr Cwmru did fix me up with a temporary solution with overland pipes after a week on each occasion. It is the lack of loo flushing which annoys me the most. The lack of baths may have affected my fragrance but I couldn't tell !!! Now fixed. The road closure for 25 hours down Llandegla road, whilst they were re-tarmacing, brought the wrath of farmers and parents on my head which I forwarded onto DCC. The trip to school from just the other side of the road up was 7 miles through Llandegla, Rhytalog and Graianrhyd. Enjoyable things over the Xmas period were the induction of the new vicar at Llanarmon church at which the community choir sang; a carol singsong in the Raven and extremely busy New Year’s eve in the Raven. It took half an hour to get a drink which meant that most of us remained on our feet!!! In the County Council we are working out the budget and the £20 million to be cut in 4 years. I took it upon my self to find out that no bonuses or performance related pay are being awarded at the moment, during this budget cutting period. The rise in council tax would appear to be between 2.7% and 3%. I prefer the former. I went to the soup kitchen in Colwyn Bay frequently during the last 2 months. There were no rough sleepers during the very cold spell as there had been extra monies provided by WAG to help out. On Xmas day there were 15 for lunch, it appears that
some of the homeless do have family and friends who help them out. The annoying thing is that the boundaries of the wards for the council will not be changed before 2012 which is a nuisance since this ward is the biggest and one of the largest areas. So you in Llanferres will be still attached to Llanarmon and Llandegla at the next election. Not sure what is taking so long, the idea of the exercise was to reduce the number of wards down to 40, to save money and to make the sizes of each ward more equal. Nothing has happened about the parking at Cadole which does not surprise me, but I find incomprehensible that the Highways can't put up signs. It is now 9 months since we had the joint meetings with Gwernymynydd council and Highways. Look forward to the potholes being fixed I also look forward to spring. Nature Notes Birds need to keep their feathers clean and in good condition to enable them to fly efficiently and to insulate them against the cold. They do this by bathing, either in water or by 'dust bathing' where they flick dry soil or dust among and into their feathers to clean them, very much like we get our cloths dry-cleaned. However, during the recent cold spell I was intrigued to see a number of sparrows 'snow bathing'. They were lying, first on one side and then the other, and vigorously working the powdery snow into their feathers where, presumably, it would melt with the bird's warmth and wash out any dirt. On another occasion I watched a blackbird 'eating' snow to obtain a drink. Both, I think, were examples of birds 'making the most of their circumstances'.
But the cold was not without its casualties. Once the ice had disappeared from the garden pond I began to find dead frogs. They were all large, very bloated and had a grey pallor to their skins and all were in a 'spread eagle' posture. Some were floating mid-water while others were lying on the bottom of the pond. In all, I removed nine bodies from the pond. These will almost certainly be all males, as only males overwinter on pond bottoms while the females hide in deep leaf litter or holes in the ground. It may be that they are victims of the cold because when the pond ices over there can be a shortage of oxygen in the water, especially if there is not sufficient green plants in the water to produce oxygen. I do wonder if there is a more sinister reason, such as disease, but the most usual cause of It was interesting to see how fatalities is Ranavirus and that quickly nature revived as the snow occurs mostly in spring or summer, and cold receded.
