Monthly recipe from CAFFI FLORENCE March kicks off with St David’s Day so here is a recipe that we are doing in our Welsh cookery workshop on 1st March. Welsh rarebit is one of the most popular dishes on our breakfast menu and our recipe uses the fantastic Snowdonai Original cheese. We also use beer brewed in Conwy by the Conwy Brewery. It is a lightish bitter but you could also use a darker beer or milk for a non alcoholic version. This recipe makes a great weekend lunch or can be turned into a sophisticated starter for a dinner party. It has the added advantage of being prepared in advance.

Smoked salmon and Welsh rarebit muffins 4 muffins 4 slices smoked salmon 375g grated Snowdonia Original cheese 75 ml beer or milk 15g plain flour 25g bread crumbs 2tsp mustard 1 egg and 1 egg yolk Melt the cheese in the beer in a saucepan over gentle heat. Mix in flour, breadcrumbs and mustard and cook gently. Remove from heat, add egg and stir well. Place in fridge to cool. When ready to serve, slice muffins in half through middle. Toast the outer sides lightly. Place slice of smoked salmon on each uncooked side and spread over rarebit mix. Return to lowest position under grill and cook until bubbling and lightly browned. Garnish plate with salad and serve. Note the rarebit recipe makes more than you need for this recipe for 4 and will keep in fridge for 3 –4 days.

From The Revd Adrian Copping I am really looking forward to my first Easter in these parishes. Easter is sometimes described as the 'crowning glory of the Christian year', and so it is! It is in the Cross of Christ, and his Resurrection that the true meaning of the Christian faith is seen. It is in the events of Easter that the world, and each of us as individuals, is invited to come to terms with who this Jesus is the one who entered the world we know through a human mother, and by the power of the Holy Spirit, was born as a baby in poverty in Bethlehem on that first Christmas. In the world today there are many people who accept the figure of Jesus as being inspirational, as being a great teacher, a great moral thinker, but who reject the possibility that he is indeed not only human but divine. The well know writer C.S. Lewis (he of 'Lion, Witch, and Wardrobe' fame and many others') writes this in his book 'Mere Christianity'. 'I am trying to prevent anyone saying the really foolish thing that people often say about Him: "I am ready to accept Jesus as the great moral teacher, but I don't accept His claim to be God." That is the one thing we must not say. A man who was merely a man and said the sort of things Jesus said would not

be a great moral teacher. He would either be a lunatic - on a level with the man who says he is a boiled egg - or else he would be the Devil of Hell. You must make your choice. Either this man was, and is, the Son of God: or else a madman or something worse. You can shut Him up for a fool, you can spit at Him and kill Him as demon; or you can fall at His feet and call Him Lord and God. But let us not come with any patronizing nonsense about His being a great human teacher. He has not left that open to us. He did not intend to'. Easter is the crowning glory of the Christian year because it is here that we celebrate the triumph of the resurrection, the victory of light over darkness, and the triumph of life over death. It is at Easter that we see that the way of the cross - of generosity, loving justice, healing, and self-and sacrifice - is the way of God. It is at Easter that, above all other times, Christian's gather together to proclaim the great message that Jesus, though he may have died, is indeed risen to new life and that we too may share in that life. It is here that the true meaning of the life of Jesus Christ is revealed. May I wish you a blessed and joyous Easter! With every blessing Adrian

News & Views 19

And a note about our Lent and Easter services Throughout Lent, with Christians around the world we have been invited to prepare for Easter. As a group of churches* we will meet in various places for services of compline (night prayer) and for Maundy Thursday, when there will be a vigil after the service. On Good Friday in each church there will be a devotional service of an hour. On Easter Eve a service of light. For us as a group of five parishes together as such for the first time Easter Day presented no difficulty in principle - it's the biggest celebration of the year! The practical, physical arrangement of how best to do so, however, was more intriguing. Several options presented themselves but some less satisfactory than others. We could have had a service in each individual church but only if we brought in retired clergy (not very fair on them and perhaps not entirely appropriate as we gather to celebrate within the

L Flintshire Driving School

context of what God has given us in this particular place and time), or if we had very brief services (hardly appropriate to the major event of the Christian year!), or if some churches had main services either very early in the morning or in the afternoon (which there did not seem to be too much enthusiasm for). So this year at least we travel to come together as a group of churches to celebrate that journey Jesus made from manger to cross and to empty tomb. Our Easter Sunday Holy Communion will be at 10.30 am. at St Mary, Cilcain (a location chosen for this year as there is a baby to baptize there). I do hope you will join us for what promises to be a very special occasion - and if anyone has any difficulties with transport just look out for church notices or contact me! Maeshafn CC News All is starting to come together for the season. Nature Notes Watching two little egrets feeding on the salt marsh on the north Wales coast reminded me of the remarkable colonisation of Britain of these small white herons. Up to the late 1980s they were only seen as rare 'vagrants'. In ornithology a 'vagrant' is a bird turning up in a district where it is rarely seen, often a migrating bird blown off course. Then in 1989 they began to be seen in significant numbers. I remember going way out on the Ribble Marshes sometime in the 1990s to get a brief, distant view of one. I saw many in Majorca in 1995 but it was 1998 before I saw another in England. Essentially birds of the Mediterranean, they spread northwards through France before arriving in Britain, where they colonised the South Coast and first bred on Brownsea Island in Dorset in 1996. They continued to spread northwards and soon became quite common in coastal areas and bred in Wales for the first time in 2002. There are now about 150 breeding pairs in Britain and in winter, when we get winter migrants, the numbers swell to about 1600 birds. They inhabit mainly coastal marshes, feeding on small fish, crustaceans and water dwelling invertebrates. They are only about two thirds the size of the familiar grey heron but are pure white with two long nape plumes and other plumes on the back and chest and have a black bill, black legs and yellow feet, making them unmistakable. I mention all this because, although I see them not infrequently at the

coast, I was quite taken aback to see one on the River Alyn, below Plymog on 10th February this year. It seemed totally out of place as the habitat would not appear to be suitable for it. I have not seen it since so, perhaps, it was just passing through and had stopped for a rest. I would be interested to know whether anyone else has seen it. Cleaning out the bird boxes which I have in the wood and adjacent field suggested a good breeding season. Of ten 'tit type' boxes - enclosed boxes with a small entrance hole one was damaged but of the others, two had been used by blue tits, five by great tits and two by pied flycatchers. Although there were the odd egg or dead chick in a couple of boxes (quite normal) all would seem to have fledged successfully. Two other boxes designed for tree creepers had not been used. I have never had tree creepers in these boxes but they are sometimes used by blue tits. It is interesting to note the lateness of the season due to the bad weather over recent months. Last year at this time some garden ponds were full of frog spawn and I recorded nine wild plants in flower but this year, on the same date, I only found three but the hardy little snowdrop came right on time. When the weather warms up they will all come with a rush. An old grower once said to me "I've seen early springs and I've seen late springs but come June they are all the same". We shall see!
