Monthly recipe from CAFFI FLORENCE Welsh Rarebit CAFFI FLORENCE recently appeared alongside the celebrity studded Sketch in London’s Mayfair and the trendy Primrose Café in Clifton Bristol, as one of the top 10 places in the UK to go out for breakfast. The reviewers said : You’ll find Caffi Florence deep in the glorious Welsh countryside in north east Wales. It’s a great base to begin your exploration of this Area of Outstanding Natural Beauty and has won an award for its sustainable approach and use of local suppliers and ingredients. Enticing breakfasts include locally cured bacon sandwiches and Welsh Rarebit made with local free range eggs, Welsh cheddar cheese , Conwy ale and wholegrain mustard. So, it seemed appropriate that this month we would feature Welsh Rarebit as our recipe of the month. We prepare the mix and pop it in the fridge to cool and then spread it on toast before browning under the grill. You do of course need some decent bread to do it justice. To make an even nicer meal add a slice of gammon or smoked salmon under the topping. It is not only good on toast and we also serve it as a topping to black pudding and sometimes as a mushroom stuffing. Ingredients 375g grated Welsh cheddar cheese 75 ml beer or milk 15g self raising flour 25g bread crumbs 2tsp mustard 2 egg yolks Method Melt cheese in beer in saucepan over gentle heat. Mix in flour, breadcrumbs and mustard and cook until smooth and thick. Take off heat, add egg yolks and mix well.

After the Sunday service, goods will be taken to Save the Family. Although perishable goods are very acceptable (and look much more attractive in Church), imperishable goods, tins and so on, are actually easier for Save the Family to deal with. Llanferres Parish Gardening Club 36th Annual Show At the end of another difficult growing season, Llanferres Gardening Club Show welcomed its visitors with colourful displays of Flowers, Fruit and Vegetables, Art and Craft, Photography, Home Produce, Floral Art and Junior crafts. A reduction in the number of entries in the Vegetable classes was more than offset by an increase in the popular Home Produce section to contribute to a total of 568 individual entries. We were very pleased to see an increase in the number of competitors. The Judges were very complimentary about the standard of the entries and all our exhibitors are to be congratulated. The trophies were presented by Miss Norma Evans and Miss Margaret Jones, who also judged the Home Produce entries at the Show. Visitors enjoyed Alun Williams` display of woodcarvings and Tim Oulton`s vintage Hornby Dublo railway. Younger visitors were shown how to make model Black Grouse at the Denbighshire Countryside Services display organised by Ruth Calcraft. Conversation and refreshments were enjoyed in the area organised by Mary Barton. Charity stalls were organised to benefit the R.N.L.I. and St Berres` Church and the auction of produce was conducted by John Almond and his assistants, the proceeds of which will go to the O.A.P Welfare Committee. My thanks to Mrs Turner, Headteacher of Ysgol bro Fammau for her assistance, to everyone who helped with the setting up of the Show, the organisation on the day, the essential recording of the results, the judges, the exhibitors, and everyone who attended. David Jones Hon Show Secretary Gardening Club Meeting Next month`s meeting will be in the Village Hall at 7-30pm on Monday 11th October when Mr A Norman will speak on "Propagation

Maeshafn CC News Finally the end of the season, and what a miserable second half Maeshafn endured. We struggled to get a full team out on a number of occasions and it showed on the pitch. Our septagenarian Derek Parsons chipped in with a 3 not out in one game against Ruthin and became the oldest swinger in town to have played in the North Wales League at 71 years young. Having led the league for the first half and won every game, we proceeded to lose every game in the second half apart from one. With that said, this was the best ever finish for us and we ended up third in the league behind Bodedern and Llangollen. 3 more victories and we would have been promoted to face even faster and more fearsome bowlers/ batsmen. Congratulations to Jim Scarratt for one of the best bowling performances in the league for the season - 7 wickets for 19 runs against Ruthin, Tom Hall for 2 six wicket hauls and in the top 10 for

the most number of wickets, and Stu Applewhite for ending up in the top 10 for batting performances in League 6 with 66 against Rhewl. Lots taking place off the pitch - we are part of the tri quiz tournament thingy taking place over September, October and November, we are getting funding to support a coaching scheme to enable us to attract more youth to the side, our annual dinner will take place at the Druid when Steve Pugh remembers to speak to Jim and book a date and winter nets will start in January, hopefully on a Friday night, once I have remembered to book them! So another good summer of enjoyable away trips, evenings chewing the cud in the Miners about what might have been or what was, and Saturday afternoons stood on green fields across North Wales simply admiring the views. Anglesey Aluminium's ground must be recommended - next to the ferry terminal at Holyhead. Beautiful spot.

Nature Notes Last month I wrote about the scarcity of our most colourful butterflies and suggested that the Common blue did not have a second brood here in North Wales. I am happy to correct both statements. We did have a second brood of Common blues round the end of August although it was nothing like as prolific as I had seen in Oxfordshire, nor did it compare to the numbers seen in our district in June. Warm days in September brought out Small tortoiseshells, Red admirals, Commas, Painted ladies, Peacocks and others. I was particularly pleased to see the Small tortoiseshells as they have suffered a severe decline in recent years and there were fears for its actual survival, but this year they appear to have bounced back. Why there has been such a dramatic decline is not clear but there have been alarming reports in the press attributing it to a parasitic fly Sturmia bella. This fly was first recorded in Britain round about 1998 having spread from warmer parts of Europe. It lays its tiny eggs on the leaves of stinging nettle (the food plant of Small tortoiseshell caterpillars) and are ingested by the caterpillars as they eat the leaves. The larvae of the fly hatch inside the caterpillar and feed on its non vital body tissues until mature, when they break out of the dying caterpillar and pupate. It seems to favour Small tortoiseshells because their life cycles resemble each other more closely than Peacocks or other butterflies. There have been suggestions that the severe frosts experienced last winter may have

killed off the Sturmia fly but this appears unlikely, as its normal habitat in Europe also has cold winters. Also it is not known in what form the fly overwinters, as neither adults nor pupae (the only possibilities) have ever been observed in winter. There is a suspicion that it might have an undiscovered host in which it could survive. The small Tortoiseshell is believed to be the most ancient of butterflies as a fossil, 15 million years old, is virtually indistinguishable from the present butterfly. At this time of year one can often notice what looks like a ball of pink to crimson moss on the stems of wild rose. It is in fact the gall of a tiny wasp Diplolepsis rosae. This wasp lays up to 60 eggs in the terminal bud of the rose and when the eggs hatch the larvae begin to feed on the bud which causes (by a process so far not understood) the plant to produce cells rich in nutrients on which the larvae feed. Each larva lives in a separate compartment inside the gall. This feeding induces the production or more cells and the gall continues to grow until the larvae begin to pupate in October. The pupae remain in the gall and emerge as adult insects in May of the following year. In the past the gall was thought to have medicinal properties. Dried and powdered it was used as a cure for colic and toothache; as a diuretic; mixed with honey as a cure for baldness and placed under a pillow was said to induce sleep.
