Small town, big time

How a country craftsman flew under the radar to attract the attention of one of the world’s most luxurious brands.

T

he path to success is rarely straight. Few understand this like David Boucher. Boucher crafts bespoke mechanical furniture from exquisite woods and exotic material like Shagreen (stingray leather). His beautifully-detailed Art Decoinfluenced pieces feature secret compartments and panels that shift with precision at the press of a button. Now, in an Australian first, Boucher’s handiwork adorns Rolls-Royce interiors … and Boucher hasn’t trained a day in his life. Although it’s a world away from the family farm in Stanthorpe, Queensland, Boucher’s talent formed among the orchards, vegetable gardens and cattle yards of the 200-acre property. “Growing up, if you needed something, you made it; if it broke, you fixed it.” “My dad got sick of carrying firewood up the stairs and around the kitchen,” Boucher recalls. “So he got a transmission off an old truck, built four angle irons, made a big steel box with bearings, cables and a handle on it. We’d bring the forklift from the orchard, load a pallet of wood, wind her up then open the kitchen windows and put it in the fire.” When he wasn’t replacing the falling cattle yards—sketching them before building them from the virgin bush stretching across the property—young David Boucher read. When his peers lined up for school sports, Boucher would stand at the back to sneak unnoticed into the library, immersing himself in encyclopaedias and engineering books until the bus returned and he slipped back into the throng. Reading showed him that there is always a better solution for something, knowledge he applied around the farm. But at the age of 15, Boucher’s education ended after his father was killed suddenly at a rail crossing. The devastated teen ran away from home, heading north to Townsville where he took a job on a road gang and got into motorbikes, riding the “biggest, baddest bike, long hair and a knife in my boot, as you do.”

Eventually he ended up “mowing lawns for a crust” in Brisbane where he learnt the value of persistence. Applying for a job driving a backhoe with zero experience, the trial lasted half a minute, but to him it was “30 seconds worth of experience”. Next time he lasted a full minute. “I went to another one, and another one and another one, 50 job interviews. By the time I got to the last interview I had enough experience and I got the job,” he says. By the late 1970s, now with wife Margaret by his side, it was apparent digging holes was not a long-term prospect. Margaret reminded David he was skilled with his hands and suggested he make furniture. So Boucher constructed a set of bar stools from timber “liberated” from the subdivision he was working on, Margaret sewed the upholstery and they were propped in the front yard to attract prospective customers.

None came. Boucher had little choice but to find them, spending the next six weeks knocking on doors at dinnertime. “Every night I’d finish work, take my Stubbies off and put on a pair of jeans to try and look presentable,” he says. “I got all sorts of responses—some of them not very nice. It was scary, it was awful and I hated it, but I had to do something.” One evening a door opened: literally and figuratively. A man invited Boucher inside and bought six. Arriving home, he announced to Margaret, “I’m handing in my notice tomorrow, we’re in business”. The next day he kept his word and bar stools were followed by beautiful wooden breadboards in the shape of apples and pears. The budding entrepreneur borrowed money to attend a business seminar where he

met a man who suggested putting the breadboards on his stand at an upcoming gift fair. The stand turned out to be the biggest and busiest of the day. Squeezed by the entrance, Boucher took 600 orders. There was much to be done, a task made rather more problematic after alarmed neighbours reported the wood shop taking shape next door. The Bouchers were evicted, leaving David to simultaneously relocate his family, find a base for his business, hire help and fill his orders. It was worth it. The breadboards brought reorders, requests for different products, and a move from a shed to an industrial estate to keep up with retail and wholesale customers. “In very short order we were employing 24 tradesmen and making 300 lounge suites and 600 dining sets a month,” Boucher says. The company was brought to the brink in 1982 when a supplier went bust, taking Boucher & Co. down with them. Desperately trying to salvage things, Boucher inadvertently fell into the clutches of a crooked accountant who pushed the company over the edge. Boucher lost everything. Relocating to Dalby, about 200 km from Stanthorpe, he took a job making outdoor furniture and when that business folded months later, Boucher took it over—debt and all—transforming it into a restoration business. It went gangbusters. “Restoration taught me how furniture was made, pulling old pieces of furniture apart,” he says. “I learnt really quickly lots of things.” The more he learnt, the more he aspired to learn. By the nineties, the business moved to Toowoomba, employing nine staff as Boucher dreamed of being the best. “Who’s the best in the world? Rolls-Royce,” he says. “I would run everything past the Rolls-Royce filter, how would they do this? I’d never seen one so it was my best-imagined shot at what Rolls-Royce would do.” When business dried up along with the land during a drought, Boucher turned to local jeweller John McKinney who offered to exhibit some furniture in a store he’d acquired, Hardy Brothers jewellery in Sydney’s Double Bay. Just nine people turned up. One, however, ordered a cabinet and when Boucher dropped it off, he left with an $800,000 order to furnish the mansion. From there, word got out to the right people and Boucher & Co. soon had wealthy moguls and sultans flying into Toowoomba on private jets to place orders. Given the bespoke nature of the business, Boucher & Co. pieces were 10

ordered years in advance. When the global financial crisis hit and banks began to crumble across America, cancellations came thick and fast. In the space of two weeks, Boucher & Co. lost two years of forward work. “It was pretty terrifying because we had a word-of-mouth business that was global, we’d never advertised,” Boucher explains.

With no chance of letting the opportunity pass, the team got to work, trialling, testing, innovating. Taking eight months to develop a glue with a film less than one tenth of a millimetre may not sound like rapid progress but others had said it would need five years. The head of the Rolls-Royce wood shop predicted a decade-long development timeline for the entire project. Little over a year later, Rolls customers can order a Boucher & Co. interior.

Faced once more with a business dwindling to nothing a client offered some advice: tap into the one country set to escape the GFC relatively unscathed and where Boucher & Co. was virtually unknown—Australia. Boucher headed to the big smoke and put his furniture in a gallery in the well-to-do Sydney suburb of Woollahra. “Our stuff is not the cheapest you can get, it’s one of the most expensive and that it is because it takes so much time,” Boucher says.

There could only be one answer, but in reality the task was improbable at best, impossible at worst. In automotive design, every millimetre counts, even in a car as generously proportioned as a Ghost. Boucher

Somewhere along the way he has also found the time to write 50,000 words for a book chronicling his travails. Mulling over the possible title, he says one stands out: If You Refuse to Quit, Eventually You Win.

or anyone with so much as a passing interest in fashion the recent documentary film Dior and I documents the behind-thescenes goings on at the French fashion house. Specifically, it follows Belgian designer Raf Simons in the days after he was drafted to take the design reigns at the house following the sudden and rather controversial exit of John Galliano in 2012. With just eight weeks, rather than the conventional five months, to pull together his first runway for the label, Simons not only needed to create a collection that would honour the brand’s namesake, he needed to build a

working relationship with the artisans who create the magic at Dior’s Parisian atelier. The weight of expectation and history falls heavily on his shoulders. Since that first collection, Simons is universally acknowledged to have captured the spirit of the label’s founder and, importantly, added his own signature. Rather than spoil the magic, like discovering the tricks of an illusionist, the peek behind the curtain can only enhances appreciation of Simons’ ability to take on classic Dior cues—the flared bar jacket, feminine A-line dresses—and reimagine them in a modern, compelling way.

Burberry Prorsum I

n many ways, the fall 2014 ready-to-wear collection from Burberry Prorsum seems almost inevitable. Christopher Bailey, creative director—scratch that, the Yorkshire born designer has recently ascended to the role of Chief Executive Officer of the venerable fashion house—has been toying with all things art for a number of seasons now, in both his womenswear and menswear collections (the latter of which was peppered throughout the former so as to emphasise the synchronicity). Usually, he is playing homage to the great masters of Great Britain and their bohemian community, but here on the runway

in London, the Burberry Prorsum collection essentially became a glorious canvas of hand painted prints and patterns spattered across oversized totes, scrunchy peep-toe booties, scarves, maxi dresses and, of course, the signature trench coat. The vibrancy was balanced with delicate femininity in lace frocks and at one point the classic Burberry trench was reimagined in a fluffy chenille style textile, giving it the aura of a glamorous bathrobe, the type one might find hanging in an ultra exclusive hotel suite. He may be the big cheese now, but Bailey appears to be having more fun than ever.

ery often when a fashion house produces apparel for both men and women, each collection tends to subscribe to the Venus-Mars paradigm—as in the ladies are from the former, the boys from the latter and never the twain shall meet. This tends to result in two very distinct personalities within the label, divided down gender lines. Sure, both contain essential elements of the brand DNA, but they are studiously conceived to appeal to a disparate set of chromosomes, even to the point of being created via the pen of separate designers. Not so at the house of Gucci for Fall 2014, where Frida Giannini oversees both

collections. This season, one can picture the Gucci woman strutting down 1960s Carnaby Street arm in arm with her male counterpart, with her style borrowing from the same swinging London aesthetic. Her candy-coloured palette perfectly complemented his, in the same way her sixties-influenced knee-high boots and go-go dresses drew on a similar era as his outfits. In fact, she may well have nicked the opening look—a skinny stovepipe suit over a ruffled blouse—from his wardrobe, casually throwing her mossy-green fur shrug over the shoulders for good measure. Prada I

n her indelible way, Miuccia Prada isn’t really one for convention. She’s always fond of throwing a surprise or two in there, mixing influences or just generally subverting the system or perceptions or whatever she feels like subverting at any given moment. She’s Mrs Prada, it’s what she does. Pre-fall is a season that for most labels doesn’t ever graduate to the runway, coming as it does between the main game of spring-summer and fall-winter. But the Italian artista clearly thought her wares worthy of a twirl down the catwalk, showing the concise collection amongst her menswear

at Milan men’s fashion. And a good thing she did too, because the textural range deserved to meet the admiring glances of the front row. Long-sleeved dresses and hemlines on frocks and skirts falling just below the knee had a certain secretarial conservatism to them, but rendered in leather in unexpected teal and berry tones, they gained a distinct toughness. Add a boa in searing scarlet and it’s like a librarian moonlighting as a showgirl. When she adds her calfgrazing fur coat, the message is clear: she is the pimp and she’s in charge.

ith the departure of Marc Jacobs—the designer responsible for taking Louis Vuitton from maker of uber-desirable leather goods to a luxury brand making equally covetable fashion to go with the handbags—behind the French fashion house and the debut of his successor, Nicolas Ghesquièrie, still to come (this was Vuitton’s pre-fall collection, Ghesquièrie, ex-Balenciaga, took the reins starting with the fall collection), this was Vuitton in a sort of holding pattern. Appropriately enough, for a collection sandwiched between spring and fall proper. And the powers that be at the label took the opportunity to reinforce the brand values that Jacobs established:

a certain classicism informed with textural extravagance through beautiful textiles alongside a little fashion-forward savvy, this case in the form of utilitarian elements. The rich autumnal palette was occasionally punctuated with red and fuschia but it was a mostly laidback affair of languid silhouettes—think wide-legged trousers, long-line coats and cardigans—and tricked up classics like a trench coat cum cape. Key Vuitton cues such as the graffiti LV motif, given a new-season interpretation of course, stood as a reminder of the often exuberant past collections and a teaser for what may lie ahead.

PALM SPRINGS The rich architectural history of Palm Springs as experienced through its houses

P

alm Springs evolved as a haven for movie stars during the glory days of cinema. Thanks to a perfect winter climate and the stark beauty of it’s landscape, it was frequently used in films as a stand-in for exotic desert settings from Morocco to Arabia. As the stars came out to the desert to film their cinematic productions, they took a liking to the area and Palm Springs became well known among the Hollywood set as a relaxing place to escape the urban existence of Los Angeles. At a time when film studios controlled every aspect of their lives, actors were obliged by contract to stay within a two-hour drive of the studio lest there be a need for reworking a scene; Palm Springs is just at the outer edge of that limit. Having endured a deep decline in popularity during the second half of the twentieth century, Palm Springs today is experiencing a renaissance as a destination for sophisticated travellers, not least because of the city’s many exceptional homes, themselves tourist attractions embodying the history of Palm Springs through its architectural development. Today’s arbiters of good taste are a driving force behind the renewed interest in Palm Springs both for winter getaways and as a year round residence. GQ magazine director Jim Moore’s purchase of a house in a previously undesirable neighbourhood saw the entire area around it become highly coveted. Leonardo DiCaprio’s recent acquisition of the property formerly owned by big-band singer Dinah Shore may be construed as a sign on Palm Springs’ vast horizon that a new generation of Hollywood elite will be spending more time in the jewel of the desert. It was thanks to the advent of the automobile that Palm Springs became easily accessible, and the era of automotive evolution during the middle of the 1900s coincided with a similarly revolutionary change in building design, in no small part due to avant-garde European influences that found their way to the United States in the aftermath of Word Wars I and II. A pupil of fellow Swiss Le Corbusier, Albert Frey took the European sensibility for

clean lines and unadorned construction growing in stature through that continent’s Bauhaus and De Stijl movements and applied it to a radically different environment, the result being the foundation of the Mid-Century Modern architectural style so fervently appreciated in California and, now, throughout the world. Frey’s own home, a modest structure in a spectacular setting above the city, is still a sight to be seen for ardent architecture aficionados who make their way to Palm Springs in increasing numbers. Palm Springs neighbourhoods are well defined, each having its own interesting history. The area known as Sunmor has streets with names like Livmor and Playmor, “but no Eatmor or Drinkmor” as guide Trevor O’Donnell points out during a fascinating detailed commentary provided during one of Palm Springs Modern Tours’ escorted visits around the city. Like the company’s founder, Robert Imber,a Trevor is no junior intern but rather a highly knowledgeable expert in the field of architecture. Sunmor was originally the Palm Springs Military Airfield; airplanes were tied down on concrete parking circles (known in military parlance as hardstands) large enough in diameter to accommodate the aircraft. When the US government was looking to divest itself of the land, in came the developers to create Sunmor Estates. Smartly, the builders incorporated the parking circles into the curved streets and traffic circles that define the neighbourhood. Some of the original hardstands, complete with eyehooks for tying down the planes, are still visible today. Palm Springs Modern Tours offers small-group tours on a regular schedule, but private tours and customised routes can be undertaken to include such highlights as The Edris House, The Kaufmann House, and The Elrod House. The most expensive residential neighbourhoods in Palm Springs lie close to the city centre and to the south. Although there are relatively few enclaves in the windier area north of downtown that are considered top locations, Little Tuscany’s dramatic setting among the boulders is one of the most coveted in the city. As


elsewhere around Palm Springs, the dry, dramatic terrain serves as a blank slate for the creation of strikingly designed homes. Old Las Palmas, within walking distance of South Palm Canyon Drive’s central business district, is one of the city’s most elegant neighbourhoods. Though the plots of land are not huge, the houses sitting on them certainly reach impressive proportions, including the former homes of screen idol Kirk Douglas, Dinah Shore (now DiCaprio’s), and the house where Elvis and Priscilla Presley spent their honeymoon. Larger land parcels were to be had south of the city in previously undeveloped areas such as La Mesa and Araby Cove.

Private estates can be built surprisingly close to the city centre; the extremely luxurious compound of actress Suzanne Somers is one of them. Although Ms Somers is best remembered as the ditzy blonde from the 1970s television comedy Three’s Company, she is less familiar as a canny businesswoman who over the ensuing years amassed a personal net worth approaching $100 million US dollars. Her home in La Mesa reflects her good taste and good fortune; currently for sale at $14.5 million dollars, the Somers estate extends over a 73-acre hillside parcel which includes a guesthouse, an amphitheatre for private concerts, and an openair bathtub sitting in total privacy since no eyes can see onto the property, which is accessible only by a private funicular. The views out from the 900 square-metre main house, however, are expansive. One of the most famous homes in America, the former Palm Springs residence of actor Bob Hope, is also on the market at the moment. Although architect John Lautner was eventually so frustrated by Mrs Hope’s demands that he resigned from the project and requested his name be removed from any association with the house, the final result is a landmark home on ultra-exclusive Southridge Road currently priced at $34 million dollars, a drastic reduction from the original $50 million dollar asking price for this 2,000 square-metre home on six acres. While Lautner may have attempted to dissociate himself from his project, another of Palm Springs’ most celebrated architects remains tangentially involved in his homes decades after he first designed them. Bill Krisel’s valuable contribution to the history of Palm Springs residences is highly appreciated and the demand for original Krisel homes is still strong even today. The architect is still alive and is occasionally consulted on modern construction of his historic designs. When the newly built, Krisel-designed homes are

completed, Mr Krisel gives a final walk through the new home and signs the blueprints to authenticate his approval. Perhaps the most renowned of Palm Springs’ architectural developments is the so-called Butterfly House designed by Donald Wexler with George and Robert Alexander. Bill Krisel’s company, Palmer & Krisel, was the architectural firm that worked with the designers in the creation of these unique homes, unmistakable in their simple yet effective construction. Parking, breezeway, windows, wall―the pattern of the Butterfly House―was a smart floorplan that separated the various function areas while maintaining a flow in their lines, highlighted by the dip in the roof that gives the Butterfly House its name. The Swiss influence in Palm Springs goes beyond Albert Frey’s significant contribution. Another of Palm Springs’ architectural styles is known as Swiss Miss due to its A-frame structure based on Swiss chalets. Also built by the Alexander Construction Company, few examples of the Swiss Miss style remain. More visible in every way are the rotating cable cars that ferry passengers up and down the Palm Springs Aerial Tramway, offering sublime panoramas of the Coachella Valley and San Jacinto Mountains in all directions as the cars turn while ascending and descending. The brilliant minds behind this feat of modern-day engineering work at a trio of Swiss companies, one of which is called...Frey. Before the mid-century and its modernism came to Palm Springs, it was Spanish Revival that was the most fashionable architectural inspiration. A few examples of this early style are still found around the city, most notably in a mansion known as The Willows. Now the most eclectic hotel in Palm Springs, The Willows allows its guests to immerse themselves in history while forsaking nothing of contemporary luxury. Built to be the desert hideaway for a millionaire, later the longtime home of one of the most illustrious lawyers in America, today The Willows is owned by two doctors who have restored the property with extraordinary meticulousness. If not for The O’Donnell House next door, The Willows would be unchallenged as the best accommodation in the city. Not that The Willows’ owners are disappointed; they own The O’Donnell House, too. The O’Donnell House is located above a wall engineered by Native

Americans of the Cahuilla tribe who were experts in erecting stone walls without the use of any mortar whatsoever. Thomas O’Donnell, a frequent guest of the now defunct Desert Inn and great friend of its owner, Nellie Coffman, can be credited with the rise of Palm Springs as a playground for the rich and famous. Mr O’Donnell’s (formerly private) golf course, located now, as always, right in the middle of the city, was available for use only by himself, his personal guests, and eventually by guests of The Desert Inn. It was he who gave the money to Mrs Coffman to stave off the competition coming from her archrival, Pearl McManus, who in 1924 opened the sleek Oasis Hotel directly across the street from Nellie’s property. The Oasis was designed by Lloyd Wright, son of American architecture legend Frank Lloyd Wright but all that is left of his daring design the building paved the way for further innovation in Palm Springs’ modernist future is a rectangular tower adorned with a Native American motif. The Oasis was followed by El Mirador, which attracted so many Hollywood celebrities that the neighbourhood around the hotel, today used as a medical centre, became known as Movie Colony. Mr O’Donnell’s one proviso related to his financial gift was that a house be built on the property for his private use. Today the O’Donnell House is the only building in Palm Springs on the United States National Register of Historical Places. A superb home available for guests to enjoy as their own residence in Palm Springs, if only for a temporary period, the house and its splendid isolation are favourites of many an industrial titan and film star, including Academy Award winner Diane Keaton. Ms Keaton was so taken with The O’Donnell House that she collaborated with author DJ Waldie to create a book, California Romantica, devoted to the finest examples of Spanish-style Mission architecture. Across the street from The Willows is one of the most historic buildings in Palm Springs. Built in 1927, the George B Roberson House, former home of The Desert Inn’s manager and son of Nellie Coffman, is now home to the city’s most exclusive restaurant, Le Villauris, domain of chef Paul Bruggemans who traded his much vaunted Le St Germain restaurant in Hollywood for Le Villauris to come live in the desert full time. Maître d’hôte Patrice and manager Omar are as delightfully hospitable as Monsieur Paul, who founded

the restaurant more than forty years ago when the large fig trees shading the restaurant’s famous patio garden were mere saplings. Just next door to The Willows, The Palm Springs Art Museum and its Annenberg Theater are located on land once part of The Willows estate. Vienna-born Neutra (pronounced NOY-tra), a pupil of famed Austrian architect Adolf Loos (rhymes with ‘dose’), is yet another of the stars in a constellation of architectural talent who made their names in Palm Springs―much to the benefit of today’s residents and visitors. The culmination of Modernism from a visitor’s point of view is the annual Modernism Week held each February that sees some of 64

Chocolates ready for judging

H

ave you become glib about the gold medal on your label of wine? Do you not spare much thought for the shiny decal spouting the virtues of whatever it is inside as a beauty? Or perhaps you do? Above the marketing hype and brand desirability, the gold medals of Australia’s big agricultural societies are an independent nod of excellence from people who really know what they’re talking about, the food judges. Far away from the pluto pups, slushies and Ferris Wheels of the big shows, Australia’s food judges come together every spring and autumn to contemplate the crumble of a cheddar, the legs of a red and the sea in an oyster. Their goal? To find and recognise the best food in the country. The medals? “They are valid and well earned,” says Russell Smith, expressing the sentiment you would expect from someone who is chief judge of the Dairy Produce Show for the RNA in Brisbane. “The process by which we judge is what makes it valid. It’s strict and designed to ensure consistent and impartial results.” “But we can only judge on what is presented to us on the day,” he adds, explaining that foods such as milks and cheeses can vary enormously over the course of a year. “So, no, a gold medal isn’t a guarantee that you’re buying a

gold-medal product at the shops,” he explains, “But it’s a pretty reasonable bet that you are.” Earlier this year Unique Luxury went inside the judging rooms of the Sydney Royal on the grounds of the Royal Easter Show to see the process for ourselves. Here, judges chosen for their tastebuds and knowledge assess thousands of samples of food and drink from ice cream and oysters to honey and wine to establish what they believe is the finest food in the land. Categories include wine, dairy, aquaculture, baked goods and meats with each having around 30 judges, specialists in their field and trained in isolating and analysing flavours. None of the judges are paid, save receiving expenses for attending the events. It’s a call of duty of which the only reward is to be part of what Smith calls “a very serious business,” of objective and analytical assessment of what goes in people’s mouths. “I love it,” explains Smith. “When you get into your judging you really know where your palette sits.” Each food type has its variations, but each item is typically assessed according to a scale of flavour, feel, smell and appearance, with a breakdown of scores that roughly equates to half the points allocated for flavour and aroma, a third for texture and feel, and a fifth for presentation. Put that all together and if you score anything in excess of 90%, you’ve got yourself a gold medal. In case you were wondering, there’s no quota system for medals. Even in the good years, you’d be lucky, to get 5% of entrants being awarded the coveted gold. The night before the events, the judges start tuning their palettes for the day ahead, which means no spicy food nor toothpaste, which both taint the tastebuds. In the morning, again no toothpaste nor perfumes, deodorants, or scented moisturiser, it’s a light breakfast and on to the briefing area. It’s here that judges don their white coats and arrange hairnets as they are assigned their judging category, given clipboards (which have now been replaced with iPads) and wash their hands with unscented Sorbolene cream. “We judge like with like, for example vintage cheddar with vintage cheddar, chocolate ice cream with chocolate ice cream and so on,” explains Smith (who also at the Royal Perth Show) as pods of three judges at a time go

into the judging room to do the camembert-style cheeses. The room is bare, evenly lit and regulated at a constant temperate of 15-18°C. Laid out on a long white table are around 30 numbered samples waiting to be assessed. Each judge silently takes a dice-sized cube of cheese and examines it longingly before putting it up to their nose. Then the cube is placed into the mouth and converted into slurry with the tongue as the cheese is moved right around to ensure every taste bud is treated to the experience. With judging, it important to breathe, explains Smith. “It’s circular: in through the mouth and out through the nasal passage to give the warmed-up aromas a run over the receptors in the nose.” Notes are made, independent scores are given and samples are spat into spittoons as judges then cleanse their mouths with slices of baguette to scour residue off the tongue and green apple slices to neutralise the palette in preparation for the next sample. The process continues for hours as each sample is given the same long moments of complete devotion and contemplation of its virtues. Scores are collated and when the results are in, the medals are awarded, sometimes accompanied by a few raised eyebrows. As in 2013 when Aldi took home a swag of cheese, meat and wine gold medals from the Sydney Royal. “Look, I hate going into the shops myself, but the fact is they are sourcing very good Australian product and the judging process bears that out,” says Smith. It’s examples like this that demonstrate the impartiality of the process even in categories such as dairy where the source of the sample is made known to the judges. Wine judging, however, places blind tasting central to the whole process. Over in its pavilion, 2,400 wines this year were anonymously presented, by a team of 30 stewards, to the wine show’s 30 judges over a four-day period.

“It’s a pretty intense four days,” explains, the Royal Sydney Wine Show’s new chairman of judges, Samantha Connew. Because of the amount of acids and tannins going into their mouths, these judges use special toothpastes designed to protect their tooth enamel from the ravages of their job. around 120 wines each day. “We start at 8.30am and go through to about 4.30pm so it’s a full day,” explains Connew. This year, the general standouts were the 2012 Shirazes, Cabernets and Chardonnays. Connew explains that, in wines, a gold indicates absolute excellence, a silver is still excellent but missing a few elements and a bronze point to a good solid wine with no faults. Regardless, most who enter the competitions walk away with nothing. “There are certainly no medals awarded for turning up,” says Connew.

Aside from having their fingers on the pulse of the best wines in the country, the thing that gets judges like Connew excited is when lesser known producers throw their hats into the judging ring with something special. “For example, this year, a Sav Blanc from a small Western Australian winery in Yallingup not only won a gold medal but took the title of the best Sav Blanc in the show. It’s an extraordinary example of the style,” says Connew. It’s also an extraordinary result for the hardly-known Brash Vineyard who, until a couple of years ago were contract grape growers for the big vineyards. Now, in their second year of production, they have taken one of the highest honours in the industry. “As judges, it’s that sort of thing that really pleases me. In such a competitive wine market, to have that gold medal means so much more to them than to the big producers who have far greater resources.” “It’s a great wine and, most importantly, they’ve earned it,” she says. And so, it appears, do all the medals at these shows. If you love good food and the best of what Australia makes, it makes good sense to pay attention to them. U nique Luxur y

I

n the face of mass, machine-made commercialism, it’s a philosophy as rare as some of the diamonds that have passed through his hands, the worldview of a man who, after more than 41 years, still places his art at the centre of his business. It’s in his Italian blood, the distinction between working and creating. “Without craftsmanship, there is no value,” he says. “Everything else is just chasing money. It’s not pleasurable.” Rather than building a vast empire, Cerrone has chosen a luxury dynasty, a life he can enjoy while pursuing perfection through his work - quality, not quantity. Where others say, “it can’t be done”, Cerrone says, “try again”. As the largest handmade jewellery workshop in Australia, with 25 dedicated artisans among its 60 staff, the hHouse of Cerrone creates ready-to-wear collections and custom fine jewellery as well as extraordinary one-offs, like the $1 one million dollar necklace made for the Seville Expo in the nineties. Cerrone pieces sit in the Vatican, papal gifts on the occasion of Benedict XVI’s Australian visit, and its founder is the only Australian ever awarded the De Beers International Award, the Oscars of the jewellery industry - twice.

For me design is always a challenge. Every day there is a new challenge.

While the stars who wear Cerrone shine across the globe—Heidi Klum, Sarah Murdoch, Barbara Streisand, Celine Dion—the stars of the pieces themselves, the precious gems therein, are mostly Australian. In the hierarchy of the country’s treasures, among them opals and South Sea pearls, the coveted pink diamond is the ultimate, a rare beauty growing ever rarer. Before the decade is out, it will remain only in folklore and in the hands of collectors, after the Argyle mine shuts. As a ‘select atelier’ entrusted by Argyle to work with their prized jewel, Cerrone’s relationship with the mine dates to the 1970s when he first began working with coloured diamonds. Argyle had taken to giving its brown-hued stones, until then used for industrial purposes, luxurious names like ‘champagne’ and ‘cognac’. Suddenly, everyone wanted one. But the pink diamond is something else entirely. “Marketing is one thing,” says Cerrone, “but rareness is another.” Few things amplify beauty quite as much as scarcity. Take the classic Ferrari he bought in 1978, still with just 6,000 km on the clock, to Cerrone it is a sculpture. He doesn’t need to drive it. Besides, he wouldn’t dare risk marring its perfect automotive form; just to look at it gives him pleasure. “It’s not about the material things,” he says. “A beautiful car, a good pair of shoes, good clothes, good wine, good music—I appreciate all that because that’s the ultimate. But I don’t need it if you know what I mean. I’m not looking for it.” The ardour for all things beautiful is a consequence of growing up in Lanciano, Abruzzo, a central Italian region where life is measured in food, music, style and art rather than money and success. “It is a very agricultural, basic town,” Cerrone says. “The beautiful thing about the region of Abruzzi is you’ve got the mountains, you’ve got the water, you’ve got the beach and you’re only about two hours from Rome.” His family didn’t have any money, however, he says that it was the kind of life where it wasn’t needed: if one person had a chicken, another salt and a third some oil, there was a meal. At 12 years of age, young Nicola Cerrone was plucked from the farm and dropped 17,000 km away in the Sydney suburb of Leichardt, along with his family and a sizable chunk of the city’s Italian migrants who had built a familiar world in this foreign land. “When we first arrived here in Australia, I mean, we were strangers, we were scared even to talk on the bus. You couldn’t talk, you know, because you were looked at,” he recalls. “The Italians helped each other. There was no money exchanged. If you had to paint your house, they would come and then you’d go and paint their house. That’s really the beautiful thing about those days. It was very much an honest contribution.” With his wife Carmella by his side in the business (she designs her own collection) along with daughters Desiree and Dominique, Cerrone continues to thrive on the people who surround him… and learn from the mistakes of others.

“I’ve seen it in many Italian families where the father’s domineering,” he says. “You’ve really got to be open-minded so that we can all offer input. The other thing is that at home we don’t talk business. Out there it’s family. Because what happens otherwise? You talk about the same thing and you become small-minded.” Cerrone credits his own father—a peaceful man without ambition— for giving him the ability to find happiness in the simple things. The irony of being in the luxury business doesn’t escape him, but Cerrone insists he does it for others. “I don’t wear jewellery because I don’t need it,” he says holding out his bare fingers. “But I love to do it for others. I love to do it to make them happy. Any moment of the day I’m looking for happiness, to make my friends or my family laugh because that’s my pleasure. The other great influence on his life was William Fisher, the mentor described as one of the greatest jewellers Cerrone has known, “the one who made me realise what it means to be the best”. Swiss by birth and with a desire for precision, Fisher saw other jewellers fading away after a burst of popularity and he understood that longevity came from moving with the times. “That’s my style of work,” Cerrone says. “Like a musician. Music changes, tempo changes, young people come alive, they don’t want to hear jazz anymore, they want to hear rock’n’roll.” As he tells it, he was a stubborn teenager who got lucky when a friend of a friend offered an apprenticeship that was beyond the teenager’s imagination. He didn’t know anything about jewellery. His parents didn’t even have wedding rings. But he soon found himself handling it day in, day out, polishing and repairing precious stones and metals and copping his master’s cane across the fingers with every mistake. “That’s how it all started really,” he says. “People trusted you and gave you something to repair and fix and maybe when the engagement came along or when the christening came along they came and bought the cross from you, bought the chain from you.” The site of the one-bedroom Leichardt terrace Nic and Carmella bought in 1972 for $12,000, living for 12 years above the jeweller’s first workshop, remains ground zero for the business. Now taking in three adjoining properties, it houses a two-storey boutique, offices and the hallowed workshop where metals are shaped, gems are set and magic is made. It is also where new artisans come to learn as Cerrone fights to keep the trade alive. It’s an investment in the future, although he is disheartened that governments can’t see it that way. “I was an apprentice and look at how much I’ve contributed towards the country, on how much tax they’re collecting out of me,” he says. “They must not forget that. You gotta be able to teach your kids a trade so that you can cash in on them.” His own parents certainly did. They finally got their wedding rings, on their 50th anniversary. “Now my mother she wants to wear things,” Cerrone says. “She said, ‘people make fun of me, you know. You’re Nic Cerrone’s mother and you’ve got no jewellery?’” For the man himself, decades after making the journey from Lanciano to Leichardt, the passion for beauty and happiness refuses to fade. In fact, Cerrone makes every effort to stay connected with what drives him. “Every day I’m in the workshop,” he says. “That’s where I find peace.’

You may wax lyrical about a $300 bottle of Ch창teauneuf du Pape but what about tequila? Premium tequila is subtly infiltrating our bars and bottle shops and introducing drinkers to a liquor made to be savoured, not slammed. Mike Butler reports

equila used to be as fashionable as a hessian bag. Seen as the harlot of the liquor industry, it became perfect for wild, drunken nights. Earlier this century it was a cheap drink popular with workers in poverty-stricken barrios across Mexico. Fast forward to the 1980s. Other spirits were starting to impinge on tequila’s market and its makers saw that innovation was required to keep drinkers interested – and the solution was the creation of premium tequilas the world had never seen.

Nowadays the value of the global tequila market stands at about $2.2 billion – a rise of 7% in the last decade according to research by Wall Street research outfit Sanford C. Bernstein. While the market for premium tequila to be enjoyed in sips rather than shots is still small compared to traditional fine liquors such as cognac and whiskey, Australia’s consumption of tequila is following the world trend. In short, it’s rising fast. “The days of just slamming back tequila are over,” says Phil Bayly, who spearheaded the creation of the world’s first tequila bars Café Pacifico across six countries and is Australia’s foremost expert on the liquor. “Of course you can still drink it like that but premium tequilas are made to be sipped in elegant glasses like a fine wine or cognac. Over the past 15 years tequila has become a dignified and respectable spirit, seen to be sipped and enjoyed in the best bars all over the world.” What’s more it’s pouring into Australia, literally. The highly acclaimed and artfully packaged Clase Azul, arrived in Australia last November and is now in every upmarket restaurant in Sydney and Melbourne. Each bottle is handcrafted from fine ceramics, decorated with non-toxic paints so that each bottle is literally a work of art. In October Clase Azul will launch its super premium Anejo and Ultra brands in Australia. Milagro, another one of the most exquisitely packaged tequilas in the world, also arrived in Australia recently. Milagro (miracle in Spanish) bottles feature an interior glass sculpture, an agave flower created by a glass artisan, which also sets it apart as a work of art. And the quality of the triple-distilled liquor inside more than matches the packaging. Avion, another of the world’s best and most awarded tequilas (and the one drunk by the hip young dudes in the enormously popular television series Entourage) arrived on our shores only in April this year. The manufacturers of Ocho, a fine single vineyard boutique tequila, engaged Bayly to help bring it to Australia. Each year Ocho tastes completely different, as the terroir changes. A tasting Bayly gave Unique Estates of the 2008, 2010 and 2011 Ocho Blancos revealed vastly different flavours; from soft and fruity (the 2008) to vanilla and burnt orange notes (the 2010). Fortoleza is seen as one of the best tequilas on the planet and has also only been available recently. Another boutique Mexican tequila, Tromba, is also making inroads here. 138

Celebrities have also jumped on the bandwagon. In January this year Sean “Diddy” Combs was enlisted to help British distilling giant PLC to buy De Leon, a little-known premium tequila brand that sells in Hollywood bars for more than $1000 a bottle. George Clooney lent his name to a fine tequila, Casamigos. The reason why is that fine tequila demands the same treatment as good cognac or whisky – it deserves to be sipped, not slammed back in one gulp. Blanco, for example, makes a perfect aperitif. The more aged varieties, reposado and anejo, make lovely after dinner drinks. Blanco and reposado are also used in cocktails while anejo is so smooth it is better treated as a night cap. Each has its own complexities, depth, and style. Ranging in alcohol content from 35% to 55%, the premium varieties still give the same, well-known effects of other lesser tequilas, but in a more subtle way. “Tequila gives you more of a high than a drunkenness,” muses Bayly, articulating what many of us know well. Tequila’s genesis and manufacture is just as complex, a major factor that sets it apart from all other liquors. The agave plant from which tequila is made is one of the oldest in the world, estimated to have poked its head out of the ground about 12 million years ago. “No other liquor comes from a plant that old,” says Bayly. Tequila is made from only one species of agave, tequilana weber var azul (or blue agave), a plant so hardy it grows at both low and high altitudes. Agaves take six to eight years and sometimes 10 to reach maturity, the point where they can be harvested. “In comparison it only takes a year to grow a crop to harvest, ferment and distill spirits like gin and whiskey,” says Bayly. Importantly, like cognac or Champagne, tequila has an Appellation of Origin and must be produced in strictly controlled areas of Mexico in order be labeled ‘tequila’. Then there are all the different types of tequilas: Blanco (silver) – Unaged but rested for about 40 days. A good aperitif.

Reposado – Aged from two to 12 months in oak barrels. Smoother taste with less bite than blanco. Used mostly for margaritas. Anejo – Aged one to three years in oak barrels, and should be sipped like cognac or scotch. Extra Anejo – Highest quality due to longer aging. Strangely enough, we have not a Mexican to thank for these finer styles of tequila in the world, but an Austrian. Marketer Martin Grassl created the upscale Porfidio brand in the early 1990s simply because he loved tequila so much and knew a bit about selling. His tequila was the first to be packaged attractively, coming packaged in hand-blown glass bottles. Jose Cuervo, the leading manufacturer in the tequila game, had already done something similar by creating 1800 in the 1980s. The premium market was created and others followed suit. These days one of the most unique is Ocho, a tequila made in the old fashioned way by a third generation tequilero or tequila maker. Ocho is so smooth and balanced it even opens up as a wine would. Glassware has also embraced tequila, creating a special glass for sipping and savouring the premium offerings. These are a little like Champagne glasses and incredibly fine (and easily broken). So next time you head to your favorite high-end restaurant don’t be surprised if high-end tequilas appear on the menu. And as our taste test below shows, they are well worth savouring and sipping. Best of all, it’s hard to get a hangover from such well crafted liquor. Enjoyment is assured. Our taste testers were enormously impressed with high-end tequilas – and the fact that they felt no ill effects the next day. Why? “Tequila has to be double distilled by law and may contain no more than 300 parts per million of methanol which makes it very clean,’’ said Bayly. “And if you drink clean spirits it’s like drinking good wine – they are soft on the body.”

n the face of it, designer Kris Van Assche appeared to be in a rather sombre mood for the winter 2014 season. But look closer and the sober palette was merely a vehicle for Van Assche to revel in detail. Spotted, pocketed and chalk striped suits brought a fresh take to proceedings, while floral prints were reflected by the real live

blossoms slipped into the jacket pockets of less botanically-inclined suits. Slashes of leather brought a hint of rock’n’roll texture and shine to some pieces while elsewhere the fit and styling was Wall Street worthy. The subtlety of the collection explained Van Assche’s stated desire to focus on the man and not the brand by striking a balance between Dior’s heritage and formal Savile Row tailoring. Military and utility sought to wind back the formality while still keeping a studious eye on classicism and wearability.

Burberry Prorsum G

iven a title such as “A Painterly Journey”, one might reasonably expect Burberry Prorsum’s autumn winter 2014 collection to be full of colour and print. And it was, to an extent. The palette was largely autumnal with occasional spikes of primary and jewel tones. Silk scarves, slouchy totes resembling Persian rugs and the odd piece of outerwear were mostly tasked with fulfilling the arty brief, sitting atop a collection otherwise comprised mainly of staid charcoal, black and white. The clothes acted as a blank canvas, as it were, for the vivid accessories and coats. While vibrancy

was selectively applied, luxe texture was liberally employed, with flannel, tweed, shearling, cashmere and leather lending a richness to garments. Even mesh, in the form of tank tops layered beneath shirts and trench coats, got a look in. The collection continues creative director Christopher Bailey’s wander through British art history, name-checking Duncan Grant, Lucien Freud, Ben Nicholson and John Christopher Wood and paying homage to their bohemian ways with soft shapes, shirts unbuttoned to the navel and blankets nonchalantly draped over shoulders.

ucci and sex go together like fashion and air kisses—one can hardly imagine either existing without the other. Tom Ford reminded the world of this in a big way during his decade-long tenure at the label, subsequently reviving and elevating the brand to hypersexual fashion powerhouse, a position it hadn’t managed for some time (pardon the pun). Under creative director Frida Giannini’s watch, sexy has been gradually dialed down to something much more subtle and quietly confident. Where Ford, an American, would often draw on the hedonistic New York club scene of the 1970s, Giannini tends towards a more

European sensibility, exemplified in the autumn 2014 collection which seems more sixties London than seventies Manhattan. Rather than colours that shout, the collection opened with pastel, almost candycoloured hues (even leather pants moved away from their biker origins in pale blue) giving way to all-in-one black tailoring, the brand’s take on the monochromatic craze. The cuts were modish—skinny suiting layered over grey skivvies, utilitarian safari pocket detailing—and contrasted with structured, voluminous knits textured in coloured shearling. Sure it was toned down but they don’t call London ‘swinging’ for nothing.

t first, Miuccia Prada’s autumn winter collection seemed as though she had imagined what the Wild Wild West may have looked like had it been founded by Italians. Neckerchief casually knotted at the neck, duster coat, loose trousers… all that was missing was a hat and a holster. But this fleeting trip to Dodge City was merely a diversion to relaxed tailoring colour-blocked in deep, dusty and rusty tones. If it all seemed suspiciously conventional for a fashion house accustomed to challenging its front row attendees, never fear. Enter the space caveman, a vaguely futuristic being

strapped into quilted and fur-trimmed gilets over clean, kneeskimming coats before rolling back through Dodge en route to the safer, more familiar streets of the seventies. The comic book colours, though, held things back from being a retro pastiche—Mrs Prada would never allow such a thing—lending a necessary modernity. Although the apparent simplicity was seemingly at odds with the brand’s often challenging ethos, the collection managed a sort of subdued theatricality, a reminder that wearability is a cornerstone of Prada’s art.

nder the direction of designer Stefano Pilati, presenting his second season since defecting from Yves Saint Laurent in 2012, the Italian fashion house has elevated its most exclusive line with the new nomenclature Ermenegildo Zegna Couture. The focus, unsurprisingly, is on luxury, infused through the impeccable tailoring, noble fabrics and restrained palette of greys, deep blue, forest green and burgundy. As is often the case in fashion nowadays, the timeless suiting—dapper glen check and chalk stripe among them—was joined on the runway by sporty outerwear

in technological fabrics next to cropped and knee-length quilted parkas. Prints peeked from beneath double-faced lapels and were mix and matched in thee-piece suits. Turtleneck cashmere knits came with built-in scarves, woven into the sweater and falling loose from the collarbone. Texture came through in vicuna shirts and ponchos as well as the subtly shimmery ‘galaxy’ wool tailoring. Through his choice of textiles and meticulous adherence to the conventions of tailoring, it’s clear Pilati is taking the ‘couture’ part of the label’s name quite seriously.

t the house of Vuitton, pre-collection autumn winter 14/15 arrives in a palette suited to the season… earthy, fall-friendly tones covering the gamut of rich browns, greens and yellows one might expect in the midst of autumn, supplemented with a smack of teal on the French fashion house’s signature leathergoods. Slender tailoring was classic and straightforward, given a little kick by textured detailing: think leather, shearling trim, velvet suiting and fur collars. As is so often the case nowadays, the collection played to fashion’s obsession with sports luxe, with activewear-inspired

sailing jackets, anoraks and parkas sitting alongside conventional tailoring. There was an air of off-duty aviator about the collection, fitting for Louis Vuitton’s travel heritage—one can almost imagine the Vuitton man stashing his monogram trunk in the cargo hold of a twin-prop aeroplane as he embarks on his newest international adventure. Which is kind of the point of Vuitton.
