to Unique Luxury Magazine Volume 19. In this issue we showcase some breathtaking new properties, starting with our feature property, Terrara House. Steeped in colonial history and surrounded by magnificent gardens and lush dairy country, Terrara House is undoubtedly the finest historic mansion on the South Coast of NSW, constructed from local sandstone in 1904 and designed by Richard Moore. Terrara House is exceptional in scale and grandeur with 20 rooms over three levels and features impressive scale and period details throughout. The Estate covers 16.85 park-like acres, including 12 acres of manicured gardens. From the grand entry foyer and staircase to the 13 fireplaces and wide verandah with iron lacework, the house has been sympathetically and thoroughly restored over the years by previous owners and seen the addition of a separate commercial kitchen, a conservatory, 18-metre heated swimming pool, all weather championship tennis court and a luxury private spa. This issue boasts a variety of amazing articles revealing luxury products, artisans and destinations. Meet sartorial blogger, clothing entrepreneur and made-to-measure maestro Miles Wharton. Discover the story of Gin Lane which began with a pair of resourceful ex-pats, a freshly distilled spirit and a timely lightbulb moment. Jackalope gets its name from a rare hare but that’s not the only thing unique about the Mornington Peninsula’s newest and most desirable luxury holiday destination. Sarah Swan is a celebrated chef and a food artisan bringing a refreshing breed of global talent to the Northern Rivers region. We reveal why the launch of the McLaren 720S is an epoch-defining moment for both the world-leading performance car marque and the very notion of the supercar. Tom Putt is a new generation old-school photographer changing the way the world views Australian landscapes. We journey to the annual Monaco Yacht Show which represents the ultimate in prestige, curating the exhibition of more than 125 extraordinary one-off superyachts. S

teeped in colonial history and surrounded by magnificent gardens and lush dairy country, Terrara House is undoubtedly the finest historic mansion on the South Coast of NSW. Constructed from local sandstone in 1904 and designed by Richard Moore, Terrara House is exceptional in scale and grandeur. With 20 rooms over three levels and featuring impressive scale and period details throughout, the Estate covers 16.85 park-like acres, including 12 acres of manicured gardens. From the grand entry foyer and staircase to the 13 fireplaces and wide verandas with iron lacework, the house has been sympathetically and thoroughly restored over the years by previous owners. The Estate has also seen the addition of a separate commercial kitchen, a conservatory, 18 metre heated swimming pool, all weather championship tennis court and a luxury private spa. The original stables have also been restored to provide charming and comfortable guest accommodation. The magnificent stables predate the house itself, which was built on the site of a previous house that was home to the pioneering De Mestre family who first settled in Terara in 1836. The best known member of the family, Etienne de Mestre, was a celebrated racehorse trainer. Etienne regularly conducted private race meetings on a track on the Terrara House Estate and trained Archer, winner of the first two Melbourne Cups. His record of five Cup winners, all trained on the Estate, stood for almost a century. Terrara House was originally built for the Mackenzie family. Head of the family, Hugh Mackenzie, was a Scottish laird and Mayor of the Shoalhaven for 23 years. The current owners purchased the Estate as a weekend home in 2004. In this time, they have expanded the gardens to include formal parterres and an abundantly productive vegetable garden that is certain to be the envy of many. Terrara House is located an easy 2.5 hour drive from Sydney and is just 3 kilometres from Nowra and 15 minutes drive south of Berry. A delightful 20 minute drive along charming country lanes leads to the unspoiled beaches of Culburra, Callala and the northern side of Jervis Bay. The Estate is in easy walking distance to the Shoalhaven River, the historic village of Terara and Terara Public School.

It gets its name from a rare hare but that’s not the only thing unique about the Mornington Peninsula’s newest and most desirable luxury holiday destination, as Unique Luxury reveals.

The 7 metre high sculpture of a Jackalope by Melbourne artist Emily Floyd

T

he narrative of legends and the mystique that surrounds them have always proved an important focal point in the life of 29-year-old entrepreneur Louis Li. Lured to Melbourne from his Southern Chinese homeland by a desire to study film making, Li first encountered the mythical creature of North American folklore, the jackalope while on a European holiday several years ago. Best described as a jackrabbit with antelope antlers, Li felt an instant affinity with the rare long-eared mammal, believing that with its hybrid state of “poetic imagination, ambition and rebellion” it mirrored his ambitious desire to create a new breed of luxurious hotel. “The unusual, the unique and the unobtainable become the aim of our desires in a world where we seek experiences that rebel from the ordinary and excite us with their individuality. If luxury is defined by rarity, what is more luxurious than a creature so rare that it exists only in legend,” he says. It makes sense then that when Li, whose family are involved in land development and luxury travel industries in China, began searching for a name for his burgeoning hotel group, his muse was the first to spring to mind.

Occupying a generous 19 hectares space in Merricks North on Victoria’s picturesque Mornington Peninsula, the group’s debut property, also called Jackalope, is anything but your standard hospitality provider. Sited among the working 143-year old Willow Creek vineyard, it consists of a contemporary 46-room hotel, dining and high-end conference and event space. Fusing Li’s passion for art, design, dining and story-telling, guests are greeted by a seven-metre tall sculpture of a jackalope by Melbourne artist Emily Floyd cast among the various other curated works by local artists including Rolf Sachs and Andrew Hazewinkel. The $40 million property only opened its doors in April but is already drawing critical praise for the uniqueness – not to mention the diversity - of its offering. It was only open a matter of weeks before being named Hotel of the Year, New Hotel of the Year and Regional Hotel of the Year at the annual Gourmet Traveller Australian Hotel Guide Awards. Li says the success of Tasmania’s MONA afforded him the confidence that people would appreciate a daring, bold vision in this part of the world.

Jackalope hallway

Li’s hopes for the development is to create a “hospitality landmark” offering guests a transformative experience that is a mixture between the ideal and the surreal. Yet as with all ventures of this magnitude, the devil lies in the detail. Designed in collaboration with Melbourne architectural and interior design firm the Carr Design Group, the hotel has 46 luxury rooms, each with private terraces and the options of deep soak black stone bath tubs. Aptly positioned as ‘terrace’, ‘vineyard’. ‘dens’, ‘lairs’ depending on the standard required, King-sized beds are standard as are custom-made furnishings and bathrooms that boast rain showers and spacious vanities throughout. A complimentary minibar, breakfast and high-speed wireless internet are also included. In addition, there are four luxury suites ranging in size from 52m2 to 85m2. These studio rooms boast floor-to-ceiling windows and private terraces that connect guests to the rural surrounds. Features include custom mosaics and bathroom fixtures which are finished in bronzes and coppers while additional comforts include the option of either a kitchenette and indoor dining for six or an extended lounge configuration. Signature suites arrive lavished with loft ceilings, a

30m2 terrace overlooking the vines, a double-sided indoor/outdoor fireplace, a kitchenette, cocktail bar and personal wine cellar. A crystal and copper lighting installation crafted by Fitzroy-based industrial designer Christopher Boots illuminates the loft and highlights the profile of the made-to-order furnishings. Taylor Cullity Lethlean is responsible for the landscaping in grounds that include a yoga lawn alongside a black 30-metre infinity pool that gives the impression of “lapping the vines”, a private pool deck a heated plunge pool and a poolside pavilion that is available for spa treatments or private dining. On the doorstep of more than 50 nearby cellar doors and wineries, Jackalope also has its own conferencing and private event facilities. General manager Tracy Atherton says there are also a number of drink and dining options including a cocktail bar it calls Flaggerdoot, an 80-seat contemporary dining restaurant called Doot Doot Doot which has former Aman Resorts’ Guy Stanaway as its executive chef and Martin Webster (of Montalto fame) as its head chef. It has an ever-evolving five-course degustation menu and a dining space ringed by a 10,000-lightbulb installation by Melbourne-based chandelier designer Jan Flook that aims to reflect the bubbles of the

fermentation process and inviting guests to be part of the unique Jackalope story. A separate 100-seat winery restaurant, cellar door and provedore entitled Rare Hare offers all day dining. Produce for both dining spaces is sourced from local producers as well as from the hotel’s kitchen garden which occupies 900m2 of space and has over 35 herbs and vegetable varietals.

Jackalope room view

Priced to compete alongside such vaunted venues as Halcyon House, Qualia, Saffire Freycinet and Wolgan Valley, with prices ranging from $650 to $1,300 a night, the secret to the hotel brand’s success is including the amenities luxury property guests want without them having to request them with barrel tastings, private tours or breakfast amid the vines. However, for those eager to ensure their every whim is catered for, guests are also offered the option of pre-purchasing packages incorporating extras such as caviar and vodka martini upon arrival, a five-course tasting menu dinner with matched wines, champagne upon room check in, valet parking and room upgrades. Atherton says the Mornington Peninsula was crying out for a boutique like this, adding that there is nothing else built to this scale. “Our motto at Jackalope is ‘escaping reality’ and this really is true. As we are set on a vineyard with two restaurants and a bar – guests can literally come for 48 hours and not leave the property. This for me is totally escaping the real world.”

"NOW THAT OUR NAME IS BECOMING FAMILIAR ACROSS AUSTRALIA, OUR TARGET MARKET IS EXTENDING TO THE US, THE UK AND EUROPE." Head-hunted from Canberra’s 'Hotel Hotel' to take up the role, Atherton has more than 25 years’ experience in luxury hotels with operational experience in Asia, Europe and Australia. As such, she has been a key plank in Li’s plans to draw a team of high calibre hospitality staff with cool-climate wine specialist Geraldine McFaul as chief winemaker, Kiwi hospitality specialist Josef Murray (formerly of Kensington Street Social and The Clare Bar) as food and beverage director joining Webster and Stanaway on the hotel management team.

“The executive team is lucky to have worked in the high-end luxury hospitality industry for quite some time, so we have relied a lot on our networks. The dream of Jackalope has paid off with some incredible talent that has moved to the Mornington Peninsula,” Atherton says. Drawn by both a combination of the great staff, the prestige proposition and the outstanding amenities, Atherton says when the hotel first opened its doors, its focus initially was on the domestic market. But that's now changing to having a more global skew. “Now that our name is becoming familiar across Australia, our target market is extending to the US, the UK and Europe. The international travellers lead time is generally longer so I am imagining more and more international guests as of next year.” Having enjoyed so much success with its initial venture, Li’s group now hopes to extend the business with plans to create a further five hotels within 10 years, including one in Flinders Lane in Melbourne’s CBD in 2020 and then in Shanghai. same devotion to design, engineering and beauty that shape our cars, such as the Aston Martin Valkyrie hypercar project.”

Part of a creative collaboration with submersible specialist Triton, the car manufacturer believes the flagship project will “redefine luxury for a select few.”

The project is being handled by Aston Martin’s consulting arm which provides design, engineering and manufacturing services to select industries, distilling the brand’s essence into exciting new projects without compromising Aston Martin’s fundamental qualities.

While both Aston Martin and Triton have remained tight-lipped about the project, code-named Project Neptune, rumours circulating at the show suggest that the submersibles will be strictly limited edition with only a dozen available to purchase each year. It is understood the price tag will sit around US$3.95 million per unit.

The luxury car maker first entered the nautical design sector when it launched a powerboat, the AM37, in September 2016. Orders for the powerboat were taken at the Monaco Yacht Show last year and delivery took place in August with prices starting at €1.41 million (A$2.14 million). Aston Martin says it intends selling only eight to 12 boats each year.

While technical details around the submarine are still under wraps, the company said Project Neptune takes Triton’s acclaimed low-profile three-person platform as a basis for the sub. Aston Martin executive vice president and chief creative officer Marek Reichman said his team had created a vehicle with “inherently beautiful proportions”. “Project Neptune is defined by its sleek, elegant exterior. Mercedes Benz Motoryacht The interior of the Mercedes Benz Motoryacht

Combining the advantages of a sporty, open boat with the private sphere of a luxurious cabin cruiser, German automaker MercedesBenz chose the MYS to debut the interior of its unique motor yacht, the Arrow460 – Granturismo – Edition 1. While the concept was first launched at the show in 2012, it has taken until now for the collaboration between Mercedes and yacht builder Silver Arrows Marine to come to fruition, with this year’s event marking the first time the interiors had been seen to the public. While it may be on the small side, at just 46 foot, this yacht offers plenty of punch when it comes to versatility. Designed to resemble a saloon-style car, its large side windows are retractable and the windscreen can be raised, allowing passengers to enjoy the feeling of sitting in the open. In addition, beds and tables inside the yacht are extendable, so more space can be created as and when needed. The exterior of the Mercedes Benz Motoryacht

Offering 960 horsepower, the yacht has a top speed of 40 knots. Complete with wood trim throughout, the Granturismo Edition 1 also includes all the luxurious features one would expect with a boat of this kind including air-conditioning, a state-of-the-art sound system, ample wine storage and an ice maker. Suitable for day trips as well as for multi-day excursions the yacht offers room for up to ten passengers and is priced at around €2.5 million plus tax (A$3.79 million ex-GST).

MOKA - A Charter Yacht With A Touch Of Luxury Popular comedian and television superstar Jerry Seinfeld is known for his love of luxury cars. What few people know about him though is this passion for prestige also extends to the pleasures of cruising. In early 2016, Jerry, wife Jessica and the couple’s three children took delivery of a new play thing in the shape of a 138-foot super yacht they called Moka. The first expedition-style yacht built by Italian superyacht maker Sanlorenzo, Moka is a yacht able to negotiate the world’s seas in any weather. The superyacht can carry up to nine crew and is capable of cruising autonomously for three months without the need for refuelling, thanks to a 50,000-litre fuel tank and twin 1,300-hp Caterpillar C32 ACERT engines. But it’s her custom-made interiors where all the magic happens from a charter perspective. Included as Seinfeld’s request is a glass-enclosed 4.8 x 2.5m swimming pool, bar, sauna and steam room all set amid a large Teak deck. When free of the array of onboard toys – which extend to tenders, speedboats, fishing boats, jet skis, water skis and dive equipment - it converts to a generously-sized beach club, complete with ottomans, folding chairs and tables, and large round sun loungers.

The owner’s suite is one of five aboard the yacht with the remaining cabins - two VIP staterooms and two double/twin cabins - all located on the lower deck. All blankets, cushions, and bed linens were customised by Italian luxury design company Ivano Redaelli, while this level also plays host to a fully equipped gymnasium. Bleached American oak, mahogany, and teak form the basis of the luxe interior furnishings while the main living and dining space revolves around a centre island, similar to a professional kitchen, allowing kitchen staff and crew to work fluidly A mini herb garden in the galley offers fresh fragrant herbs while portraits by Italian painter Tatiana Villani and glass sculptures by Hungarian artist Peter Botos are also spread liberally throughout the space. Generally found cruising around the Mediterranean and the Caribbean, and capable of sleeping 10 guests overnight, Moka charter rates range from €165,000 (A$250,000) to €180,000 (A$273,000) per week plus expenses.

Described as a floating palace, the Majesty 155 measures 47.6 metres and is currently the largest superyacht made by the award-winning manufacturer. Fully customisable, she is built from a reinforced composite hull and superstructure to an in-house design. Named ‘Best Asian Built Yacht’ at this year’s edition of the Asia Boating Awards, the Majesty 155 has been repeatedly recognised for her ability to combine unparalleled seagoing performance with timeless luxury. Her power comes from a pair of 2,012hp MTU engines that allow for comfortable cruising at 14 knots, with a top speed of 17.5 knots. However, when trimmed back to her economical speed of 11 knots, this yacht boasts a maximum cruising range in excess of 4,200 nautical miles.

At last year’s show, Gulf Craft announced plans it would begin manufacturing yachts longer than 50 metres in length while unveiling the designs for a 53-metre Majesty 175 and a 61-metre Majesty 200. At this year’s show the company confirmed construction of the Majesty 175 had started, with a completion date set for the second quarter of 2019. Dutch shipbuilder Damen chose the 2017 instalment of the Monaco Yacht Show to launch its latest vessel – New Frontiers – a new evolution in its yacht support range. At the forefront of an emerging trend in the superyacht market thanks to their support vessels’ potential to extend the capabilities of their mother yachts, the show marked the first time Damen has debuted a vessel with dedicated owner and guest accommodation. Together with increased storage and stowage capacity, the 55-metre vessel also offers a helipad capable of landing and hangering much larger helicopters. Commercial Director Rose Damen said New Frontiers was, as its name suggests, “ripping up the rule book”. “It’s still a Yacht Support vessel, but you can’t put this vessel into one category or another – and that reflects exactly the wishes of our clients. They want their holiday to be about freedom and spontaneity. Whether it’s a weekend dive adventure trip away from their superyacht or enjoying two locations at once linked by helicopter,

it’s all about unforgettable experiences and freedom.” With a speed of 20 knots and a range of 5,000 nautical miles, Damen’s design team have raised the bar in terms of flexibility in the support vessel category. Together with an owner suite on its main deck, New Frontiers has a total of three suites capable of accommodating up to six guests. In addition to a 30m2 lounge and dining area, it has an Aft adventure centre with large stores and extra accommodation for four staff, pilots, security and guides. Its helipad and main deck area covers approximately 190m2 and it has standard fittings for modular tender cradles and containers. It is technically ready for A-frame installation which will help it launch and retrieve submersibles. Innovation is also key with reduced draught for operations in shallow waters, updated installations for smooth marina operations and a performance knuckle-boom deck crane with 12 tonne capacity. The story of Gin Lane began, as only the most flourishing of all enterprises do, with a pair of resourceful ex-pats, a freshly distilled spirit and a timely lightbulb moment, as Unique Luxury discovers.

I

t is difficult to imagine that English artist William Hogarth would be best pleased with the efforts of his Sydney-based compatriots Lindsay Silcox and Paul Smith. Having dedicated many hours working to create a unique etching depicting the merits of English ale as against the evils of “foreigners” gin, it is assumed he’d be a little upset upon learning that nearly three centuries after his death Silcox and Smith would borrow the name of his works to promote sales of the juniper spirit. But while debate still rages over whether the artist’s efforts were in fact satirical, the one thing not up for dispute is that Gin Lane’s evolution from a prominent international art work to a thriving online retail business, has proved a successful one. The latest in a line of digital disruption enterprises to have launched in recent years, the concept behind the business sees 37-year-old Silcox, 41-year-old Smith and their small but passionate team curate only the best craft and boutique gins from across the country before delivering them directly to consumer doors. Offering a multi-tier membership structure, customers can elect to be either an Enthusiast (which results in them being sent one bottle of premium craft gin per month) or a Curious where they are sent one bottle every two months. Alongside tasting notes and drink recipes, each package arrives with extensive background notes on the distillery, detailing everything from the distiller’s background and interests outside of the trade to the individual manner in which the chosen product is processed, packaged and distributed. Silcox, who has a marketing and communications background, says being brought up in the United Kingdom both he and Smith, Gin Lane subscription box with Four Pillars Navy Strength Gin

72

w w w.uni queest ate s. co m. a u

a trained actuary and financial services specialist, had a healthy respect for gin as a result of being surrounded by it from an early age. While G&T is something of an English institution, particularly among the country’s middle classes, Silcox says he didn’t develop a taste for it personally until getting much older. “It is hard to overstate how much a part of the fabric of society gin is in the UK. At the moment gin is in the UK Basket of Goods – a notional basket of the 200 most popular grocery items that the national statistics office uses to measure inflation. It’s one of those essential items and while neither of us grew up in alcoholic environments, we both grew knowing that in a social sense at least, gin was always around.” The pair, friends after meeting through Silcox's wife, first devised the Gin Lane concept two years ago having earlier made the decision to partner in a new venture. After catching up for a BBQ and discussing their mutual enjoyment of the clear spirit, they latched onto the idea of designing a business in an emerging industry and began bandying around the idea of launching a bar or starting up a distillery. As the evening progressed so too did the amount of gins going south. At the time, Silcox happened to be a member of a whiskey club with a business model that revolved around memberships and alcohol home deliveries and, after a few more drinks, the pair decided there was no reason why a similar approach would not work for Australia’s juvenile craft gin industry. “We had to have something that we could actually operate in and around the jobs and the work that we had at the time. I was Sydney distillery, Poor Toms’, dry gin and ‘Fool Strength’ gin

still doing marketing contracting work at the time and Paul had just started a business. We needed an idea that was sustainable but still held interest for people. We were passionate and were a little bit knowledgeable but weren’t coming at it from an industry perspective which meant that we made lots of mistakes but also had an approach different to that of our competitors.” Once the product was decided upon, next came the name and within two weeks of that fateful BBQ, the wheels had been set in motion and Gin Lane was on its way. Soon after settling on the title of their business, the pair made another clever decision when they opted to apply interstate for their liquor licence to avoid what could potentially prove a much lengthier and significantly more expensive wait in NSW. This meant that rather than an 18-month wait, the business was operational around six months after first being conceived, allowing the brand to take advantage of the embryonic stages of the early spirit distilling and home production sector here. “At that time, the boom in craft gins was very much taking place in the UK and Australia was starting to come up from that perspective also, just not as much as it had been in the UK. We didn’t really know what the scale of the industry was here, where these gins were when we started out but we knew enough to know Australia had some really great options out there.” Just two years later and their timing has once again proved spot on. Australia is flourishing in the production of new and old spirits with distilleries popping up everywhere from Adelaide to Byron Bay and Melbourne to Kangaroo Island.

Interest in the sector is being further driven by the fact “incredibly talented” distillers are now adding uniquely Ocker flavours, such as lemon myrtle, finger limes and lilli pilli, to help differentiate them from competitors. Yet despite this initial success, there is still ample room for growth both domestically and internationally, Silcox says. “It would be fair to say it is still an immature industry here and that is because when you look at the sheer growth that’s happening, there are a lot of distilleries that have opened but they don’t have a lot of reach. They’re not in a lot of bars and a lot of bottle shops. So we’ve got a long way to go with craft gin in this country. There are a couple of bigger players in comparison to the rest of the industry here that when you look at who they are competing with on a global sense in terms of the Hendricks, the Tanquerays, the Bombay Sapphires of the world, even our biggest gin distilleries here are just very, very small compared to them and a long way off being classed at that same level. What I think is more likely to happen is those distilleries that reach some sort of scale from a craft perspective will more than likely be bought up by one of the bigger players, the Diageos of the world for example, simply because they’re operating in such a tough environment.” The average price of gin in this country is high regardless and that comes down to excise, Silcox says. An average price of craft gin in Australia is about $80 which appears exorbitant when compared to the price of premium international brands. For every bottle produced in Australia, the government charges around $30 in taxes, made up of both GST and excise. Distillers are required

to pay that excise upfront, based on each product’s alcohol percentage and quantity, he says. “The distillers are paying that before that bottle even lands on a shelf in a retailer and then it sits there for however long before it sells. It’s why it’s a very tough industry and it makes our product difficult in some respects to compete because if you don’t know gin and you don’t know why that product is the cost that it is, you might go for the [cheaper offering] because while they are good gins [the average customer will think] ‘why should I pay $15 or $20 more for this Australian one when I can get a perfectly decent one that costs significantly less?” Eager to help push and promote the home-grown cottage gin industry as much as possible, Silcox says Gin Lane will continue to source only Australian gin while supplies are in abundance but will inevitably ship an international gin “at some point.” Currently sitting at around 200 unique memberships, Silcox says the growth achieved by the brand has been organic which has been a deliberate strategy by the pair to offer only premium gins to only a select customer base.

"WE’RE NOT AIMING AT BRINGING CHEAP GIN TO PEOPLE AND BARGAINS, WE’RE REALLY AIMING AT PREMIUM PRODUCTS." Silcox says Gin Lane could have a lot more members if it operated a more transactional business model that people weren’t as committed to “But then we also wouldn’t have the benefits that we’re able to bring people which is by having a reasonably tight and premium group of customers, we’re able to negotiate better with our distilleries.” “We’re not aiming at bringing cheap gin to people and bargains, we’re really aiming at premium products but it means we can confidently go to a distillery and say ‘hey we’ve got this group of people who really love gin, they are interested in receiving a bottle regularly’. We’re not ordering six bottles here and there to satisfy the demand when one sells, we’re ordering well over 200 bottles in one go which, for a small distillery, is a really significant sale. It can really make a difference to their year.” Text 'GINLANE' to +61 428 475 311 for more information

triptych of vibrant fuchsia, elegant white and electric blue defines Givenchy’s Spring pre-collection with a freestyle mix of lace, tulle and mesh.

Classic cocktail sandal in black suede with silver pearls - $1,750 Mini Antigona Bag in off-white grained leather - $2,400

Strass brooch in rhodium metal with pink Swarovski crystals - $1,100

Givenchy sparkle sunglasses in black acetata, crystal Swarovski strass and brown lenses - $750 Strass earrings in rhodium metal with pink Swarovski crystals - $1,850

In fuchsia, the delicate diaphanous fabrics were employed on a range of garments, such as floor-grazing trousers, and cocktail dresses with handkerchief hems. Created by the Givenchy inhouse designers, there was no vacuum of star-power left behind by the departure of Riccardo Tisci. The fuchsia lace evening gown embroidered with a shower of petals will be fought over by celebrity stylists for red carpet rights. The pure white subcollection whispered elegance with graphic touches and plays on transparency. In lace, silk, cotton and cashmere, the white lines were structured and pure. A trench-style coatdress with diaphanous sleeves and an all-over lace jumpsuit with a capelike detail, were dreamy in snow-white purity. Then there was a graceful layered shift and a white trouser suit emblazoned with gold ‘Givenchy’ lettering. A third royal blue offering had some of Tisci’s urban gothic trademarks, with multi-pocket anoraks combined with thigh-high lace-up electric blue boots. Also tangled up in blue denim and lace was a swingy, flounced denim skirt, brassiere top and jacket cinched into a peplum shape. Unique Luxur y

C

hannelling wild and ancient femininity, linked to the magic of the earth, artistic director Maria Chiuri’s first resort show for the house was profoundly female. The new design matriarch again mined Dior’s history, and appropriated it to tell a gripping story of the contemporary woman who runs with the wolves. The discovery of the primitive rock painting in Lascaux cave, in 1940, had a big influence on French artists of the time. In 1951, Christian Dior appropriated these rock paintings in a collection with allusions to primitive female depictions such as the Willendorf Venus. Chiuri returns to the Lascaux cave for inspiration and extracts from its depths prehistoric wolves, female handprints and magnificent sequined embroideries in California desert shades. Her silk jacquards were an extraordinary colour – the ochre, almost gold in colour. The rock paintings, depicting the bull, bison, ibex, and horse, which wandered France 20,000 years ago – were delicately embroidered on translucent tulle. Commanding charcoal drawings of horses were printed on earth-tone dresses with tassels and plunging necklines. Bustier maxidresses in traditional Native American weaves worn with suede fringed jackets were more Californian frontier-woman than French cave-dweller. The Cordovastyle hat which finished of all the collection’s garments propelled the look even further south. The naïve embroidered folk art and tarot motifs from her previous collections were again used, bringing a shamanistic intensity to the wild woman collection. Carcasses, wolves, flowers and goddess lion-tamers, were embroidered on delicate fabrics with labour and love. The creative force of the divine feminine was unearthed from its cave and rightly elevated for the contemporary Dior woman at the centre of the universe. 86

he fusion of the urban and the natural that so pervades Japan served as the inspiration for Nicolas Ghesquière’s collection. The show, set in the otherworldly Miho Museum, nestled in a hidden valley near Kyoto, could not be further from Paris. But after all, the LV woman is all about travel and this location provided the perfect cinematic backdrop for the collection, with its catwalk strung between mountains. The collection stitched together Japan from tradition to modernity, between a noble ancestral civilization and the present, between vibrant cities and delicate landscapes. The garments recall samurai armour, figurative engraving, inked landscapes, ceremonial dress, martial arts robes, and melancholic Japanese film traditions. Prints were designed in collaboration with the cult designer Kansai Yamamoto, who paved the way for an entire generation of Japanese designers by presenting his work in France. He is better known for designing the costumes for David Bowie’s alter ego, Ziggy Stardust. The graphic prints were combined with sleek samurai styled tailoring and short hemlines. Interwoven jersey and leather sweaters recall the armour of Japanese warriors. Evening dresses gleamed with theatric gold. Delicately crafted obi belts became the fabric of tapered trousers. Handbags and clutches were decorated with Kabuki masks from the classical Japanese dance-drama tradition. The show, with its scale and story, was worth the journey deep into the Japanese mountains and deep into the Japanese collective conscious. Unique Luxur y

G

et out the red lipstick and start your engines. The Miu Miu Resort 18 collection cabaret show at the Paris Automobile Club, was high octane grease monkey glam. It was all about the jumpsuits which doubled as body-repair-shop uniforms. The show ran the full gamut of onesie options: There were ’40s Rosie The Riveter gingham coveralls at one end and speedy orange knit rompers at the other. At a time when everyone is doing jumpsuits, these stood out as playsuits with purpose. The addition of round two-tone fannypacks added to the utilitarian pit stop look. The collection eventually changed gears into sophisticated glamour. There were ’40s silk blouses with crystals at the shoulders, and bedazzled racing patches. Then there was that mink coat with racing stripes. Fittingly, Marylin Monroe’s “Diamonds Are a Girl’s Best Friend” was the underpinning soundtrack of the show. The result was more Speakeasy than runway show with Miu Miu it-girls seated at café tables heavy with champagne buckets. Given that the automobile club is men only, you can only assume that the location was the starting point for the provocative party collection. Miu Miu is famous for bending the rules, and this collection was like a party girl revving her engine at the lights, looking for trouble. 90

rada’s resort collection was total escapism. Think velcro-heavy nylon sportswear teamed with dreamy luxe pieces. Transparent sherbet-flavoured fabrics worn with the new slingback Prada sneakers, for example, broke all the rules. There was a voluminous-sleeved nylon blouson teamed with knee-high sports socks. But don’t sweat – the Prada woman was not there to play sport, preferring merely there to play with the fabrics associated with physical prowess. The addition of firebrand bad girls Bianca Jagger and Courtney Love in the show’s front row only added to the collection’s celebration of reckless femininity. Backstage, Miuccia Prada said she found “the lightness and the industrial very inspiring, and I wanted to work on the contemporary but somehow sport, a kind of metamorphosis into an elegance – an elegance or sport, or vice versa.” One couldn’t find a lot of sport in the sequin-encrusted necklines and ostrich feathered cuffs or the pleated skirts in candy store pastels cut from transparent Japanese fabric. Branded underwear shouted from beneath ruffle-ribbed blouses and hyper-light mesh skirts. Feather headdresses, pastel mini dresses, and strappy gold sandals had star value, but if there was one item which might get the Prada it-girl breaking a sweat, it would be the new slingback Prada sneaker in apricot and marshmallow tones. Driving THE NEW SUPER CAR ER A

The launch of the McLaren 720S is an epoch-defining moment for both the world-leading performance car marque and the very notion of the supercar, as Unique Luxury discovers.

Un i que Luxur y

105

A

s the intro model of the second-generation Super Series - the product family at the heart of the McLaren brand – extraordinary lengths have been made to ensure the 720S represents a paradigm leap in form and function. Lighter, faster, more dynamic and simply more capable than its McLaren 650S Coupe predecessor, the 720S is a stunning new interpretation of McLaren design language, driver luxury and performance DNA. The signature McLaren dedication to aero dynamism is at full torque as the sleekest of 'shrink-wrapped' bodies, like a Brancusi sculpture in the way it slices shapes in the air, adheres itself around a luxurious, driver-obsessed cabin – replete with the finest leathers and switches crafted in aluminium – to afford unparalleled space and visibility. One of the key points in the design is the absence of radiator intakes on the side of the car; this function is carried out by the unique ‘double-skin’ aerodynamic form of the dramatic dihedral doors which open upwards and when closed channel air to the high-temperature radiators that cool the mid-mounted engine. All this built atop a revolutionary carbon fibre active chassis system – the Proactive Chassis Control II - that weighs in at just 1,283kg but is heavy on driver choice with Comfort, Sport, or Track modes at the touch of a button to deliver a driving experience to suit any fancy. McLaren’s expertise in carbon fibre structures – every road car built by the British manufacturer since the McLaren F1 in 1993 has had a carbon fibre chassis – underpins the construction of the new 720S; the architecture of the car is based around a new carbon fibre ‘tub’ and upper structure, the McLaren Monocage II. This technology delivers extreme strength and rigidity in a lightweight framework – the ideal base for any supercar. A range of aluminium alloys are also deployed extensively in the chassis and in a number of body panels.

The trademark McLaren electro-hydraulic steering is in full array to deliver highest fidelity control. Powering it all is the new, twin-turbocharged 4.0-litre V8 engine that takes you from zero to 100km/h in 2.9 seconds and to 200km/h in 7.8 seconds, with a topend speed of 341km/h. With all this power, safety is paramount. The new generation braking system will take you from 200km/h to a standstill in just 4.6 seconds and 117m covered. Fuel efficiency is also to the fore with the super performance coming in at 10.7 litres/100km fuel economy in the official combined cycle and 249g/km CO2 emissions. McLaren engineers have capitalised on the inherent structural integrity of the carbon fibre Monocage II structure to deliver unusually slim windscreen pillars and glazed C-pillars that taper from the roof in a distinctive teardrop motif. The canopy-like design also provides a feeling of 360-degree vision for occupants that is unrivalled in the supercar class, allowing light to flood into the cabin and setting a new benchmark for visibility. McLaren Automotive CEO Mike Flewitt sums up the 720S as being the personification of "extreme performance, crafted luxury and unparalleled driver involvement that is the McLaren heartland". "This is the first time we have replaced a product family and the new 720S is absolutely true to McLaren’s pioneering spirit in being a revolutionary leap forwards, both for our brand and the supercar segment.” The Static Adaptive Headlights are yet another example of the pioneering technology on show throughout the 720S. The headlights optimise performance by changing the directional light intensity based on steering input. Of the 17 LEDs in each headlight, five provide the base static beam pattern and the remaining 12 light according to the direction the front of the car is moving in, giving the effect of the beam ‘bending’ and better illuminating that area of road.

The Static Adaptive Headlight technology gives a driver better visibility through corners to enhance performance and safety. Other road users also benefit from being seen earlier and in greater clarity. The headlight system also improves straight-ahead long range visibility by raising the beam pattern by half a degree – whether on dipped or main beam – when the new 720S reaches 110km/h increasing ‘forward punch’ and focusing a driver’s attention further on the road ahead.

The doors feature an 80-degree angle of opening and require 155mm less space per side than is needed to fully open the doors of a McLaren 650S. This increases accessibility when parked in tight spaces, especially in close proximity to a wall, and the doors also open to only 1,953mm high, an important factor in underground parking spaces.

McLaren Super Series Chief Designer Rob Melville calls the 720S "a new chapter in the development of McLaren's design language".

The Pirelli P ZEROTM Corsa tyres specified for the new McLaren 720S have been especially developed for the car in a program of close co-operation between the marque and the tyre manufacturer to cover the full range of performance and conditions. McLaren claims the tyres deliver six percent more mechanical grip than in the 650S application.

"It has perfect proportions that bring our key design pillar of 'Everything for a Reason' together in one pure, aerodynamically shrink-wrapped and sophisticated whole. McLaren is always brave in its approach and this car is the perfect expression of that innovative culture." As in real estate, location is everything in car design. The top of the 720S's V8 engine is 120mm lower than in the first generation of McLaren Super Series models, with the reduction in plenum height enabling improved rear visibility and luggage storage space. The rear of the 720S is 145mm lower overall than the 650S, the drag-reducing, aggressive tapering of the teardrop canopy towards the rear wing enabled by a lowered radiator header tank, rearward repositioning of structural airboxes and the introduction of a double CHMSL (central high-mounted stop light). Flowing over and into the rear fenders, the full-width wing with airbrake functionality has an optimised motion to improve the downforce efficiency and is automatically activated to either decrease drag or increase downforce, or act as an airbrake to enhance vehicle balance under heavy braking. Aerodynamic efficiency – the ratio between downforce and drag – is more than double that of the McLaren 650S and the overall result is a car that is superbly balanced and gives a driver confidence to push harder through the fastest corners found on a racetrack.

Has there ever been a super-car designed with such sensibility to everyday practicalities?

“The new 720S has been designed to meet and exceed the extreme performance expectations of the most demanding supercar owner, but it also has a driver environment that is incredibly light, airy and sophisticated, with peerless space, excellent all-round visibility and superb comfort,” says McLaren Super Series Chief Engineer Emilio Scervo. The new 720S can call on more than simple interior expanse to delight owners. Even the simple act of approaching and entering the car has been fastidiously considered: unlocking the new McLaren Super Series engages a ‘Welcome Sequence’ that consists of mirrors unfolding, indicator lights sweeping and courtesy lighting coming on, as well as illumination of the engine bay, bathing the cast-aluminium air intake plenum with McLaren Speedmark logo on top of the engine in red light. Opening the door triggers a second sequence of events that sees the Folding Driver Display deploy and the operating system come to life both on this display and the central infotainment screen. Together, these two high-definition screens comprise the McLaren Driver Interface – an advanced, integrated new

Un i que Luxur y

107

108

w w w.uni queest a te s. co m. a u

way of sharing information with the driver that is designed to be immediately familiar to McLaren owners, but runs on an entirely new system architecture. In Full Display Mode, the Folding Driver Display presents the required array of information on an upright, high-definition TFT panel, with three different layouts and colour variations depending on whether the car is being driven in Comfort, Sport, or Track modes. At either the touch of a button, or automatically if linked by choice to the active dynamics functionality, the display slides down to Slim Display Mode. In this position, only the minimum of required information is displayed in a strip, further improving forward visibility and allowing the driver to place the car even more precisely in a corner. This is an ideal condition for drivers wanting the minimum of distraction, for example when extending their 720S on a track. The primary hub for interaction between a driver and their new McLaren 720S is the Central Infotainment Screen, an 8-inch display with rich crisp graphics that presents the vehicle’s electronic functions to suit driver preference. Audio, media, navigation and other convenience features – such as mood lighting colour – are all controlled using this screen, which has applications displayed on a vertical carousel as well as several dedicated quick-access keys, with climate control functions permanently visible across the bottom of the screen. One of the driver engagement features on the 720S that is expected to generate significant owner-interest is McLaren Track Telemetry. The latest version of this real-time data capture application, which has been completely redesigned for the new 720S, now features

measurement of throttle angle and lateral/longitudinal G-force in addition to timing and speed measurement. A driver can set up a track session using the central screen and then complete the laps and analyse the data, including sector times within a lap. All the switches and controls in the new 720S cabin are precisely engineered and tactile, with form and functionality in pleasing harmony. The switches are machined from solid aluminium, in keeping with the air of sophisticated luxury evident throughout the interior, ensuring that drivers enjoy the ambience of their environment as much as they do the driving experience. In addition to the expected suite of comfort and convenience features, the McLaren 720S is available with parking sensors, a reversing camera or 'birdseye' 360-degree park assist. All cameras are high-definition. The audio capabilities of the new 720S have been designed with music aficionados in mind. The Bowers & Wilkins system is available as an optional upgrade of the excellent four-speaker system that is standard-fitment. The all-new, highpower system, which has been developed specifically for the 720S, features the premium audio specialist’s trademark central tweeter for incredible sound fidelity as well as Kevlar mid-range speaker cones, and – because this is a McLaren – even carbon fibre woofer cones, which provide ultra-clean bass reproduction. The new 720S is available in three grades of specification, with Performance and Luxury trims extending above the standard level. Additional options are available individually or in a range of 'option packs'. To find out more see melbourne.mclaren.com or tel: 03 8420 8888. Text 'MCLAREN' to +61 428 475 311 for more information

Miles Wharton heads The Bespoke Tailor, a made-tomeasure suiting specialist

Sartorial blogger, clothing entrepreneur and made-to-measure maestro Miles Wharton has zero fashion credentials but is still able to teach the big boys a thing or two about the art of dressing smart, as Unique Luxury discovers.

Un i que Luxur y

123

H

e has yet to reach his third decade of life but Miles Wharton is no new kid on the block.

Raised by parents in and around the hospitality trade, the British born wunderkind was just 15 when he founded his inaugural business selling fitness supplements out of his dormitory room. But joy at his success soon turned to dismay when teachers shut his burgeoning business down because, he believes, it got “too big”. Never academically-minded, Miles admits failing most of his exams during secondary school and when persuaded to give university a try, also dropped out of a degree in Business Management. Yet these early failures only fuelled a desire to find an alternate avenue to source money so a clothing line, gaming business and social media agency followed in quick succession.

high profile publications such as Forbes, GQ, Esquire and D’Marge and has built up a social media collective of more than 72,000 followers on Instagram and 2,000 followers on Facebook. Later this year, Miles will launch Avavi Paris - a luxury streetwear brand using the finest fabrics and incorporating sneakers, distressed denim and t-shirts – a range that is 12 months in the making. While many people start blogs without a particular goal in mind, this was not the case with Miles, whose strategic end goal was to firstly create an audience invested in his brand before introducing a product to sell to them.

“The one thing that always drove me was how much I loved the finer things in life and businesses always interested me. I loved dressing well but initially had no desire to go into the industry.”

“When in the public eye, it gives you a voice as a style authority so automatically people trust what you tell them as they feel that you don’t want to damage your reputation by giving them poor advice. Men’s Fashion Blogger has allowed me to travel around and see how other brands around the world have created amazing brands helping me elevate our own brands.”

A gap year sabbatical in Australia gave him the impetus needed to break away from his old habits in England. After noting how Australian fashions appeared “a little behind” those in Europe, his decision to make the move permanent has since proved a visionary one.

Set up to not only change but exceed the expectations of local suit buyers, The Bespoke Corner (TBC) is an exclusively luxury tailoring business that has revolutionised the way executives address their wardrobe requirements.

Today, Miles is one of the most dominant figureheads in the country’s men’s fashion landscape. The brains behind popular online men’s lifestyle and fashion magazine Men’s Fashion Blogger, he is also the co-founder, alongside tailor Rami Mikhael, of Sydneybased made-to-measure suiting label The Bespoke Corner. Counting collaborations with companies such as Rolls Royce and Christian Louboutin among his achievements, he is frequently sought out by

Offering two tiers of product: the pricing for the brand’s Blue Label – for garments produced in TBC factories in Hong Kong – starts at around $950 for a two piece, $1,350 with extra trousers or vest and rising to $1,300 if made using a premium Italian fabric. It’s premium White Label product, made entirely in Tuscany using a soft handfinished construction, has a six week turn around and prices starting at $2,250 for a two-piece suit.

124

The Bespoke Corner is restricted to just 1,000 regular clients to maintain exclusivity

Both labels use only the best fabrics sourced from mills around the world, including Savile Row-based mill Holland & Sherry, Frenchbased Dormeuil and Vitale Barberis Canonico in Italy. The most expensive fabric the brand has worked with is Vicuna – an exclusive relative of the llama, a protected animal and needs government approval before the fabric can be released. Miles says very few factories can work with this weave. “I believe a pair of socks in Vicuna are around $3,000 and sports jackets cost $24,000 with this exclusive fabric. It is justified as it is a one off special garment that you’re guaranteed not to see walking around the streets.” In addition, customers who order a suit from TBC have the option to have a 24-carat bar added to the jacket’s chest pocket for an additional $5,000 while to maintain its premium positioning, tailoring is capped at just 100 customers. “By 100 customers we mean regular customers, not just one-offs. The decision to restrict our client base was prompted by exclusivity - everyone wants to feel special and if you have 1,000 clients on your books you simply just become a number. The majority of our clients purchase four to eight times a year and spend on average $3,000 per visit.”

The brand also offers for sale supplementary products including hand-stitched leather tassel loafers. But it’s through its service delivery that TBC really sets itself apart. Offering a private driver service to pick up VIPs from their house and depositing them at TBC’s showroom, Miles and his team regularly fly around the world to hand deliver suits and have even scheduled 3am fittings for a customer hard-pressed for time. Inspiration has always come from the way Europeans dress and it is completely different overseas compared to Australia, Miles says. “Australia is slowly improving its fashion but there has been a big gap in the market due to people being uneducated and the customer service being very poor. Customers need to understand the difference of what they are paying for and be advised what will suit their body shape, which fabrics will work for how they are going to wear the suit and what job they do. Everything comes back to customer service and how you treat your clients. We make sure everyone is related to personally, all our clients have our mobile numbers and we are dealing with them 24/7 as friends not just clients.” Collaborations with like-minded brands have also helped propel the business in the collective conscious of top tier executives from around Australia and beyond. In recent years the brand has staged an event at the Rolls Royce showroom and produced exclusive Un i que Luxur y

limited-edition tuxedos – made from Worsted Wool or a unique silk/ cotton blend - inspired by the craftsmanship of Rolls-Royce cars. A similar project was staged last month where TBC created a special limited tuxedo designed exclusively to be paired with Christian Louboutin shoes. Pushing home the exclusivity tagline, it made just 10 suits available for resale. Rather than selling suits, the company’s approach is to sell an associated lifestyle, he says. “I can guarantee you we work harder than the competition and therefore can achieve a massive amount, which would take them double the time. I can’t see any other tailoring brands promoting travel fabrics with private jets [or by teaming] with McLaren and Rolls-Royce - these are just some of the ways we try to add our personality into what we are doing. We are not following the norm with our approach and are happy to take risks.” Stitch by stitch Miles, both through his blog and as well as his various businesses, is seeking to inform men of the numerous benefits from taking pride in their appearance while at the same time educating them how to dress for their individual body types.

Men need to be told what to wear as they have very little imagination of what looks good with what. Once men feel comfortable with you they will start asking more questions and feel comfortable stepping out of their comfort zone, he says. “Whether its suiting or casual clothing, what you wear expresses who you are yet the most common mistake men make is a tendency to over complicate outfits by trying to fuse too many different colors and patterns together.” Miles says the best way to overcome this is go back to basics and utilise classic items such as a navy suit, white shirt, white pocket square and a colourful tie. Likewise, he advises men to spend more money on the essentials such as suits and shoes before adding personality through belts, pocket squares, ties, t-shirts and socks. When you look good you feel good and when you feel good you perform even better, he says, adding he is also a firm believer in the adage a person can never be over-dressed. “The art of dressing is to make others in the room feel under dressed.” Text 'MILESTHETAILOR' to +61 428 475 311 for more information

ivenchy’s pre-spring collection popped with idiosyncratic colour. The casual Givenchy fan could be mistaken for thinking that the royal blue and vibrant fuchsia block colours which replaced the brand’s signature red, was mere spring whim. The Givenchy fanboy, however, knows that the colour-play from Givenchy’s anonymous in-house staff, freely declared the King was dead. Last season, the French fashion house celebrated the departure of creative director and savior Riccardo Tisci by rebirthing the most iconic pieces of his 12-year reign in one colour – red. So, to replace Tisci’s iconic red varsity jacket, for example, with a hot pink version, felt a little naughty. While the cat’s away, the design staff will play with colour – at least until successor Clare Waight Keller takes over next year.

Backpack in white corder with sternum tricolour straps - $2,050 Cap curved peak in white canvas - $600

Flat sandal in rubber neon green - $400

In general, however, the show was Givenchy as ever with elegant graphic silhouettes. The lines were sleek, and sophisticated tailoring took a starring role. It delivered with streetwear as well. Standouts included a poncho and varsity jacket – both of which dazzled in royal blue. Multi-pocket pants and jackets – also used to great effect in Givenchy’s women’s collection – doubled-down on Tisci’s iconic sportswear aesthetic. Fuchsia camo and indigo floral prints offered a playful contrariness to the macho silhouettes. Black fur-trimmed slides worn with an athletic kilt certainly still had Tisci’s urban goth fingerprints all over it. The show, which could have simply circled in a holding-pattern between creative directors, had plenty of punch and personality. Un i que Luxur y

urberry coined its spring look ‘deconstructed pageantry’. Creative director Christopher Bailey again summons the British spirit – and supersizes it. The giant reversible tote in tartan cotton was audacious in its scale as was the bonded cotton oversized seam-sealed car coat. Even the crested buttons and regimental tailoring on the collarless ceremonial jackets felt scaled up though worn with a red silk bandana the uniform became relaxed. Comfortable English wool mohair tuxedo trousers finished off the slouchy look. Encrusted embellishments were ubiquitous. A boxy t-shirt adorned with a crystal brooch and worn under the ceremonial jacket typified the ‘deconstructed pageantry’ theme. The honeycomb-stitch cropped sculptural sweaters and relaxed-fit shearling and lambskin jacket could become favourite staples in the Burberry man’s wardrobe. And those cashmere fingerless gloves were made to covet. The cashmere wool mouliné patchwork sweater knits — in Fair Isle, Aran and Argyle patterns – came in lurid mid-century colours. Footwear got a lot of attention. Smooth leather loafers with bright kiltie fringing were a nod to traditional British golf shoes. For a more anti-establishment look there were wooden-heeled boots in riveted leather with hand-nailed details, inspired by traditional clogs. They were worn with bright red laces. Then there was what Bailey calls ‘The Giant’ – the oversized reversible tote. It was big on proportion and pattern, with tartan and checks inside and out. It comes in primary shades, finished with flashes of neon for an extra clash of colour. 136

ig popped collars and nylon jacket sleeves pushed right up to the biceps offered a West Side Story swagger to an otherwise contemporary story – one which spoke of the attention deficit of our times. Over-the-top neckline layering, two-tone loafers, abundant Velcro and comic-strip graphics, were combined to create a look that was endearingly postmodern.

There were boiler suits worn over blue and white shirts and grey sweaters illustrated with monkeys with laser beams for eyes. Slim nylon pants were gathered by branded velcro tags above the ankle. The thin studded belts and oversized fannypacks, looped hastily over wide-legged woolen pants, felt hurried yet human. Eighties comic strip prints and that hand-drawn ‘space monkey’ graphic left the impression of a millennium’s Snapchat feed – cute and distracted. It was as if Miuccia Prada had a slew of social media kitten memes and retro filters in her mind when she designed it. Yet amid the hasty eclecticism were the simply beautiful Prada coats. The classic topcoats came in camel and grey wool as well as herringbone. Backstage, Ms Prada said it was her intention to create “a double world, between virtual reality on one side, and reality on one side.” She explained she chose hand-drawn cartoon graphics to convey the opposite of virtual reality – “hand-made, simple”.

lessandro Sartori bridges generations in this collection which showcased his obsession with fibres, fabrics, and finish. Models in their twenties walked alongside those in the forties – all part of the healing connection between old and new Zegna. Impeccable attention to detail and innovative fabrics drew a line under his sportswear offering as much as his Zegna suits. The palette was natural, with undyed wool and cashmere in earth tones. Deep turmeric, brown, olive green, and soft dusty pastels were the colours of choice for soft silhouettes, such as paper-thin calf leather frock coats. Bobbled quilted fabrics in turmeric tones were used in bomber jackets and track pants. Alessandro Sartori’s reinvention of the high-top sneaker embodied Zegna’s new direction in its appeal across generations. The beige Tiziano high-top sneaker in smooth calfskin were designed in a clean, minimalist style, and given a modern twist by lateral cuts and stitching. The recent decision for heir Ermenegildo Zegna to hire Sartori has proven inspired in this collection. Zegna recently told reporters that he thought the brand was getting “too stable” and sought Satori to re-energise it. Satori, a self-confessed fibres geek, who grew up among the Zegna wool mills, gives his full attention to the fashion house’s strength. He is the perfect creative director for the vertically-integrated company which still owns sheep farms and wool mills. T

he Mãori have a word for it – Kia Kaha. Used correctly, it means to be strong, to be diligent and to be brave and it is clearly an affirmation Auckland-born chef Sarah Swan has taken to heart. For more than half her life Sarah – who turned 50 this year – has been looking after people in the best way she knows, by introducing her love of, and talent for, great food to an increasingly appreciative audience. Never afraid to overlook a challenge, her time in the kitchen has taken her full circle, from a little seafood restaurant in Sydney’s Rose Bay to her own business in Byron Bay - via stints at a swag of high profile restaurants including London’s Washington Square Hotel and the Bayswater Brasserie. Equally impressive is the list of top-flight mentors from whom she has been guided, representing a who’swho of industry leaders including Tony Papas, Genevieve Harris, Peter Thornley, Kylie Kwong and Neil Perry. Today, Sarah is a named chef in her own right, as well as the co-author of a number of food and cook books and founder of a burgeoning hospitality group empire. Along with business partner Jeremy Burn, she runs the 100 Mile Table group, incorporating a pop up café space in an industrial estate, catering arm, a bistro within the Byron Bay Golf Club and a newly-opened elegant Chinese Restaurant the duo call Duk. Catering everything from extravagant celebrity weddings to low key breakfasts, she draws a fiercely loyal customer base with many prepared to travel great distances to sample her unique Asianinfluenced fare. In her mid-teens when she crossed the ditch as a result of her stepfather’s work, Sarah’s career in the trade began after she enrolled in a pre-apprenticeship course at Sydney’s Ryde TAFE. However, the real work did not begin until six months later when she found herself a job at the Sheraton Wentworth Hotel. “I knew at 14 that I wanted to be a chef, I remember telling my mum. Once in a kitchen, it made sense to me and I felt lucky to be physically working on something I enjoyed and learning as I went. Hotel apprenticeships offered a lot but I was more interested in partying at that age…we worked hard, definitely, but then we would head out after work – mid-week nights at the Bourbon & Beefsteak or Barons in Kings Cross, hitchhike home to the very tidy lower North Shore, sleep a few hours then head back in for the breakfast shift. It felt easy back then. Despite the desire to party hard, I think I got through okay.” The day after completing her apprenticeship in 1989, Sarah jumped on a plane and flew to London via a three-month stint in Indonesia. She landed on her feet securing a job at Mayfair’s Washington Square Hotel, the only female among its 17-strong staff. Here she was required to work 90 hour weeks for the princely sum of £135, after which she could often be found sampling the delights of the hectic London nightlife before heading home to her 14-member share house in Ladbroke Grove to grab whatever sleep she was able. After four years, she felt the need for a change and returned to Sydney to take up a chef’s position at the iconic Bayswater Brasserie. “I had friends working in small and very cool restaurants. I was Grilled squid, cabbage & ponzu

"I’M THRILLED TO BE WORKING IN A JOB AND A CAREER THAT I TRULY LOVE AND ENJOY BEING PART OF EVERY DAY" jealous and a bit swamped in my big 5-star hotel - but finding my feet at the Bayswater Brasserie was a light bulb moment. It opened my eyes to an industry I had not realised I completely loved till that point. It was real food and modern and this is what really made sense to me. The people that worked in the industry were the best I’d ever met. They were having fun every step of the way yet were professional and committed and ambitious.” Sarah followed this up with five years as a sous chef at The Bather’s Pavilion at Balmoral Beach. When that closed for renovations, she approached Kylie Kwong and asked if she could work for her at the Wockpool, part of the Rockpool group in Darling Harbour. It was to be a 15-year journey and a life-changing decision. Offering her the chance to continue enjoying the vibe of a strongly female run kitchen, it also afforded her the chance to fulfil a longheld ambition to learn from Neil Perry at the coalface, Sarah says. Rockpool was followed by opening XO in Pott’s Point before Sarah made a monumental decision to move away from the kitchen and into the administration side of the Perry domain. Spending “a bunch of years” creating and maintaining the Rockpool websites and handling all the media for the quickly expanding group, Sarah also became Perry’s PA, working on his cookbooks with him, creating and editing recipes and cooking for photo shoots.

“I was always better at the food side of things than the admin if you ask me, but Neil and I were a cracking partnership. I travelled with him to Singapore, LA, New Zealand, Hong Kong and New York to do dinners for eight at the Governor General’s residence or for 2,000 in some crazy old hotel or function centre. We went to China to research regional food for the opening of Spice Temple in Sydney and put on 5kg in a week of eating at four restaurants for lunch and four for dinner every day. My years with Rockpool were filled with immense stimulus and learning. Neil taught me the importance of provenance in our food, the necessity of restraint and how to earn loyalty from those you work beside. “Leaving the Rockpool family to move North to Byron Bay was like going through a divorce. They were family to me [and] still are.” Upon moving to Byron with her husband Dan, the founder of an innovation and co-working hub, Sarah began doing pop up lunches from Bangalow Guest House before giving birth to the 100 Mile Table concept. With a fierce belief in transparency, Sarah says she has spent the past six years working hard to incorporate this approach to openness and honesty across all faucets of the business. An element of fun, translating across both her working life and home life, is also of great importance - a fact that she perhaps took a little Un i que Luxur y

too literally after requiring a knee construction as a result of what Sarah terms a “post dance floor twirl accident”. Yet in work, at least, this approach has resulted in great food that is not only found locally but that is also designed to be shared in keeping with the 100-mile food philosophy. “Our food is certainly family style. That’s our signature style and what we are known for. Our most common feedback is not only on the quality of the food, but the professional manner and smiling happy nature of our staff. I love that.

While it’s easy to be a number and get lost in the crowd in a big city, Byron is truly unique in that it offers a close and instant connection with growers, producers and suppliers, she says. “Here you can chat daily to those you are dealing with - and often they will plant specially for you if you need something different. Palisa Anderson of Boon Luck Farm is about to heavy up the planting of Asian greens for us so we can get enough supply.” Both professionally and personally, life is looking good for the burgeoning Swan empire.

“It’s about gathering people to eat together in a shared fashion - the sharing of good times and good food around a communal table. Essentially keep it local, keep it ethical, keep it seasonal and keep it fresh. Use the best ingredients you can find; quality ingredients don’t need to be messed around with so treat them with integrity.”

The nine or so books she co-authored with Perry continue to sell well while the latest book project she collaborated on, The Australian Fish and Seafood Cookbook, is continuing to prove popular. She also harbours a desire to one day publish her own book and has gotten as far as scribbling her first chapter.

Having only cooked in metropolitan cities prior to her arrival in northern NSW, Sarah believes there are many advantages to establishing a hospitality group in the regions – particularly when it is located in such a foodie hot spot.

With the Golf Club site turning good numbers and having realised her lifelong dream to open Duk, an eating house that offers a short menu of what Sarah terms “classic Chinese” just two months ago, Sarah now intends turning her attention to growing the catering side of the business.

The group pop ups regularly feel like extended family dinners with at least half the room knowing each other. Yet when out-of-towners join the fray this translates to the feeling guests are attending a large dinner party, she says. “Locals already love what we do and get excited when we do something different. Obviously, there are a lot of health-conscious folk in Byron - we are possibly less of the chia seed-wielding ones - so our crowd is more likely to come and see us for classic eats - house made focaccia, beautiful cakes, congee, plenty of bacon, our sour yellow curry of fish. We stick to our guns and have a loyal following.

At home, she hopes to find more time to travel and indulge with family and friends. “I’m thrilled to be working in a job and a career that I truly love and enjoy being part of every day. I love living in this great area [and I] love heading home to my husband and dogs at the end of each day and having committed time with them. If I can continue to keep the balance of work and home life - to enjoy what I do, spend quality time away from work, to travel and live well - then life is sweet.” Text 'SARAHSWAN' to +61 428 475 311 for more information

Tom Putt is a new generation old-school photographer changing the way the world views Australian landscapes, as Unique Luxury discovers.

Un i que Luxur y

183

T

om Putt has never been someone who has given much credence to the rules administered by others.

When told never to work with animals or small humans he opened up his own photographic studio specialising in children and animal portraiture. When advised he would struggle to ever make a living from his craft, he spent the best part of 20 years honing his skills before opening up his own gallery and exhibition space. And when informed landscape photographers were just “people who enjoyed taking pretty pictures”, the fit 43-year-old donned a pair of hiking boots and set about tackling some of the most arduous locations in Australia before sharing the view via the live stream facility on social media with those unwilling, or unable, to emulate his journey. Yet, in spite of all the well-intentioned advice, it seems gut instinct has always worked best for the 43-year-old award-winning abstract landscape snapper who, as well as running a successful business facilitating photography workshops, taking commissions and giving key note speeches, is also an author of a multitude of photographic books across two different genres. The prodigy of a professional pool cleaner, Tom says he was first exposed to what could be done with a camera by his father - a hobby photographer. “He was forever shoving a camera in my face as a kid so we had an extensive library of photographs of us growing up. He probably had the most influence on me to pick up the camera but subliminally as much as anything else. He lent me his Minolta XG9 way back when. I don’t know where his love of photography came from but I think he probably still takes more photographs than I do.” Growing up, Tom says he always had a love for the outdoors. He developed an interest in ornithology having spent years going to bed an hour early to pore through books on birds, wildlife and Australian national parks.

The first camera the father of two and step father of three ever owned was a Canon film camera bought for him by his grandparents in recognition of his 21st birthday. Contained in the kit were two lenses, a zoom which he was told would be great for photographing birds and a wide-angle lens to use for shooting landscapes. In remaining true to the pioneering Putt philosophy documented earlier, naturally this led him to an early career in sports photography. “I’ve never studied photography because I think I’d get bored. But when I was in uni [where he completed a double major in psychology and sociology] I was heavily involved in competing in triathlons. I was just a middle-of-the-road athlete but I enjoyed it. When I wasn’t competing, I’d rock up to local races and take photographs. Before I knew it, I was paying my own way to go across to the ITC Ironman Triathlon World Championships in Hawaii to take photographs.” This led to Tom being offered a job at a leading sports photography agency called Sport the Library and what he terms “the greatest training wheels a commercial photographer could ever be given”. In the six-year period between 1998 and 2003, Tom attended almost every high-profile event on the Australian and international sporting calendar ranging from the Melbourne Cup and the NRL grand final to the East Asian Games in Japan and the Athletics World Championships in Canada. His efforts secured him a raft of Australian Photographer of the Year nominations yet he turned his back on sports photography in 2003 following the birth of his daughter. “The time dedicated to it was too much and it was a good excuse for me not to have to go out for three hour rides in the morning and to then spend the rest of the weekend recovering,” he says. Forced to find alternative employment, Tom made the bold decision to open up a portrait studio, where the proud owner of

Tom Putt in his Mornington Peninsula gallery

three dogs, three rabbits and three chickens occupied his days photographing animals and small children. As well as providing him with an income, Tom also used the studio to raise funds for charities, donating the photoshoot fee to various children and dog rescue charities and publishing beautiful coffee table books. In all, three kids’ books and nine dog books were commercially printed, allowing him to donate more than $100,000 in profits to these charities before selling the business in 2013. However, a walking tour of Tasmania’s Overland Track where Tom believed he’d secured “all these great photos” proved a pivotal moment in his career when he ventured into renown landscape photographer Ken Duncan’s gallery in Southbank. “There was this beautiful picture of the Labyrinth in Tassie' on the Overland Track and I thought ‘I’ve just been there and I didn’t see that’. It was a whole moment of ‘wow this work is amazing’ but also too this is something you can do commercially and not just as a hobby. Until then, landscape photographers were keen bushwalkers who happened to go somewhere and take a camera with them. But Ken took it to the next level. He said this is what we can do with a camera and by the way we can also sell this as a limited-edition piece.”

He has been lost to the outdoors ever since and is now considered one of Australia’s most prolific landscape artists. A specialist in large scale works, Tom says he was inspired by the work being done by Duncan and earlier on in his career he spent his time attempting to emulate the detailed panoramas and striking landscapes captured by his mentor. More recently, he has found his own signature style, venturing into aerial, abstract landscape photography. Combining his passion for the outdoors with the need to get his adrenalin pumping, Tom now spends much of his time in the air, utilising planes, helicopters and drones to shoot down on a landscape to create works that appear as a blend of abstract art and photography. A recent work – involving what looked like the aorta of a heart and which appeared to contain anatomic references but was in fact an inlet in Western Australia shot from above – a prime example. “I’ve had several pieces where people have said ‘Is this a painting or is this a photograph?’ I enjoy crossing those boundaries. I don’t care what people see when they look at it as long as they’re getting interest out of it. For me, there’s a big thrill jumping in a helicopter and I like the adrenalin factor despite the fact I’m scared of heights.” Un i que Luxur y

A firm believer in the legacy of published books and artists printing their own works, Tom published three landscape books - one each on Cradle Mountain Lake St Clair National Park, The Milford Track and Routeburn Track – with plans for more. A 500-page coffee table book on his aerial work is in the pipeline while a book featuring his snow landscape work will be the next cab off the rank. Earlier this year, Tom finally bit the bullet and opened up a warehouse photography gallery near the Mornington Peninsula home he shares with partner Mary. Called Inspire, Tom’s low key 125m2 showroom space is located in an industrial precinct and showcases the best of the Mornington Peninsula and beyond. In addition to Tom’s own photographic work, it also includes custom furnishings by local Peninsula designers. Tom says the gallery opening was fuelled equally by a desire to have a space all of his own as well as the opportunity to bring the beauty of the Australian landscape to the people who live here. Already in talks with a multinational hotel chain, Tom says his dream is to one day totally fit out a boutique hotel somewhere in Australia. “I just know this is what I was born to do, this is what I should be doing and this is what I’m good at. There’s so many things still to do, I feel like I’m part of the way there, I’m not even half way through this journey. “I want to be able to say to people look at what I went out and experienced and I hope that perhaps with you looking at this artwork you will feel similarly to how I did even though you haven’t been there. The skill of a landscape photographer is to frame that picture using light and composition in a way that the person almost feels like they’ve experienced that already themselves. It’s not something I consciously think about when I take the photograph but hopefully it conveys the right emotion when they see it on the wall.” Text 'TOMPUTT' to +61 428 475 311 for more information
