Smart storage is a bonus feature on the foredeck with enough room underneath the sun pads for life jackets. For those who like to get their feet wet, there is a large teak inlay swim platform with a hydraulic hi/lo swim platform. Above the swim platform is a built-in shower with hot and cold water. If recreational water sports are your thing, the crane on the bridge deck will support equipment such as a Jet Ski or dinghy. The bridge deck also caters for guests wishing to stay high and dry with a settee, full bar and barbecue. Even the finickiest of captains will be happy to command

one hell of a retirement plan. A minute or so of exertion around breakfast, once again before lunch and one more time at dusk followed with a well-deserved rub down. Nice work if you can get it, which is exactly what 11 stallions are doing right now at Arrowfield Stud. Welcome to the business end of horse racing where champions are born and riches are to be had. One horse here tallies more than $400,000 a day for hardly five minutes of application. Arrowfield is situated a deceptively long four-hour drive from Sydney in the Upper Hunter Valley, one of those parts of the country that’s got a knack of making money. To get there, you pass a huge open cut coal mine along with a giant power station that both prop up the NSW economy. Past them and you’re into the countryside of Scone where the whims of sheiks, celebrities and the rich create the racetrack’s champions of tomorrow. This is prime stud country.

“Horse breeders get the opportunity to play god,” says former stockbroker John Messara who set up Arrowfield in 1996, and since then has turned it into one of the most successful studs in the country now also listed on the stock exchange. “It’s unbelievably rewarding when a mother throws (“horse-talk” for giving birth) a good horse,” he says from his wood-panelled office with all the care of a doting father. Meanwhile, on another part of this achingly beautiful 2000 acre property, his stallions are about to collect a handy half million in fees before afternoon tea. While the glamour and the excitement of horse racing focuses on the track, the real money is in the breeding. A stallion that has retired from racing can make what he earned on the track in a couple of days here. It all amounts to the most exclusive animal breeding programme in existence and Arrowfield is as good as it gets. Each stallion has his own attendants as well as marketing and medical teams behind them, along with the surety that they are the aristocracy of Australian racing.

The ‘serving’ shed is where the stallions meet the fillies and, if ever a luxury equine love pad was made, Arrowfield is it. Practically Roman in its decadence and attention to detail, everything is catered for. Before the mare enters, she goes through a process worthy of any sultan’s harem. Her foal is nannied, servants wash her, she has padded booties put on her hoofs (to mitigate the damage lusty kicks could cause the stallion), and she even has her own male pony to prepare with. Then a door opens and Arrowfield’s prize stallion Redoute’s Choice appears. Poised to pounce and built like a 500kg Usain Bolt, he is undeniably magnificent. Things move fast, there’s a lot of whinnying and within a minute or so Redoute’s Choice is striding away having just earned $137,500 for his bosses and a good lie down before lunch for himself. The resulting progeny will then grow into what Sea Biscuit author Laura Hillenbrand called “God’s Rocket” and it’s
a fair call. Each horse is 500kg, strides seven meters in one go and does that 150 times minute. The cannon bone of its leg exerts 4.5 tonne of force hitting the ground at 60km/h and it’s all powered by a heart as big as your head pumping a massive 300 litres of blood a minute. Multiply that by 15 or 20 and it’s little wonder the ground shakes beneath your feet at the races. Redoute’s Choice has been the jewel in Arrowfield’s crown for the past decade and he is indeed a supreme beast. After two quick years on the racetrack Messara whipped him into retirement thanks to his sterling DNA thread. Blood is everything in this game and Redoute’s good luck was that his father was Danehill, the American founder of a racing dynasty that includes granddaughter Makybe Diva (Melbourne Cup 2003, 2004 and 2005 and Arrowfield resident) as well as Shocking (Melbourne Cup 2009). When Black Caviar retires from the track, it’s a reasonable bet that Redoute’s Choice will be matched with her. U nique Luxur y

At the yearling sales Redoute’s progeny sell on average for $445,000, hence his exceptionally high $137,500 fee. Just before the Global Financial Crisis, that fee was $330,000. That year the 79 children of his that made it to the sales (many are retained by the mares’ owners) earned a tidy $59 million. Then the All Ords fell, the yearling sales followed and so did Redoute’s fees. But his consistent claim to fame is that he’s such a good bet. Hire him out for your filly and you’ll consistently be doubling your money at the yearling sales – not a bad investment in anyone’s books. It’s for this reason that stallions like him are the highest paid performers in the world. No other being – man or animal – can beat their charge out rates. Take soccer star Wayne Rooney and say he’s actually getting the reported £250,000/week ($400,000) for Manchester United...
Redoute’s Choice makes that in a day. It’s what Messara calls “Playing God”. While other sports have to discover their future stars, horse racing engineers its own with breeding lines that go back hundreds of generations of crisscrossing DNA threads and outright inbreeding. In this world, mating with a close relative is not only inevitability, it’s actually desired in an effort to draw out the best features of a horse. It all sounds slightly sinister, however you have never seen such happy horses as the ones at Arrowfield. Set amongst rich floodplain soils with rolling limestone hills either side, it is the most exclusive nursery and finishing school in the animal kingdom. An unmistakable sheen of wealth is everywhere as scores of freshly born foals gambol alongside their mothers plus another 100 or so heavily

After the foals are weaned off their mothers, they are taken to flanking hills to strengthen their muscles and get them ready for the big yearling sales between January and Easter. While the Melbourne Cup stops the nation in November, the sales capture the horse racing world as the foals are paraded as debutants and sold like superstar rookies for up to millions at a time.
His masterstroke was gearing the stud to the blood of Danehill by flying the offspring of the legendary racehorse in from Ireland and, in the process, becoming one of the pioneers of “shuttling” stallions which takes advantage of horse racing’s arcane rules. After they’ve had their way throughout Australia’s breeding season (strictly 1 August to December), Messara’s stallions are flown to Japan, the US and Europe to serve the northern hemisphere’s fillies in their Spring for similarly handsome fees.
Messara was destined to make his fortune out of horses. His surname comes from the plucky light horse that’s traditional to Crete, Messara’s ancestral home. After forging a rapid and lucrative career on the Australian Stock Exchange, his directions changed in 1985 when he bought the controlling interest of the ASE listed

late 2015,” says Messara. “So it’s a bit of a chance but I reckon he’s a real bargain. The risk reward is pretty good, and $22k is not much to pay,” he emphasises for a horse that has the stallion potential of perhaps even Redoute’s Choice. Smart Missile’s father after all is Fastnet Rock, currently Australia’s leading sire stallion at $220,000 a shot, who lives over Arrowfield’s fence at Coolmore Stud. “But he’s unproven,” he emphasises again and the excitement of the gamble hums in his words the same way it does with anybody who’s ever owned a winning racehorse. “There is nothing more exciting than having your own silks, it’s an incomparable feeling. I can’t tell you what it is, but when it wins you actually think YOU’VE won. You take possession of the moment.” It’s what people like Alan Jones, John Singleton, Robert Sangster and Sheikh Maktoum – all present or past partners of Arrowfield – have felt.

Of course, every great business has to have its own back story, of the ones who work hard for little or no reward and there is none more worthy than the story of Tiga the Arrowfield pony, or more officially the ‘fluffer’. This plucky little colt is employed solely to prepare the fillies so the stallion can step in. Tiga nibbles their neck and engages in equine pillow talk before being dragged away. “That’s a real skill,” says Sam Fairgray, Arrowfield’s operations manager. “A lot of male horses lose their drive but Tiga doesn’t.” Which is why Fairgray loves the little fella and admits that at the end of breeding season “we let him have a proper go,” simply for the recognition of his celibate service. So loyal to the cause, he has become a stallion himself. “We’ve started breeding Tiga to get his characteristics in his boys,” says Fairgray with a smile. The stores of the world’s great luxury houses are now filled with Fall and Cruise collections. Here, Glynis Traill-Nash looks at what might tempt you…

Burberry Prorsum Designer Christopher Bailey dubbed his Fall collection “Town and Field”, and it sought to bridge the divide between the two. The field elements were easily identifiable: tweedy baker boy caps, checked wools, hunting jackets, chunky knits and waxed cotton parkas. The local British fauna also joined the parade, with foxes and dogs, sparrows and owls making cameo appearances on T-shirts and knits, or even adorning belts and bags in gold. The town folk’s attire came in trenches and pencil skirts, some with peplums and flounces, floral dresses and fringed cocktail dresses. Velvets and chunky lace, spots and stripes also had city appeal. Once it was all mixed together, in earthy tones and olive greens and petrol blues, it all just seemed so very wearable and of its own postcode. You’ve got to give it to Bailey for his focus on accessories, however. The collection was swimming with covetable items: bow belts, python gloves, barrel bags, sheepskinlined desert boots, striped suede Orchard bags and evercool sunglasses. But the studded gloves and clutches, fox or not, were a decidedly urban touch.

“It is Coco rock, French rock with a very 18th century frivolity, one that’s been updated with new materials and new proportions,” said designer Karl Lagerfeld of his frothy Cruise collection that played on a mix of Rococo and modern hip-hop styles.

To further illustrate his point, the show was held at the Bosquet des Trois Fontaines at the Chateau de Versailles, once home to Marie Antoinette. Her wide-hipped pannier skirts were shortened into miniskirts and dresses, even wide-hipped shorts, sometimes decorated with lace ruffles. (The pastel colour palette may even have drawn on French macarons, favourite sweet of Marie Antoinette if Sofia Coppola is to be believed.) Men’s breeches of the time were also reinterpreted for men and women here. Those modern fabrics Lagerfeld referred to included denim, high-tech fabrics, metallic denim and vinyl, even plastic. Accessories were a delightful mash-up of heirloom costume jewellery and metallic platform sneakers. And of course, as with every Chanel collection, tweed took its rightful place at the heart of the collection, with new cuts of jacket, some with peplums and portrait collars, even cargo pants. High-low in extremis.

Giorgio Armani Mr Armani dubbed his Fall collection “Easy Chic” – and it’s easy to understand why. With masculine tailoring underpinning the majority of the collection, feminine accents in bold colours – orange, fuchsia and Tibetan red – come in the form of shell tops, jackets, even furs and give a mixand-match simplicity between ensembles. Grey trousers in Prince of Wales check, herringbone or nubbly wool are paired with those colourful tops and jackets in clean lines and with occasional eccentric touches such as an overblown silk collar or handkerchief-flower brooches. Iron creased Bermuda shorts are ubiquitous, peeking out from under shift dresses and strapless print dresses, longline jackets and frock coats; they add a casual “easy” edge to these luxe looks. You can’t help but feel uplifted by those witty pops of colour; fuchsia Bermuda shorts and a relaxed tuxedo jacket could be worn to an opening night followed by dancing til dawn. And the pointy winklepicker shoes add a touch of the rockabilly renegade to boot. Too easy.

Prada You want print? Prada will give you print. Designer and fashion boundary-pusher Miuccia Prada went into print overload for Fall, with near-3D prints that created a bold, colourful, sensorial onslaught. Its retro-futurist tendencies included some nods to the 1960s in car coats and cropped pants, A-lines and empire lines, but the overall effect was avant-garde in the extreme. Prints went top-to-toe, and were also used in print blocking, clashing different patterns in bold colours including orange, green and purple. There was a masculine undercurrent running throughout the collection, with trousers underpinning dresses, skirts as well as more traditional suiting ensembles. Where prints were absent, embellishment took over, with oversized Ricmo jewel details sitting on lapels, trouser cuffs and sleeves and coat flaps. Accessories were also bold: masculine shoes looked to be half-dipped in rubber, and doctor bags were reinterpreted in polished leather of satin Ricamo. The more feminine shoes and bags were finished with jewels or floral embellishments. Excess? Never let it be said.

For this collection, designer Marc Jacobs revisited the glamorous age of train travel, a time when porters were at hand to carry your every item of luggage, and hats and gloves were de rigeur for any traveller. There was an updated look at the Belle Epoque, with empire line dresses and tunics layered over trousers in shimmering metallics, or vests were paired with cigarette pants in elaborate brocades. Tweed was entwined with tinsel to create simple pieces with added glamour. Patchworked leather cornered with jewels was super-luxe, and over embellished separates were worn together to dazzling effect. Prints were almost as eye-popping as those at Prada, although these were more Art Nouveau that Op Art.

Accessories, naturally, were key here, with all that luggage playing a strong supporting role to all the sartorial attention grabbing. There were bags and suitcases in house monogram and that aforementioned patchwork leather, furry cases and ostrich leather bags, crocodile hatboxes and oversized doctors’ bags. Shoes were uniformly platform, either laced or strappy, Mary-Jane style or simple pumps with squared toes. Thank goodness for those porters.

Perhaps it’s best to leave it to creative director Frida Giannini to describe the inspiration behind Gucci’s latest Cruise collection: “This season I drew inspiration from the House’s Flora pattern to revisit the silhouette, volumes, and colors of the late Sixties and early Seventies – the effortlessness of Marisa Berenson and Veruschka influenced by contemporary intuition to wear color and print.”

These are certainly pieces ready for a sophisticated excursion to an idyllic and luxurious location. Print day dresses bring a slightly bohemian feeling, especially with the widebrimmed hats and sandals, while for evening, simple loose gowns in silk georgette with jewel embellishments at the neck ooze a refined sensuality. Sexy, masculine tailoring makes a nice counterpoint to the more feminine styles. Fabrics are sensual, luxurious and very tactile: soft muslins and silk georgette, suede and calfskin, ostrich and python, even denim makes an appearance. Animal prints are also evoked on silk jacquards with leopard and crocodile self prints. And even when your holiday is over, the colours of lilac, desert rose and burnt sand will remind you of more distant shores.

... Rockpool on George in the historic Rocks area of central Sydney, proudly displays the words beneath its name on the heritage green shop front that has been theirs for 23 years now, and counting. A “quintessentially Sydney dining experience”, for many, brings to mind simple seafood and hazy views of aqua waters and rolling barrels from windows over-looking Bondi Beach, or to the Manly ferry slowly cruising out of Circular Quay, past the Opera House and en route to Manly, but this is not what Mr Durack meant. Rockpool on George is of course synonymous with the name Neil Perry. Perry established Rockpool back in 1989 with his cousin and business partner Trish Richards. In the 23 years since, the family partnership have opened and closed a plethora of businesses big and small, and these days are the proud parents to seven restaurants. The Rockpool brand has evolved to include Rockpool Bar & Grill in Sydney, Melbourne and Perth and Spice Temple in Sydney and Melbourne. Italian restaurant Rosetta opened in Crown Melbourne in late 2012. The original though remains, Rockpool on George. Rockpool on George’s return to ultimate glory has been hugely accredited to young chef Phil Wood. After a long and illustrious career that saw Neil Perry celebrated, always at the helm and never quite ready to relinquish 60

control, he has found a protégée in Wood. Wood crossed the seas from his native New Zealand, worked at another Australian icon, Tetsuya’s, before taking the title of ‘Australian Young Chef of the Year’ and heading off on an overseas sabbatical to do time in Thomas Keller’s kitchen at The French Laundry. On his return to Sydney, Phil Wood settled under Neil Perry’s wing and the rest is history. Short listed for The Sydney Morning Herald ‘Chef of the Year’ at this year’s awards, Wood’s future is secure. His food is Asian at its heart and ignites all senses with its beauty and balance, and at Rockpool on George, they are not short on a luxury ingredient or two; the team constantly scour local producers and suppliers for the very best of ingredients, using only what is perfect and local where possible, but additionally embracing high-end luxury ingredients from elsewhere if that is what it takes
to create the ultimate dish. The menu changes with the seasons and as Phil Wood is willing, when his eye catches something new or he has simply been ‘playing around’ in the kitchen. The ‘rich and noble lobster congee’ is on a fast track to becoming Phil Wood’s signature dish and without doubt a Rockpool modern classic, alongside the ‘Chirashi zushi of bonito, kingfish, snapper, prawn, squid and green lip abalone’. For the caviar lovers, ‘caviar, soft poached egg, crispy potato and Allemande sauce’ is the full sensory experience and heralds signs of great things to come, which could potentially come in the form of the infamous ‘Date tart ~ since 1989’...
Wood’s food, the polished service of Restaurant Manager Silvio Brentan, Sommelier Emma Plumridge and their teams, along with Neil Perry’s guidance and incomparable knowledge of this industry are setting course for a very bright future for the flagship restaurant in this vibrant Australian restaurant group. It is comforting to see the grand old dame of Sydney’s fine dining scene return to her place atop the best, albeit with a fresh, youthful energy – a truly excellent mix of old and new, modern and classic. the world is now largely au fait with quality wines, a really good cheese still has the ability to surprise and delight. A great triple brie paired with Champagne will curl the toes of any lady. And the acid trip tang of a green-laced Roquefort washed down with a Sauternes can make powerful men weak at the knees. Both are powerful tools in anyone’s language. “It’s definitely worth investing in good quality and developing an understanding of them,” says Neil Willman who, being one of the country’s most senior cheese judges, has tasted everything from processed easy slices to artisan one-offs. “Even if they look the same, the difference between standard supermarket varieties and a good traditionally made cheese is like comparing chewing rubber to a complete taste and sensory experience.” And while cheese making giants like the French used to scoff at Australia’s restrictive pasteurized milk policies, smirks were wiped off Gallic mugs when a Bodalla vintage cheddar from Tasmania stunned connoisseurs by winning the best cheese in the world in 2000. Then, in 2002, Victoria’s Jindi Brie took the same title, proving it was no fluke. Since then, multinationals have bought both out and arguably turned them into mass produced shadows of their former selves. But in their place a new breed of master cheese makers are now making their own luxury varieties. In the gastronomic world there is no greater gamble. To take milk, overrun it with microbes and through skill and luck create something magical out of it. For alchemic risk and flavour complexity, it leaves even winemaking for dead. “People like Nick Haddow of Bruny Island is making amazing and interesting varieties as well as Carla Meurs and Ann-Marie Monda’s Chèvres from Holy Goat in Victoria. Another is Jon Heally’s Pyngana vintage cheddar from Tasmania. Again, it’s hand made and is quite simply magnificent,” says providore Simon Johnson. “Others like L’Artisan who are making fantastic French-style cheeses, Woodside Cheese Wrights for S.A. and Jannei’s goat’s milk cheese at the back of the Blue Mountains are all worth

seeking,” adds Victoria Lush, Johnson’s national retail manager. To familiarise yourself with really good cheese, steer clear of supermarkets, advise the experts who describe them as killing fields for quality. “God help the public,” says Willman describing how the fluorescent lights, chilled temperatures and suffocating plastic wrap can wreck havoc on the taste of cheese. “Because it’s a living product, the only reliable way to buy good cheese is from somebody who loves it and understands how it needs to be treated,” he adds, steering anyone towards a cheese providore. For the ultimate cheese indulgence find yourself a fromagerie, i.e. cheese room. Their misty humidity and stink are anathema to every other food storage standard in the book but are perfect for cheese. Simon Johnson opened Australia’s first in Pyrmont in 1992 since then similar rooms have become the centrepieces of culinary maps across the country. “It’s not just about the providing the right environment for the cheese but for the customer as well,” says Johnson. “Staff who understand it and can explain the cheese’s characters, the stories behind them and what to serve them with,” adds Johnson who has no problem with people walking out of his cheese rooms with a full belly of educatory samples as well as a block of cheese for back home. And how does one appreciate cheese? “Firstly, it’s essential to serve them at room temperature otherwise you’ll lose out on the flavour,” advises Willman. “And don’t take too much. It doesn’t matter whether it’s a fresh ricotta or a hard pecorino, nothing much bigger than a sugar cube. Any larger is tantamount to skolling Grange, he insists. “Savour the aroma, then make it into a slurry in your mouth and take all your tastebuds on a journey. Then, once you’ve swallowed most of it, keep a thin film coated over your tongue, draw air over it that will actually highlight any other flavours that you’ve missed.” Throw in a glass of wine, and you’re pretty much in food heaven.

6-litre twin-turbocharged W12 engine from parent company Volkswagen (the German car maker bought Bentley in 1998 and can lay claim to restoring Bentley’s iconic status). And while a souped up version of the W12 is standard across most Continentals, the 2013 Sport has been given an additional course of steroids. This means another 100Nm@2000rpm as well as an additional 37kW, which takes its drive train to an incomparable 800Nm/460kW. The handcrafted cabin is, as you’d expect, totally seductive. Its headlining is finished in indented leather hide, the gearstick has a classic knurled finish, while the driver uses drilled alloy sports foot pedals. The unique Bentley “Jewel” filler cap is provided as standard, as are dark stained burr walnut or piano black veneer. You literally meld into the quilted leather seats with a 80

feeling of having been seduced by a temptress to go on one of the fastest rides of your life. Which is how it feels accelerating from a standing start. One, two, three, four seconds (4.2 to be precise) and you’ve gone from nought to 100km/h. It’s nothing short of exhilarating as the engine breaks into something close to a canter hitting 160km/h in around the same time again. On top of its sheer power an engine management system capable of performing 180 million calculations per second provides a sharper throttle and faster acceleration response, which will, according to Bentley, take you all the way to 330km/h... Apparently, Your Honour. In comparison the 2013 model betters the previous Continental GT Speed by 5 km/h, and the 2010 Continental Supersports by 1.6. Which may be a small lead, but a win’s a win, right?
And the sound… deep visceral and undeniably Bentley, but the distinction with the 2013 Sport is it’s slightly more baritone when under hard acceleration without sacrificing a relaxed, refined and meaty purr under cruising conditions. For a vehicle weighing 2900kg fully laden – a tonne larger than the four-seat Ferrari FF – the way this hefty thoroughbred sticks to the bitumen around corners and cambers, at times, appears to defy the laws of physics. Underpinned by wheels an inch larger than other Continentals, its enhanced chassis with up-rated springs, anti-roll bars and bushes, a lowered ride height together with retuning of the electronically controlled damping and steering systems, makes for stunning handling. Braking is done thanks to whacking great 405 mm diameter front and 335 mm rear ventilated, cast iron brake discs and eightpiston callipers as standard.
Importantly, at the Paris Motor Show one month after Moscow, Bentley announced its intention to return to racing with the FIA-approved concept Continental GT3. While they aren’t divulging mechanical details, it is likely that the platform will be what’s under the bonnet of the 2013 Speed. For the brand, now a collaboration of German engineering and British aplomb, it was almost a decade to the day when they launched the Continental concept which has underpinned Bentley’s revival. It’s a gutsy go at breaking a stereotype that might have already been cracked (it did win Le Mans in 2003 and since then has broken a world ice racing speed record). And while for sheer performance Bentley will never be quite as good as purpose-built and infinitely lighter Lamborghinis, Maseratis and others, it comes surprisingly close.

To give you an idea of this rarefied world, take Rolex, the number one selling brand in the luxury sector. Its most expensive timepiece, the Rolex GMT Mater II Mens
So how can a watch command six figure-plus price tags? In some cases it is a clear reflection of the value of the materials used, such as gemstones and precious metals. Take, for example, the extraordinary array of stones in the $25 million Chopard 201-carat timepiece, the world’s most expensive watch. This timepiece features three heartshaped diamonds: a 15-carat pink diamond, a 12-carat blue diamond and an 11-carat white diamond. A spring-loaded mechanism, when pressed, allows the three heart shapes to open up to see the time and expose the yellow diamondstudded watch face.

To many men they are the only acceptable form of jewellery for a man in a corporate environment,

Which goes a long way in explaining why the absolute majority of the watches in the haute horlogerie range are men’s watches. But don’t think precious stones are a pre-requisite of a watch in this sector. The watch brand that is the star of haute horlogerie is the understated, sophisticated style of Patek Philippe timepieces, the maker of four watches that sell above the million dollar mark. More than a handsome face, Patek Philippe watches are admired by connoiseurs for the exceptional craftsmanship and engineering, each hand assembled piece goes through an intricate process to meet the standards of perfection that have been the hallmark of this Swiss watchmaker for 160 years. The Patek Philippe Henry Graves Super Complication last sold for $11 million. This solid 18-karat gold watch was made in 1933 for the US banker Henry Graves. It took five years to design and build and features a chart of the New York City skyline. Being a watch worn by a successful man such as Graves also demonstrates that the calibre of a watch’s previous ownership can boost its value too. It is as though some of the former owner’s power/charisma/ wealth/fame will hopefully be transferred to the new wearer. Another good example of this is the sale of Steve McQueen’s Rolex Submariner, usually priced around the $9-10,000 range, McQueen’s watch sold for $234,000!
Watches featuring unique and elaborate mechanisms are a fixture of haute horlogerie. The Richard Mille RM Felipe Massa sapphire watch, $1.7 million, is a stunning, transparent watch featuring a tourbillon movement that is completely covered in sapphire crystal. Vacheron Constantin Tour de I’lle rose gold watch, at $1.4 million, has been called the world’s most complicated wristwatch, with 834 individual parts and taking more than 10,000 hours to design and build. Historical importance and watch making distinction adds to the value of timepieces by prestigious older brands such as Breguet. Founded in Paris in 1775, Breguet created the self-winding watch and had a client list that included Marie Antoinette and Napoleon Bonaparte. The Breguet No 2667, an 18-carat gold precision watch sold in 1814 for 5000 Francs and today is worth $4,682,165. Arguably the most unusual high-end watch in existence is from Louis Moinet, a remarkable watch making brand established in the 1800s. The Louis Moinet Meteoris is actually a set of four watches that creates an artful mechanical planetarium. Thanks to a collaboration with meteorite hunter Luc Labenne, the watches actually include pieces of meteorites. alighting from a helicopter on top of snow covered Canadian mountains, I had thought the description ‘breath-taking’ was simply a turn of phrase. But the majestic vista of impressive peaks literally made me gasp. Glaciers pouring down mountainsides and kilometres of untouched snow laid bare beneath a sparkling blue sky proved too much of a shock for my cityweary soul.
Powder pioneers Canadian Mountain Holidays has paved the way for every heliskiing operation. It became the first company in the world when in 1957 its founder the late Hans Gmoser took a small group via helicopter to ski in the mountains. From a tiny operation run from a simple mountain hut it has grown into a highly sophisticated business run from the town of Banff. The 7000 loyal guests that visit each year now have a choice of 12 luxury lodges scattered 1 06

It is such experiences combined with the opportunity to ski run after run of pristine, untouched snow that is seeing a growing number of skiers part with serious money for the privilege of going where few are able. Helicopter skiing – albeit in controlled groups led by an experienced mountain guide - is without a doubt a skier’s ultimate pursuit. And for any skier or snowboarder who has tasted powder, the chance to do it for an entire week while staying in a luxurious remote mountain lodge is like dying and going to heaven.
throughout the Rockies in the vicinity of Banff and nearby Revelstoke, and are serviced by 500 staff. A day in a heliski lodge runs something like this: the bell rings to wake guests and a half hour stretch class is held in the gym. Fuel for the excitement ahead comes from a sumptuous breakfast – think deli style meats and cheeses, an array of cereals, a hot feast of pancakes or eggs and delicious smoothies.
By 8.30am the breakfast room tends to empty. Guests are donning ski gear and packing everything they need into pockets: there are a few chances during the day to return to the lodge but no-one really wants to go back simply because they have forgotten their gloves. At 9am the first helicopter takes off with group one. Most lodges split their 44 guests into four groups of 11 flown between runs by a large Bell 212 helicopter. But those lucky enough to have locked a space into a lodge such as the Adamants, where smaller helicopters fly with ski groups of five, are able to log many more runs than the larger groups. This first day is when guests discover whether their pre-heliski training was enough. While skiers and snowboarders have to be strong intermediate and above to truly enjoy a heliski trip, by no means do they have to be experts. Snowboards are built to cut through powder. And skiers are provided with a choice of several brands of fat skis that make skiing deep powder snow incredibly easy. Still, it pays to do a good deal of strength work before one of these trips. Climbing in and out of helicopters, and
skiing deep powder snow takes it out of anyone more used to flying a desk, no matter how much exercise they do. Lunch and snacks of gourmet sandwiches, fish, and tasty morsels from the kitchen are flown onto the mountain. Back at the lodge after a day’s skiing the pre-dinner snacks can range from Alaskan king crab legs to nachos. Dinners are five star offered with a wine list of the world’s best labels and champagnes.
Rich rewards Of course guests do not ski down these mountains by themselves. CMH (and all other helicopter skiing companies for that matter) employ certified mountain guides, sometimes two, to lead each group, show the way and watch out for everyone. All skiers and boarders must also wear avalanche safety beacons as even a small slide or fall can result in being covered by snow. A few hours of training with these devices is held on the day guests arrive which can be quite comical at times, involving as it does everyone digging in the snow, trying to detect with their own beacon exactly where the hidden device has been buried by the guide, lest U nique Luxur y

they have to do the same thing to find a colleague on the mountain. Beacon training is actually also one of the first barrier breaking exercises of the trip. It helps trigger the extraordinarily strong camaraderie that builds up between skiers over the ensuing week. Tight friendships and lifelong bonds are made as people enjoy the magnificence of the snow and mountains, have the time of their lives with each other and help each when they tumble or fall. At night stories are shared and egos melt away as everyone’s strengths and weaknesses are laid bare in the wild.
The experience, too, is almost indescribable. Seeing big horn mountain sheep, miles of snow covered pines, enormous glaciers and frozen waterfalls in places that are truly only accessible by helicopters, are instances hard to explain to others once back in the “real world” of traffic and office towers. While the financial commitment for a week’s helicopter skiing can be around the $10,000 mark, multi-day trips and myriad other packages can be arranged for people who are either time poor or want to see whether an entire seven day’s heliskiing is for them. talented business person can turn their hand to anything and Tom Lane is a perfect example. A descendant of the founders of the prestigious Oroton bag and leather goods company, Tom later moved from the family business to running the modular home building company Quicksmart. Now he and his wife Emma have transformed a spectacular Byron Bay hinterland property, Amileka, into an organic food oriented culinary destination. The Lanes bought the 25 acre parcel of land and its awardwinning architect designed house from Unique Estates last year and set about enhancing its paradisiacal qualities with a view to opening it for events as well as gourmet lunches. They spend up to five months of the year holidaying at the property away from their base in Manly on Sydney’s northern beaches, all the while gradually transforming Amileka into an irresistible retreat. They planted a one acre organic garden which is now so abundant its array of vegetables is shared with local

restaurants and stores. “It’s more than we could ever possibly eat,” Tom says. The Lanes are also building up a herd of Scottish Highland cattle as the meat they produce is so superior, being low in cholesterol but high in marbling. Lynette not only cooks splendid meals with the organic produce but she also plants the garden – along with help from the Lane’s four children - so she can literally take the produce from seed to plate. Visitors can experience this with seasonal “garden chef’s table” lunches which involve Lynette taking diners on a tour of the garden before preparing and serving the meal. The Lanes saw Amileka’s architect-designed home – which comes with a striking red rabbit sculpture in the grounds - as the perfect setting for events whether they be for corporate teams or private weddings.
