I

t’s one of the most prestigious hotels in the world. The enormously opulent 7-star Emirates Palace hotel in Abu Dhabi is a centrepiece in the oil-rich nation’s city-scape and, with its national carrier Etihad being anointed as having the best first class in the world last year and Virgin making Abu Dhabi its main stop en-route to Europe, it’s a destination that Australian luxury travellers will become increasingly familiar with. Last November saw the inaugural Coutts Polo at the Palace, the first polo tournament to be staged in the centre of Abu Dhabi. The event is sure to become an annual highlight in its social calendar and one of the must-have tickets for business networking in the Middle East, particularly as it’s in late November when temperatures are typically pleasant in the mid to high 20s.

It took three months, hundreds of tons of soil and turf to custom-build the polo field at the front of the hotel and just two days for a handful of international polo teams to demolish. Yet for the world’s high rollers and equestrian elite who flocked to the hotel in private jets, that was exactly what a day at the polo is all about.

The concept began in London with the first Coutts City Polo Series in 2009 with the intention of allowing the sport to be played in the heart of major cities. The event is now continuing in other financial destinations including Singapore and Shanghai. The man largely credited with helping bring the event to the Palace is Abu Dhabi property magnate Faris Al Yabhouni. Since establishing the Abu Dhabi Polo team in 2009, the Emirati has dedicated much of his time to the sport and promoting its development within the country. “I come from a family that has a strong tradition and passion for camel and horse endurance racing,” Faris told Unique Estates at the end of the first day of play. “I’m honoured to have the chance to play in the city, especially because it’s the first event of its kind here. Emirates Palace built a lovely field and I’m looking forward to a great event.” By the end of the second day, he had played his part in the getting his Coutts Team Abu Dhabi into the final against the dashing Hublot Team Buenos Aires.

With four teams from Milan, Buenos Aires, London and Abu Dhabi providing the thundering action on pitch, guests enjoyed the finest hospitality under canopy-fronted chalets and mingling areas where they were served by Palace butlers as well as being provided access to Maserati’s new Gran Turismo Sports to test drive.

In front of a sell out crowd and with the late afternoon sun illuminating the Palace’s stone edifices, the play was quick, dangerous and highly competitive. But with just over a minute to go in the fourth and last chukka (period of play), Faris’ team led 5-3 before a last roll of the dice from Buenos Aires netted a 2-point goal taking it to a penalty shoot out.

Most excitingly, the event itself was something more than the typical day at the polo. Being hosted by the multi-billion dollar hotel and having it as its backdrop was one aspect with the other being the nature of the tournament itself. Palace Polo was played on a pitch a third smaller than a regular polo field, which meant the spectators were far closer to the action. Each team had three players (reduced from the usual four) and play started with the nailing biting ‘Palace dash’ where two opponents raced at full speed from opposite ends of the polo pitch to get to the ball first.

Then, with penalties 3-2 to the visitors, Faris rode to the spot to equal but failed in his attempt – a bitter pill to swallow for the competitive captain in front of a home crowd but the overwhelming result was the success of the event.

Not only did it use the hotel’s luxury positioning to perfect effect, it was a stunning endorsement of how polo can be showcased to cosmopolitan city audiences. Coutts Polo at the Palace will return to Abu Dhabi in November this year.

he concept of why some people choose to live at hotels has always fascinated me. This is mainly because no matter how fancy they are, by way of being commercial ventures, they tend to be somewhat impersonal. But then certain hotels do tend to cast spells. Manhattan’s Hotel Chelsea saw everyone from Mark Twain to Marilyn Monroe take up residence for months and years at a time. Superstar Tina Turner was so taken with London’s Portobello boutique hotel she bought the house next door. And indeed after a recent stay at The Post Hotel at Lake Louise in the Canadian interior, I would have pitched a tent on one of its balconies (had it been slightly warmer than minus 15 degrees outside) if it meant I could stay. My change of heart came a few moments after driving through the stone pillars marking the entrance to The Post Hotel, about 50 min drive from Banff. As dusk fell, thick snowflakes floated down around the gracious, historic log and stone building like a scene out of a black and white movie. Stepping inside the foyer on the soft red carpet surrounded by warm timbers, a sense of comfort and cosiness descended which did not leave during my three-day visit. By the end of my stay I was truly convinced my tastefully-decorated one bedroom suite suited me down to the ground and that I could move in quite happily, thank-you very much. The Post Hotel, built in 1924, has been rated among the world’s top 50 lodging establishments by esteemed magazine Conde Nast Traveller, whose readers most recently rated it a high 91 out of 100. It is one of a handful of Canadian hotels to have been invited to join the prestigious Relais and Chateaux group, a feat only achieved by meeting a welldefined charter of character, calm, charm, courtesy and cuisine. Indeed, the European-style Post feels like a home away from home, not least because its three levels of quiet corridors and rooms appointed with European style decorations and furnishings give it the ambience of a large residence rather than a hotel. There are 97 rooms altogether, plus on the ground level the plush Temple Spa, heated indoor swimming pool, and a boutique. On the other side of the reception desk and foyer the corridor leads to the U nique Luxur y

intimate bar with its deep lounges, grand piano and log fire, behind which is the much acclaimed restaurant and adjoining cigar bar. The wine cellar holds almost 30,000 bottles of wine.

and European style cold meats and cheeses. The hot menu has all sorts of selections from the fluffiest of pancakes and omelettes to duck sausage.

The mostly European staff are unfailingly polite but not overbearing, and never make a guest feel as though they are asking too much. For instance, I felt quite comfortable as a single woman walking into the bar one night after dinner and ordering some Californian chardonnay and a cheese plate, an exquisite culinary experience in itself.

When guests drag themselves away from The Post it is usually to go skiing at nearby Lake Louise, one of the large ski resorts in North America, or nearby Sunshine ski field a little further away. Lake Louise has a small township of shops and cafes, and is just minutes from the Chateau Lake Louise which sits before the spectacular Victoria Glacier. Guests can also visit the thriving tourist town of Banff, where elk often roam the streets, and shops and restaurants abound.

Another reason The Post started to feel like home was the presence of the owners, Swiss brothers Andre and George Schwarz. On the particularly snowy Sunday morning of my stay, Andre walked through the breakfast room greeting the guests (among which were several families), checking all was well and sitting down with a few he obviously knew from previous stays. The Post obviously commands many repeat visitors. The food, as would be expected, is divine with an acute attention to detail. The breakfast menu offers freshly baked breads including such varieties as walnut and cranberry. Staff constantly replenish the excellent continental buffet which offers temptations such as devilishly creamy bircher muesli, perfect Canadian smoked salmon 22

Back at the hotel, it is the Post’s rooms that make it so hard to want to step outside. I was in an O suite, with an entry hall, lounge room and fireplace and wet bar. French doors opened into my spacious bedroom and King size bed, off which there was a spa bathroom. Oh, and how could I forget the walk-in wardrobe, another room on its own, and the second bathroom off the lounge room. Toiletires are L’Occitane and Aveda, while the tea cups and saucers are of delicate porcelain decorated with flowers. There was a writing desk and a television in both rooms, not that they ever needed to be turned on. I was too busy enjoying the quiet and calm of one of the best hotels in the world.

The current owner has undertaken extensive renovations to the main residence which include a new kitchen; new flooring, doors and windows; new electrical appliances and air conditioning; and repainting throughout. The pool-side cabana has been transformed to office space and treatment rooms with bathroom and sauna but allows the potential as additional accommodation or could be re-purposed in a number of different ways.

very two years an extraordinary race arrives on the frozen shores of Antarctica. Known as The Last Desert, it is a chance for some of the world’s most adventurous souls to combine an endurance race with a journey into the heart of the White Continent. Despite being covered in frozen water and ice, Antarctica is the world’s largest and coldest desert. It is home to the final installment of the 4 Deserts, a series of rough-country foot-races organised by RacingThePlanet where competitors compete in multi-day stages covering 250-kilometres in the world’s most far-flung deserts (yes, that’s six marathons in a row and they carry their own equipment along the way). The series has been named by Time Magazine as one of the top ten endurance events in the world. To get to Antarctica and The Last Desert, competitors have to prove their way through at least two other 4 Deserts races, from the Atacama Crossing (Chile), to the Sahara Race (Egypt) and Gobi March (China) - so it was an accomplished group of 49 souls that gathered in the Argentinean town of Ushuaia on 22 November to board the expedition ship M/V Plancius. They were embarking on a two day journey through the Drake Passage - leaving the civilized world far behind. With ages ranging from 21 to 68 and hailing from 27 countries, the competitors were a diverse group from professional athletes to a majority with day jobs as bankers, doctors, teachers and more. In the latest edition, a quarter of them came from Australia. As Melbourne’s Colin Suckling, who engaged in the race with his wife Sandy explained: “Australians are adventurous types. The great history of Antarctica and the desire to follow the early explorers attracted me and I’m sure other Australians as well.” 40

Colin and Sandy are 4 Deserts’ veterans who have won numerous awards for their sense of sportsmanship (Sandy went on to win tiedsecond place in the women’s division of The Last Desert). In their 50s, they have proven that age is certainly no barrier when it comes to events like this: it’s all about will power, the inner strength to push beyond boundaries and a sheer love for being out in the world’s most majestic, wild environments.

final stage played out in the blustering snows of Danko Island, the race proved to be historic. Overall winner Vicente Juan Garcia Beneito, a fireman from Alicante, Spain, completed 200.35 kilometers, finishing a tremendous year where he won all 4 Deserts races. Women’s winner Anne-Marie Flammersfeld of Germany also emerged as the first to win all the 4 Deserts races in one year in the women’s division.

Upon arrival in Antarctica, the race began with a sunny first day and then moved through ever-changing weather conditions on islands with penguin colonies, to locations on the mainland close to scientific stations. In between the racing, there were lectures about wildlife, history and technical information on the expedition ship M/V Plancius and travelling among icebergs. As part of the race, competitors were required to spend one night on shore under a vast spring sky that never fully darkened.

There were remarkable performances from the five Australian competitors in the team JDRF Born to Run - who triumphed in the team category. Jess Baker, Roger Hanney, Ron Schwebel and father and son Greg and Matt Donovan had set out on the Atacama Crossing in March 2012 in a bid to become the first team to ever complete the 4 Deserts Grand Slam (all 4 Deserts races in one calendar year). They were raising funds for the Juvenile Diabetes Research Foundation. Team member Roger Hanney himself has Type 1 Diabetes, which meant carefully monitoring his insulin levels throughout.

A constant theme that emerged as the seven-day event unfolded was the remarkable sense of place: the luminous snowfields, deep ocean blues and sense of being dwarfed by massive surrounding mountains. Conservancy plays a big role in these races, with competitors giving way to penguins as one of many rules that must be adhered to as great care is taken to leave the environment as pure as it was when they arrived.

The Last Desert is both a tough feat for the human body as well as a feat of the human spirit. When the cast of competitors returned to Argentina one week later, they stepped off the boat transformed having had the chance to commune directly with one of the most pristine and inspiring landscapes on the planet, and with stories they will likely be telling for the rest of their lives.

E

ver wondered how it would feel to be the Roadrunner? Having Coyote trying to get you around every corner and then defying the laws of physics to never come unstuck? Then take the new Boxster for a spin because it’s the closest thing you can get to that awfully quick and sure-footed little cartoon creation. After forty years of parking their engines behind the back wheels, some bright spark at Porsche’s engineering works has had enough sway to break tradition and put it more in the middle of the car. And the results are obvious. Point the new Boxster into a corner and with its centre of gravity further in the centre of the car and better balanced over all four wheels, it sticks to tarmac like its tyres have Velcro wrapped into the rubber. Significantly, that pendulum effect which is characteristic – and admittedly part of the thrill (and danger) – of driving rear-engined cars has gone, but undoubtedly it makes it a superior drive. Like kindergarten, blitzkrieg and doppelganger, the Boxster’s name comes from the German nomenclatural knack of combining words to create new ones. It has a boxer (i.e. horizontally opposed) engine and is a roadster (i.e. two seats and a soft top) so, voila! Boxster. But this car totally suits its name – it’s square-backed, pugnacious and performs like a champion. And while its wide-tracking front end and scooped flanks leading to air intakes behind the doors make up an exterior that’s the epitome of what a 21st Century sports car should look like, its interior detailing is luxurious yet light, logically placed and uncomplicated. As is typical of Boxster’s lineage, there are three circular dashboard dials harking back to the days of when car interiors didn’t resemble the control deck of the SS Enterprise. The only outward concession is a discrete information screen that shows details from the on-board computer or what’s playing on the stereo. And instead of opting for paddle gear changers or an automatic system, there is a short-throw old-school gear stick. Why? Because this car is made for one thing, delivering the holy trinity of fun driving – centrifugal forces, feeling the road in your fingers, and speed – to whoever is behind the wheel. It’s the essential essence of the Roadster class and naturally enough 58

the Boxster’s competitors, including the Mercedes SLK, BMW Z4, Audi TT and Lotus Evora, all do a pretty good job at that. Aside from which flavour of car one prefers, one differentiator is the gearbox and the Boxster’s is quite terrific. While its standard 6-speed arrangement is loaded with technology that practically telepathically guides you to the right downshift into a corner, it still clearly lets you be in control.

something to think about considering that the Boxster’s engine move makes it such a better drive. There are two engines available: the 2.7 litre and the 3.4 litre, as well as an optional 7-speed arrangement. All exhibit a wonderful throaty bark when you press the accelerator down to reassure that this is more than a Roadster reserved for wives and girlfriends.

On the road and unlike many of its predecessors the Boxter’s engine is surprisingly quiet, much like its aerodynamics. With the top down it whispers along and hardly messes your hair and, when wanted, the double-skinned canvas roof flips open to cocoon you in under ten seconds. Handily you don’t even need to slow down too much – only to a modest 50km/h. It also neatly stows behind you and your passenger, meaning there is still a surprisingly usable boot to complement the usual Porsche golf club set cubby up front.

My advice: buy the smaller one because, believe me, it’s all you need and, as a motoring writer, that isn’t something that comes off the typewriter too often. You’re better off using the nearly $30,000 difference by splashing out on extras such as the larger 20-inch tyres. And if colleagues with 911s attempt to tag you with having a “pauper’s Porsche” (well, it is the cheapest one on the market), rest assured this is no Porsche-lite. On the contrary this is a front-row seat in one of the most exciting drives out there today. While it hasn’t had enough time on the ground to get the awards, they will come, because Porsche has absolutely nailed it. This little bird could be the best roadster ever made.

So, what’s the catch? Well, it’s not the price. The Boxster comes in at around half the dollars of its bigger four-seater brother the 911: quite

When you get to the true heart and soul of this beautiful island, there lies extraordinary natural beauty, warm people, a rich and vibrant culture and a cuisine laden with sambals and spices, banana leaf-wrapped goodness, banquets, rituals and more. They call her “the island of the gods”, and it is easy to be mesmerised by her charms. Little wonder then, that Australian chef Kath Townsend landed there nigh on four years ago and forgot to come home. Kath’s lifetime passions have long been family, food and travel. Up in the cool rice fields of Ubud – sand, surf and nasi goreng left far behind, Kath has been the Food & Beverage Director and Executive Chef at the stunning Maya Ubud Resort & Spa since 2004, following periods at the Nam Hai in Vietnam and Huvafen Fushi in the Maldives. Earlier, back in Australia, she worked as Bill Granger’s right hand woman for several years after time as head chef at the iconic Bather’s Pavilion at Sydney’s Balmoral Beach. Asia is an instinctive part of Kath’s make up these days – nasi champur and pho bo far more natural to her palate than vegemite toast perhaps ever was. She dresses in loose silks and batik and gives a gentle acknowledging bow with her hands on greeting. But the real charm in Kath Townsend lies in her skill as a chef combined with a desire to continue learning and an ability to sink herself fully into her surrounding habitat. “Traditional Balinese Cuisine is an enormous part of the culture and religion here”, says Townsend. “I am fascinated with the way the Balinese use spices and the unique tastes of items such as salaam leaf and tamarind pulp”.

Pepes Ikan Spiced fish baked in banana leaf, this dish is ideal for barbeques You can marinate it one day ahead. Serves 4-8

Ingredients

• 800g snapper fillets • 4 shredded lime leaves • Banana leaves • Salam leaves* • 3 tablespoons oil – preferably coconut, however peanut or sunflower will suffice

• 1/2 teaspoon black pepper • 1 teaspoon coriander seeds • 5 cloves garlic, chopped • 25g ginger, peeled and chopped • 25g galangal, peeled and chopped • 25g red shallots, chopped • 30g long red chilli, chopped • 12 whole tomatoes, cut coarsely • 2 stalks lemongrass, finely chopped • 1 tablespoon fresh turmeric, peeled and chopped • 10g shrimp paste (terasi or belachan), wrapped in foil and roasted or fried until dry and fragrant • 2 teaspoons dark Indonesian palm sugar • 1 teaspoon sea salt

Method

Roast black pepper and coriander in a pan until aromatic then place in a lekan (large Indonesian mortar and pestle)and crush lightly. Add the lemongrass, ginger and galangal and continue to crush. Add the remainder of ingredients, keep crushing, mixing until it is well incorporated. It should be a fragrant, golden yellow paste flecked with chilli and pieces of tomato.

The River Cafe

For large sized snapper, cut the fish into chunks, 3cm x 3cm. If you have small fillets you can keep them whole. Julienne the lime leaves and place in a large bowl with the fish. Add the oil and spice blend and combine all ingredients well until all the fish is nicely coated. Cut the banana leaves into approximately A5 size. Take a portion of the marinated fish and wrap it in the banana leaf with a salam leaf. Roll up and secure the ends with a toothpick. Place on medium-hot BBQ grill and turn it every 2 minutes for 6-8 minutes or bake in a 200˚C oven for about 10 minutes.

distinctive aroma. Look for it a Asian Grocers. If you cannot find it just omit, do not replace with local Bay leaf as the flavour is not suited to the dish.

t’s an exciting time for Christian Dior in Australia, with the French fashion house opening its first Australian store in Sydney in January. And it was worth the wait. If you can’t make it to Paris in the near future, pop in here for a while instead and soak it up. Of course, the store is filled to bursting with the Spring 2013 collection. And it’s no token offering, this is a full ready-to-wear collection (for men, too, if you head down the mirrored staircase). This collection is also significant in that it is designer Raf Simons’ first ready-to-wear collection for the house, following his haute couture debut. His interpretation of Mr Dior’s classic Bar Jacket resurfaces in a tuxedo format, over shorts and is even transformed into a minidress. And while the tailored element is a strong focus, there is also a lighter, more frivolous side to this collection. Oversized candy-striped dresses, some with pleating detail, are both cute and sophisticated, which is no mean feat. And his use of iridescent silks is both fun and masterful, whether in tiny swathed minidresses (or were they tops?) over shorts or floral-printed ball skirts. Welcome to the new master of the house.

esigner Karl Lagerfeld was feeling in a lighter mood this spring focusing on “air, light and energy” as his touchpoints this season. The traditional tweed was present, in lighter cotton variations, at times edged in leather to toughen it up a bit. There were no camellias, chains or braiding – all signatures of the house. Instead, Lagerfeld embraced Coco Chanel’s most beloved costume jewels, pearls, and dotted them over everything from dresses to jackets (on black they became quite graphic, and added texture to white), or clustered them together on necklaces and cuffs, and created enormous single “jewels” for bracelets. Lagerfeld also introduced the “skirt dress” – a strapless dress that fell in an A-line or cocoon style from bust to mid-thigh or knee. Tops and jackets were cut in boxy shapes in a variety of lengths, including the short bolero. There was a graphic quality to many of the pieces, especially in the crosshatched check that Lagerfeld employed on everything from pretty day dresses to embellished numbers - even the floor looked like a giant solar grid.

Gucci T

here was a jetset vibe from the late 1960s and early ’70s in Frida Giannini’s spring collection at Gucci. It was sexy, playful – and ripe for poolside partying. Ruffles were a major theme, big oversized ones snaking down arms and around necklines, kicking out in a circle from narrow sleeves. And colour – most especially the opening section of the show in a flood of intense azalea pink, later giving way to bright green, cobalt, turquoise and vivid yellow. Snakeskin and an oversized wispy floral print also featured, both imbued with spring hues. The key silhouettes from the collection were the tunic over trousers – sometimes belted, sometimes not – and the maxidress - long-sleeved, sleeveless, strapless, some with plunging or keyhole necklines and others more demure. Shoes were towering with huge buckles at the ankle (but fear not, the more humble loafer, in bright spring colours, is still there to come home to). And jewellery? Well, think big and florid – “like fake Liz Taylor”, as the designer said after the show.

Prada T

he song “Turning Japanese” could well have been on Miuccia Prada’s mind when designing this collection (unlikely, but you’ll see what I mean). Prada was at the forefront of the japonisme trend, drawing on all things from the Land of the Rising Sun. Just don’t take things too literally. Cherry blossoms were printed and appliquéd far and wide – they even adorned fur coats and wraps - while satin was looped and folded somewhere between origami and kimono, also making up separate aprons that can be added and subtracted from a silhouette. The most literal interpretation came courtesy of leather tabi socks, although here they were worn with bow-adorned platforms. If that all sounds too tricky, there was still plenty to please, including simple black shift dresses with three-quarter sleeves, beautiful satin pencil skirts, cropped trousers and bustiers. But half the fun of a Prada collection is embracing Miuccia’s current madness, and the accessories in particular are suitably fun, from that aforementioned footwear, to furry purses and blossom-adorned bangles. Louis Vuitton

P

erhaps Marc Jacobs had been learning chess before designing his spring collection, or eating too much Battenberg cake (also unlikely). Whatever his inspiration, his oversized checkerboard pieces were the logical next step from the bold stripes he had sent out under his own name just weeks before. When the first pairs of models came down an escalator and walked a catwalk that matched their outfits, it was clear that Jacobs was in a particularly graphic state of mind. Overall the silhouettes were narrow, although the lengths varied wildly from maxi to mid-length, knee-length and mini, as did the size of the checks. The odd flower motif crept in about halfway through the show, but then it was back to checks, sometimes sheer and saucy, but mostly bold and elegant. The colour palette shifted from bright yellow through to latte, chocolate, grey and green. Jackets were boxy, jumpsuits and romper suits cut to similarly straight lines, while the tunic-style dresses and those bold graphics gave the whole exercise a nod to the 1960s. Check, Marc.

Burberry Prorsum

I

f Marc Jacobs had been raiding the Battenberg cake before his Vuitton show, then Burberry designer Christopher Bailey had been overdosing on Quality Street. The colourful metallic fabrics were as bright as lolly wrappers and brought just as much joy to the eye – especially in the finale of metallic trenchcoats. Of course, that trenchcoat is the backbone of the Burberry heritage, and Bailey never seems to exhaust ways of reinterpreting it and keeping it fresh. He also created them in satins, leather and lace; he cropped them and caped them. He also created tiny capelets – even in plastic that hugged shoulders and sat happily above ruched satin sheaths and simple silk dresses. Another highlight was his use of ombre, with pink turning gradually into red and blue into green. The accessories were killer, too. o... this guy comes into the shop, he’s in his early 30s, well dressed, looks pretty switched-on, and walks out with an armful of bottles of single malts totalling over a thousand dollars. “That’s not un-typical of the type of people we’re seeing. When we started two and a half years ago we weren’t expecting that demographic at all,” says David Ligoff, who opened Double Bay’s World of Whisky in 2010 and since then has become one Australia’s most extensive purveyors of the barley based spirit who’s new popularity has been nothing short of a global phenomena. Across the world, the young and well off are sipping obscure 18-year-old blends and single malts in search of the alchemic magic within the Celtic drop. Sales across Europe and the US are booming as well as in rocketing economies such as India and China. Even in traditional rum-loving Venezuela, whisky now outsells it by a ratio of two to one. So why? After years of being the reserve of the older gent, whisky has become hip and is in the process been embraced by a new generation of young urban sophisticates. In the wake of the vodka boom of the past decade the pendulum has swung from the tasteless to tasteful which the

complex, subtle, slightly forlorn and highly individual flavours of whiskies fill in buckets. Whisky bars have appeared with amazing success; there are whisky devotee magazines; whisky appreciation courses; and fascinating descriptions (Benromach for example is “wet grass, butter, ginger and brittle toffee” followed by “lemon custard creams, apricots and pine table polish”). In a word, it’s become the new wine. If you’re old enough to remember when fermented grape juice came in only a handful of varieties and then the wine boom of the 80s hit, that’s where whisky is at the moment. Where there used to be perhaps 10 varieties to choose, there are now hundreds of choices. The secret to becoming a whisky connoisseur is tapping in to the booming segment of single malts, those made only of malted barley grain, matured in barrels for a minimum of three years and from the one distillery. “Ninety to ninety five per cent of whiskies are blended with colourings, flavourings and cheaper grain spirits, so it’s a little like drinking a fruit cocktail as compared to a pure juice where its real character and provenance is obvious. Even distilleries close together have quite different


characteristics,” says Ligoff. It’s become a giant business based on small and formerly struggling distilleries that are now seeing major luxury players wade in. Ardbeg is one example. After operating for hundreds of years as an unheard of supplier for whisky blends, it shut down in 1981 before being snapped up by Louis Vuitton Moet Hennessey who have turned it into a whisky superbrand. Incredibly peaty, it claims on its bottles to be “The best whisky in the world”. A debatable point, no doubt which encapsulates the intrigue of the single malt – every one is different and everyone has an opinion on it. One of the most surprising aspects of the whisky’s resurgence is, for the first time, young women are drinking it en mass either straight, on the rocks, with soda or a new generation of cocktails that let the whisky’s characters come through. “We even had one lady come in and buy $11,000 of whisky without blinking,” says Ligoff. Which wouldn’t be hard to do considering the extraordinary amount of choice available. While the most expensive bottle is $5,500 – a Johnny Walker blend made of nine obscure and largely extinct distilleries – “prices start at $60 for a good single malt,” says Ligoff.

But it’s the $100-$150 price mark where there is a huge choice of highly characteristic and quite divine drops. It’s this segment of the market that is fuelling the mushrooming numbers of whisky bars offering mass selections to sip and savour. The Roadhouse in Byron Bay is one of those. Run by Dan Wooley, its claim to fame is a staggeringly large 500-variety whisky list. One of Wooley’s favourites? Caol IIa, lighter style Islay island whisky that has “a great balance with a really nice toffee note,” says Wooley. Interestingly Caol Ila is heavily used in Johnny Walker blends as well as Black Bottle. In some ways, it comes as no surprise that today’s hipsters have turned to whisky. As the most aspirational spirit in the world, its appreciation has always been a sign that you’ve made it and you want to share it. Also, the long-term nature of its production means it is alcoholic shorthand that you’re not here for the quick buck but to sip and savour. Despite its high potency, there is an unassuming dignity to drinking it – a handy marker in the today’s jittery post-GFC environment. U nique Luxur y

Australia’s fledgling whisky industry is surprisingly good

Where whisky is made dictates its character

“They are not just good by Australian standards, they’re good by any standards you’ll find worldwide. The balance of peat and liquid honey is without equal anywhere on the planet. We’re talking 90 points plus here. Great, great whisky.” These are the words of Dominic Roskrow, editor of the World Whisky Review after he tasted the products of Melbourne’s Bakery Hill distillery. Created by distiller David Baker, Bakery Hill is one of a small but growing band of mainly Tasmanian-based Australian whisky makers who are challenging Scottish dominance. A biochemist by profession, Baker began distilling in 1999 after “getting a bee in my bonnet from Scots telling me this balderdash that their ‘uniqueness’ made it impossible to make better overseas. It was just like the French used to say it with wine”. Assiduously studying, dissecting and understanding how whisky is made – much like how the forefathers of Australia’s wine industry did decades ago – Baker says that Tasmania and Victoria actually have better conditions for whisky making than Scotland. Now his whiskies are enjoying the ultimate compliment, they’re appearing in Scotland with Bakery Hill bottles spotted in pubs as far away as Loch Ness. Other Australian whiskies worth hunting down include Sullivans Cove, Overeem, and Lark (made by the ‘grandfather’ of the local industry Bill Lark who began distilling in 1992).

LOWLAND South of the Clyde estuary on the west coast, to the Tay estuary on the east coast. They tend to be softer, lighter and more subtle and often display malty and grassy characteristics. Try: Auchentoshan and Glenkinche.

HIGHLAND Most of the rest of mainland Scotland and hence a wide variety of characteristics. They range from dry and heathery to sweet and fruity. Try: Oban, Glenmorangie and Dalmore. SPEYSIDE This small area to the north west of Aberdeen is home to around half of Scotland’s distilleries and produces mellow, sweet and particularly fruity malts. Try: Glenlivet and Glenfiddich. ISLANDS Stretch from the Orkneys, on the north coast of Scotland, all the way down the west coast encompassing Skye, Jura, Mull, Arran and Islay. Typically more robust with coastal influences such as salty but specifically Islay produces heavy peaty, smoky malts. Try: Talisker, Ardbeg and Jura. CAMPBELTOWN Arguably the home of the first distilleries in Scotland, but now only two remain. Traditionally has a smoky style. Try: Springbank and Hazelburn.
