The fun part is that the space that we used for the nightclub was originally the garage for luxury cars. A few years later, it was turned into a condominium. Right away, we started hosting movie premieres and cast parties, with the assistance of Danielle Pelland from Brilliant Consulting Group. Her support has been tremendous for our success in Cannes. One of the best memories was the Babel release in 2006. The movie was in official competition and featured Brad Pitt and Cate Blanchett. For the party, we recreated a Moroccan restaurant, including an all new set of furniture we rented for the day. We have also hosted several of Woody Allen’s premieres, including Match Point in 2005 and last year’s Café Society with Blake Lively, Jesse Eisenberg, Kristen Stewart and Corey Stoll in attendance. Since we are also a very fashion-centric lifestyle brand, we incorporate fashion into our annual pop-ups, with runway shows and

Some other great moments: In 2005, Dita Von Teese performed one of her signature striptease shows at our pop-up. At the time, she was married to musician Marilyn Manson, who came to support his then wife. That year we also held Sharon Stone’s press conference for Basic Instinct 2. In 2006, we had the amazing opportunity to host Chopard’s party with Sir Elton John and Penelope Cruz. Then there was a press junket for the cast of Star Wars, including my dearest Princess Leia (Carrie Fisher). And Sean Penn visited us when he was the president of the jury in 2008. Last year, a special tribute to Robert De Niro was so memorable. Paying their respect to De Niro were Usher, Chris Pine, Édgar Ramírez, Ana de Armas, Mads Mikkelsen, Harvey Weinstein, Lorenzo Soria and Thierry Frémaux. As you can see, Nikki Beach’s continued presence at the Cannes International Film Festival is very significant. As we celebrate our 15th anniversary this year, we also salute the film festival on its 70th anniversary. And we must thank the sponsors we have been honored to work with over the years, including Chopard, Hublot, Perrier Jouet, Cointreay, Remy Martin and Rolls Royce. WHAT IS THE BIGGEST FASHION TREND FOR SUMMER 2017? First off, dewy skin. Like almost sweaty, but not. I love the no-makeup, makeup look. Also loving a Dynasty, gold lamé, shoulder-pad moment for a night out. Very much about playing with hair for 2017. Think braids, slick backs, wigs, just fun. The boring curl is out for me right now. Lately I’ve been loving a good fitting trouser, too.
WHAT ARE SOME NECESSARY FASHION PIECES? Yellow is having its time. Just make sure you’re doing the right yellow. I love a little sparkle by the eyes to pull the whites of the eyes and teeth. Also men’s fashion for women is it. I go to the men’s section at Zara and find the cutest stuff. I just found a nude oversized sweater and a huge graphic tee. It’s fun to pair with some high boots.

Tribe Brings Dance Moves To The Beach
T
his summer, we are introducing the Nikki Beach Tribe, an ensemble of talented performers and dancers. Expect to be wowed and entertained as this dance troupe shows off skills ranging from acrobatics, hula hoop pirouettes, ribbon dancing, playing the bongo drums and other choreographed moves. They are more than just dancers. They have a unique and different approach to entertaining. The Nikki Beach Tribe was created to honor the brand’s six elements, which span music, dining, entertainment, fashion, film and art. Since Nikki Beach opened in Miami Beach in 1998, we have been known for creating the ultimate party vibe with music by our world-famous resident DJs, along with live percussionists and dancers. The Nikki Beach Tribe elevates this emphasis on entertainment with a cohesive, synchronized team of performers who are trained in the Nikki Beach style with choreographed routines. The Nikki Beach Tribe will perform four to five days a week at all of Nikki Beach’s locations across the world. Local castings were held to select the most talented cast. The dancers will be outfitted in signature Nikki Beach tribal-inspired costumes with feathers, crochet, lace, fringe and soft white fabrics. The costumes were designed by Jelena Rudkovska and Paula Forsell. As a former dancer herself, Forsell worked with some of the biggest singers and DJs in the world, including David Guetta, Trey Songz, Jason Derulo, Lil Wayne, T.I. and Bob Sinclar. She now represents Nikki Beach as a PR and Entertainment Ambassador in Mallorca. For themed parties and holidays, the costumes will be more elaborate, theatrical and inspired by the event.

ur favorite day of the week is Sunday! Every weekend, Nikki Beach hosts an Amazing Sundays Brunch around the world, featuring international delicacies, live music and signature entertainment. While each location puts their own spin on the Amazing Sundays celebration, guests know they will enjoy the hospitality and entertainment Nikki Beach is famous for. Our Amazing Sundays Brunch starts with our chef’s creations, often with a never-ending buffet featuring live cooking stations (custom-made omelet, please!), pastries, pasta, carved meats, paella, Belgium waffles, fresh seafood, sushi, decadent desserts and seasonal fruit. However, some locations choose to serve a selection of à la carte dishes from our Nikki Beach menu. Guests are encouraged to share and bond over family-style dining, because, after all, Sundays are a day meant for celebrating life with friends and family. After Brunch, guests segue from the dining area to our sun loungers and opium beds, which, depending on the location, dot the pool, garden or beach. Ease into the afternoon with a glass of rosé, bottle of bubbly or creative cocktail. The vibe is elevated with music from Nikki Beach’s resident DJs, as well as live percussionists mingling with the crowd, sax in hand. Drummers keep the beat, too. Often, there will be a weekly theme with matching décor and our staff dressed as Roman gladiators, superheroes, pirates, tribal chic and even Darth Vader! Whether you are in Koh Samui or Saint Tropez, the inspiration for our Amazing Sundays hails back to the original Nikki Beach in Miami Beach. BOB SINCLAR Every summer on August 15, Bob Sinclar creates the ultimate musical adventure at Nikki Beach Saint Tropez. The superstar DJ producer knows how to work the crowd into a frenzy with just a few strains of his international hits like “Love Generation,” “World, Hold On,” “Someone Who Needs Me” and “Rock The Boat.”
We play so much of your music at Nikki Beach Saint Tropez, and so many of our guests associate your songs with happy memories here. How do your songs capture the spirit of Saint Tropez? It’s the most beautiful compliment people can give me about my music, that I leave them a trace of amazing moments. For me, music is all the emotions of life. It’s my injection of happiness, I need a shot every day. Creating music makes me feel alive. Saint Tropez is one the most well known resorts in the world and remains, after all these years, a fantasy for dreamers. My music and Nikki Beach just fit together, and Saint Tropez is the beginning of this collaboration.

Every summer, you perform for a packed house at Nikki Beach Saint Tropez, but it’s still much smaller than the music festival circuit. What do you like best about playing in front of a more intimate crowd? The crowd at Nikki Beach is not here only to dance, but also to eat, to drink, to seduce, to get tan. You need to capture their attention to excite them so they feel like dancing and screaming. For five years now, our August 15th party is an amazing rendezvous for all of the jetsetters.
What does that moment feel like when you take the crowd to the crescendo? I try to create my DJ set like a trip, a voyage into my music world. It’s an exchange of energy between the crowd and me. This moment of happiness when the dancefloor explodes with the music is something hard to describe, especially if it happens with one of my songs.
How do you prepare for a DJ set? It has to be the right combination with sounds they already know to feel secure about their dancing moment and new underground tracks, which will keep them waiting with excitment for another climax. My goal is always to play a maximum of my own productions and to make them discover different remixes of the sounds they already know. Every day I do mashups, remixes and edits to create unreleased versions of the hit songs of the moment, just to make them more special.
You also recently performed at Nikki Beach Saint Barth for our anniversary. That’s a really tiny space right on the beach. What was the ambiance like? It’s a totally different crowd in Saint Barth. It’s more families, less clubbers. So, I have to build up the energy of the day. My first experience at Nikki Beach Saint Barth was unreal. We had a blast and I could play even more underground and sexy music than in Saint Tropez. I love Saint Barth. I lived on the island in 1991 for eight months and I had an amazing time.
What will be the hit songs of Summer 2017? My next song, of course. Be ready for it.
Where is your favorite place to vacation in the summer? I love to spend time in Ibiza at the end of the summer, the end of August and beginning of September. You can enjoy the ultimate nightlife, the beaches in Formentera and amazing restaurants around the island.
When traveling, what do you always bring with you? I never leave without my laptop. I am mainly traveling alone and he is my best friend to stay connected to the ones I love and to create my latest beats.

When traveling, what do you always bring with you? Sunglasses, a pair of running sneakers, noiseless headphones and my laptop. I try to turn life’s experiences into sounds, so I need my mini studio with me all the time.
What would people be surprised to learn about you? I’m a countryside person. No matter where I am, I usually take time to enjoy a moment of fresh air.
What app are you currently using to make your life easier? Open Table in London and MPG, which is a fantasy football league that is very entertaining.
The answer is in your question. Playing more intimate crowds is always great. You’ve got the feeling like you are partying with friends. Nikki Beach is also special because it looks more like a pool party at home, which makes it super fun.
What type of music do you like to play at Nikki Beach Saint Tropez? I like playing every style of music. On top of my usual house selection, Nikki Beach offers the opportunity to play some tracks from my hip-hop folder.
What songs best capture the spirit of Saint Tropez? “Tous les Garçons et les Filles” by Francoise Hardy and “A Milli” by Lil Wayne.
How do you get yourself ready before a DJ set? It’s a daily routine: A couple of hours a day listening to music, making my own version of songs. I’m working on my sets all year round, so that when the day comes it’s more about catching the vibe to rock the crowd.
What will be the hit songs of Summer 2017? Obviously Ed Sheeran’s “Shape of You,” Jax Jones’ “You Don’t Know Me,” Calvin Harris’ “Slide” and Martin Solveig’s “All Stars.”
Where is your favorite place to vacation in the summer? Ibiza, for sure. It has everything I need: sun, clear and warm water, nature and a chill hedonistic vibe.

NIKKI BEACH’S The fresher, the better! By Chef Brian Molloy
e have been tweaking our classic dishes and introducing new menu items as part of our emphasis on healthful, light and modern cuisine, based on Mediterranean cooking techniques. Our restaurants stretch from Miami Beach to Marbella and from Saint Barth to Dubai. Some dishes may seem familiar whichever destination you visit: You will see a Salad Niçoise, Nikki Beach Salad and Chicken Satay on all of our menus. However, we respect the local traditions and cultures of each region we are located in—and this is expressed with authentic cuisine. Our executive chefs, general managers and culinary staff contribute greatly to these indigenous menu items. Furthermore, we try to buy all of our produce, meat and seafood from local farmers, butchers and fisherman. Since all of our Nikki Beach locations are situated by the sea, we are lucky to have a bounty of local seafood at our disposal, including blue lobster, king prawns, swordfish, octopus, squid, turbot and sea bass. These entrees are served simply with grilled vegetables, garden salad and steamed rice.

In 2017, we will be emphasizing more of this farm-to-table philosophy. In Dubai, for example, we have partnered with a local organic farm that grows fresh produce, and to the standards Nikki Beach is known for. It’s a family-run farm called Green Heart Farm. They cultivate organic herbs, tomatoes, baby spinach, peppers, beetroot, carrots and so much more. Globally, we will also be allocating space at each Nikki Beach location for an organic garden for our restaurants.

The flavor profile is earthy, textured and savory.

How does the Nikki Beach brand translate into a hotel experience? Our extremely loyal Nikki Beach family is following us across the globe, and many of them have paid us very regular visits here in the UAE. The greatest compliment that we can get is repeat clients who enjoy what we do and feel that we do it right. Dubai is known for its 5-star hospitality. How is that exemplified on property? We are aiming to make a difference in Dubai’s hospitality landscape. While most of our market followers concentrate on traditional luxury elements, mostly delivered through abundancy, we focus on quality in every detail, while following a minimalistic approach at the same time. Takes us through a perfect day at Nikki Beach Resort & Spa Dubai. Ideally you should follow your instincts…but, if it were up to me, I would start my day in our lively Tone Gym with our motivated personal trainers for a good workout, followed by a hearty and healthy breakfast at Café Nikki with its amazing setting and views. Every meal here is memorable and meaningful because of the organic products we serve. After this, it is beach time in order to enjoy the turquoise waters and to watch the surfers on our beach. Lunch is reserved for the Beach Club in order to dive into the grooves and vibes of our most precious area in the resort and to enjoy our world famous dishes. Next, I would visit our Soul Lounge to wind down and get ready for a Caribbean-style beachside dinner at our latest culinary highlight, Key West. 15 years ago, premium Champagne was delivered with sparklers. There was no show or particular music added to the presentation. However, when we started to sell larger format bottles, we realized that we had to do something unique in order to make our customers feel special because drinking Champagne should always be a cause for celebration. That’s why we decided to interrupt the music the DJ was playing with short themes and jingles, such as the Star Wars theme song, so that all of the other customers at Nikki Beach would be completely blown away and would pay attention to what was happening. And we quickly realized that the customer really enjoyed being highlighted in such a way that said, “Look at what I’ve just ordered. Let’s celebrate together!” Then, we introduced costumes to our presentations, to match with the music and to add some fun. We ended up entertaining more and more guests in the process. The next innovation was about carrying the bottles, mostly when we had to deliver a large amount of Champagne. It was in Saint Barth where we first delivered Champagne with a special “structure.” The first time was in wheelbarrow inside the restaurant. We were so surprised by the very positive reaction from our customers who were entertained by this “show” that we understood that day we had to improve it, and hence, the concept of the Champagne delivery was born!

Each year, we have gotten more and more elaborate with these Champagne deliveries. The idea is to surprise and to destabilize the customer so that season after season they will expect a bigger “WOW!” factor. Nowadays, preparing and organizing Champagne deliveries is a full time job. For our guests, however, there’s no need to reserve in advance. We always have enough stock, and, moreover, our suppliers can deliver to us within 15 minutes, seven days a week. When a customer wants a show and wants to order something “special,” we bring him into our refrigerated storage area, where the Champagne is stocked. They choose their bottles, as if they were in a market. People are so amused about this very “astonishing” way to buy Champagne. Out of all of the Nikki Beach locations, Saint Barth probably does the most Champagne deliveries, but that location is open for ten months each year. Saint Tropez does a lot, too. That’s where we do the most extravagant ones because we have a bigger “game” area there. The most over-the-top Champagne delivery was two years ago in Saint Tropez for one of our favorite and “craziest” customer. A few days before he arrived, I asked him, “are you afraid of heights?” “No, I’m not,” he answered, “but why that question?” “I want you to be the king of the day,” I told him, “and also I want you to fly.” “No way,” he said, “you can’t.” “I promise you, you’ll fly.” And fly he did! For the day, we rented an aerial bucket truck that we placed alongside the pool, and then we hid it with a wood structure and tissues matching the colors of the flag of where the customer was from. For the show, the customer was elevated 16 meters above the pool with a Superman costume and accompanying music. Champagne Sangria 20 ml Brandy 20 ml Cointreau 100 ml Orange Juice 50 ml Lemon Juice 15 ml Almond Syrup 75 ml Champagne Assortment of Sliced Fresh Fruit Add brandy, Cointreau, orange juice, lemon juice and almond syrup and mix with a bar spoon. Add ice. Top with Champagne and sliced oranges, lemons and strawberries. Our bubbly, kicked-up version of sangria.

Saint Tropez Sparkle 15 ml Vodka 15 ml Strawberry Puree 15 ml Pineapple Juice 75 ml Champagne Pour vodka, strawberry puree and pineapple into a cocktail shaker. Add ice, shake and strain into a Champagne flute. Top off with Champagne. A potent potable with fruit-forward undertones.

Add aperol and peach liqueur. Shake well and strain into a chilled Champagne flute. Top with Champagne. Fruity and complex, we love sipping this in the early evening.
