This is the first issue of the Corporate Journal “Kakhetian Traditional Wine-Making”, which aims to inform the consumer about the company’s past, present and future, in order to highlight the mission and work of our company. The company’s history starts at the end of the nineteenth century, when in 1880 my great grandfather Antimoz Chkhaidze planted a vineyard in Askana, one of the most beautiful villages in Guria region in western Georgia, and continued the ancestral traditional methods of winemaking in his marani wine cellar. His wines became also known

outside Georgia. My father is from Askana and my mother is from eastern Georgia, the ancient village of Velistsikhe in Kakheti. For me and my brothers the peculiarities of relationship between the eastern and western parts of Georgia were something natural. My brothers

winemaking to the full. In 1998 we created the company “Askana Brothers”. The company became successful and in 2001, I founded a company under the name of “Kakhetian Traditional Wine-Making” – KTW, as I wanted to underline the importance of preservation and popularization of the 8,000 year old unique The wines produced by the company are named after the geographical names of the wine-making regions: “Akhasheni”, “Khvanchkara”, “Kindzmarauli”, “Tsinandali”, “Mukizani”, etc. The company also produces a range of branded wines: “Chakrulo”, “Kvarlis Veli” (Kvareli Field), “Kakhuri Tradiciebi (Kakhetian Traditions)”. Our totally new initiative in 2013 implies the bottling of the premium class rare wines collection. The company produces three types of sparkling wine “Galaktioni” and several types of “Chacha”, which are quite popular. The Georgian brandy “Old Kakheti” also produced by KTW is a sales leader in Ukraine for the past several years and I want to note with gratitude merits of our partner in Ukraine Bel’s company and its director general A.Nemesel. The wine is either bottled in Italian type glass bottles or stored in qvevri pitchers according to the ancient Kakhetian tradition. KTW also led the way of bottling the wine in genuine clay decanters and carafes. Each of those

jars is handmade and specially designed, therefore unique. The company has its own vineyards in different regions of Georgia. Thanks to the well planned market policy, KTW products are sold outside Georgia. The company established ties with partner companies in Ukraine, Belarus, Lithuania, Latvia, Estonia, Kazakhstan, Great Britain, Germany and China. The company coordinates the concept of new products with the recommendations of the specially created Council of Elders, which consists of well known specialists in the different fields. The company also responds to the challenges of social responsibility and participates in charity events. Each year the company holds the popular art festival “Georgian Spirit”, the Memorial Evening of Ilia Chavchavadze in Saguramo, which has become a tradition. The “Queen Tamar Foundation” has also been established by the company for better implementation of the charity events. Thanks to the synthesis of old traditions and modern technologies, the company produce enjoys considerable success in the international exhibitions and competitions. The number of gold, silver and bronze medals and various diplomas has exceeded 100, including prizes earned at prestigious international exhibitions like “Decanter”,

STEPS OF YOUR COMPANY, “KAKHETIAN TRADITIONAL WINEMAKING”. - The year 2001 was a difficult period for the business and for the country. I had a great potential and ambition to develop my business according to my knowledge and experience. I mean the company “Askanian Brothers”, founded based on family traditions in 1998. Despite many obstacles in 2001 I founded the company “Kakhetian Traditional Winemaking” – KTW; however the difficulties that I overcame then are something that I remember with pleasure today. WHY DID YOU CHOOSE THE NAME “KAKHETIAN TRADITIONAL WINEMAKING”? That is because of my origin. From my father’s side we are from Guria, the beautiful village of Askana, and from my mother’s side we are from a province recognized as a homeland of vine in east Georgia – Kartli and Kakheti. My family had to travel regularly from Guria to Kakheti where my grandparents lived. Our relatives from the villages repeated the same thing – Do not forget your native village, where you have received so much love. My granny-Liza’s words still sound in my ears: “Kids, wherever you go, never abandon your

When I had a chance to choose a new name for the company, I named it “Kakhetian Traditional Wine-Making”. Maybe, from the marketing point of view, the threeword name sounds a bit awkward as the name of a company. Of course, I could choose something shorter but I still decided to follow the traditions and give the company the name with a broader emphasis: “Kakhetian Traditional Wine-Making”. I had a feeling that the century-old traditions of wine-making will have a great potential in the future as well; today many people understand that it is a real treasury. had to switch to using Italian glass bottles. The widening of the production line involved more funds - the cause demanded costs, and the bank loan required guarantees, so I sold my first “Volvo” and this is how I financed my first produce; the funds were put into circulation and the revenue was reinvested, which is what we do at present. They say we have the most diverse product line and thank God we are known as one of the most successful companies, not only in Georgia. DEAR ZURAB! TODAY, YOUR COMPANY PRODUCES ALL TYPES OF ALCOHOL PRODUCTS. HOW DO YOU MANAGE SUCH WIDE-RANGING PRODUCTS? You must think about the diversification of activities from the very beginning, the beginning, as you start your business, I already mentioned that when we were taking our first steps, all segments of the market were full of different bottled wines: cheap wines, falsified wines, expensive wines; the competition was rather tough, so we had to think about the diversification and act accordingly. We pioneered the bottling of wine in clay decanters – the product of this type did not practically exist on the market; later we continued with bottling of wine in Italian glass bottles and produced the so called “Georgian Family Wine”; we began to age the ethyl alcohol that we distilled from wine – and made brandy, trying to age it in the “Iberica” - Georgian oak casks – and achieved remarkable results. We did not expect the sails of the “Old Kakheti” cognac would go so well – so we increased the distillation and then aging the alcohol and added it to the amount of wine that was to be used for spirit aging. We import cognac alcohol from abroad while purchasing local produce as well; we are among leaders in cognac sales in Ukraine for the past 5 years. According to our data, in 2012 we supply the 30% of the Ukraine’s imported cognac, which is a rather big success. We also increased the production and sales of wine products. I want to outline the

fact that we are diversifying not only our product line but also the market. Gradually we increased our “export geography”. In the last years we added such important markets as China and countries of Middle Asia: Kazakhstan and Turkmenistan, where we hold fair and strong positions. We export our products to 12 countries and at this stage the problem of expansion is not our immediate issue. We are trying to settle within the existing markets, deepen the relations inside the country and increase our sales. Besides, at present we find it preferential to re-equip the plant technically, retool it and increase its capacity rather than to expand the market, and this is exactly where we use our investments. Thanks to this policy we have already almost the 100% annual growth for the past 5 years and that is a very important indicator. Here I want to express my deep gratitude to all employees who work or had previously worked with us, those who have contributed to our company’s success. We have a small but very ambitious group of young managers working with us. Without their support we wouldn’t be where we are today.

DEAR SIR, YOU MENTIONED THE SO CALLED “VELISTSIKHE VERANDA” IN THE REGION WHERE YOUR MOTHER’S FAMILY COMES FROM, WHICH, AS FAR AS I KNOW IS A PERFECT PLACE FOR ATTRACTING TOURISTS. I value my past, which is probably the case with many people. I remember my grandfather and grandmother, who filled me with affection and tenderness, with great love. The affection and tenderness is absolutely essential in wine-making. If the producer fails to put his heart, tenderness and affection in the process of wine making, the wine will not be good. people in need, those who were around her; both strangers and acquaintances, always equally shared her care and attention towards others. We learned about that much later, we made and decorated the spring that carried her name. Besides, I decided simply to restore my grandfather Gigusha’s marani – the wine cellar in her house, in order to make kvevri wine for the family. However, when we first started to implement the idea and got acquainted with the initial sketches and designs I considered the idea of expansion. My neighbors offered their help in the form of pitchers – qvevri – some of the pitchers were older than 100 years. Later, when in the beginning of my business career I went to Velistsikhe with my future partner from Britain, I read it in the expression of the faces of my guests that the place could be attractive for tourists. Gradually everything was written, designed and built according to a new vision and today we have a wonderful place called “Velistsikhe Veranda”, where visitors can rest in a beautiful Georgian homestead with Marani that takes in as much as 40 tons of qvevri wine, a tasting room and chacha distillery. They can enjoy real Georgian bread and wine: the bread is baked in the yard in a national type of bakery; traditionally made brazier mtsvadi, and unique qvevri wine are all made in the same place. I’m very proud that the interest towards qvevri wine is gradually rising throughout the world. It is the second year since we began our sales of qvevri wine in several countries. This wine became especially popular in China. Can you imagine? One spoon for each Chinese person, and we are running out of qvevri wine! (Laughs) I think that all that I told you about Velistsikhe is a festival of Georgian spirit. To me it is important because I can share the warmth I’ve been given in the past, and bring it in present and future, sharing it with future generations and guests, spreading the word about our traditions, about where we come from and what roads we like to take.

Instead we use our resources to increase and gain the plant’s power. With that in mind we are building a new plant on the territory that our company owns on the Kakhetian Highway, near the entrance in the Patardzeuli village. The new factory will be equipped with modern assembly lines, significantly increasing the potential of our output. Moreover, it is a well known fact that Mtskheta is our pride and a holy place. “Chkhaveri” wine was a total surprise for me. Our family name is directly connected, so to speak, with the Chkhaveri vine; the stem of the word is similar, - “Chkha”, which is derived from vine. This year we bottled the white and natural pink Chkhaveri wine for the first time. It earned the highest rating from sommeliers. We called the wine “Chkhaidze Chkhaveri” after my ancestor Antimoz. There are other sorts of Gurian vines that we plan to revive: one of them is “Janis”; as for the “Odessa” or Isabella sort, I don’t agree with the widespread unflattering opinion – this sort is unfairly neglected. I believe it’s a remarkable sort and we can have a different aroma wine from it. We decided to build a marani under the name of my great grandfather Antimoz Chkhaidze in Askana. We want to open a Gurian wine museum on its basis. The project requires several years. I want to revive the production of Gurian sorts of wines and collect ethnographic material about the history

of wine-making in the western Georgia. This is directly related to our history and traditions. The museum will host the wine salon, the tea salon, and the salon of various fruits that yield remarkable high level alcohol. To bring an example, there are about 20 sorts of wild plums only in Guria. Many sorts were used for medicinal purposes from the ancient times. We plan to start first with the sorts that grow in Adjaria and Guria. During the Soviet period only Rkatsiteli sort was encouraged, to grow in Georgia in order to fulfill the state plan, but what about the other 500 vine sorts that grow in different regions of Georgia? Alas, many of these sorts have been lost without trace. It is our debt to restore step by step that ancient riches, create sapling farms that will distribute saplings to population free of charge in order to be cultivated in vineyards. The government has already started the implementation of free programs to help the village. Our company plans to take part in this undertaking of patriotic significance and value. This

is not a matter of one or two years, but our nation has vine culture and wine-making skills in its blood for 8,000 years. That is our paramount duty! We have to pass this treasure to our children, transmitting to them everything that this rich, God blessed nature - and our ancestors left to us as an inheritance. The future the company and me is my children: Aleksander, Nikoloz and Konstantin. I don’t know yet what type of career will they choose, but Sandro already works for KTW and has successfully presented our production on Wine Expo in Czech Republic. He decided to study business administration and starts his higher education in the New York University. Niko is freshmen at The American Academy of Tbilisi, while Koko is in the second class at Caucasian French School. In 2006, Russia introduced an embargo on Georgian wines, which was a very difficult moment and the turning point for the whole Georgian wine industry. It is also true that today, because of the banning, the Georgian wine was introduced to many other countries for the first time. Georgian wine-makers were forced to develop oversupplied western markets and get into competition there where the quality of the product was decisive and critical for its sales. We produce classic Georgian bottle wines such as: Kindzmarauli, Akhasheni, Khvanchkara, Tsinandali, Mukuzani, as well as relatively rare sorts of wines, produced from grape sorts such as: Chkhaveri, Chinuri, Tsolikauri, Tsitsqa, and others. Apart from the bottled wine, the company pioneers the output of the wine, which is bottled in genuine clay carafes. Each jar is handmade and has original design and shape. The unbeaten products of the company are the “Old Kakheti” brandies of various aging, highly popular among consumers. One of our strategically important markets is Ukraine, where in the last 5 years our brandy “Old Kakheti” has been a sales leader among other imported brandies. That is a notable success. The company also produces 5 types of Georgian chacha following the consumer demand: classic, tarragon, as well as honey, orange and lemon flavored chacha. All of the above types are gaining popularity among consumers; also, taking into account the old traditions, the product is expected to reach promising positions on the Russian

market if the latter will open for Georgian alcohol products. It must be mentioned that the exports of the company’s Kakhetian brandy are growing each year. To bring an example, the volume of the 2010 output is increased by 50% compared to the previous year; in 2011 the output was increased by 80% and in 2012 it was increased by the record 100% compared to the previous year. Our products are exported to 15 countries of Europe and Asia. The top three importers of our products, along with the Ukraine, are Belarus and Kazakhstan. The sales in China, Baltic states, UK, Germany, Hong Kong and Taiwan are also on the rise. The producta of our Company have been accredited in the Russian “Rosspotrebnadzor” Commission as a result of which the Company has been admitted to the domestic market that will significantly increase the capacity of our exports. During the last years, the interest towards natural qvevri pitcher wines made according to Kakhetian technology has been rising in the Chinese market which has also a particular significance due to its scope and dimensions. My first exhibition The company “Kakhetian Traditional Wine-Making” approaches the subject of international competitions and exhibitions very seriously. Events like that are considered the best opportunity to increase the recognition of the company and its produce on an international level. In the last years, the company has become an owner of a number of prizes in such prestigious exhibitions and competitions as: Decanter, Decanter-Asia, Prowine, Hong Kong International Competition of Wine and Alcohol Beverages, Terra Vino, etc. The company always makes special preparations for each exhibition. The whole team gets involved in the process as they create advertising material, booklets and flyers. The different national products, which are offered as souvenirs, are always in demand and highly popular among the guests of the exhibition. I will always remember my first exhibition – the Hong Kong International Competition of Wine and Alcohol Beverages, as I went to Hong Kong on a business trip. I remember my preparing activities. I went through special Company trainings, had to learn a lot about wine and Georgian vine sorts; I was full of enthusiasm when I arrived in Hong Kong. I had preliminarily studied the market, including the tastes and interests of the local population. I knew that Hong Kong was completely different from China, but I couldn’t have imagined that the difference would be so radical. Hong Kong was much more developed, refined and beautiful, much more European than I had anticipated. When it came to the issue of wine the people turned out to be even pickier then I previously thought. I arrived at the exhibition center an hour earlier. I wanted

to make sure the expo booth was in order as everything had to be a 100% ready. I was proud that I was the sole presenter of my country and the company. For the next three days I did not feel tired. On the first day, everything was very fast and quiet. A special dinner for the companies that participated in the Hong Kong Wine and Alcohol Beverages Exhibition was planned in the evening, during which the year 2013 was declared a year of the Georgian wine. In addition, a group of international wine experts underlined the taste qualities of Georgian wine and praised its rising international popularity. The participants of the exhibition were awarded prizes. I was overjoyed when I learned that our company was awarded six medals, which were given for wine and products with high level of alcohol – such as our brandy and chacha. The company’s brandy “Old Kakheti”, of 5 years of aging, along with its premium chacha was given bronze medals. Another bronze medal was given to the company’s specialty ladies’ wine “Rose” and “Kvevri Rkatsiteli”. The 2009 Mukuzani received a silver medal. Apart from that we were given the bronze medal for our wines’ compatibility with the local dishes.

All three days of the exhibition were quite successful from the point of view of the number of local importers present at the exhibition, contacts exchange and the agreements achieved. To me it was very delightful that the exhibition visitors had prior knowledge of Georgian wine; they knew that Georgia is a homeland of wine and they were expressing their interest towards qvevri wine. Due to the fact that they were prepared with the special technology that allowed reducing the content of harsh tannin, the qvevri wine Rkatsiteli and “Velistsikhe Verandah” were relatively easier for foreign consumers to appreciate and received considerable acclaim. Another discovery was that the exhibition visitors had already heard about the Georgian chacha and, however surprising it may seem they found its taste quite agreeable and pleasant. The company produces five types of chacha: honey, walnut, grape and tarragon flavored chacha. The last one, tarragon

The expo booth was decorated accordingly. The wine in clay carafes – a visiting card of our company, left no visitor unaffected as they admired the handmade old clay jars. The opinion was split from the beginning. There was a group that believed that the major motivator was an outside factor (Skinner, Tailor), or, to put it other way, they believed that the motivation depends on the use of methods of encouragement and punishment. The culture of wine and feast - supra exists in Georgia since ancient times. The institute of chashnagiri – a wine taste examiner, synonymous to present-day sommelier, has always existed at the royal court. The person working as chashnagiri had to taste the everyday food and drinks of the king and it was only after their evaluation and tasting the food was approved. Chashnagiri was loyal to the king; in addition, the person of this profession knew how to meet and treat different guests – whether desirable and undesirable to the king. The term “sommelier” first appeared in the 19th century and is linked with the development of the big restaurants and hotels. The profession of sommelier existed until the end of the 19th century, though gradually it faded away because of the economic crisis in Europe. However, in the 20th century however, following the development of industry and revival of the big cities, the profession started to revive once again in the countries that had the institute of viticulture already developed. Today, the International Sommelier Association (ISA) includes 40 members and there are a number of candidate countries aspiring for the membership in the association. The stem of the word sommelier comes from the French “somme/sommier”, more exactly – from the Provencal “saumalier”, which means someone taking care of the bullock cart animals (bulls) that helped to transport products and drinks. The meaning of the word changed with time and today, the word stands for a person responsible for servicing the drinks in the restaurant. The profession is doubly responsible because a sommelier is in charge of both offering the wine appropriate for the occasion and assessing the quality of the wine, also giving the recommendations regarding the food that best suits any particular wine. the Kakhetians having a splendid sense of humor, like to say: the eye appreciates the color; the nose senses the aroma; with the mouth, we appreciate the taste and in order that the ear isn’t left out, the wine should be poured in a thin glass, so that when we clink the glasses, the pleasant tinkling is heard. That said we can safely assume that all the major senses participate in the judgment of the wine quality. Speaking of glasses, wine is perfectly presented in thin, transparent and delicate Crystal goblets of moderate size that should be filled 2/3 of their maximum capacity. The wine is a drink that has an ability to underline the whole range of aromas and tastes that are present in food. It makes it possible to appreciate both tasty and tasteless food, as well as eat food that has no taste at all. As for the combination of wine and food, I want to give a few suggestions to the reader. Everyone knows that our tongue can distinguish four different tastes, as follows: sweetness, sourness, saltiness and bitterness. All these basic tastes are felt with the different parts of the tongue; for instance, the tip of the tongue is responsive to sweetness; the sourness is felt on the sides of the tongue, while the salty food is best appreciated with the middle part. As for the bitter taste, it is felt at the base of our tongue. On the other hand, the Japanese, based on their particular food, have “created” the fifth taste which they call “umami”. It is hard to define or to describe it, though it is closest to the taste of boiled mushrooms without any addition of salt or species. The Japanese use the word umami to refer to sea food. The wines of KTW vary and can satisfy the taste of any consumer. The company offers kvevri wines made with very old Kakhetian technologies. These wines went very well with the taste of umami and were greatly appreciated by the Japanese as well as Chinese consumers. It is useful to follow the basic and generally accepted rules of combination of wine with different kinds of food. The following examples are offered based on the assortment of wine produce of KTW. KTW COUNCIL OF ELDERS The institute of the “Council of Elders” was first formed simultaneously with the creation of the Roman State. The Latin name for the Council of Elders is senex or the senate. The institute of senate was active for 1129 years, during which it has written many triumphant pages in the history of the humankind. Later on, other states applied their peculiar national streaks to the model of the Roman Senate. In Georgia, since the times of Tamar King, the Darbazi Council of Members functioned as an adjacent institute to help the kings in solving the problems of the state. The members of the Georgian Darbazi, as they went on in years and gained wisdom, were called darbaiseli. At the beginning of 2010 the management of “Kakhetian Traditional Wine-Making” has called the convention and chose a group of people highly esteemed in the country to which the concept of darbaiseli and reasonable personalities was well applied, and they formed the “Council of Elders”. Having done a lot for their country in their respective fields, the members of the Council of Elders are well known in the society. The meetings of the Council of Elders are held once a month to discuss a variety of issues that arise before the company’s management: development of production facilities, structural changes, economic and business policy, planning of the new produce, charity, as well as an enjoyable ritual of tasting the new produce that all members of the council appreciate. In 2011, the Council of Elders welcomed the Velistsikhe residents and met them at the Great Hall. Among the subjects discussed at the meeting were love of homeland, raising and moral upbringing of future generations as well as different problems that the village faced. In 2012, to commemorate 800 years of the death of Georgia’s Tamar King, the Catholicos-Patriarch of All Georgia named that year after her name. Following the initiative of the Council of Elders, KTW has been arranging the meetings with population during the last 2 years; these meetings were held in memory of Tamar. Among others, the meeting in Akhaltsikhe and Vale was unforgettable. At the meeting, the phenomenon of Tamar’s reign was discussed between the local public and the KTW Council of Elders. There was a lot of singing, citing of Georgian verses and dancing – all that is generally associated with the Georgian spirit! Apart from those events, the members of the Council hold seminars for the company employees, familiarizing them with the wine-making, ethnology and marketing and helping them in resolving of various issues. The Council of Elders has worked out big plans for 2013. This year, the meetings commemorating Tamar King will be held, celebrating the “Georgian Spirit” in Chargali, Poti and

FILL ME WITH WINE – I WILL FILL YOU WITH JOY There is a popular saying in Kakheti: “When people appeared on the earth the God provided them with vine”. This saying reveals some very special purpose that vine and wine bear in our existence. In the evolution of Homo Sapiens, vine seems to play the role of a milestone of that exceedingly important process – as if in relationship with the vines a man transformed into a true human being and signaled the point of his cultural growth and esthetic development. The tchuri, i.e. qvevri, filled with wine to the brim represents the crown and reward that the winegrower gets after a year of tireless labor. So, if no man stands beside it, if no one appears to taste the wine that the tchuri contains, no man is around to drink and appraise the wine – the tchuri must feel miserable. It is so easy to disclose that feeling, and equally easy is to grasp the reason why the triad of vineyard, wine and marani transformed into the sole sacral matter, these three concepts are entwined and intermingled – and converted into some specific kind of activity sphere where a man is supposed to be examined and tested. They say, not a person has ever seen a sane Georgian sitting alone at table with a pitcher of wine and drink it in solitude until drunk. Feasting in solitude for a Georgian is sheer absurdity because for him joyousness implies being with others, among people and wine is the perfect means to share the joy one feels. The development of that nature has its centuries-old roots. The said can be supported with the example of an ancient and wide ceremonial silver belt with the series of mundane scenes on its plates. The scenes represent the beauty of life and nature, they are impregnated with the

the unique Mtskheta masterpiece we mentioned but still, it is a rare case of preserving by the ancient world a so much full-blooded representation of the worship and deification of the holy drink. Within a small range of the present article we shall not dwell on many aspects of the wine culture but still we want to describe in a few strokes the Georgian attitude towards the wine storage utensils and ware that has ever conveyed much more than the attitude to it from the angle of its utilitarian value. The fact is that the clay utensils have always been regarded as the major issue in wine-making and the Georgian archeology discloses the exceptional materials and it is difficult to find an analogue worldwide. One of the examples of utensils is a small qotso jar found in Qvemo Qartli, dating back to the 6th millennium with bunches of grapes on its sides. Now, whoever perceives the vine as a concept, shall easily imagine the feeling and admiration of the person living eighth thousand years ago who diligently created the grape image by the tiniest clay morsels, to let his distant heir after many centuries in future discover the character and nature of the ancestor – not just his home or wealth – and the chief intention as regards to the heir was to let him compare himself with the forefathers. Sometimes the instances of the implicit comparison to parallels with genetic relatedness bear a special burden. Wine always provides the energy needed for the spiritual delight, for the force for an earthly joy – without it a man can never be complete, therefore he started as early as that to express that feeling in various forms. One of those feeling is reflected in the diversity of the utensils related with wine drinking. The esthetical aspect of the process of wine drinking is determined by the purest nature and character of the drink,

The wine itself dictates the form of the specific utensils and ware to drink it and a man obeys with pleasure. This type of attitude and “relationship” is reflected in the descriptive material amply provided by the Georgian archeology – so we suggest the reader to see the unique images of those ware and utensils: the 3rd millennium Bedena kuchkho, and “legged bowls” of the same period found in Sachkhere and Jinvali; the 5th millennium jug and bowls found in Qareli, clay cups excavated in Marneuli, the 6th century jug with handles found in Shida Qartli, the VIII c. B.C. specific kochkho from Samegrelo, the horse and bull figurines of the III-IV cc. B.C. – found in Qareli and Kaspi, a clay kantsi drinking horn from Qartli, the X-XI cc. kantsi drinking horn from Svaneti, and many others. According to the Georgian historical sources, along with the valuables, in the royal treasury of the feudal period were stored also the wine drinking ware and utensils. The French negotiant and traveler Jean Chardine was present at the wedding of the Georgian prince and failed to hide his emotions and amazement at the sight of golden and silver goblets, decanters and carafes brought to the festivity table. The epithet of Tbilisi widely known in Oriental countries was the “city of joy” inhabited by people fond of festivity and wine. In that type of environment were developed various and original pieces of utensils like karkara and azarfesha, and in other places – kula, marani, “juggie family”, kantsi, “threeeyed” samtvala, kochkho, piala, tasi, and the others. In his thesaurus and explanatory dictionary, Sulkhan-Saba Orbeliani defines karkara as a “vessel that echoes the sounds” and provides a detailed physical description and image of that thing’s utilization: “So, the volunteer takes the karkara filled

to the brim, brings it to his lips, lifts a bit the end and the wine flows with gurgling; the guests listen to the process in silence, watching the drinker with smiles savoring the wine flow sound and admire the strange aria of wine. Sulkhan-Saba Orbeliani, our great lexicographer represents the wine drinking from the karkara as an experience of a “charming beauty”. To the karkara type ware are attributed also kula and chinchilla. The wooden chinchillas and the kulas made from the wild pumpkin represent the achievement of west Georgian winemaking – they both suit the taste of a bit sourish wines of Imereti. Unlike karkara, chinchilla does not suit the feasting table, but it suits the spring and summer conditions when the winegrower tired from heat and work in the vineyard requires the dose of recuperative wine. The narrow “throat”-part of chinchilla is provided with a small partition that hinders the free flow of wine; so, the wine flows with unhurried gurgling, in a someway “miserly” way – which lets the drinker prolong and enjoy the process. As for kula – it occupies the middle position between chinchilla and karkara. Unlike the west Georgian manner of using wild pumpkin for making a kula, in east Georgia it is made of wood – but not infrequently decorated with inlaid niello silver details. Among the wine drinking ware a special place for its great semantic loading is attributed to marani – popular in Shida Qartli and Kakheti. The attitude of Georgians as regards to the wine culture in general, represents a quite extraordinary event that clearly represents a long way of multifaceted economic relations. The fundamental diligence and labor of Georgians opened the mysterious world of economics – so, he fully deserved that exceptional gift of God as wine is. Georgia is mentioned among the countries with the unique vine sorts and highly developed viticulture. An outstanding Georgian poet once wrote that “A poet cannot help admiring immensely historical roots of his nation; for the number of centuries these roots are entwined with the roots of vines”. Nino Enlightener, Equal to the Apostles, Preacher and Disseminator, Nino of Capadocchia came to Georgia in the 4th century “holding a cross of vine twigs” in her hands. That was in Mtskheta, in the patron city of Georgia when she raised the cross she made of the vine twigs – to pray. Vine-adoring and literally its worshiping are reflected in Georgian musical and poetical folklore. Folk literature provides innumerable examples of praising and appreciating vine. That attitude is reflected even in popular sayings like – “Hey, vine – I grow and raise you like my own child”, “The God-blessed vine”. Many of us remember the thrilling and emotional scene of the unforgettable episode of Rezo Chkheidze film “The soldier’s father” when on the front line already in Germany the Georgian peasant suddenly finds the vines growing and spares no words to express his prays and affection at the sight of it/ The dedication and love of vine is indeed incomparable and unique in Georgia – to the point that traditionally a guest greeting his host and inquiring about the heath of the family

The vineyard symbolizes Christ and Virgin Mary in theological literature. The first phrase of King Demetre’s iambic – “You are the vineyard” echoes St. John’s Evangelist’s words: “I am the true vine...” (St. John, 15, 1-5). During many centuries the enemies of Georgia perfectly well understood that destroying the vineyards signified the destruction of the people’s faith and destruction of the nation itself – and for that reason the hordes of enemies cruelly punished the vineyards. Even now cutting down the vines prompts strong negative emotions in people. It took several centuries to revive the vine culture after the invasion of Tamburlain in XIV c. It can be said that Georgian vine experienced the same horror and hell in the course of its centuries-old existence – as the Georgian people. But the

A number of researches have been dedicated to the history of the Georgian vine – and their flow still continues. We count quite a few written sources with attempts to define its role and place in the context of evolution of vine culture in other countries - and on the world scale in general. Little by little grows the distribution area of our wine, along with the gradual improvement of the winemaking conditions. We tried to attract the reader’s attention to the origin of the word ghvino. According to the scholars’ and scientists’ opinion, the root “ghvin” has a purely Georgian – Qartvelian origin. In the course of the dramatic changes of millennia and

FAMILY TRADITIONS IN GEORGIAN WINE-MAKING The Georgian vine – with its history of many centuries traditions is one of the oldest in the world and makes an absolutely special phenomenon. In Georgia – our history, culture, way of life and character are connected to Georgian vine sorts and ancient technologies of wine-making. The grape and grape wine take a special place in life of Georgian people. The wine is a product of work of both the vine-grower and the wine-maker. The former takes care and cultivates the vine while the latter produces the wine. When taken reasonably, the wine can be a man’s best friend but it turns into the biggest enemy if drunk excessively. The humanity makes and uses grape wine for thousands of years; thus the development of vine culture and wine-making is inseparably connected with the history of humankind. The bunch of grapes and wine were the symbol of friendship and peace from the ancient times. Georgian peasants have cultivated the vine, creating and passing an ever improving agrotechnics and wine-making techniques for centuries, from one generation to another. Georgia is one of the remarkable corners of the planet. The renown of Georgian wine counts many centuries. The real artists in their field, Georgian wine-makers create excellenttasting wines that have gentle aroma and bouquet, beautiful color characteristics and other important qualities; they also make high alcohol drinks. It is a scientific fact Georgia is a country that civilized and domesticated wild grapes for the first time. One of the historic possibilities suggests that it was here in Georgia that wine and chacha alcoholic beverage was prepared. In Georgia the whole generations of people were involved in this field in the 19th c. – with their registered firms and companies, they created the wine products and vended the produce much earlier than other well known companies in Europe and Russian Empire. The history of development of Georgian wine-making is unimaginable without the well-born and noble people. Their worthy representatives – Bagrationi, Jorjadze, Eristavi, Sharvashidze, Makashvili, Jandieri, Cholokashvili, Kipiani, Tsitsishvili, Vachnadze, Andronikashvili, Orbeliani, were not just involved in the production of wine and strong alcoholic drinks, but were brilliant representatives of the Georgian aristocracy. The Georgian vine has joined and become so intimately linked with Georgian people that they both can be viewed as synonyms. At the mention of Kakheti, one instantly sees Rkatsiteli and Saperavi; the same is with other regions and their characteristic wines: Kartli is associated with Chinuri and Tavkveri, Imereti with Tsitsqa and Tsolikauri, Megrelia with Ojaleshi, Guria with Jani and Chkhaveri, Racha with Aleksandreuli and Mujuretuli and Lechkhumi with Usakhelauri. Georgians have been making wine since ancient times. In the beginning the methods used were most simple and primitive. Later the production methods changed to assimilate more civilized ways, including the Kakhetian and Imeretian technologies. The most recent technology to influence Georgian wine-making has been a modern European technology. The work of the Georgian wine-makers can be divided into three categories: the first category consists of landowners who had their own vineyards and wine cellars, people who made their own wine and sold it from their wine cellars and storehouses as well as depots, shops and taverns. had foreign vine-growers and wine-makers to come and work for them for a certain amount of money. In the second category there are wine-makers who, in order to obtain the necessary knowledge and practice, worked in prominent wine cellars, where they made excellent wines in cooperation with foreign specialists, receiving prizes at international exhibitions and competitions. The third category consists of children from the well-off families who acquired theoretical knowledge and practical experience in viniculture and wine-making in Europe’s vinegrowing and wine-making schools. When they returned to Georgia, they established recognized companies, built wine cellars and factories and purchased modern machinery and

equipment. Apart from making and selling wine, they were appointed to high office jobs, cooperated with journals and newspapers, published interesting materials and references about the future of the trade, taught and passed their knowledge on to the youth. Among them are: General Ivane Bagration-Mukhraneli – the leader of Georgian nobility, Alexander Chavchavadze – well-known romantic poet, public figure, GeneralLieutenant, Zakharia Jorjadze – Honorary Chairman of Caucasus Agricultural Society, Solomon Cholokashvili, Ermile Nakashidze, Giorgi Bolkvadze, Vakhtang Tsitsishvili and others. In Georgia, the names of Georgian vine-growers and winemakers that cultivated, made and sold wine for years are known from the beginning of the 19th century. But years and periods of instability in the country did not allow the field to be fully developed, thwarting the potential and breaking the line of inheritance – as the knowledge was not always transmitted to future generations in the form of family traditions. Today, the descendants of the following families are no longer cultivating vine or making wine: Nakashidze, Tsinamdzgvrishvili, Cholokashvili, Tarkhnishvili, Vakhvakhishvili, Jorjadze, Chavchavadze, Jandieri and Mukhran-Batoni. It’s a pity that years of experience, the time and money spent, the success achieved – all that’s obtained with such great effort and selfless work, is not continued in future generations in a field like viticulture and winemaking. The well-known foreign companies haven’t gone through the same hard time that Georgia has seen; that is why their notorious dynasties still exist, the young generation continues the business of their ancestors and companies are led by 7th and 8th generation of wine-makers. There is a World Winemakers Family Dynasties Association that unites only those companies that are owned by the private individuals. The firms are seeing the different generations of the descendants of winemaking families continue the business of their ancestors for years. Fortunately, there always are exceptions; the new wine-making companies that are created today in Georgia are successfully operating in the field of winemaking and alcohol beverages and continue their family traditions. One of the companies like that was created by Chkhaidze brothers in 1998. The history of this company began in Guria, in the village of Askana. It is believed that Askana was named so after the descendant of mythical Bacchus, Aenease’s son Ascanius. Today Askana still boasts the marani wine cellar that was established by the ancestor of the company’s owners – Antimoz Chkhaidze. The year 1880 is engraved on the oldest qvevri pitcher, which is the year that the company uses as its starting reference. The wines produced by Antimoz Chkhaidze were of different variety. The most distinguished sorts that made Antimoz’s wines famous abroad were “Chkhaveri” and “Tsolikauri”. 15 years ago brothers Gocha, Zurab and Jimsher decided to revive family traditions and established a new winemaking company, naming it “Askana Brothers”. The family business started to develop successfully. In 2001 Zurab Chkhaidze established the branch company “Kakhetian Traditional Winemaking”.

Today both of these companies are successfully continuing the course of the forbearers and contribute to the task of winemaking in Georgia – something that has been proven many times on different international wine forums. The interests of the leader of the “Kakhetian Traditional Winemaking” Company exceeded the borders of Guria province. In the ancient village of Velistsikhe in Kakheti, the place where his mother came from, Zurab Chkhaidze, the company founder rebuilt his grandfather’s marani wine cellar, tone bakery and chacha distillery and created an outstanding tourist object. This year the Company opened also the marani and tasting room in the center of the city of Mtskheta. There are plans for the future according to which the family marani in Askana will be rebuilt and expanded to accommodate a wine museum. The attention has also been directed towards neglected Gurian grape sorts, to cultivate them in vineyards and assist the production of wine and fruit vodka.

Just like the prominent family dynasties in Georgia, the descendants of Chkhaidze family pay a lot of attention to charity. The president of Kakhetian Traditional Winemaking Company, Zurab Chkhaidze is a member of world-famous ensemble “Georgian Voices” and frequently sponsors the foreign tours of this ensemble. Besides, six years in a row he sponsors an art charity festival “Georgian Soul” and special evenings dedicated to the memory of Ilia Chavchavadze in Saguramo. It is the merit and virtue of the whole Chkhaidze family that today in the village of Askana there is the functioning church of Ascension of our Lord Jesus Christ, which has been sanctified on August 30, 2000; since this date a yearly folk festival “Askanoba” is also organized. Hopefully, the Chkhaidze family will soon become members of the Winemakers Family Dynasties Association. GEORGIAN VINE AND WINE HISTORICAL - ETHNOGRAPHIC MUSEUM According to the 1962 decision of the International Organization of Viticulture and Winemaking in 1962, Tbilisi was chosen to host the X World Congress. At that time it meant a great recognition of Georgian winemaking. The preparatory measures were taken at the state level. In Vashlijvari, in the territory of the Research Institute of Horticulture, Viticulture and Winemaking, that was among the leading institutions in the Soviet Union – the Historical and Ethnographic Museum of Vine and Wine was opened which was the first of its kind in Georgia. The idea of creation of the museum belonged to Vladimer Loladze, Honored Scientist, who became the first director of the Museum. Through his diligence – and with assistance of the institutional governance of Academician Nikoloz Khomizurashvili and Professor Maxime Ramishvili a deed of state and national significance was carried out. With care, and according to the principle of scientific selection the artifacts

were collected including the ones designed for the Museum – and a significant role in this process was played by the famed historian, Academician Lali Javakhishvili. An ancient marani was brought from west Georgian region of Imereti and the stands for display were installed. The Museum consisted of 5 halls and its area equaled 1500 sq.m. The first two halls were reserved for the historical section, and the rest was given to the display of materials that reflected the scientific achievements and current state of affaires in researches that embraced horticulture, viticulture and winemaking. The World Congress was opened on September 13, 1962. During his visit to the Museum, Baron Pierre Lerois, President of the International Organization of Viticulture and Winemaking, stated that the country that succeeded in preserving ancient traditions of vine-growing and winemaking deserves a great respect. Instead of the half hour identified by the regulation program, Baron Lerois extended his visit – to marani in particular - to two hours, and on leaving the place he knelt and kissing the threshold of marani, spoke the words: “Geor-

Almost half a century later, after the X World Congress of Viticulture and Winemaking, in 2008, that-time leadership of the country deprived the institute of property by taking the building, immovable property and repealed the Museum. The spirit is that which bears the likeness and image of the God and also that of which “the essence is intelligent”. (Sulkhan-Saba Orbeliani: Georgian Dictionary, vol. 2, Tbilisi, 1993, p.115.) “Georgian spirit” is the collocation underlining any meaning that brings out the Georgian identity; something, about which it can be definitely said that it was “Made in Georgia”. Furthermore, for any Georgian person these words will associate with the rough inventory of the things that are undeniably Georgian in their nature, or, in other words, something in which a Georgian person will see a Georgian spirit. It is this establishment of the Georgian identity that defines the mission of the festival “Georgian Spirit”. The concerts and exhibitions, which are annually organized by the “Georgian Spirit” allow the viewers not only witness and enjoy the distinctiveness of the Georgian culture and Georgian spirit, but also see themselves as the carriers of the Georgian identity. Naturally, this is one of the important missions of the festival, since the popularization of the Georgian culture is possible only when the carriers of the Georgian culture will have the clear and definite understanding of what the Georgian spirit means. The festival of the Georgian art has become a tradition since its introduction in 2004. It is organized every spring with the support of the “Kakhetian Traditional Winemaking” (“KTW). It should be proudly noted that right from the start, since its beginning the festival is held with the blessing of Catholicos-Patriarch of All Georgia, the Archbishop of Mtskheta-Tbilisi and Metropolitan bishop of Abkhazia and Bichvinta, His Holiness and Beatitude Ilia II. The “Georgian Spirit” was first conceived as the festival of Georgian folk song and dance but eventually it assimilated almost every sphere of the Georgian culture. “Georgian Spirit” and “KTW”, the “Queen Tamar Foundation” was created. The foundation is charitable and supports the development of culture and education in the country, which also defines its annual activities and events. The presentation of “Queen Tamar Foundation” was held in April 2010 in Tbilisi in the framework of the festival. Dedicated to this event, the scientific conference named “Praise Tamar-Mephe” was held, in which Metropolitan Anania, academician Mariam Lortkipanidze, academician Roin Metreveli and Professor Giorgi Otkhmezuri took part.

One of the first projects of the foundation, “Queen Tamar Calendar” was printed in 2011. Collected in the calendar are the frescoes depicting Tamar, her portraits created by both renowned and less known painters, and icons, created by the Patriarch, which are unknown to the broad audience. The calendar also featured the Georgian poetry dedicated to Queen Tamar. Same year, another scientific conference was held in the framework of the “Georgian Spirit” festival, this time in Vale. The event was organized on May 14, the day of Tamaroba – with the facilitation of Metropolitan Theodore of Akhaltsikhe and Tao-Klarjeti Eparchy and Father Joseph. People to take part in the conference were professors Valeri Asatiani, Eldar Nadiradze, Merab Beridze and Tamaz Tkemaladze. In 2012, the festival program was outlined following the initiative from the Queen Tamar Foundation, emphasizing the following issues: understanding of the role of a Georgian woman in 20th and 21st cc.; vine – as the symbol of Christianity in Georgia associated with the Cross of St. Nino (Kakheti, Velistsikhe); the program also implied the featuring of Elene

Among the immediate plans of the foundation is the establishment of branches that are to cover the whole territory of Georgia – and also beyond its borders. The regulations of the foundation foresee a range of charitable and cultural activities – though there is the point I want to underline – that is the initiative to revive the “Tamar Mephe Medal”.

Queen Tamar Foundation is a young organization but it has already accumulated its history and certain traditions. The core of the foundation is continually being defined on the basis of what Georgian reality is, as well as some other changes and news – the quality which allows the foundation to remain topical in the context of identification and outlining of the current events and news. The identification of the news is among the main activities of the foundation. As for the second main purpose, it is the encouragement and protection of people working in the field of culture, especially the youth. The foundation is also open to different initiatives and suggestions. From 2010, a special prize and a gold medal were introduces in the framework of the “Georgian Spirit” festival. The festival awards annual prizes to distinguished workers of culture and ensembles that popularize Georgian spirit. The first prize of the foundation was kindly given to His Holiness and Beatitude Ilia II, as the esteemed creator, artist, and person who strengthens the spirituality of the nation, the hope and faith of all Georgians. The traditional Georgian winemaking and Georgian songsand-singing are inseparable like Siamese twins. These two powerful streams of our identity have passed through the centuries and along with the unique beauty bestowed upon us – the present-day generation, the feeling of pride – and not without reason, we have to admit. And, like it is with the story of “who was the first, the chicken or the egg?” – nobody knows which of them was the first to appear, and which of them was the first to settle at our homeland that we so much adore and glorify; but one thing is for sure that – beginning from that ancient time, no one and nothing has ever succeeded in dividing or splitting them. If you happen to glimpse one of them at some place, be sure that the other is nearby, ready and charged with expectation – since not a feast is a true joyous feast without singing and not a song sounds proper without joy. They both are blessed by God and they both suit and complete each other – and they both make a pattern that fit perfectly our genetic liberty.

Apparently, people around us notice that easily either. I remember an evening when we left the TV premises together: Gogi Dolidze, Gia Chiraqadze, Datuna Abesadze, Tamaz Eliava, Zurab Loladze… Seeing us the passers-by spared no smiles, they would cast a

What actually meant their words – that was they’d so much wish to be present at the place in order to hear the singing, that was the case – certainly, not just wine-drinking which was not a problem at all to anyone at that time. So, that way – little by little we transformed into a kind of unity – wine, songs and Qartuli Khmebi, and the most important part of that is that we, ourselves became transformed into that unity. But – as it turned out, the insidious fate – like a she-wolf in ambush crept up and our youthful vigor and vitality gradually dwindled with the passing of time. The strive to singing still haunted and stirred us up – but the family life and jobs and work – all that was to be considered, too… Then – all of a sudden, Gogi left us, and then Tavgasa followed him, then Guram, then Zaur… Obviously, our share of singing has fizzled and petered out. We, the remaining ones that are still around, roamed and wandered like birds with broken wings. We lacked desire to rejoice the way we used to before, and the same was with our attitude to wine – we rather played with it than drank but still, no one of us gave in because we felt they who have left us would not approve, simply the memory of them needed it. I recollected now a Georgian fairy-tale with philosophical title, “The earth requires its share”. It seems that not only the earth but singing, too, shares that property – so, not us – but

the songs themselves and singing brought to us Vasiko Dolidze first and then Zurab Chkhaidze. Their appearance was somehow symbolic because the first revived Gogi’s surname and function in our ensemble, and the second managed to heal the broken wing because with the songs he introduced in singing the “Kakhetian Traditional Winemaking” and awakened the dormant desire of merry-making. So, the wine was still with us; it proved to be the most reliable tuning fork that brought along the harmony among us that is much impressive, and the gusto and stamina of the bunch of us – “old-timers”… So, the wine did it, the bosom friend that never fails, that constant companion and soul-mate of crooning; yes, wine – that noble and gentle fluid so beneficial for bringing back the old feeling of being at ease and uninhibited. Since that the KTW wines accompany us and even compete with us abroad on our tours. All the more, I suspect that foreigners revel in vintage Georgian wines more than our songs. So, the KTW fraternized with us and sponsored our tour in Belarus, Moscou and Petersburg where we had successful concerts. Thus, those two monoliths of Georgian spirituality merged again – the Georgian wine and Georgian songs and passed out to each of us its charm enriched by traditions. So, the history opted for déjà vu and now again, when after rehearsals some distant friend or acquaintance glimpses us together he repeats in the same manner like they all did in the past: ““Aa, ready for the evening, right?” That certainly pleases us and we answer with hesitant smiles because we have no particular plans for the evening. Long time ago we have passed the stage after which you have no need to move forward – because what you sought and aspired to – is already within your own self. You are all that – the song, and the wine and the Georgian spirit – because you stopped trying to be faithful to traditions because you yourself turned into the tradition that represents the major milestone of our manliness and dignity. The present-day University of Samtskhe-Javakheti was established in 1990 as Akhaltsikhe branch of Tbilisi Ivane Javakhishvili State University. Initially there were only three departments – of philology, history and economics. The purpose of its creation was to occupy young people in place to eliminate demographic misbalance arisen over the last two centuries as a result of settling the territory by Armenian population. Over the years the institution of higher education expanded, changed its name and transformed into Meskheti branch and the growth of its role was determined by attracting highly qualified professors. At the end of the century the number of students of Meskheti branch reached 3000. New specialty were opened and along the classical University directions other directions were formed dictated by the needs and interests of the region – of pedagogy, applied arts (art processing of wood, metal, stone and other materials), foreign languages (specialty in modern Greek, Armenian, Turkish and European languages). On the basis of Abastumani astrophysics Observatory the faculty of mathematics and astronomy was established, etc. The Akhaltsikhe institution of higher education succeeded in supplying the regional schools and other facilities and institutions with human resources, which is essential. From 1995 intensive work began for the opening of the Georgian institution of higher education in Javakheti, Akhalqalaqi in particular. On the basis of a Georgian school in Akhalqalaqi a special preparatory department was created and active cooperation developed with the authorities of Akhalqalaqi and Ninotsminda, and the general public – that provided the grounds for the TSU Grand Council decision on establishing the Javakheti branch if Tbilisi State University in 2002 branch.

The then-time leadership of Javakheti region, along with the local intelligentsia and oppositional minded people became convinced that the education of non-Georgians in the official language of the state would facilitate and encourage the integration of young generation into the country’s life – and that was exactly what happened. There was an attempt to establish a bilingual institution of higher education – a Georgian-Armenian University with two, Georgian and Armenian separate administrations – but bearing in mind the negative example of Abkhazia, it was decided to make the University Georgian and establish the department of Georgian-Armenian philology, where studied and were prepared teachers of Armenian language and literature. The Meskheti branch contributed to the opening of Akhalqalaqi higher education institution – not only with the staff but also morally and psychologically. The Armenian population of Javakheti became convinced in the objective and professional attitude of the staff; thus, the Meskheti and Javakheti (Akhalqalaqi) branches achieved their place in the life of the region. Historically, since ancient times Akhaltsikhe was the capital of Meskheti, the great part of which – Tao-Klarjeti is situated now on the territory of Turkey. Therefore, this city being now at the crossroad, is given a historical mission that defines its major function at present – and in future as well: apart from executing its regional role, it has to compete with the Turkish universities – particularly, with the Karsi Caucasian, and Artaani (Artagani) institutions of higher education. Although the latter were established later – due to the great attention of the state both of them became a strong center of education and research work. The main purpose of the Javakheti (Akhalqalaqi) branch was the training of the staff of teachers and providing economic education; apart from that, there was also a prospect for agriculture, and of establishing the center of bilingual education. Akhalqalaqi branch was transformed into a college but was given the statute of the higher educational institution, whereas Akhaltsikhe branch is the state university. At the end of 2012, both these institutions – Akhaltsikhe University and Akhalqalaqi higher education college – were merged and integrated and established the Samtskhe-Javakheti State Teaching University. Six departments are functioning at present in Akhaltsikhe and Akhalqalaqi, among them stand out the departments of engineering, agrarian and natural science department, where the students study agronomy Like all other regions of Georgia, Meskheti is characterized by the native, aboriginal sorts of fruits and vines in particular. The vine in Meskheti – apart from a few villages, still can be found at some places where the villages existed long time ago. Since vine was historically associated with Meskheti as its symbol, all our enemies, foes or neighboring rivals displayed enmity towards the vineyards in the first place. An interesting example is provided by the 16th century document, “Grand Log of Gurjistan Vilayet”: according to it the highest tax assigned by the Ottoman rulers of Meskhi population was specifically for the vine and vineyards. At that period only around Akhaltsikhe there existed 111 vineyards – not to mention other regions; the local population paid high taxes only to preserve vine, but failed to endure the power press and policy so long and finally the vineyards grew wild – or remained in few small places in mountains. Now, among varieties of sorts that reached us in Meskheti are the following sorts of white grapes: samariobo, white kharistvala (bull’s eye), white tskhenis dzudzu (mare’s udder), white akhaltsikhuri, safarula, white budeshuri, roketula, white chitiskvertskha (bird’s egg), white tskhenisdzua (horsetail hair), meskhuri mtsvane (meskhuri green). The care for the vineyard was expressed in a particular ways and culture because in Meskheti it was based on the unique system of their location on terraces. So, vine and grapes were transformed into concepts and shifted to the realm of legends and tales; for instance, nearby Aspindza there are remnants and traces of an old village under the name of Chura – that naturally is associated with vine and suggests its origin from the word churi, i.e. a type of qvevri for storing and preserving wine. The accordance of tales with reality was proved recently, in the 1960-ies when the fact of the vines growing on the territory was confirmed. The peasants of Andriatsminda village often tell stories about vine groves beyond the ravine – “so full and rich of bunches of black grapes that people often mistook the scene from the distance – for it looked as if a flock of black sheep was nibbling vines”. The similar example concerns the vineyards in the village of Tobi where the vines tended to grow wrapping around tall poplars so densely and closely that the small kids used to hide among their spiral stems and leaves. The problem we are facing at present in Meskheti as regards to vine-care is exceptional because the case implies not just the care of the plant but the search of their location and discovery of the lost and forgotten sorts – and then to revive them and make a part of our culture again. This is the problem that the department of agronomy of Samtskhe-Javakheti University has identified as its goal, for which reason a territory was allocated where the search and collection of the discovered sorts shall be carried out. The problem is that the vine culture in Meskheti is on the

The Kakhetian Traditional Winemaking Company makes all its wines of grapes according to their sorts, quality and origin. So, for us it will be a matter of honor if the department of Agronomy of our University falls within the scope of interests of the Company. For this reason we asked the General Director of Kakhetian Traditional Winemaking Company, Mr. Zurab Chkhaidze to provide their help and assistance – to which he agreed and the appropriate Memorandum was issued on February 3, 2013. The goal of the Memorandum implies the assistance in the professional development of students of Bachelor degree programs for agriculture in preparation of the relevant competitive staff – through mutual cooperation in the spheres of

education, in accordance with modern requirements, including practical training and traineeship at the enterprises of the Company. The Memorandum will contribute and promote the expansion of interests of the Company in southern Georgia – since the search of new sorts of vines offers and provides the prospects to create the new wine names. For all these years, the general public and our society met the day of the tragic death of great patriot Ilia Chavchavadze – September 12, - mutely, in silence. Now and then small articles would appear in papers, as if to remind the people in a way of the fact. For our generation of young men of letters the specific way that Tamaz Chkhenkeli – so dear and unforgettable for us, used to mark the day of Ilia’s death – served as a model. He spent that day alone in – without food, without water, fasting in fact… He used to say: “If the Jews still commemorate the date of the fall of Jerusalem and always mark the day of mourning, why don’t we mark that day, so much dramatic for our country by fasting?” And indeed, we – the staff of the museum and a group of our close friends, modestly celebrated the day together with the group of our classmates. Tamaz Tkemaladze was well aware of the matter, being the constant participant of that particular date and event. He introduced me to Zurab Chkhaidze, General director of Kakhetian Traditional Winemaking Company who kindled with idea and suggested the marking of the day in a special way underlying its dark significance and role in our history - to establish a novel tradition that would suit the image of the greatest son of our nation – that would suit the mood and perception of our society immersed in the maelstrom of series of demonstrations and revolutions. The main point that the idea implied was to present to the younger generation a perfect example of ever remembering past – this particular moment was especially important since the people who came

Naturally, the problem was additional load to Zurab Chkhaidze because his own creation – a new Kakhetian Traditional Winemaking was hosting the day’s event that increased the load of efforts and worries at the end of 2005 summer, on the eve of the coming grape harvest and added to the responsibilities with the substantial number of guest arriving. Andro Bedukadze, director of House-Museum, who was known as quiet, calm and peaceful person, suddenly transformed into extremely energetic person who vigorously attacked the authorities of Mtskheta Municipal Office and succeeded in getting their help – which resulted in the erection of the scene in the courtyard of the museum. whole event was carried out in tune with the initial idea of marking that day of special significance. That was also the day when the KTW banners were first displayed in the courtyard. The guests were invited to taste wines and brandies produced by the Company and made no secret of delight and appreciation. Special attention was given to the Saperavi and Rqatsiteli wines of exclusive bottling with the portrait of Ilia on the label – they proved perfect souvenirs for the guests and visitors. The idea of the event implied not the sorrow but the potential and brilliance of talent of the Georgians in songs and dances and in spirit – to show its immortality and meet the expectations and equal the hopes of Ilia Chavchavadze. The subsequent years established that September 12 tradition, so the number of guests and visitors of the HouseMuseum kept increasing; the event gained momentum and TV and papers and magazine reporters arrived without our reminders. The media coverage of the event has always been ample and positive, but Qartuli Khmebi ensemble was always in the center of attention – as a matter of fact, a member of that ensemble is the General Director of the Company. The event was carried out six times altogether; six times I bowed to the memory of our great patriot, so Kakhetian Traditional Winemaking laid the foundation for another worthy and esteemed tradition. This year will mark the eighth event and the voices of Mravaljamier shall again be heard in the courtyard of the museum as a sign that love of homeland, mother tongue and religion is still strong in our hearts, as a sign that “..’tis time to end laments on the past that expired, ‘tis time that we follow the other new star, ‘cause we all have to create our present, and equip our people with commendable future”. On the proposal of the KTW Council of Elders and in coordination with the relevant authorities, the KTW becomes the closest confidant of Ilia House-Museum in Saguramo, and the patron of the adjoining vineyards and the ancient marani of Guramishvili feudal family. Definitely, this is the load truly substantial and significant but the Kakhetian Tradition of Winemaking, with its experience of charity and great credibility and prestige, will bear that load with the confidence that the great man himself would admire. At those types of events we meet the technologists of our production, specialists of various professions who work along with us to ensure the success of the Company – the people we communicate mostly through electronic communications – due to the distance and location of the production works. We have already established a tradition of celebrating various holidays with arrangement of various competitions in learning and erudition makes those enjoyable parties even more interesting, helping in unloading the personnel, in increasing their knowledge, unifying people of various age and diverse opinions, who relax and are provided with the possibility to set a common goal – of the team united like a cohesive family where all are for one, and one - for all. The Company pays a great attention to the charity programs, and now comes the fifth year of its care for the development of Georgian art. Every spring the Company arranges and holds the Art Charity Festival “Georgian Spirit”, and every autumn – Ilia Chavchavadze Memorial Day in Saguramo – and the staff of the Company willingly and gladly participate in the preceding and accompanying activities. Communication and contacts with the members of the Council of Chiefs helps a great deal. In addition to frequent contacts we share our opinions on a number of problems and consider their advices; it often happens that the representatives of the Company participate in their meetings as well. The Company tries to find best ways to relieve stress that the employees undergo and help them is relaxation. I often recall the way we celebrated Assumption of Holy Virgin – besides, the day coincided with our colleague’s birthday. We always try not to miss anyone’s birthday, to congratulate the person and present a small gift on behalf of the Company – and in the same manner we congratulate the members of the Council of Chiefs. We love our Velistsikhe Verandah where all of us – the staff of the Kakhetian Tradition of Winemaking – had our share and participated in its construction, including every detail, even in making up the menu. festivity that the family made a tradition and join the church service at the Church of Assumption – the church built by the Chkhaidze family. At the end of 2012 the Company arranged a corporate New Year party for the staff at the Qalaquri restaurant – the evening truly in a grand style: the restaurant hall was decorated with the branded attributes of the Company; the Qartuli Khmebi legendary ensemble was invited – the member of which is the General Director of the Company, one of the soloists of the ensemble. The evening was a success – with awards and playing quizzes, and orchestra and fine music. But the evening was crowned by the supra, when all of us sat at the table and let the delightful Georgian singing ennoble the moment; time passed so happily, and almost unnoticed, and the evening ended with the fireworks from the balcony. Our village Velistsikhe has always been known for welldeveloped household economies. Among other households in the village, Mepuriant Kari was one of the most conspicuous. As for Grandfather Gigusha’s marani, it was known even beyond the village. Besides the hard work, the whole household of grandfather Gigusha and grandmother Liza celebrated the period of rtveli – the wine harvest, also with feasts. The district where they lived could do nothing but enjoy the smell of wine and sound of Kakhetian songs coming from the wine cellar. Time passed, children and grandchildren became older, and an excellent Gurian son-in-law came to the family, bringing with him Gurian Krimanchuli songs. All members of the family sang wonderfully. Today grandfather Gigusha’s marani is called Velistsikhe Veranda. I’ve nothing against veranda; I realize it must be better for foreigners the way it’s called now. Foreigners come often here. Ukrainians, Poles, Kazakhs, English and believe it or not, the Chinese, too. Today I want to tell you about a Chinese guest that came with Gigusha’s grandson –Zurab, bringing with them a slender company, a translator from the Chinese. As they entered the yard, the Chinese guest put his hands to his heart and bowed and smiled to everyone as he greeted us. Then he took a leather notebook out of his pocket and having opened it made a few passing movements barely touching the surface – and the notebook began to speak Chinese. Well, it turned out to be a computer and the Chinese guest used it to talk directly to China, even though he was in grandfather Gigusha’s wine cellar. Then, still tapping his fingers in the notebook, he made some records in it. He showed great interest in everything and he was very attentive to every single detail. As he tried to film the red coals and bread being backed, the way the dough was molded on the hot furnace walls of tone He almost fell into a tone bakery. Then, we advised him against biting off a still hot churchkhela, as for the hot distilled chacha, it turned out to be a real joy. “Sake, sake,” he said as Chinese and Japanese drink came to his mind. However, the true delight and enjoyment was still awaited him. The wine cellar, where he examined thoroughly every corner several times as he was observing the long handled wooden mixer and other utensils used in wine-making - that incited his utmost attention. But grapes pressing simply crowned his pleasure. You had to see the expression of happiness on his face as he pressed the grapes, standing in the winepress with Zurab! As I later learned, when the qvevri pitcher was filled, he put his firm’s name there in Chinese, sealing it as he decided to bring those 5 tons of wine to China in the spring. He is sure that his compatriots will like that wine. The final chord was wine-tasting and testing of freshly distilled vodka in the tasting room of the vodka distillery, the brazier fried mtsvadi and singing Georgian songs. The last

According to a number of the well-known experts, the champagne-type wine activates the production of biochemical transmitters of 60 types that intensify sensitive perception. The unique flavor of champagne increases the activity of special cells in the nasal duct that are connected with the central cells of the brain which are responsible for the emotions and memory. Sparkling wine helps to avoid heart attack. When speaking of healing properties of this truly divine liquid, we have to underline its positive effect on the cardiac diseases.
