Autumn is in full swing, and here at North, we couldn’t be more excited! This season brings one of our favourite events—Oktoberfest!
Hopefully some of you made it down to our event at our Springwell taproom, but for those of you that didn’t, we thought we’d give you a little taste of what you were missing straight to your home. Inside this month’s box, you’ll find a couple cans of Veltins — one of our all-time favourite German Pilsners for you to enjoy!
We’re also thrilled to feature an exciting guest brewery from Glasgow – Simple Things Fermentations. They’re a bit of a hidden gem, known for their focus on simplicity and local, foraged ingredients.
This month’s box also includes a brand-new IPA and a few returning classics that are real crowd-favourites. We think this might be one of our most diverse and exciting boxes yet, we’re sure you’re going to love it!

AT A GLANCE
HEPTAGON
This tropical, full bodied IPA celebrates the bold flavours, driven by the unique Nectaron hop. Expect juicy waves of pineapple, ripe passionfruit, and the subtle pithy sweetness of fuzzy peach skin. Simcoe hops bring a grounding layer of earthy pine and light berry, while Talus adds a burst of citrus zest and floral complexity.
With a soft, pillowy mouthfeel from oats and wheat, this hazy IPA balances its juicy, fruitforward profile with just the right amount of resinous bitterness.

FULL FATHOM 5
After the storm and shipwreck we are lying drowned, 30 feet deep in Full Fathom 5.
Full Fathom 5 is our flagship porter. A bountiful of toasted coconut and whole coffee beans from our daily fuel suppliers, North Star Coffee, are both steeped in a rich porter made up of a variety of specialty malts making for a luxurious silk liquid. A family member we don’t see often, but when we do, we’re full of love and warm fuzzy feelings.
Just off the canning line, we bring you a fresh batch of our super smooth and hazy IPA brewed with Citra + Mosaic hops. The hop combo brings together ripe flavours of freshly squeezed orange juice, tropical stone fruit, soft and sweet blueberry and fresh cut pineapple.

Another one straight off the canning line!
One of our most popular TFGs from 2019, voted for a rebrew by our followers this year. Our signature thick, slick and salty gose recipe comprised of a big dose of oats, ale malt, salt and a sprinkle of lactose is infused with ALL of the organic fruit puree! There’s a special harmony in the way the sweet, zingy guava interacts with the salinity of the beer’s base that makes this TFG extra special. It’s a plethora of sherbety, tart, sweet, sappy tropical flavour and aroma. A true delight that even caught the eyes of our friends at Dishoom. It pairs beautifully with their dishes from all of Bombay.
VELTINS PILS
Style Pilsner ABV 4.8%
One of the finest examples of German Pilsner. Veltins Pilsener is brewed using natural spring water from its own mountain. It has a delicate dry and clean palate, fine carbonated body, slight bitterness and a light citrus finish. Brewed in Sauerland, near Dortmund, to the German Purity Law 1516. Voted ‘World’s Best Pilsner’ in the 2007 World Beer Awards.

A sessionable Pale Ale bursting with tropical and citrus flavours courtesy of US-grown hops.
Pours an enticing pale straw colour with bright white foam and a light haze. Extra Pale Maris Otter malt lays a sweet foundation for the super fresh hops offering smooth tropical candy, citrus and floral flavours. It’s a very tasty Pale Ale with serious drinkability.
Rich mahogany in colour with a thick, creamy head, this contemporary take on the classic Scottish 80 Shilling style is fermented low and slow to let the grains do the talking. Maris Otter, wheat, rye, Aromatic and Black malts offer a luscious combination of toffee, freshbaked bread and apple crumble on the nose and an inviting silky mouthfeel encourages a generous first sip. A velvet smooth concoction of dried fruit and caramel pairs with timber yard pine and citrus-resin, along with just enough rounded hop bitterness to ensure a clean, crisp finish.

We’ve been keeping up with Simple Things Fermentations and seeing them making moves in the scene recently, so we knew we had to spread the word! We spoke to Phil to hear more about their journey so far...
What began as a hobby while living in London quickly became more serious after moving up to Glasgow after being accepted onto the Brewing & Distilling Masters at Heriot Watt. It was around that time that I (Phil) won a Thornbridge home brew competition that saw my beer listed in Waitrose stores nationwide, which felt like fate telling me I was on the right track!
We sold our first beers in December 2019; I started on my own and brought Ewan in around a year later when I realised that it wasn’t going to be possible to both get the beer quality right and run an efficient business single handedly. It’s still the two of us to this day… Oh and Neil the designer is an honorary third member of staff; he’s an independent entity but a huge part of the business!
Some people ask why Glasow and we say why not?! There’s actually lots of reasons, most unrelated to beer and brewing, but it did strike me as a place that wasn’t particularly well served by craft breweries, compared to many other large towns and cities. And I now realise that the water is also a huge plus of brewing here; it’s very low in minerals and super-soft, really good water to brew with.
FEATURED IN THIS MONTH’S BEER CLUB
Our ethos is - keep it simple, let the ingredients shine and where possible explore some of the lesser explored corners of the brewing world! We love to shine a light on styles that have a lot to offer but are maybe a bit overlooked. We decide together what we’ll brew, how and when we’ll brew it, tasting and analysing everything together and deciding what to change, and what to leave exactly as it is! We have similar taste in beers- we love to drink big, hazy, hoppy pales as much as anyone else but we’re more fired up by the stuff you don’t see so oftenparticularly Scottish, German and Belgian styles!
We use local and foraged ingredients when we can. All our beers are vegan friendly, unfiltered, unpasteurised and naturally carbonated through re-fermentation. We put our heart and soul into making them and hope you enjoy drinking them.
Remember the survey we sent out last month for your brilliant beer ideas? Well, we hit a bit of a problem. We’d love to say it was a ‘technical glitch’, but we can’t lie, it was simply human error. We missed a very small but important switch that needed turning on to receive a copy of the submissions. And we’re completely gutted about it!
