A N SW E R Get the keys to a 21,000 sq foot former steel works the week before the government shut all the pubs in the country! We first visited Springwell in 2018 and were blown by the site. A former tannery, Springwell was most recently used as steelworks. We actually bought some bits for the original brewery from here! The scale and space is incredible, and the original features nod to the area’s industrial heritage. We’ve been struggling for space at our Sheepscar site for a few years now. We’ve been as creative as possible with extra tanks, driving beer up and down the carpark to our warehouse unit, and squeezing all

that we could out of the site. However, it was definitely time to look for something bigger. Despite the global pandemic we decided to crack on with the restoration of Springwell. I don’t think any of us expected to be in a third lockdown when we started the work, but I don’t think any of us could have walked away from this dream. During a very hot site visit during last summer’s heatwave talk inevitably turned to the things we were missing about ‘normal life’. Someone


mentioned a cold pint of lager and we all went a bit quiet and wistful. Someone mentioned a cold pint of lager being served directly from a tank and we all had the same idea at the same moment: Enter Springwell Pils. We’ve been working on the recipe for this beer ever since that conversation. After a couple of trial batches the beer is tasting like the sort of beer we were dreaming of on that sunny afternoon. This zine gives a little more of a glimpse of our plans for the new space, a little more info about the beer, and highlights the

indie community that we’re joining here in Buslingthorpe. In an ideal world, all the chats in this zine would have been had in person over a couple of schooners at the new taproom. That time will come. For now, we hope you enjoy reading this zine with a couple of cold cans. Love team North xx

2020 tested us all on both personal and professional levels. Our day to day lives have changed. At North we have hospitality running through our veins: Welcoming people into a space and looking after them is what we do, and this is currently on hold. Instead we have found new ways to socialise and support each other. Conversations spark change, and as a business we are always learning. We are marking our move to Springwell with commitments to develop the following areas of North.

The Springwell Charter will run through the heart of our work in 2021 and beyond, informing the decisions we make and shaping the future of North.

We thrive on supporting our local community. We partner with local artists, we showcase independent food traders, and we develop talent. The new taproom at the heart of Springwell will provide a space for this community to grow and develop.

Our venues are friendly spaces which welcome everyone, and improving our accessibility both online and in person is incredibly important to us. We believe accessibility comes in all sorts of guises: Whether it’s welcoming people to their first taste of a craft beer, inclusivity through our selection of non-alcoholic options, or through the design of our taprooms.


WELCOM BUSLING T Our new home at Springwell is located in Buslingthorpe vale, just under a mile north of our original brewery. Buslingthorpe is still home to many original mills and buildings from Leeds’ industrial past, and is an area filled with history. Springwell is a former tannery, most recently used as a steelworks. Other nearby buildings were used as farms, by stone merchants, corn millers and glue factories. The Meanwood Valley trail connects Springwell to Headingley, Meanwood, Adel and Eccup, with Sugarwell Hill providing panoramic views of the city. A burgeoning indie community of creatives has flourished in Buslingthorpe, and we cannot wait to join them for some beers at the taproom once it’s open.

M A RV E L A N D Scott Hall Farm, Scott Hall Street, LS7 2HR IG = marve.land Marveland is a new ecocentric culture and maker-led economic model that will rejuvenate and restore the former Scott Hall Farm (built in 1760!) and its surrounding land. Currently home to a towering alien, soon to be home to workshops, festivals, film screenings, markets, live music, and exhibitions.

Yoga Space founder Nichi, actually helped paint the walls in the first North Bar back in 1997!! Whilst in person classes are currently on pause they’re livestreaming all their sessions.

The original pop up life drawing class in Leeds has found its permanent home around the corner from us on Meanwood Road. Currently on a lockdown enforced hiatus, they’ve set up a webshop full of art supplies to keep creative throughout the pandemic.


RID G ESIDE BREWING CO 24 Penraevon Trading Estate, LS7 2AW IG = ridgesidebrewery Very, very important neighbours to have! Ridgeside have been brewing in Meanwood since 2010, and we’ve helped each out over the years with emergency ingredients, spare kegs and spanners to repair brew kits! Seb actually used to be in a homebrew club with their head brewer Matt (look at how they’ve both grown!!).

M E A N WO O D VA L L E Y U R BA N FA R M Sugar Well Road, LS7 2QG IG = meanwoodfarm Every brewery needs local neighbourhood llamas right? The North Running Club often spend their lunch hour running to the llamas and back (not a sentence I ever thought I’d type when I joined North!!). The farm is a charity which has been in Leeds since the 1980s connecting urban city dwellers - and brewery workers - to the natural world.


E VO K E S T U D I O S Chapel Works, Stocks Sttreet, LS7 2AU IG = evokestudiosuk Fellow newcomers to the area Evoke Studios recently moved to Meanwood after losing their original studio to flooding. One successful fundraiser later and they’ve created a beautiful creative environment offering production, mixing live sessions, photography and space hire at affordable prices.

E C H E LO N C O F F E E 20 Penraevon Industrial Estate, LS7 2AW IG = echeloncoffee Founded in 2018 in Leeds, Echelon is a small, speciality coffee roaster. We’ve enjoyed their coffee at some of our favourite cafes in Leeds - They have collaborated with OGs Laynes Espresso and Hyde Park heroes Coffee on the Crescent. To say that the brew team run on coffee would be an understatement. Echelon could be our most important neighbours!

If you’re local to Leeds you’ve probably tried their fermented sourdough in one of the city’s indie brunch spots. Staff summer picnics at Springwell are looking promising with neighbours like these!


C F ST E A D Sheepscar Street North, LS7 2BY IG = charles_f_stead A family owned tannery that has been producing high-grade suedes and grain leathers at its Sheepscar Tannery for 120 years. Established in 1904 the tannery has earned a reputation over the years as one of the highest quality tanneries in the world. These days they supply brands around the world from Clarks and Dr Martens to Burberry and Prada!

SCOTT HALL MILLS Scott Hall Street, LS7 2HT www.scotthallmills.co.uk IG = scotthallmills Once an abandoned mill, over the last 10 years Scott Hall Mills has been transformed into a creative home to artists and makers from across Leeds. SHM is run by the team from Lord Whitney, famous for their spaces full of cinematic wonder and curiosity. Their portfolio of work is pretty mind blowing - including a music video for Nicki Minaj!

ST I T C H U P 232 Meanwood Road, Leeds LS7 2AH IG = stitch_up A community craft school specialising in textiles and focused on the power of craft to bring people together and help improve mental health and wellbeing. Founded as a social enterprise project, Stitch Up use crafting to support vulnerable and disadvantaged people in Leeds.

Dreamt up on a hot dusty day on the building site, Springwell Pils is a flagship beer for our new brewery. Close your eyes and imagine for a second: You’re here with us at our new home, Springwell. You’re outside with your friends, music is playing, the sun

is shining, you’re drinking Springwell Pils fresh from the tank. A picture soon to be a reality, but for now, we’re staying safe and drinking at home. Crisp, light and rounded. Springwell Pils is an unfiltered lager lightly hopped with Callista and MittelFruh

SPICY PORK RA M E N F RO M DA N DA N ’ S N O O D L E S ING REDIENTS • 3 tablespoons Sambal Oelek (Thai section in the Chinese supermarket) •

2 shallots

6 cloves garlic

1 (2 inch) piece ginger

Bunch of coriander

1 tablespoon ground coriander

FOR THE SPICY PORK •

800ml chicken stock

1 tablespoon vegetable oil

1 tablespoon light brown sugar

500g ground pork mince

Kosher salt

4-5 teaspoons sambal oelek

Spicy Pork (recipe below)

2 teaspoon garlic powder

4 portions of ramen noodles,

2 teaspoon ginger powder

4 eggs

Juice of two limes

Coriander leaves

• 1 bunch spring onions, chopped

• 1 1/2 tablespoon ground turmeric

2 teaspoon curry powder

• Sesame seeds & beansprouts (garnish)

2 cans (full fat) coconut milk

1 lime, sliced into wedges


Cold beer and spicy noodles. This recipe dramatically improves spending yet another night at home...

Puree the sambal oelek, shallots, garlic, ginger, coriander stems, coriander powder, turmeric, curry powder and 3 tablespoons water in a blender until smooth. Add 1-2 more tablespoons of water if needed to help the mixture form a smooth paste.

Next up! Spicy pork: Heat vegetable oil in a large pan over medium-high heat. Add pork and season with Salt, cook for about 5 minutes. Stir in sambal oelek, garlic powder, and ginger powder and cook for 1 more minute. Fold in chopped coriander leaves and squeeze the juice from 2 limes. Remove from heat and set aside until soup is done.

2 Heat some sesame oil in a large pot, medium heat. Add paste and cook, stirring constantly, for 4-5 minutes. Whisk in coconut milk and chicken stock. Bring to a boil, then reduce heat and cook for 20 to 25 minutes. Add brown sugar, and cook for at least 5 mins

3 Meanwhile cook the eggs; 6 1/2 mins in a pan of boiling water. Get them straight into ice water after to stop cooking. Peel and set aside.

5 Cook your noodles! I do them for a minute less than suggested (they continue to cook in the bowl)

6 Divide broth between bowls. Add ramen noodles, spicy pork, egg, and garnish with spring onions, toasted sesame seeds & beansprouts. Squeeze the juice of a 1/4 wedge of lime over the top. Dig in. WAAAA LAAA.
