Bayside is the brainchild of Simon Wynne who worked for the BBC before moving to commercial radio in Warrington and Manchester. Simon was often asked why there wasn’t a community radio station in Colwyn Bay, so when he returned to live in the area he joined up with Jeff Pearson who was Mayor of the Bay of Colwyn and community radio presenter to bring the project alive. They were later joined by Ron Roberts who presented with Simon on Marcher Coast FM. Together they started Bayside which can be heard on DAB Digital Radio, on a range of smart speakers and online around the world. Simon takes care of all the technical side, as well as being the presenter of Good Morning Colwyn Bay each weekday morning from 8-00am. Jeff Pearson, who is Communities Director, presents his relaxing afternoon show from 12-00 – 4-00pm each weekday. Evenings have a distinctly different flavour for music fans of every genre. From 8 10pm are shows including The Monday Beat with Craig Hughes from the TV show Salvage Hunters The Restorer, Tuesday’s is Sounds Country with Jeff Pearson, Wednesday’s is Y Sioe Fawr with John Roberts and Thursday’s is Leons Rock and Roll Heaven with Leon Smith. Forever the bridesmaid to Christmas’s showy bride, Easter Sunday is in fact a golden opportunity to stage the family dinner of your dreams, without any of the myriad unwanted demands of the Festive Season. You don’t need to give in to the pressure to make four times too much food, or spend time making sprouts and Christmas pudding that no one will eat in the end. You don’t need to drink advocaat and pretend to like it. Family members don’t feel compelled to drive across the country and dump themselves on you for five days. Plus, the absence of winter bugs means that unlike Christmas, there’s a very good chance that you won’t be bedridden on the big day, having spent 48 hours preparing food for everyone else. Here then is a terribly impressive centrepiece for your Easter table, that you can make the day before, so you can spend Sunday morning lying in bed as you work your way through the first batch of chocolate eggs.

Heat a splash of olive oil in a wide pan. Season the lamb all over and fry it in the pan, making sure it gets a bit of colour all over it (about two minutes). Then put the lamb aside to cool. Fry the chopped shallot in the butter in the same pan for two minutes, then add the chopped mushrooms and cook until both are soft. Then add

EDUCATION NEWS St David’s College on centre stage Last month saw St David’s College return to the stage with the whole school production of Disney’s Aladdin JR. Not to be confused with the traditional pantomime, this show is based on the 1992 Academy-Awardwinning film and 2014 hit Broadway and West End show about the “diamond in the rough” street rat who learns that his true worth lies deep within. Pupils were given the chance to showcase their incredible talents over four performances at Theatr Colwyn with St David’s College staff and pupils taking on all aspects of the production including make-up, sound, and lighting. “The pupils were all just absolutely amazing throughout the whole process,” said Jenny Appleton, Head of Faculty for Performing Arts at St David’s College. “The hard work that has been put into rehearsals, learning their lines, the dance routines; has been outstanding. The results of all that hard work were plain to see on stage – they were all magnificent.”

During this time, Sam has worked his way up the business and furthered his qualifications and experience as a skilled distiller. Joining as a distillery operative, Sam was able to gain first-hand experience in distilling and the spirits sector while being supported to complete qualifications such as the General Certificate in Distilling through the Institute of Brewing and Distilling (IBD).
