Season the loin with salt and pepper. Heat the oil in a large frying pan and sear the meat. You’ll have to carefully do it one half at a time but try and sear it all. Leave it to cool. In the same pan, melt the butter and fry the shallots until they are golden. Add garlic and fry for a few more minutes, then add the mushrooms and the thyme. Fry, stirring occasionally for about 10 minutes until you have a paste-like mixture. Pour in the brandy (try to flame it of you like but it isn’t essential!), season and cook for five more minutes. Leave that to cool for half an hour or so.
VENISON EN CROUTE
Ingredients (Serves 8)

1 garlic clove, crushed 400g chestnut mushrooms, very finely chopped pped 1 tbsp thyme leaves, finely cho 2 tbsp brandy 2 packs of prosciutto Plain flour

This is the tricky bit. Make sure you’ve got a lot of table space free to do this. Overlap two sheets of cling film onto the surface, then lay out the prosciutto onto the cling film in two rows, slightly overlapping each slice. Spread the cooled mushroom mix out over the prosciutto. Then, carefully lay the seared loin on top of the mushrooms. You then gently lift up the cling film on both sides, wrapping the loin in the prosciutto. Once it’s all covered, twist the edges of the cling film like a sweet wrapper. Put it in the fridge while you tidy up. Dust the same surface with flour and roll out the pastry so that it’s about the thickness of a pencil. Remove the cling film from the loin and place the prosciuttowrapped venison in the middle of the pastry. You then wrap the pastry around it, trimming away any excess and sealing it shut with some beaten egg yolk. At this point, if you have one of those snazzy pastry cutters, you can re-roll the excess pastry and make a fancy trellis to go over it, but that’s just showing off. A couple of pastry leaves will do. Cover it with cling film on a baking tray and leave it in the fridge overnight, while you enjoy a Baileys and wipe the table down again. The next day, take the venison out of the fridge at least 30 minutes before you cook it. Heat the oven to 200˚C FAN. Brush the pastry all over with another beaten egg yolk and put it in the oven for 30 minutes or 35-40 for well-done. Let it rest for 20 minutes while you finish off all your Christmas veg, then bring it to the table and receive a rapturous response. n

The largest fund sector by value is Global, according to the Investment Association (IA), the UK’s investment trade body. At the end of August 2023, Global funds accounted for £171.1bn of investments, about a seventh of the IA’s fund total, which covers over 50 sectors. Second on the list, at £138.9bn, was the UK All-Companies sector. Three years previously, the UK All-Companies sector had been top dog with £149.7bn worth of assets. The decline in popularity for the UK All-Companies sector goes back a long way. A St David’s College pupil has won a prize at the prestigious Wales Innovation Awards 2023. Milly Hay, from Eglwysbach, wowed the panel of judges with her truly outstanding Wonders of the World Board Game that she designed for her GCSE project. The awards are a celebration of Welsh Design and Technology recognising and rewarding the next generation of innovators. Working in conjunction with the Welsh Government the Innovation Awards encourage young people to be technologically innovative and appreciate the importance of Design and Technology.
