A COASTAL

CHRISTMAS Bethany Birch discovers the best family-friendly festivities taking place in North Wales this month… December has arrived, and with it comes the joy and excitement of the holiday season. In North Wales, where the rugged coastline meets festive cheer, there’s no shortage of family-friendly activities to make your December memorable. Whether you’re a local or a visitor, immerse yourself in the magic of the season with these delightful activities that embrace both the holiday spirit and the beauty of the coastal surroundings.

Festive treats for all

Gather the family in the kitchen for a day of Christmas baking. From gingerbread cookies to decadent brownies, truffles, and festive cakes, let the sweet aroma of holiday goodies fill your home.

Beach bonfire

Does anything sound any cosier than a winter beach bonfire? If permitted, organise a familyfriendly beach bonfire to keep warm and celebrate the season. Roast marshmallows, make s’mores, and enjoy the warmth of the fire against the backdrop of the sea. Don’t forget to bring along some blankets for cosying up as you share stories and laughter under the starlit sky. Be sure to coordinate with your local authorities to see if beach bonfires are allowed during the holiday season.

Festive film magic

There are plenty of Christmas activities that can be enjoyed from the comfort of your own home and don’t need to be extravagant or require a lot of effort. Transform your living room into a cosy haven for a festive movie night at home. Elevate your typical movie night a little and set up the TV with a Christmas classic, bring out blankets and cushions, festive snacks and hot chocolate and enjoy the magic of the season with a holiday film or two.

Family fun

Get the gang together and designate a night for festivethemed family games. Play classic board games with a holiday twist, like holiday-themed trivia. Or get a group of friends together for quiz night – make your own or source a quiz from online to suit your group. You can also create a DIY holiday-themed scavenger hunt around your home or neighbourhood for an interactive and entertaining activity.

The fund has ambitions to strengthen the resilience of Wales’ network of protected land and marine sites, supporting nature’s recovery while actively encouraging community engagement. “We look forward to getting started on this work as we aim to boost great crested newt and other amphibian populations across Flintshire,” said Christina Sheehan, NRW’s Lead Advisor on the project. “We are currently experiencing a nature emergency and it is essential we have resilient ecosystems to support species and habitats. Once completed the newly restored ponds will offer amphibians better habitats for breeding and areas where they can hibernate. We have worked closely with partners to try and ensure we provide a crucial helping hand to a rich array of amphibian species whilst further enhancing Flintshire’s biodiversity.” n

Season the loin with salt and pepper. Heat the oil in a large frying pan and sear the meat. You’ll have to carefully do it one half at a time but try and sear it all. Leave it to cool. In the same pan, melt the butter and fry the shallots until they are golden. Add garlic and fry for a few more minutes, then add the mushrooms and the thyme. Fry, stirring occasionally for about 10 minutes until you have a paste-like mixture. Pour in the brandy (try to flame it of you like but it isn’t essential!), season and cook for five more minutes. Leave that to cool for half an hour or so.

VENISON EN CROUTE

Ingredients (Serves 8)

its fat 1 loin of venison, trimmed of Olive oil 50g butter llot, finely chopped sha 1 banana

1 garlic clove, crushed 400g chestnut mushrooms, very finely chopped pped 1 tbsp thyme leaves, finely cho 2 tbsp brandy 2 packs of prosciutto Plain flour

g) 1 pack all-butter puff pastry (375 2 egg yolks, beaten

This is the tricky bit. Make sure you’ve got a lot of table space free to do this. Overlap two sheets of cling film onto the surface, then lay out the prosciutto onto the cling film in two rows, slightly overlapping each slice. Spread the cooled mushroom mix out over the prosciutto. Then, carefully lay the seared loin on top of the mushrooms. You then gently lift up the cling film on both sides, wrapping the loin in the prosciutto. Once it’s all covered, twist the edges of the cling film like a sweet wrapper. Put it in the fridge while you tidy up. Dust the same surface with flour and roll out the pastry so that it’s about the thickness of a pencil. Remove the cling film from the loin and place the prosciuttowrapped venison in the middle of the pastry. You then wrap the pastry around it, trimming away any excess and sealing it shut with some beaten egg yolk. At this point, if you have one of those snazzy pastry cutters, you can re-roll the excess pastry and make a fancy trellis to go over it, but that’s just showing off. A couple of pastry leaves will do. Cover it with cling film on a baking tray and leave it in the fridge overnight, while you enjoy a Baileys and wipe the table down again. The next day, take the venison out of the fridge at least 30 minutes before you cook it. Heat the oven to 200˚C FAN. Brush the pastry all over with another beaten egg yolk and put it in the oven for 30 minutes or 35-40 for well-done. Let it rest for 20 minutes while you finish off all your Christmas veg, then bring it to the table and receive a rapturous response. n

As well as Renewable energy installers they are also NICEIC electrical contractors, Gas Safe & OFTEC accredited heating contractors.

An air source heat pump works by extracting heat from the outside air. This heat can then be used to heat the home via radiators or underfloor heating and also provides all of the hot water required in the home. Equally important is the fact that it is able to operate when outside temperatures drop as low as -20°C. Typically a heat pump can achieve efficiencies of 400% meaning for every 1kw of electricity consumed it will produce

A tale of two fund sectors According to the Investment Association, the Global sector is the largest fund sector – but it might not be quite as global as you think…

The largest fund sector by value is Global, according to the Investment Association (IA), the UK’s investment trade body. At the end of August 2023, Global funds accounted for £171.1bn of investments, about a seventh of the IA’s fund total, which covers over 50 sectors. Second on the list, at £138.9bn, was the UK All-Companies sector. Three years previously, the UK All-Companies sector had been top dog with £149.7bn worth of assets. The decline in popularity for the UK All-Companies sector goes back a long way. The IA data shows it to have been the worst sector for individual investor sales in six of the last ten years (2013¬–2022). As of August 2023, the sector had also

A St David’s College pupil has won a prize at the prestigious Wales Innovation Awards 2023. Milly Hay, from Eglwysbach, wowed the panel of judges with her truly outstanding Wonders of the World Board Game that she designed for her GCSE project. The awards are a celebration of Welsh Design and Technology recognising and rewarding the next generation of innovators. Working in conjunction with the Welsh Government the Innovation Awards encourage young people to be technologically innovative and appreciate the importance of Design and Technology. Milly’s board game will be displayed at The Senedd, in Cardiff Bay, next month.

Wrexham University unveils rebrand

Empowering students to feel they are capable of achieving anything they want to by creating an inclusive environment is at the heart of Wrexham University’s mission. That was the message delivered by University Chancellor Colin Jackson CBE at the institution’s external rebrand launch celebration. As part of the event, Andy Williams, the Mayor of Wrexham, stakeholders from local colleges, local councillors, the Vice Chancellor’s Welsh Language Community Committee, the NHS and more gathered at the University to hear more about the purpose of the rebrand. During his speech, Colin said: “Our new and exciting rebrand is key to demonstrating our purpose to prospective and current students – to empower all our students to feel that they are capable of achieving anything they want to by creating an inclusive and welcoming environment. That’s at the core of everything we do here in Wrexham.”

The nomination for the Independent Schools of the Year Performing Arts, Music and Drama category recognised Moreton Hall’s impressive and dynamic creative arts programme with local community initiatives such as the Face2Face Performance Academy and opportunities for musicians with the North Shropshire Music Orchestra and Training Orchestra all recognised. Gayle from the Universal Therapist experienced a frozen shoulder a couple of years ago and found that the pain was immense. Not to mention that it totally prevented her from working – and that’s when she discovered Bowen Therapy. Bowen Therapy is a gentle remedial therapy that’s

Remembering someone this December The holiday season can be a bittersweet time, as it brings joy and celebration but may also evoke feelings of sadness when remembering someone close to you who has passed away. While the absence of a cherished family member or friend can be deeply felt, there are meaningful ways to honour and remember them during the festive season. IN THE

STARS...

December’s horoscopes brought to you by Russell Grant ARIES (March 21st – April 20th) Your professional contributions are greatly valued on the 1st. This is a great day to make a proposal or give a presentation. Your best friend or romantic partner is hurt by all the time you spend on career matters. Spend more quality time together. The New Moon on the 12th ignites your restless energy. Don’t embark on an adventure before satisfying commitments in your personal and professional lives. TAURUS (April 21st – May 21st) Don’t ask for special treatment at work on the 3rd, or your colleagues will greatly resent it. Let a loved one treat you like royalty on the 4th; you deserve to be pampered and indulged. You might feel tempted to steer a friendship into romantic waters on the 12th due to a compelling New Moon. Think twice about taking such a risk with a sensitive person who can’t handle rejection. Your best friend or romantic partner grants you a Christmas wish on the 25th, making your heart overflow with love. GEMINI (May 22nd – June 21st) Let down your defences with a trusted business or romantic partner on the 1st. More opportunities to express your artistic side will arrive on the 6th; your job will be much more enjoyable as a result. On the 12th, the New Moon attracts an exciting person into your life. Before getting emotionally involved, set some healthy boundaries in your professional life. Check financial statements for mistakes on the 13th; it’s important to protect your interests. After a period of silence, someone special will contact you on the 23rd. CANCER (June 22nd – July 23rd) An argument about how much time you spend on work could erupt on the 3rd; be more attentive to your best friend or romantic partner. On the 5th, you’ll be inspired to take a trip for pleasure. Travelling to a seaside location will raise your spirits. Resume an abandoned creative project on the 6th; you won’t be sorry. The New Moon on the 12th brings an intriguing job offer, but you’ll ultimately reject it. When your intuition says that something is wrong, you should obey it. Starting on the 22nd, two heads are better than one.

While everyone remembers Russell Grant from his Breakfast TV appearances in the 1980’s, most people don’t realise that Russell was the first astrologer in over 300 years to present a horoscope forecast to a member of the Royal Family (HRH Queen Mother). Now dubbed the “Royal Astrologer” Russell has appeared on numerous television shows, including Strictly Come Dancing. He divides his time between London and his North Wales home near Portmeirion. www.russellgrant.com

LIBRA (September 24th – October 23rd) Communication with family improves on the 1st, thanks to your refusal to sugar-coat a difficult situation. Don’t let a forbidding relative steal your joy on the 3rd; you have every right to indulge in beauty, luxury, and romance. Your moneymaking ability soars on the 4th, allowing you to afford the luxuries you adore. On the 12th, the New Moon attracts an exciting message. Be wary about responding until you’ve checked into the sender’s background. Money for a trip becomes available on the 18th, making you excited about the future. SCORPIO (October 24th – November 22nd) Don’t let past romantic disappointments prevent you from approaching a love interest on the 3rd. You’re dealing with a radically different person. Your allure will be stronger than ever on the 4th; take this opportunity to win an attractive person’s heart. The New Moon on the 12th tempts you to join a start-up business, but hold on. It’s better to hold out for a job with a well-established company that has a reputation for treating employees well. SAGITTARIUS (November 23rd – December 21st) The 5th is perfect for getting financing for a big purchase, such as launching a business or buying a home. Your intuition about family matters grows sharper on the 6th. Resist the temptation to radically alter your look on the 12th, when the New Moon makes you crave a change. Improving your outlook will be more effective than transforming your appearance. A pessimistic relative will try to discourage your plans on the 17th; turn a deaf ear to their warnings. CAPRICORN (December 22nd – January 20th) People are much more receptive to your ideas on the 1st, giving your self-confidence a big boost. Friendship could turn to romance on the 5th; it’s hard to resist the charms of someone who is passionate, sensitive, and artistic.
