BIG the picture

Swallow Falls, or Rhaeadr Ewynnol in Welsh, is an area of Outstanding Natural Beauty where the river Llugwy flows through a narrow chasm creating a spectacular waterfall amongst a background of beech, conifer and birch trees. Located in the picturesque village of Betwsy-Coed, Swallow Falls is often at its most dramatic in the autumn due to the increased rainfall. A great way to see the falls in all their glory is to undertake the 3.7km circular walking trail that starts at the Ty’n Llwyn car park and takes you along scenic paths through the Gwydir Forest.

Climb Yr Wyddfa – the easy way!

Take a once in a lifetime adventure on the Snowdon Mountain Railway, which has been described as one of the most scenic railway journeys in the world. Trains depart from Llanberis Station and begin their climb to the summit of Snowdon, Yr Wyddfa, a journey experienced by millions of travellers since 1896. The Traditional Diesel Service will be running to Hafod Eryri, the UK’s highest visitor centre, until the end of October (weather permitting), where on clear days the views can stretch as far as Ireland. From here, you can venture up to the cairn 1,085m above sea level, the highest point in Wales. www.snowdonrailway.co.uk

Brush up on your history

National Trust Cymru has plenty to keep your little explorers entertained this October half term. From family-friendly trails and natural play areas to Halloween and harvestthemed activities, there are lots of autumn adventures to be had. Put on your boots and head on a walk around the garden and woodland at Plas yn Rhiw on the Llŷn Peninsula where vibrant autumn leaves set the stage for an exciting exploration. WILD JOURNEY

It’s been a wild ride for artist and writer, James Roberts, in the past few years. A lockdown side project to write and illustrate a pamphlet of poems about wild birds turned into a publishing contract, an award-nominated book, work for National Geographic, and requests for his artwork which is now sold in prestigious galleries. A desk job has been exchanged for a studio gallery in Rhayader, where he creates artwork using his unique style.

His studio is housed in an ancient timber framed building dating back to the 16th Century and little changed. There’s not a straight line in the place and his easel rocks as he paints.

Search for simplicity

James’ process has been a long search for simplicity, taking years to develop. He uses as few tools as possible. His workspace is notable for its absence of the plethora of materials most artists surround themselves with. Next to his easel is a bottle of Indian ink, a pot of salt, a jar of water and two Chinese brushes. It’s all he needs. This minimalism is driven by a respect for nature, and his belief that we need to simplify in order to live sustainably.

He works wholly in black and white, flooding a sheet of paper with water, then loading a brush with ink, letting it spread onto the wet substrate, creating flows and waves. Salt is then sprinkled over the ink, pulling pigment from the paper, creating grain and texture. When the paper has dried sufficiently he sprays it with water, lifting some of the ink, creating more texture and movement. The result is a process which echoes the patterns of nature, and particularly the atmosphere of the Welsh mountains, where ridges and summits appear and disappear from the constantly shifting clouds.

Wild inspiration

James’ images of mammals and birds are inspired by his experiences of wilderness travel. On one trip to British Columbia he was travelling up a dirt track when a wolf came out of the trees and sat down in front of him. The nerve-wracking visual exchange that followed felt like a conversation and his response has been to celebrate and defend nature ever since. He balances painting with writing. His recent book, Two Lights, long-listed for the RSL Ondaatje Prize, explores wonder and loss in the wilds of Wales.

Studio - gallery - bookshop

His studio, River Wood, is both workshop, gallery and small bookshop which stocks rare and well-known titles which have been an inspiration to him. From speakers on the walls comes the sound of birdsong in near and distant woods. It’s a rare town centre space devoted to nature. Everyone is welcomed in to share the experience. n

Rhos-on-Sea Exploring

Tucked away between its betterknown neighbours, Llandudno and Colwyn Bay, Rhos-on-Sea may be smaller, but it’s every bit as captivating. This charming seaside town, located just off the A55, offers an ideal stop for those looking to escape the hustle and bustle of busier destinations. Its peaceful promenade, welcoming town centre, and easy access to the North Wales coast make it a hidden gem – perfect for a day out or a quiet retreat.

Though small in size, Rhos-onSea is big on character. Visitors can enjoy beautiful views of the Irish Sea, explore historic landmarks like the Chapel of St. Trillo, or take a relaxing stroll along the sheltered beach. With its proximity to attractions like the Welsh Mountain Zoo, Snowdonia National Park, and local favourites like the crazy golf course, this sedate yet delightful town offers something for everyone.

ride, offering beautiful sea views. As you walk, you’ll pass Rhos Point and the beach, where the calm waters and mix of sand and shingle create a peaceful place to unwind. In autumn, the crisp sea air makes it an ideal spot for a quiet stroll, away from the busier tourist hubs.

The promenade also provides access to the town’s harbour. Keep an eye out for birds and sea life – you might catch a glimpse of seals, porpoises or even dolphins in the surrounding waters. The nearby breakwater shelters the beach, making it a popular spot for families during the summer. But even in the cooler months, the beach has its charm, offering space to relax and enjoy the soothing sound of the waves.

For those interested in the town’s history, the Holy Well and Chapel of St. Trillo is a must-visit. Known as the smallest chapel in the British Isles, this 6th Century site is a hidden treasure that offers a peaceful retreat and a connection to Rhos-on-Sea’s past. Measuring just 11 feet by 8 feet, with two-foot-thick stone walls and a simple design, this tiny stone building has space for just six people. The chapel is named after St. Trillo, and inside, under the modest altar, lies St. Trillo’s holy well, historically believed to have healing properties. A little further

If you prefer a more nature-focused outing, the nearby Bryn Euryn Nature Reserve is a fantastic choice. A short distance from the town, the reserve offers walking trails that lead to the summit of Bryn Euryn, where you’ll be rewarded with panoramic views of the coastline and countryside. The changing colours of the landscape provide a stunning backdrop for your walk.

If you’re a fan of golf, the Rhos-on-Sea Golf Club offers a scenic 18-hole parkland course with stunning coastal views over Penrhyn Bay. Golfers of all levels will appreciate the peaceful setting, which provides a relaxing escape alongside a round of golf. It’s a lovely way to spend a few hours, enjoying both the sport and the natural beauty of the area.

A helping hand

Situated in the Conwy Valley, on a secluded hilltop, is Idlewild Animal Sanctuary – a charity that helps people help animals which, in turn, help people…

Since the inception of Idlewild Animal Sanctuary in 2015, they have grown in size and importance to the North Wales area, and they now offer a health and wellbeing social enterprise for people with autism, learning difficulties, mental health needs and other conditions requiring sensitive therapeutic intervention.

The Sanctuary offers this, and more, alongside rescuing, rehabilitating and releasing wildlife, rehoming domestic and exotic animals, as well as offering a sanctuary for animals in need of lifelong or specialist care.

Through this project, they regularly provide health and wellbeing support to over 30 people with differing requirements, and there are presently over 150 animals of all types in residence – wild, farm, domestic and exotic – with constant arrivals and cries for help. They also run their own animal ambulance service, and a small hospital, and have a wide based fostering network established. They currently have around 50 volunteers, over 30 of whom have mental health needs and/or learning difficulties, and the Sanctuary provides a supportive, caring environment in which they can thrive.

In a recent interview on ITV Wales, one of their volunteers said: “It is the reason I get out of bed in the morning. If I didn’t have this place, I would probably stay at home all the time. I am autistic and very nervous around new people and not very sociable, but coming here, it is great. It has all the animals and the people here are very caring.”

This story is indicative of the overwhelming opinion amongst volunteers (and their carers) that the Sanctuary is a safe place for them, and if it wasn’t for the Sanctuary, some of them would simply remain at home, shut away, and experiencing nothing of the outside world. It is well documented that working and being around animals is good for mental health and the amazing animals who come through the Sanctuary judge no-one and give their love to all unconditionally. All they ask is to be loved and cared for in return.

But now those people that help the animals and the local residents need help themselves, as the Sanctuary is at risk of closure. North Wales cannot afford for this to happen, as the Sanctuary saves not only animals but also wonderful people. All of them ask for nothing – but each and every one of them deserves everything. Now they desperately need your help to continue their work!

In addition to re-branding to reflect the continuing importance of their work with people, they need to source alternative premises and relocate to be able to carry on their muchneeded work, not only with the animals, but with their wonderful volunteers and their support workers and carers.

One proposal is to secure a property that can meet all their needs and provide the space and facilities to accommodate a large volunteer base and house all types of animals. They need around 12 acres, with appropriate buildings – or space to create them.

This will cost an estimated £600,000 in total including all fees, taxes, permissions, and work to ensure the property is suitable to keep all the animals and volunteers safe. If they don’t succeed, the Sanctuary will close, the North Wales

community will lose a valuable therapeutic social enterprise for people and animals both with desperate needs, and the current animal residents will need to be rehomed – or worse.

To that end, a Limited Company, Idlewild Animal Sanctuary (Property) Ltd, has been set up. The sole aim of this Company is to act as a vehicle to purchase an alternative home for the Sanctuary. The Limited Company would lease the land to the Sanctuary for 99 years at a nominal rent under a full repairing and maintenance lease, effectively giving the Sanctuary full control over the land.

To achieve this, the Limited Company is offering 12,000 shares in the new venture at £50 per share. Shares would be limited to 3,000 for any one shareholder, which is an initial maximum investment of £150,000. The Limited Company would retain the right of first refusal to buy back shares from investors to ensure the ongoing financial position and security of the Limited Company and the Sanctuary by retaining Shareholder control.

Both Mike and Ian also work alongside Mr Stephen Dover, Consultant Oral & Maxillofacial Surgeon, where the patient, often a teenager, requires a minor surgical procedure to remove tissue in the mouth before braces or to have extractions, as part of their Orthodontic treatment. Na-Nóg is also able to provide Sedation services for those dental phobic or nervous patients having these procedures.

For patients with teeth that have become infected, often caused by tooth decay, cracks, or damage because of trauma, such as a fall, root canal treatment may be required, and Dr Abdul Aly, (Specialist Registration in Endodontics pending), is on hand to perform complex procedures with a microscope, often with a higher success rate, which is focused on saving natural teeth. Abdul also sees patients referred from other practices, who may have had root canal treatment in the past but where it has failed and he undertakes complex re-root canal treatment for the patient. He also works in combination with Mr Dover on some surgical cases.

Plas Newydd House and Garden, Anglesey

Feel the crunch of golden leaves under your feet as you explore this stunning garden on the banks of the Menai Strait. Have fun in the play area, make a pie in the mud kitchen and climb up to the treehouse. Look out for red squirrels collecting acorns as you go.

Bodnant Garden, Conwy

Bodnant Garden is marking its 150th birthday this autumn. To celebrate, from 19th October – 3rd November there will be outdoor party games, activities and a trail of special birthday boxes to find and open along the way. Penrhyn Castle and Garden, Bangor

Test your bravery in the ultimate knights’ challenge. Pick up an activity sheet from the Ticket Office and take on the self-led medieval monster themed challenges around the castle. On 28th and 31st October, storyteller Jake Evans will be visiting and on 26th and 30th October you can craft your own clay monster.

Powis Castle and Garden, Welshpool

Follow the Halloween-inspired step-free pumpkin trail and count how many scared pumpkins you can find hiding in the garden. Keep a look out for wildlife, including squirrels collecting nuts and birds of prey as you go. Venture inside the medieval castle to spot the crocheted pumpkins or join a spooky storytelling session in the Bird Room. n

Discover the mysterious world of fungi

As we step into autumn it’s the perfect time to discover hidden gems in your local patch!

From mouth-watering mushrooms on the supermarket shelf to toadstools that conjure up memories of fairy tales, the humble fungus hides an otherworldly mystery. Fungi come in all shapes and sizes from cups, balls, brackets, branches and more. But did you know their bizarre structures are simply the fruiting bodies? Just like the fruits of trees, they are temporary ‘tools’ to help the fungus spread its microscopic spores.

Hidden beneath the surface is a tangled network of threads (called hyphae) that together are known as mycelium. These threads stretch through the soil, connecting the fungi to trees, grasses and other plants. This ‘Wood Wide Web’ creates an incredible social network which allows trees to share sugars and nutrients with other trees as well as the fungi themselves.

REMEMBER! Never eat any fungi you find unless you are 100% certain about their identity. Unless you are with an expert, it is best to leave mushrooms where you find them, that way others can enjoy their beauty. Why not go home with a photo instead?

There’s no doubt that fungi are strange and mysterious beings, but did you know that many of them have even more peculiar names? Candlesnuff, ruby elf cup and turkey tail are just a few! Devil’s fingers are one of our spookiest species with its red and black tentacles or you may have spotted the bouncy yellow clusters of chicken of the woods clinging to an oak or sweet chestnut tree.

As we prepare for the highly anticipated relaunch of our menswear department in Clares Llandudno, we sat down with Claire McElroy, the store manager, to get an inside look at the exciting changes on the horizon. With a mix of fresh brands like Raging Bull and expanded collections from customer favorites, the relaunch promises to bring a new level of style and versatility to our store. Ahead of the meet-and-greet with rugby legend Phil Vickery on Thursday 26th September, Claire shares her insights on what customers can expect, the inspiration behind the relaunch, and how her team has worked to ensure its success.

Q: What inspired the relaunch of the menswear department at this time?

“We’ve always prided ourselves on offering a versatile and stylish menswear selection, but with the rise of new trends and a growing demand for more variety, it felt like the perfect time to refresh our offering. We want to ensure that we’re staying ahead of the curve and providing our customers with brands and collections that reflect both classic and contemporary styles.”

Q: Can you tell us more about the new brands, and what they bring to the store?

Our menswear department now has a full range of brands, each bringing something unique to the table, catering to different aspects of casual contemporary menswear.

This includes 4 exciting new brands ; “Lee” a classic & durable denim jeans range, “White Stuff” is comfortable & casual with quirky style details. “Brook Taverner” offers timeless style. Finally, Raging Bull with its heritage styling bringing a rugged yet refined aesthetic is the perfect compliment to existing brands such as Gant, Barbour, Crew, Weirdfish & Joules.

Q: How have you curated the extended collections from existing brands, and what can customers expect from them?

“We’ve worked closely with our existing brands to expand their collections in a way that reflects what our customers are asking for. Whether it’s a broader range of sizes, new colorways, or updated fabrics, we’ve ensured that there’s something for everyone. Expect more options in casualwear, jeans and outerwear — all with that signature quality our customers have come to expect.”

Q: What has the feedback from customers been like so far regarding the relaunch?

“The response has been overwhelmingly positive. Our customers appreciate the fresh new look, the variety of options, and especially the introduction of new brands such as White Stuff, Lee and Raging Bull. We’ve had many customers come back and say they’ve found something new and exciting, which is exactly what we hoped for.”

Q: How does the menswear relaunch reflect the broader trends in men’s fashion right now?

“We’ve noticed a shift towards more versatile, casual pieces that still offer a polished look, which is why we’ve focused on brands and collections that cater to this trend. There’s also been a growing interest in creating a wardrobe that can transition easily from work to leisure offering both style and comfort.”

Q: Are there any standout pieces or styles you’re personally excited about?

“There are so many great pieces, but I’m especially excited about White Stuff as they have some intriguing pieces this season, especially the merino quarter zip knits in earthy tones, easy to mix & match with the casual shirts, combining comfort, style, and brilliant for layering as we approach winter. Raging Bull also have some fantastic casual outerwear that balance functionality with style — perfect for the Welsh weather!

Q: How will the store’s new layout or design complement the relaunch of menswear?

“We’ve redesigned the menswear area to create a more inviting and dynamic shopping experience. The new layout gives each brand its own dedicated space, allowing customers to really engage with the collections. As customers enter the store, they’re inspired right away with key looks from each brand, making it easy for our customers to build an outfit.

Q: We hear you have Phil Vickery coming to launch the menswear department. What can attendees look forward to?

“We’re thrilled to have Phil Vickery joining us for this exciting launch! He’s an iconic figure, both in rugby and in his partnership with Raging Bull, so it’s a perfect match for our menswear relaunch. Attendees can expect a meet-and-greet with Phil, some great conversations about fashion and sport, and an exclusive first look at our new collections. Phil Vickery is actually the founder of Raging Bull, so his connection to the brand runs deep. His experience as a professional rugby player, combined with his passion for quality clothing, makes him the ideal ambassador for what we’re trying to achieve with this relaunch. Q: What message would you like to send to customers regarding this new chapter for menswear at the store?

Mary Jones is a local author from Llandudno’s beautiful West Shore – it’s no wonder that her creative juices just keep on flowing…

Writers should be writing. Right? Not M. K. Jones. Mary is currently searching for an expert in the cutting of old diamonds and for a forensic anthropologist, and these are areas in which Google just won’t do. It is murder, after all!

Mary is in the early stages of writing the ninth novel in her Maze Investigators series. The premise of the book is that three skeletons are discovered when an old police station is pulled down, and each one has a beautiful, expensive and identical diamond in the area of where each stomach would have been. ie. each person swallowed a diamond. But why?

Mary is a writer of genealogy-based novels, plus she has a Cozy Mystery series based in Cornwall, called ‘The Curiosity Club of St Foy’, and is about to launch a brand-new series.

Originally from South Wales, Mary is now based in North Wales, just outside Llandudno and has been writing for almost 12 years. In fact, 2025 will be the 10th anniversary of her first Maze novel, ‘Three Times Removed’, which has just been published as an audio book.

“The time seems to have gone so quicky,” she says. “I remember the launch of that first book, in October 2015, and now almost ten years on, we have the launch of the first book in the new series: ‘Death on a Gravestone’.” The series is called ‘The Newshound Mysteries’ with a launch at Cardiff Central Library on 17th October.

‘Death on a Gravestone’ is a police procedural novel with

genealogy – of course – and for the first time she’s coauthoring, with well-known Cardiff historian and retired former Detective Sergeant John F Wake.

“We’re currently busy putting the final touches to the editing, making sure the book is ready for publication.”

Writing has been Mary’s passion since she retired from work, but back then always thought she would be a one-book writer. Now, with eleven novels published, she’s working more hours than before she retired and doesn’t see this stopping any time soon.

“It does become overwhelming sometimes, so I’m happy I live close to the West Shore at Llandudno. I can jump in my car and be there in five minutes. I take a long walk, breathe in the fresh air, gaze at the sea and feel myself becoming calmer. I’m so lucky to live in this beautiful area of North Wales,” she says.

But soon enough it’s home again. With another three Maze novels coming out in audio version before Christmas, there isn’t much time for sea gazing, but she’ll fit it in somehow. The next Maze novel should be ready by early 2025. And leading up to Christmas Mary will be attending local craft and Christmas fayres, as well as speaking at book clubs and writer’s events, to which she’s always happy to be invited and involved. n

Bodysgallen Hall’s head chef is Abdalla El Shershaby, who arrived as pastry chef at Bodysgallen from Sharm-El-Sheikh, Egypt, in 2009. Since then, he’s expanded his skills and repertoire to progress through the ranks, becoming head chef in 2020. He works closely with head gardener Robert Owen, who has lived locally all his life and has led the gardening team of staff and volunteers at Bodysgallen for more than 40 years.

The Head Chef and Head Gardener work closely together, visiting the kitchen garden every day to gather what’s needed for that day and to plan the planting for menus later in the year. Abdalla is very keen on using seasonal and sometimes unusual produce – beetroot of different shapes and colours, garlic and watercress, kale and broccoli, and in autumn, mainly root vegetables.

“The fresher the better,” says Abdalla. “Whatever we cannot provide from our own estate is locally sourced to support local businesses and guarantees a consistent standard. We are lucky to have extensive grounds and gardens with the means to produce a lot of home grown produce. It is also nice for guests to walk the grounds and see the produce being grown, and then having it on their plate for dinner.

“We use estate-grown ingredients for every service at the Hall,” he continues. “We use our own fresh fruit on the breakfast buffet, as well as kiwi fruit, poached pears and home-made compotes for yoghurt. The tomatoes on the cooked breakfast are grown here, and so is the relish and pickled cucumber we use in sandwiches. We serve afternoon tea meringue nests with fresh garden fruit and make gooseberry and damson chutneys.”

Bodysgallen’s ice creams and sorbets are particularly delicious. Depending on the season, they include medlar, fig, plum and even honey ice cream, and cherry, lemon and thyme, redcurrant, and a divine rhubarb sorbet. n

Matthew Vaughan Jones is the head chef at Telfords Bistro – the highly rated seafood restaurant in the historic town of Conwy.

Telfords Bistro Conwy is the brainchild of director Christian Whittleworth who, alongside business partner Douglas Langton, launched the bistro in June 2023. Located just 50 metres from the historic Conwy Castle, Telfords Bistro has a relaxed, homely feel with subtle lighting and fresh décor.

With 90% of the menu being fish the menu is diverse with colourful ingredients and vibrant flavours using the best of fresh produce available. Locally sourced lamb and beef also make an appearance alongside a selection of freshly prepared vegetarian dishes. An extensive list of award-winning wines, local ales and a range of cocktails marry well with the menu. Recognised by North Wales tourism gaining recognition after just six months trading.

“We create our dishes from the heart with no pretentious fuss, ensuring diverse flavour, variety and quality,” explains Matthew, whose journey began at a tender age of 13 as a kitchen porter. “Our main passion and focus is fish! Keeping the menu simple, allowing the ingredients to speak for themselves.”

Through his teenage years Matthew decided his future would be in food and began his culinary journey gaining experience whilst working in several establishments in the Conwy area.

In 2006 at the age of 18 Matthew joined the British Army, based initially in Hereford and then travelling with his regiment to several countries in Europe, South Africa and Afghanistan. This time saw Matthew completing intensive training and gaining knowledge of many international cuisines. Recognition from the British army with promotion to Corporal for his success with culinary competitions.

Matthew states his biggest accomplishment was cooking for Her Majesty Queen Elizabeth II, at a state banquet with his regiment.

Following nine years of service Matthew returned to North Wales. He then joined Robinson’s Brewery, assisting their executive chef developing menus and concepts across North

Wales, Cumbria, Cheshire, Manchester and Derbyshire.

A chef position at the Hay Loft Restaurant, Bodnant foods was his next role supporting their head chef gaining further experience and knowledge of locally sourced, sustainable produce. Then, in 2020, Matthew took on the role of head chef at The Gazelle Hotel, Menai Bridge which is the sister site of Telfords Bistro.

On the launch of Telfords, Matthew was appointed as head chef. Now at 36 years old, and with over two decades experience in the hospitality industry, Matthew and his sous chef Joshua Lewis are putting their combined experience to good use.

“We are very lucky in that North Wales has a wealth of amazing produce available on our doorstep,” says Matthew. “Our local producers and suppliers have been predominant in the success of Telfords. A large percentage of our customers are local but due to our location tourism obviously plays a large part in our success. Sourcing local sustainable ingredients and providing our customers with provenance is critical to our future.

A taste of North Wales

Set in deep in rural North Wales, in the delightful village of Llandrillo, lies Tyddyn Llan – a restaurant with rooms that is bound to provide the wow factor.

The restaurant is under new management, headed by Gareth Stevenson who oversaw all food offerings at Palé Hall from its relaunch till 2023. Although originally from Leicestershire, Gareth has a Welsh heritage and has lived in the village for eight years. His two young boys are Welsh and, like their father and Taid, supporters of Wrexham AFC.

Gareth has taken over the management of Tyddyn Llan with his partner, Maria Ganova, who brings a wealth of experience with her to lead the front of house team.

While the team have been operating since mid July, some refurbishment of the property has already taken place, with the restaurant recently finished. Gareth and Maria want Tyddyn Llan to reflect a more modern outlook with décor which celebrates the environment, and a focus on sustainability by supporting local producers where possible. In short, to reflect the sustainable food concept.

To reduce waste, a creative six or ten course menu is served, and vegetarians and other dietary requirements are well looked after with prior notice. The wonderful dining offer also includes a selection of canapés to start and petit fours to round off the evening. The community fridge initiative involves setting up a public space that brings people together to share food, meet up, learn new skills and prevent fresh food from going to waste. They’re open to all and anyone can share or take food, including surplus from supermarkets, local food businesses, producers, households and gardens. This simple yet impactful concept helps divert edible food away from landfills, thereby reducing emissions and the overall carbon footprint associated with food waste.

Ingredients (serves 4)

150g smoked back bacon

150g chicken pieces (or leftover chicken)

2 garlic cloves, finely chopped

1 red chilli, finely chopped

Leaves from five sprigs of thyme

2 sprigs of rosemary, finely chopped

2 bay leaves

400g can of cannellini beans, drained

400g can of butter beans, drained

1.5 litres homemade (ideally) chicken stock

1 Savoy cabbage

A sure sign that summer has finally finished for the year is that first morning when you notice the contrast between how cosy you are un-der the duvet, to how cold your exposed nose has become in the au-tumn chill. Immediately, you understand what goes through the minds of bears and hedgehogs when they get the urge to pack up for the year and hibernate. It’s a lovely feeling, made even better if you’ve braved the cold floor to get yourself a mug of tea before returning to the em-brace of your warm bed.

To me, warmth is what autumn is all about. It’s time to put away the shorts and unpack the heavy jumpers, the scarves and the long coats. It’s all about going walking on a bright day in the crisp, cold air, then returning to a warm home. It’s all about slow-cooked casseroles and stews – all things hearty.

Boeuf Bourguignon and Cassoulet, that sort of thing.

North Wales has some of the greatest walking paths in the UK, inland in the country and all along our magnificent coast.

I enjoyed my first autumnal trudge recently, and made this simple dish that filled me up like a hot water bottle. It’s an especially handy meal to make if you’ve had a roast chicken the day before. You can use up all the leftover chicken in this and make a stock from the bones – always a better option than using a stock cube.

Chop up the bacon and add it to a deep pan. Bring it to the heat and cook until it starts to go crispy. Then add the chicken and turn it in the bacon fat for a few minutes. Add the chopped garlic, chilli and the herbs and cook for about two minutes.

Now add the beans, stir, and pour in the chicken stock. Bring that to the boil, then drop to a simmer, season with salt and pepper, and leave for about 20 minutes.

Meanwhile, take off the leaves of the Savoy cabbage, wash them and roughly chop. Stir them into the soup, then cover the pan and leave for five minutes while you carve away a nice pile of Parmesan shavings.

Serve straight away with plenty of crusty bread on the side, and scatter the Parmesan over the top.

This month we’re diving into the delightful and balanced world of the Amaretto Sour – a drink that brings together sweet, sour and nutty flavours in perfect harmony. Renewable energy systems for your home

Over the last few months energy prices have become very unpredictable, with significant rises in energy prices compared to previous years. This has made solar PV and battery storage even more attractive and means payback can be achieved in anywhere between 5 and 10 years which is a bonus when considering you are also helping to reduce your carbon footprint. As well as storing solar energy generated by the solar panels a battery can also be charged from the grid using cheap off peak electricity tariffs, making payback even quicker. Some of the battery systems can even provide back up power in the event of a power cut, meaning your solar system is still operational, helping power your home and stay off grid even longer.

Princes LHS are approved installers of the market leading Tesla Powerwall battery storage system, (www.TeslaPowerwall.co.uk) which they have on display in their renewable energy showroom in Ellesmere “Low Carbon Home Systems” as well as being installers of other battery systems such as GivEnergy, SAJ, and Pylontech amongst others. There are incentives available for anyone who exports the electricity they produce, with some of the larger energy providers now offering in excess of 15 pence per kWh for any electricity sold back to the grid using the “smart Export Guarantee” (SEG), which is currently only available when having your system installed by an MCS accredited company such as Princes LHS.

A sensible option to fit alongside a Solar PV system due to it being powered by electricity is a heat pump which heats your home replacing your fossil fuel boiler and connecting to your wet central heating system. There is a £7,500 grant to go towards the installation of an air source or ground source heat pump. If you have gas, oil, LPG, or electric heating you are eligible for the BUS (Boiler Upgrade Scheme) Grant which as MCS accredited contractors, Princes LHS can apply for on your behalf.

An air source heat pump works by extracting heat from the outside air. This heat can then be used to heat the home via radiators or underfloor heating and also provides all of the hot water required in the home. Equally important is the fact that it is able to operate when outside temperatures drop as low as -20°C. Typically a heat pump can achieve efficiencies of 400% meaning for every 1kw of electricity consumed it will produce 4kw of heat, compared to a fossil fuel boiler being somewhere between 75% and 90% efficient. Alternatively, a ground source heat pump is like a traditional central heating boiler, but, instead of using oil or gas, it uses heat extracted from the earth. Rather than buying fossil fuels from a supplier, you would be using renewable energy for your heating and hot water meaning you will not only be doing your bit to help the environment, you will also save money on your heating bills.

There are Eco Forest and CTC ground source heat pumps, various models of Air Source Heat Pumps including Mitsubishi, Samsung and Midea. Legal experts in North Wales providing specialist advice on renewable energy schemes say they have seen a marked increase in the popularity of green energy projects in recent months.

“It is critical that a land agent specialising in renewable energy projects is instructed at the outset to negotiate commercial terms – i.e. what you’re actually going to be paid. We work closely with those agents working in this sector.

Tips to minimise tax on offer at business seminar

Awards success for local business woman Tracey Toulmin has won the Llais Cymru Award for Welsh Women in Business for the second year running in the Tourism and Leisure Category. “I am so proud to have been nominated, but to win again is mind blowing,” said Tracey. Local charity supports the community

KIM Inspire are an award-winning charity providing professional, high quality mental health support in the community. Their group led activities are proven and innovative. KIM’s free of charge sessions are friendly, fun and always focused on progression and individual development. KIM Inspire currently operates a café run by staff and volunteers at the Heddfan Unit, Maelor Hospital, Wrexham. Café KIM opened in the Heddfan psychiatric unit at Wrexham Maelor Hospital in February 2011. The café is run by a small staff team and a dedicated group of KIM volunteers, and is open to the public from 9am4pm, Monday-Friday. KIM Inspire welcome people from all walks of life to support others, fundraise, help with catering and office work. They also offer opportunities for self-development, accredited training and work experience – and are a great way to socialise. ReSource helps the community

ReSource is a social and environmental non-profit working across North Wales to promote positive environmental activities with a focus on supporting young people and adults to overcome barriers to gaining skills, qualifications and to gain employment. Established in June 2020 ReSource works with around 30 adults and young people each week. ReSource’s current activities includes a popular Scrap Store in Ruthin, creative community shop, From the Earth community café on Well Street, Aunt Rosa’s garden and orchard in Denbigh and developing ReSource Workshops in Ruthin for repair, upcycling and skills development. ReSource also has an exciting project Coming Soon in Wrexham city centre – so watch this space! They are always on the lookout for donations of crafting items, and with their new ReSource Workshops they aim to extend this to furniture items. Post-Capsular Opacification (PCO) and YAG Laser Treatment

After cataract surgery, where the cloudy lens of the eye is replaced with an artificial lens, some patients may develop a condition known as post-capsular opacification (PCO). This occurs when the capsule that holds the new artificial lens becomes cloudy, interfering with vision, similar to cataracts. PCO can develop months or even years after cataract surgery. It is sometimes referred to as «secondary cataract,» although it is not a true cataract. The most common and effective treatment for PCO is YAG laser capsulotomy. This is a painless, non-invasive outpatient procedure where a laser creates a small opening in the cloudy capsule to allow light to pass through to the retina, restoring clear vision. The procedure typically takes only a few minutes and results in immediate improvement in vision. After YAG laser treatment, patients may experience temporary floaters, but serious complications are rare. It is generally considered a safe and effective procedure, with most patients achieving long-lasting results.
