THE SKY AT NIGHT If you’re dreading the nights drawing in fear not – because every North Wales cloud has a silver lining…
As the long summer nights draw in and we head into autumn, don’t despair! It’s time to look forward to our nights getting longer with more hours of darkness to enjoy our star filled skies. Here in North Wales we are fortunate to have not just one, but four areas that are great for stargazing; the Snowdonia National Park and the “Area of Outstanding Natural Beauty’s (AONB’s)” of Anglesey, Llŷn Peninsula and the Clwydian Range and Dee Valley. In Wales we have long been used to embracing the darkness by heading out and enjoying what the heavens have to offer. In 2015, Snowdonia became an accredited International Dark Sky Association due to its pristine darkness and views of the night sky. One of only 13 in the World, it is home to some of the darkest areas in the UK. This is because we have worked hard to limit light pollution across the area, something that now affects 98% of the UK population. Light pollution is not only harmful to human health, causing a huge array of ailments, but it is also incredibly damaging to our wildlife and ecosystems. It’s important to prepare before you stargaze, it takes patience and your eyes need at least 20 minutes to adjust to the darkness. So, before you head out to the garden to look up, wrap up warm! Take a warm drink like a hot chocolate and a comfy mat to sit on. Fingers and toes get particularly chilly quickly, so boots, gloves and a woolly hat are all stargazing essentials. Using an app like ‘skyguide’ on your phone can help to guide you around the night sky and pick out constellations like a pro. ‘Stellarium’ (http://stellarium.org/) is another great tool which you are bound to find useful. Make sure your phone is fully charged and you carry a torch, although a head torch with a red light setting is by far the best. Happy stargazing!

Of course, just because the name indicates that you should imbibe this classic rum cocktail before noon doesn’t mean to say that you should... but if you do we won’t tell! INGREDIENTS • 25ml of light rum • 1 teaspoon cherry brandy • 12ml lime juice • 1/2 teaspoon Grenadine • 1 egg white Method Fill a shaker halfway with ice cubes. Pour all of the ingredients into the shaker and shake well. Strain the mixture into a chilled cocktail glass. Give the egg a minute to settle to the top and form a layer of foam, then serve.

RECIPES Even in times as uncertain as these, we can still rely on a handful of absolute certainties. Chief among them is the inevitable assurance that once the kids go back to school, the weather will improve dramatically - just in time for nobody to be able to enjoy it properly. I’ve always been rather grateful for the bonus summer of September: easing us gently into the damp darkness of autumn rather than just dropping us mercilessly into it’s soggy embrace. As such, while the sun is still out there somewhere, here are a couple of dishes than can be placed in the middle of your garden table for everyone to get stuck into, alfresco-style. Keep a coat handy though…
POT ROAST CHICKEN Serves 4 J 50g butter J 2 tbsp olive oil J 1 free range chicken (1.5kg approx) J Salt and pepper J 1 pack bacon lardons J 10 cloves garlic, peeled J 50 mls Noilly Pratt (or any vermouth) J 1kg potatoes, peeled and quartered J 6 sprigs of fresh thyme J 300ml chicken stock Preheat the oven to 150˚C. Raise your glass It feels very much like we have been living in troubled times for the last few months, lots of information, lots of confusion, lots going on out of our control. This is all fairly new to most of us, but in some parts of the world chaos, confusion and troubled times have been the order of the day for a long time. The civil war in the Lebanon lasted for 15 years and 6 months. In the midst of all of the chaos, the many battles, explosions, death and destruction were normal people, making a living and trying to live their lives in as normal a way as possible. Amongst them were a number of vineyards, growing grapes and making some outstanding wines –Chateau Musar anyone? In fact the Lebanon has been producing wine since the times of the old kingdom (2686 – 2134 BC) and it is one of the oldest sites of wine production in the world. Lebanese wines have been less common for us over here but have over a period of time become more popular. The Marine Conservation Society welcomes consultation The Welsh government has launched a long-awaited consultation to establish whether some non-essential single-use plastics should be banned. The Marine Conservation Society has welcomed the consultation and is urging members of the public to get involved and share their thoughts to ensure that the policies put in place throughout Wales are ambitious and progressive. The Marine Conservation Society has been recording the abundance of single-use plastics on Welsh beaches for nearly 30 years, illustrating the true extent of the issue. At last year’s Great British Beach Clean, plastic items and pieces were amongst the most commonly found items on beaches in Wales. For every 100m of Welsh beach surveyed an average of 162 small plastic pieces were found, these pieces are likely to have broken off of larger plastic items. In addition, an average of 32 cigarette stubs, which contain plastic, and 20 food packets were found for every 100m of beach cleaned and surveyed. The Welsh Government’s consultation is an opportunity to ensure that measures are put in place to stop the tide of marine litter and reduce our reliance on avoidable single-use plastics.The consultation will consider banning items which have been banned elsewhere in the UK, including plastic cotton bud sticks, stirrers and straws. However, the Welsh Government is going further by also looking at takeaway items such as plates, cutlery, and food and drinks containers made from polystyrene.
