Bell, M.S., R.D., is a registered dietitian at Table Health, an integrative medical practice in Traverse City. She loves sharing her passion for healthy meals and seeks to bring enjoyment, laughter, and good tasting food to health care. As an EES instructor she has taught healthy cooking classes to help students facing a variety of health and dietary challenges. As a custom trainer for EES she recently taught a group of local healthcare professionals about the benefits of an antiinflammatory diet, a class that was deemed “a hit!” by the client. Zentangle Method for Mindfulness

Knitting: Toe up

Socks

As an alternative to the conventional cuff-down sock technique, learn the toe-up sock technique. Both techniques produce a sock that, when fin ished, will look identical. The difference is your personal preference for knitting either cuff down or toe-up. All sock classes are taught using the circular, in-the-round knitting technique. If you already know how to knit in the round you will be ready to begin knitting your sock. If you are unfamiliar with circular knitting you will learn this technique during the first class. Knitting: Mosaic Technique NEW!

Join this one-day workshop to learn the mosaic technique of knitting! Mosaic knitting is a color work technique using two contrasting colors in the same weight of yarn and slipped stitches to create a geometric pattern on your fabric. You will knit a few sample pieces with two colors, no stranding technique (also called Fair Isle) required. Supply list will be emailed to you two weeks before the start of the class.

Knitting Sweaters: Toddler Cardigan

If you have never knitted a top-down raglan sweater, or need a how-to refresher, this class is for you! Knit a sweater sized for a toddler using techniques with which you may already be familiar: M1L and M1R, pick up stitches, and ribbed stitches. The techniques for creating the raglan shape, picking up stitches to knit sleeves, and the button band used in this small sweater are completely adaptable to an adult sized sweater. Class level is Advanced Beginner and is for students who already know how to knit but want to learn these techniques. Supply list will be emailed to you two weeks before the start of the class.

Learn to use the Cat Bohrdi method of casting on to create a special twist in your knitted fabric. Cat called this method the Magical, Mysterious Moebius. Windsor Furniture Making: Make a Chair, Rocker, Bench, or Tall Shop Stool NEW!

Northern Michigan has more than 100 different species of trees. Learn to draw some of them in this introductory course from a local artist who is inspired by the natural beauty of our region. This course will study the concepts and theory of two-dimensional design, pattern, and color as they apply to visual perception and commu nication. The application and utilization of these concepts will be explored during the semester.

Students will be introduced to basic drawing skills and techniques through the use of line, form, composition, perspective, and the use of chiaroscuro. The course emphasis is on using drawing as a vehicle for seeing and communi cating. Life Drawing

Students will be introduced to drawing the human figure from live models. Explorations include gesture drawing, contour drawing, and drawing the figure in motion to capture qualities of grace, rhythm, and form, as well as volume and mass through use of value. Adobe Photoshop

Students will be introduced to Adobe Photoshop to learn how to incorporate color, use layers, create special effects, use filters, and use a variety of selection techniques for proper image editing. Students will also learn the basics of using a digital camera and scanner as well as color management, how to restore damaged images, automate tasks, and how to prepare files for print. The Adobe Certified Professional Exam for Photoshop and a temporary Adobe license is included in the cost for this course.

This course covers the basics of using Adobe Illustrator to create vector objects and layouts for print and interactive environments. Students will learn how to create and manipulate shapes, work with type, color, gradients, fills, and strokes.

Students will also learn to prep files for print and choose the correct color space for various applications. Knife Skills

The first step in becoming a confident home chef is choosing the best knife for the job! Chef Les Eckert, Director of the Great Lakes Culinary Institute, will guide you in honing important knife skills. You will work with carrots, celery, cauliflower, red peppers, tomatoes, garlic, herbs, lemon, and avocado using the methods of julienne, small dice, medium dice, concasse, zest, juice, roast, blanch, mince, and chiffonade. INSTRUCTOR SPOTLIGHT

Brian Lillie is the Director of Hospitality Operations and Distribution at Chateau Chantal. From the start, his passion for promoting and sharing wine with others has been unstoppable.

Brian came into the industry at the time that wine in Michigan was becoming more than just a tourist attraction. He says, “Over time, I worked with winemakers and visited wine regions all over the globe. I’ve tasted with professionals from novice to Master. In every case, one thing remains the same — an inherent camaraderie in everyone that possesses the passion for wine.”

Sharing his passion, Brian teaches series of wine tasting classes through NMC Extended Education and always enjoys the inevitable “aha” moments. “When the student connects what I’m saying with their experience it makes it worth the journey,” he shares.

For those with an interest in wine, Brian’s advice is simple. He suggests, “Taste all kinds of wine. You don’t need to like everything, but if you limit yourself to only one variety you are doing yourself a disservice. There is SO MUCH wine out there.” Cheers!

Mexican Street Food Date Night is a fun and delicious way to spend time with people you enjoy while learning new things and eating great food. In this class, students will learn how to identify regional ingredients and understand their uses; experience using Mexican chilis and cheeses; and blending fresh herbs and dried spices with citrus to create delicious flavors. You will make and enjoy carne asada, guacamole, Mexican street corn, and churros with chocolate dulce de leche dip.

Artisan Bread Masterclass: Preferments & Sours

Want to take your baking to the next level? Or have you always wanted to get into bread making but didn’t know where to start? This two-anda-half day intensive course allows students to explore in-depth a variety of bread making tech niques by creating six different styles of bread. Both insomnia and sleep deprivation are factors in many psychological and physical disorders. Side Flow Yoga for All Levels

Connecting yoga poses in a flowing sequence is called vinyasa. The First Amendment: Free Speech and Religion

The First Amendment is the hottest area of law right now. Many of the most contro versial decisions being handed down by the Supreme Court are being brought under some provision of the First Amendment to the U.S. Constitution, which states that “Congress shall make no law respecting an establishment of religion, or prohibiting the free exercise thereof; or abridging the freedom of speech.....” But what do those words mean, exactly? Where does the free speech of one person or group conflict with the sensibilities or protections of another? What about “hate speech?” Antiwar protests?? When does the “free exercise” of one’s religious beliefs effectively constitute the “establishment” of a religion? Debates and controversy rage on issues that touch our deeply held religious and/or phil osophical beliefs, such as abortion, war, sexual orientation, vaccinations, whether to preserve certain memorials, etc. This class will discuss the scope of these First Amendment “freedoms” and some of the key U.S. Supreme Court decisions on these issues. We will not try to solve these controversies but you will leave with a much better understanding of the backdrop and ratio nale for the cases interpreting this part of the Constitution. You will read the news about new cases being handed down by the Court with much keener insight. There will be some reading materials and be prepared for lively class discussions!

Winter is a perfect time of year to learn the art and science of tracking animals, with snow providing a great medium for preserv ing tracks. INSTRUCTOR SPOTLIGHT

From an early age, Kirk Waterstripe has been an avid birder and outdoors enthusiast. Love of his backyard bird feeder first sparked his interest. At 10 years old, his mom signed him up for Birding for Beginners and he was hooked.

Kirk shares his passion through teaching several popular birding classes each Spring through Extended Education, covering topics such as bird identification and migration patterns. He loves watching students have their “aha” moments, while also asking questions and showing their enjoyment.

A particularly fond memory of Kirk’s comes from leading bird walks in Leelanau County in the 1990s. “Every so often, this kid of 10 or 11 would come along. He’s still birding, chasing rare birds all over the state. He’s gotten darn good at it too! And he still remembers seeing a rather rare shorebird on one of our walks,” he shares.

Kirk encourages everyone to get outdoors. He says, “Birders are the nicest people! Give birding a try. At least spend some quiet, slow time outside.”

Welding Fundamentals: Pick Your Process

Perhaps welding is your future career path, but you want to try it out before making an investment of time and money? Or, already in the field, but looking to upgrade and/or add new skills? This class will provide a strong foundation focused on welding specifically aluminum. Shielded Metal Arc Welding (stick), Gas Tungsten Arc Welding (TIG), Gas Metal Arc Welding (wire welding), and Oxy-fuel (gas welding) are all options on which to focus your training experience. Join NMC instructors at the NMC Welding Lab to learn shop safety along with an understanding of welding aluminum using G.M.A.W. spray transfer and G.T.A.W. manually operated processes. This experiential welding class is open to anyone over the age of 18. Receive 28 hours of applied training over the course of 7 weeks.
