This online introductory program prepares graduates for employment in the expanding brewery, microbrewery and brewpub industries. The program provides insight into brewing science and technology, recipe formulations, and packaging. Each course may be taken as a stand-alone course or once all five courses are completed successfully, the student will receive an Introduction to Brewing Certificate.

Students wishing to enroll in the on-campus Brewmaster and Brewery Operations Management Diploma program at Olds College, are eligible to apply for Recognition of Prior Learning for the applicable courses completed online.

Note: Completion of the online courses does not guarantee admission into the on-campus program. Students must be 18 years of age or older to enroll.

After successful completion of the certificate, you will be able to:

Examine the processing parameters for brewing ingredients.

Identify, select and utilize process technology practices in brewery operations, packaging and handling.

Design a functional brewery operation, from an equipment standpoint.

Utilize computer applications for brewery operations.

Formulate and develop a beer recipe for the market place.

Identify techniques for cleaning and sanitation of packaging systems.

Home Sausage Making

Intake: Fall

Delivery: In Person at the Olds College Campus

This hands-on class is a perfect fit for someone looking to learn about sausage making production for home use. Course covers all topics related to creating that perfect sausage, including: equipment set up and maintenance, meat block selection, casing practical skills, mixing spices, smokehouse operation / maintenance, linking and tying, recipe development, proper grinding and stuffing techniques, as well as food safety and sanitation practices.

Home Game Butchering

Intake: Start dates vary

Delivery: In Person (Location may vary, check website for details)

This is a great beginner course for anyone looking to cut and process their own wild game. Learn proper and efficient techniques that may be easily done from home. These skills will help you get the most out of your carcass. Topics covered include: muscle groups, seam butchering, boning, carcass breakdown, roast tying, steak cutting, wrapping and of course, food safety and sanitation.

Animal Welfare & Humane Slaughter

Intake: January, April, July and October

Delivery: Online

This program is designed as a basic introduction into the world of humane handling and stunning. Participants will gain an understanding of the theory and applications related to the slaughter of all species that are processed in Canada. In addition, proper handling and animal welfare are covered in the course material. Students have 3 months after registering to complete a single course. If you enroll in the entire program, you have 12 months to complete.

The General Beverage microcredential will familiarize you with the sensory attributes of different beverages and how they are produced and packaged. Production, quality control and introduction to sensory attributes, filtering and packaging are explored.

Cider Beverage

The Cider Beverage microcredential will give you a background in Cider-making that will provide you with the skills and background necessary for a career in the cider industry. Production, flavors, quality, finishing and marking and sales are explored.

The Ready to Drink Beverage microcredential will give the you a background and will provide you with the necessary competencies for a career in the Ready to Drink Beverage production industry. Production, flavors, quality, finishing and marketing and sales are explored.

Heavy Equipment Operator Certificate

Intake: Fall, Winter, Spring

Delivery: In Person at the Olds College Campus

The Heavy Equipment Operator Certificate Program (HEO) provides you with the knowledge and skills required to join the workforce as an entry-level heavy equipment operator. In this 12-week program, plus a practicum, you will focus on job-site fundamentals including: health, safety, and environmental training and awareness; equipment maintenance and operation; and application of earth moving techniques using hands-on operations. You will be trained to operate selected pieces of equipment, which may include: compactor, loader, dozer, grader, skid steer and excavator.

Admission Requirements:

This program has admission requirements and student funding may be available. It is recommended to register early to avoid dissapointment as some courses have a maximum enrollment.

Experienced Heavy Equipment Operator Safety Certification

Industry is seeing a need for their experienced operators to have proficiency certification in order to either bid on projects or abide by insurance guidelines. While this is not legislated in Alberta at this time, Olds College has government approved Heavy Equipment Operator Curriculum. We are able to provide equipment specific Safety Certification. This is based upon our curriculum that has been developed and reviewed with Industry Stakeholders. Prerequisite hours for entry into the evaluations are EQUIPMENT BASED. We require that prior to us evaluating an operator, a sufficient amount of hours on the specific piece of equipment must be logged. Equipment includes loader, skid steer, dozer, grader and packer. Students that successfully complete the classroom work and evaluation will receive a certificate valid for 3 years. Group rates available.

Utility Tree Worker Safety Training

Intake: Spring

Delivery: In Person at the Olds College Campus

Are you currently employed in a position where you are clearing brush and trimming trees around power lines? This 2-week course can help you take your career to the next level as it is one of the components required to apply for certification as a Utility Tree Worker or Utility Tree Trimmer in Alberta with the Professional Vegetation Manager's Association (PVMA).

Pre-requisite

You must have six months of related work experience in tree and brush work around power lines to register for this course.

Special Requirements:

Please check the Olds College Continuing Education website for specific eligibility criteria, student equipment and supplies required for this course. After successful completion of this course and the required number of work experience hours, students can apply to the PVMA for certification. Utility Tree Worker & Tree Trimmer Recertification

Intake: Spring

Delivery: In Person at the Olds College Campus or Online

The Professional Vegetation Manager's Association (PVMA), in association with the Work & Safety Standards Division of Alberta Labour requires certified Utility Tree Trimmers and Utility Tree Workers to complete a recertification course within five years after obtaining their initial certification and every five years thereafter. You will be updated on current electrical safety standards and safety practices important to you on the job. After successful completion of this course and a passing mark on the exam, currently employed Utility Tree Workers and Utility Tree Trimmers can apply to the PVMA for recertification.

Online Self-Directed Optional Stump Treatment Pesticide Certification

You should be comfortable with computers and should be prepared to locate and schedule a proctor to write the exam within the 2-week course dates. The online recertification course cannot be taken consecutively (twice in a row). In-class recertification is required at least once in a 10-year period. If your recertification has lapsed, then you will be required to take the in-class session to recertify. There will be only one retake for the final online exam, a retake cannot occur prior to 30 days of the first attempt. If you are not successful on the retake exam, you will be required to take an in-class recertification that is held in the Spring.

The Stump Treatment Pesticide Certificate is required for individuals applying herbicides to stumps and is available only to those with a Utility Tree Worker or Utility Tree Trimmer Certificate. The Stump Treatment tutorial and exam are optional and offered in the evening during the Utility Tree Worker Safety course.
