Sanity- 2 Savers When the opportunity knocks, you’ll be ready! BY AMY TOKOS

Summer is around the corner. Here are five tips for staying cool as a cucumber when it comes to managing your family’s fun.

PUNCH LIST Create a summer fun list. Ask your kids to brainstorm what they want to do this summer. Post the list in a common area of your home. Plan an activity or two from the list, and check them off as you do them. You can also have the kids make a list at the beginning of a family trip so everyone has a say in the planned activities.

DAY-TRIPPING Keep it simple and enjoy the ride. Start with the three S’s: sunglasses, sunscreen and snacks. A day trip is an opportunity for your kids to look out the car windows, play travel games and sing along with the radio or a CD. So turn up the music and put the electronics away.

A good packing list is essential for a family trip. Begin your list two weeks before your departure. Let each of your children pack his own backpack with travel toys. When you arrive at your destination, have your children put their stuff in their own drawer/spot for the week.

Keep a pool bag ready with sunscreen, pool toys, goggles and pocket change. Add towels, a good book and a few snacks just before heading out for a day at the pool.

Stash those art kits that your kids get for their birthdays. They’re perfect for days when they have to play indoors. Rainy days are also ideal for a school artwork clean-out. Zucchini Why We love iT: This beautifully colored veggie doesn’t need to be peeled before it’s eaten. Serve it sliced, stuffed, boiled, steamed, baked – even barbecued. WhAT you geT: Vitamin C and fiber. in your gArden: Plant zucchini in the sunniest part of your garden about one inch deep, with about six seeds to each small hole. Water seeds about once a week, especially when they begin to produce fruit.

TomAToes Why We love Them: Often mistaken for a vegetable, it’s actually a fruit. It’s great alone or in salads and sandwiches. WhAT you geT: Vitamins C and E, folate and fiber. in your gArden: Tomatoes have a long growing season. They need lots of sun and well-fertilized loose dirt. Tomatoes should be fertilized and watered two to three times a week.

sTrAWBerries Why We love Them: This sweet fruit is yummy by itself, but can also be used in salads, smoothies and desserts. WhAT you geT: Vitamin C, manganese and fiber. in your gArden: Find a roomy, sunny spot to plant. Do this in early spring, and make sure to prune the plants to prevent them from taking over the garden. Strawberry towers can help. Plant the seeds about 12 inches apart.

PePPers Why We love Them: This veggie comes in red, orange, yellow or green. Peppers can be sweet or spicy. They can be served stuffed, on pizzas or in salads. WhAT you geT: Very high levels of vitamins C, A and B6. in your gArden: Plant pepper seeds about a half-inch deep when it is warm out. Water frequently to prevent seeds from becoming dry and bitter. Once the peppers start growing, they may become heavy. Use tomato cages to help support the plants.

cArroTs Why We love Them: They’re low in calories and are filling. WhAT you geT: Vitamin A, as well as one of the B vitamins that can help prevent birth defects. in your gArden: Sprinkle the seeds in rows along shallow trenches about one inch deep. Cover them lightly – don’t press the soil over the seeds. Water regularly.

limA BeAns Why We love Them: Lima beans have a starchy yet buttery texture and a delicate flavor that complements a wide variety of dishes. But refrain from eating these beans raw; they can make you sick. WhAT you geT: Loads of fiber, protein and magnesium. in your gArden: Plant these seeds one to two inches deep and four to six inches apart. Stay away from nitrogen fertilizer, and water the beans regularly to keep the soil moist.

Cucumbers also have anti-inflammatory and antioxidant properties. in your gArden: Cucumber seeds should be sown into rows that are one inch deep and six to 10 inches apart. The seeds will need lots of sunlight. Water them consistently.

snAP PeAs Why We love Them: They’re great raw or cooked. WhAT you geT: Folic acid and vitamins B1, K and C. in your gArden: Make sure the soil is loose when you plant the seeds. Add inoculants (found at local garden stores) to help the seeds draw nitrogen from the soil. Sow the seeds about one inch deep. Water them regularly so they don’t dry out.

dIll Why We love It: Dill is extremely easy to grow, and it’s versatile as a spice. It’s most commonly used for making dill pickles. What you get: Calcium, iron, manganese and fiber. In your garden: Plant the seeds in about one-fourth inch of soil. The seeds do not need to be watered regularly except during dry seasons. Weed regularly.

parsley Why We love It: Aside from being a pretty green decoration on your plate, parsley can serve as an herb with chicken or fish, as well as in stuffing. It is also a breath freshener. What you get: Vitamins C, K and A. In your garden: Plant the seeds 10 to 14 inches apart with exposure to a fair amount of sun. Water regularly.

thyme Why We love It: This plant is great with meat, but it can also be added to tea. Thyme can help alleviate headaches, colds and sore throats. What you get: High doses of vitamin K and iron. In your garden: Too much care can prevent this plant from growing, so only water it every once in awhile. Be sure to trim it regularly to keep it contained.

basIl Why We love It: This flavorful plant is used to make delicious tomato sauces and pesto. There are many varieties of basil such as lemon, Zulu and Thai. What you get: Lots of vitamin K, calcium and iron. In your garden: Basil is sensitive to the cold, so be sure to plant it in warm soil. Water regularly and lightly fertilize.

SUNNY breaKFaSt CUPS You’ll look like a culinary pro with this dish. Makes 6 WHAT YOU NEED 3 tablespoons unsalted butter, melted 6 slices sandwich bread 6 slices bacon 6 large eggs Coarse salt Ground pepper WHAT YOU DO 1. Preheat oven to 375 degrees. 2. Use some of the butter to lightly grease six muffin cups (if using a 12-cup pan, leave an empty space between the cups). 3. With a rolling pin, flatten bread slices slightly. Then cut each piece into a circle. 4. Press a circle into each muffin cup, making sure the bread comes to the edge of the cup. 5. Brush the bread with the remaining butter. 6. In a large skillet, cook the bacon over medium heat for four minutes or until almost crisp. Flip once. (The bacon will continue to cook later in the oven.) 7. Put one bacon slice in each bread cup. 8. Crack an egg over each bread cup. Season with salt and pepper. 9. Bake until egg whites are set – 20 to 25 minutes. 10. Run a knife around the cups to loosen the toast. Serve immediately.

Heart PaNCaKeS Melt her heart with this sweet surprise. WHAT YOU NEED Pancake mix from a box Heart-shaped cookie cutter Cooking spray WHAT YOU DO 1. Make the pancake batter as directed on the box. 2. Coat the inside of a heart-shaped cookie cutter with cooking spray and place on a griddle. 3. Pour batter into cookie cutter. Cook until bottom of pancake is brown. 4. Remove cookie cutter and flip heartshaped pancake until done. Repeat.

M

om, how do I love thee? Let me list the ways for this heartfelt Mother’s Day craft. Any type and size of jar will do, as well as the amount and type of decorations. You can roll the strips of paper with your sentiments or you can fold them in half – the extra hearts stamped inside our examples are optional.

WHAT YOU neeD Hot glue Lace ribbon Tape Cardstock “Mom” stamp Rhinestone stickers Multicolored markers Cardstock, cut into strips String or baker’s twine

WHAT YOU DO 1. Using hot glue, wrap the jar with the lace ribbon. 2. Using tape, cover the lid with cardstock. 3. Make a tag out of cardstock, stamp it with “Mom” and tape it to the covered lid. 4. Attach the rhinestone stickers to the rim of the lid. 5. Using markers, write the reasons why you love your mom on the cardstock strips. 6. Roll the strips into curlicues. 7. Layer the pieces of cardstock in the jar. 8. Tie the string around the jar to seal it.

WHAT YOU NEED Tape Gold Sharpie or paint marker Ivory acrylic paint 3 1-inch pieces of gold confetti (Use a hole punch to punch a hole at the top of each one) String or baker’s twine Cardstock for the tag and lid “Happy Mother’s Day” stamp Cardstock cut into rectangles Black marker Heart stamp, optional WHAT YOU DO 1. Attach tape to the jar where you want the paint to stop coming up from the bottom. 2. Draw dots all over the top half of the jar with a gold Sharpie or paint marker. 3. Paint the bottom of the jar with the acrylic paint. Let dry. 4. Remove the tape. 5. Attach gold confetti shapes to the string. Wrap the string around the jar three times, positioning it where the tape had been. 6. Cut a circle out of cardstock for the tag and stamp it with “Happy Mother’s Day.” Attach the tag to the string, and tie the string into a bow. 7. Cover the lid with cardstock. 8. Write the reasons why you love your mom on small rectangular pieces of cardstock with a black marker. Add hearts with a heart stamp, if desired. Fold the pieces of paper in half, tape them shut and layer them in the jar.

1. Unwrap a Reese’s Peanut Butter Cup. Cover the bottom with frosting, and place it upside down so the frosting-covered part is on top. 2. Take a square of Hershey’s chocolate and place it face down on top of the frosted Reese’s. 3. Put a drop of frosting on top of the chocolate square (in the center). 4. Dear Sassy Housewife, My brother and I were very close to our grandfather. When he died last month, he left a lot of money to us. He had other grandchildren, but they were left out of his will. We hadn’t planned to disclose this information to the other grandchildren, but unfortunately, one of them contacted the estate attorney and now they know. They are furious and think that the money should be divided equally among the five grandchildren. They barely spent any time with him, but they want to be treated equally. What do you think? Signed, Financial Woes Dear Woeful, So let me get this straight: The three grandchildren who didn’t make the time or effort for their grandfather believe they should have his hard-earned money? I’d love to hear what they think they did to deserve an inheritance. Having to talk about and work out money issues with family members always stinks. Feelings get hurt and truths come out that people don’t want to face. The reality is that if your grandfather wanted to leave money to all five of you, he would have done so. It was up to him. His money, his choice. How important is this rift to you? If you feel this is a fight worth fighting, charge ahead. But realize that money can divide people in ugly ways. If you aren’t up for a fight, perhaps you could offer to put some of the money toward a family vacation. Or donate a portion of your inheritance to a charity your grandfather would have liked. In the end, everyone has to face the truth. Maybe the other grandchildren aren’t ready to do that right now, but at some point they’re going to have to figure out the true reason why they were left out. And maybe then they’ll give you the apology that you deserve. But don’t hold your breath. It sounds to me like greed has taken over, and all you can do is be the bigger person.
