This issue found dining expert Grace Bascos writing about two of her comfort-food favorites— burgers and eggs. Not surprisingly, she found both at Gordon Ramsay BurGR, the topic of her “High on the Hog” feature. “My favorite burger is the Farm Burger, topped with duck-breast bacon, English sharp cheddar and a fried egg. It’s essentially all the classic American burger fixings, upgraded. It’s interesting to see such a casual concept from a chef best known for his fine-dining cuisine.”
Robert John Kley prefers interacting with live models, but admits that “some days it’s nice to have a product shoot.” Robert’s springtime jewelry feature, “Life Is Sweet,” is loaded with perfectly prepared pastries. The toughest part of the assignment? “It was hard not to eat them,” he says. “But I always keep in mind that nothing tastes as good as being skinny feels,” he laughs, before telling us of his guilty pleasure. “I hate to admit it, but the Twinkie tops the list.”
We asked photographer Jerry Metellus to describe his feature “Tea for Two” in three words. His response: “Beautiful. Elegant. Fantasy.” We’re sure you will agree. Jerry, whose personality is more Mad Hatter than White Rabbit, used a whimsical approach in capturing the eye-catching pastels and decadent desserts of this modernday English tea party—surely a trip into the Wonderland of his always active imagination.

Styling both our fashion and jewelry features, “Tea for Two” and “Life Is Sweet”, Christie Moeller incorporated “a whimsical and fantasy element into the shoot.” She says of the concept, “It’s a tea party with everything you imagined as a child. Tasty pastries on dishes straight out of a fairytale, combined with floral frocks, fresh faces and, of course, tea. It’s one part Alice in Wonderland and one part tea with the royals, with a sugar cube of sweetness dropped in.”
Entertainment writer Shep Morgan says actress Meagan Good found filming Act Like a Man Too more fun the second time around. “I’d just spent weeks with Will Ferrell doing Anchorman 2,” she told Shep, “and Will really helped me have confidence in being funny. I used to be the girl who told the joke that never got a laugh. So I went on the set in Vegas and I was like, ‘Okay, show me what you got, because I’m ready.’”
We sent photographer Sabin Orr on a mission for his photo feature, “Retro Tools Meet Culinary Cool.” “I became a culinary ‘picker’ for a week,” he says, “searching antique stores for all the tools to present with the dishes.” Sabin’s photos connect dining’s past with its present. “Cooking tools have evolved over time, like everything else, and I wanted to show how these instruments from the past were once used to make the food we enjoy today.”

Who inspired you to become a chef? It really was me. As a kid, when we were having breakfast, the first thing I would say to my mom was, ‘What are we having for dinner tonight?’ It used to drive my mom nuts. But my parents encouraged me. They said whoever makes dinner decides what we’re having. So on my way home from school, I would ride my bike to the grocery store, come home and make dinner. We had great dinners; we had not-so-great dinners. I was only ten. It was about making people happy and not having to do the dishes. Tell us about your experience winning the second season of The Next Food Network Star. I didn’t see the show the previous year so I wasn’t aware what was coming. It was a big eye-opener and tremendously challenging. Where do you eat when you’re in Vegas? I’m a big fan of Asian food. Back that up. I’m a fan of all food. I’ve been to Gordon Ramsay Steak. What they’ve done with the food, the staff—it’s really sharp. Nobu Caesars Palace is mindblowing. We were cooking our dinner on hot rocks at the table; it’s awesome. Beijing Noodle No. 9 is one of my new favorites. Who doesn’t love fresh noodles? What’s your go-to comfort food at home? If you ask my kids, it’s pizza. We have a wood-fired oven in our backyard and the pizzas cook in ninety seconds. My little guy, Ryder, has become a pizza snob now. But I think if it came down to just one meal, it would be spaghetti: a really good pasta with tomato sauce. It’s not too exciting, but it reverts back to what my comfort food was as a child. What does it mean for you to open a restaurant on the Las Vegas Strip? I’m a fan of Vegas, and to think I’m coming back twenty-five years later and not only opening a restaurant, but opening with the Caesars group—to me, it’s like being drafted to play with the Super Bowl champions. I think we’re going to do something different that nobody has seen before.

On season three of MasterChef, Gordon Ramsay refers to guest judge Guy Savoy as his “culinary mentor,” explaining to contestants how he trained under Savoy while working in Paris, France.
Guy Fieri says winning the second season of The Next Food Network Star (Bobby Flay and Giada De Laurentiis were judges and advisors) was a “life-changing” experience. “It was an enormous challenge. I can’t say enough about it.”

After completing culinary school in Paris, Giada De Laurentiis returned to Los Angeles to work at Wolfgang Puck’s Spago. “More than advice from Wolfgang, I watched Wolfgang,” she says. “I watched how he tasted his food and how he was a part of every single thing that he did. I find that is crucial. You need to have a say in everything you put your name on.”

Well, she did it again. Britney Spears kicked off her Las Vegas residency in grand fashion with a massive party that attracted A-list stars and had fans on their feet from start to finish. Her hit-heavy show, “Britney : Piece of Me,” features two dozen songs including “...Baby One More Time,” “ Toxic,” “Oops!... I Did It Again,” “Circus,” “ Womanizer ” and material from her recently released album, Britney Jean. Spears debuted her show to a star-studded, sold-out crowd that included Katy Perr y, Miley Cyrus, Selena Gomez, Kellen Lutz, Adam Lambert and Mario Lopez (who ended up on all fours, crawling onstage and being whipped by Spears while she per formed “Freakshow ”). Spears said she wanted “to bring it to the next level” in Las Vegas and she does, challenging herself with new dance numbers choreographed by The Squared Division. A four-piece band, 14 dancers and a wraparound video screen add to the visual spectacle.

The latest pork du jour comes from the Mangalitsa pig, a woolly, heritage breed descended from wild boar that is raised in open pastures on an all-natural grass and clover diet. The Hog Burger’s all-pork patty gets grilled over apple and alder wood, and is basted with maple butter before being crowned with English cheddar and arugula. The egg is a classic symbol of spring, representing renewal. An unassuming yet perfect food staple, as it can be prepared any number of ways: poached, coddled and over easy, just to name a few. No matter how it’s cooked, a surefire way to make any dish better is to put an egg on it. Eggs Matsuhisa, Nobu Hotel Caesars Palace If you’ve ever wondered what eggs Benedict would be like in Japan, this is it. The classic breakfast dish is given the Nobu touch (on the room service menu), with poached eggs and roasted asparagus topped with bonito egg sauce, an Asian-influenced Hollandaise sauce, and a griddled bao (steamed bun) to replace the English muffin. The eggs get even more eggs on top—ikura, or salmon roe—for a briny punch.

He spent two weeks cooking with Chef Jet Tila. “I have no skills whatsoever,” Penn admits. “Jet taught me a lot about how to cook for television. Scotch Egg, Gordon Ramsay Steak Eggs aren’t just for breakfast—sometimes they make the best bar snacks too. The Scotch egg is a typical bar bite in the United Kingdom, but at Gordon Ramsay Steak at Paris Las Vegas, it’s something special. A wee quail egg is poached, wrapped in sausage that’s nuanced with English mustard and lemon, then bound together with bread crumbs. Cut into it, and the silky yolk runs over onto the bed of braised red cabbage. Corned Beef Hash, Bacchanal Buffet The bustling buffet at Caesars Palace goes through about 60 dozen eggs for breakfast each day, and at least some of them are the eggs that top the corned beef hash. The diner staple gets an upgrade, with hearty corned beef and shredded potato sautéed in butter until crispy. The sunny-side-up egg perches on top, adding velvety texture when mixed in with the hash.

4 The cRomwell: an elevaTed expeRience The Strip’s first stand-alone luxury boutique hotel, The Cromwell, is taking Las Vegas to new heights. Filming in las Vegas, the Cast oF Think Like a Man Too made the strip their playground
Meagan Good did her share of heating up Las Vegas while filming Think Like a Man Too, the sequel to the hit comedy based on Steve Harvey’s runaway bestselling book, Act Like a Lady, Think Like a Man. “I had a really good time,” says the actress, who was last seen going for laughs opposite Will Ferrell in Anchorman 2. “ At first, I was a little nervous because there’s so much energy that only Vegas can give. I was like, ‘Am I going to get any sleep here?’ This city is so full of life and so stunningly beautiful at night. You feel a sense of freedom and reckless abandonment. I wasn’t too wild and crazy though. That’s what my twenties were for.” Good, however, did have plenty of fun with costars Gabrielle Union, Regina Hall, Kevin Hart and Michael Ealy. She even posted Instagram photos of her kicking back with her gal pals in teeny-weeny bikinis at Caesars Palace. “All of us were just being silly. After filming, we went to the pool and just hung out and did girl stuff.” The sequel brings the cast to Las Vegas for a wedding, “but you’ll have to see [the movie] to find out who walks down the aisle,” teases Good. Plans for the romantic weekend, however, go awry when their misadventures get them into some compromising situations, which threaten to derail the big event.

“The film does ask the question, ‘Can relationships survive in Vegas?’” Good says with a laugh. She adds that the sequel “is not so much about getting the guy; it’s about what it takes to keep him.” Good’s previous trip to the Strip was just before her own marriage to DeVon Franklin, two years ago. “I had my bachelorette party performing with the Pussycat Dolls,” she explains, “and I did a pole dance. It was just something I always wanted to try.” And Good is sure of one thing: She hasn’t made her last trip to Vegas. “It has a way of drawing you back,” she says. “There’s something here for everyone.”
The storyline of Think Like a Man Too had the cast in Las Vegas for a wedding. And from the looks of it, they had the run of the town. The cast filmed scenes in the casino and nightclub at Planet Hollywood Resort & Casino (above), as well the hotel lobby, swimming pools, valet and Anthology Suites and Villas at Caesars Palace, and in the casino of Paris Las Vegas.

When director/choreographer Frank Gatson Jr. agreed to bring a bold, fresh twist to a production that’s stood the test of time—32 years and counting—he knew it would be a challenge. But just days into the job, he was reminded to what extent. “I got a great letter from a fan that read, ‘Don’t you mess this up? It’s one of the only true classics left, Mr. Gatson,’ ” he says with a laugh as he sits just steps away from the Jubilee! stage inside Bally’s Las Vegas.

“I think a lot of the creative people have come through [Las Vegas] to get the check. I’m not coming to get the check. I’m coming to modernize Donn Arden’s masterpiece.” Gatson is no slouch himself. He’s been by Beyoncé’s side for 15 years, guiding her career and developing her iconic dance moves (like the hand gesture from “Single Ladies”). He was nominated for a Grammy for codirecting Beyoncé’s “I am… World Tour”; won a record six MTV Video Music Awards for best choreography; has directed commercials; collaborated on films; and worked with Michael Jackson, Diana Ross, Rihanna and Usher. “I want to make Jubilee! a person. She’s on every billboard. She represents Las Vegas. I’m going to make her a person, and we’re going to tell her story. The show just needs to be adapted to feel more like today. As time progresses, dancers improve— we need to take advantage of that.” —Frank Gatson Jr. Gatson’s goal is to preserve the show’s main elements. That means the “dream wardrobe” and most of the iconic sets will stay. He’s tinkering with the music, choreography and visuals. “I’ve been brought here to shake it up,” he explains. “This is like a house. The structure is here.”

Gatson says Jubilee! just needs to enter the digital age. “Technology has brainwashed us. People are seeing things now and they expect more. We need to remix the visuals and rearrange some of the music to have a more energized vibe,” he explains, citing Will.i.am’s song “Bang Bang” from The Great Gatsby as a great way to marry generations of music. “[‘Bang Bang’] feels like you stepped out of the twenties, but it’s today’s music. That was so clever. I want to find something that feels like that for the finale.”

Giada de Laurentiis may not have followed in the footsteps of her famous film family, but the star chef still found her way onto television and into the hearts of loyal fans. now, Giada is settinG a new course and openinG her very first restaurant here in las veGas.
when i first meet Giada de laurentiis, she’s in the kitchen casually rolling meatballs— though not the monstrous kind all slathered in sauce that some restaurants prize. these are compact, bite-size morsels. smaller and more delicate—just like all of the dishes on the menu of her first restaurant, opening later this spring at the cromwell in las vegas. “i want to create something more sensual. i want something more feminine,” she explains. “we were working on the menu and doing these meatballs, and they presented me with these four large meatballs in tomato sauce. Kind of messy. i said, ‘they’re delicious; they look beautiful; but why does that belong in my restaurant?’ that belongs in any italian restaurant anywhere in the country. that does not say Giada. for every dish we serve, people need to be able to look at it and say, that’s a Giada dish—you can only get it at her restaurant.” so in true Giada style, she decided to downscale the meatballs and purée the sauce “so it’s not so chunky or hearty, but more delicate,
more feminine,” she says. but she didn’t stop there. “i decided to add orzo inside of the meatball so when someone cracks into it there is a little bit of pasta. it’s the subtle things that make it unique in its own way; something that nobody else is doing.” Giada then pauses for a second, smiles and adds, “i’m not saying i’m reinventing the italian wheel. there are some really great restaurants here in las vegas, but they don’t have my touch. my touch is different.” her reach extends beyond the kitchen. in fact, she admits to being “a perfectionist, sometimes to a fault.” she even had several sets of chairs delivered to her house and asked her family members to sit in them to determine if they were comfortable and restaurant worthy. ““it was like musical chairs,” she laughs. ““when you start from ground zero, your hands are in everything. i believe i need to be a part of every move— at least i try to be. i’m not one of those chefs who will just walk into the restaurant the week before it opens. i’m going to be there every step of the way.”

Giada admits her hands-on approach may be a result of working at spago with wolfgang puck after finishing culinary school. “more than advice from wolfgang, i watched wolfgang,” she says. “i watched how he treated his staff. i watched how he tasted his food, how he was a part of every single thing that he did. he was his own brand manager, and i find that is crucial. you need to have a say in everything you put your name on.” with deep roots in los angeles, where she still lives with her husband, todd thompson, and their six-year-old daughter, Jade, the question has to be asked, why open your first restaurant in las vegas? “the location was number one. i was getting to build a restaurant from scratch on one of the most famous intersections in the world. i would have been a dummy to pass it up,” she says, noting, “vegas is so much a part of my family. with my family in the movie business, it’s always been beautiful adventures—lights, camera, action. and there is no place on earth that has more lights, camera, action than las vegas.”

Food over Film odds were pretty good you’d end up in hollywood, if you were born into the de laurentiis family. Giada’s grandfather, dino de laurentiis, was an academy award®-winning producer. her mother, veronica, an actress, and numerous other family members work in various roles within the industry to this day. however, Giada took a different path. “i tried [show business] for a short time. everybody in my family has to try it,” she says. “i just never found my place. the place i felt the best was in the kitchen.” we can thank her grandfather for that as well. it was his italian gourmet shop in los angeles, ddl foodshow, where 12-year-old Giada felt the most comfortable—among the pizzaiolos and bread makers from naples. “i would go there after school and i would watch people’s faces in amazement as they smiled when they walked through the doors,” she recalls with a grin.
“i just fell in love with the concept— the food, the aromas. Just the way it made people happy. that ‘wow’ factor. i thought to myself, ‘i want to do that.’ ” convinced she wanted to become a pastry chef, Giada set off to study in paris at the esteemed le cordon bleu. once in france, she found herself away from her family for the first time in her life. “i was terrified and petrified,” she admits. “i lived in a bubble my whole life, and all of a sudden, i was placed in a foreign land where i didn’t speak the language and didn’t know anybody. when i got there, i thought, ‘i don’t want to do this anymore.’ i went four or five months begging my mother, ‘i want to come home; i to want quit. i don’t want to stay here.’ but my mom said, ‘no, once you make a decision in life, you have to stick with it.’ she was like, you’ll never forgive yourself. she was right. i stuck it out. i was miserable for some time, but i eased into it.”
following stints working at the ritzcarlton, spago and as a personal chef for director ron howard, Giada started styling food for magazine photography sessions, including Food & Wine, martha stewart Living and Bon appétit. soon thereafter, the food network came calling. “i ran, but i couldn’t hide,” she laughs of finding her place in hollywood. “it came full circle, but i didn’t mean for it to. i guess the camera found me, regardless. i truly believe i got to where i am today with a lot of hard work. but it was also timing: stars aligned, and sometimes in life that’s what it takes. this was different than acting. i can be myself. i’m not sure i’m good at playing somebody else.” v i va l a s v e g a s ! when you walk into her namesake restaurant, Giada, it will feel like home— Giada’s home, that is. “i want something that is inviting and warm. i want it to

feel like you’re coming over to a dinner party at my house.” the alfresco dining area, she says, will have italian tile floors and marble table tops, while a more formal section will feature tables draped with white tablecloths. in a nod to italy, retractable windows will open to allow for fresh air to flow in, while pops of color will punctuate the room. “i want it to be like a big hug walking in.” as for the food, Giada says she’ll have special vegan and gluten-free offerings to ensure everyone has choices. “i think for a long time people felt guilty for having dietary restrictions,” she says. “i think we can make some really great food and can create a menu for people with dietary needs. everyone should be able to enjoy great food. it shouldn’t be an afterthought.” the rest of the menu follows Giada’s own food philosophy. “i eat a little bit of everything and not a lot of anything,”
she explains of the family-style menu. “i’m trying to teach people that concept. they can taste everything, but they’re never going to feel extremely full. that’s truly how italians eat. we don’t all get our own plate of pasta. we share. we nibble and taste everything. i want people to experience the menu by sharing a series of small plates.” so what’s next for the emmy-winning, bestselling author and now restaurateur? “that’s a very good question. i’d like to make more food programming. not demo-style cooking shows like mine but maybe a scripted food-related comedy or movie.” she continues, “i would like to produce and do that type of stuff a bit more, and build my businesses where i don’t have to be in front of the camera 24/7. i’m looking to break ground and do a few new interesting things in the future.” it seems as though, instead of escaping hollywood, Giada has dug in.

From Taylor Hicks’ Southern drawl and easygoing demeanor, you can tell he likes his food with as much soul as his singing. So much so that he even co-owns an acclaimed barbecue restaurant in Alabama, SAW’s Juke Joint, where he still performs from time to time. “Food is one of my passions,” Hicks says. “And being from Alabama, you have three passions: music, football and food.” When Hicks is in town for his resident show at Paris Las Vegas, he takes full advantage of the Sin City dining scene. “I think it’s amazing: You can get whatever your heart desires and its great-quality food,” he remarks. “Everybody in the world comes here to enjoy the nightlife and the shows, but also the food. I like to visit all the steak houses, and I’ll check out some Thai restaurants; but I also enjoy the off-the-beaten path stuff—the whiskey attics.” True to his Southern roots, he does enjoy a good cut of meat, ranking Gordon Ramsay Steak at Paris Las Vegas among his favorite steak houses—and not just for what is presented on the rolling meat cart. “The Kobe Rib cap is always fun,” Hicks admits. “But the beef Wellington is one of Ramsay’s specialties. You don’t get beef Wellington too often, and [here] it’s done the right way.” But it’s not all steaks and beef Wellingtons for Hicks, as he does like to occasionally get down with some soulful, street-style tacos from Mexican taqueria, Tacos el Gordo, a walk-up window located on Las Vegas Boulevard. “That’s the best late-night food there is,” Hicks laughs. “You can tell I’ve lived here for eighteen months.”

Closet enCounters of the Diva KinD Let’s be frank. If anyone knows fashion and shopping in Las Vegas, it’s Frank Marino. After all, he has a closet full of Bob Mackie gowns and Giuseppe Zanotti pumps; plus, he changes costumes 19 times during a 90-minute show and works across the street from one of the most famous malls in America. That pretty much makes him an expert. “I have a black belt in shopping,” says Marino, browsing in novelty shop KOTO at The LINQ. . “I could live in The Forum Shops.” For the past 29 years—the last five at The Quad Resort & Casino—Marino has channeled, and dressed, as the iconic Joan Rivers in hosting the city’s longestrunning female-impersonator revue, Frank Marino’s Divas Las Vegas. “The show has staying power,” he continues. “It’s not a multimillion-dollar production that’s set in stone. Our show changes daily. If Justin Bieber does something wrong, I can talk about it. We keep it light, fast and fresh.”

These days, that means female impersonators performing as Miley Cyrus and Katy Perry (“for the young kids”). But Cher, Céline Dion, Dolly Parton and Madonna still make appearances. As for his fashion police assessment of Las Vegas, Marino says the Strip is “losing the glamour” of women dressing in evening gowns, but hopes that “young ladies will start dressing up” again. “Whoever said money can’t buy happiness just doesn’t know where to shop.” 128
