“I’m pretty adept at outdoor cooking,” brags food and nightlife writer Grace Bascos, who interviewed grill master Bobby Flay for this issue. “I’m a fan of barbecued chicken thighs because dark meat is much more forgiving.” Grace is also a fan of Las Vegas nightlife, but perhaps not as much as she used to be. “I wouldn’t say I rock around the clock, as much as I rave around it, when the right underground DJs are in town.”
We sent Mark Gray into familiar territory. A freelance writer for People, Rolling Stone and Wonderwall.com, Mark wrote about OMNIA Nightclub. It’s a scene he’s accustomed to, having once worked as a public relations manager for PURE Nightclub—the very space OMNIA took over. His thoughts on the new venue: “The culture has shifted to house music, where the DJs are the celebrities and OMNIA really has the cream of the crop with its lineup.”
Photographer Robert John Kley worked with James Beardnominated Chef Mathieu Chartron to capture food and fashion in the kitchen of famed French restaurateur Guy Savoy. He also photographed fitness trends at Qua Baths & Spa. “It was a fun shoot because I got to photograph in a place that I very rarely get to go to...a gym,” Robert jokes. “I prefer riding an actual bike, but the new stationary one at Caesars Palace gives you the comfort of the gym, with the feel of being outside.”

Mia McNiece has been covering the celebrity world for almost 15 years. Currently a staff writer at People in Los Angeles, she’s interviewed Hollywood’s biggest stars—often discussing fashion and fitness. In this issue, Mia spoke with celebrity trainer to the stars Gunnar Peterson to illicit his tips on getting a workout in while on the road. When she’s not working, Mia considers the occasional spin class and running after her three young kids as her fitness routine.
Inspired by the beautiful plating of Guy Savoy’s dishes, Christie Moeller says she “strived for minimalism in the looks,” avoiding excessive accessories or layering to let color and composition be the star. Christie also relied on her own experiences (and what not to do) when writing about how to throw the perfect girls’ night out. “At my sister’s bachelorette party, we went to Chippendales and I got a personal dance from a super hot guy in front of my mom. Let’s just say it was traumatizing.”
“Sometimes carefree is okay,” explains Krystle Randall of our model’s casual, yet elegant and refined, look for “Mise en Place.” Desiring an appearance that was not too defined or sharp, Krystle kept the makeup simple, giving her “bold lips that pop” and big, full Brigitte Bardot-like hair. “It just all came together and we were able to bring a modern-chic Frenchinspired look to the page.”

Country comes to The Colosseum. Five years after their “Last Rodeo” tour, Kix Brooks and Ronnie Dunn are returning to the stage—and country’s leading lady, Reba, is joining them. The trio, who last toured together in the late 1990s, will start headlining at Caesars Palace this summer. And judging from their back-and-forth banter, these lifelong friends are ready to roll.
Dunn: “We decided to quit when it felt right and walked away feeling good about what we had done. This [idea to perform together again] just came out of nowhere. I guess I just won’t go fishing for a few days. I’ll just play music instead.”
How did the idea of headlining in Las Vegas come about? Reba: “We were all at dinner one night in Nashville and somebody said, wouldn’t it be cool if you went out and did some shows together. Kix said, ‘I’m for it.’ I looked at Ronnie and he said, ‘I’m for it’; and I said, ‘You know I’m in.’ To come here with my two best friends is a dream come true.”
Brooks: “Thank God we have some hits. We’ll start shuffling those around and hopefully they’ll make some sense. Then we’ll see how the lights, camera and action come into play. We know the chemistry works. We’ve been out there and rolled with it. We have a lot of great memories. We’re looking forward to making more.”
Brooks: “We go on vacations together. We love hanging out and we love playing music. We figured, let’s do it somewhere besides a campfire so some folks will show up and hear us again.” You guys took a few years off. Do you feel reenergized? Brooks: “It’s a great way for Ronnie and I to get back together. We made a lot of great music. Those songs are still a big part of our lives and we’re looking forward to singing them again. We know from experience working with Reba that there is nobody we’d rather hang out with and sing with.”
What can fans expect from this show? Reba: “It’s going to be packed with the number one songs we’re all so blessed to have.”
Dunn: “It’ll be a constant work in progress. I think spontaneity is really important when you do a gig like this. You want to keep it evolving, not box it in.” Will it be an over-the-top show? Reba: “Ronnie has a red-sequin dress he’s going to wear. He’s going to be the flash and sparkle for this.” Dunn: “We haven’t talked about that yet [laughs]. We know we have a gig. SEARSUCKER BRINGS “SOCIAL DINING” TO LAS VEGAS While the arrival of OMNIA Nightclub was one of the most highly anticipated openings this year, Searsucker, the “little sister next to the big girl,” as described by celebrity chef Brian Malarkey, caused its own bit of excitement. Malarkey’s newest outpost at Caesars Palace joins his growing empire. Expect Searsucker’s signature core menu—a 38-ounce bone-in ribeye “tomahawk,” eggs and bacon “pork belly” and beer-braised short ribs—but at 7,500 square feet, Malarkey’s larger kitchen allows him to be more daring.

COMPETITORS FROM FOOD NETWORK STAR AND MASTERCHEF BATTLED FOR SURVIVAL IN LAS VEGAS “Las Vegas is famous for world-class entertainment and five-star dining, so it’s the perfect place for our next series of challenges,” judge Giada De Laurentiis told contestants on an episode of last season’s Food Network Star, filmed at Caesars Palace. The up-and-coming chefs filmed one segment at Bacchanal Buffet, where they had 90 seconds to describe three dishes to De Laurentiis. The next day, the chefs took part in a cooking competition at the resort’s Venus Pool. Gordon Ramsay, who called Vegas “one of the greatest culinary cities anywhere in the world,” recently brought his MasterChef series to the Strip, filming inside his own restaurant—Gordon Ramsay BurGR at Planet Hollywood Resort & Casino. The losing team in “battle hamburger” then faced off in a head-to-head elimination challenge on a rooftop terrace at Caesars Palace, where they had 45 minutes to cook a butter-poached lobster. The loser went home. Season 10 winner Christina Wilson is the executive chef at Gordon Ramsay BurGR, while Scott Commings, who won season 12, is now a head chef at Gordon Ramsay Pub & Grill inside Caesars Palace— proving that if you can stand the heat, you can stay in the kitchen.

Hail to the CHEFS THE CREATION OF A CULINARY EMPIRE Just two decades ago, Las Vegas was a buffet town. Decadent dining simply didn’t exist. Then the city underwent a food revolution and transformed itself into one the world’s top dining destinations. Wolfgang Puck pioneered the change by opening a Spago restaurant in The Forum Shops at Caesars in 1992. “Spago became the first restaurant with national name recognition to come to Las Vegas,” Puck states. “Now, almost every chef from around the world has a restaurant—or wants to open a restaurant—in Las Vegas.”
In the 1990s, as new resorts began replacing aging ones on the Strip, gaming companies looked at dining as another way to attract guests. Successful new eateries caught the eye of restaurateurs and celebrity chefs who saw Las Vegas as a viable market for expansion. Puck helped pave the way for other iconic restaurants such as The Palm (1993), Joe’s Seafood, Prime Steak & Stone Crab (2004), Il Mulino New York (2005) and Carmine’s (2013) to open in The Forum Shops and others inside Caesars Palace. In 2004, Bobby Flay brought Mesa Grill to Las Vegas. “I’m extremely proud of what we’ve accomplished at Caesars Palace,” explains Flay. “Mesa Grill has become not only a stage for me to showcase my love for the Southwest, but it’s become an integral part of Las Vegas. I look forward to all that’s on the horizon.” Just as Flay was setting up shop on the casino floor near the sports book, Gary Selesner was coming on board as the new president of Caesars Palace. The New York executive put an emphasis on dining and led a food renaissance at the famous resort. “Food is really important to our customers, particularly Nobu Matsuhisa our international customers,” reveals Selesner. “What Nobu Caesars Palace people want is food that is either as authentic as what they have at home, or a rare dining experience. That’s why we reinvented Caesars Palace over the last decade to make food a centerpiece of the Caesars Palace brand.”

And Los Angeles native Giada De Laurentiis chose Las Vegas as the site for her first restaurant for a simple reason. “The location was number one,” she explains. “I was getting to build a restaurant from scratch on one of the most famous intersections in the world. I would have been a dummy to pass it up.” She opened GIADA at The Cromwell last June. “It almost seems like Las Vegas’s main attraction is its restaurants,” Puck says of the thriving scene. “Now every resort in the city has amazing restaurants. From fine dining to casual dining, Las Vegas has changed so much. It was once a gaming destination, but today it’s also a culinary destination.”

Selesner’s first move was convincing Guy Savoy to open at Caesars in 2006. “I had an opportunity to go to Paris and dine at Guy’s three-Michelin star restaurant,” he explains. “It was one of the most spectacular eating experiences I ever had, and I wanted to share it with our guests.” That same year, Selesner brought Italian eatery Rao’s to Caesars Palace out of a fondness for the restaurant’s signature red sauce, he jokes. Other restaurants with New York ties followed, including Payard Pâtisserie & Bistro (2007), Serendipity 3 (2009) and Old Homestead Steakhouse (2011). When Nobu Matsuhisa opened his largest restaurant in 2013, it accompanied the world’s first Nobu Hotel.

Caesars Entertainment’s partnership with Gordon Ramsay began with an upscale steakhouse concept, Gordon Ramsay Steak at Paris Las Vegas. Two other Ramsay restaurants followed—BurGR at Planet Hollywood and Pub & Grill at Caesars Palace. A fourth, a casual fish and chips joint, arrives at The LINQ Promenade later this year. “Vegas is becoming a second home,” the chef admits. For Guy Fieri, who graduated from the University of Nevada, Las Vegas in 1990, it was a homecoming. “I remember the beginning of the food revolution in Las Vegas as a college student,” he recalls. “So I was stoked to open my very own restaurant right in the heart of the Las Vegas Strip [at The LINQ Hotel & Casino].”

Second, don’t be shy with your seasoning. “A lot of the seasoning falls off the meat, fish or vegetables when you put it on the grates, so season more than you think you should.”

For those who have graduated from throwing a couple of burgers and dogs on the grill, can bang out the perfect steak and have even mastered the art of cooking fish, your education doesn’t stop there. Your next mission? Vegetables. More specifically, according to Flay: Brussels sprouts. He suggests first cooking them in boiling, salted water before splitting, then coating them with canola oil and sprinkling with some salt and pepper. Grill the sprouts until they’re charred and golden brown. The key to lots of flavor is to toss them in light vinaigrette while they’re still hot.

There are few chefs who are better known for their grill skills than Bobby Flay. The chef-owner of Mesa Grill at Caesars Palace began his Food Network career with shows dedicated to all things cooked over an open flame. He’s also written countless cookbooks on the subject and continues to be the go-to guy when it comes to the bold flavors of grillin’ and chillin’. So when it comes to entertaining in your own backyard, he’s the man. Flay has two tips to maximize your success, no matter your skill level. First, your cooking surface should be as hot as possible, which means preheating it while covered at least 30 minutes before any food even touches it. “For gas, turn it to high, close the cover, and let it heat before grilling,” he advises. For charcoal, he says “to make sure it’s red hot and the ash is gray.” In addition to that, a clean grill is your friend. “Be sure your grates are clean before you grill. The best way to clean your grates is while the grates are still warm. Don’t wait until the next time you grill to clean it or the food will be dried on and it will take a lot more elbow grease to remove.”

Preparing food over a direct flame is our oldest method of cooking, and Flay’s attitude toward the grill is only a few modern steps removed from it. But a few simple rules will go a long way. Flay’s final tips are easy enough to follow for great results: “Remember to brush the food with oil and season well—and don’t overcook. You can always put undercooked food back on the grill, but once you overcook something, there is no going back.”

“It’s Mexican food seen through a modern lens,” explains Mary Sue Milliken, one half of the dynamic Border Grill co-chef/owner team that includes Susan Feniger, both of Bravo’s Top Chef Masters and Food Network’s Too Hot Tamales fame. “We’ve been traveling to Mexico for more than 25 years to study the flavors and ingredients of the Mexican kitchen,” Milliken adds. “We took all these ideas and made them new again.” Border Grill’s newest cantina, inside The Forum Shops at Caesars, has a vibrant design peppered with wood carvings, colorful murals and redtiled walls backing a demonstration kitchen. The restaurant’s innovative new menu includes dishes such as a black-bean and corn esquite salad, ribeye with purple Peruvian potato tostones, as well as a ceviche and oyster bar that Feniger says was “inspired by the flavors from our first trip to Veracruz, where we tasted the most incredible ceviche.” Border Grill’s wide selection of drinks includes a blood-orange jalapeño margarita, and signature cocktails like the Piña Verde—made with pineapple- and mint-infused Herradura silver tequila, fresh lime juice and agave nectar— and the Smoky Bean Negroni, which replaces gin with Del Maguey mezcal.

“I have devoted my life to traveling the world, meeting fans and performing across the globe,” Mariah says, just days after announcing her Caesars Palace residency. “Las Vegas will allow me to showcase my music in a way it’s never been presented before.”

Having sold over 200 million records worldwide, Mariah is one of the best-selling artists of all time. With songs that include “Dreamlover,” “Hero,” “Honey” and “We Belong Together,” her 18 chart-topping songs have her in elite company. In 2008, when “Touch My Body” rose to the top of the Billboard Hot 100 chart, Mariah surpassed Elvis Presley to become the top solo artist with the most number-one singles in America. Only The Beatles, with 20, have more top hits. So naturally on a stage this big, in a city that bills itself as The Entertainment Capital of the World, the songstress is focusing solely on her greatest hits in a show she’s calling “Mariah Carey #1’s.” “Revisiting these songs for the show has really let me reconnect with them,” Mariah says. “The power of music has guided me throughout my life, for as long as I can remember, and I’m hoping fans will be able to share the joy of music with me and take that feeling home with them.”

Born on Long Island, New York (her mother Patricia was an opera singer and vocal coach; her father Alfred, an aeronautical engineer), Mariah recalls a childhood centered on music. Just three years old when her parents divorced, Mariah was raised by her mother and says that her love of music began as a young girl. “I started singing when I started talking,” Mariah recalls. “My earliest memory of my first ‘performance’ is from a concert. I think I was about four years old. My mother was performing and she taught me a song in four different languages that I sang onstage. As a child, it seemed that there were so many people there. It’s a little sweet memory that I’ve kept close to my heart.” 76

Mariah has always found comfort in song. As a child, she remembers sneaking a radio to bed; even to this day, she says, when times are difficult—whether personally or professionally—she turns to music to get her through the tough times. “I take solace in music,” Mariah reveals. “Music was and will always be my saving grace. There’s never been a moment when I didn’t believe that all things are possible. My mother always encouraged me to believe in myself. She would say, ‘Don’t say “if I make it,” say “when I make it.” ’ I’ve always tried to infuse that message into my music.”

The 1990s were very good to Mariah, outlandishly so. She was the only act to have had a number-one single in the United States every year that decade. She sold hundreds of millions of albums and skyrocketed to fame—seemingly overnight. Her success story starts in earnest on a cold December night back in New York City in 1988. That’s when Mariah, who was struggling to pay her rent and unsuccessful in shopping a demo tape, met up with pop singer Brenda K. Starr and accompanied her to a party. There, Mariah’s demo tape fell into the hands of Columbia Records chief Tommy Mottola. He liked what he heard, went searching for her and signed her to a record deal. Her first album, the self-titled Mariah Carey, was released in June 1990 and it raced up the charts, producing four numberone singles: “Vision of Love,” “Love Takes Time,” “Someday” and “I Don’t Wanna Cry.” The album cemented her as a superstar, and she took home her first Grammy Award for “Best New Artist.” The world was taking notice of the singer with the five-octave voice. Her subsequent studio albums, Emotions and Music Box, kept Mariah in the spotlight. She was at the top of her game. Looking back now, Mariah says she would not have achieved such success had she not been a strong, determined woman. “I can be a perfectionist,” she laughs. “But nobody is perfect. I’m very focused on each and every aspect of my career and I guess I’ve just always been that way. That’s why I’m so excited about Las Vegas. I will be able to perform eighteen numberone singles, which I’ve never done before. I can’t wait.”

The bar’s creative spirits include espresso bean-infused Maker’s Mark and banana clove-infused Zaya rum. “Everything is fresh,” McNally explains. “ There are no artificial flavors. We use cloves, actual mint Oreo cookies, fresh fruit and pure vanilla bean, not substitutes.”

Everyone loves bacon, so why not in a cocktail. That was McNally’s logic behind this conversation starter—a mix of anchoand bacon-infused Jim Beam, fig-infused Jack Daniel’s Tennessee Honey, sweet vermouth and orange bitters, topped with a smoked-bacon salt rim.
For fans of Girl Scout cookies, this is a must taste. McNally nailed it right down to the Oreo cookie crumble on the rim, along with his combo of crème de menthe, crème de cacao and mint-Oreo-infused Skyy vodka with a splash of cream. “It’s a twist on the original grasshopper,” he explains.
McNally says the opportunity to do something inventive at 3535 has been rewarding. “We see people coming back more than once,” he says. “With so many drink options on the menu, it can be a different experience every time.”

Music fans attending The Electric Daisy Carnival VIP transfer package includes travel in a state-of-the-art ECO-Star helicopter, which is outfitted with seven seats this summer’s 2015 Electric Daisy Carnival (EDC) and features wrap-around glass giving passengers an unobstructed weekend in Las Vegas, June 19-21, can travel to view of the Las Vegas Valley and world-famous Strip. the event in VIP-style with Maverick Helicopters. Maverick Helicopters is the exclusive helicopter company to provide air travel to and from the Las Vegas Motor Speedway during the three-day dance music festival. “We are thrilled to be a part of the Electric Daisy Carnival weekend in Las Vegas,” said Bryan Kroten, Vice President of Marketing of Maverick Helicopters. “These nights are some of our pilot’s favorite days to work.” CHARTER YOUR OWN RIDE, BE A VIP TO THE EDC.
The experience starts in the lobby of the company’s headquarters, which is transformed into a pre-festival gathering spot with a live DJ and a club-like feel. The party continues on board with pilots playing music from EDC artists. Maverick Helicopters even flies the talent out to EDC, so you never know who will be on your flight. Tiësto, Calvin Harris, Afrojack, Armin van Buuren, Steve Aoki, Skrillex, Hardwell and others have all taken to the sky and arrived at the speedway in style in previous years. Some of the DJ’s have even requested that pilots play their own music while in route to get them fired up for their evening set. Private charters start at $3,000 for up to seven passengers. Individual seat rates per person are $800 for round trip and $500 for one way. All flights depart and arrive through the company’s main terminal, which is located at 6075 South Las Vegas Boulevard, near Mandalay Bay. RESERVATIONS ARE NOW BEING ACCEPTED.

Calvin Harris ruled both the airways and turntables in 2014. The Scottish DJ and producer’s latest studio album, Motion, not only produced the swim season mega-hit, “Summer,” but his follow-up singles, “Blame” and “Outside,” also landed on the charts, making him the first artist ever to have three songs simultaneously in the top 10 of Billboard’s “Hot Dance/Electronic Songs” chart. This year, Harris is taking up residency at OMNIA Nightclub inside Caesars Palace. DID YOU HAVE A FAVORITE ARTIST GROWING UP? When I was eight [in 1992], Jamiroquai released their first album. They were at the forefront of a new sub-genre known as acid jazz. I heard their singles and was obsessed. I begged my mum to get me the CD. That was the first album I owned. [The group] began my lifelong obsession with bass lines. WHERE DOES THE INSPIRATION COME FROM WHEN SONGWRITING? Your surroundings really influence the material being produced. Luckily, almost everywhere in the world gets dark at night. That feeling of solitude you get alone in a small room after midnight really helps writing the sort of lyrics I like. I strive to write lasting songs that mean something and connect with people emotionally. It’s a myth that you can’t create something with depth that you can also party to.

TO WHAT DO YOU ATTRIBUTE THE RISE OF DANCE MUSIC IN THE U.S.? Make no mistake: People were partying; they were just listening to a different kind of music. It’s not a case of catching up. Every country has its own reasons for enjoying the music they do at a certain time. It just took a while for dance music to evolve to a state in which America was ready to embrace it on a larger level. WHAT MOST EXCITES YOU ABOUT OMNIA? It has the biggest dance floor in Las Vegas! I’m working again with John Newman on his new album. He sang “Blame” on mine. I’m also experimenting using my own voice on some songs, like I did with “Feel So Close” and “Summer.” I just had an album come out at the end of last year, so I’m in the trying-thingsout-stage again right now.
