KEEPING UP WITH KERRY Gourmet Burgers That Rock

Kerry Simon was once hailed by Rolling Stone as the “Rock ‘n’ Roll Chef.” Not for his own rock-star looks but because real rockers dug what he was dishing and were often spotted chowing down in his restaurant kitchen. At KGB: Kerry’s Gourmet Burgers—his Russian-inspired haunt at Harrah’s Las Vegas—Simon is showing he’s the king of creativity when it comes to constructing a tasty hamburger. Keep an eye peeled for his upcoming monthly burger-and-shake combo specials: a turkey burger with lime-aid shake; a Philly cheesesteak burger and strawberry-banana shake; and a duck confit burger paired with a hazelnut shake. First, tell us about the atmosphere here. There is definitely a sexy, secretagent thing going on with the pop-art drawings. It’s more than a burger place. I want people to come in and have fun. Why is the hamburger so popular? Burgers are part of American culture. It takes us back to childhood—to grilling in the backyard. I think we really connect with the hamburger at an early age. What makes a gourmet burger great? The quality of the ingredients used and what you add to it. The beef is important; we use organic, grass-fed beef. But it’s how everything comes together—the cheese, the toppings, the sauces and, of course, the bun. Where do you find inspiration in creating your burger and shake pairings? All of our employees have ideas so it gives us an opportunity to try them out. We have contests to see what the burger of the month is going to be. It’s fun and different. Do you have a favorite pairing? Give me a double-chocolate malt and a cheeseburger and I’m happy. Your Captain Crunch Shake has become legendary. How did it come about? I was drinking the milk out of the cereal one day and it just hit me. It was quite simple really.

We’ve observed the eating habits of Bacchanal Buffet guests. Not as scientifically as a National Geographic exploration—but nonetheless, we chronicled the behavioral patterns. Alright, we just spoke to the people in the picture. But we found out everyone tackles the buffet differently.

On a typical day, Bacchanal chefs prepare 80 42-ounce Tomahawk steaks. That’s 210 pounds worth of Tomahawks alone. The single day record is 350 pounds. That should make any meat lover run to the Bacchanal Buffet.

Drum Roll! Recycled Percussion Brings Everything, Even the Kitchen Sink

Justin Spencer was that toddler in the kitchen drumming on a kettle with a wooden spoon. The Recycled Percussion creator confirmed as much, telling us that his favorite musical instrument is his “personal spaghetti pot.” It’s been nearly two decades since Spencer first circled up a group of friends and repurposed some pails and a kitchen sink (he stole that from his dad) to perform in a high-school talent show. He was later convinced to “keep up the madness” and did. The group appeared—and nearly won—Season 4 of America’s Got Talent. Now the crew is making noise at The Quad Resort & Casino. What exactly can fans expect at a Recycled Percussion show? “Interaction, energy, laughter and a whole lot of free cookies,”

SET IN STONE. Las Vegas headliners Penn & Teller have cemented themselves into Hollywood history. (Sorry, we couldn’t resist.) Performing together since the late 1970s—including their current 12-year-and-counting run at Rio All-Suite Hotel & Casino—the magic duo was honored with the 2,494 th star on the legendary Hollywood Walk of Fame on April 5, 2013. Ironically, their star at 7003 Hollywood Boulevard is just steps away from that of iconic escape artist Harry Houdini. Marissa Medoro, the lead aesthetician at Flamingo Las Vegas, says the Flamingo’s 80-minute anti-aging Lighten-Up tighten-Up facial produces results after the very first treatment. The facial starts with a skin analysis and cleansing, followed by a scrub, glycolic peel, lifting masque and massage. Medoro says the alphahydroxy acids in the treatment products help to lightly exfoliate, resulting in skin that’s smoother and more toned, while also lightening dark spots. They’re baaack! It started innocently with Alan (Zach Galifianakis) asking a simple—some would say “simpleminded”—question of a Caesars Palace desk clerk: “Did Caesar live here?”

We all know what happened next, and again in Thailand. Now, aiming to repeat the success of its first two installments, The Hangover franchise unveiled its third, and final, chapter this summer. The Hangover Part III brings the boys back to the place where it all began: Caesars Palace. Just like in the original, the iconic hotel takes center stage in The Hangover Part III. The resort also served as the venue for the film’s promotional junket in May. “It needed to end where it began,” explains director Todd Phillips. “It had to end in Sin City because the movie is about these guys paying for the sins of the past. They have to settle that score.” While in Las Vegas on the promotional tour, the film’s stars checked out Vegas Uncork’d at Caesars Palace’s Garden of the Gods, sampling fare by some of the city’s most celebrated chefs. Bradley Cooper, Heather Graham and Ken Jeong also took in Elton John’s “ The Million Dollar Piano” show and dined at the new Nobu Caesars Palace.

With The Hangover stars now full-blown celebrities, you would think it would be difficult for them to navigate the casino during filming, or for recreational fun, without drawing a crowd. Not so, says Cooper. “ This city is just indifferent to anything other than what it’s doing,” he says of filming Part III. “ We were surprised just how different it was. In [The Hangover], we would walk into the elevator with tiger scratches on our neck, and no one would even blink. Even now, you could walk into a store and see Zach’s face on a T-shirt, or an impersonator outside— and still, we could maneuver around unnoticed.”

“To play with scale and retain intimacy, we designed many different private-dining options for groups of six to eight people, such as the wovenabaca pods that resemble glowing lanterns,” Rockwell explains.

With more than 327 seats, the restaurant offers a sophisticated, yet whimsical, experience. Different seating environments include a 15-person sushi bar, private dining pods, teppanyaki tables (a first for Nobu in the United States), and a large bar and lounge area.

A place to grab a bite, barhop and bebop to music— all within a few steps. Now it’s getting one. The LINQ, located between The Quad Resort & Casino and Flamingo Las Vegas, is opening later this year. “You’ll be transported from the Strip to a city neighborhood, much like you would find in New York City,” says Jon Gray, The LINQ’s vice president and general manager. “No matter what the time of day, there will be something to do. We’re creating an experience that currently does not exist in Las Vegas.”

Eat Dining options at The LINQ range from brickoven pizzeria Flour & Barley and quirky Celtic pub tilted Kilt (the sexy servers wear plaid kilts) to comfort-food favorite Off the Strip and Mexican eatery Chayo Cocina, which Gray says is home “to The LINQ’s best balcony.” For more unique eats, there’s F.a.M.E., “a true experience for the five senses,” he explains. This culinary bazaar, with its pop-art setting, brings the idea of the Asian Night Markets to Vegas. Save room for dessert. The Sprinkles Cupcakes flagship Las Vegas location will feature its confections with artisan ice cream and a cupcake ATM. ShOp KOtO, a lifestyle shop with outposts in Aspen and Miami’s South Beach, is a hipster haven for trendy trinkets—the likes of which your social-media-savvy friends are posting and blogging about. Put your best foot forward at Bella Scarpa, a footwear boutique that Gray says will “satiate the passions of shoe hounds.” And true to its name, Ruby Blue is decked in sparkling red walls with royal-blue upholstered insets “evoking the feel of a burlesque dressing room.” Lingerie and bustiers, and a variety of provocative novelty games and toys, mark its inventory.

Gordon Ramsay BurGR Chef Gordon Ramsay makes his foray into the world of burgers at Planet Hollywood Resort & Casino. Executive Chef Eric Mickle helped develop the combination of meats that make their perfect patty: “We have a blend of three different meats,” he explains; the restaurant uses brisket and short rib for fat and flavor, and chuck “to give you that steak sensation.” But at BurGR it’s not just the meat that makes a difference—it’s the wood. BurGR is the only burger restaurant on the Strip that cooks its patties on a wood-fired grill, fueled by alder and apple wood.

You soon might see a candy apple red convertible parked outside The Quad Resort & Casino. That’s because Guy Fieri, host of Food Network’s Diners, Drive-Ins and Dives, is planning to open his first Las Vegas restaurant there by year’s end, bringing his Flavortown menu of comfort food favorites to the Strip. The as yet unnamed 7,000-square-foot restaurant will be located next to Carnaval Court and contain patio seating. For UNLV grad

Fieri, this is a homecoming. “I remember the beginning of the food revolution in Las Vegas, in the early nineties as a college student,” he says. “Now I am opening my very own restaurant

right in the heart of the Las Vegas Strip. I am stoked.”

Romance in the Fare Dining at the Eiffel Tower Restaurant is often lifechanging. While most diners marvel at the remarkable view and simply take delight in the tasty French fare from Chef Jean Joho’s kitchen, others push the experience to new heights and pop the question before the crème brûlée arrives. “We must lead the city in marriage proposals,” says general manager Lyle Tolhurst. According to Joho, roughly 500 couples each year “Propose in Paris.” That’s the name the restaurant uses for its trio of proposal packages which include ring-delivery options such as a Bananas Elysées dessert capped with a spun-sugar cage encasing the ring.

Those not making wedding plans take comfort in Joho’s menu which includes starters like Osetra caviar and blinis or the grand seafood platter. Guests then have a medley of entrée choices from a Rossini-style charbroiled filet mignon with foie gras and truffle sauce to sautéed veal medallions and, Joho’s favorite, a whole boneless Dover sole. “It’s such a wonderful, fresh fish. You can smell the sea,” he says. “It’s not a secret what we do,” he continues. “We offer an experience you can’t get anywhere else.”

“It’s amazing how many engagements we have,” Joho says. “One time, we had seven engagements in a single night. The customers are always nervous wrecks. We make them comfortable.”

Rather than a design theme [we use] color, graphics and a mix of fabrics. Everything revolves around these three concepts, which are our foundations when we start thinking about a new collection. InspIred by CalIfornIa’s laIdbaCk lIfest yle, Custo barCelona Is an expressIon of the dalmau brothers’ playful sIde. What’s in store for us this season? A key feature in the collection is ‘eco-fluorescence,’ which entails the juxtaposition of opposing elements like ecological components and fluorescent colors. Fabrics created with an organic, natural look are combined with neon colors, while romantic fabrics, such as Swiss embroidery and lace, are fused with technological prints. describe the custo Barcelona woman? IntervIewed by ChrIstIe Moeller Raveling the woRld in the early 1980s, the Spanish-born Dalmau brothers, Custo and David, were so captivated by the California lifestyle that they created an entire fashion line based on what they saw. Inspired by Southern California’s surf culture and the psychedelic-art influences of Northern California, the brothers combined the contrasting styles, and Custo Barcelona was born. The strong West Coast influences still appear in their unique, instantly recognizable designs today. Vegas Player spoke with Custo Dalmau to discuss the season’s new collection of bright colors and humorous graphics.

Las Vegas: His Kind of Town Don Cheadle has been a familiar presence on the Sin City scene since he first won a Golden Globe® in 1999 for his acclaimed per formance as Sammy Davis, Jr., in HBO’s The Rat Pack. He was par t of the star-loaded entourage with George Clooney and Brad Pitt that robbed the Strip blind in the hugely popular o cean’s trilogy. And he recently returned to make Vegas a player in his Showtime hit, House of Lies, which earned him a second Golden Globe® as cutthroat management consultant Mar ty K aan. “Maybe there’s a little Vegas luck that came with winning twice,” he says. “Filming House of Lies in places like Caesars Palace, Bally ’s and Planet Hollywood was a great oppor tunity to showcase a town we love. When we filmed in the casinos people didn’t stop gambling. That was a bit of a challenge, but a lot of them were fans of the show.” Cheadle didn’t hesitate to take it to the limit in the no-holds-barred, series and it ’s a gamble that ’s paid off. “I’ve stretched my image, but that ’s what you expect on cable —adult themes pushing the envelope,” he says. “ The audience is getting to live things vicariously through characters doing things that most of them would never do. That definitely includes me.” Playing the slick and über-intense Mar ty, who’ll stop at nothing to win, isn’t the biggest stretch for Cheadle in House of Lies. It ’s those nude scenes, of which he’s had more than his share. “I’m not comfor table taking my clothes off in front of a bunch of people,” he says.

“It’s strange when you’re getting naked in a scene with an actress that you’ve barely met.”

“I guess you could say I’m a big poker fan,” he says. “But I’m not laying down big bucks. I don’t ever bet an amount of money that ’s going to hur t the bottom line. I’ve got two kids to get through college, so I just enjoy the game and I would never risk ever ything.” Cheadle has played with a lot of famous faces, but the one he won’t forget is Clooney. “He’s the most unlucky gambler in the world and the worst card player,” he says with a laugh. “My wife, on the other hand, can hold her own. She takes it more seriously than I do and even went to poker camp. A date night for us might be dinner and then heading for a casino.” He calls actress Brigid Coulter his wife even though the couple, who have two teenage daughters, have yet to walk down the aisle. What ’s kept their relationship strong for more than 15 years? “It ’s like you get better at detecting where each other’s minds are at,” he responds. “You need to attack problems when they ’re small. Don’t wait and let things fester.”

no “HangoVeR” HeRe Cheadle, however, wasn’t into long nights on the Strip like the hard-par tying Mar ty. “ We just hung around at Caesars because there are so many great places to eat,” he says. “I think we did ever y restaurant there. I especially like Wolfgang Puck ’s Spago, and The Palm has great steaks. We worked such long hours that at the end of the day we just didn’t feel like doing the town.” Cheadle insists that even when he and his ocean’s costars were in Sin City for weeks at a time they behaved themselves. “It was par tly out of fear,” he says. “None of us believe that ‘what happens in Vegas stays in Vegas,’ not with all the cell-phone cameras and social media. When I was there with Clooney and Pitt, no one really did anything except maybe go to an occasional club. I think we had some of our best times playing basketball between scenes.” But he does find time to enjoy Vegas, whether it ’s holding his own in a celebrity golf tournament like Michael Jordan’s Celebrity Invitational, being ringside at a fight or just having fun with his family taking in the shows. It ’s the draw of the poker tables which Cheadle admits he finds hardest to resist.

Cheadle has a healthy perspective on success even after scoring on Showtime, where a third season of House of Lies will soon be in production, and also costarring in the summer block buster iron Man 3. “ The movie business runs on fear,” he says matter-offactly. “Nobody is totally sure how well what you put on the screen is going to do until you see the box- office returns. So it ’s always nice to see that you’ve got a winner.”

Fighting For Change While he’s firmly committed to both his career and family, Don Cheadle still finds time to join George Clooney in efforts to raise awareness of genocide in Darfur, Somalia and Rwanda. Cheadle also founded Ante Up for Africa, for which he’s organized Texas Hold’em charity poker tournaments in Las Vegas.

Cheadle played Colonel James Rhodes and War Machine in the Iron Man series; teamed with a crew of thieves in Ocean’s Eleven; was a detective in the Academy Award © -winning film Crash; starred in the melodrama Reign Over Me; was nominated for an Oscar for Hotel Rwanda; and was a U.S. Special Operations officer in Traitor.

Action Heroes & Music Legends Of iron Man 3, Cheadle says, “I got a big kick out of playing Colonel Rhodes and being the War Machine. Even though a lot of the action came from computer images, I got to do some of my own stunts. Before I became an actor, I really wanted to be a stunt man. I’m physical. I was an athlete and stunt work was something that just looked like fun. Then I realized that you could really get hur t. We all got a little bruised and battered on iron Man 3, but nothing too serious.” Now, Cheadle is pushing hard to bring his dream project to the screen. He’s worked for years to develop a film based on the life of M iles Davis in which he’ll star as the legendar y jazz trumpeter. “It ’s ver y hard to get a movie made,” he says, “because ever ybody is looking for an excuse to say no. If you want it bad enough you just have to keep grinding.” “You just put one foot in front of the other and know that nothing is really promised or for sure,” he adds. “If it ’s wor th doing, it ’s going to be hard. You never worr y about being famous or being a star because that tends to get in the way of creativity.”

“Just because you’re one person doesn’t mean that you have no power.”

“Genocide is the highest crime that is committed against mankind,” he says. “But the story can easily get lost because there’s a lot of competition for headlines. I think change is coming or I wouldn’t be involved. I found something I was passionate about, and I tried to figure out a way to become part of the solution. I would encourage anyone—whatever inspires them—to motivate themselves to become a part of the solution.”

Since taking over the role of Bo Peep in December, Coco has adjusted well to Las Vegas life. “We lived in Planet Hollywood for the first six months before we got our house here, and it was awesome. I was in my own little Coco world then,” she said before a recent show. The “we” Coco is talking about isn’t husband Ice-T. They’ve been a bicoastal couple since the start of PEEPSHOW, while he’s in New York filming Law & Order: Special Victims Unit. He recently moved to Vegas to be with his wife for the summer. Coco is referring to her two English bulldogs—Spartacus and Maximus— who are almost always by her side, even accompanying her to meetand-greets with fans. “They’re rock stars. They love the attention.”

PEEPSHOW is a “striptease extraordinaire,” says Coco, one of its stars.

Coco does too. But in PEEPSHOW, which she describes as “a slow tease, true 1950s burlesque,” Coco’s character is cautious before she breaks out of her shell. “It’s funny, because my character plays something I’m totally not. Bo Peep is timid; she’s shy. The Peep Diva basically gives her confidence throughout the show and builds her up to find love.” Bo Peep’s transformation hits its peak to a song called “Burlesque.” “That’s when you see me come alive.”
