EDITOR’S NOTE I admit it: Vacation equals shopping to me. No matter where my travels take me, I will find something to buy. Whether it’s local handicrafts, street art, or clothing and jewelry, I will convince myself that I can only find it right here, right now. My shopping addiction has created multiple cases of buyer’s remorse, such as the one too many pairs of espadrilles from Spain; a handmade hammock from Colombia that is balled up in a hallway closet; or the multiple matryoshka dolls from St. Petersburg that are now in storage due to a very curious toddler who puts everything in her mouth. But then on the flip side are the purchases I would buy over and over again and that still put a smile on my face: the wedding bands my husband and I acquired in the Azores, a gorgeous gemstone bracelet from St. Thomas, and bottles of handmade rose hand lotion from Big Sur, California. As my souvenir-magnet-covered fridge can attest, I adore traveling, and the little buys made abroad are a big part of my vacation experience. For me, it’s often less about the object and more about the place, the people and the memory that purchase embodies. Our travels, the people we meet and the memories we make are what inspire us — and what inspired this issue. We talk to polo superstar and model Nic Roldan, who exudes style and confidence both on and off the playing field. Making Prince Harry and Prince William sweat is no sweat for stylish American polo star Nic Roldan. By Jacquelynn D. Powers accessory, a watch. Chopard, Piaget and Hublot are among Roldan’s favorites, but don’t get the impression that the 31-year-old is fashionobsessed. He is just as comfortable in a white T-shirt, jeans and sneakers. “The polo lifestyle is a very simple life,” he notes — and a fashionable one at that. Roldan’s intense dedication has him currently working toward another U.S. Open Polo Championship after winning his first as a teenager. “With a lot of hard work, determination, belief, it can be done,” he says. He shares the same passion and determination with his charitable endeavors, working closely with Rally For Kids With Cancer, which sponsors scavenger hunts to raise money for local children’s hospitals. Roldan also dedicates his time to Just World International, an organization that builds schools and sends food and medical supplies to places like Cambodia, Honduras and Guatemala. “It’s a heartwarming experience to be able to put a smile on their faces.”

“Playing polo has given me the opportunity to see some amazing places,” polo star Nic Roldan says. And the opportunity to play with some pretty famous faces, like the British Royals. The Florida resident is often far from home, whether it’s to play an exhibition match with Prince Harry and Prince William in California or to compete in tournaments all over the globe. “As Winston Churchill once said, ‘Polo is the passport to the world,’ and while it may sound so clichéd, it’s the truth,” says Roldan, whose passport includes stamps from England, Argentina, Australia, China and United Arab Emirates. Aptly known as the “sport of kings,” polo is in Roldan’s blood. He’s a third-generation polo player who got his professional start at the tender age of 14. But it isn’t just family traditions that keep Roldan playing polo; it’s a love for the game. “Polo is beautiful and passionate,” he enthuses. “It’s very intense. I like to compare it to ice hockey on horses. You’re traveling at speeds of 35, 40 miles per hour. It gets aggressive out there. Pack It Up

I always bring timeless items that are feminine as well as practical, like jean shorts that look good with a simple T-shirt or dressed up with a silk blouse, strappy sandals and bold bikinis that are easy to mix and match (I love the California brand MIKOH). My must-have amulet of sorts is a handmade Wayuu Mochila made by the women of the eponymous Colombian tribe (I feel a positive energy whenever I carry it). Each brightly colored bag is so unique that it’s as though I’m toting a piece of art on my shoulder. I keep everything else simple: a delicate gold chain with a pendant, a rose-gold bracelet that was gifted to me by friend and jewelry designer Ashley Kersh, and a classic Panama hat for stylish sun protection.

Caribbean Dreams

Give me clear skies and clear water, and I’m in heaven. I’ve traveled to a decent amount of Caribbean destinations (I can’t get enough of Tulum and Cartagena), but there are a few islands I have yet to discover, such as Turks and Caicos and St. Lucia. Currently, my mouth waters for a good conch salad with freshly diced fruit and peppers from a little beachside hut in the Bahamas. It’s always fun to try the local flavors of every country I visit.

The Must-Haves

A good book, my camera and a relaxing beach playlist on my iPod. I’m a big fan of music, so I always need a great soundtrack for every trip.

My Secret Weapon

If I’m headed to the beach, then hats and sunglasses are a must. They don’t just provide a chic way to protect against the sun, but they can also disguise untamed hair and allow you to go makeup-free.

Just Relax

I’m thrilled to leave behind high heels, makeup and emails on vacation. I think it’s a rarity nowadays to find a destination where you can really disconnect from the world, which is why I love traveling to remote places where Wi-Fi is nonexistent. Being able to really sign off for a few days is, for me, a true luxury.

By Ginger Harris After eight seasons, the cast of Entourage is ready to hit the big screen. As the HBOborn show makes the leap from in-home entertainment to silver screen, so will the fictional characters’ style. Here is a look back at each of the guys’ influential wardrobes.

Kevin Connolly’s Eric “E” Murphy isn’t the kind who would say no to a sweater vest with a white collar popping out of the top, but he isn’t afraid to throw a trend or two into the mix, such as cap-toe oxfords and colored aviators. While we get the feeling he one day dreamed of dressing like Ari, down to the Rolex Daytona, he clearly studies the pages of his latest men’s fashion mag too, bringing a younger twist to the traditional professional’s look.

The Professional

The most consistently styled character on the show, Jeremy Piven’s Ari Gold wouldn’t be caught dead without a custom suit and tie (with a Windsor knot, no less), a pair of fine Italian leather shoes and a Rolex. Surely even his skivvies boast a designer label. But for all of his ostentatious behavior, the slick, fast-talking agent is still the most sartorially reserved, choosing tailored looks and classic accessories all the way down to his conspicuous pocket squares.

The Urban Outfitter The Risk-Taker Brought to life by Jerry Ferrara, Salvatore “Turtle” Vacara introduced a singular hip-hop influence into the show. In the beginning, he relied on basketball jerseys, baggy denim and backward hats — all in clashing hues — to get him through the day. But as the seasons progressed, so did his casual street wear, outfitting himself in It sneakers — like his super-exclusive Fukijamas — argyle cardigans, polos, Lacoste and his Audemars Piguet watch, which dressed up his urban influence.

Johnny “Drama” Chase, as played by Kevin Dillon, isn’t afraid to try something new — even when he shouldn’t. When one shiny blazer didn’t work out, he didn’t shy away from trying the next. Trendy jeans, a fedora and a shirt that several years from now he will look back on and shake his head at — all staples. In the cast of characters, he’d be the first to get ambushed by the makeover squad or be cited by the fashion police.

The Natural

Vincent Chase, played by the dashing Adrian Grenier, has always been the show’s It Boy. His laidback, “in the right place at the right time” attitude also dominated his style. Comfy tees (the kinds that cost a fortune to fit just right), perfectly broken-in skinny jeans, just the right mix of bed-head-meetsstyled hair, motorcycle boots that show wear but clearly not too much, trendy shades and a piece of man jewelry — everything he touched, everything he wore, was effortless.

While some actors find it easier to portray real-life personalities on screen, for Naomi Watts, the experience has proved formidable. “It’s very scary,” admits the Australian actress of playing the late Princess Diana in the 2013 biopic Diana. Both in this role and in her Oscar-nominated turn as real-life tsunami survivor María Belón in the 2012 film The Impossible, fear has worked as a motivator rather than a deterrent. “I love the challenge of it,” explains Watts, who was admittedly nervous to take on the role. “Inside [the story] there was this really intimate family spirit that was so strong I knew I had to do [the film].”

In her personal life, Watts finds support from partner Liev Schreiber and sons Alexander, 7, and Samuel, 5, whom she credits with her newfound lightness and positive outlook. “Perhaps having a family has done that for me.” Though it seems Schreiber, whom she met at the Costume Institute Gala in 2005, has always brought out a sort of levity in the actress. “I made a ballsy move, asking him, ‘Don’t you want my digits?’ It made him laugh,” she says. “He texted me five minutes later saying, ‘Would you like to go for a drink now?’ And I said, ‘No, I’ll meet you for breakfast tomorrow.’” Like any normal parents, the pair enjoy doing things with their children, whether it’s biking or spending time at their home in New York City. “They love roughhousing with Daddy,” she says jokingly. “I always say, “No, no, Mummy is a delicate flower; save the roughhousing for Daddy!” Watts’ playfulness is showing through her work these days, too. Both in Birdman, in which she’s reunited with her 21 Grams director, Alejandro González Iñárritu, and in St. Vincent, where she stars opposite Melissa McCarthy and Bill Murray, Watts explores what she calls the “darker side of comedy.” She will be stepping outside of her comfort zone even further as Evelyn, the leader of the Factionless in the next three Divergent movies, based on the young-adult dystopian series by Veronica Roth. It’s a departure for the actress, but she’s decidedly confident about the sudden switch to not only action but also more comedic roles. “I love humor,” she says. “I’m totally drawn to funny people, and I like to think I can make people laugh. I’m not afraid to make fun of myself. So we’ll see.”

make people laugh. I’m not afraid to make fun of myself.

Watts’ own family has had a similar spiritual influence on her career — from instilling a love of theater to helping her decide what roles she takes. Her first taste of acting came at age four when she watched her mother in a stage production of My Fair Lady. “She was wearing all these beautiful costumes and talking in a funny voice… I kept waving to her and calling out her name, but she wouldn’t wave back because she was in character,” she remembers. “Finally, she gave me a little wink, and I got it. In that moment, I understood it was play-pretend, and I wanted to be in that arena.” Breaking into acting, however, wasn’t easy. As a teenager, the British-born actress moved with her parents to Sydney, Australia, where she enrolled in acting classes and began a grueling auditioning process. “It was pretty brutal,” she says of the decades she spent waiting to be “discovered.” “You’d have to drive to an office just to pick up two bits of script paper, then you’d arrive and line up for hours, get to the casting director, and they wouldn’t even give you eye contact.” Instead of a single breakout role, Watts moved to Hollywood and began securing bit parts in films like 1984’s Children of the Corn. It wasn’t until 2001’s Mulholland Drive that things finally changed for the beauty, in part thanks to a chance meeting with the film’s director, David Lynch. “He helped bring me out of my shell. My spirit had been broken a bit over the years by my having to work on films I didn’t love,” she reveals. “David saw me for myself and was OK with my self doubts.”

Mulholland Drive (2001) Many consider this film — originally a television pilot for ABC — Watts’ breakout role. When the network passed on the series, director David Lynch turned his psychological thriller into a screenplay and tapped a then-unknown Watts to play the lead role of Los Angeles ingénue, Betty Elms. The Ring (2002) As a young journalist tasked with investigating the cause of several mysterious deaths, Watts is more heroine than indolent damsel. Many panned this remake of the Japanese film Ring, but it went on to become one of the highest-grossing horror remakes in the world. 21 Grams (2003) Watts received her first Oscar nomination for her role as Cristina Peck, a grief-stricken mother and recovering addict. The title of the Alejandro González Iñárritu-directed film refers to the 21 grams of body mass lost at death, which represent the departure of the soul. Le Divorce (2003) Watts plays a French-wed poet living in Paris, who finds herself in the midst of a divorce when her bon vivant sister, played by Kate Hudson, decides to come visit. This was the actress’ first go at a romantic comedy, though the film borders on dramedy, with Watts playing a heartbroken foil to a free-spirited Hudson. I Heart Huckabees (2004) This existential comedy, directed by David O. Russell with an ensemble cast that included Dustin Hoffman, Jude Law and Lily Tomlin, gave Watts the platform to show off her rarely seen comedic chops. King Kong (2005) This contemporary remake of the 1933 classic has Watts playing iconic damsel in distress Ann Darrow. Critics praised the actress’ dynamic portrayal of the vaudeville character, because Watts expressed a range of emotions that Fay Wray, who first played the role, was unable to convey. J. Edgar (2011) Clint Eastwood directed Watts in this biographical drama about FBI director J. Edgar Hoover, played by Leonardo DiCaprio. In order to appear much older in her role as Helen W. Gandy, Hoover’s personal secretary, Watts underwent long hours of hair and makeup. The Impossible (2012) Watts earned an Academy Award nomination for Best Actress for her portrayal of real-life tsunami survivor María Belón. The actress spent approximately six weeks filming in special water tanks that simulated the massive waves. Diana (2013) Watts’ controversial turn as the late Princess Diana almost didn’t happen. He’s dressed everyone from first ladies Nancy Reagan, Hillary Clinton and Laura Bush to Hollywood stars such as Sarah Jessica Parker, Anne Hathaway and Michelle Williams. Oscar de la Renta, born Óscar Arístides Ortiz de la Renta Fiallo, came to be one of the biggest designers to date after humble beginnings in Santo Domingo, Dominican Republic. De la Renta’s big break came as one of the couturiers who dressed former first lady Jacqueline Kennedy in the 1960s. His fashion affair with American royalty is fitting, as Santo Domingo is the oldest continuously inhabited European settlement in the Americas, bringing a touch of European glamour from the royals themselves to the New World. Since forming his eponymous line in 1967, de la Renta left a large imprint on the red carpet, creating gowns constructed of beautiful bodices, skirts adorned with layers of ruffles, and jewel-tone hues of bold reds and brilliant purples found in his homeland’s native flowers. Toledo

Cuba-born Isabel Toledo took the U.S. by storm when first lady Michelle Obama wore her lemongrass-hued wool lace shift dress with accompanying overcoat to her husband’s first inauguration. It was a moment that put the spotlight on Toledo, who had launched her eponymous collection two decades earlier. Toledo’s early interest in sewing (she made her own outfits for school in Cuba) lent her designs a distinct level of craftsmanship and unparalleled construction. Her line boasts flamenco-inspired looks, with long trains and lace tops that recall her childhood in Cuba, a place she remembers as full of “so many different types of people who live together and exist and collaborate with each other.” Toledo’s experiences continue to inform her work; she juxtaposes fabrics that harken back to her roots (often burlap lined with voile or denim lined with silk) and is designing for a wider demographic, partnering with her husband, Ruben, to create a plus-size collection for Lane Bryant — the firstever designer collaboration for the brand.

Tcherassi

Maybe it’s her Colombian roots — she hails from Barranquilla, the main shopping and cultural center of the Caribbean region of Colombia — or maybe it’s her home in Miami that brings out the color and flavor in Silvia Tcherassi’s designs. Her vibrant designs hold true to her Latin roots: Think bright orange mochilas (woven backpacks like the ones made in her hometown by local artisans) and frilly wedding dresses popular with South American socialites. Celebrities like Sofia Vergara, Shakira and Catherine Zeta-Jones favor the designer’s feminine and flirty pieces, inspired by women of every age “from 18 to 50,” as she likes to say. It’s this element of ladylike sophistication that’s received plenty of attention, even earning the designer the designation of Chevalier de l’Ordre des Arts et des Lettres by the French government for her contribution to arts and culture. The internationally touted Tcherassi garnered fans stateside with her budget line of colorful shoes and handbags for Payless ShoeSource (released in 2011) and has since widened her appeal with boutiques in both Miami and her native Colombia.

In 1939 in Caracas, Venezuela, Maria Carolina Josefina Pacanins y Niño was born. She would later be known as Carolina Herrera, the woman who captured the attention of Studio 54’s It crowd, including Mick and Bianca Jagger and Andy Warhol, with her distinctive style. Though modern fashions came slowly to Caracas in the ’50s, Herrera developed her own sense of style, landing on the International Best Dressed List alongside celebrities like Anjelica Huston, Sophia Loren and Princess Grace of Monaco. Since launching her first collection, which Herrera went back to her roots in Caracas to have made, she’s dressed everyone from first lady Jacqueline Kennedy to actresses Renée Zellweger and Salma Hayek. Her style is simple, chic and elegant, quite like the classic white button-up she is best known for. Her shifts are essential little black dresses that are timeless yet modern, making them pieces that all women — not just celebs such as Tina Fey, Emmy Rossum and Venus Williams who sit front row at her shows — feel comfortable and beautiful in. Time and time again she draws on her Venezuelan roots for inspiration, creating dresses that boast wild flowers like those in her motherland, as well as dresses with swirls inspired by the waves of the Caribbean Sea.

In some families, there are no questions, only customs. Nowhere is this sentiment truer than in Britain, where the Royal Family adheres to all sorts of regal conventions. Kate Middleton and Prince William’s wedding in 2011 was steeped in Victorian tradition, beginning with her much-talked-about tiara. Queen Elizabeth II loaned Kate the Cartier “halo” tiara, which Mrs. Prince William donned proudly on her walk down the aisle, introducing a new generation to the world of royal jewels. The understated — as much as tiaras can be — diamond headpiece was actually gifted to the Queen by her mother, Elizabeth I, on her 18th birthday. The original owners? The Duke of York, subsequently King George VI, who purchased it for his wife, the Queen Mother, Elizabeth I, in 1936.

Material Girl

Some heirlooms aren’t passed down; they wind up on the auction block — ready to be snatched up by wealthy collectors. Madonna may have been hoping to channel a royal, Wallis Simpson, the woman at the heart of her 2011 film W.E., when she purchased an onyx-and-diamond panther bracelet at Sotheby’s in London for $12.4 million. Simpson was an American socialite whose love aff air with King Edward VIII forced him to abdicate his throne so they could be together. The pair eventually married and became the Duke and Duchess of Windsor and lived like socialites on both sides of the pond during the 1950s and 1960s. The Cartier panther bracelet, commissioned and co-designed by Simpson in 1952, fetched more than three times its estimated value at auction, making it one of the most expensive bracelets ever sold. Vintage-loving Mary-Kate Olsen received a stunning 1953 Cartier ring upon her engagement to French banker Olivier Sarkozy in 2014. Acquired at a Sotheby’s auction by an anonymous bidder for $81,000 just weeks before their engagement, the unique four-carat diamond dazzler is framed by 16 sapphires. The ring was said to be previously owned by a jewelry collector based in Tennessee in the 1950s. There is widespread speculation that fashionista Mary-Kate chose the engagement ring herself. Olsen is not alone in her devotion to heirloom pieces. Penelope Cruz, Scarlett Johansson and Milla Jovovich are a few other celeb brides who wear historic rings on their fingers.

Kim Kardashian was so taken by a trio of bangles designed by Lorraine Schwartz, which Elizabeth Taylor reportedly wore daily, that she plunked down nearly $65,000 for the black, white and lavender jade bracelets at Christie’s in New York City. Gladiator Sandals

When Roman gladiators entered a battle, their sandals didn’t have metallic straps or five-inch heels. But the simple style of actual gladiator footwear, which was the first rigidsoled shoe, proved itself on the sand of arena floors and the streets of Rome to become the standard shoe for the Mediterranean climate. After a long stretch of conservative dressing trends, the gladiator sandal returned in the 1960s with lace-up, bohemian styles suited for the hippie aesthetic — and have since stuck around. By H.M. Struthers They say you can judge a man by his watch, shoes and belt. And when two out of three tend to match, a timepiece is really his only opportunity to make a statement. Not surprisingly, Benjamin Clymer’s impetus for launching Hodinkee, one of the Internet’s leading watch magazines, was equally deliberate. “It was a pet project that I worked on when I was [at work],” says Clymer, whose affinity for mechanical watches dates back to his teen years. Founded in 2008 while a then25-year-old Clymer worked for UBS, Hodinkee has evolved from a Tumblr blog into an international authority on the industry’s most interesting timepieces, attracting everyone from collectors and connoisseurs to first-time buyers. Hodinkee stands by the notion that not everyone is a “watch nerd,” and there’s no such thing as the perfect watch. “Each individual has a different lifestyle that is going to be best suited by different watches,” says former Hodinkee editor Stephen Pulvirent, who recommends a little introspection the next time you’re shopping for a new timepiece. Buyers should ask themselves key questions about when and where the watch will be worn. For work or play? During the day or at night? “Are you really active? If so, you’re going to

want a modern watch that is robust and can take a beating,” says Pulvirent. “Every person should own a watch that they’re excited to put on in the morning and that brings a smile to their face when they check the time.” This straightforward approach to watch collecting is partly what’s made Hodinkee such a success, becoming the digital source for hundreds of thousands of watch enthusiasts looking to learn about trends, read reviews and see what celebrities are wearing, such as John Mayer, a regular Hodinkee contributor. Clymer has served as a personal watch consultant to Jay Z, helping the rapper select a watch for his two Carnegie Hall concerts in 2012. (The self-professed Rolex guy opened the show wearing a Jaeger-LeCoultre Reverso.) But you don’t need a rock-star budget to be a collector. “Don’t worry about what you’re ‘supposed to have,’” Pulvirent says. Instead, focus on the details and pay attention to how your new purchase fits into your existing collection, no matter its size. “Watch collecting is a lifelong journey, which is part of the fun,” he says. “There is no way to have everything (or even to see everything), so the next amazing find is always just in front of you.”

a “It’sfeeling you won’t find anywhere else on Earth. It’s magical.

It should come as no surprise to those familiar with famed French free diver Guillaume Néry that prior to discovering the sport that would consume much of his adult life, his childhood fantasy held a similar theme. “My dream as a kid was to become an astronaut,” says the 32-year-old world champion. “Only a few people have the chance to pursue this dream. Today I know that I wouldn’t have been selected because of my sight.” Vision aside, his passion for exploring the unknown has driven Néry to aquatic depths spanning the globe, eventually reaching a personal best of -125 meters during training in Greece last year. But, he admits, numbers aren’t what push him to dive. “Back a few years ago, my goal was to go farther and farther, to beat as many records as possible,” he says. “Today, my vision is different. My passion toward exploration remains the same, but I don’t have an exact number in my head. One more meter would already be a step in the unknown. It’s fascinating.” Equally intriguing is the simplistic precision with which Néry approaches the sport, a form of underwater diving in which the diver attempts to reach great depths on a single breath. Outfitted in only a diving suit, mask, nose clip, Ball diver watch and monofin (a singular fin that fits both feet), he dives connected to a tether, which can pull him up should anything go awry. Basic equipment and physical prowess aside, though, it’s the mental aspect that Néry says requires the most training. “When I dive, I only send my physical body in the water. My mind already knows exactly what is going to happen,” he explains. “I’m extremely focused and completely relaxed. When I reach a certain depth, I get hallucinations, a phenomenon called narcosis.” That phenomenon inspired Narcose, a film created by Néry and his partner, free diver Julie Gautier, about narcosis — also known as “rapture of the deep” — in which the diver’s nervous system begins to feel the effects of excess nitrogen, impairing judgment and delaying physical responses much like a narcotic would. In addition to Narcose, Néry has collaborated on several other creative endeavors, including documentaries such as the extreme sport-focused Attention, A Life in Extremes and La Traversée des Mondes,

which explored a dive in the heart of the Yucatan. Calling free diving and art “my two passions,” Néry’s future projects include a movie series and a cinema-style documentary in which he’ll guide viewers — meter for meter — on a complete free dive. All of this is a far cry from Néry’s beginnings, where the loss of a breath-holding contest with a friend inspired his future. “He won, and this annoyed me,” recalls Néry. “After that, I trained myself a lot. After four weeks, I was able to hold my breath for four to five minutes. At the same period, I met Claude Chapuis, my future diving mentor, who taught me everything [I know].” Today, Néry spends his days training, traveling and spending time at home in Nice with Gautier and their daughter Maï-Lou, balancing preparing for conferences and promoting and producing new films with family dinners and school pickups. (“It’s a good mix, a balance that suits me pretty well.”) His passion for the deep is apparent still, having wandered off what he calls “the common path” to pursue a life, and occupation, that few can. “Diving in the unknown [keeps me going],” says Néry. “Discovering unexplored areas with the desire of pushing back my limits. When I dive, I go so deep that I’m surrounded by only blue. You have no point of reference; infinity is almost within reach. It’s a feeling you won’t find anywhere else on Earth. It’s magical.”

The food world can often seem intimidating. Sous-vide cooking? Beef carpaccio? The terminology found within menus is sometimes off-putting, and you’ll find yourself wishing you had a dictionary when ordering. Luckily, we’ve done the legwork and created a glossary just for you. Bon appétit!

Béchamel n. a white sauce made with a roux of butter and flour cooked in milk. It is one of the mother sauces of French cuisine and is used as the base for other sauces and soufflés. That eggplant lasagna with béchamel sauce was rich and addicting. Burrata n. a traditional Italian cheese with a solid outer shell and rich, creamy center made from mozzarella and cream. It’s typically served at room temperature. The burrata’s buttery center oozed out at the touch of a knife. Carpaccio n. an appetizer made of raw meat or fish that’s been thinly sliced and pounded thin. It’s traditionally marinated with lemon and olive oil and topped with thin shavings of white truffle or Parmesan cheese. We couldn’t decide on an appetizer, so we ordered both salmon and sirloin carpaccio.

Confit n. the term confit (pronounced “konfee”) derives from the French verb confire, which simply means to preserve. Confit is a generic term for various kinds of food that have been cooked in oil or sugar water. Sealed and stored in a cool, dark place, confit can last for several months. A favorite method of preparing meat (especially duck) in pre-fridge France was to preserve it in its own fat. It’s similar to maceration, but instead of infusing alcohol with fruit, you’re infusing meat with fat and flavor. I prefer duck-leg confit over roasted duck; it’s juicier and more flavorful. Escargot n. a French dish of cooked land snails. The snails are removed from their shells, cooked in a garlicky parsley and butter sauce and placed back into the shells for serving. The escargots were so tasty that not a drop was left in the dish. After eating every single snail from its shell, we soaked up all of the leftover sauce with bread. Gelato n. while ice cream is made with cream and eggs and contains at least a 10 percent fat content, gelato is made with mostly milk and hardly any eggs, so it’s lower in fat. Ice cream is churned fast to let in air and pump up the volume, lending it a light, fluffy quality. Gelato is slow-churned, which causes it to be denser, milkier and slower to melt. A rich, creamy scoop of gelato holds up longer to the hot Caribbean sun than ice cream.

Foie gras n. a spread made of the liver of a duck or goose that has been specially fattened. Foie gras is a popular and well-known delicacy in French cuisine. Its flavor is described as rich, buttery and delicate, unlike that of an ordinary duck or goose liver. Foie gras spread on a piece of crisp toast feels so indulgent that I can only eat it once a month, otherwise, I’ll feel too gluttonous. Sous vide adj. a method of treating food by partial cooking followed by vacuum-sealing and chilling. Cooking sous vide is easier than its fancy name might suggest. You simply seal the ingredients in a plastic bag (you can also use a canning jar) and place them in a water bath, a combi oven, or any other cooker that can set and hold a target temperature to within a degree or two. Modern chefs love sous-vide cooking because you will have perfectly cooked proteins every time. Our party opted for sous-vide steak, and each piece of meat was cooked to perfection; a warmpink center for medium dishes and a bright-pink filet for those who ordered it rare. Truffle n. a fancy, pricey mushroom. The mention of truffles conjures up images of the expensive French black truffle from the Périgord region of France, or the renowned odorous white truffle of Alba, in the Piedmont region of Italy. This prized delicacy is most often found with the help of trained pigs or dogs. A modest sprinkling of truffles makes even the humblest dish great, especially eggs or pasta.

Shelf-Life Countdown

Alcohol has a long shelf life (indefinite, if unopened) but proper storage is key. Bottles should be kept in a cool, dry place and out of direct sunlight. And remember, the less alcohol that is left, the faster it will spoil. 6 months: Vermouth, port and sherry, and liqueurs like Chambord and St-Germain, should be treated much the way you would wine — if you’re not finishing it immediately, store it in the fridge. It will last longer than your average bottle, but it won’t keep forever. 8 to 12 months: Spirits don’t go bad, but they do fade once opened, losing their essence over the years. Replenish your stock annually for maximum flavor every time.

PRO TIP Preserve the last few drops of a spirit by transferring it to a smaller bottle with less room for oxygen.

18 to 24 months: Cream liqueurs that do not contain dairy or eggs stay fresh for up to two years if sealed — just keep them refrigerated and out of direct sunlight.

When mixers won’t suffice (let’s face it, a vodka tonic doesn’t sit well with everyone), liqueurs and cordials can be used to flavor drinks and create imaginative cocktails. The popular elderflower liqueur St-Germain can elevate a glass of extra-brut champagne to a floral-scented, refreshing libation, while grenadine can take tequila from sundowner to sunrise — literally. The market for liqueurs is seemingly endless.

METHOD Why don’t homemade cocktails taste as good as the ones ordered from the bar? Make sure your at-home drinks are up to par with these helpful tips from Teddy Collins, bartender at popular Miami Beach watering hole Radio Bar.

Most versatile spirit to stock: Vodka. It’s odorless and tasteless. When infusing your creation with different or multiple purees, reductions, spices and syrups, you can easily transform any cocktail. Shaken versus stirred cocktails: When using juices in your cocktails, mix and shake vigorously so all elements inside the shaker can blend the ingredients and increase the flavor. Also, adding water can help oxidize the cocktail and round out flavors, such as in a mai tai or a mojito. A Manhattan is an example of a cocktail whose spirits you’d want to gently blend together. Carefully stir the ingredients to avoid bruising the vermouth, which will give it a bitter bite. Every bartender should know: How to create simple syrup: one part sugar to one part water. Easiest way to elevate a cocktail: Infuse your simple syrup with fruit, such as raspberries, blueberries and strawberries, or even jalapeño and ginger. She’s just as deliberate about how she packs her bags too, folding away clothes in oversized plastic storage bags to save space and layering delicate pieces between tissue paper to keep them from snagging or losing their shape.

Thorough packing requires either impeccable foresight or deliberate planning — two things fashion editor and stylist Katherine Lande knows something about. Whether traveling for a photo shoot with celebrities like Ivanka Trump or Andy Roddick or vacationing in the Caribbean, Lande leaves nothing to chance when it comes to her bag. Here, the seasoned traveler shares how to pack for your next vacation without compromising space or style.

Get It Straight

Even clothing that has been folded away carefully is bound to wrinkle when it’s been packed for hours, so Lande relies on a wrinkle releaser and her trusty blow dryer to get any lines out. “Blasted heat can work magic at removing wrinkles,” she says. “Just be sure to keep the blow dryer a few inches away from the fabric.”

Be Prepared

A stylist never leaves home without an emergency kit, and travelers should follow suit. Lande’s vacation arsenal consists of safety pins (stashed away in her wallet and handbags, as well as pinned to suitcases for easy access); a sewing kit; stain-remover pads; mini lint brush; rubber bands (she’s been known to use them to repair shoes); nail polish remover (changing your nail color works to freshen up an outfit, too, Lande says); and eyelash glue, which works great as an adhesive for fixing loose stones on jewelry, shoes and all sorts of embellished clothing.

It’s OK to leave your troubles on land when you board the ship. Your beauty routine? That’s precious cargo — as are some prized items every traveler should bring, says Collier Strong, celebrity makeup artist for the likes of Eva Longoria, Andie MacDowell and Malin Akerman. Strong’s mantra is “less is more,” so he’s spilling his secrets for a vacation look that’s both low maintenance and high impact.

Use spray sunscreens if you have oily skin. And always apply it under your makeup — not over. You can spray it onto your hands and apply to your face. Spray varieties are a good alternative to some of the liquids that don’t absorb into the skin. If using a liquid sunscreen, let it dry thoroughly before applying foundation so that it’s actually prepping the skin, settling in and drying. Use a liquid-to-powder formula or a powder foundation like bareMinerals SPF 30 Natural Sunscreen, which comes in light, medium and dark. I’m also a huge proponent of using concealer or foundation where it’s needed and leaving the rest of the face bare. The cheek’s natural gleam makes skin look younger and healthy — and adds a little glow. Put on eyeliner, eye shadow and tinted lip balm with sunblock in it. They’ll give you the most bang for your buck. Most eye compacts have light, medium and dark shades, so pack one [with multiple colors] that’s neutral enough to wear with whatever wardrobe options you bring. Use lighter colors during the day and add a deeper shade, dark eyeliner and mascara to create an evening look out of what essentially you already had on. A good moisturizer will help soothe the skin, but if foundation won’t cover the sunburn, beautiful eye makeup will make people focus on your eyes and not your sunburn. By all means, avoid red or pink lipstick! Moisten a tissue with makeup remover (NARS makes the best eye makeup remover out there) and squeeze the lashes between the tissue and your fingers, gently wiggling them back and forth. You could do the same thing with makeup wipes but it would take a little more work. Use a transparent version of any color to avoid that full opaque density of a lipstick, or moisturize your lips first and then dab on lip color.
