fter a two-year absence, and some very difficult times for all of us, I am delighted to welcome you back to the Round Chapel on behalf of the East London and City branch of the Campaign for Real Ale (CAMRA). We give thanks to the Trustees and team at the Round Chapel (special thanks go to Philip Lloyd and Patrick Hamill) for allowing us to use this wonderful building once again. As you can imagine, the planning for this year’s event has been somewhat fraught with uncertainty as to how the pandemic would develop, and we therefore took the decision to run the festival at 75% of its previous levels to allow more room for everyone. Despite this, we are very pleased to offer around 175 cask ales, as well as numerous foreign beers and ciders, making Pig’s Ear the largest CAMRA festival in London in 2021.
DIAL B FOR BEER Despite the reduction in casks this year, it is still not possible to fit all of them onto the racking at once. For those of you with a season ticket, look out for changes as the week progresses. A live online list is available at pigs.realaledb.com and will be updated as often as possible. All beer is sorted alphabetically and you can find the beginning of the alphabet on your right by the Glasses stand. Keen, John and Peter work hard to bring us the best of British, with notable specials and beers appearing in cask for the first time, using their master selection skills. For apple aficionados, Mick Lewis’s cider and perry bar takes a prominent role in the centre of the room. In lieu of many of us being able to travel this year, Adam Miller and the overseas bar team have a sought-
after selection of draught and bottles. There is also a selection of soft drinks available.
ThE MAN WHO CARRIED TOO MUCH Our cloakroom is in the back left-hand corner, opposite the food vendor. Depositing your coats and bags there will help us to ease crowding inside the hall, meaning you can get to the bar faster!

These will only be available from the Glasses stand. Any credit you do not spend on the beercard can be donated to the Speaker’s Charities in the boxes provided or refunded at the Glasses counter. Refunds are not given at any other bar.

When you come to your final drink, if you do not have enough credit left on your beercard, you may pay the difference in change over all bars. We are using old stock so despite what is printed on the cards they are valid all sessions but PLEASE treat your beercard as cash – we cannot replace lost cards any more than lost fivers! T
he last Pig's Ear was held a full two years ago. Like me, many of you will have fond memories of the festival. If this is your first time here, then you are very welcome. If anyone had said to me in December 2019 that a global pandemic would rage for over 18 months and shut down most of society, including beer festivals and pubs, and that pubs, once allowed to re-open, would be subjected to takeaway only, then mandatory table service, masks, oneway systems, 10pm curfews, enforced seating, app ordering, compulsory scotch eggs (remember them!) followed by another period of total closure spanning over four months, then I would have concluded you had consumed far too much of the Imperial Russian Stout! What a tumultuous time we have just endured – and many are still enduring. The hospitality sector has been amongst the hardest hit. Given the strong interdependence between cask beer and the pub trade, it is quite remarkable that both the cask brewing and pub industries were not lost forever. Few would have guaranteed that they could have survived a third of the year under complete closure and the rest of the year under some degree of crippling restrictions. It is remarkable that so many have prevailed and this is testament to the tenacity, ingenuity and resolve of our treasured brewers and publicans.
Just before lockdown in March 2020, I was in Liverpool at a conference which ended two days before my employer banned attendance at such events. There was a very strong feeling of impending doom; a real sense of foreboding as I savoured my last pint of cask ale in the awardwinning Roscoe Head before boarding a largely empty train back to London. Naturally the first place I headed after exiting Euston Station was the Euston Tap for another beer. London felt even more like the eve of the war. There was a reluctant inevitability in the air. For the whole of the next week I was determined to visit the pub (different pubs!) every night. I was often in very sparse company. But I stuck to my vow and toured Hackney every evening before bed, quietly enjoying a couple of pints of draught beer and in complete mental denial about the looming lockdown. That Thursday was my last night in (well actually outside) the Chesham Arms (my local) for many weeks. My neighbour returned from Spain, having got the last flight back to Britain, and joined us in the street, socially distanced, for a communityspirited but somehow half-hearted attempt to empty the cellar of draught beer. We didn’t succeed. I think most of us in that defiant, street drinking team caught Covid-19 over the coming days. stay in. By Monday he was ordering the nation to stay at home. Mercifully my wife and I recovered after a week or so and, as a key worker, I was back on the frontline powering a seemingly deserted London. And boy did I MISS the pub! Bottle shops and off licences, the noble brewers who kept going through those dark days, and those dusty bottleconditioned beers at the back of our cupboard being saved for that special occasion became our saviours. Like many I saw on social media, my garage became a makeshift 'pub' of sorts, with only one punter most of the time – me. I remember getting through a good many cases of beer, and spending a long time on the phone catching up with those whom I would usually be stood next to down the boozer. The struggle was real, but embarrassingly first world.
Nothing will keep us from the pub! Damn you

Going out to work every day whilst the majority of the economy was confined to barracks is something I will always be grateful for and honoured to have played my part. My laminated key worker letter remains in my backpack, the need to present it to a constable or other official having never arisen. In those days of "three weeks to flatten the curve” messaging I can remember being very optimistic about the pubs reopening and spending hours, perhaps even days, plotting and shaping my grand comeback crawl in intricate detail. Various WhatsApp messages were exchanged with my beer buddies, trying to keep spirits high and giving ourselves something to look forward to. Of course the eventual re-opening was much later than any of us imagined, and came with a number of strings attached. The raft of farcical restrictions, from being sent on your way at 10pm to being force fed scotch eggs, merely reinforced a point I have been acutely aware of after many years as a pub campaigner, and that is that a great many politicians have no idea what goes on in a pub, what communities use them for, and how ordinary folk interact within their hallowed walls. It was also clear to me that those making such decisions and justifying them had a peculiar obsession with pubs being little more than restaurants or cafes that serve beer as an accompaniment to a meal. Exchanges between pub campaigners and the government demonstrated a spectacular ignorance regarding wet-led pubs and the neighbourhood locals which many of us enjoy at the hub of our communities. Speaking to publicans during this period, and listening to their concerns and fears for their future livelihoods, made me realise just how diverse our pub stock is in Britain. It is the personality, the charm, the vibrancy and

THE THIRTY SEVENTH PIG'S EAR BEER FESTIVAL yes the quirkiness of our favourite pubs which endear them to us. It is also these very characteristics which make it quite impractical to abide by blanket rules whilst still trying to maintain some semblance of a trading business. One-way systems and screens are simply not compatible with (say) a 16th century coaching inn. Likewise an urban high street pub with no outdoor licensed space will not succeed under a ban on indoor drinking. Table service only was hardly going to catch on in a pub without any tables! And as predicted, the unedifying spectacle of developers and their agents using the pandemic as justification for converting a pub into alternative use by peddling a new edition of the great ‘viability con’ gave us campaigners yet more battles to fight with local planners and politicians. The circle of vultures was thankfully a relatively small one. They’ll come back though; they always do. Despite the frustrations and bleak outlook for the industry, a few movers and shakers did take the opportunity to ready themselves for the return of trading with new ventures and outlets. Just a short walk from the Round Chapel, the splendid Hackney Tap was launched last April and is a welcome addition to the local circuit. The Walthamstow beer mile continues to blossom and bloom with Signature, Wild Card and Exale now joined by Beerblefish, Forest Road and Hackney Brewery, the latter officially launching their High Hill taproom over their grand tenth birthday bash weekend in early October. The strong showing of the England men’s football team during the Euros also helped the pub trade but nothing can hope to compensate for the total loss of all Christmas trading during 2020, for the first, and let us hope the very last time in our history. For many beer lovers in Hackney, the Christmas season starts proper with the Pig's

Pub goers back in their happy place
Ear festival. This is an important milestone in the calendar and has extra significance for us this year, having attempted to plan a Covid-safe beer festival last year, only to have the rug pulled from under us. Remember also that all 45,000 pubs in England also had their Christmas abruptly cancelled last year. I am certain that many will be keen to make up for lost time and I imagine the carols will be sung with a little more zest and passion this year and
the chink of glasses will have more of a grateful and blessed ring to it than before. “You don’t know what you got ‘til it’s gone” may be clichéd but there were times during 2020 that I doubted we would get some of our favourite pubs back again. I was convinced that many would not survive. CAMRA is still here and the Pig’s Ear is back on again, albeit a slightly smaller festival this time. Hopefully you too will use this visit as the prelude to your beery Christmas season and have a fulfilling holiday period visiting and enjoying your favourite pubs and sampling the beers. In my campaigning capacity, I never took pubs for granted but after the two years we have just had, I will be redoubling my efforts and evangelising all the more about the Great British Pub. Let me bid season’s greetings to all our festival goers, your families and loved ones. Please support our wonderful pubs this Christmas and be kind to others on both sides of the bar. Cheers!
OBITUARIES John Longhurst We are very sad to announce that John Longhurst passed away in January after a short illness (not Covid related). John was a loyal ELAC member and supporter of the branch who rarely missed a branch meeting or social. He was a reliable and regular festival volunteer at numerous CAMRA beer festivals around the country. He worked at Pig’s Ear for many years. For a long time he worked on our front of house, selling the entrance tickets to our customers, but for the last few festivals he had assisted both in the volunteering and finance offices. John travelled around the country visiting pubs and combining this with his other interest of vintage buses. He

was a good friend to many of us in ELAC and CAMRA. He has left a big gap in ELAC and is greatly missed by us all. The festival will not be the same without him – RIP John. Guy Thornton Regular Pig’s Ear volunteer Guy Thornton died suddenly at his home in Holland in January of this year. Guy was a journalist and member of the British Guild of Beer Writers whose annual dinner would normally take place during the week of Pig’s Ear. Guy would always leave the festival for the dinner in his best suit! Guy who had used a crutch for many years following a cycle accident, normally worked on the British bar or on glasses and will be missed by the festival. ANDY KINCH

BEER STYLES AND SUBSTANCE HERE'S A QUICK GUIDE TO SOME OF THE DIFFERENT BEER STYLES YOU CAN FIND AT OUR FESTIVAL BARLEY WINE Barley wines are strong beers, often between 7%-10% in strength, which require considerable time to mature and become drinkable. Although unusual to find them in pubs, due to their strength, a few brewers have kept the barley wine tradition alive. The style is most often seen now as a Christmas ale. Barley wines are strong in flavour and alcohol, with massive sweet malt, ripe fruit, pear drop, orange and lemon flavours. If darker malts are used, dark fruit, chocolate and coffee flavours can be present. Hops can also be generously used in barley wines, producing bitterness and peppery, grassy and floral notes.
BITTER Bitters developed towards the end of the 19th century as beers that could be served after only a few days’ storage in the pub cellar. Although pale ales have made a resurgence at their expense, bitters were initially a successor to the early pale ales. They are usually deep bronze to copper in colour due to the use of slightly darker crystal malts. Bitters are highly-hopped ales (hops are used as a bittering/preserving agent in brewing) and tend to range from 3%-5% in strength; although best bitters and premium bitters are often stronger.
GOLDEN ALE Pale amber, golden, yellow or straw-coloured golden ales are hoppy beers with a refreshing taste that tend to be less sharp than bitters. Golden ales may have some malt or fruit flavours, depending on the recipe.
IPA AND PALE ALE India Pale Ales (IPAs) changed the face of brewing early in the 19th century when they
began to be brewed in London and Burtonupon-Trent for both national and export markets. As IPAs were strong in alcohol and full of hops, they kept better and longer than bitters. Beers with less alcohol and fewer hops were developed for the domestic market and became known as pale ales. Today, the distinction between bitters and IPAs/pale ales is often blurred, as is the line between IPAs and pale ales. In recent years some brewers have produced black IPAs, which is a veritable oxymoron, but combine the roasty flavours of dark beers with the hoppiness of IPAs.
MILD Milds tend to be ales of low alcoholic strength and hop content, producing a more rounded flavour less bitter on the palate and on the nose than more highly-hopped bitters. The majority of milds are darker in colour than bitters due to the use of a higher roasted malt and/or caramel malt content. There can be considerable variations in mild style, colour and alcohol strength.
OLD ALE Old ales reflect a beer style available before brewing restrictions introduced during the First World War. Contrary to popular belief, old ales do not have to be strong, with some old ales available at 4%. Old ales can be full of complex flavours, rich fruity malts, tart fruits and spicy hop notes. Darker versions will have a more profound malt character with powerful hints of roasted grain and dark fruits. Sometimes aromas of polished leather and fresh tobacco may be detected (neither of which are part of the brewing process). The hallmark of the style remains a lengthy period of maturation in the brewery, during which complex flavours develop.

WHAT DOES 'UNFINED' MEAN?
Porters are dark, slightly sweeter ales, but still a little hoppy, made with roasted malt. Historically, porters were the predecessors of stouts, and originated in London around 1730, becoming the most popular style of beer in England by the end of the 18th century. The fashion for the pale ales of Burton-upon-Trent from the mid-19th century ended the popularity of porters. It’s only in recent years that this style has undergone a renaissance. Porters are less dark and fruitier than stouts. Stouts are one of the classic types of ale; traditionally very dark, heavy, well-hopped and bitter, with a dry palate, thick creamy head and a good grainy taste thanks to the use of dark roasted barley malt in the brew. The distinction between the two has eroded in recent years, and now often depends on the judgement of the brewer. Milk stouts are a sweeter version of stout using lactose for sweetness, and there are now a wide range of flavours of stouts and porters thanks to the brewers’ skills, such as vanilla, coffee, and salted caramel marshmallow. White stouts are an interesting new concept, with the taste and aroma of a stout, but the look of a pale ale.
For centuries, isinglass finings have been used in cask beers to help produce clearer ‘fined’ beer. The enzymes in the isinglass react with the yeast in the ale and cause it to drop to the bottom of the cask (a process called ‘flocculation’). However, isinglass is derived from the swim bladders of tropical and sub-tropical fish, meaning that beers fined in this way are not considered suitable for vegans. As a result, a growing number of brewers choose to use alternatives to isinglass to clarify their beer, such as Irish moss (carrageen), or even to not use finings at all, making their beer ‘unfined’. This can often make the beers naturally hazy, as there’ll be less flocculation occurring. However, other additions, such as honey, oysters or lactose for milk stouts, mean that not all unfined beers will be vegan friendly, and not all naturally hazy beers will be unfined (if they include oatmeal in the brew for example).
SPECIALITY Speciality beers embrace all types of beer that contain a non-core brewing ingredient at the heart of the recipe intended to impart a distinctive and discernible flavour or character. Examples could be ginger, honey, various fruits etc. Our speciality beers also cover: wheat/weisse beers; lager-style ales; smoked malt beers (similar to the German rauchbier style); saisons (French for ‘season’); and sour beers (a style modelled on Belgian lambic/gueuze, or German gose). There’s likely to be an ale for everyone just within this style category. Examples of beers at the festival that fall into this category are: Spartan - Helots Revolt 4.5% (lager); Husk - Delivery Tax 6.2% (saison); and Left Bank - Weizen Brett 6% (dark wheat beer).

KEYKEG BEER A KeyKeg is a single use plastic container with the beer ‘bagged’ inside it. The KeyKeg beers we have at the festival are unpasteurised and unfiltered, and are dispensed using air pressure only. As with bottle conditioned beer, secondary fermentation takes place within the KeyKeg, so from a CAMRA perspective the beer is ‘real ale’. Our KeyKeg beers are dispensed via kegerator machines (often known by their brand name, Lindr), served chilled and tend to be lively.

THE THIRTY SEVENTH PIG'S EAR BEER FESTIVAL Our draught UK cask beers are arranged alphabetically by brewery name on the right-hand side of the venue (starting near Glasses). All our UK KeyKeg beers are located on one bar (next to the Foreign Beer bar), on the other side of the venue. Not all beers can be on together due to limited stillage space, so please refer to the labels on the casks for what is available when you visit. To view a live beer list on your phone, please visit pigs.realaledb.com. Our Cellar Team and Bar Managers will ensure that as soon as a beer is in best condition it will be on sale, and of course replace beers that have sold out with new beers as quickly as possible.
A suggestion for anyone new to the festival, the strength (ABV%) of the beers varies considerably. If you are in for a session, we suggest you start with the lower strength beers first. That way you can appreciate their subtle flavours more, starting with the strongest beers could have quite an impact on your ability to walk, or even think! TAKE AWAY BRITISH BOTTLED & CANNED BEER BAR W elcome to the British Bottled & Canned Bar. This year we’re proud to offer an attractive range of beers brewed in the UK. We have a choice of the finest IPAs, stouts and even foreign style beers amongst others. Most of the beers are stonkingly strong, in the hallowed Pig’s Ear tradition of stocking imperial stouts and barley wines. All of them are bottle or can conditioned - the equivalent of ‘real ale’. The beers are unpasteurised and with enough yeast to give a flavour enhancing
secondary fermentation regardless of whether presented in a bottle or can. As our Christmas gift to you buy any 6 bottles or cans to take away and there is a discount. Please note that the list shown here is liable to change, and not all beers will be available at every session – once they are gone, they are gone!

elcome to the cider bar. Here you will find a selection of ciders and perries, all made naturally. Cider is just about the easiest drink to make. Generally speaking, in the West of England and Wales, specific cider apples are used. In other parts it is common to use a mixture of eating and cooking apples. They are crushed and the juice pressed out. It is then left and either the natural yeast in the fruit or a cultured yeast is used and with the natural sugars, will ferment until you end up with an alcoholic drink known as cider. This will usually be very dry and can then be sweetened to make a medium or sweet drink if desired. Perry,
usually made using specific perry pears, is produced in exactly the same way. A lot of the larger producers use apple concentrate instead of juice, add lots of water, colouring and flavouring, pasteurise the cider and then add gas. One thing that it isn’t is natural. The majority of ‘fruit flavoured’ ciders use concentrate or syrup and are then watered down so they pay the lowest rate of duty. They are, for duty purposes, classed as wines and not ciders.
