t might be dark outside, but here comes the sun in liquid form as once again we gather in the magnificent surroundings of Hackney’s Round Chapel for a 36th celebration of beer and cider with the East London and City branch of the Campaign for Real Ale (CAMRA). We give thanks to the Trustees and team at the Round Chapel (special thanks go to Philip Lloyd, Laurie Elks & Patrick Hamill) for allowing us to create something magical for our 10th year in residence here.

CARRY THAT WEIGHT… Not all of the casks will fit onto the racking at once, so for those with a season ticket, look out for changes as the week progresses. All beer is sorted alphabetically and you can find the beginning of the alphabet on your right as you enter the hall. Keen, John and Peter work hard to bring us the best of British, with notable specials and beers appearing in cask for the first time, using their master selection skills. For apple-heads, Mick Lewis’s cider and perry bar takes a prominent role in the centre of the room. Gazing towards distant shores, Adam Miller and the overseas bar team have a curious craft selection of draught and bottles. If that doesn’t take your fancy, they also have a limited range of wine and soft drinks.

You will need to be a CAMRA member and by joining our happy band, whilst working at the festival you receive free beer [within reason], subsidised food, and during the year a staff party/outing [to the brewery that wins beer of the festival]. BEERCARDS We are trialling contactless payment on the bars this year. Please note that not all the servers will process these. Please look for the staff with badges. Otherwise the festival is using Beercards again this year, so please note that most of the bars will not be taking cash. If not using contactless payments you must have a Beercard to buy drinks from the two UK Draught Beer Bars and the Cider Bar. You start with a £10 starter pack which includes your glass and a £7 beer token card. To pay for drinks, simply hand over your Beercard and the volunteer who serves you 4

will cross off the appropriate amount. At the end of your visit to the festival, either keep your glass or exchange it for the £3 returnable deposit at the Glasses counter. Additional Beercards cost £5/£10 and can be purchased at Glasses, Bottled and Overseas bars, Products and Games. You can pay by contactless at these locations. Any credit you do not spend can be donated to the Speaker’s Charities in the boxes provided or refunded at the Glasses counter where you can also obtain a refund on your glass. Refunds are not given at any other bar.

The Overseas Bar and Bottled Beer bar will be accepting cash payment, or you can use your Beercard if you prefer. When you come to your final drink, if you do not have enough credit left on your Beercard, you may pay the difference in change over all bars. We are using old stock so despite what is printed on the cards they are valid all sessions but PLEASE treat your Beer Card as cash – we cannot replace lost cards any more than lost fivers! Don’t leave your glass or Beer Cards unattended on the bar.

SPEAKER’S CHARITIES Since the festival moved to Hackney in 2005 Pigs Ear has supported the Speaker of Hackney’s charities. In 2018 we raised over £1000 and wish to do even better this year. Councillor Kam Adams, the Speaker of Hackney, has chosen the following as his charities for this year. SPORTING HACKNEY MIND A unique partnership between the local mental health charity, Mind in the City, Hackney and Waltham Forest, and Sporting Hackney. It focussed on improving the physical and mental welfare of residents with mental health conditions, who

Since 1981, The Ivy Street Family Centre has been offering high quality care & support to families of Hoxton. Their building needs major work to make the space safe and accessible. They are partnering with a local architect on

a redevelopment programme, which means they have relocated to The Florence Bennett Centre to allow the work to take place. P

ubs need protection as well as punters and pints. CAMRA, councils and the local community have worked hard to protect Hackney pubs. But reviewing latest local pub news reveals that Hackney pubs are still being threatened by developers. So, what’s going on? Intense commercial pressures from alternative land uses, particularly in London, and an historically weak planning system have resulted in developers regarding pubs as easy targets for demolition or conversion for years. Developers want the substantial revenues from residential land use and care much less for the modest returns from renting out a pub. The statistics speak for themselves: Pub numbers halved in the boroughs of Dagenham, Croydon, Newham and Waltham Forest between 2001 and 2016 while a third of 8

London pubs closed in the same period. The rate of closures has undoubtedly slowed substantially since the dark days of 2009 and the credit crunch when 58 pubs closed every week in England but we are by no means out of the woods. Actually, only one London borough saw an increase in pub numbers between 2001 and 2016… Welcome to Hackney! Now let’s be clear: A pub means different things to different people. CAMRA sensibly and necessarily works with a broad definition including some cocktail bars and restaurants which serve draught beer and allow space for drinkers without the need to purchase food. Crucially, Hackney is a refreshingly pro-pub part of London. Hackney’s pub-friendly reputation is typified by the high-profile cases of the Wenlock Arms and the Chesham Arms

Both were the subjects of successful pub-saving campaigns begun in 2012 in the run up to the Olympic Games and both continue to thrive as archetypal neighbourhood locals. The Chesham Arms is just five minutes walk south from the Round Chapel, with the Wenlock Arms easily accessible via public transport and very worthy of a visit. Both pubs would have been lost to luxury flats had the Council not intervened and pulled out quite a number of planning stops. For this action, pub lovers will remain eternally grateful. CAMRA continues to lead campaigns from local to national level, celebrating and campaigning hard for the Great British Pub. Persuading those in authority why

the owners, Wellington Pub Co, decided not to renew the lease and the majority of the pub is being converted into flats leaving a small bar of an unspecified format which remains to be seen. Currently the internal demolition works are underway (see photos) but, at best, the Windsor Castle will be significantly weakened and, at worst, we will never see a pub return to that site. This scepticism is unfortunately the result of real local experience. The ‘Trojan Horse’ approach used when developers come to destroy or convert our pubs with promises to “provide a new pub in the ground floor of the new development” is best demonstrated by the case of the Hospital Tavern. This pub is a very short walk from the

The Mayor of London’s recently committed publicly to tackling the loss of precious community pubs across the capital and the draft New London Plan is specifically designed to help strengthen and embolden London boroughs to resist pub loss. But let us have a look at what has been happening in the overtly pro-pub borough of Hackney since last year’s Pigs Ear festival… The Round Chapel’s closest pub was the Windsor Castle. Visitors may notice that it has sadly closed since the last festival. This pub changed hands in 2013 when it was refurbished and relaunched by expert operators. It had established itself as a popular stop on the Clapton circuit but alas

Round Chapel on Homerton Row, opposite Homerton University Hospital. Originally known as the Welsh Harp, Hackney Council granted permission way back in 2010 for the pub to be demolished and replaced with a block of flats on the proviso that a new pub would be created in the new development. Almost ten years later the flats have all been sold but there is no sign of any pub (see photos). And there is unlikely to be. Bizarrely, the Council granted THE THIRTY SIXTH PIGS EAR BEER FESTIVAL

permission for this self-evident ‘Trojan Horse’ attack on a thriving community pub when they had very strong grounds to refuse it. And this is precisely why CAMRA and others have been fighting for many years for the adoption and enforcement

of stronger planning policies. Unless there is real intrinsic heritage value, the Council planners regard a modern replacement as equivalent in planning terms to a known and loved historic building. Developers tick boxes and Council planners need to wise

up and see through these scams, which is precisely what they are, as the photograph of the replacement building demonstrates. Trojan Horse attacks on pubs are specifically mentioned in the New London Plan as a developer tactic to destroy pubs and they’re happening here. Further West, in trendy Haggerston, another much 10

No.36 | PUB PROTECTION loved Wellington Pub Co pub, the Fox, was closed when the freeholder terminated the existing agreement with the operator, who was deeply upset at losing their thriving business, for the purpose of…. yes, you’ve guessed it, more flats! Its a familiar pattern with two examples in the space of a year from the same freeholder in the same borough. What is so alarming is that the Council is granting consent to these schemes, and in all probability sealing the fate of these pubs forever. There was a definite feeling in 2015 around the time of the much-acclaimed relaunch of the Chesham Arms, that Hackney had turned a corner. The Council had come to realise the importance of pubs and they had demonstrated their willingness to save them. Attempts to demolish the former Truman’s Prince Edward on Wick Road were robustly refused on the grounds of saving the pub. However, this tremendous work was recently partially undone by another peculiar Council decision: to allow both the conversion to flats of the upper floors and more flats to replace the back yard. Outdoor space is at such a premium in London that the loss of such an essential feature as the back yard is particularly

Inspectors and other key stakeholders fail to notice until the pub is gone for good and the developer has won. Thankfully, the Council accepted CAMRA’s suggestion to include a planning condition insisting that the Prince Edward is occupied and trading before the flats above can be occupied. We must now ensure that it is enforced. Perhaps the saddest recent pub story in Hackney comes from the ill-fated Acorn in Haggerston (a part of the borough with an under provision of pubs). The Acorn sits neatly between bustling Broadway Market and Hoxton Market, on the junction of Whiston Road and Queensbridge Road. Many pubs have been lost from that area in recent years including the Old King John’s Castle and the Belgrave Arms. The Acorn is a most attractive pub and several of the top operators had expressed an interest in taking it on. Unfortunately, it had fallen into the hands of a development company who have a track record of destroying pubs in London with over thirty conversions or demolitions to its name. Although Hackney Council originally refused planning permission for demolition and granted the pub Asset of Community Value (ACV) status in 2017, the ACV was challenged

regrettable for any aspiring pub operator. It is disappointing that, having drawn a line on demolition and total conversion involving overt loss of the pub, the Council now seems to be acquiescing on Trojan Horse attacks and being far too ready to swallow the familiar developer lines of “we will build a pub, just trust us”. Planning

by vexatious lawyers and overturned on a technicality. To add insult to injury, the Planning Inspector then overturned the Council planning refusal and allowed demolition. And so in spite of solid efforts all round, the Victorian Acorn (see photo) will shortly be knocked down and replaced with more identikit glass and steel flats. W

ith well over 7,500 different real ales available in the UK, from more than 1,750 breweries, real ale is a very diverse product. There is a beer out there to suit everyone’s palate. Here is a quick guide to some different beer styles.

BITTER

Bitters developed towards the end of the 19th century as beers that could be served after only a few days storage in the pub cellar. Bitters were a successor to pale ale and were usually deep bronze to copper in colour due to the use of slightly darker crystal malts. These are highly hopped ales, ranging from 3% ABV to around 5% or more ABV (ABV means alcohol by volume). Best Bitters and Premium Bitters tend to have higher alcohol content.

MILD

An ale of low gravity and hop rate, hence rounder and distinctly less bitter on the palate and in aroma than more highly hopped bitters. Mild is usually (but not always) darker in colour than bitter, through use of a higher roast malt or caramel. There are considerable variations in mild styles.

PORTER & STOUT

Porter is a dark, slightly sweeter but ‘hoppy’ ale, made with roasted barley. It was the successor of ‘entire’ and the predecessor of stout. Originated in London around 1730, by the end of the 18th century it was the most popular beer in England. The fashion for the pale ales of Burtonupon-Trent ended the popularity of Porter in the mid 19th century. In recent years many brewers have revived Porter. Stout is one of the classic types of ale. Usually a very dark, heavy, well-hopped bitter ale, with dry palate, thick creamy head, and good grainy taste thanks to the use of dark roasted barley in the mash.

GOLDEN ALES

Pale amber, gold, yellow or strawcoloured; golden ales are hoppy beers 12

with a refreshing taste. They may have some malt or fruit flavour but any diacetyl (a butterscotch flavour) should be minimal.

PALE ALE AND IPA

India Pale Ale (IPA) changed the face of brewing early in the 19th century. First brewed in London and Burton-uponTrent for a national market and export, IPAs were strong in alcohol and high in hops, with a significant sulphur nose. They kept well. Beers with less alcohol and hops were developed for the domestic market and were known as Pale Ale.

OLD ALE

Old Ales reflect the beers available before brewing restrictions were introduced in the First World War. Contrary to expectation, they do not have to be especially strong; they can be 4% ABV or more. Old Ale can be full of complex flavours, rich fruity malts, tart fruit and spicy hop notes. Darker versions will have a more profound malt character with powerful hints of roasted grain, dark fruit, polished leather, and fresh tobacco. The hallmark of the style remains a lengthy period of maturation during which complex flavours develop.

BARLEY WINE

Barley Wine is a strong beer, often between 7% and 10% - and requires considerable time to mature and become drinkable. A few family brewers have kept the traditional brew, often as a Christmas Ale, and many small brewers now produce their own interpretation of the style. Expect massive sweet malt, ripe fruit, pear drop, orange and lemon flavours; with darker fruits, chocolate and coffee if darker malts are used. Hop rates are generous and produce bitterness and peppery, grassy and floral notes.

SPECIALITY BEERS

Embrace all types of beer that contain a non-core brewing ingredient intended to impart a distinctive and discernible


No.36 | BEER STYLE & SUBSTANCE flavour or character. Examples could be ginger, honey, various fruits, etc. Also: wheat beers, and traditional lager. A recent trend is to use smoked malt, a distinctive taste, not enjoyed by everyone.

BOTTLE CONDITIONED BEER

This is real ale in a bottle and the bottled equivalent of the draught real ales you enjoy in the pub. The beer is NOT pasteurised and contains yeast and enough fermentable sugars to allow for a slow secondary fermentation in the bottle. To distinguish this from pasteurised bottled ales, many bottle conditioned beers include the logo ‘CAMRA says this is Real Ale’ on the bottle label.

KEYKEG BEER

A KeyKeg is a single use plastic container with the beer “bagged” inside it. The KeyKeg beers we have at the Festival are unpasteurised and unfiltered; and are dispensed using air pressure only. As with bottle conditioned beer, secondary fermentation takes place within the KeyKeg, so from a CAMRA perspective the beer is Real Ale. Our KeyKeg beers are dispensed via Kegerator machines, served chilled and tend to be lively - give them a try - let us know your verdict.

UNFINED BEER

For centuries cask beers have had isinglass finings (made from the swim bladders of fish) added to help clear the beer. Unfined beers do not have this addition, and as a result can be naturally hazy. Not all unfined beers are vegan friendly beers however, some may contain other non-vegan additions: lactose, or honey for example.

We know you like to try something different each year, so we look across the length and breadth of Britain to showcase the smaller micro-breweries, as well as our wonderful breweries in East London. Our thanks to suppliers Avalon Wholesale and Kinver; they help us source the beers from further afield and are an essential part of our team. Our thanks also to those breweries that don’t usually produce cask ale, but who have agreed to do so for this festival. For fans of the “Dark Side”, have no fear! We have ordered just as many dark

and delicious beers as always, but you will find them located by their brewery name. All our UK KeyKeg beers are located on one bar (next to the Foreign Beer bar). Not all beers can be on together due to limited stillage space, so please refer to the labels on the casks for what is available when you visit. Our Cellar Team and Bar Managers will ensure that as soon as a beer is in best condition it will be on sale, and of course replace beers that have sold out with new beers as quickly as possible. A suggestion for anyone new to the festival: the strength (ABV%) of the beers varies considerably. If you are in for a session, we suggest you start with the lower strength beers first. That way you can appreciate their subtle flavours more, starting with the strongest beers could have quite an impact on your ability to walk, or even think! elcome to the cider bar. Here you will find what is probably the largest selection of unpasteurised real ciders and perries in east London. Real cider is one of the easiest drinks to produce. In the West Country and Wales cider apples are used. They are grown specifically for making cider. The apples are pulped, and then the juice is pressed out. Wild yeast that is on the skins and in the flesh starts fermenting the liquid and sometime later it’s turned into cider. At this point it will be very dry, so a sweetener is added if you want to make a medium or sweet drink. In the east of England and other areas of the UK, cider is normally made using a mixture of eating and cooking apples, giving a different style of drink altogether. The majority of the fizzy, keg ciders still found in pubs are often made with apple concentrate, lots of water, flavouring and colouring, then pasteurised and gas added. They have no similarity to real cider whatsoever! Perry, the sister drink to cider, is made in exactly the same way, using specific

perry pears, grown just for this purpose. Pear cider, a marketing name only, is quite often only cider with pear flavouring added. In my opinion, a complete con and nothing like perry at all. Unfortunately, a lot of producers now supply their cider in bag in boxes and their ciders are usually pasteurised. There are now pubs in London that have a big range of cider, and even cider bars who only sell cider. But most, if not all of the ciders sold at these venues are pasteurised and it is impossible for the customer to know whether they are pasteurised or not. Even asking the staff will often not help, as a lot of the time they don’t know either. So, if you have not tried real, unpasteurised cider or perry, why not give it a try. SEIDR O SIR Betwys Diserth, Radnorshire Producer who started in 2000.

UPPER HOUSE Wormlow Tump, Herefordshire Local producer.

VENTON Clyst St Lawrence, Devon Producer whose cider was made by pressing through straw, but less is done like this now. We will have a cider called Sweet Maid of Devon.

VILLAGE GREEN Turners Hill, W. Sussex

DUCKCHICKEN Furzedown, London, SW16 Small south London producer, we will have a cider called Gigglejuice made from Bramley and Russet apples.

Local producer normally using eaters and cookers. Unusual for this area, this cider has been made from cider apples.

GREYFIELDS High Littleton, Somerset

Started in 2000 with an orchard they rented for their horses.

A last chance to try this cider, as the producer died earlier this year.

HARTLAND Tirley, Gloucestershire Started by Derek Hartland’s father, their cider has won many CAMRA awards.

WEST MILTON West Milton, Dorset

WILKINS Mudgley, Somerset. Very well-known producer, we hope to have a single variety cider made from Morgan Sweet cider apples.

Producer unusually in the centre of a town. We should have a single variety cider made with Kingston Black cider apples.

KING BRAIN Little Weston, Somerset Cider has been made at the farm for at least five generations. We hope to have a single variety cider made from Chisel Jersey cider apples.
