A

s I was writing this year’s salute to Grassroots Heroes – our seventh so far – I couldn’t help but marvel once again at the number of people in our midst who do so much to make a difference in our communities. And, as often happens with me, I found myself wondering why. Why does Southern Georgian Bay have such a high percentage of people who give of their time, talent and expertise to make life better for all of us? The knee-jerk answer might appear to be, “because this is a retirement community.” Retired people need something to do, so they turn to volunteerism to ease the boredom, right? But that simplistic explanation doesn’t go nearly far enough. Nor does it account for the number of Grassroots Heroes who are business owners and working professionals. If people were merely looking for something to do with their spare time, there are lots of other, more selfish and less stressful pursuits they could choose than spending hours upon hours working toward a cause. And then the answer dawned on me: it’s about attraction. Our region, with its four-season recreational activities, attracts people who are active, social and community minded. They may come here initially for the skiing, golf, or hiking, but once here, they develop a deep connection to our area, which fosters a strong desire to give back. A case in point from this year’s crop of Grassroots Heroes is Joe Hayward, an avid skier who fell in love with our waterfront. When he noticed that Georgian Bay water levels were dropping alarmingly, he got involved, became informed, and spread the word. Another example is Stewart Hilts, who 20 years ago as a University of Guelph professor, started bringing students here to hike the Bruce Trail, discover its natural wonders, and learn about land stewardship. A passion for the trail system was born, and today in his retirement Hilts shares his vast expertise to ensure that the trails are managed and maintained for the enjoyment of many future generations. Then there’s David and Joan Black, who came to the Creemore area

Why does Southern Georgian Bay have such a high percentage of people who give of their time, talent and expertise to make life better for all of us? 30 years ago as weekend skiers, then took up golf, moved to the village full-time … and gave the village its literal and figurative heart. It was our area’s burgeoning arts community that attracted Rick and Anke Lex many years back, and they have almost single-handedly created a thriving arts and cultural centre in downtown Collingwood. The rest of our heroes were initially attracted for a variety of reasons, but they weren’t content to just enjoy this fabulous area – they rolled up their sleeves to make it better. From Laurie Copeland mounting a wildly successful children’s festival, to Sheri Bulfon providing much-needed support to parents of children with autistic spectrum disorders, to Sylvia Bray using her Wasaga Beach treats business to raise funds for charity, to Rebecca Wall championing the establishment of a hospice home for those at the end of their lives, our local heroes have a hand in ensuring that people at every age and stage are able to live vibrantly, happily and with dignity. The Law of Attraction holds that what we focus on, expands. We are so fortunate to have in our communities people who focus on making Southern Georgian Bay an even better place to live, work and play. ❧

the St. Clair River, which have increased the outflow. There is an outstanding U.S./Canada agreement to place compensation structures in the St. Clair River. Besides the legal obligations to do so, there is the moral obligation to prevent further loss of the mainly finite waters in the Great Lakes. ROWI is a growing organization of mainly U.S. groups that want the water levels restored. Eventually we hope to have stakeholder representation from all U.S. Great Lakes states. We started in Ontario and we will keep going until the job is done. We have had recent meetings in Washington to get through to the complex U.S. agencies and Congressional offices and the White House. Yes We Can do this for the sake of our grandchildren and the wetlands that our fish so badly need. We need everyone to help. We urge your readers to visit www.restoreourwater.com. One thing the article was missing was the simple statement of fact: is the water dropping in the lake? The answer this year is no. We are this week 22cm above the levels of last year. This fact, easily obtained, was, I feel, omitted from the article for the simple reason that it does not help the cause. Indeed, water levels have been this low before in Lake Huron – in the early 1960s – another fact not presented in the article.

That water levels are up is not a reason to sit back and relax, but it does mean that it’s not as bad as everyone thought 12 months ago, when Stop The Drop and other organizations got going. Ignoring facts in this case makes both the writer of the story and Colin Dobell, director of Stop The Drop, appear more alarmist and less credible. If levels go up for the next two years, it will be hard to be taken seriously. Yet overall levels are dropping slowly. There are 5,000-year-old shorelines that prove that fact. tom Andersen, PhD, meaford Editor’s Note: As both the writer of the story and the editor of On The Bay, I stand by our story in its entirety, as does On The Bay’s publisher, Jeffrey Shearer. It is true that our water levels did rise last spring due to above-average precipitation and runoff (particularly from Muskoka lakes flooding). Since August, Lake Superior levels have been very close to their long-term averages, which means Superior is discharging more water into Lakes Michigan and Huron – another significant contributor to the rise. However, the new 2014 Lake Superior regulation plan will not allow that discharge to continue. Experts agree that we need to look at the longer-term and overall Michigan-Huron levels, which are falling. The only other times when levels were this low was when the navigation channels were deepened by dredging. Regardless of what is happening in the St Clair River, the impacts of climate change mean we need to be able to retain water in all of the Great Lakes, not just Superior, Erie and Ontario. The letter below helps clarify and put the issue into perspective. Thank you for publishing the article entitled, “Water Levels 2.0” in the most recent edition of your publication. It is important that the public remains

engaged on this important issue and in turn keeps their elected officials engaged. According to the United States Army Corps of Engineers weekly Great Lakes Water Level Update for November 29, 2013, Michigan-Huron is underperforming all the other Great Lakes with regard to lower water levels and less benefit from the wet weather this spring and summer. While the whole Great Lakes system has experienced relief from the extreme, and in some cases record, low water levels recorded at the start of 2013, the middle Lakes of Michigan and Huron (to which Georgian Bay is attached) continue to underperform the rest. Michigan-Huron are 14 inches below their long-term average water levels while the other Lakes are just below or only slightly above their long-term averages. There is clearly a fundamental issue that needs to be addressed to help return Michigan-Huron to a healthy historic range of water levels. To this end, the Georgian Bay Association has recently written to our federal government pointing out that it has been over seven months since the International Joint Commission provided the governments their advice that they authorize and fund “further investigation of structural options to restore water levels in Lakes Michigan-Huron ...” We encourage all concerned citizens to contact their federal representative to express their desire for action from the Canadian (and U.S.) government. Along with the studios, the halls in the former hotel act as gallery space, making the building one of the area’s most unique arts experiences. Together with the arts and culture across the street at 65 Simcoe, which includes theatre, dance, and visual arts, the area is quickly becoming a creatively infused neighbourhood. (As an aside, please note that the Waterfront Gallery closed about a year ago and Michelle Clarkson has been relocated to the Tremont since.) This Old hOuse True confessions from the 9th Concession

remember the first day I saw my house. It was early spring and a grey mist hung over the land. The house stood, gaunt and lonely, in an abandoned apple orchard, balanced uneasily on a crumbling stone foundation. The windows had been shot out and the weathered wood siding had the sheen of a rail fence. It looked like the last hideout of Jesse James and Cole Younger. I walked through the open door and thought how apt the real estate description had been: “This listing will not last.” There was a cow standing in the kitchen. When I signed the papers, I took on a life’s work that has been every bit as demanding as marriage and children. For if you live in an old farmhouse long enough, it becomes an extension of your own body. You hear every pop and gurgle it makes. Wives and children will eventually find ways to distract themselves, but the house remains a jealous mistress and will not be ignored. There is a sturdy myth out there that the human body works away quietly, replacing bone and tissue with new material until, after seven years, we are completely renewed. Strictly speaking, this is not true. A scientist will tell you that the body is constantly renovating and rebuilding, but to say the job is finished every seven years overlooks the fact that some cells in the heart muscle and neurons in the brain can live for a hundred years and more. That’s how I look at this house. I can point to the multitude of improvements I have made since 1978. In fact, the only traces of the original house still visible to the naked eye are the pine floorboards in the kitchen and the kids’ rooms upstairs. Everything else is pretty new, historically speaking. But it doesn’t feel new at all. Whenever I rip off a section of drywall or crumbling tile, I find the rough-sawn timbers that were carted up the Jardine Sideroad from the lumber mill on the Pretty River by Peter Currie in the summer of 1880 and the lines and squiggly calculations he drew on them in pencil.

It must have been a big deal for Peter, for he was moving his wife Ellen and his young family out of the log shanty that used to sit where my raspberries grow now. Ellen’s father, a Glen Isla Scot and one of the first settlers in Duntroon, threw that up in 1835. Peter was named after his uncle, who was tragically killed in the first year of settlement by a falling tree. I assume Peter located his new frame house a hundred yards north of the cabin to get out of the path of the 10-foot snow drift that settles on my raspberry patch without fail every year. Ellen’s wild roses still blossom there every year, as do the Spiraea bushes that Peter’s son James planted in the 1940s on the edge of the yard. I lifted Peter’s house off the old foundation with a crane and planted it on concrete blocks farther back from the road, next to James’ spiraeas. There is one stubborn neuron in this neighbourhood’s collective brain that will not die and it makes people refer to my house as The Old Currie Place. James died in 1965, the house stood empty until I bought it in 1978, and I have now owned it for 35 years. But even I still call it The Old Currie Place when I’m giving directions to an older resident. We all leave our marks on a place but we never know which of those marks will still be there a century after we’re gone. A frame house doesn’t last forever, especially in a neighbourhood where venture capitalists come to retire, raze everything to the ground and build new. My legacy may be something as simple as the wall I built with stones from the old house foundation. Anyone who tries to move that is going to need deep pockets because it has a concrete footing the size of an underground car park. But you never know, maybe the last surviving neuron in the community memory will be the one that finally calls this property The Old Needles Place. ❧

Collingwood’s downtown

has become a thriving centre of arts, culture and heritage, thanks largely to the tireless efforts of Richard and Anke Lex. Rick, former president of the Architectural Conservancy of Ontario’s Collingwood branch, and Anke, a local artist, have long championed heritage restoration, arts and culture in Collingwood. When they purchased the decrepit Tremont Hotel from the town in 2009, few could envision that it would become the cornerstone and catalyst for transforming Simcoe Street from a neglected side street into the town’s creative hub. Without grants or subsidies, the Lexes meticulously restored and refurbished the historic Tremont to house a café/restaurant, an art school (now a music school), and nine studio galleries featuring 14 local artists. “These older buildings definitely act as incubators for artists,” explains Rick. “Artists wouldn’t be able to afford space in a fancy new building. We had restored a couple of other buildings on Hurontario Street and put galleries in them, so we knew that artists like to be together

while being able to put their own stamp on their space.” The project was such a success, the couple expanded their vision. They purchased a boarded-up building across the street at 65 Simcoe, and once again set about creating usable and affordable spaces for local business and culture. The former dilapidated duplex is now home to Theatre Collingwood’s production centre and box office, the Enterprise-Bulletin newspaper, a spinning and knitting shop, a dance studio, a naturopathic doctor’s office, and a funky fair trade coffee shop. Anchored by the Collingwood Museum and the new library, the revitalized area now boasts more than 25 small, independent, creative and culinary businesses, earning the Lexes the affectionate nickname, ‘Saviours of Simcoe Street.’ “It turned out a lot better than we had even hoped,” enthuses Anke, adding, “It’s been a privilege. There is such a strong arts community in our area, it’s a pleasure to be able to support it.” With this vibrant cultural oasis now the linchpin in a flourishing downtown core, the pleasure is all ours.

– it’s a devastating diagnosis that can leave parents feeling overwhelmed, isolated, terrified and alone. Thankfully, there is a beacon of hope for local families of ASD children. Her name is Sheri Bulfon. “Support is what’s most important,” says Bulfon, whose son, Andrew, now 19, was diagnosed with severe autism at age four and is non verbal. “It’s about offering hope; sharing information on what’s new, what’s out there. It’s really awful when you get the diagnosis. It’s like, ‘now what?’” Helping families answer that question has become Bulfon’s life mission. After attending an ASD group in Barrie for years, Bulfon decided it was high time area families had a resource closer to home. More than 40 families of children on the autism spectrum can now meet monthly at the Collingwood YMCA to share information and support. Bulfon also brings in guest speakers, including experts and specialists such as speech therapists and behavioural therapists, many of whom often have long waiting lists that keep them out of reach, particularly for families dealing with a recent diagnosis. Parents of many ASD kids must provide round-the-clock care, as children on the autism spectrum often don’t keep a regular schedule. So Bulfon

has put together a list of capable people who understand the issues and can babysit or take a teenager out for an evening to give parents a much-needed break. Bulfon keeps in touch with ‘her families’ through regular email blasts detailing the latest research, telling stories of hope, or extending an invitation. ASD behaviours can make it difficult to socialize as a family, and Bulfon offers regular opportunities to share the larger world through special events, perhaps a film, a skating or tobogganing outing, or a swim for kids with challenges. Recognizing that dads need support, too, Bulfon recently organized pizza and beer evenings for fathers of ASD children to interact. As if all this weren’t enough, Bulfon also uses her outreach and organizational skills to raise funds for the cause. A singer in a local band called Highway 26, she recently held a Rockin’ for Autism event that raised $5,000 for Autism Ontario’s Simcoe County chapter. “We were sold out a month before the event,” she says. “The donations poured in. I could cry.” True to form, she is already planning Rockin’ for Autism 2014, to be held October 4 at the Collingwood Legion. Bulfon will be front and centre, singing her heart out for children with ASDs and the families who love and care for them.

“There are water wars coming,”

says Joe Hayward, “and they’re going to be bigger than the oil wars.” That concern has spurred Hayward into action over the past several years, getting the word out in Southern Georgian Bay that we have a duty to fight to restore our water levels. From his home on the water in Craigleith, Hayward has seen first-hand how dredging and erosion in the St. Clair River has drained our water from Georgian Bay. While others were still citing “normal fluctuation cycles,” Hayward could see that there was nothing normal about the record-low water levels. “Back in 2003, I could see there was something wrong with the levels. I had never seen the Bay act like that – it didn’t seem right.” He connected with Mary Muter, then the Georgian Baykeeper for the Georgian Bay Association, and has supported Muter’s efforts locally ever since. In 2004, he publicized and held a meeting in Collingwood at the Gayety Theatre. “I got about 90 people to come out, and quickly found out that nobody on this side of the Bay knew anything about water levels; no one was concerned about water levels.”

He started going on radio talk shows, writing letters to local newspapers, and doing whatever he could to raise the alarm. He’s now a member of Restore Our Water International (ROWI), of which Muter is vice chair, and he was instrumental in publicizing and organizing a series of public meetings throughout our area last summer in which ROWI explained its efforts to restore water levels lost through dredging and erosion in the St. Clair River. Hayward continues to support ROWI’s efforts and to educate the public locally. His overriding message is simple: “We are the custodians of this amazing resource, and it’s being lost under our stewardship.” After almost a decade of frustration born of apathy, Hayward is optimistic that there is finally some traction on the issue. However, he warns, “We need to really be careful to keep pushing, to keep people’s focus on this. There are challenges coming that we don’t know about yet, so as custodians of the lakes, we need to be vigilant.” Why does he continue to soldier on? “I’m not in this for positions or glory or whatever; I’m in this to save this wonderful lake of ours.”

Bray is former secretary and incoming president of the Wasaga Beach Rotary chapter, and for the past three years has opened her store, Grandma’s Beach Treats, to Rotarians for the annual Popcorn for Polio fundraiser. “We all get together and pop and bag popcorn at Grandma’s Beach Treats, then sell the sleeves of popcorn all over town for a $5 donation,” she explains. Environmental stewardship

has been Stewart Hilts’ life work, and now, in retirement, he’s using his significant expertise to protect, conserve and expand our Bruce Trail. For 31 years, Hilts was an award-winning professor in the University of Guelph’s Department of Land Resource Science, serving as chair of that department for seven of those years and a former director of the university’s Centre for Land & Water Stewardship. He is chair of the Ontario Farmland Trust, which he established in 2001 to promote the conservation of farmland for farming in Southern Ontario. He has written numerous books and publications on natural heritage protection, conservation, land stewardship, pond and woodlot management, and has conducted stewardship workshops across the country. Hilts now volunteers his extensive knowledge to the Beaver Valley Bruce Trail Club, as the club’s land stewardship director, making sure that newly purchased properties are managed sustainably. “You have to be fairly careful with how you route the trail to make sure that it’s not having an impact in terms of erosion and other factors,” he explains. “Once a property is actually owned, I get involved, to make sure it’s cleaned up and cared for. We need

to take all that science about how to care for land and make sure that when we purchase a property for a trail corridor, we’re also looking after that land – making sure that we’re managing it with care. To celebrate this year’s 50th anniversary of the Bruce Trail Club, Hilts also invented the Anniversary Challenge to celebrate the conservation side of the club’s important work. “We do 12 short hikes to specific sites and identify features, helping people appreciate what we’re protecting through the stewardship program,” explains Hilts. “I also promote the idea of slowpoke nature walks, where you go really slowly and stop and look at everything and understand what you’re seeing – wildflowers, ferns, trees, geology. It’s great for people who need to go slower, or who just want to take some time to really understand what we’re protecting.” Hilts is quick to point out that he is just one of an army of volunteers who preserve, protect and care for our local Bruce Trail system. “I’m a relatively new volunteer and it’s absolutely amazing to me when you see the volunteers who have been involved for 20 or 30 years and the work that they’ve done,” he marvels. “It’s very inspiring to be part of that group and join the effort.”

is such a four-season playground for adults, it can be easy to forget that there are children in our midst. Laurie Copeland is making sure that children of all ages get a chance to play, with her wildly successful Creemore Children’s Festival. The biennial festival in downtown Creemore offers free, fun, grassroots activities for children and families. The 2013 festival, held in August, drew close to 7,000 people, doubling the attendance of the first event held in 2011. Copeland, owner of Creemore children’s store Cardboard Castles, says her vision for the festival is “to offer families a unique, creative and thoughtful event that is free of charge. By enlisting the talents of local artists and family enthusiasts, we are able to bring together volunteer-driven activities, sponsored live performances and professional demonstrations and workshops. We try to get back to some of the real basics of play and pure, physical, old-fashioned fun.” This year’s extravaganza featured a dress-up booth, bubble-blowing booth, drumming and percussion booth,

arts and crafts galore, musical performances, a magic show, ‘mad science’ demonstrations, and even brought in construction, farm and fire vehicles for children to explore. “We had all these wide-eyed children, but also wide-eyed adults,” laughs Copeland, adding, “We’re not only inviting children to participate; we’re inviting people to let the child within come out to play and explore. It’s about people coming together to celebrate childhood.” The next Creemore Children’s Festival will be held in Summer, 2015, if not before – Copeland says there is talk of making it an annual event. “There’s nothing like this in our area – nothing that’s just about kids.” In addition to being the driving force behind the Children’s Festival, Copeland is also chair of Ray’s Place, Creemore’s youth resource centre. “Children are at the core of what I do, what I believe in, and what I wish to inspire,” she says. “It all comes down to a shared passion for youth and a belief in the generous spirit that children encourage.”

and the thread that runs through the fabric of Creemore always comes back to one dynamic couple: David and Joan Black. The Blacks have had a hand in most of the village’s major milestones over the past 20-plus years, from reviving the Purple Hills Arts & Heritage Society in the mid-’90s and reorganizing the financial structure of the Creemore Curling Club, to supporting Creemore’s Log Cabin and Medical Centre projects. But perhaps their greatest accomplishment for the village was the creation of The Station on the Green – a multi-purpose activity/event centre and community focal point that has become the heart and soul of Creemore. “Some of the people I was working with on Purple Hills had this idea of a Millennium Project, somewhat focused on building a replica of the old train station,” recalls David. “We applied for some grant money and didn’t get it, but by then we were committed to the idea.” David became chair of the effort, and over the next four years the Blacks and a committee of like-minded Creemorites “literally begged, borrowed and stole” to make the Station on the Green a reality. (“Well, maybe we didn’t steal,” laughs David. “But we probably would have, if it had come to that.”). Committee meetings were held at the Black’s farmhouse, with Joan’s home-made chocolate chip cookies as the highlight of every meeting.

“The committee was exceptional,” says David. With $400,000 in financial donations and hundreds of thousands more in donated materials, supplies, services and workmanship, The Station on the Green was valued at close to $1 million when it was finally unveiled in 2002. Since then, “The Station,” as it’s now known locally, has been at the heart of every major community event, festival, or gathering. “When we go to any event at The Station and we see how widely it’s used for so many different purposes, we really just kind of grin and say, ‘this wasn’t a bad idea,’” chuckles David. While they play down their indelible impact on the community, the Blacks say their “true cause” has been their financial support of the Collingwood General & Marine Hospital. “We’re just very close to it,” says Joan “It’s something that will help everyone.” Explains David, “We had the greatest admiration and respect for our doctor, Scott Houston, and we wanted to do something to show Scott how much we appreciated his services.” “We asked him and he said, ‘give to the hospital.’ Over the next 16 years we made significant donations every year.” The Blacks recently left Creemore for “the next stage of life” closer to their children in Toronto. They were sad to leave a whole town full of friends, but their lasting legacies to Creemore – and indeed, to the entire region – will be felt for years to come.

“It’s been a big dream and a long journey,”

says Rebecca Wall of the establishment of a hospice home in Southern Georgian Bay. Our new end-of-life care home, to be called Campbell House, has already broken ground and is slated to open next summer, thanks largely to Wall’s hard work and dedication. Located behind Collingwood’s Sunset Manor nursing home and close to the General & Marine Hospital, Campbell House will initially provide six palliative care beds for those at the end of life who can no longer stay at home, but also don’t want or need to be hospitalized. The plan is to expand to 10 beds down the road. “It is so exciting,” says Wall, herself a registered nurse. “We’re really focusing on maintaining a home-like atmosphere. There will be professional care there, but the atmosphere is going to be as homelike as possible.” Wall has been involved with Hospice Georgian Triangle (HGT) since its inception in 1987. “I was on that first board, and even back then we said that what we really wanted was a hospice home.” While

It should be the same at the end of life – you should be able to choose where you want to be and who you want to be with you.” Wall, now pastchair of HGT, credits many other volunteers, as well as donors and service clubs, for “easing the dream forward each year … I have just been the lucky one to be sitting in the driver’s seat when it all came to fruition.” Southern Georgian Bay’s aging demographic means Campbell House will be able to provide a much-needed service to our community. “It’s a fact of life – we’re all going to die, and we should all have some dignity and comfort at the end.”

A

blanket of freshly fallen snow greets me as I snowshoe my way to the base of Metcalfe Rock. It’s cold today, nearly -20˚C, and my breath is freezing on my eyelashes. I’ve got my daypack loaded with water and snacks, and I’m all layered up in typical Canadian winter fashion. The first thing I notice, as I make my way to the top of the Escarpment along the Bruce Trail, is how quiet it is. In total, I am out for over an hour, and I don’t encounter a single person. I hear birds, I see tracks, and I find evidence of some huge wild turkeys, but aside from the wildlife, I’m enjoying this beautiful Metcalfe morning on my own. It’s not hard to see why Metcalfe Rock and the Kolapore Uplands have found a special place in many people’s lives. Although a popular hiking, biking and rock-climbing spot, fewer venture here during the winter months.

Into the Deep

After my silent snowshoe excursion, my next winter visit to Metcalfe is a totally different experience. We meet our guide, Jennie Elmslie of Free Spirit Tours, in the parking lot and she helps us suit up with snowshoes, helmets and headlamps. There’s less silence and more laughter this time. Elmslie is ready to share her love of this place on our guided winter caving adventure. Elmslie has made Metcalfe Rock her ‘office’ for years. Between leading rock-climbing and caving tours in the summer to spending her winters guiding snowshoe and caving experiences, you’ll find her at Metcalfe most days. “Every day in the winter is a little bit different,” explains Elmslie. “Some days, depending on the weather, there is a frost that will stick on the rock. That’s so beautiful. When you walk into the crevice you can’t believe it. Then the next day, that frost might be gone, but there’s been a snowfall overnight and fresh snow is clinging to the trees. Every day is unique. You never know what you’re going to get.” On this day, we get a taste of everything. While there’s fresh

snow during our snowshoe on the Metcalfe Crevice Side Trail, there’s also a thick coating of ice on the rock walls. It’s a pretty amazing sight but it also makes for a tricky entrance to the ice cave. There’s a lot of teamwork involved, as people work together to pass backpacks, offering support and extra balance. Elmslie has taken groups of all experience levels and ages (from eight years old up to 70) snowshoeing and caving at Metcalfe. Even if you’re familiar with the area, it’s a totally different landscape when the rocks are covered in snow. Having a guide in this marshmallow-laden wonderland is a wise idea. “If you’re not familiar with the area, especially with snow, there are spots with gaps and holes and cracks all over,” explains Elmslie. “It’s easy to get your foot caught. We know where all those spots are. You also have to know where you’re going in the caves. It’s really easy to get lost. We are there to help keep you safe.” Free Spirit Tours offers several winter options at Metcalfe Rock, including snowshoe tours, caving tours, and an increasingly popular snowshoe and wine-tasting option at Georgian Hills Vineyard. Pickup is available from Blue Mountain and downtown Collingwood (this is advisable, as winter parking at Metcalfe is very limited). Snowshoe and caving tours typically overlap, with groups meeting around the fire for hot apple cider after their explorations.

Cavers give an offering of white sage before descending. “You’re essentially going into Mother Earth, so it’s not to be taken lightly,” explains Elmslie. “We give an offering, we talk to the earth, and we give our respect. You don’t have to believe in anything specific, but we do say thanks to the earth for this experience. People love it.”

Into the Wild

While the Bruce Trail takes hikers and showshoers right through Metcalfe Crevice, the long-standing, much-celebrated Kolapore Trails continue beyond that. With 50 kilometres of trails spanning the Kolapore Uplands area (and extending down to the University of Toronto Outing Club cabin at the base of Metcalfe Rock), the options for cross-country skiing are amazing. Cross-country skiing on groomed and track-set trails has gained popularity in recent years, but Kolapore Wilderness Trails Association president Bruce King says the same surge hasn’t really been seen at Kolapore. This is great news for those looking for a true backcountry ski experience. Skiing at Kolapore is a unique animal … and a variable animal. King first fell in love with the area back in 1973 as a University of Toronto student. He now calls the Uplands home and has seen the Kolapore trails at their best and worst. “Skiing at Kolapore on good days can be absolutely wonderful,” explains King. “You have this beautiful powder snow, you’re there on your own and it’s great scenery with narrow trails and wonderful hills. On a good day, it’s truly wonderful … but on a bad day, it’s terrible. You really have to pick your days. The good days are fabulous, but you really shouldn’t be on the Kolapore trails on an icy day.”

Manners Snowshoe etiquette at Metcalfe Rock If you park at a trailhead for the Kolapore Trails, one of the first things you’ll notice is a ‘no snowshoeing’ sign. While snowshoeing is one of the fastest-growing winter sports, Kolapore Wilderness Trails Association president Bruce King says it’s damaging to conditions for cross-country skiers on the existing Kolapore trails. King – and his dedicated team of association volunteers – have been working hard to build a community of users and to gather input from each so that trails are built, and maintained, with several different types of users in mind. The idea of snowshoe-specific trails at Kolapore is on the association’s radar. King says anyone interested in spearheading that effort would be more than welcome to offer their input.

In the meantime, while snowshoeing is permitted on the Bruce Trail (in and out of Metcalfe Rock, across the top of the Escarpment and back out to the 10th Line via the Chuck Grant Side Trail), snowshoers are asked to stay off the Kolapore Trails. “Basically snowshoeing destroys the ski tracks,” explains King. “Because we are not groomed, we rely on the skiers to set the track. If you are the first person who skis after a heavy snowfall, it’s tough going. By the time the tenth person goes, you’ve got a nice track set and that makes for wonderful skiing. Then someone comes along and walks right down the ski track and packs it all down and you lose the track. Your skis are slithering all over and it’s not nearly as satisfactory skiing.” “Walking two inches off the track isn’t great but using the trail as a marker and keeping it in sight isn’t a concern for us,” continues King. “Also, the County Forest in Kolapore is open bush. You can walk around virtually anywhere without much difficulty. Snowshoes are for exploring; you can get off the trail and see what’s over that ridge. I love snowshoeing in Kolapore for that reason.” The Kolapore Trail system celebrates 40 years this December and with the oversight of the Kolapore Wilderness Trails Association, this sustainable, year-round, multi-use wilderness trail network will thrive for years to come.

With your map in hand, King recommends newer skiers park at one of the two south access points. Metcalfe Rock is not a recommended winter access spot, again because of limited parking. “There are easier trails there that hook into more challenging trails from the South access points,” explains King. “You’ll quickly decide if this is the right activity for you. There’s a fairly short intermediate loop, a moderate length intermediate loop and some longer loops as well. But get the map! You can’t go without it!” While there is no membership or day-use fee to use the Kolapore Trails, King encourages people to join the association, which oversees trail maintenance and planning for the trail system. King’s last piece of advice? Invest in some gaiters! “It’s the one piece of gear that people who are used to going to groomed trails don’t think about,” he says. “There’s nothing worse than getting snow in your boots and without gaiters that’s almost guaranteed at Kolapore. It may seem like old-fashioned equipment but this really is backcountry skiing.”

hen television hosts like marilyn denis or dr. oz talk up today’s trendiest diet, it’s likely not a diet in the weight loss sense, claiming to help you lose 10 pounds in 10 minutes, but rather a diet of mindful eating: watching what we eat and how we eat it. cutting out wheat and eating whole foods may help us get rid of our ‘wheat belly’, but changing what and how we eat can also help us feel more like we’re supposed to, not just lighter.

What many healthcare professionals, including naturopaths and holistic nutritionists, are advocating is a return to an approach to food that supports the way our bodies were built to eat. Some praise the Paleo diet (the ancient diet of wild plants and animals consumed by ancient hominid species), some advocate gluten-free, but essentially the gospel is the same: getting back to a more primal way of eating can help with everything from osteoarthritis to rheumatoid arthritis, fibromyalgia, allergies, digestion, fatigue, irritable bowel syndrome, Crohn’s and Colitis, bloating, fertility, even eye problems and skin irritations. “Change how you eat and you can change how you feel,” says Collingwood naturopathic doctor Aranka Jones. “Food is medicine.”

Building a connection with our food by growing a vegetable garden or getting to know local farmers can help build excitement around food and new ways to eat.

L

ifestyle medicine – using lifestyle interventions like diet, exercise, and stress management in the treatment of disease and ailments – is gaining momentum. Nutrition has become a primary lifestyle medicine in the naturopathic doctor’s tool kit, and a change in diet is prescribed more consistently than any other methodology. “In some cases it’s very simple to make drastic changes,” says Jones of adopting an attitude of awareness when it comes to what and how we eat. In Western medicine, diet is often overlooked as a primary solution. The body

is a mystery and it’s often hard to identify exactly what ails us. What we put in our bodies confounds the problem even more. For many healthcare professionals who do look at diet, it can be a real challenge to identify specific food triggers which cause discomfort. “People come to me because they react to something but don’t know what they’re reacting to,” says Regina Featherstone, a holistic nutritional consultant based in Wasaga Beach. To help solve the mystery, Featherstone’s clients fill out intensive lifestyle intake forms, often revealing hidden issues, like emotional stressors, that can affect how we feel. She then checks for food intolerances through muscle tests on over 100 foods. The problem for many people is what to do with this information once they have received it. Getting people to change their habits, especially when it comes to food, is one of the greatest challenges healthcare professionals face. Changing what we eat, how we manage our stress, even how we breathe, may be better for us than swallowing a prescription pill three times a day, but it’s a lot more difficult. For this reason Featherstone doesn’t just recommend what to eat; she advises how to eat with a weekly meal plan. “It’s not always easy to get people to change,” says Featherstone. “I had a client who didn’t want to change. He got very upset and I never thought he would come back. It seems like such a big task but people CAN change their habits.” Her client did come back, and the changes she suggested, much to his amazement, worked. Within two to three weeks, Featherstone often sees improvements in clients who follow specific dietary directions, which usually include eliminating certain foods. Elimination diets use trial and error to identify specific allergies and intolerances, most commonly gluten, dairy, egg, and soy. It could take two weeks to two months to see any change, but it’s worth it. But in specific cases, (for example if you are on blood pressure medication), it is wise to have some guidance, says Featherstone. A healthy diet of the right foods will give our bodies the nutrients they need to perform physically, maintain wellness, fight disease and feel better. “We don’t really value good quality food here,” says Featherstone, who was born and raised in Germany. “I was just in Europe and it was very inexpensive to buy a turkey breast and very expensive to buy hot dogs; it was very inexpensive to buy vegetables and very expensive to buy cereal.” Here the opposite is true. Sugary cereals are always on sale, and it costs more than a dollar to buy an Ontario apple verses 75 cents to buy a bag of chips. A lack of knowledge in the kitchen and a fast-paced lifestyle also mean it’s more likely parents will boil up pasta or order a pizza for family dinner than take the time to cook a healthy, balanced dinner from scratch. “Everything needs to be done as quickly as possible,” says Featherstone. “People have forgotten how to cook.”

Featherstone became a nutritionist after her young daughter was diagnosed with rheumatoid arthritis at one-and-a-half years old. The doctors said that by six she would be in a wheelchair. “She was 21 pounds at a year and dropped to 15 pounds at a year-and-a-half,” recalls Featherstone. “She was vomiting all the time. I did all kinds of reading and changed her diet significantly. Today she is a 16-year-old girl who can do whatever she likes, with no medications and no problems with her joints.” Featherstone has a host of ‘miracle’ stories, many of which come back to a change in diet. “I had an 83-year-old gentleman come to me with such major fatigue that he was hospitalized. We changed his diet and he is now busy in his workshop and cutting his grass.” She has even seen eye problems clear up from taking gluten out of a diet. “I’ve seen people cut down on gluten and starchy food and their vertigo goes away,” says Featherstone. “It’s just a side effect.”

ore and more, the harmful side effects of wheat, and specifically gluten, are being recognized by healthcare professionals. As a species we have only been eating wheat and other grains, as a staple in our diet, for about 10,000 years (some believe we have been consuming wild grains for much longer, 100,000 years, but still a blip on an evolutionary scale considering the earliest documented member of the genus homo first shows up 2.3 million years ago). with fertility, it should come as no surprise that marketing companies are jumping on the gluten-free band wagon. Gluten-free products are showing up everywhere. We can get gluten-free brownies, bread, pasta and potato chips. Even consumables that have always been gluten-free, like hummus, now carry gluten-free labels. “I remember doing my training and laughing a bit about the gluten-free diet being the solution to every problem,” says Aranka Jones. “It’s certainly not the solution for everything, but it can often be a part of it.” The gluten-free phenomenon has been criticized as a fad; however, it has also been proven to be a better way to eat, if you do it right. Jones recommends some guidance from a healthcare professional before embarking on any major diet shift and to not get sucked in by all the products out there. “Gluten-free products can be a big problem for a lot of people,” says Jones. “They are not as healthy as we are led to believe. A chip is still a chip, even if it’s gluten-free.” Gluten-free products and substitutes often rely heavily on highly processed grains like rice and corn, which can have a higher glycemic index than white table sugar. “The larger battle is to consume more whole foods,” says Jones. “Treat any processed food, – even if it’s gluten-free – like it’s a treat, not something you would consume on a daily basis.” Jones challenges her clients to make gluten-free brownies from scratch using nuts and seeds and no flour at all, rather than making them gluten-free with wheat substitutes.

Nature gives us what we need when we need it, says Jones. In the spring, when it is important to detox to boost vitality after a long winter, there is an abundance of greens which are good for detox. In the fall we have squash and mushrooms, foods that strengthen and modulate the immune system. “The larger problem is the grain addiction we have,” says Jones. Dealing with this addiction means changing how we look at the food we eat and how we eat it. Taking out the grain products means replacing them with more meat, seafood, vegetables, roots, and fruit; having rice instead of rolls at dinner; using a leafy green to wrap up lunch instead of a wheat tortilla; eating a hamburger without a bun but with everything else.

T

his is where Claire Shortt got stumped. “I know kale is good for me,” says Shortt. “But how do I eat kale and make it taste good?” To help bridge the gap between knowing and doing, Shortt signed up for cooking classes catering to people with food sensitivities, hosted by Aranka Jones and culinary nutritionist Jordan Swartz. “I have some health issues, but no big ones,” explains Shortt. “But I know there are so many illnesses caused by what we eat. I needed a little guidance to help me from getting sick. This is preventative for me.” She admits that many of the foods she grew up eating are simply not good choices, especially as we age. “We can’t eat like that and be healthy,” she says. “The food has changed and our lifestyle has changed; we’re way more sedentary.” For $75 each, Shortt and a class full of others have access to a naturopath and a nutritionist for two-and-a half hours in Jones’ and Swartz’ Naturopathic Kitchen. Students ask all the questions they want including why mushrooms help boost immunity and what knife to use when chopping garlic. “It is more than just the recipes,” says Shortt, adding that her grocery list has changed dramatically. However, she admits it’s been difficult. “It’s hard to go from eating a North American diet with a lot of wheat and a lot of fat and things that aren’t good for you, to a completely healthy diet,” she says.

To help clients gain control of changing diets, Jones, along with Swartz, started offering cooking classes in the spring of 2012. They run two classes a month from May through December. “I’ve always shared recipes and let people know that there are certain foods that can help certain ailments,” says Jones. “The cooking classes come from that.” Nature gives us what we need when we need it, says Jones. In the spring, when it is important to detox to boost vitality after a long winter, there is an abundance of greens which are good for detox. In the fall we have squash and mushrooms, foods that strengthen and modulate the immune system. Building a connection with our food by growing a vegetable garden or getting to know local farmers can help build excitement around food and new ways to eat, says Jones. Relying more on fresh produce and protein will help reduce our reliance on processed foods. “The more control I have over my food production, the more I enjoy it,” she says. “The more connected I become, the greater my sense of well-being.” Five years ago, Jenn Croft gave up a pension, benefits and good pay after 10 years of cooking in a long-term care facility to begin a dietary crusade that would help her constant struggle with irritable bowel syndrome (IBS) and her young son’s diagnosis of type one Diabetes and Celiac disease. Croft, a papered chef, could no longer taste the food she was preparing for others because she was gluten intolerant. “I lost my passion,” she says. “The food I was supplying didn’t make sense.” To add to her predicament, there wasn’t much on the grocery store shelves her son could eat. With her background in catering to special diets she decided to start her own business, Creative Choices, a bakery and kitchen specializing in prepared meals and bakery items for people with food intolerances. “I felt I had to do this; I couldn’t sit back and wait,” says Croft. “It’s been quite phenomenal.” In October 2012, Croft won the Meaford Dragon’s Den challenge, which resulted in community support, several connections, marketing help and a few pieces of equipment. All five judges enthusiastically bought into her idea, each contributing $500. Croft caters to everyone from infants to seniors. She has been cooking for one five-year-old client since he was a baby. Her recipes are allergen-free, not just gluten-free, cutting out egg, dairy, soy and wheat. “Someone can walk in with a food intolerance or food restrictions and I can create a menu that works for them,” explains Croft. “We offer a lot of support when you walk through the door. We have your needs on file.” Croft makes real food, not the processed alternatives that are cluttering up grocery store shelves. Switching up processed foods for whole foods, along with a commitment to moderation and diversity in our diets, will make us feel better, she says.

THINK OF IT AS STAGING YOUR HOME in the way that professional stagers get homes ready for the real estate market. Start by decluttering, to give yourself a clean slate. Put away any knickknacks or decorations that don’t suit the season. If artwork clashes with holiday décor, remove it from your walls. Then let the fun begin as you start layering all the cheerful accessories. When Cathy Lane was hired by a busy family of skiers to create a Christmas ambiance for this vast weekend home at the Georgian Bay Club, she began with a massive 16-foot Fraser fir tree. To warm the industrial-like space she picked her colour scheme of oranges and reds from the red leather furniture in the great room … the only real colour in the whole house. To make the huge tree a dazzling focal point she used 2,500 LED lights in red, orange and white.

USE THE STYLE OF YOUR HOME AS A STARTING POINT. Make the festive dÊcor match your home’s year-round style. Traditional Christmas colours may not work if your palette is made up of cooler tones of grey, mauve or pastel blues. For those hues you may want to forego the traditional red and green in favour of shine and sparkle. Add plenty of silver balls, mercury candlesticks and crystal bowls. For example, a traditional home with yellow walls and antique mahogany furniture, might clash with reds but would look amazing decorated with polished silver and gleaming crystal. A table centerpiece can be a simple rectangular glass vase filled with silver and blue balls of various sizes. Sometimes sparkle is better than colour.

STICK TO A THEME OR COLOUR SPECTRUM. Red is a traditional colour at Christmas, and for Lane it’s a frequent first choice for country houses like this one full of wood and stone. “You need big scale colour blocks as a counterpoint to the monochromatic space,” explains Lane, “I put some red in every arrangement – and then really punch it up with things like the painted red urns on the hearth.”

In Lane’s vision, every urn has room for more branches, twigs and pinecones … you really can’t overstuff.

FIRST IMPRESSIONS START OUTSIDE. There are plenty of options for making an impressive entranceway. The huge layered wreath on the wooden door of this home at the Georgian Bay Club announces both the colour scheme and the scale of what lies inside. Oversized pinecones provide a constant theme throughout the house. Any front porch can be the stage for some wintry vignettes including olden day skis, wooden snowshoes, old fashioned toboggans or twig Left and Right: the fireplace, a focal point in the vast open space, is warmed by bold bursts of red intermingled with a mix of natural flora and artificial flowers.

PAY HOMAGE TO THE SENTIMENTAL. There’s always room on the Christmas tree for ornaments that conjure up good memories. Consider a separate, smaller tree to hang all the children’s or grandchildren’s efforts – they will love it and you can then do the big tree as you like. Tiny hanging picture frames are another nice touch (check out the pewter ones from Restoration Hardware), for example, featuring baby photos of all the family members, young and old.

USE ARRANGEMENTS THAT CAN LAST THROUGH WINTER. Choose winter florals that look good at Christmas and can be left up for the winter season. Lane worked with natural ingredients like dried hydrangeas, magnolia leaves, pinecones, berry branches and crabapple sprays when decorating this house for the holidays. For the long horizontal dining room table she made an understated arrangement using pinecones, tiny balls and feathers – nothing too showy. “I didn’t want too many things competing with each other,” says Lane, “so I kept the centrepiece natural.” Small twig trees (made of resin) with twinkle lights come in various sizes and are great for adding sparkle to dark corners all winter long. Lining a mantel with mini cypress trees in silver buckets is another

simple but elegant look. “It doesn’t have to be Santas and reindeers,” says Jacquie Furtner, a designer who owns Bare Birch, a home décor store in Owen Sound. Her store features mostly neutrals and her Christmas items tend to be natural and subtle. “Burlap is the big thing this year,” she adds. “It’s being used everywhere instead of ribbon for wrapping around candles and gifts, and for the base of the tree.”

DON’T BE AFRAID TO USE FAKE GREENS (but get the ‘good’ stuff – the kind that looks amazingly real). Designers use fake swags for mantels and banisters because they bend and flow more easily, then stuff them with real sprigs of cedar. That way your garland will look real … and have that great scent. In this family weekend house some of the garland may be artificial, but the roses are real. Lane bought real red roses, put them into water picks (available from florists) and stuffed them into cedar swags draped on the railings. The roses need to be replaced every few days, but it’s worth it for the incredible scent. If left to dry they lose their scent but will still look nice.

USE RIBBON FOR IMPACT. This is one of the simplest and least expensive ways to amp up your look for the holidays. For Lane, ribbon is a favourite festive accent. “Ribbon lets me fill in the holes when I’m decorating a tree,” she says. “If the tree isn’t symmetrical then ribbon wrapped appropriately can correct that. Wide, shiny ribbon (reflective, not matte) looped back and forth across a tree makes a great statement.” Now that the countdown to Christmas has begun, you can use these ideas to add a little something special to your home décor. have to admit that my holiday decorating had become a little tired. For years I had been hauling out the same old ornaments, half-burnt-out light strings and dusty swags. It was also time to overcome some emotional attachments. For example, the ornaments made by my children who are now grown up and have children of their own (it will be hard, though … they were so clever with those popsicle sticks and cotton balls). She sweeps in with her two helpers Rachel and Nicole and a mass of plastic bins filled with stuff. I have no idea where she finds all these things – and she keeps her sources a secret. In an earlier visit to my house she had already settled on a colour theme with lots of red because my log house needs colour. Cathy and her elves start by hanging bright red berry wreaths on all the windows. They cover the wire with red ribbon (trimmed in sequins for a little glitter) and then shape more of the ribbon into chunky bows for the top of the

Next, Cathy zeroes in on the iron chandelier hanging over my pine harvest table. In years past I had wrapped a cedar swag on the fixture … but I realize watching the girls work that mine had been far too skimpy. Cathy is an advocate of “more-is-more” and the final look of the chandelier with thick masses of greenery, pinecones and red cardinals proves that she is right. For the table she starts by laying down a red and black plaid blanket diagonally across the centre and topping it with a basket chockfull of pinecones and strings of red beads. On either side of the basket she places black lanterns with red pillar candles. To get more light she stuffs several strands of battery-operated led lights in amongst the pinecones. “I like the look of an underglow coming up from beneath the pinecones”, she offers as she adds even more lights to the basket. For the top of my pine cabinet they arrange gifts wrapped in brown paper with copper-coloured ribbon, and a wooden bowl filled with red balls and pinecones. “It’s still missing something,” muses Cathy, standing back like an artist examining a canvas. Then she finds some fresh cedar branches and drapes them down the sides of the mirror. The final pièce de résistance was a pair of cardinals nestled in the greenery. “That’s got it!” she whoops.

The sideboard is the final piece of furniture to get the full design treatment. This surface is where normally, for dinner parties, I put out the serving dishes. Now it holds a stunning display of artificial red amaryllis bulbs, red pillar candles, swags of greenery, and red silk poinsettia flowers. There isn’t an inch of uncovered surface. Oh well, maybe we can forget about food. All in all, Cathy’s team from Panache DesignWorks did work wonders. In two-and-a-half hours they turned my unembellished dining room from ordinary to spectacularly festive. But it’s not over yet. I still have to deal with decorating the tree … and those popsicle stick ornaments. ❧

My husband John and I book in for 6:30 on a Friday night and visit what was once an old apartment building and storage space behind the former Pagoda Chinese Restaurant. Upon entering the warm vestibule we see people gathered around a handful of high-top tables, across from the bustling open kitchen. I hear the clinking of wine glasses and the tinkle of laughter. I see a pile of firewood tucked under the staircase and breathe in the comforting wafts of smoke from the wood-fired oven. We are guided up a steep, narrow staircase and I feel like we’re being initiated into some sort of secret club. I love it. “There’s value to eating in a space that you shouldn’t be,” says John as we are led to our table in a converted attic. The sloped ceilings, contemporary atmostphere and comfy couches make this dining space a step above the average. “It makes you feel like you’re a part of something really cool.” And the Bruce Wine Bar and Kitchen is definitely cool.

This is one of those restaurants people will travel a long distance to visit; a restaurant that will be around for a long time; a restaurant that has a following of devout converts. “We owned the building and no one wanted to rent it,” recalls Steven Vipond of how the Bruce Wine Bar came into being. Steven and his wife Jennifer Vipond have a love of food and a serious passion for wine, but had never owned or operated a restaurant before. “We started with just a wine bar in February 2011,” says Steven. “We had bread, cheese, small plates and we thought we’d be open a couple of days a week.” Almost three years later, the restaurant is now open six days a week (seven days during the holiday season), with a full menu that has foodies clamouring for reservations. “The public dictates, and it seemed people weren’t so ready for the small plates,” says Steven. “They wanted more.” The upstairs is warm and cool, with recessed floor lighting, Lucite wine racks that stretch across the sloped ceiling, and a long communal table seating 14 as well as tables for two and four. “We’ve seen some great things happen at the communal table,” says Steven. “We’ve literally seen strangers sharing food once they’ve met.” At our table for two, our server, Dave, gives us space and time to peruse the menu offering and guides us in whatever way he can. Everything looks so good. Co-owner Shaun Edmonstone, a red-seal chef, has returned home to Thornbury from stints at Toronto’s Pangea restaurant and the Windsor Arms Hotel. food and wine choices that will pair nicely. We decide on an apple and lentil salad with walnuts and honey vinaigrette, wood oven roasted strip loin with barley risotto and a house cured salumi pizza (salumi is Italian cured meat). I adore wine, but I don’t know wine. I love Dave’s descriptions of the house wines, which come in 3- or 6-ounce pours, and I choose the ‘jamminess’ of the Cabernet Sauvignon over the ‘grippiness’ of the Shiraz. The Foie Gras arrives and it melts in my mouth. The accompanying Riesling jelly is so good it can be eaten on its own (think grown-up Jell-O). The lentil salad, served on a wood board, is perfect for sharing. The abundance of crisp flat-leaf parsley makes this salad more refreshing than heavy, and it works perfectly with the rich Foie Gras. The Bruce Wine Bar features live music every Friday night and the venue has become a popular stop for Canadian singer-songwriters. On this night, Mike Bennett subtly strums his acoustic guitar at the front of the room. The wood oven-roasted strip loin is cooked more rare than medium, on Dave’s recommendation, and is served with a heap of freshly grated horseradish, some Ontario blue cheese, and a creamy barley risotto. selection of seasonal vegetables is as good as the main. We practically lick our plate clean. The pizza, with homemade salumi, is what a pizza should be. It brings back memories of backpacking through the alleyways of Rome. Homemade spicy oil is there if you dare. As we dine on our delicious food I wonder where the upstairs kitchen is. I haven’t seen any of our food being carried up the stairs, yet it arrives hot and timely. John investigates behind the upstairs wine bar and is shown the dumb waiter that efficiently lifts our food up into the attic – very cool. We are too full for dessert, but I’m here for work and this is part of the job. Our only complaint of the evening is there is no chocolate on the dessert menu. I’m not a huge dessert person, but if I have a spot of delicious red wine left in my glass at the end of a meal I like to enjoy it with some rich chocolate. We settle on pumpkin Panna Cotta and struggle to finish it only because we’ve pushed the limits of our waistlines. Songster Bennett returns to the front of the room after a short break and starts strumming again. New diners arrive and wait for their tables in the comfortable lounge area at the front. They are happy; we don’t feel rushed. We descend the stairs and take our exit. There is no one around. We climb into our car, and I look over my shoulder. It’s not that I’m nervous in this dark alley; it’s more like I’m checking to see if anyone saw me leave this secret club, where I’m now a member. ❧

Collingwood The Shipyards Medical Arts Centre This new, boutique-style medical arts centre in downtown Collingwood is home to a surgeon, a family physician, a pharmacy, a cosmetic clinic, and even a café. Located in the original home of Collingwood’s first doctor, the historic building at the corner of Huron and Ste. Marie streets has undergone a massive renovation that is as stylish as it is practical. “Patient care is most important, but we also wanted to create a nice environment for patients,” explains Joseph Pugliese, who owns the building along with general surgeon Dr. Michael Lisi, Joanne Weisbrod of Georgian Bay Cosmetic Clinic, and family physician Dr. Matthew Weisbrod. Dr. Lisi and Dr. Weisbrod have offices on the main floor, which also houses the Shipyards Café and the Shipyards Apothecary – a full-service pharmacy. Pharmacist Ahmed El Bably brings 29 years’ experience to his business, which includes a full dispensing pharmacy, over-the-counter medications and vaccinations. “We are offering free delivery for Collingwood and area, blister packing free of charge, diabetic education, and we will be adding a compounding pharmacy to the business next year,” says El Bably. Early Days At

Craigleith

n 1959 when my husband Bill Bowden and I joined the newlyopened Craigleith Ski Club, the lodge was a 24-foot by 24-foot wooden shack dubbed The Warming Hut, and the lifts consisted of a rope tow and a T-bar. The T-bar was affectionately called the Sling Shot, as it frequently sent up-hill riders flying into the prickly wild roses that grew in abundance. Grooming consisted of members side-stepping the hills to pack the snow down after a heavy snowfall. Early summers required lots of outdoor work on the hills, with members removing tonnes of stones and laying hay over new grass seed. When our children, Steven and Patti, were old enough, they were delighted to join with dozens of other

volunteer families, making fun out of the chores (especially when a Bombadier ride was involved). Over time, a real lodge was built and the club continued to add new ski runs, rope tows and eventually a chair lift. The ski school was one of the most important additions, as there were many new skiers eager to learn and exciting adventures just waiting to happen. Another essential early addition was the nursery, which cared for children too young to stay out all day, while giving their parents a chance to ski together for an hour or two. Those were great times that created wonderful memories and lifelong friendships. â?§
