For this month’s recipe…. I don’t have one. What I am instead offering is a tip for grilling fish Particularly flaky fish

If it’s something you have never done before the task can be a little daunting especially if you have guests over Clean your grill! I cannot stress this enough A wire brush will go a long way in keeping it clean and maintaining the life of the grill. The best way to do this is turning your grill on high and burning any leftover food scraps Once this is done give it a good brushing with your wire brush. Prepping the grill for the fish… Once the grill is clean take a towel that you don’t mind destroying and squirt a neutral oil on it Then rub the grates down with the oil-soaked towel This will “season” the grill. Now you will season the fish with whatever you like. Then spray the fish with a non-stick spray Place the fish on a medium-high surface temperature A lot of people’s first instinct is to let the fish sit for a couple minutes and then want to flip it. If the fish seems to be sticking leave it alone! What you want is for the miared reaction This is the browning of the natural sugars. Once this has taken place the fish will release from the grill naturally. It is then ready to flip I hope this little tip helps you this grilling season I’ll see you all around the club!
