Then there’s yet another Easter Egg Hunt at PakClub on 10 April. And, of course, don’t forget its our single parents party on 7 April. Toilet training has been interesting. So far every rug in our house and even Bunnings has copped it, but overall Jordan is going very well and is mostly nappy free all day which is great. We celebrated his second birthday with a party. Note to self: never have a kids party at home if it’s been raining for weeks on end. The kids had a blast but they were bouncing off the walls like they hadn’t seen another human being their own age for months!

Yet despite this, many local families have successfully adopted children from overseas, writes Elaine Seager As Karen Lohman watches over her two gorgeous dark haired children (Taya 6 and Jye 3), she is one of many mums grateful that there’s more than one way to become a mother. After the heartbreak of nine miscarriages which remained unexplained after many doctor’s visits and therapies, she and her husband Glen decided to pursue their back up plan – adoption.

• 200g white chocolate melts
• 1 & 1/2 cups plain flour
• 25 milk arrowroot biscuits
• 1/3 cup caster sugar
• Coloured sprinkles to decorate
• 80g butter, chopped • 1 egg yolk • 500g mini solid Easter eggs • 1 cup shredded coconut
Method Place the chocolate in a heatproof bowl over a saucepan half-filled with simmering water (make sure the bowl doesn’t touch the water). Use a metal spoon to stir for 5 minutes or until the chocolate melts and is smooth. Use a small palette knife or butter knife to spread chocolate over 1 biscuit. Transfer to a wire rack. Carefully sprinkle 1 colour of sprinkles across the centre of the biscuit to form a wide stripe. Carefully sprinkle 2 other colours over either end of the biscuit to form 2 more stripes. Repeat with the remaining chocolate, biscuits and coloured sprinkles (if the remaining chocolate starts to set, repeat step 1). Set aside until the chocolate is completely set.

Method Preheat oven to 180°C. Grease a 3cm-deep, 16.5cm x 26cm slab pan. Line with baking paper, allowing a 2cm overhang. Combine flour, sugar and butter in a food processor. Process until mixture resembles breadcrumbs. Add egg yolk and 2 tblsp cold water. Process until mixture almost comes together. Press mixture into pan. Bake for 15 mins or until light golden. Set aside to cool. Unwrap Easter eggs & place over slice base to cover. Sprinkle with coconut. Drizzle condensed milk over the slice. Bake for 28-30 mins or until edges are deep golden. Allow slice to cool completely in pan.

Potts, one half of the Sea FM morning crew, continues his chronicles of first time fatherhood Noah is getting a little brother or sister! Yes, Kylie is pregnant. Hopefully Noah will have grown out of the screaming, pinching, biting and scratching by the time his new sibling arrives. If not, baby number two is in for a few rough months. Noah has really been testing us recently with his behavior. His bigger teeth are coming through but it seems like Cairns has run out of those Hylands tablets. This means there are quite a few temper tantrums in the Potts house at the moment and it’s not just Noah (why does the Austar cut out during the cricket!!!). Noah has picked up another habit from his old man - being grumpy when he first wakes up. He won’t let you put him down so you have to walk around with 13kg hanging off you for 30 minutes. If he senses you’re putting him down, the screaming starts, the tears flow and those little legs start kicking. If he makes it to the ground, he falls flat on his face and rolls around crying. Why does this always happen when there’s something I want to hear on TV? I started off with some big news and I’ll end it that way as well. Unfortunately this is my last article as I’m heading back home to WA where family support will definitely come in handy with baby number two. I’ve been sharing my daddy challenges with you for two years and I must say it’s been a lot of fun. I’ve kept each of the magazines so Noah can one day read through them all. Happy parenting and all the best!
