Twenty-one years later I still love the job.” Jo admits working nightshifts can be hard and plays havoc with your body, but after 30 years of doing shift work she says regular hours would seem strange to her. Besides, she says nightshifts can sometimes be the nicest time to work as there are less people, less noise and less fuss.

Her workbag is stocked with ID, pens and snacks, her family bag is stocked with sunscreen, hat, insect repellent, wipes and snacks, there is a swimming bag, a dance bag and a gym/pilates bag, all packed well in advance. She also has numerous laminated lists of things to pack for when they go camping, staying in a self-contained apartment or just having a weekend away. “You can never be too organised,” she laughs. “It means when I do have free time I can spend it with my family, catching up with friends, gardening, going to the beach or spending a weekend away.” Jo Taylor is a midwife at the Cairns Base Hospital. www.pakmag.com.au

1/4 cup plain flour 1 egg 1 tbs milk 1/4 cup polenta 1/3 cup breadcrumbs 12 chicken tenderloins, trimmed, halved lengthways kalamata olives, halved olive oil cooking spray tomato sauce
Method
Beat butter, icing sugar mixture and honey until pale and creamy. Stir in flour until dough forms. Refrigerate for 15 mins. Preheat oven to 160°C. Roll out dough to 3-4mm thick. Make a ghost shape 10cm high and 5cm wide out of paper. Use to cut out ghosts on the dough. Place on lined baking trays. Chill for 15 mins. Bake for 12-14 mins. Combine egg white and pure icing sugar. Add lemon juice. Spread over biscuits. Use black decorating gel to make eyes and a mouth.

Preheat oven to 200°C. Grease 2 baking trays. Place flour on a plate. Whisk egg and milk together in a bowl. Combine polenta and breadcrumbs in a small bowl. Place polenta mixture on a plate. Coat chicken, 1 piece at a time, in flour, shaking off excess. Dip into egg mixture, then coat in polenta mixture. Place on prepared trays. Spray fingers with oil. Bake, uncovered, for 20 mins or until golden brown. Once cooked, dot the end of each strip with tomato sauce and place one kalamata olive half on top of the sauce.
