Hello and welcome to the 61st edition of PakMag. Sean turns one this month - I can’t believe a year has passed already. I can understand why people go back for more babies - the second child grows out of the baby stage in a flash trying to keep up with the older sibling. It makes you want to bonsai them! Thanks to everyone who came along to the Teddy Bear’s Picnic last month. This month we’re celebrating Christmas in July at our PakClub (Cazalys 8 July 5-7pm), and yes, Santa will be there taking early orders! 1 tbsp olive oil 1 tsp of ground coriander 1 brown onion 1kg of carrots 1 clove garlic, crushed 1 handful of chopped coriander 1 squeeze of lemon juice 600ml of vegetable stock 600ml of skim milk

1 medium brown onion 1 1/2 cups arborio rice 2 cups chicken stock 410g can cream of celery soup 425g can tuna in brine 1 medium zucchini 1 small capsicum 1/2 cup frozen peas 1/4 cup flat-leaf parsley 1/4 cup parmesan cheese

Method

Chop the veggies and add into a large pan with the olive oil, saute for 5 minutes until the mix begins to soften, add in the ground coriander & season and cook for a further minute or so. Add in the stock and bring to boil, cover and simmer for 15 minutes. Add in the milk and fresh coriander and simmer for 5 minutes. Blitz with a stick mixer, food processor or blender. Add squeeze of lemon to taste and serve with a sprinkle of fresh coriander.

Preheat oven to 180°C. Heat oil in a large ovenproof dish over medium heat. Cook onion, stirring, for 5 minutes or until soft. Add rice. Cook, stirring, for 1 min. Add stock and soup to rice. Stir well to combine. Cover. Bake, covered, for 15 minutes. Fold through tuna, zucchini and peas. Bake, covered, for 15 minutes or until rice is just tender and liquid has almost all absorbed. Stir in parsley and parmesan. Season with pepper. Serve.
