• Approx 12 raw prawns • ½ tbs Red Thai curry paste

• ½ tsp Fish sauce • 1 tbsp soy sauce • 1 tsp finely chopped ginger • 2 cloves of garlic crushed • 1 tsp lemongrass in a tube • Juice and rind of ½ lemon • 1 tbsp fresh chopped coriander (garnish)

• 3 cups (450g) S.R. flour • ½ cup (110g) castor sugar • ½ cup (125g) butter • ¾ cup (180ml) milk • 2 eggs (slightly beaten)

Method Marinate peeled prawns in lemon juice, soy and fish sauce for 10 minutes or more. Saute garlic, ginger and lemongrass in oil for 2 minutes. Add curry paste and fry off for a minute. Add prawns (and chilli if wanted) and cook. Prior to serving with rice, a quick squeeze of lemon juice and a bit of zest will bring this dish to life.
