So this month, I feel old. Really old! I simply cannot believe that just over a third of my life has been dedicated to making PakMag what it is today. I do blame it for all the smile lines I have though, and of course a few stress lines too. It’s certainly been a rollercoaster ride, but I keep holding on for dear life hoping that there are more ups than downs, and that I keep bringing joy to families that come along for the ride. A huge heartfelt thank-you for those that support PakMag - it means more than I can express in words. And to those that keep watching me on this rollercoaster, thank you, I know it’s hard for you sometimes and you think I am crazy - but thanks to those that tell me to keep riding.

The Thing Is... STORY Bree James It’s been 12 years since I started PakMag. I started it with one desire: To help parents. I wanted to bring more joy to family life by informing parents of all the great things happening around town. If I could entertain and educate you too - then that was a bonus. When I started PakMag, I had never worked in the print industry. I did not have a degree, I hadn’t written a story since school and I never had an inclination to be a writer (in fact I was a C grade student, especially in English). I had no idea of what I was doing when I started PakMag and I’d still suggest that this is the case! To top it off, I started a parenting magazine and didn’t have kids… I was however studying to be a school teacher at James Cook University, and I was also a childrens' entertainer. But at 26 years of age, I had very strong desire to do my part to make the world a better place and went all in despite not knowing what I was signing up for. The thing is, being a business owner is not glamorous. I think it’s funny when people think I am successful. Sure, I have succeeded in surviving for 12 years in this business (and twenty years with my entertainment business), but success is like pregnancy. Everyone congratulates you but no one knows how many times you were screwed to get there. It’s certainly been an interesting journey and I am not the same person I was when I started out. Here are ten things I have learnt about raising a business and a family. 1. You are going to be burnt more times than an English tourist in the outback. 2. You are going to feel a whole lot of guilt. Guilty when you work on your business, and guilty when you are at home with sick kids. Guilty for taking a break, and guilty for working too hard. Guilt, guilt, guilt.

4. People will let you down. You will be shocked more times than a kid playing with a knife in a toaster, and it will hurt just as much. 5. People will think you are mysterious or aloof. Because you have been burnt more times than an English tourist you don’t let many people into your private world. 6. You will downplay your achievements. Because no one likes a showoff. 7. You will have so many sleepless nights and moments of despair because you simply just can’t do it all. A business is as needy as a newborn with colic. 8. You will be busier than a mosquito in a nudist colony. There will always be so much to do, so much opportunity, but only so much you can bite into at one time. 9. You will have times where you feel very alone, and so isolated because of the repetitive nature of points 1-8. 10. Just when you think you can’t take anymore, something positive will happen like a client or follower will send you a positive note and you will pull up your big girl panties and go for another round with "Mike Tyson" - for your family, your team, and your followers. Quitting on your dream is harder than quitting eating chocolate for life. PakMag was my first baby. It’s nearly a teenager now, and I am really proud of what it’s become. I hope the teenage years are filled with us making more of a difference, and that we grow into the vision I hope for it. It’s certainly not been easy, but as they say “Rome wasn’t built in a day”.

3. You are going to feel like you aren’t doing your best work. Perfectionism has to go, and “it’s not my best, but it’s the best I can do right now” will be your new mantra.

Co-Parenting and Killing It Parenting isn’t easy. Parenting with an ex-partner after breaking up is often complex and most don’t do it well, because often there is a lot of hurt still being dealt with. This edition we wanted to inspire parents going through separation with stories of those who have managed to put their differences aside, for the sake of their children and future grandchildren. Meet three families who are “co-parenting and killing it”.

Although it wasn’t always easy, there was one thing that made the road less bumpy. “Time has made it easier. We always had a great friendship when we were in a relationship together, so it’s nice that we can still get along and have family dinners without a fuss,” Sarah and Jay explained. “There have been ups and downs, but once we put our personal differences aside and acknowledged that we both had the same common goal, it’s been a much better relationship.”

Sarah Berwick After separating, mum Sarah and dad Jay put their differences aside for their daughter Emmette (five). However, it wasn’t always an easy road, but they got there in the end.

Throughout their journey, Sarah and Jay discovered the importance of transparency. “We have both realised how important it is to be flexible and give and take when it comes to parenting,” Sarah said. “We also offer support of one another’s decisions and are really transparent with the way we communicate and that has made it so much easier.”

“We have been separated for over four years now,” Sarah and Jay told PakMag. “The initial adjustment was quite difficult for the both of us, but we are lucky that our daughter was so young when we separated that it’s all she has really known.”

Sarah and Jay's advice for other separated parents is “to be conscious of the way you speak about the other parent in front of your children. Little people have little ears and they can understand so much more than what we give them credit for.”

Although there have been ups and downs throughout the years, Annissa and Brendon’s story proves that putting your differences aside can make a huge positive difference for the sake of their son Logan (five).

Eight years after separation, Madeline, her ex-partner Jozef and his current wife Rebecca discovered that communication is the key to co-parenting. They have decided to share their story with PakMag about their journey together with their children Tyler, eight, Peyton, six, and their new baby sister Lola, 18 months. “I'm a strong believer that children need to spend equal shared care with Mum and Dad if possible,” Madeline told PakMag. “But it doesn't make it any easier to deal with, not to mention adding a step parent into the mix creates another hurdle you have jump over both emotionally and mentally.” Now, eight years down the track, Madeline explained how they got on the same page. “As a family, we felt it was important for our kids to spend time with both parents in the one place, we never let our kids see us fight nor do we belittle the other or their partners in front of them,” she explained. “I feel our children benefit from seeing us get along, and celebrating milestones, birthdays and special occasions together sets a good example for their own futures.”

“We’ve been separated for just under five years,” Annissa explained to PakMag. “In the beginning, the hardest part was dealing with our own heartbreak without wanting any of that pain or anger to be shown to our son. After a lot of fighting, miscommunication and frustration, we decided we needed to focus on one thing. Once we decided to put our differences aside for the sake of Logan’s life and upbringing, it got easier.”

After overcoming these hurdles, some beautiful things have come out of the situation. “From divorce I lost a husband, but I also gained a long-life friendship with Rebecca. One of the reasons our family communicates and socialise the way we do is because of the relationship we have built with one another over the years.”

To get to this point, Annissa and Brendon made a few arrangements. “We talk to one another and agreed we can speak to our son at any time,” Annissa told us. “We started making things more involved with both parents and step parents, and now we are really like one big family with one goal – a happy, healthy life for our son.” Annissa’s advice for other separated parents is “If you have anger, ask yourself if that anger is healthy for you. If the answer is no, then it’s not healthy to your children either. A relationship breakdown is not something you get over in a day, but you need to think with your little one in mind. Decide to be a team, and a team your child can be proud of. What will be, will be.”

Don’t be one of those families that are acting like you separated yesterday when it was 35 years ago. Whether you like it or not, you are going to be in each others’ lives forever, so you may as well make it pleasant for everyone’s sake. You have milestone birthdays, weddings, and future grand babies being born to look forward to. Getting over the hurt, treating each other with respect, getting on the same page, and parenting with a united front is key being the best co-parents you can be. Stop the Shouting: 12 Ways to Discipline Without Yelling STORY Jenna Galley It’s 8.00am. You have exactly 4 minutes and 55 seconds to get your family out the door. But your son is still in his pyjamas, ignoring your request for him to put on his school clothes. Your daughter is in her room, unable to even locate her school uniform because she didn’t clean up her room, like you told her to do yesterday... 17 different times. And you? Well, you’re about ready to scream the house down in an attempt to get your kids to do what they are asked the first time around. Sound familiar? Yes. Yelling is a part of life when you are a parent. But it doesn’t have to be. Sure, we are all going to let out the occasional mama bear growl but yelling doesn’t need to go hand in hand with discipline. Believe it or not, there are other ways to gain control of the kids without needing to shout, scream, swear or search Google for Nanny McPhee clones in your area. More Control; Less Shouting Your pathway to peace starts with you. That’s right – before you can work on your kids, consider what is setting you off. What are your yelling triggers? Reflect When are you extra yelly? In the mornings before the mad dash to school? After school as you try and settle the kids into their homework routine? During the dinner prep or perhaps right before bed?

Prevent If you are yelling at your kids to get dressed in the morning, prevent the fight by putting them to bed with their clothes on. Or, at the very least, their socks. This will stop the “my sock has a bump in it” problem from escalating into a yelling match in the morning. Or, if the kids are coming home from school and fighting while you try to sort out dinner, start a routine where they both spend 15 minutes of alone time in their rooms. This will stop their fighting and prevent you from having to yell at them while trying to organise a meal. Escape When your blood is boiling and you’re about to snap, run! Okay, so you can’t run away from the kids completely, but run to the closet, the bathroom or the garage and take a five minute time out before returning to the battleground. Discipline Without Raising your Voice - Get your children to listen the first time around without the need to yell or nag. Set the rules First things first, establish a clear set of expectations with your kids so they know exactly what they are meant to do. Go through the morning routine, the after school routine, the dinner routine, the bedtime routine and identify what tasks or chores they need to do.

Use visual reminders Next, get creative with visual reminders – chore charts, picture routines, daily schedules outlining what they need to do at each time. On the morning chart, include tasks like putting their pyjamas in the laundry, making their bed, brushing their teeth, packing their lunch into their bag, putting on their uniform, brushing their hair and cleaning their breakfast bowl. In the afternoon a visual chart may include putting their school bag away, placing their uniform in the wash (not on the floor), doing their homework, quiet time in their room, playing outside, etc. Sure, these may seem like no-brainers to us, but our kids need a little more guidance and many children respond well to visual cues and step by step guidelines that they can clearly see and follow. But what happens if they still don’t listen, even with a daily schedule written on the fridge? Rather than yell or nag, take action. Set up negative consequences Explain to your kids ahead of time what will happen if they break the rules. The punishment is entirely up to you but may include a time out, loss of privileges or taking away toys. If they don’t follow the rules, even after a warning or two, there’s no need to yell or scream. Simply remind them about the consequences and follow through. Stick to the plan No parent wants to be the bad guy, but it sometimes needs to be done. The only way to prove that you mean business is to actually follow through with the plan. Send them to time-out, take away the iPad and keep your cool, even if they starts to lose theirs. Additional No-Yell Methods Having a discipline plan in place is a great way to reduce the need to yell at your kids. But here are a few other methods to calmly stay in control.

But try this: When asking your kids (or partner) to do something, explain WHY they need to do it. "Can you put your clothes away, because they do not belong on the kitchen table?" "Can you put your shoes on because we have to leave now?" "Can you turn the iPad off now because it’s time for dinner?" Giving them a valid reason increases the chance of them doing what they are told on the first go, without needing to raise your voice. Give them two options Kids like to be in control, which is why giving them a choice can work well. Rather than telling them to do something, offer them two choices (both leading to the same result). For example, "Either you brush your teeth now or after you read" is often more effective than simply telling them to go brush their teeth. Go quiet Screaming can get the kids’ attention (and probably your neighbour’s too). But lowering your voice to an almost whisper is just as effective. Combine with a cold hard stare and you may just have the winning recipe for getting the kids’ attention and proving that you mean business. Get down on their level Bend down so that you are talking directly to your child. This allows you to make eye contact and can be a lot less intimidating to your child. It shows them that you are talking to them, not yelling at them from above. Pick your battles We are all perfect parents before we have kids. But the truth is, no child is perfect all the time. And trying to make your kids behave perfectly every second of every day is exhausting. So don’t. Let go of the control reins and let them be less-than-perfect, even if this means they sometimes stray from the rules.

Explain the WHY

If they occasionally leave a mess, track mud into the house on their way in from playing or forget to pick their towel off the bathroom floor, don’t lose your cool. If it becomes routine, then yes, it’s time to intervene.

One of the most frustrating things about having kids is their selective hearing. Often you will ask them to do something and they will ignore it, or stall.

But some battles are not worth starting or yelling about. So save your voice (and your sanity) and let the occasional muddy footprint or dirty towel slide.

What you need to know about STEAM and Robotics STORY Mr Luke Matson, Digital Technologies Teacher & Educational Technology Coach Over the last few years, technology in our world has grown tremendously, making way for new subjects in our schools to help train the next generation for our growing world. The terms STEAM and Robotics may have popped up at your school – but what do they mean? What is STEAM? When the terms STEAM (or STEM) are mentioned in regards to education, people are referring to a group of inter-related subject areas. They include Science, Technology, Engineering, Arts and Mathematics.

Robotics in the school environment is often categorised as a STEAM/STEM topic. What is Robotics? The heartbeat of robotics is problem-solving. When students are developing their knowledge and skills in robotics they are given a variety of scenarios and are required to identify the main problem (or problems) and then work out the steps that are required to solve them. In this process students design, build (engineer) and code a robot to solve the identified problem.

Three examples of robots that students in Cairns create for the QSITE robotics challenges include: •• Sumo-bot - Students create and program a robot to stay in the sumo ring while pushing the opponent out (sensors used include a light sensor and an ultrasonic sensor). •• Rescue mission bot - a robot is created and designed to follow a path (black line) and rescue an object from a “chemical spill” (sensors used include a light sensor and an ultra-sonic sensor). •• Dragster bot - a robot is created for speed. The main skill that is developed through this process is the understanding of gear ratios.

wonderful opportunity to take this journey of discovery with your child. If your child is showing an interest in coding and/or robotics it would be a great opportunity to do this together. Part of developing a safe environment for children to learn includes them being safe online. Whether students are learning about robotics by themselves or with a family member it is also important for them to be held accountable for what they do ‘online’. One great way to keep children safe is to keep ‘connected devices’ such as laptops, mobile phones and gaming consoles out of bedrooms.

Jobs of now and the Future that Will Require a Robotics Background

Robotics is important as it is a great tool through which students learn the skill of analysing a scenario, identifying the underlying problems and then developing solutions to those problems. Robotics is also a place where students learn that failing at a task does not mean they are a failure. Students learn to look at what they have already done and discover ways of modifying their creation in order to get closer to the solution.

There are many jobs that are available now and many more will be created that will require the expertise of robotics engineers as well as the associated programming skills that students develop. Undoubtedly, the main skill that students are developing as they are building and programming robots is the ability to see the underlying problem in any given scenario and create a solution.

Quite often, the biggest challenges that students face is not their lack of understanding but rather their willingness to make mistakes. It is throughout this learning journey that students begin to discover what questions they need to ask in order to successfully navigate the various scenarios that are placed before them.

History has shown that occupations come and go but the skill to critically analyse and apply the appropriate solution is a skill that will always be relevant due to the person having the ability to adapt in each and every scenario.

How to Help at Home The main way parents can help at home is to create a safe environment for children to make mistakes. When children are learning new skills, adults can have a tendency to take over and ‘fix’ the problem for the child. The action of ‘fixing the problem’ is not helping the children to problem solve. Children need to know that it is okay if they do not know the answers and it is also helpful for a parent to also admit they do not know. As robotics is reasonably new and most people would not have had much experience in this field it is a

I decided that that was what I really wanted to do. Now, I’m in my twenty-first year of teaching.

The Cathedral School of St Anne and St James “I have been teaching for 12 years. When I was a child, my Year Six and Year Seven teacher inspired me to become a teacher myself. My favourite subject to teach is definitely Maths.

One of my funniest memories was when I was going to a Future Schools conference. I was telling my students that I wouldn’t be in their lesson the following week; I was going to learn more amazing things to teach them. A preppie put up her hand and inquired “Are you going because you don’t know much?”

Thinking back to when I was a student, my funniest memories was being sent outside for talking in Year Six and I cried. It wasn’t funny at the time, but in hindsight it is hilarious. One of my funniest memories as a teacher is having to climb up a tree to get a child down because they got stuck and would only get down if I went up to help them.”

When to Give Your Kids a Phone STORY Emily Bremner The topic of when to give your child a phone is laced with controversy. So, we’re here to help you decide when the right time is. A mobile phone seems to be the must-have accessory these days with children as young as six, but it doesn’t necessarily mean they have to have one. As with most things in life, owning a phone comes with positives and negatives. From the moment your child gets their first phone, the costs will be forever ongoing. Whilst you don’t need to spend a lot of money on the initial phone, you will have to pay to keep it running. If your child is purchasing their own phone, it’s important they understand the costs and implications of not paying their bills on time. However, this can be a great budgeting lesson for them. The greatest concern that parents have about mobiles is how easily children can get addicted. If your child is good at limiting their screen time on the TV, games and iPads, then hopefully they will be able to do the same with a phone. Otherwise, you have to be prepared to be strict with their usage time. As most of us are aware, anything that you post on the internet can come back to haunt you. It’s imperative that your child is aware of the lifelong consequences which could proceed if they misuse their phone – remember, once something is on the internet, it’s out there forever. Bullying is a huge issue for children in today’s society and owning a phone can increase the chances of bullying and being bullied. It’s easy to hide behind a

screen and post nasty comments, so it’s vital that your child has resilience skills for these instances. However, owning a phone does possess many advantages for children, the number one being it can act as a safety tool. Parents and children alike can easily contact each other in times of emergency, or just for convenience as opposed to having to use a school or friend’s phone. It can foster a relationship between children and technology and can actually teach them skills they will use later in life. Alongside this, it’s a great tool to teach your kids how to be responsible with technology. One suggestion is that you buy your child a simple mobile phone for their first one – this way they can contact Mum and Dad for safety reasons, but if it has no internet access it hinders them from misusing it by going on Facebook or searching something inappropriate. If you want to buy your child a ‘smarter’ phone, that’s fine too. If you ever need it, there are multiple child proof settings that parents can make use of and great software apps like Kaspersky, and Circle With Disney. There are also alternatives to a phone like Smart Watches that allow the child to call you if need be. Ultimately, there is no specific or right age that your child should have a phone. It really boils down to whether you think your child can handle the responsibility of owning one, and whether they really need one or if it’s just 'keeping up with the Jones'. While it’s normal for teens to experience a bit of self-doubt occasionally, low self-esteem can turn into a long-term issue, causing problems at school, in friend groups or at home. Low self-esteem may be caused by stressful life events, mood disorders, bullying or ongoing medical issues.

So, you’ve had the period chat with your daughter, and you want her to be prepared for when her body changes. The anticipation of getting her first period can make any young girl nervous. There’s no telling when it might happen, so it’s best to prepare them early with a handy period kit.

A few simple ways to boost your child’s self confidence is to praise their effort instead of the outcome, teach assertiveness skills, model self-confidence and encourage your child to explore new opportunities. Positive self-talk is another essential for good self-esteem.

A pencil case serves as a great period kit, especially if your daughter is embarrassed about getting her period at school. Put several pads, tampons or period panties in the case – whichever she is more comfortable using. Panty liners, deodorant, wipes, a change of underwear will come in handy too. If your daughter’s school allows it, paracetamol can be a lifesaver if her periods cause pain or discomfort.

Taming your Toddler’s Tantrums STORY Madeline Healy, Goodstart Early Learning I can still remember the day my now 12-year-old daughter threw her first temper tantrum. We were at a supermarket in Brisbane, she was about two years old, and I had my baby in the trolley.

As the tantrum subsides, guide your child back to what you were doing or where you were going by talking calmly to them so they know what to expect. “Staying calm - even though it’s really hard - is key.”

I had said no to buying her a lollipop. She went bright red, screaming, fists of fury pumping up and down, tears rolling down her face. And then, of course, she took off, ducking under the aisles so that I couldn’t reach her.

Plan ahead

I decided the best way to tackle it was to stay calm and ensure I knew exactly where she was. But the looks from other shoppers were enough for me to try to schedule in future solo visits during the weekends when my husband was at home. There’s no telling when a temper tantrum might strike, and while you can do everything possible to avoid them, it’s better to learn some skills and tactics to deal with them. Experts say that handling temper tantrums can depend on the age of the child – they often start at about the age of one to two years old when crying turns to frustration. This is the exact age where most children are learning to name and express their emotions in the social world to have their needs met. But they often don’t control their emotions and express themselves in ways that bring them positive attention. In fact, tantrums aren’t about getting attention, the emotional outburst is often about experiencing an emotion they don’t know how to manage in a way that will bring them the support they need. Goodstart Early Learning’s national lead social inclusion Penny Markham said in the midst of a tantrum it is important stay with your child and keep them safe. “When they are having a tantrum is not the time to try to reason with them,” Ms Markham said. “Just let them know you are there for them using a warm, calm voice.

If you are planning an outing where it is possible for the child to want something they can’t have, rehearse the outing and role-play positive behaviours. When you notice how they are feeling you can also give them the words that match their emotions, so they can learn those words too, for example, “I think you are feeling frustrated, can I help you with your shoes?” Be aware that if they are tired, hungry or thirsty these are situations in which a tantrum may be triggered. Tips for Dealing with Challenging Behaviours: •• Ensure that the child is safe from harm. If you are frustrated, take some time to calm down. •• Once they are calm, talk to them about their emotions and what they experienced. Talk to them about what they should do if they feel that way again. •• Naming a child’s emotions, such as anger, sadness, happiness helps children register the emotion. •• Give children the behaviour model to express the emotion. For example, if a child is angry, say “I can see you are angry and when you’re angry you can let me know.” •• Don’t give in to a tantrum and give your child what they wanted such as a lolly or toy. This will only serve to reinforce the tantrum as an effective behaviour. •• Show empathy and understanding. What is Mastitis? Mastitis is the inflammation of the breast and is often a result of a blocked milk duct that hasn’t cleared. Therefore, milk pools in the breast and inflammation occurs. Symptoms of mastitis can often feel as if you’re getting the flu. What are the symptoms of mastitis? Your breasts may be tender or painful, hot to the touch, reddened, swollen, and you may have a high temperature over 38°C.

HELPFUL TIP Keep a box of tissues handy in every room of the house. You never know when there will be an unexpected nasty spillage, and it’s always convenient to have tissues nearby for this very reason. It’s also quite useful keeping nappies and wipes in baskets around the house so you don’t have to haul your little one to the changing table ten times per day. Waterproof cot sheets can be a lifesaver as well, and not just for potty training. Babies go to the bathroom throughout the day and night, and sometimes a nappy just isn’t enough and leaks can and do happen. Waterproof sheets will save you from the nightmare of cleaning a mattress, and hopefully save some of your sanity in the process. While you're at it, it's also a good idea to get waterproof sheets for your bed too, to protect your mattress while snuggling with bub.

How does mastitis develop? Some factors may predispose you to develop mastitis, including poor drainage of the breast, a tight-fitting bra, engorgement of the breast, or trauma such as a kick from a toddler. Poor physical health may also predispose a woman to mastitis. How can mastitis be prevented? Mastitis can be prevented by thoroughly washing your hands after a nappy change, making sure baby is latching on properly, avoiding long periods between feeds, wearing loose clothing and avoiding prolonged use of nipple pads. What is the treatment for mastitis? Treatment should be started right away. Your breast milk is perfectly safe for your baby even if you have mastitis. Continuing to breastfeed is a main factor in treating mastitis. Drain the breast frequently and ensure baby is feeding well on the affected breast. Applying heat to the affected breast a few minutes before the feed may help with milk flow. Your doctor may prescribe an antibiotic to help the condition clear up. If your fever lasts longer than six hours, don’t hesitate to see a doctor.

IRRITABLE Bowel Irritable BOWEL Syndrome SYNDROME

There are three kinds of ADHD. Inattentive, hyperactive-impulsive and combined type.

Irritable Bowel Syndrome (IBS) is a condition that affects the functioning of the bowel. If you have it, you’re not alone; it affects an approximate 10 to 15 per cent of the population, yet many people remain undiagnosed.

ADHD isn’t all about hyperactivity. Kids with the inattentive type may appear ‘daydreamy.’

Some of the more common signs of IBS include abdominal pain or cramping, alternating diarrhoea and constipation, abdominal bloating and nausea. The underlying cause of IBS remains unknown, but certain factors have been known to ‘trigger’ attacks. These include infection, food intolerance, general diet, emotional stress and medication. Symptoms are more common in women and may worsen around menstruation. While the symptoms can be embarrassing, inconvenient or painful, IBS does not cause permanent damage to the bowel and can’t lead to serious diseases like bowel cancer. Researchers at the Monash University have recently developed a special diet that may help control IBS symptoms. It is called the Low FODMAP diet, which involves swapping high FODMAP foods for low FODMAP alternatives for 2-6 weeks, then slowly reintroducing food. It is not a diet for life, and three in four people have shown to feel better after following the diet. Check www.monashfodmap.com for more info, or consult your GP or dietitian.

Males are more likely to have ADHD. 75 per cent more likely, in fact. This may be because ADHD symptoms present differently and more subtly in girls, and doesn’t mean girls are less susceptible to the disorder. Symptoms typically first appear between three and six years, but the average age of diagnosis is seven years. Sometimes, ADHD isn’t diagnosed until the teenage years or later. ADHD isn’t just a childhood disorder. Approximately two thirds of children with ADHD continue to have symptoms into adulthood.

EASY CHEESY MINI HAMBURGERS Makes 9 Ingredients 9 slider buns 500g beef mince 1 onion, grated 5 tbsp tomato sauce 2 eggs, beaten 1/3 cup breadcrumbs 1 tomato, sliced

9 slices of bacon, halved 9 slices tasty cheese, halved 50g gherkins, chopped 8 leaves of curly lettuce 1 tbsp sesame seeds Salt and pepper, to taste

Method Place the beef mince, egg, grated onion, chopped gherkin, breadcrumbs and 2 tbsp tomato sauce in a bowl and season with salt and pepper. Mix until combined. Roll the mixture to make 18 balls. Flatten and place on a plate, refrigerating for 15 minutes. Preheat the oven to 180°C. Heat the oil in a pan and fry the beef in batches for 1 - 2 minutes on each side. They will still be a little rare in the centre, fry for longer if desired. Fry bacon until done. Using the other egg, lightly coat your buns with and add a sprinkle of sesame seeds. Heat the buns for five minutes in the oven to get them golden brown and crispy. Let them cool for five minutes. Slice open the buns and assemble your burgers using the beef patties, bacon, tomato, cheese, lettuce and remaining tomato sauce. Tuck in and enjoy.

Method Roast the nuts and seeds in a non-stick pan until fragrant. Grind nuts with salt and pepper in a pestle and mortar. Finely chop herbs and warm to soften. Mix herbs through roasted nuts and check seasoning. Serve dukkah with oil and vinegars and tomato and bread to dip.

Singapore is a beautiful island city with a population of 5.5 million people from all around the world. The majority of people speak English and everything is written in English so you don’t have to worry about any language barriers. A few things you can’t miss… Sentosa Island – A small island just a couple of minutes’ drive from the city. You can get there via car, Cable Car, Monorail or walking. There are over 20 attractions on this amazing little island from Universal Studios to Adventure Cove Waterpark iFLY, S.E.A Aquarium, KidZania and lots more. Gardens by the Bay – A stunning park spanning 101 hectares. There are several areas to the park including the Children’s Garden which includes a free waterplay park, treehouses and an adventure trail for 6-12 year olds. At night the huge (25-50 metre) solar “supertrees” put on a free spectacular light show that is a must watch. DADDY DIARY Life can change in the blink of an eye. One minute you're drinking with your mates debating which nightspot you'll stumble to next (the Mad Cow usually won due to the awesome tunes banged out on the reg by Rob the Piano Man). The next minute you're brushing your daughter’s hair, getting ready for her first day of big school. I don't know how my life got to this point in such a rush. But I thank God it did. This month my little girl Matilda turns five. And whilst I understand it’s no centenary celebration and we're not expecting a letter from the Queen, it still represents somewhat of a milestone for us. Little Miss Five recently started prep at Ryan Catholic College. She's developing her own loves and interests. She's becoming more independent. And she recently became a big sister to

our newborn son Charlie (and she's a great one at that). So, although five is only halfway to double digits, it's still a cause for celebration in the Clifton house. The last half decade has been a learning curve: from the simple to the very difficult, from changing a nappy for the first time, to learning to live with a child who has severe allergies and anaphylaxis. It has been one hell of a ride. I still remember all these pivotal moments in her life like they were yesterday. I remember pulling out of the Mater Hospital in Pimlico driving our newborn home of the first time. I remember her first steps; she was wearing a Cowboys singlet and nappy cover bottoms. I remember her bursting into tears after experiencing bullying for the first time. And I remember her confidently winning second place in her first school athletics carnival. These are the moments a little girl breaks your heart into a thousand little pieces and only to put it instantly back together with one cheeky little smile. Matilda, being a parent to you is the toughest yet most fulfilling thing your mother and I have ever faced. On a daily basis you challenge, reward and love us like we've never experienced. My darling girl, you are the best thing that has ever happened to me. Thanks for the last five years. I love you more than you will ever comprehend. Thanks for being my little girl.
