28 welcome note Hi everyone and welcome to the 12th Edition of PakMag. I can’t believe it’s PakMag’s first birthday already! We would like to send you, our loyal readers, a very BIG thank you for embracing PakMag the way you have. I always receive so many wonderful comments about the magazine and we value your feedback and advice. If there is something you would love us to write about or an event you need to promote we are busy planning our next years activities and events around town and would love to include some of your ideas. Our monthly PakClub has been growing rapidly and our October Halloween party was so much fun.

• Bacon - diced/chopped remove the fat to keep it healthy

• Wholemeal bread

• 1 Onion

• Ham slices

• Garlic

• Cheese grated

• 2 tins of corn

• Pesto

• Eggs • Milk

• 1 litre chicken stock • 6-10 medium/large potatoes

Method

Method Dry fry the bacon, chopped onion and garlic, (the small amount of fat in the bacon is enough), peel and cut potatoes in half, (quarters if you’re in a hurry). Add potatoes, tins of corn (with water) and chicken stock and cook until potatoes are soft. Process in batches to make a smoother soup, you can add skim milk (depends on how thick you like it).

Grease a muffin tray. Using an egg round, cut out a large circle from a slice of wholemeal bread. Use a rolling pin to flatten the bread and place it in the muffin tray. Do this with 4-6 slices of bread. Line the bread with a piece of ham. In a bowl, whisk 2 eggs and a dash of milk. Add 3 teaspoons of pesto. Pour the egg and pesto mix into the muffin tray. Top with grated cheese. Bake in a moderate oven for 12-15 mins.
