For the first time I have the pleasure of writing to you and I do so with great anticipation. My appointment as CEO of Palladium Hotel Group is relatively recent, in early 2020 no less, just a few weeks before the pandemic broke out. It has been a difficult couple of years, but the desire to enjoy ourselves, to rest, to combine business travel with tourism and fun, to take care of ourselves and to cultivate our minds by discovering other cultures has only grown stronger, and we want to be there for you in that endeavor. If there is one thing that characterizes us as a company, it is the ability to innovate continuously, it is in our DNA. By constantly evolving, we make sure that the experience you have with Palladium Hotel Group is always different, no matter how many times you return!

Tere are exciting new developments in 2022, such as the new openings of TRS Ibiza Hotel and Hard Rock Hotel Marbella. Likewise, we have worked hard to make you feel very proud to be part of our Palladium Rewards loyalty program and enjoy all its benefits. Estimado amigo, Por primera vez tengo el placer de dirigirme a ti por medio de esta carta y lo hago con muchísima ilusión. Mi nombramiento como CEO de Palladium Hotel Group es relativamente reciente, ni más ni menos que a principios del 2020, unas semanas antes de que estallara la pandemia.

Han sido un par de años difíciles pero las ganas de disfrutar, de descansar, de combinar los viajes de trabajo con turismo y diversión, de cuidarse y cultivarse descubriendo otras culturas, no han hecho más que crecer y queremos estar ahí para que disfrutes siempre con nosotros. Si algo nos caracteriza como compañía es la capacidad de innovar continuamente, la llevamos en el ADN. Al estar en constante evolución, nos aseguramos de que la experiencia que vives con nosotros sea siempre diferente, ¡por más veces que repitas! Este año 2022 presenta emocionantes novedades como las aperturas de TRS Ibiza Hotel y Hard Rock Hotel Marbella. Igualmente, hemos trabajado mucho para que te sientas muy orgulloso de formar parte de nuestro programa de fidelización Palladium Rewards y disfrutes de todos sus beneficios. It’s great to be back!

It’s been a long time since the last time the Palladium team got together and produced a magazine. Too long, in fact. But at long last, we’re back. And we’re here with a newer design and with an even fresher approach and content. Always thinking of you, our dear guests, who trust us to spend precious vacation time at our hotels. During these weeks of work we have felt stimulated, inspired and, frankly, encouraged to give shape and color to this magazine that you now hold in your hands. We hope you will like it as much as we have loved making it. Without you, none of this would be possible. We want to thank everyone who appears in this issue. We also extend a big thank you to all the members who make up the Palladium Hotel Group team for helping us make this project a reality. Now all that’s left for me to do is to wish you a good trip and happy stay; please read on and enjoy your time with us. We hope, from the bottom of our hearts, that our connection will never be interrupted again.

Tey say tickets are selling faster than ever. Tey say the concerts are fuller than they’ve ever been. But it’s the desire to sing and dance that is stronger than ever. After two years without any semblance of normality, the big festival dates are back this summer and artists have embarked on epic tours around the world. Tere are so many options that there is actually talk of a music festival bubble: do we really need so many? Tis year at least, it would seem so. Faced with such a tsunami of options, we made a list of the truly unmissable ones, although you don’t have to go to all of them. Or maybe you do.

Here during the summer, Tuesdays will be hosted by Te Martinez Brothers, Wednesdays by Fisher, Tursdays by Afterlife, Fridays by David Guetta, Saturdays by Black Coffee and Sundays by Glitterbox. Guetta and his by-now legendary session F*** Me I’m Famous! event can also be heard on Wednesdays at Te Ushuaïa Club at Ushuaïa Ibiza Beach Hotel. Alex Katz. Tyssen-Bornemisza National Museum. Until September 11. Tis is one of the star exhibitions of the summer in Madrid, a retrospective dedicated to the New York painter, a precursor of pop art who is still active. Te show includes almost 40 large-format oil paintings, accompanied by several studies, from self-portraits and landscapes to his famous flowers. Katz himself has collaborated in the selection of works.

Una retrospectiva dedicada al pintor neoyorquino, precursor del arte pop y aún en activo. An island that is a gallery that is an island

Last summer marked the opening of Hauser & Wirth Menorca. Te influential Swiss gallery chose the idyllic Isla del Rey in the bay of Mahón to create a new project that goes far beyond a simple exhibition space. You get there by ferry or water taxi, and once on the island you will find 1,500 m2 of rooms, but also a former hospital, a canteen-restaurant with local produce and plenty of nature.

El verano pasado abrió sus puertas Hauser & Wirth Menorca, la poderosa galería suiza eligió la idílica Isla del Rey en la bahía de Mahón para crear un nuevo proyecto que más mucho allá de un simple espacio expositivo. Se llega hasta allí en ferry o water taxi, y una vez en la isla esperan 1.500 m2 de salas, pero también el antiguo hospital, una cantina restaurante con producto local y naturaleza.

Of these, 100,000 are affiliated and licensed club members, and taking into account courts, clothing, rackets and competitions, the sport generates more than €600 million. Several simple reasons explain its popularity. First, it is a sport that can be played by everyone, regardless of their age or physical condition – you see this in the diversity of the players on the courts. Second, you can improve faster than in other sports – being able to better your game little by little is what hooks you in. And finally, it’s a social sport, to be played among friends. Etxeko means “from home” in the Basque language. It is a name that defines the essence of the cuisine developed by Martín Berasategui, the chef with more Michelin stars than any other: 12. Etxeko Ibiza, the gourmet restaurant at BLESS Hotel Ibiza, is a trip back to the chef’s flavor-filled home in San Sebastián, to the Basque city’s famous old quarter, to a place where the inspiration of the Cantabrian Sea meets the products and aromas of the island of Ibiza. Te restaurant is now into its fourth season, and after two complicated years because of the pandemic, is focusing even more on Ibiza. “We have approached the season with a lot of positivity after what we experienced, and we are very enthusiastic and eager to demonstrate everything we can do in the full season,” explains Paco Budía, the restaurant’s Córdoba-born executive chef, who has been at Berasategui’s side for 13 years, since he was 19 years old. “We’ve added quite a

Etxeko significa en euskera “de casa”. Un nombre que define la esencia de la cocina de Martin Berasategui, el chef con más Estrellas Michelin: 12. Etxeko Ibiza, el restaurante gourmet de BLESS Hotel Ibiza es un viaje al hogar de sabores del cocinero vasco, una vuelta a la parte vieja de San Sebastián y en el que la inspiración del Cantábrico se encuentra con el producto y aroma de la isla pitiusa. Este año, en su cuarta temporada, y después de pasar dos últimas complicadas por la pandemia, se han girado más aún hacia Ibiza. “La hemos planteado con bastante positividad después de lo que hemos vivido y la afrontamos con mucha ilusión con muchas ganas de demostrar todo lo que podemos hacer en la temporada completa”, explica Paco Budía, chef ejecutivo del restaurante y que lleva 13 años, desde sus 19, al lado de Berasategui. “Hemos añadido bastantes novedades, usando más producto local de Ibiza; y también enfocados en terminar el plato

few new things, using more local produce from Ibiza; and we’ve also focused on finishing dishes in the dining room so guests can have that added experience.” Some of the dishes that stand out in a season that is both more local and more showy – that is to say, very ‘Ibiza’ – include “Ibizan pig’s trotters stuffed with truffle and caramelized onion, finished in the dining room with a périgord sauce of foie gras and truffle.” Tere’s also their “own version of gin fizz with natural puréed strawberries, finished in the dining room with gin foam, lime juice and lime zest,” explains Budía.

Tese new dishes come on top of others that have already become classics despite Etxeko Ibiza’s short life, including the venue’s take on the Lasarte salad, “which supposedly won Martín his third Michelin star”, which at the BLESS Hotel Ibiza they top “with red shrimp and Ibizan flowers and shoots”.

It’s these kinds of details that underscore the “personal

touch” that Budía often mentions. Tat sense of being “home-made”, but made in this home in Ibiza, which maintains ties with the original farmhouse in the Basque Country. “Every year when the season ends and before the new one starts, we meet in Lasarte and decide how to unify the Basque Country with Ibiza. It’s a team effort,” he explains. Tey have also added their personal touch to the tableware, which includes plates depicting Ibizan olive and juniper trees created by a craftsman from the island. Yet anyone who comes to Etxeko because they adore Berasategui will still find all his essence here.

“For me, Martín’s cuisine is about produce, it’s about delicacy, it’s a blend of perfect flavors,” says Budía.

“I always say that when you try one of his dishes, everything works together to reach top-grade level. And that is our goal at Etxeko.”

Tis year Etxeko is also celebrating the fact that it’s been awarded a Repsol ‘Sol’ and been included in the Michelin Guide – the first of many accolades to come, for sure. “As I always say, when you work for the best chef in the world, the one with the most stars, we always want more,” says Budía. “Tis has been a shot of energy to keep believing in what we do. We have goals and aspirations and hopefully more awards will come our way because, in the end, they are a tribute to our work.”

Plato que se unen a algunos que ya son clásicos, a pesar de la corta vida de Etxeko Ibiza, como su versión de la Ensalada Lasarte, “con la que se supone que Martin ganó la tercera Estrella Michelin” y que en el restaurante de BLESS Hotel Ibiza rematan “con gamba roja y flores y brotes ibicencos”. En ese tipo de detalles se nota el “toque personal” que Budía menciona con frecuencia. Ese “hecho en casa”, pero en esta casa de Ibiza, que no pierde contacto con su masía de origen en Euskadi. “Cada año

cuando acaba la temporada y antes de que empiece, nos reunimos en Lasarte y decidimos cómo unificar el País Vasco con Ibiza. Es un trabajo en equipo”, explica este chef de origen cordobés. En Etxeko han añadido su toque personal también en menaje, como los platos de olivo ibicenco y sabina que les crea un artesano de la isla. Y aun así todo aquel que vaya hasta allí por su adoración a Berasategui encontrará toda su esencia.

“Para mí la cocina de Martin es producto, es delicadeza, es una forma de sabores perfectos. Siempre digo que cuando pruebas un plato suyo todo funciona para ser un 10. Y ese es nuestro objetivo en Etxeko”, agrega Budía. Dos menús degustación (corto y largo) más posibilidad de pedir a la carta componen la oferta de un restaurante abierto a huéspedes de BLESS Hotel Ibiza y clientes externos, pensado así para que unos y otros puedan repetir a lo largo de la temporada que este año, además, está de celebración con el reconocimiento de un Sol Repsol y su entrada en la

Guía Michelin. Los primeros de muchos, seguro. “Como siempre digo, cuando trabajas para el mejor cocinero del mundo, el que más Estrellas tiene, siempre queremos más. Esto ha sido un chute de energía para seguir creyendo en lo que hacemos. Tenemos objetivos y aspiraciones y ojalá vengan más premios porque, al final, son un reconocimiento a nuestro trabajo”.

Sublimotion was born in 2014 at Hard Rock Hotel Ibiza as an experience that took gastronomy to another dimension. Te avant-garde chef Paco Roncero teamed up with creative director Eduardo Gonzáles and, between the two of them, they have come up with new surprises each year by going beyond the confines of Ibiza. After a successful season in Dubai, they are now back at their original space, but nothing is the way it used to be, say the pair. “Te demands of our public are constantly forcing us to take risks and to be at the techno-scenic forefront,” says Gonzáles.

“Tis season we are going one step further, transforming our technology capsule into an infinite room where the customer experience has no limits.” For his part, Roncero is unveiling some new formats and surprises, such as the “kaleido-plate”, the opportunity to eat in the metaverse, and a special collaboration with urban artist Antonyo Marest. Tis is indeed the cuisine of the future.

IIt is legitimate to say that Benedict Cumberbatch does not have the features of a conventional movie star, which is why the press over the years has compared him to an otter, a horse and even a meerkat. But this has done nothing to stop him from becoming a star in his own right – quite the opposite, in fact. As soon as the British actor made his malleable face known to the general public, he became an idol.

Te 45-year-old, however, has been dodging star status for more than a decade, following a work plan that combines blockbusters with auteur cinema and Shakespearean theater, as well as a proclivity for playing tortured characters.

Te strategy is clear if we look at the five films – yes, five – in which he stars that have been released in Spain in the last nine months. Most recently he has dominated the box office in Doctor Strange in the Multiverse of Madness, which marked his sixth on-screen appearance as the Marvel superhero (the fifth, in Spider-Man: No Way Home, came at Christmas). He has also starred in two tales based on true events: Te Courier, about a salesman who became a secret agent to combat the Soviet threat during the Cold War, and Te Electrical Life of Louis Wain, which explores the obsession that led a schizophrenic artist to spend his life painting kittens.

But the role for which Cumberbatch has been most talked about lately is the disturbing cowboy – a walking metaphor for toxic masculinity and repressed sexuality – whom he plays in Te Power of the Dog. As well as providing him with his second Oscar nomination (he earned his first in 2015 for his portrayal of mathematician Alan Turing in Te Imitation Game), bringing the cowboy to life allowed him to make use of two of his signature acting qualities. Te first is his extraordinary discipline: during filming he learned to play the banjo, castrate cattle and carry out basic carpentry work; he also suffered several bouts of nicotine poisoning and went for considerable periods of time without washing. Te second is his ability to endow aberrant characters with an immense power of fascination, something he had already demonstrated in Atonement, in which he plays a rapist, in Te Hobbit trilogy, voicing a dragon, and giving life to Frankenstein’s monster on the London stage.

‘SHERLOCKMANIA’

Cumberbatch’s career took off precisely on July 25, 2010, when the television series Sherlock, which placed history’s most famous detective in present-day London, began airing in the UK. Just a few minutes later his name had become a worldwide

trending topic, and the internet was soon filled with fan sites written by devoted groupies who called themselves “cumberbitches”. Tat collective fever lasted until around 2014, and died down largely as a result of his marriage to theater director Sophie Hunter in 2015. Te couple have three children. Until Sherlock, and having already made a name for himself in the UK playing a young Stephen Hawking in TV film Hawking, Cumberbatch had become accustomed as he put it, to “big roles in small films and small roles in big films.” But TV success quickly spread to the big screen thanks to a succession of characters, each one bigger than the last: a cavalry commander in War Horse, a secret agent in Tinker Tailor Soldier Spy, a cotton plantation owner in 12 Years a Slave and a superhuman villain in Star Trek: Into Darkness. And with Te Fifth Estate, in which he plays Wikileaks founder Julian Assange, he finally discovered what it felt like to be at the center of a successful feature film. Cumberbatch often attributes part of his success to two near-death experiences that convinced him to make the most of every minute. Te first took place in 2004 in South Africa, when he and two companions were tied up and blindfolded by six men, who threatened to kill them for hours; and years earlier, while teaching English at a Tibetan monastery, he got lost while trekking and nearly succumbed to altitude sickness and dysentery.

Undoubtedly, both incidents have also conditioned the actor’s commitment to social and humanitarian causes; in recent years he has invested in research against child cancer and neurological diseases, campaigned for the rights of the LGTBI community, raised funds to help groups affected by the pandemic and announced that he will host Ukrainian refugees in his home. Although he has already saved the world several times in his movies, he continues to work to make real life a little better too.

‘SHERLOCKMANÍA’

La carrera de Cumberbatch despegó exactamente el 25 de julio de 2010 cuando, en pleno prime time, empezó a emitirse en Gran Bretaña la teleserie Sherlock, que situaba al detective más famoso de la historia en la Londres actual. Solo unos minutos después su nombre era trending topic mundial, e internet no tardó en llenarse de fansites escritas por devotas groupies que se llamaban a sí mismas “cumberbitches” (en castellano, algo así como cumberzorras). Esa fiebre colectiva se prolongó aproximadamente hasta 2014; a su remisión probablemente contribuyó la directora teatral Sophie Hunter, con la que el actor se casó en 2015 y tienen tres hijos. Hasta la irrupción de Sherlock, y tras darse a conocer en su país recreando los años de juventud de Stephen Hawking en el telefilme Hawking, Cumberbatch se había acostumbrado, como él mismo afirmó, a “grandes papeles en pequeñas películas y pequeños papeles en grandes películas”. El éxito televisivo, eso sí, se propagó rápidamente a la pantalla grande, gracias a una sucesión de personajes cada uno mayor que el anterior: comandante de caballería en War Horse (Caballo de batalla), espía enamorado en El topo, dueño de plantación de algodón en 12 años de esclavitud y villano superhumano en Star Trek: En la oscuridad. Seis placeres (muy auténticos) que no puedes perdere en Málaga

Málaga has beaches, but it also has snow. It has white villages with donkeys and goats, but also museums exhibiting the biggest names in international art. And yes, there is a lot of tourism, but there is also a lot of authenticity, and that is what we looked for when we drew up this list of delights. Our selection includes essential experiences such as the Caminito del Rey, but also secrets that only locals know about, such as the locations of the most idyllic beaches and the most charming spot to have breakfast.

En Málaga hay playas, pero también nieve. Hay pueblecitos blancos en los que pasean burros y cabras, pero también museos en los que exponen los mayores nombres del arte internacional. Y hay mucho turismo, pero también autenticidad: esa es la que buscamos en esta lista de placeres, que abarca experiencias imprescindibles, como el Caminito del Rey, pero también otras que solo conocen locales, como la ubicación de las playas más paradisíacas o el lugar más carismático donde desayunar.

A beach. Any one of the beaches in Maro, a miniature Hawaii. Tis hamlet of 800 inhabitants, administratively part of neighboring Nerja, has seven unspoilt sandy beaches. You won’t find many services on them, but you will find abundant fauna and flora. Only one, Maro beach, has a restaurant, as well as a kayak rental service. Jump inside one to visit the beautiful protected natural area of the Maro-Cerro Gordo Cliffs, where you can admire the loggerhead turtles, the orange coral, the posidonia meadows and the parophidion fish on the extraordinary seabed of this heavenly little piece of the Mediterranean Sea.

An experience. Caminito del Rey (Ardales) – an adrenaline-filled, almost eight-kilometer walk along the aerial walkways and suspension bridges that cross the Desfiladero de los Gaitanes gorge. Tis canyon of almost vertical walls, excavated by the passage of the Guadalhorce River, is barely 10 meters wide in its narrowest sections, and reaches up more than 400 meters.

Este cañón de paredes casi verticales, excavado por el paso del río Guadalhorce, tiene en sus tramos más angostos apenas 10 metros de anchura, y alcanza más de 400 metros de alto. Una playa. Cualquiera de Maro, un Hawái en miniatura. El pequeño pueblo de 800 habitantes, pedanía de la vecina Nerja, posee siete arenales vírgenes. Tanto, que no encontrarás servicios en ellos, pero sí abundante fauna y flora. Solo uno, la playa de Maro, tiene restaurante, y posee, además, servicio de alquiler de kayaks. Embárcate y visita el bellísimo paraje natural protegido de los Acantilados de Maro-Cerro Gordo, disfrutando de la tortuga boba, el coral anaranjado, las praderas de Posidonia o el pez doncella en los privilegiados fondos de este celestial trocito de Mediterráneo.

A day trip. Sierra de las Nieves National Park – 23,000 hectares of natural spaces where charming white villages with old oil mills, many still working, give way to mountains that are snow-capped in winter and traveled by herds of goats led by shepherds. It is home to unique species, such as the slender Spanish fir, which originated in the last glacial period, and you can admire on beautiful trails such as the ones that run from Puerto Saucillo to Puerto Bellina and from Caucón to Tajo de la Caína. ESP Una excursión. Parque Nacional Sierra de las Nieves, 23.000 hectáreas de espacios naturales en las que encantadores pueblecitos blancos, con antiguas almazaras aún en funcionamiento, se funden en montañas cubiertas de nieve en invierno y recorridas por rebaños de cabras guiadas por pastores. En él viven especies únicas en el mundo, como el esbelto pinsapo. De este abeto, con origen en la última época glaciar, puedes disfrutar en hermosas rutas como la que cubre de Puerto Saucillo a Puerto Bellina, o la que recorre desde Caucón hasta Tajo de la Caína.

An ‘artisan’ breakfast. La Recova (C/ de la Ribera de Curtidores, 10). One of the best-kept secrets in the city center, this handicraft, vintage decoration and second-hand furniture store also contains a bar that is so typically málagueno that it seems to be frozen in time. Te waiters serve coffee with toast and local jams, but also vermouth and sweet Málaga wine accompanied by a classic tapa of cheese, chorizo or quince jelly brought on pieces of wax-coated paper… Te opera music coming out of the record player and the coolness of the interior – so typical of old places like this – complete a picture-perfect postcard on which it’s mandatory to write: “I wish you were here.”

La tienda de artesanía, decoración vintage y muebles de segunda mano tiene dentro un bar malagueño tan típico que parece anclado en el tiempo. Te sirven café con tostadas y mermeladas de la tierra, pero también vermut y vino dulce local acompañados del típico papel de chacinas con su quesito, su chorizo, su dulce de membrillo… La ópera saliendo del tocadiscos y el fresquito propio de los lugares antiguos componen el resto de una de esas postales en las que es obligado escribir I wish you were here.

Joe Wright’s Cyrano, starring Peter Dinklage, is the latest adaptation of the classic play and was shot on location in Noto, Sicily. The flm has given a welldeserved and renewed visibility to a city o en forgotten in tours.

When film director Joe Wright (Atonement, Pride and Prejudice) decided he was going to shoot a new version of the classic play Cyrano de Bergerac, he immediately visualized it in a Sicilian town he had only seen in photographs: Noto. He had received the images from his regular art director, Sarah Greenwood. “I was in Sicily scouting for another project and we went to Noto because its cannoli [the typical Sicilian dessert, world famous thanks to Te Godfather] were recommended to us. And yes, the cannoli were wonderful, but we also discovered an incredibly Baroque place,” says the designer.

It is overshadowed by its neighbors Syracuse, Modica and Ragusa; and although its beauty rivals that of those cities, it is far from that of obligatory and much talked-about Taormina. Imágenes que le había mandado su directora de arte habitual, Sarah Greenwood. “Estaba en Sicilia explorando para otro proyecto y fuimos a Noto porque nos recomendaron sus cannoli [el postre típico siciliano, famoso mundialmente gracias a El Padrino]. Y sí, los cannoli eran maravillosos, pero descubrimos un lugar increíblemente barroco”, cuenta la diseñadora. Así se descubre Noto, por casualidad. Porque, para sorpresa de quien la descubre gracias al puro azar, aún no está introducida entre las grandes rutas turísticas de Sicilia. Queda tapada por sus vecina Siracusa, Módica o Ragusa; y aunque su belleza no tiene nada que envidiar a ninguna, lejos está de la siempre obligatoria y comentada Taormina. Y, sin embargo,

Tanks to Joe Wright’s Cyrano, starring Peter Dinklage (Game of Trones), Noto, known as the capital of Sicilian Baroque architecture, could now be rebranded the city of love. In the fall of 2020, right in the middle of the Covid pandemic, movie producers took advantage of the calm to make use of many of the city’s corners, buildings and balconies. Tey didn’t need to add anything or take anything away. Te city opened up before them and it is perhaps the most beautiful thing about this new version of the story, which more than ever is a tribute to pure love.

Of Roman origin, Noto became an important financial and intellectual center in the Middle Ages and in the early Renaissance. It was called the “civitas ingeniosa” (ingenious city) because of the illustrious thinkers who lived there. But on January 11, 1691, a powerful earthquake completely devastated the city, which fell into such ruin that it was hard to imagine it would one day emerge even stronger.

De origen romano, Noto se transformó en la Edad Media y en el primer Renacimiento en un centro importante de Sicilia. No solo económico, sino también intelectual. “Civitas ingeniosa” (ciudad ingeniosa) la llamaron por los pensadores ilustres que vivían allí. Pero el 11 de enero de 1691, un fuerte terremoto la devastó por completo y cayó en una ruina de la que costaba pensar que saldría más fuerte aún. The stone of its buildings turns pink when the sun goes down

the other bank of the River Asinaro to build a miracle in the Baroque style of the time, finishing it in Sicilian fashion and with stone that feels welcoming and adds color, especially in the last hours of daylight.

Since 2002, Noto, along with the other late Baroque cities of Val di Noto, has been a UNESCO World Heritage Site. Its 50 or so churches and parishes are a source of local pride. Among the standouts are San Francesco, which features in Cyrano, along with the Duomo or cathedral and the church of San Domenico. Any visit must start at Porta Reale, the classic entrance through which you enter Corso Vittorio Emmanuele, the main artery of the city, dotted with palazzi, souvenir stores, pastry shops and ice-cream parlors where, of course, you have to try the cannoli. On the third Sunday of May, the beauty of Noto rises as it hosts the Infiorata, a flower festival that has been celebrated since the 1980s and fills the streets with mosaics of colored petals, creating original drawings that perfume this secret corner of Sicily that is now being increasingly revealed.

More than 30 species of aquatic birds nest in this ecosystem in a fragile balance between agricultural practices and the preservation of biodiversity. But wildlife-spotting opportunities in the marsh are not just limited to ornithology. Tis hamlet in the middle of the lagoon is dedicated almost entirely to paella and to challenging people’s preconceived notions about what can be done with the region’s most representative dish. Tere are black paellas and red paellas, there are paellas made with artichoke and monkfish, or with duck, and there is paella del senyoret – “milord’s paella” – so-called as all the seafood ingredients are already peeled so diners won’t have to stain their precious fingers. Tere are also creamy rice dishes, ones made with beans and turnips... But while rice is clearly the star of the show, no visit to this unique region is complete without trying another dish, all i pebre. Tis local stew is made with eel, potatoes, garlic, sweet paprika and, in some recipes, chopped almonds.

To work off the calories after your meal, choose from an assortment of hiking trails in the Dehesa de El Saler. Y ya, si el visitante, se cruza con una regata de vela latina, se lleva una foto para enmarcar. La citada isla de El Palmar es un parque temático del arroz. After all that effort, your sweaty and tired body is going to need a dip in the sea and a snooze among the dunes. You’ll find nudist, surfing and family beaches here. Te dunes were in serious danger in the 1960s and ’70s, but a neighborhood initiative in 1979 paralyzed real-estate development and gave rise to legislation that sought to regenerate the sandy shoal. To crown the day, be sure to wait for the postcard sunset, which will transport you – if the mosquitoes allow – to a place of bliss and stillness in a visual explosion of oranges, blues and reds. Para bajar la digestión, se puede optar por un surtido de rutas senderistas en la Dehesa de El Saler. El entramado de bosque y matorral consta de recorridos entre pinos y arena del mar que van del medio kilómetro hasta los 4.000 metros. Hay alternativas botánicas, paisajísticas, lúdicas e históricas.

Tras el recorrido, el cuerpo, sudoroso y cansado, va a reclamar un chapuzón en el mar y una cabezada en las dunas. Hay playas nudistas, surfistas y familiares. El cordón dunar corrió serio peligro en los años sesenta y setenta, pero el movimiento vecinal en 1979 paralizó la construcción de edificios y dio pie a un corpus legislativo que procuró la regeneración de la llamada restinga arenosa.

Para coronar el día, una puesta de sol de postal. El atardecer sumerge, con permiso de los mosquitos, en una sensación de éxtasis y quietud en un estallido de naranjas, azules y rojos. Un sitio privilegiado para verlo: el muelle de la gola de Pujol. La hora varía en función del mes, en julio el sol se esconde entre las 21.15 y las 21.30. Lo justo para tomar el autobús de vuelta a la ciudad. Los que dispongan de vehículo propio, todavía pueden rematar con una sesión doble en Autocine Star. En 1981 se abría en el parque natural esta institución del ocio, un cine para ir en coche, con capacidad para 330 vehículos, servicio de bar, hamburguesas y comida tex-mex y donde el sonido de la brisa del mar arrulla a la acción en la gran pantalla.

In 2012, the same year that Grand Palladium Kantenah Resort & Spa (Riviera Maya) opened, permits were processed to set up a Turtle Camp there. Ten years later, the camp is still running 24 hours a day, especially at night, when Caretta caretta and Chelonia mydas turtles come to the beach to nest. Technicians monitor the nesting and relocate the eggs in a pen away from predators. Tanks to statistical records, we know that 7,505 nests have been protected and 684,200 turtles have been released over the past decade. Forty-eight people enjoyed free lessons and the chance to win a T-shirt signed by the world’s most successful tennis player. In March 2019, Rafa Nadal took a break from his sports activities to travel to the north of Cancún and the Palladium Hotel Group’s resort in Costa Mujeres (which consists of the Grand Palladium Costa Mujeres Resort & Spa and TRS Coral Hotel), where he inaugurated the first Rafa Nadal Tennis Centre. Te facility has a total of eight courts (four outdoor and four indoor), plus a seven-a-side soccer field, a padel court, a gym, a Sports Café, Rafa Nadal Museum Xperience, with a wide exhibition of trophies and sporst equipment of the tennis player; and a Rafa Nadal Shop, selling sports goods. But amenities aside, the most special thing about this “new tennis paradise,” as it’s been dubbed, is undoubtedly the chance to receive training and participate in programs taught using the methodology of the Rafa Nadal Academy by Movistar. It’s a way of getting closer to the world tennis star. Tis year, to celebrate its third anniversary, the Rafa Nadal Tennis Center organized a Clinic for regional players and lovers of this sport. A total of 48 people of different ages participated in sessions where, surrounded by special guests, they enjoyed live music and participated in a draw to win a T-shirt autographed by the world’s most successful tennis player.

TRS Ibiza Hotel, which is set to revolutionize luxury tourism on the island, held its opening party on June 23, the night of San Juan (see more on page 24). The evening featured live music, a water show and a large video mapping on the hotel façade. Guests from all over the world had the chance to sample the cuisine of the hotel’s three restaurants, Gaucho, Helios and Capricho.
