Our genes, habits, and body usage largely contribute to the shape of our spinal curves. The workshop will start with a Conservancy tour of Anson, regroup in the Conservancy classroom, and end at the River Road preserve. Whether a seasoned photographer or a beginner, “Birds by Land” is an excellent opportunity to learn about wildlife photography while being immersed in the breathtaking natural beauty of Palmetto Bluff. Our top three participants will also receive raffle tickets (3 tickets for first place, 2 tickets for second place, and 1 ticket for third place) that will go into a pot for the chance to win a pair of Burn Fest tickets. The drawing will occur following the last Brown Bag Lunch of October 2023.

Each time I came off the ice, I remember sitting on the bench with my head down, between my legs, gasping for air. My breathing was labored, and my mouth was wide open; I fought for every bit of oxygen. Like an intense tennis or pickleball volley, two to three all-out minutes on the court or during exercise can challenge our breathing. And if you’re like most people, you are using your mouth. When I started in the wellness industry, trainers and experts never spoke about breathing. We received training on how to coach clients on their inhales and exhales at the beginning and end of various strength exercises. But there was never coaching on breathing during everyday life, sports, or techniques to control anxiety and improve sleep. Today, thanks to Patrick McKeown, author of The Oxygen Advantage, and James Nestor, author of Breath, breathing is a conversation in wellness that we can’t ignore. Your body has a preferred breathing method, and it’s nasal breathing. Nasal breathing is the act of breathing in and out through your nose, as opposed to breathing through your mouth. So why nose breathing versus mouth breathing? Let me provide you with three reasons that you should care about. First, nasal breathing filters and humidifies air. Your nasal passages are equipped with tiny hairs called cilia and mucous-producing glands, which help filter and humidify the air as it enters your respiratory system. This filtration process helps remove impurities and particles from the air. Secondly, when you nasal breathe, the sinuses in the nasal passages produce nitric oxide, a molecule that plays a role in widening blood vessels and improving oxygen uptake in the lungs. This can enhance your body’s oxygen utilization, which is especially important during exercise. And finally, nasal breathing is important during sleep. Breathing through the nose helps maintain optimal oxygen levels and prevents snoring and sleep apnea in some cases. On a personal note, I have never slept better since transitioning to nose breathing. I get to sleep more easily and wake up feeling substantially more rested. Despite my long history of participation in lengthy endurance events, I have been able to adapt my breathing to nasal exercise, although it can be challenging at first, you will feel the difference within days. Bear in mind, that during certain levels of intense physical activity, you may still need to breathe through your mouth. However, in everyday life and during rest, you can (and should) train yourself to nasal breathing. In October, we offered a seminar called Breathing on Purpose. We brought in Rob Wilson, a human performance expert based in Virginia Beach. Rob travels the country speaking and training all different groups of people on breathing. His advice is quite simple: “Fill the bucket, and slow it down,” which references how he wants you to inhale and exhale. Rob believes that anyone can learn to nasal breath as long as they practice.

Fitness & Wellness You can start retraining yourself today by using this one technique. Slowly inhale through your nose for three seconds and exhale through your nose for three seconds, complete up to 50 sets in five minutes or less. That’s all it takes. Anyone who’s just beginning can gradually apply nasal breathing to light cardiovascular activity like walking, jogging, or cycling. It will be difficult at first, but you will improve the strength of your lungs, delay breathlessness, and make your aerobic system more efficient quite quickly.

PUMPKIN PIE Prep Time: 10 minutes Total Time: 60 minutes Ingredients: • 1 cup pecans • 1 cup almonds • 2 tbsp pure maple syrup • 2 cups pumpkin puree • 2 large eggs • 1/2 cup half & half • 3/4 cup cane sugar • 1 tsp pure vanilla extract • 1 tsp ground cinnamon
1. Preheat oven to 375 degrees.

Stir in remaining ingredients into the mixing bowl. Pour pumpkin pie filling on top of the crust. 7. Cover the pie with foil and bake for 20 minutes. 8. Uncover and remove the foil and bake for additional 35-40 minutes. 9. Rest for 10-20 minutes before slicing. Top with whipped cream or enjoy as is!

Executive Pastry Chef Jae Newby and her team are hard at work baking festive treats to unwrap. Each year, they create new offerings for each restaurant and event. What you may but also creates desserts for each restaurant and fills private

orders. With all that baking it makes for a busy holiday season! Jae has been preparing staff to support the busy flow of customers during the holidays; taking in interested culinary staff and teaching them pastry skills so they feel confident executing recipes at their restaurants. “Teaching new staff can be challenging but is incredibly rewarding,” said Jae. “I love what we are building and that the culinary staff members are always wanting to try new things.” One fun thing the team did last year was taking a class together on how to make Panettone. The pastry team then took what they learned in the class and made it their own, successfully executing the Italian sweet bread for the first time. “We love to put our own spin on the classics, The Panettone is an example of the team thinking outside the box which keeps things interesting,” shared Jae.

The Culinary Corner: Holiday Pastries Jae also recently added Assistant Pastry Chef Abraham Castillo to her staff. “It has been fun building the team. Having such a talented staff with a broad portfolio helps as we make 90% of our offerings in-house,” Jae explained. This year, the new item the team is most excited to create is spiked milkshakes for the Member Holiday Party. They will begin preparing for the event two weeks ahead, by first creating each ice cream, churning it multiple times, and then freezing it. Another merry treat this year will be the 25 Days of Cookies, sold at RT’s Market. Jae came up with the idea to bring holiday magic to her own children. Jae and her children baked a new cookie leach day eading up to Christmas. She remembers it being such a fun experience to enjoy with her family and wanted to bring the idea to life at Palmetto Bluff. Her idea will come to life and from November 30 through December 24 where Members can visit RT’s to pick up an advent-style box of cookies to share. Members can also look forward to more traditional items during the holidays like yule logs, lots of chestnut, gingerbread, and cranberry. The pastry team even makes the hot chocolate available at many holiday events. If you see the pastry team this holiday season, be sure to thank them for their hard work, without whcich none of our holiday events would be possible.

GINGERBREAD COOKIES Prep Time: 5 minutes Total Time: 10 minutes
Ingredients: • 14 1/2 tbsp unsalted butter, room temperature • 3/4 cup light brown sugar • 1/2 cup granulated sugar • 1 1/2 tsp baking powder • 1 1/2 tsp cinnamon • 1 1/2 tsp ginger • 1/2 tsp allspice • 3/4 tsp salt • 1 large egg • 2 tbsp molasses • 3 cups unbleached all-purpose flour • 3 tbsp cornstarch
1. In a medium-sized bowl, beat together the butter, sugars, baking powder, spices, and salt until light and fluffy. 2. Add the egg and molasses and beat well. 3. Mix about half of the flour into the butter mixture. When well combined, add the cornstarch and the remaining flour. 4. Divide the dough in half, flattening each half slightly to make a disk. Smooth the edges by rolling the disk along a lightly floured work surface. Wrap in plastic, and refrigerate for 1 hour, for easiest rolling. 5. Preheat the oven to 350 degrees. Get out several baking sheets; there’s no need to grease them, though lining with parchment saves effort on cleanup. 6. Once the dough has chilled, take one piece of dough out of the refrigerator, and flour a clean work surface. Roll the dough 1/8” to 1/4” thick; the thinner you roll the dough, the crispier the cookies will be. Flour both the top and bottom of the dough if it starts to stick. Alternatively, place the dough on parchment, and put a sheet of plastic wrap over it as you roll, pulling the plastic to eliminate wrinkles as necessary when rolling; this will keep dough from sticking without the need for additional flour. 7. Cut out shapes with a floured cookie cutter, cutting them as close to one another as possible to minimize waste. 8. Transfer the cookies to ungreased cookie sheets. Bake the cookies just until they’re slightly brown around the edges 8 to 12 minutes, or until they feel firm. Let the cookies cool on the baking sheets for several minutes, or until they’re set. Transfer them to a rack to cool completely. Repeat with the remaining dough. 9. Decorate the cookies with royal icing, if desired.

Her father greatly impacted her love of wildlife, nature, and birds. One of the greatest gifts he gave her when she graduated college was a Peterson’s bird book and a pair of binoculars. On the inscription, it said, “Slow down and enjoy!” Recently, Cacky took up wildlife photography and has yet to look back. Not only is this a true passion for her, but she also enjoys learning and sharing her knowledge of birds with others. It brings her so much joy knowing she can be an advocate for our fine feathered friends.
